where Credit is Due “A great part of the pleasure of travel lies in the fulfillment of early wishes to escape.” – Sigmund Freud April can be a difficult month for many. The year has already dealt a few months’ worth of blows, yet most of us still have a few more to go before being able to take a decent break. In this month’s issue we focus on attaining true escapism in a short period of time – perhaps even over the Easter long weekend, for those of us celebrating it with some welldeserved time off. Our beautiful cover estate offers a secluded hideaway complete with therapeutic pampering and hearty country-style cuisine just a few hours from the airport. While the Three Cities Hospitality Group’s Imvubu Lodge is a gateway to the unspoilt beaches of the Indian Ocean, Fairlawns Boutique Hotel presents a holistic escape within city precincts.
To top it all off, Tau Game Lodge in the Madikwe Wildlife Reserve offers bespoke Easter and winter escapes in the true heart of the wilderness. For those remaining close to home, we present inspiration in the form of creative food and wine ideas, as well as a selection of novels that will allow you to escape to mythical forests and historical milestones from the comfort of your own home. Whatever form your escape takes, we hope that it’s a magical one. Enjoy the mag!

The industry is abuzz with excitement as tourism and hospitality stalwarts Newmark Hotels, Reserves & Lodges add the well-known Drostdy Hotel in Graaff-Reinet, Eastern Cape to their portfolio. The historic Drostdy Hotel, which opened in 1878, was originally built by French architect Louis Thibault to serve as the magistrate’s office for the town. Today, however, it is known by many passing travellers en route to the Eastern or Western Cape. Newmark envisions that the hotel’s development will garner exposure for Graaff-Reinet as a tourism destination, as well as grow the local economy. Renovations have already commenced to restore the gem of a property to its former glory as a five star boutique hotel, with the grand opening scheduled for December 2014. www.newmarkhotels.com

ontecasino General Manager Glenn Joseph, who has officially held the position since April 2013, is enthusiastic about the impact that Gauteng’s premier entertainment destination has on the neighbouring communities as well as further afield. “Montecasino is all about excellent entertainment for all age groups – and we do it exceptionally well. But it’s also about a lot more – and we’re committed to having a positive impact on our neighbouring communities for many years to come.” Environmentally, Montecasino takes its responsibility extremely seriously. Montecasino has an Environmental Policy Statement that acknowledges the impact the precinct has on the environment. The Policy is communicated across
all sectors of the property and is circulated to its tenants and sub-contractors. The statement commits Montecasino to minimising its impact on the environment by preventing pollution, reducing waste and ensuring that practical measures are implemented to protect and preserve natural habitats. It takes into consideration the effect its operations may have on the local community and commits the precinct to taking action to eliminate or reduce as far as practicable any potentially adverse environmental impacts. It strives to promote environmental awareness among its suppliers, contractors and partners by implementing operational procedures and it seeks to work in partnership with the community by

behaving in a confederate and socially responsible manner, and ensuring that effective and expedient incident control, investigation and reporting is in place. In line with this statement, Joseph says Montecasino recently entered into a partnership with Eskom requesting that they notify them when usage is extremely high, allowing them to switch on their generators for about three to four hours. “We’re aware that we are a large consumer of power in this area; we’re operational 24 hours a day and 365 days a year. But at the same time, we want to be a good corporate citizen. This collaboration ensures that we don’t expose our community to load-shedding unnecessarily.”

