t’s spring this side of the world, and we can thank the altitude of our huge interior plateau for the sunny, pleasant weather conditions that are so characteristic of our country and continent (yes, I’ve been watching BBC Earth documentaries – you will be too after reading this month’s film review). Compared to New York with its average 6.9 sunshine hours daily, Rome with 6.4 and London with 3.8 hours, South Africa with its average of 8.5 sunshine hours per day is one of the sunniest countries in the world. This month we follow the sun further into Southern Africa, taking you to the banks of the mighty Zambezi river and the eastern shoreline of the Mystical Zanzibar island. Whitewater rafting, sunset yacht cruises,

dhow excursions, snorkeling and diving are all on offer under our majestic sun. Add a soundtrack of the sweetest fusion of South African, Mozambican and Zimbabwean musical offerings and some chilled wine hailing from one of the oldest estates in South Africa and you’ve got the perfect summer right there. Certification against the MSC’s environmental standard for wild-capture fisheries is widely considered to be the most rigorous demonstration of seafood sustainability in the world. The restaurant joined the WWF SASSI (Southern African Sustainable Seafood Initiative) restaurant programme in 2008, and established itself early on as a Champion Restaurant through serving only green-listed seafood species. Chundu’s 1939 Rolls Royce), as well as game-viewing trips to nearby Chobe National Park. But some of the best experiences on offer are unique to Royal Chundu. Firstly there’s the colonial elegance and detailing of the lodge itself: located on the site of the old Royal Chundu Zambezi River Lodge, it was built almost entirely from scratch by owner Hugh O’Mahoney, who attributes his style to the influence of his mother, Kitchie O’Mahoney. Like so many intrepid women who settled in Africa after World War II, glamorous Kitchie was a born adventurer: from Malaysia, she travelled to Dorset, England, where she met and married Mike O’Mahoney, before finally setting sail for the uncharted wilds of Africa, where Mike had accepted a post as a surveying engineer in Northern Rhodesia. According to Tina Aponte, Kitchie’s granddaughter and Royal Chundu’s managing director, “Kitchie embodied refinement in the extreme – regardless of the terrain. She refused to lower her standards, ever, and we’ve tried to uphold this. She always served in and on silver, so I scoured antique stores and websites to find authentic silver tea and coffee sets for the rooms and dining tables. For island picnics in the middle of the Zambezi, my grandmother would pack her entire dinner service, full tablecloths and linen 13

