Top Eco-friendly Destinations in Botswana Botswana’s Chitabe Camp and Chitabe Lediba recently received the highest grade of ecotoursim certification from the Botswana Tourism Organisation (BTO). he Thornybush Collection was born with the original purchase of five star Thornybush Game Lodge in the late nineties. The Group now boasts a collection of nine four and five star game lodges, eight of which are located in the game-rich Thornybush Private Nature Reserve, with the last, five star Simbambili Lodge, located in the north eastern Sabi Sands. The fact that Jon Kabat-Zinn, renowned mindfulness teacher and firm believer in experiencing the fullness of each moment, chose Temenos as a leisure destination during his visit to South Africa plays testament to the centre’s many offerings, both large and small. KabatZinn was no doubt drawn to the deep silence and peace of the meditation well, the great knowledge contained in the rows of books along the library walls, the colourful spledour of Temore, Temple of the Heart, the gentle worship of The Little Way chapel and the seemingly endless mountain ranges that surround the village. He was also, however, probably delighted by the smaller touches such as the special quotes to be discovered throughout the gardens, the quiet pantheistic respect evident in the various religious symbols resting in every nook and cranny, and the fact that the candles in the garden and the incense at the shrines are always lit as soon as the sun begins to set. Despite all these outer charms, Billy describes the ultimate purpose of Temenos as providing a space in which people are empowered to find their own sacred places within themselves. “Although I thoroughly enjoy potting about the garden, the miracle of it really lies in the fact that it seems to do its own work – I facilitate the growing process, but I can never make it grow,” he shares. Visitors to Temenos are often referred to the centre by professionals treating them for the debilitating effects of trauma, grief, anxiety or exhaustion. Others are drawn to the variety of workshops and retreats on offer, and others just want to spend a bit of time far from the madding crowd. Even those who just want to treat themselves to a leisurely and indulgent weekend can visit the centre. As Billy says, “We should never take ourselves too seriously –

Kapama Karula
Set on the banks of the perennial Klaserie River is Kapama Game Reserves most secluded and prestigious lodge, Kapama Karula. Main areas include lounge and bar, all finished in modern whitewashed wood and vast sections of glass, complemented by a neutral colour palette, offering a contemporary African feel. Strandveld Vineyards Home of First Sighting

Strandveld Vineyards, Africa’s southernmost winery, is situated in the picturesque Elim wine ward of the Western Cape, a mere thirty minute drive away from the true tip of Africa, Cape Agulhas.
F
irst and foremost dedicated to biodiversity and the conservation of its tranquil surroundings, Strandveld Vineyards offers a picturesque setting with an abundance of birdlife and plants, the perfect escape and serene getaway from the city’s hustle and bustle for wine and nature lovers. Custodian of the unique Strandveld habitat Strandveld Vineyards is a proud member of the Biodiversity in Wine Initiative and strives to conserve and rehabilitate the delicate fynbos areas surrounding the vineyards. The removal of Port Jackson along the waterways (20ha) and the successful eradication of pine trees in a rehabilitated potato field (59ha), with almost no new regrowth, is an integral part of the farm’s commitment to protect the natural habitat of the farm. Buffer strips between vineyard blocks are now flourishing with flowering fynbos and abundant bird and insect life. In order to preserve the exceptional biodiversity of the Strandveld, the farm, together with other Elim winegrowers, is part of the Nuwejaars Wetland special management area aimed at the sustainable management of these precious wetlands with their diverse indigenous flora and fauna. The Overberg area is the smallest plant kingdom in the world with the greatest number of different species. Of the nine thousand species, some can be found nowhere else. Unique among the Overberg habitats is the Strandveld Agulhas Plain, significant by international conservation standards due to its rich biodiversity. The region is a precious habitat of the greater Cape Floral Kingdom which consists mostly of fynbos and renosterveld. Of the 800 Erica species in the world, more than 80% grow in the Cape Floral Kingdom.