The Montecasino Bird Gardens project is strongly conservation-focused and Montecasino invests heavily into the breeding, educational and rehabilitation programs, which also provide a delight for every visitor, young and old. The outreach that Joseph is most excited about is Montecasino’s effective and community-developing Corporate Social Investment (CSI) program. “Some years ago Diepsloot was identified as an area where we wanted to be involved in social development as it is on our doorstep and many of our staff either come from there or have their roots there. Since then Montecasino has established sound projects that are focused on sustainability and life-changing opportunities.” He says his dream for Diepsloot is that it eventually becomes a suburb. “We’re in discussions with several companies that are operating social upliftment programs in Diepsloot to understand what is being done and to work with the community in providing assistance where it is most needed,” he adds. Much of Montecasino’s activity has been with children in the Diepsloot schools, through various programs. The newest one, about which Joseph is particularly excited, is the introduction of chess into the schools. “Chess is excellent for brain development, it encourages strategic thinking, and it can be played just about anywhere. It’s a wonderful sport for youngsters to get involved in. We’re in the early stages of introducing it into the schools and have started by training the teachers in chess and how to teach chess.” Montecasino has also put a lot of effort and funding into Tsogo Sun’s SunCares Rugby Program. “At the beginning of August last year, we held our second rugby festival under the auspices of the Tsogo Sun SunCares Sports Academy rugby program together with partners that included Golden Lions Rugby Union, Gauteng Department of Education and the Department of Sports and Recreation. The festival was held at Bophelong Sports Complex in Diepsloot and attracted 612 young boys from seven Diepsloot primary schools. Before the SunCares program, no rugby had been played in any of the Diepsloot schools – now the children are developing a passion for it and are keen to put in the hard work and practice necessary to advance in the game,” says Joseph. Montecasino’s efforts to contribute to the fiscus, improve the environment, and reach disadvantaged communities are all part of the character of the business. “All of these noteworthy contributions in so many vital areas of development in our community are undertaken through a sense of moral obligation, while we continue to offer a world of entertainment that incorporates a huge variety of options catering for business and leisure markets,” concludes Joseph. ormerly under the Protea Hotel Group (for the past 10 years), Imvubu Lodge was formally welcomed into the Three Cities Group’s family of renowned lifestyle hotels and resorts in December last year. Situated 160km North of Durban and 20km from the Richards Bay airport, Imvubu Lodge is tucked away in the lush greenbelt zone on the corner of Krewelkring and Hibbard Drive, Meerensee. Imvubu Lodge boasts the best in outdoor adventure and luxury leisure, conveniently situated adjacent to the scenic Lake Menywa and with private access to the unspoilt beaches of the Indian Ocean. Pleased with the opportunity of investing and extending the interests of the Three Cities Group within the Richards Bay area (reputed for containing one of South Africa’s largest harbours), Three Cities Managing Director John Creighton said the Group was excited to be part of one of the country’s rapidly growing and developing tourism locations. “Once a small fishing village, Richards Bay is today considered the industrial and tourism hub of the city of uMhlathuze. Occupying 37% of the 796km² of the municipal area, Richards Bay has been earmarked by the government as one of the country’s growth and development points. Richards Bay is already home to some of the country’s most lucrative and productive industries and we are excited to be taking a bite out
of this opportunity.” “Imvubu Lodge naturally ticks the Three Cities Hotels’ vision of exceptional guest experiences, providing business and pleasure guests with unique luxury accommodation and state-of-the-art business and conferencing facilities. The lodge is also centrally situated close to a hub of outdoor activities, and is a sporting enthusiast’s heaven. It is also perfectly situated to provide guests the unique experience of industrial tourism, one of the main attractions to Richards Bay and a first of its kind in the tourism industry. Visitors can go on fascinating tours around the factories and plants of the area, learning how they operate.” Newly appointed Imvubu Lodge General Manager Ina-marie Garcia said the team was thrilled about the new chapter and was looking forward to working with the Three Cities Group in achieving the lodge’s goal of being a local and international destination of choice in Richards Bay. “We believe the Three Cities Group will assist Imvubu Lodge in the effective management of industry protocol, in order to provide our guests with an experience that leaves a long-lasting and positive impression.” “Imvubu Lodge felt strongly that there was a need for a direct and ‘hands-on’ approach in the daily business of serving our guests. We were attracted to the ‘boutique style’ management and marketing process offered by the Three Cities Group. The Group abides by a hand-in-hand 26