he roiling tide of water that is the Zambezi moves inexorably towards its 100-metre plunge into the Batoka Gorge, where sky-high plumes of spray mushroom like cumulus clouds. Victoria Falls, aptly baptised “The Smoke That Thunders”, is one of Africa’s greatest spectacles, but to appreciate the real beauty of the river that births it, you need to find yourself on its upper reaches, on a shoreline far from the hustle and bustle of the main attraction. Comprising two luxurious lodges – River Lodge and Island Lodge – Royal Chundu offers the decadence of space and privacy in the midst of an untamed riverine wilderness. The lodge encompasses 15 kilometres of pristine river frontage, with rapids upstream and downstream creating an aquatic oasis. Opposite lies a nature reserve, where elephants, buffalo and a variety of antelope wander. It’s wild, yet utterly luxurious. Small wonder then that it was crowned Zambia’s Leading Luxury Lodge and Zambia’s Leading Eco-lodge in the 2011 World Travel Awards. If you’ve ever dreamed of being marooned on a tiny palm-dotted island – one with room service and an infinity pool, open-air bath tub and king-size bed, hairdryer and air-conditioning – Royal Chundu’s Island Lodge is the place to visit. With only four villas, it is arguably the most exclusive lodge on the Zambezi – a great place to celebrate your nuptials or reignite old romantic embers. River Lodge is no less of an aphrodisiac. Every one of the 10 airy suites, connected via a teak boardwalk, is carefully positioned to maximise views of the untamed forests and river without compromising privacy. If there’s any complaint, it’s how hard it is to tear yourself away from your new riverside home, with its deep armchairs, king-size bed and double showers – all with views of the swirling river and abundant birdlife. But move you must, even if only because the pool deck beckons with double-size day beds and smiling staff to pour the first gin and tonic of the day. It’s the kind of place where you’re happy to rediscover the joy of doing nothing, so make sure you schedule enough time to do just that! So now we offer our guests something similar: island picnics with tables, silverware, a full bar, Persian carpets, hammocks, the works!” Another experience unique to Royal Chundu is to take a makoro trip to explore the tiny village of Mushekwa. Here Edith Mushekwa, midwife and marriage counsellor, among other things, and the daughter of the village founder, personally meets guests. She takes them on a tour of the village, showing them her modest but immaculate mud and thatch house, the community garden, the precious manketi trees (according to Edith, “even the very poor can survive on this nut!”) and the other interesting plants this fishing and farming community relies on to survive. Keen birders can ask for a personalised safari, looking specifically for species endemic to the Royal Chundu area, such as the black-cheeked lovebird or the emerald cuckoo. These trips can last from as little as two and a half hours to a full day – the choice is entirely yours. Similarly, the Royal Chundu fishing trips are tailor-made to your requirements, be they to catch the infamously difficult tiger fish or the prized Upper Zambezi yellow fish. Whatever your interests, don’t miss Royal Chundu’s river rafting, an exhilarating trip that requires no experience. has an experienced paddler who steers guests from lush reed banks, through island eddies and deep-flowing channels, into playful rapids that are enormous fun to traverse. A makeshift bar, set up on a sandy beach, is just reward for the intrepid rafter! The floating spa is another reward well worth claiming. With the lullaby of the river trickling past, you will be rubbed into a submissive, blissful state, ready for the next adventure – an hour in the hammock, before the evening sunset cruise, when the sinking African sun turns the river into molten gold. Meals are served in a variety of locales, from the al fresco viewing deck to the elegant dining room. he Tasting Room at Le Quartier Français is an awardwinning fine dining restaurant in the French Huguenot valley of Franschhoek. The restaurant is the brainchild of executive chef Margot Janse and the dishes on the tasting menu are designed to be wonderful surprises. The restaurant’s food is already world-renowned, so we have a bit of a surprise for you this month as we explore a different aspect of what makes it so successful. Herbert Janse, Margot’s brother, flew in from Holland and spent an intensive couple of weeks redesigning the worldrenowned restaurant. With a background in set and theatre design he certainly has theatrical flair, and has created a stage worthy of the cuisine. “The décor reflects Margot Janse’s food…,” says Herbert, “…the unexpected.” The entrance to The Tasting Room has been wallpapered with candy foil wrapping from Paris. On closer inspection the turquoise foil has an Art Deco motif, and the light bounces off the blue in pink and gold. Inside the immediate feature is a large, square light hanging in the entrance hall. Suspended from the base are over 2000 balls. The unexpected touch here is that there are 20 randomly placed balls, which are lit brighter than the rest. “Like a starry sky,” explains Herbert. Against the far wall, different colored ropes have been placed in lines to create an organic shape that resembles the mountains in the Franschhoek valley. The tables don’t have tablecloths, joining a worldwide movement away from the stiffness and formality the term ‘fine dining’ conjures. And it would be a sin to cover the artisan handiwork of the tables themselves. Crafted by Franschhoek local, Stuart Douglas of Douglas & Co., who specialises in custom made cabinetry and designer furniture, the tables are made from blackwood and Franschhoek oak from trees felled when the dam was built. Stuart’s handiwork caters to contemporary lines with visible joinery and dials, “no curves or frills”. William Welch cutlery neatly offsets the clean finish of the tables, alongside specially made side plates by celebrated local artist Clementina van der Walt. Antique crystal bulbs dating back to 1910 have been placed irregularly on the ceiling. Herbert found them in Holland: “they’re early electric bulbs that were once used at fairs.” There’s also a set of crockery stuck upside down to the ceiling—almost like a wink from the chef herself. representation, for example on the Plant Improvement Board of South Africa - the agricultural organisation that is supremely responsible for ensuring the highest quality of local vineyards. Only the best grapes from 300 hectares of vineyards are selected for crafting the wines across the Bosmans range. The wines are made in a 250-year-old cellar that was restored in 2006. The project has retained the authenticity of the old buildings, incorporating elements such as the original thick walls and broad wooden roof structures, while installing modern winemaking equipment. The result is a winery that produces outstanding wines in environmentally and socially responsible ways that have been a hallmark of Bosman Family Vineyards since its very beginning. “The farm has a wholesome approach to people and nature which speaks to the soul,” says winemaker Corlea Fourie, who joined Bosman Family Vineyards during the cellar restoration. She applies this tack to her profession too. “We want to make authentic wines that are not too clinical and that demonstrate passion. They should show where they come from, otherwise why are we putting in all the effort?” The palette at Corlea’s disposal is vast and constantly evolving. One of the ranges, for example, is a key driver of innovation. “Loads of winemakers are confronted with making blends for the sake of blends, but with our Adama range of wines there are no confining structures in production, which makes it so much easier,” she says. “It offers fantastic leverage for a winemaker to have such a place. There are no rigid rules. If there isn’t something out of the ordinary going on in the cellar, there’s something wrong!” she adds. A model empowerment initiative that offers equity as

