March 21st is Human Rights Day in South Africa. The national holiday commemorates the Sharpeville Massacre of 1960 in which, without warning, South African police opened fire on a crowd of approximately 5000 anti-pass protestors in the informal settlement of Sharpeville, killing at least 69 and wounding more than 200 people (most of them shot in the back). South Africans remember and honour the casualties of this tragic event by renewing their resolve to celebrate rather than fear the diversity inherent in their society. It is not only the population of South Africa (and Africa at large)
that is truly diverse, but its myriad offerings too. We celebrate this gift in this month’s edition, featuring attractions and experiences ranging from music, art and wine offerings to city trend-spotting and wildlife conservation insights. The lodge is currently managed by Stuart Barr and Sandra Kessler Barr, who both bring a wealth of international experience and are also well versed in Italian and German. The lodge’s history began in 1992, fulfiling the Venter’s dream of living in the bush. The family discovered a piece of land next to the Kuvjename River, immediately fell in love with it and decided to move from the city to the bush. Within a few years four chalets were built, in which the family lived together. Over the years Dawn Venter, with her passionate green fingers, has nurtured a blooming garden with numerous indigenous trees from the bushveld. The land was formerly used for cattle farming but in 1998 the seven landowners decided to drop their fences and create a Big 5 conservancy. Wild animals were gradually re-introduced, with elephants and lions strolling through the Venter’s gardens. The lodge surrounds subsequently had to be fenced to keep pesky tuskers from destroying the gardens. The Venter family always wanted to share their little piece of paradise with other people. After their sons moved on, the idea of a private game lodge was born and soon after that its gates opened to travelling guests. Describing the chalet offerings and unique layout, Venter says: “Three generously laid out chalets, each with swimming pools and bomas, as well as three private double suites are available to our guests. he Cape of Good Hope Altima Sauvignon Blanc 2013 and Terra del Capo Pinot Grigio 2013 are perfect wines to savour whilst making the most of the warmer weather. The Altima Sauvignon Blanc 2013 forms part of the Cape of Good Hope range, terroir-specific wines created in recognition of South Africa’s 350-year-old vinous heritage. The first vintage was launched in 2010, as a result of the Old Vines Initiative. This initiative was introduced by Johann Rupert who took on the wine mantle of the Rupert family following the untimely death of his brother, renowned winemaker Anthonij, in 2001. Winemaker Mark van Buuren describes this wine as displaying appealing tropical fig and pear aromas with granadilla and lemon zest adding brightness and vivacity, with exquisite ripe tropical flavours in the mouth. The fig, gooseberry, granadilla and lemon zest come though beautifully, resulting in a vibrant and lively wine with well integrated acidity. The palate is textured and round with good mouth feel, allowing the wine to finish on a light, dry, flinty note. The Cape of Good Hope Altima Sauvignon Blanc 2013 is available from the farm and at selected wine outlets throughout South Africa. It is the perfect wine to enjoy on its own or partnered with dishes such as scallop ceviche with avocado and tomato dressing, sushi, sticky pork ribs with lime, chilli and ginger, baked chevre with salad greens or sautéed prawns served with grilled lemon and a toasted sesame seed dressing. On Saturday 8 March, Nederburg will offer a fascinating experience focusing on the history of the farm and of the beautiful Paarl Valley. Proceedings will kick off at 09:00 with a refreshing glass of Nederburg Première Cuvée Brut, followed by a vineyard and cellar tour, a visit to Nederburg’s museum, and a sumptuous lunch at The Red Table restaurant in the manor house. Guests will also get to taste the Nederburg Heritage Heroes range of five wines, each named in honour of a personality who has played a role in shaping the history of Nederburg. In the kitchen, we talk about root to flower eating,” says Haute Cabrière Chef Ryan Shell with an excited twinkle in his eye. “Vegetables are such a fantastic way to showcase what’s in season,” he adds. “I’m eating more and more vegetarian these days,” he enthuses. With the new vegetable garden at Haute Cabrière estate, Ryan is spoiled for seasonal choice. “We create our dishes around the fantastic produce from the ground: whether it’s asparagus, baby fennel, turnips, salads, beetroot or pea shoots,” he says. Take, for example, the smoked ricotta ravioli which, like all dishes at Haute Cabrière, can be enjoyed as a starter or main course, and is served with various textures of beetroot: roasted cubes, pickled pieces, crispy leaves and a purée of the earthy bright vegetable on the plate