If December is the proverbial light at the end of the tunnel, November tends to see many of us running out of gas just after turning the final corner. If, like us, you have grown weary of this year but still have a substantial amount of slog to wade through before leaving on your year-end vacation, you may do well to take a few moments to re-motivate yourself by having a look at some of the extraordinary experiences and destinations that await you at the end of the long, hard year. Feel like heading to the bush but not yet sure which of the myriad reserves would best suit your needs? The pristine private nature reserve and luxurious lodges explored in this month’s cover feature offer something for everyone – from nature lovers to wellness seekers and

families simply looking for a bit of uninterrupted quality time. Another spectacular safari option we investigated for this edition is the five-star Ngoma Safari Lodge in Botswana’s famous Chobe National Park. If luxurious riverside accommodation and virtually unrivalled game viewing opportunities appeal to you, you would be hard-pressed to find a better destination. For those whose year-end breaks are not complete without a bit of culinary indulgence, we present unique winelands and seaside food and wine experiences on offer from now until the end of the year. Chin up – we’re almost there!

As with everything at Southern Camp, dining is a truly memorable experience. Breakfast and lunch are served in the elegant open-sided dining room, which takes its decorative inspiration from the surrounding natural landscape and features a wine cellar showcasing a fine collection of South African sips. The traditional outdoor boma (an enclosed outdoor eating area) is the favoured setting for dinner. Illuminated by firelight and starry skies,

room, bar area, game viewing deck, pool deck, and plunge pool – all overlooking the spectacular plain and busy waterhole. Ngoma Safari Lodge is another premium offering from Africa Albida Tourism (AAT), a hospitality group offering the cream of Southern African tourism products within the hospitality, restaurant and park fields. “We’re shooting for a sixstar premium luxury lodge,” says AAT’s Group Operations Manager Brian Gardiner. “It’s well away from the madding crowds in the town of Kasane, where it’s a bun fight and everyone is gunning through the same gate to go on game drives in the park. Our remoteness is a big USP, as we virtually have our own gate and almost exclusive use of an area of the park, which is one of Southern Africa’s finest game viewing destinations.” The lodge’s position inside a forest reserve at the edge of the park allows for a host of unique guest experiences, including spontaneous game walks, boat safaris, night drives, and bush dinners under the stars – things not strictly allowed inside the park and therefore not available to most other lodges and hotels in the area. While Ngoma Safari Lodge is situated 55 km from the nearest town of Kasane, it is a mere 135 km from the magnificent Victoria Falls. rafted from selected low-yielding Stellenbosch vineyards in the heart of red wine country, the 2011 vintages of the flagship Director’s Reserve and the Classique are both wines of great elegance and distinction. These wines have an impressive lineage spanning more than a decade, with two Veritas Double Gold medals and a Classic Wine Trophy already in The High Road hall of fame. The High Road Director’s Reserve 2011 is a Cabernet Sauvignon driven blend of four classic Bordeaux varieties matured in 100% new French oak. Beautifully integrated and complex on the nose and palate, this wine is intensely rich in fruit and wood nuances supported by a backbone of full, ripe tannins. A blend of Cabernet Sauvignon (57%), Merlot (27%), Cabernet Franc (13%) and Petit Verdot (3%), it is a definitive expression of the 2011 vintage, with its elegance and richly-layered fullness. “An amalgamation of four Bordeaux varieties, the 2011 Director’s Reserve is a fine example of a wine’s ability to allow the different components to work together to create a structured and well-integrated wine with intense depth and complexity,” says winemaker Mark CarmichaelGreen, who believes it will reveal even more vibrant cassis and berry fruit if left to develop further over time. Differing slightly in style with less exposure to new wood, The High Road Classique 2011 is an accessible fruit-forward wine with signature soft, elegant tannins. The wine is composed of Cabernet Sauvignon (58%), Merlot (33%) and Cabernet Franc (9%), and teems with black cherries, berries and mulberries on the nose and palate. “Never overpowering, the wood brings a balance to the wine and is well-integrated with the fruit whilst the tannins are subtle, soft and full,” explains Carmichael-Green, who feels that, although eminently drinkable now, the wine will age well with careful cellaring. Founded in 2003 by owners Les Sweidan and Mike Church (both insurance industry kingpins with a passion for wine), The High Road is committed to producing exceptional South African wines with the elegance, intrinsic depth and uniqueness of the classic Bordeaux red at core but expressing a sense of place that is unique to Stellenbosch. hen Robin Renwick was appointed British ambassador to South Africa in 1987, he formed a deep friendship with Helen Suzman. Now, drawing on Suzman’s personal papers, Renwick sets out to capture the qualities of the woman who, in the face of the hostility of the apartheid regime, carved out a unique role for herself as an intrepid fighter for human rights, simple justice and the rights of prisoners and the disenfranchised majority. Suzman’s steely determination in pursuit of these principles earned her the admiration of millions of South Africans, black and white. As she memorably said: “Like everybody else, I long to be loved. But I am not prepared to make any concessions whatsoever.’” In Bright Star in a Dark Chamber, Renwick recalls Suzman’s biting wit and fierce intelligence, and the close friendship she formed with Nelson Mandela while he was still behind prison bars.

Kapama Karula

Kapama Private Game Reserve occupies a vast area between the northern Drakensberg Mountains and the Greater Kruger National Park, in the north east of South Africa. It spans 13 000 hectares of magnificent African bushveld, and is teeming with wildlife. The most secluded and prestigious of four luxury lodges on the reserve, Kapama Karula is set on the banks of the perennial Klaserie River. Meaning ‘place of peace’ in the local language, Kapama Karula exudes calmness and depicts the pinnacle of luxury five-star safari accommodation. Five spacious suites are each equipped with a full range of luxury comforts and amenities. For an experience that’s closer to nature and authentically African, Kapama Karula offers guests the opportunity to sleep in one of two traditional Meru tents. While the lodge’s open-plan lounge and bar are spacious yet cosy, the African sunshine can really be enjoyed on the outside wooden deck, with views over the meandering river. A new addition to the lodge, the multipurpose library is equipped with audiovisual equipment.