We felt that through the collective skills of both parties concerned, our goals were more achievable.” Garcia was confident that the experience that Three Cities has gathered over the past 25 years and the existing passion at the lodge would strengthen its position in the industry. She said that ultimately the lodge would rely on Three Cities Group’s counsel to engage a new approach and to guide it towards a service offering that is the envy of other hotels. “Our primary vision is to continuously and consistently provide our guests with a positive and memorable experience. That is our daily vision. Our vision for the future depends on how we achieve our daily vision. If we can master this, our long term vision will be fashioned for us. We are all eager to implement the intellectual property that Three Cities has collected over the years and to see Imvubu Lodge become all she can be,” said Garcia. “Every year we celebrate with our graduates as they complete their training and establish this milestone in their careers,” says SA Chefs Academy owner Paul Hartmann, a renowned international chef in his own right. “For us at the Academy, this year is however especially significant. We are proud of the contribution we have been able to make to the industry over the past decade.” The new branding that will be rolled out across the organisation takes its lead from the re-invented logo. The new logo incorporates creativity and professionalism among its design themes along with the green hue signifying growth and prosperity. “When we launched the school in 2004, our vision was to create a world-class training facility, built on our own personal experiences, to equip students to be the best in their chosen fields. Looking back now, I think we can safely say we are achieving our goal.” Past students of the SA Chefs Academy have achieved a variety of positions and recognition. Among them are: • Food Editor, House and Leisure magazine: Raphaella Frame-Tolmie • Head Chef, Test Kitchen restaurant: Ivor Jones • Executive Chef, Cavalli Estate: Henrico Grobbelaar • Owner, The Creamery: Kate Schrire • Owner, Woodstock Bakery: Paul Cremer • Owner, Gusto Cafeteria: Melisa Clayton • Owner, The Lucky Baker (Pretoria): Pauli Coetzee In addition, the Academy’s first development student, Elias Kafi, is employed at the five-star Table Bay Hotel. In 2014 the Academy will take on four new development students. In terms of student achievements this year alone, these include: • Lauran Case and Josh Wiid, winners in the One&Only Reaching for Young Stars competition; • Kirsten Helleman winning the Unilever Junior Chef competition and representing SA on the National Culinary Team; and • Sven Adams taking third place in the Unilever Chef of the Year (senior category). Hartmann says these highlights, as well as the day-to-day performance of former students, contributes to the overall image of the SA Chefs Academy. “This year has seen a marked increase in block release students, which shows the faith that the industry puts in us. We are excited about the prospect of training chefs that have a huge passion for and commitment to the industry. This is very important to us and we hope to continue to work closely with hotels and restuarants at this level.” The reputation of the SA Chefs Academy has also attracted significant partnerships with leading companies, including Bosch, Patleys, Rialto, Ecolab, Tydstroom, Nulaid, Kerry (formerly Orley Products) and Olive Pride. The SA Chefs Academy incorporates a catering division and offers courses including: 1. Full time Diploma in Culinary Arts and Pastry through City and Guilds International 2. Block Release Courses (Aimed at industry chefs that wish to gain a formal qualification) 3. Certificate in Culinary Arts 4. Diploma in Food Preparation and Culinary Arts 5. Diploma in Pastry The SA Chefs Academy is based in Black River Park, Fir Street, Observatory, Cape Town where it trains professional chefs for the industry, including hotels, restaurants, cruise ships, food product developers and food stylists. Rhino Tagging Experience I often receive briefs from South African-based companies to quote on creating a travel incentive package, but the requests are less often for a local destination. It is common belief that a travel incentive must be exotic and glamorous in order to have the desired motivating effect on the company staff. However, offering a life-changing experience that supports South Africa’s local tourism can be far more exhilarating and memorable than the beaches and shopping malls of our overseas counterparts. have offered the road trip experience of the sights and sounds of rural South Africa. The seven-hour road trip to Thanda Private Game Lodge became an interesting journey for the group, who were amazed by the simple pleasures we take for granted – a blue sky and the open expanses of the Mpumalanga region, the beauty of the Jozini Dam and its surrounds in KwaZulu Natal. The Thanda Tented Camp offers an unrivalled ‘wowness’ on arrival. The view through the horn-like structures over the rimflow pool to the expansive natural bush valley below is breathtaking! This is a perfect place to retreat away from the bustle of the technological world we live in. Following a Sangoma welcome ritual, the first game drive included sightings of elephants stripping bark from one of the larger trees, followed by a sighting of three white (or wide mouthed) rhino, and lastly dinner under the stars accompanied by great South African wine to complete the long day before it was time to retreat to the comfort and luxury of the tents. The wakeup call was scheduled for 4 am, another very different time of day for the Europeans. Gentle tapping on the tent door aroused us from our slumber. Excited about what the day would bring, we sipped our coffee and chatted like a group of vervet monkeys.