he Bosman Family Vineyards story begins in 1699 when Lelienfontein, the land that is now its home, was first granted to French Huguenot Philipe de Royan by the then Cape Governor Willem Adriaan Van der Stel. The family’s first ancestor to settle in South Africa was Hermanus Bosman. Records from 1707 show that he was a sieketrooster (caregiver) who worked in the community of Drakenstein and whose descendants were later involved in the goings-on at De Oude Plantasie, the site of the Grande Roche Hotel and its famous Bosman’s Restaurant today (featured in the July edition of Ultimate Africa). The story goes that Bosman’s knack for producing strong, disease-resistant and productive vine plants spread rapidly after he gave a passing farmer a few specimens. Today, the enterprise is a major supplier to producers of some of South Africa’s most renowned wines. Bosman’s diversified interests have seen it rise as one of the most successful vine nurseries in the Southern Hemisphere and producer of exceptional wines from one of the oldest vineyards in South Africa. It is through Lelienfontein Vine Growers that Bosman Family Vineyards has acquired one of the most enviable assets for a winemaker - a veritable library of almost 50 different grape varieties at its disposal. The privilege is one enjoyed by only very few wineries anywhere in the world today. It is also the essence of the enterprise’s slogan: ‘From Vine to Wine’. Utilising the latest technologies and innovation at sites in Wellington, Hemel-en-Aarde Valley and the Karoo, Lelienfontein Vine Growers cultivates vines of the highest standard with minimal risk of infections and viruses. It is actively involved in research and development through

reward was established at Bosman Family Vineyards to acknowledge the long-standing relationship with workers on the farm. In 2009, Bosman Family Vineyards obtained Fairtrade accreditation, which recognises its social and environmentally responsible efforts and places it amongst the most successful quality-driven family-owned Fairtrade producers in South Africa. “The objective is to become the leading ethical, familyowned wine producer in the country,” says MD Petrus Bosman. “We see ourselves as community builders rather than as mere farmers. I must admit I never expected another book on the realities of the Digital Age to be engaging.

W

e have been told, time and again, of the objectification and facile self-delight of our incessant online activity. What I have not heard so often, though, is the proposition put forward by Tom Chatfield, author of The School of Life’s How to Thrive in the Digital Age, that it is in fact individual human bonds and serendipities that matter most online, and that it is these above all that will mould the future of technology. Chatfield suggests that our fairly recent willingness to make the digital aspects of our lives ever more complex and messily human will be what guides the digital arena, which he believes to be desperate to extract greater depth from its public spaces, towards a more personalized and humanized sphere. Chatfield is certainly not a digital idealist, and is the first to encourage unplugged productivity in which we stop multitasking so that we can start to exist. Although an illustration in the book reminds us of the fact that time is the one quantity of which all the world’s technology cannot conjure a particle more, he cites his all-time favorite New York Times headline as: ‘Slow Down, Brave Multitasker, and Don’t Read this in Traffic’. Chatfield muses on the new public propriety that has evolved around partial attention and, like many before him, argues that the very systems that gift us control – e-mail, text messages, status updates – have the potential to denude us of what it means to thrive as human beings.