“Every year we celebrate with our graduates as they complete their training and establish this milestone in their careers,” says SA Chefs Academy owner Paul Hartmann, a renowned international chef in his own right. “For us at the Academy, this year is however especially significant. We are proud of the contribution we have been able to make to the industry over the past decade.” The new branding that will be rolled out across the organisation takes its lead from the re-invented logo. The new logo incorporates creativity and professionalism among its design themes along with the green hue signifying growth and prosperity. “When we launched the school in 2004, our vision was to create a world-class training facility, built on our own personal experiences, to equip students to be the best in their chosen fields. Looking back now, I think we can safely say we are achieving our goal.” Past students of the SA Chefs Academy have achieved a variety of positions and recognition. Among them are: • Food Editor, House and Leisure magazine: Raphaella Frame-Tolmie • Head Chef, Test Kitchen restaurant: Ivor Jones • Executive Chef, Cavalli Estate: Henrico Grobbelaar • Owner, The Creamery: Kate Schrire • Owner, Woodstock Bakery: Paul Cremer • Owner, Gusto Cafeteria: Melisa Clayton • Owner, The Lucky Baker (Pretoria): Pauli Coetzee In addition, the Academy’s first development student, Elias Kafi, is employed at the five-star Table Bay Hotel. In 2014 the Academy will take on four new development students. In terms of student achievements this year alone, these include: • Lauran Case and Josh Wiid, winners in the One&Only Reaching for Young Stars competition; • Kirsten Helleman winning the Unilever Junior Chef competition and representing SA on the National Culinary Team; and • Sven Adams taking third place in the Unilever Chef of the Year (senior category). Hartmann says these highlights, as well as the day-to-day performance of former students, contributes to the overall image of the SA Chefs Academy. “This year has seen a marked increase in block release students, which shows the faith that the industry puts in us. We are excited about the prospect of training chefs that have a huge passion for and commitment to the industry. This is very important to us and we hope to continue to work closely with hotels and restuarants at this level.” The reputation of the SA Chefs Academy has also attracted significant partnerships with leading companies, including Bosch, Patleys, Rialto, Ecolab, Tydstroom, Nulaid, Kerry (formerly Orley Products) and Olive Pride. The SA Chefs Academy incorporates a catering division and offers courses including: 1. Full time Diploma in Culinary Arts and Pastry through City and Guilds International 2. Block Release Courses (Aimed at industry chefs that wish to gain a formal qualification) 3. Certificate in Culinary Arts 4. Diploma in Food Preparation and Culinary Arts 5. Diploma in Pastry The SA Chefs Academy is based in Black River Park, Fir Street, Observatory, Cape Town where it trains professional chefs for the industry, including hotels, restaurants, cruise ships, food product developers and food stylists. 01 Health sunburn is a potential health hazard

S

ince most of the activities in South Africa happen outdoors, sunburn is a potential health hazard. Cover up and use sun screen lotion whenever you are outside. Malaria risk areas include Northern KZN and Zululand, the Northern Province and Mpumalanga. The risk of contraction in South Africa is minimal when the proper precautions are taken. These include taking malaria tablets, using insect repellent and mosquito coils, and wearing long sleeved clothing. Tap water in most areas is safe to drink, but be sure to double check with your hosts first. One of the biggest health risks in South Africa is HIV and Aids. If you plan to be sexually active during your stay in South Africa, be sure to take necessary precautions. Check out www.redribbon.co.za for more information. Visit www.brillianttan.co.za for a safer way to obtain that holiday tan.

02 Safety • Do not to walk alone at night. • Do not flaunt your possessions when you are out in public. • Only allow clearly uniformed guards and personnel to handle your possessions. • Be aware of what is happening around you. • If anything should happen do not hesitate to phone the police.

03 Travel Options Air

There are several domestic airlines in South Africa, including South African Airways, South African Express, Interlink, Airlink and British Airways. Low-cost carriers include: 1time, Kulula and Mango.

Bus

Greyhound (+27 83 915 9000), InterCape (+27 21 380 4400) and Translux (+27 861 589 282) are the three main bus services in South Africa. All flights and bus tickets can be booked via Computicket at www.computicket.com or by calling +27 83 915 8000.

Trains

For budget trips across the country, Shosholoza Meyl is the best service available. Book online at www.shosholozameyl.co.za and enquiries can be directed to +27 86 000 8888. If you decide to splurge, though, there are three outstanding options. The famous Blue Train (+27 12 334 8459), Rovos Rail (+27 12 315 8242) and Premier Classe (+27 86 000 8888) are luxurious liners with all the bells and whistles.

A Note for Smokers South Africa became one of the first countries in the world to ban smoking in public places in 2000 when it introduced its Tobacco Products Control Amendment Act. The Act prohibits smoking in restaurants, pubs, shopping centres and offices where there are no separate, enclosed smoking rooms. Smoking in partially enclosed public places such as covered patios, verandas, balconies, walkways and parking areas is also prohibited. Children under the age of 18 are prohibited from entering designated smoking areas and purchasing cigarettes. There are stiff penalties associated with anti-smoking legislation in South Africa, including hefty fines for both the smoker and venue operator. Be aware that smoking is banned on all domestic flights in South Africa. Keep a look out for ‘no smoking’ signs and only smoke in designated smoking areas.
