New Hiking Trail at Gondwana Game Reserve in Mossel Bay

The newly established Quagga Hiking Trail is now open to guests to meander and explore the fynbos-clad valleys of the 1200-hectare predator-free area of Gondwana Game Reserve in Mossel Bay. Hikers can now amble on foot and see the many treasures on the reserve, with points of interest signposted. The trail traverses an area rich in biodiversity that is largely inaccessible to even 4Ă—4 vehicles, providing nature lovers with the opportunity to marvel at the abundance of indigenous flora and keep an eye out for rare and endangered animals such as the Cape Mountain Zebra. The trail has been named after the Cape Mountain Zebra, which is informally referred to as the Berg Quagga by the local people. The 2.5km circular trail is open to all ages and can be completed easily within 45 minutes. The walk starts at the Milkwood Valley ridge before descending into a valley where it continues alongside a non-perennial stream that attracts various indigenous bird and mammal species. www.gondwanagr.co.za

lthough most famous for its thriving art festival, the charming town of Grahamstown in South Africa’s Eastern Cape province attracts culture and outdoor enthusiasts throughout the year. Hartmann says these highlights, as well as the day-to-day performance of former students, contributes to the overall image of the SA Chefs Academy. “This year has seen a marked increase in block release students, which shows the faith that the industry puts in us. We are excited about the prospect of training chefs that have a huge passion for and commitment to the industry. This is very important to us and we hope to continue to work closely with hotels and restuarants at this level.” The reputation of the SA Chefs Academy has also attracted significant partnerships with leading companies, including Bosch, Patleys, Rialto, Ecolab, Tydstroom, Nulaid, Kerry (formerly Orley Products) and Olive Pride. poil your Valentine this year by indulging in a seductive combination of Pongrácz Rosé and heartshaped berry tartlets. The easy-to-make sweet dessert is a delightful companion to the enticing Rosé, with its blushing hue and delicate yeasty tones. Layered with toast and ripe fruit encased in a firm mousse with a persistent bead, Pongrácz Rosé is perfect for a day of romance. The delightful Cap Classique is composed in the classic French tradition of the noble varietals Pinot noir and Chardonnay, and when served ice cold in beautiful fluted glasses, special moments of luxury are guaranteed.

Filling: • 180ml (¾ cup) cream • 5 × 80g slabs of white chocolate, coarsely chopped • 100g raspberries • 200g strawberries • 45ml (3 tbsp) warm apricot jam 1. For the pastry, cream the butter and sugar in a food processor until pale and fluffy. Add the eggs one at a time while the motor is still running. Mix until well incorporated. 2. Add the flour and blend until it forms a workable dough. Cover in plastic wrap and refrigerate for 1 hour. 3. Preheat the oven to 180°C. Press the pastry into 8 heart-shaped tartlet tins and refrigerate for 30 minutes. Blind bake for 10-12 minutes or until golden and cooked. Set aside to cool. 4. For the filling, bring the cream to the boil in a small saucepan. Pour it over the chocolate and stir until smooth. Cover and refrigerate for 30 minutes. 5. Using an electric mixer, whisk the mixture until light and fluffy. Spoon it into the tartlets and top with raspberries and strawberries. Brush the fruit with apricot jam and serve. 01Healthsunburn is a potential health hazard

ince most of the activities in South Africa happen outdoors, sunburn is a potential health hazard. Cover up and use sun screen lotion whenever you are outside. Malaria risk areas include Northern KZN and Zululand, the Northern Province and Mpumalanga. The risk of contraction in South Africa is minimal when the proper precautions are taken. These include taking malaria tablets, using insect repellent and mosquito coils, and wearing long sleeved clothing. Tap water in most areas is safe to drink, but be sure to double check with your hosts first. One of the biggest health risks in South Africa is HIV and Aids. Most of the main car rental companies have outlets at the international airports and in major centres. In South Africa, we drive on the left side of the road. The general speed limits are 120 km/h on the freeways, 100 km/h on major roads outside built-up areas and 60 km/h in built-up areas. Smoking in partially enclosed public places such as covered patios, verandas, balconies, walkways and parking areas is also prohibited. Children under the age of 18 are prohibited from entering designated smoking areas and purchasing cigarettes. There are stiff penalties associated with anti-smoking legislation in South Africa, including hefty fines for both the smoker and venue operator. Be aware that smoking is banned on all domestic flights in South Africa. Keep a look out for ‘no smoking’ signs and only smoke in designated smoking areas.