Cool climate wines A true expression of the unique Strandveld terroir, the farm’s cool climate wines are rooted in the rich history of the area. Inspired by the Portuguese mariners who first rounded the Cape in 1487, thereby opening a sea route to the spices of the East, Strandveld has paid homage to these brave sailors and named some of their wines in their honour. “First Sighting” commemorates Bartholomeu Diaz’s first glimpse of Cape Agulhas in April 1488. Strandveld “Adamastor” (a blend of Sauvignon Blanc and Semillon) is based on the legend of the mythical character, which is supposed to have lived on top of Table Mountain, and appeared as a threatening storm cloud - a symbol of nature which the Portuguese navigators had to overcome on their voyages of discovery. It was only in July 2001 that a rundown sheep and wheat farm was purchased and the first vines planted - Sauvignon Blanc and Shiraz – and a modern winery was built. Today there are 80 hectares under vine after subsequent plantings of Pinot Noir, Semillon, Mourvedre and Grenache. Strandveld Vineyards has two labels – the premium Strandveld range and the First Sighting wines which are all “wines for drinking and enjoying”, says winemaker Conrad Vlok. Nurtured under Vlok’s watchful eye, the Strandveld vines are shaped by a variety of stony, mineral-rich soils and unabating seawinds which give the wines their distinct character and flavour. Over the years, these wines have been richly rewarded with numerous international accolades, including a gold medal at the Concours Mondial Sauvignon Blanc Awards for the Strandveld Sauvignon Blanc 2012, and five stars in the Platter’s South African Wine Guide for the Strandveld Adamastor 2009. Chef Grégory follows a ‘little is big’ mantra and supports smaller, local yet top-notch quality producers to guarantee that the freshness and taste of its Ploughman’s Platter is paramount. A
s the first Europeans to explore Africa, the Portuguese have infused the continent with their culture and cuisine. Being of Portuguese descent, I can appreciate the nuances with which the “porras” have added a little spicy flavor to South African cooking. A passionate and at times humorous bunch, South African Portuguese are sometimes thought of as the true clowns of the South African stage. Put simply: you know you are a Portuguese South African when your mother or grandmother has Maria in her name, your father
or grandfather is called Manuel, Jose or Antonio, you have a rooster napkin holder, and when you visit your parents they make you eat three servings of dinner at each sitting (if you don’t they will think that you don’t like their cooking). Aside from the ever popular peri-peri chicken on the coals, the next most popular and widely eaten Portuguesederived food in South Africa has to be peri-peri prawns. This month I share with you this simple but delicious recipe in all its spicy splendor.
INGREDIENTS:
METHOD: Slit prawns down their backs and de-vein. Leave heads on, or remove them if you prefer. Mix all the marinade ingredients together and coat the prawns well. Allow prawns to marry the flavors in the fridge for a minimum of three hours (overnight is even better). While the prawns rest, boil the potatoes (skin on) for about 20 minutes (they need to be slightly undercooked and firm). Allow to cool to room temperature. Remove the skins and place on a baking tray. Drench in olive oil and season with rosemary and sea salt.
Prawns • 18 - 24 fresh black tiger prawns (use frozen if fresh not available) • 2 tbsp salted butter Marinade • 1 cup olive oil • 6 garlic cloves, finely chopped • 50g (1 1/12 ounces) red chillies, very finely chopped (remove seeds if you prefer less heat) • juice of 1 lemon • pared rind of 1 small lemon (use a vegetable peeler to remove the skin in thin strips) • 1 tsp red paprika • salt and milled black pepper • ½ cup dry white wine
Preheat oven to 220˚C (430f). Roast potatoes for 20 – 25 minutes or until golden brown. Place prawns in one layer on a baking tray and cover in marinade and wine. Drizzle melted butter over prawns. Approximately twelve minutes before the potatoes are ready, place the prawns into the oven and allow to bake until pink and succulent. Pile together potatoes and prawns and garnish generously with fresh parsley. Serve the pan juices separately as a drizzling sauce.

ince most of the activities in South Africa happen outdoors, sunburn is a potential health hazard. Cover up and use sun screen lotion whenever you are outside. Malaria risk areas include Northern KZN and Zululand, the Northern Province and Mpumalanga. The risk of contraction in South Africa is minimal when the proper precautions are taken. These include taking malaria tablets, using insect repellent and mosquito coils, and wearing long sleeved clothing. Tap water in most areas is safe to drink, but be sure to double check with your hosts first. One of the biggest health risks in South Africa is HIV and Aids. Cars
Most of the main car rental companies have outlets at the international airports and in major centres. In South Africa, we drive on the left side of the road. The general speed limits are 120 km/h on the freeways, 100 km/h on major roads outside built-up areas and 60 km/h in built-up areas. A Note for Smokers South Africa became one of the first countries in the world to ban smoking in public places in 2000 when it introduced its Tobacco Products Control Amendment Act. The Act prohibits smoking in restaurants, pubs, shopping centres and offices where there are no separate, enclosed smoking rooms.

Smoking in partially enclosed public places such as covered patios, verandas, balconies, walkways and parking areas is also prohibited. Children under the age of 18 are prohibited from entering designated smoking areas and purchasing cigarettes. There are stiff penalties associated with anti-smoking legislation in South Africa, including hefty fines for both the smoker and venue operator. Be aware that smoking is banned on all domestic flights in South Africa. Keep a look out for ‘no smoking’ signs and only smoke in designated smoking areas.