We’re still trying to figure out this illusive ‘madness’ concept. Philippa Perry, author of the School of Life’s How to Stay Sane, suggests that an attempt at understanding sanity may be a better point of departure. Perry disputes the stereotype of self-observation as a form of self-absorbed navel gazing, citing Buddha, Socrates and Freud as leading proponents of the practice. Each of these individuals seemed to understand, long before the recent theory was developed, that our ‘threein-one-brains’ actually require a fair deal of training before we can profess to live in an age of reason. From Shakespearean literature to dementia studies amongst nuns, Perry’s case studies are both stimulating and entertaining. Her own raw confessionals are also quite comforting. I resonated particularly with two of the book’s main threads. The first is that how we interact with each other is the main determinant of our mental health or ‘sanity’. As philosopher Martin Buber so elegantly asserted, ‘all real living is meeting’. Perry highlights the downfalls of books prescribing rigid sets of relationship behaviors, arguing that they take away our ability to meet the other as a subject, forcing us to view that person as an object that will respond predictably to our chosen behaviors. The second is her refreshing approach to the age-old encouragement of optimism through the idea that the predicting of disasters does not ward them off or make them any more tolerable. I particularly enjoyed her categorical assertion that pessimists think they are cleverer that optimists, but that, simply put, they really aren’t. At no point in the book does Perry suggest that the achievement of so-called sanity is at all easy. Rather she suggests that we too often mistake certainty, which she believes to be a trap in itself, as sanity. Luckily a set of exercises at the conclusion of the book kickstarts the reader’s journey towards recognizing the difference.

Where Chatfield’s argument differs is in the operative word ‘potential’, as he believes that if we adopt a kind of paradoxically named cutting-edge conservatism, we are indeed capable of regulating the endless streams of communication flowing our way, putting the ‘needs’ of our machines below our own and avoiding the isolation that seems to be a necessary counterpart to our ceaseless availability. I found the most intriguing thread of the book the exploration of how personal memory, with its richness, mystery and contingency, has been replaced with digital memory, which of course allows us to bypass the inner processes of consolidation. This idea was originally put forward by Nicholas Carr in his 2010 book, The Shallows, and is something against which Chatfield warns is a potential but not necessary downfall of technological existence. Chatfield believes that human beings’ ability to adapt and willingness to take ownership of what is going on inside our heads will save us from digital doom. Speaking of that which goes on inside our heads, I’d love to know what you make of the following categorical statement: ‘I am sane. You are eccentric. He is mad.’ Sound familiar?

ormed in 2002, the band is made up of seven talented and diverse musicians from South Africa, Mozambique and Zimbabwe, with their music showcasing the best of each nation. Freshly Ground is fronted by the diminutive yet virtuosic Zolani Mahola, whose voice flows over no fewer instruments than guitars, keyboards, percussion, violin, flute, mbira, harmonica and saxophone. Despite the seeming plethora of instrumentalists, the music is tight, infectious and undeniably groovy. The energy exuded by the band during live performances is surely the bedrock of their success. To date, Freshly Ground has released four albums – Jika Jika (2003), Nomvula (2004), Ma Cheri (2007) and Radio Africa (2010). They have scooped numerous prestigious local and international awards, including five sought-after SAMA Awards and the MTV Europe Award for Best African Act in 2006. Freshly Ground has performed extensively internationally, with noteworthy appearances at the Montreal, Hague and Shanghai Jazz Festivals, the Rio Loco Festival, the Cannes Film Festival, the Radio City Music Hall, the Central Park Summer Stage, the Theatre Royal Carre and the Rome Auditorium, to name a few. As leading proponents of the South African music scene, they have been headlining favorites at prestigious local events such as the Nelson Mandela Foundation Gala, the Cape Town International Jazz Festival, the Grahamstown National Arts Festival, the 46664 Fundraising Concert and the 2010 Fifa World Cup Opening and Closing Ceremonies. You may have heard them at that last little event mentioned, where their Waka Waka collaboration with Shakira had the world dancing together for Africa. Another household favorite that went viral not too long ago was their infectious Doo Bee Doo song which, although delightful, seemed to stick with thousands of South Africans for a bit too long. Although I enjoy their I’d Like and Pot Belly hits (the music video for the latter is also quite charming), I actually prefer their lesserknown, more subdued pieces. You know, tunes for the times when the fire is low and you’re asked