highlight the smoky creaminess of the ricotta perfectly. Vegetarian options at the restaurant are also expertly paired with the estate’s Pierre Jourdan and Haute Cabrière range of wines and Cap Classiques. Ryan emphasises that vegetarian dishes are not merely meaty dishes with the protein removed. “The vegetarian dishes have fantastic integrity - they are wholesome and utterly delicious.” Camembert mousse with sweet baby tomatoes is tangy and fresh, while smoked aubergine with pinot noir and pecorino gnocchi is richly delicious. Dishes are artfully plated - the ingredients treated with obvious technical proficiency and the refinement of a homemade aesthetic. The kitchen revels in these homemade products, from breads to preserves. A dessert special of passion fruit mousse, meringue, lavender jelly, passion fruit curd and raspberry sorbet is a taste explosion of fresh, fruity decadence, while the assiette of strawberry celebrates this favourite summer fruit with a Swiss roll, champagne tartlet, caramel panna cotta and deep-fried ice cream all infused

T
o know South Africa is to accept the bitter with the sweet - as one would in the flavour of a good marmalade. My love of food means that I will always try to interpret my experience and knowledge of my home country as creatively as the culinary arts will allow - sometimes more figuratively than literally. Johannesburg - the city of gold (eGoli in Zulu) - which beats its unique rhythm fuelled by veins of sweet yellow gold, was bitterly built on the shoulders of African migrant workers. Unfortunately many of these men were settled in the deceptively named Orange Farm, an informal settlement that should not be forgotten. It is this bitter/sweet mix of South African culture that infuses the creation of this month’s recipe.
Method 1. Wash and dry the oranges and lemon. Squeeze the juice from the oranges and lemon and add it to a large pot. Reserve the pips and orange halves but discard the remains of the lemon. Add 2.5 liters (5 pints) of cold water and the star anise to the juice. 2. Cut the orange halves in half again and scrape the pith and pips into a large square of muslin. Tie the muslin to form a bag. Add the bag to the pan and tie the string ends to the handle of the pan. 3. Cut the orange peels into fine strips and add to the pan. Bring the mixture to the boil. Reduce the heat and simmer for 2 hours until the peel is very soft and the liquid has been reduced by half. 4. Remove the muslin bag but squeeze as much juice back into the pan as possible. Add the sugar to the pan and stir over a low heat until the sugar has dissolved. 5. Boil the mixture rapidly for 25 minutes. Remove the pan from the heat and spoon a little marmalade onto a chilled saucer. Leave for a few seconds and then push with your finger. If the surface wrinkles, the marmalade is ready. If not, boil for a further 5 to 10 minutes. Repeat the wrinkle test until the correct consistency is achieved. 6. Remove the star anise and let the marmalade rest for 15 minutes before stirring in the whisky and mixed spice. 7. Place the marmalade in prepared jars (heat jars and lids in boiling water for about 5 minutes), place the jars upside down to make sure that they are correctly sealed, and allow the marmalade to cool.
Ingredients • 1kg (2.2lb) Seville oranges • 1 lemon • 2kg (4.4lb) preserving sugar • ¾ cup whisky • 1/2 tsp mixed spice • 1 star anise
You can start using the marmalade right away but I like to let it mature for a couple of weeks before opening. This golden treat also makes great homemade gifts for friends and family. ince most of the activities in South Africa happen outdoors, sunburn is a potential health hazard. Cover up and use sun screen lotion whenever you are outside. Malaria risk areas include Northern KZN and Zululand, the Northern Province and Mpumalanga. The risk of contraction in South Africa is minimal when the proper precautions are taken. These include taking malaria tablets, using insect repellent and mosquito coils, and wearing long sleeved clothing. Tap water in most areas is safe to drink, but be sure to double check with your hosts first. One of the biggest health risks in South Africa is HIV and Aids. Cars
Most of the main car rental companies have outlets at the international airports and in major centres. In South Africa, we drive on the left side of the road. The general speed limits are 120 km/h on the freeways, 100 km/h on major roads outside built-up areas and 60 km/h in built-up areas. Smoking in partially enclosed public places such as covered patios, verandas, balconies, walkways and parking areas is also prohibited. Children under the age of 18 are prohibited from entering designated smoking areas and purchasing cigarettes. There are stiff penalties associated with anti-smoking legislation in South Africa, including hefty fines for both the smoker and venue operator. Be aware that smoking is banned on all domestic flights in South Africa. Keep a look out for ‘no smoking’ signs and only smoke in designated smoking areas.
