A
h, November. What a glorious month. The year is winding down and people are starting to look forward to the holidays but the festive season has not yet completely bombarded us with its rampant consumerism. A perfect time to relax, November inspired us to explore some of the more unique ways in which to spend our free time. We all enjoy visiting spas, restaurants, reserves and hotels during our downtime, but we don’t always know where to go when seeking a completely unique R&R experience. In this month’s edition we explore a safari spa where guests can enjoy unlimited wellness treatments whilst gazing upon open plains teeming with wildlife. We visit a nature reserve a stone’s throw from the hustle and bustle of Johannesburg city and sleep in a tree house in the
open veld. We spend a weekend on a centuries-old wine farm and gear up in hard hats to explore a makeshift diamond mine. All the usual five star thrills and spills are presented, but with an emphasis on the more unusual hideouts and activities on offer in South Africa. We hope that you enjoy the mag and that you’re ready to visit our beautiful continent by the time you reach the last page. Perhaps you’ll have your own archive of unique stories to tell one day…

Known for his culinary prowess, Reuben Riffel has become a celebrated household name in South Africa. Chef Aviv Liebenberg, who has worked at all three of Reuben’s other restaurants (in Franschhoek, Robertson and at the One&Only in Cape Town), has been tasked with opening the restaurant at Abalone House. “I understand Reuben’s concept well, so I am able to implement it easily in the restaurant. His food has a fresh country feel and is plated beautifully. There’s nothing fussy about Reuben’s cuisine. We prefer to use just a few ingredients simply and well,” he shares. Elegant simplicity is also found at the Healing Earth Spa at Abalone House, which offers African-inspired therapies and products in four calm treatment rooms, one of which is customized for couples. The premium organic spa brand believes in ancient African traditions of healing and energy to bring about both health and relaxation. “We have a nurturing, conscious approach to beauty that is based upon love for oneself, one’s fellow human beings and the earth we live on,” shares founder Elisabeth Brandt. A
fter a careful process of identifying the top terroir for each cultivar, sites were identified, assessed and then selected for the Anthonij Rupert Optima, with the grapes tested and tasted for ripeness by the winemakers on a daily basis. Vineyards were selected from different sites in the Western Cape and each varietal was paired to a selected soil, climate and slope. In 2009 the grapes were handpicked in the early morning at 24.9째Balling, placed in lug boxes and transported in refrigerated trucks to the cellar. The grapes were then hand selected and sorted on a double sorting table. After the cold-soak, fermentation started and lasted for approximately 20 days. Malolactic fermentation took place in 225 litre new French oak barrels, and the wines were made and aged separately for 18 months. They were then blended and aged for a further six months in barrel before being bottle matured for 24 months in anticipation of release.

He then went on to pursue his chef training diploma at the South African Institute for Hospitality Education. From there the kitchen doors were flung wide open and Palanyadi spread his flavoursome touch by starting as a trainee chef at Camps Bay’s Blues Hotel before moving onto the same position at the Newlands-based Vineyard Hotel. “I started my first job and first kitchen at Blues Restaurant with no experience of how a kitchen worked. In the first week that I was there, the management decided to give the other chefs leave, thus leaving me alone on a section with no clue as to what to do! It was a great character-building experience that I wouldn’t change for anything.” Between 2005 and 2006 Palanyandi stepped into the role of Commi Chef at Baia Seafood Restaurant at the Victoria & Alfred Waterfront before taking the position of Chef de Partie at Caveau Wine Bar and Deli in Newlands. By 2007, Palanyandi was inspired to experiment with

METHOD:
espite our rich cultural and culinary diversity, South Africans share certain tastes that span across cultures, weaving together the tapestry of diverse preferences. One of these universal loves is the humble pumpkin, which is found in various forms in traditional Zulu, Xhosa, Afrikaner and Indian recipes. This month’s recipe incorporates almost all of these different uses of pumpkin in a fusion that is not only a feast of flavor but also a great visual expression of the rainbow nation.
Heat the oil over medium heat in a Dutch oven or heavy stock pot. Sauté the onion until translucent and just starting to brown. Add the garlic and cook for one minute, stirring frequently to keep the garlic from burning. Stir in the cayenne pepper, cinnamon and coriander, cooking for 30 seconds to release the fragrance from the spices. Add the chickpeas, squash, potatoes, carrots, tomatoes and two cups of vegetable stock, stirring to incorporate the spices. Bring to the boil then reduce heat to simmer. Cover and cook for 30 minutes, stirring a few times. Place the whole pumpkin in a preheated oven on 400˚f (200˚C) and roast for 30 minutes while stew cooks. Remove after 30 minutes and set aside. Add the snow peas, mushrooms and parsley and continue to cook, uncovered, for 10 minutes. Taste, and adjust seasoning with salt and pepper. Place stew into roasted pumpkin and dress with fresh coriander. Serve with yellow polenta cooked according to packet instruction. I have served this stew to some real South African ‘meat and potatoes’ kind of guys, who ate it all up and asked for more despite the fact that it is a completely vegan dish. The pre-conceived idea that a real meal must include some form of animal protein can easily be dispelled with the right recipe.
INGREDIENTS: • 2 tsp olive oil • 1 medium onion, diced • 2 garlic cloves, minced • 1 tbsp cayenne pepper (or more, to taste) • 1 tsp ground cinnamon • 1/2 tsp ground coriander • 1 large butternut squash, peeled, seeded and cut into 1-inch cubes • 1 medium to large pumpkin, cut on top and seeded but not peeled (the peel will function as your serving dish) • 2 medium sweet potatoes cut into 1-inch cubes • 2 medium carrots, chopped • 2 cups white or button mushrooms • 1 cup raisins • 2 cups well ripened tomatoes, chopped • 1 cup dried chickpeas, soaked overnight in water, drained and rinsed • 1 cup snow peas • 1/4 cup chopped flat-leaf parsley • 4 cups vegetable stock • Salt and fresh black pepper, to taste
Tip: Like all stews, this one is even better the day after cooking. If you have a lot left over you can make a hearty pumpkin soup by pealing the pumpkin and mixing all the flesh and left over stew in a blender. Blitz together with equal part milk or soy milk until smooth, heat and serve with crusty bread and a dollop of crème fraîche or natural yoghurt.

ince most of the activities in South Africa happen outdoors, sunburn is a potential health hazard. Cover up and use sun screen lotion whenever you are outside. Malaria risk areas include Northern KZN and Zululand, the Northern Province and Mpumalanga. The risk of contraction in South Africa is minimal when the proper precautions are taken. These include taking malaria tablets, using insect repellent and mosquito coils, and wearing long sleeved clothing. Tap water in most areas is safe to drink, but be sure to double check with your hosts first. One of the biggest health risks in South Africa is HIV and Aids. Most of the main car rental companies have outlets at the international airports and in major centres. In South Africa, we drive on the left side of the road. The general speed limits are 120 km/h on the freeways, 100 km/h on major roads outside built-up areas and 60 km/h in built-up areas. Smoking in partially enclosed public places such as covered patios, verandas, balconies, walkways and parking areas is also prohibited. Children under the age of 18 are prohibited from entering designated smoking areas and purchasing cigarettes. There are stiff penalties associated with anti-smoking legislation in South Africa, including hefty fines for both the smoker and venue operator. Be aware that smoking is banned on all domestic flights in South Africa. Keep a look out for ‘no smoking’ signs and only smoke in designated smoking areas.