ollowing a visit to Maropeng in February 2013 for the launch of Cooper Passenger Tyres in South Africa, the EMEA Sales Director for Cooper Tires UK (yes it’s with an ‘i’ not a ‘y’) was so impressed with the work being done by Kingsley Holgate on rhino poaching that he recommended that his marketing team run a consumer competition in three of their markets in Europe, namely Spain, Germany and France. The prize was to be a South African Safari for one lucky winner and his/her partner from each market. Jenny Soons (of the South African Cooper Tire Company) and I were asked to plan the prize winners’ safari trip and, having handled Cooper’s passenger tire launch, we knew that adding the unique Rhino Tagging Experience would be a complete surprise and a totally unexpected ‘extra wow’ experience. The seven-night tour kicked off with two nights at Maropeng as a ‘welcome to the Cradle of Humankind’, where the winners experienced the Maropeng Hotel and Museum. The visit to Lesedi Village and its tribal flavours was one of the many highlights of the first leg of the tour, which culminated in an afternoon visit to the Sterkfontein caves. We set off at day break in the crisp early morning air (beneficial conditions for rhino tagging) to traverse the reserve to the Ulwazi Volunteer Centre. Within minutes the sound of the Robinson Helicopter could be heard, and it soon landed with the vet, reserve manager, head ranger, Kingsley Holgate and Harry the pilot, whose aerial manoeuvres turned out to be an inspirational event all on their own. As the chopper took off again, the S.A.P dog unit, Thanda’s game management team (armed with water sprays
and various tools of the trade for Rhino Tagging) and the two guest Land Rovers formed a convoy and followed it to a point where we waited for further instructions and were joined by the anti-poaching unit. It didn’t take long for the aerial team to locate their mark, and the convoy set off at a speed not usually associated with game drives. The rhino had been darted and it was imperative that we got to the site as quickly as possible. We abaondoned the vehicle and hiked up the hillside, huffing and puffing until we arrived at the scene. 34

The game management team was already hard at work, with the huge animal lying on its side, being sprayed with a fine mist to keep her cool while the measuring, blood sampling, drilling, cutting, glueing and taping began. ‘Cooper-ette’, as I named her, had already had her ears notched and was being fitted with a transmitter in her horn. This process involved drilling a hole in the side of her horn, removing the tip to drill vertically downwards to meet the sideways hole, inserting the transmitter unit and then plugging the drilled holes with dental glue. The horn tip, I was assured, would not be flat for long, as the rhino would in time sharpen the tip herself. The removed tip and the shavings from the drilling procedure were secured under the watchful eyes of the S.A.P. for transport to a safe location for further research use. In a short while it was time to wake her up. We retreated back to the vehicles and moved out. At the sight of the helicopter taking off, we knew that the rhino was awake and on the move, and as we rounded the corner in the road we watched Cooper-ette trotting off. We returned to camp elated at our experience and thankful that at least one rhino had a better chance against the poachers. The enthralling day continued with Kingsley Holgate joining us for dinner, his epic tales of adventure making for great entertainment and leaving us all all in awe of his great achievements. The next day we drove out of the game reserve to a
school filled with children who really have very little means to support their attempts at gaining a decent education. Time was spent giving writing paper, pens, pencils and other stationery to them and seeing the effects of these simple gifts on the happy faces. After another day of participating in another rhino capture and tagging, excellent game viewing and relaxation, it was time to say our goodbyes, the good Sangoma offering us a farewell ritual for a safe trip home. The drive back to Jozi revealed the group’s true experience in conversation. Ideas were being thrown around about driving funding in their own countries for rhino tagging in South Africa and for the preservation of the rhino against poaching, as well as planning for their next trip to our beautiful country. Hopefully some of their ideas will materialise to assist in the conservation of the species. attention to detail, awe-inspiring location, sterling service and strong focus on natural local produce showcased in seasonal dishes that bear the chef’s hallmarks of simplicity and finesse. Grégory’s latest summer menus focus on provenance and unleash a fusion of fresh innovative dishes. Popular starters include his crispy