The way Zolani sings Baby in Silence reminds me of the pain shared by so many of the sisters of our nation, and although the implications of the surprisingly light song are rather somber, Zolani’s later reminder for each and every sister to ‘Let it flow, girl’, is eventually the message that rises victorious. Similarly, the songbird’s laments about the man she built who then crumbled to the ocean and the band’s sobering political commentary are reminders that there is a depth and authenticity to their music that may sometimes be overlooked in their sunny Afro-Pop tunes. Although the immense spaces and eerie silences of the planet’s vast open plains provide the illusion of

The examination of the unfathomable behaviors of the ‘mysterious’ female asses is almost as humorous as the sight of the water-shy baboons, and homage is paid to the strength of the area’s enduring yaks. In true BBC Earth style, the film also gives the plains’ less majestically perceived animals their moment in the spotlight. An arctic fox burying goose eggs looks just like a little dog digging in a snow-covered backyard and a pika (relative of the rabbit) is easily one of the cutest animals I have seen in a while. The way in which BBC manages to capture the

animals on film causes one to become intimately involved in and moved by the tragedies and triumphs of everything from a herd of wildebeest to a flock of geese. From a shot of hundreds and thousands of marching one-ton bisons to the synchronized landing of millions of migrating birds, BBC Earth’s portrayal of the wildlife supported by the plains of our planet will leave you in awe of these great spaces and the life that they support. The second part of the film also explores the great jungles of the world, but those majestic and mysterious areas deserve a feature of their own.

The elephants know that the drinking holes are dangerous, but they have no choice, and the dramas that play out there are a reminder of the importance of water for all life. After months of this desperate clinging to existence, the baked savannahs undergo radical change as grass, the great survivor, rises again. Nowhere is the vibrancy of this transformation more impressive than in South Africa’s Namaqualand, where the new flowers transform the landscape into a chiaroscuro of life and color. When the water is plentiful, the grass in certain parts of African savannah still grows even though it is submerged. It is rather strange to see buffalo wading through water, and watching baboons tentatively tip-toeing in provides more humor than any staged comedy ever could. Of course only the marvelous David Attenborough can accompany this spectacle with a quip about ‘juicy snails (being) ample recompense for soggy paws’. Although we at Ultimate Africa know that Africa boasts the greatest that the natural world has to offer, the film does showcase breathtaking scenes and species from other parts of the world. The film affords each species the respect it deserves,

BC Earth’s Planet Earth series delivers a stunning presentation of some of the world’s greatest plains. From the African Savannah and the North American Prairies to the Tibetan Plateau and the Arctic Circle, the film explores the wildlife of these great areas of feast and famine. The portrayal of the baked African savannah is particularly enthralling. Needing to drink daily, elephants are the most affected when the grasslands undergo the radical change to dustbowls. It is fascinating to see how the matriarchs, relying on memory alone, are able to lead their families across hundreds of miles to those special water holes that saved them the year before. In these times of hardship and scarcity, it is not uncommon to see elephants sharing water holes with lions, dominating during the day but vulnerable to the hungry cats, whose night vision is far superior, as darkness falls. Lions don’t usually hunt elephants, but desperate times call for desperate measures. Thirsty herds continue to arrive throughout the night as it is a cooler time to travel, and although they form an impenetrable wall of grey around their young, lone elephants are vulnerable to attack from prides of lions. Although it is hard to watch, the footage of a pride taking

A Note for Smokers South Africa became one of the first countries in the world to ban smoking in public places in 2000 when it introduced its Tobacco Products Control Amendment Act. The Act prohibits smoking in restaurants, pubs, shopping centres and offices where there are no separate, enclosed smoking rooms.

 Smoking in partially enclosed public places such as covered patios, verandas, balconies, walkways and parking areas is also prohibited. Children under the age of 18 are prohibited from entering designated smoking areas and purchasing cigarettes.

 There are stiff penalties associated with anti-smoking legislation in South Africa, including hefty fines for both the smoker and venue operator. Be aware that smoking is banned on all domestic flights in South Africa. Keep a look out for ‘no smoking’ signs and only smoke in designated smoking areas.