farm egg with cauliflower velouté and his cured fizantakraal trout whilst farm fare such as Springbok, beef and quail, enhanced by intensely flavoured sauces, shine amongst the mains. Meat afficionados will enjoy his signature Karan beef fillet with braised beef croquette and his springbok loin enriched with parmesan custard and pumpkin gnocchi. Other taste sensations include his Carmay quail, whilst seafood lovers will enjoy his Mulloway cob with squid ink and smoked potato. His delicious dessert line-up adds to an elevated dining experience. A two-course menu costs R260 per person whilst a threecourse indulgence costs R340 per head. Diners can also experience Waterkloof Restaurant’s most popular dishes from a Degustation menu of six mouthful-portions paired with estate wines. This exceptional tasting menu costs R600 per person with wine or R500 per person without the wine matching options included. “Our Degustation Menu offers a reflective journey of what we perceive as the Full Monty of the latest Waterkloof classics, presented in a single dining experience,” explains Grégory. he gorgeously appointed ‘restaurant in the sky’ – situated in a 10metre high glass promontory with an eagle’s view over the estate’s vineyards and False Bay – was recognised as one of the country’s 2014 American Express Platinum-awarded restaurants. This fine dining programme identifies and honours the crème de la crème of South African eateries – those that are at the top of their game across a wide range of food styles, and that deliver an exquisite culinary experience. Waterkloof Restaurant is celebrated for a contemporary menu that focuses on locally sourced ingredients foraged from artisanal growers and fresh, organic produce from farm to plate. Here food is art, calling for unhurried appreciation complemented by seamless service. Chef Grégory Czarnecki draws inspiration from the restaurant’s spectacular setting on the slopes of the Schapenberg and demonstrates the techniques he learned at Michelin restaurants in France in his interpretations of ‘eco-conscious cuisine’. This ranges from farm eggs, wild mushrooms, herbs, flowers and micro-greens to freerange lamb, beef and sustainable fish which he tastefully transforms with whimsical and creative flair. His classic French cooking techniques presented in elegant interpretations of South African-influenced fare earned the restaurant an enviable nomination in the prestigious 2013 Eat Out Top 10 Awards. More recently Waterkloof was crowned culinary king in the Best Gourmet Restaurant at the Cellar Door Category of the 2013 Klink Wine Tourism Awards. “My mom used to travel to Asia a lot, and I would devour the colourful cookbooks she would bring back,” he shares. “When my wife and I achieved our dream of opening our own restaurant in 2009, I knew that I wanted to combine an array of influences and styles, so the name just seemed to fit,” he explains. “Our focus is, however, predominantly on South African dishes – some as traditional as mielie pap, samp and oxtail,” he adds. The bistro-style restaurant offers hearty breakfasts and brunches and locally renowned lunch and dinner dishes. Popular starters include peri-peri fried duck livers, smoked Springbok carpaccio and Cajun spiced fried squid. Delicious winter soups give way to tasty and generously portioned mains the likes of tiger prawns masala, Indian spiced beef curry and vegetable lasagne. Dutch East is, however, most famous for its matured steaks, and patrons are spoiled for choice with rump, sirloin, fillet, ribeye, t-bone and specialty meat cut options, all spruced with an array of flavourful sauces, from Chimichurri butter to red wine jus. The restaurant’s handcrafted burgers and wood fired pizzas come a close second to the famous steak offering. Dessert at Dutch East is a real treat, as standard favourites such as chocolate fondant and crème brulee are complemented by original creations like Pasch’s famous deep fried milk tart and Pink Lady apple pie. An onsite Coffee Roastery offering specialty roasted 100% Arabica coffee beans completes the Dutch East experience. Pasch’s perspective on cuisine is evident in each creation served. As he says, “if you have respect for your ingredients and prepare them in the best way possible, you can create magic.”
he first thing that is evident on entering the lively Dutch East Restaurant on Franschhoek’s bustling Huguenot Street is the extreme kindness of the staff. I use the word kindness specifically, as friendliness, in a hospitality context, is just an occupational prerequisite. The people at Dutch East really seem to care. “Are you comfortable?” “Are you happy?” “Have you enjoyed your weekend?” and “Who is today’s designated driver?” are all questions with which we were met during the course of our meal. Owner and Chef Pasch du Plooy is no exception. Gentle yet upbeat, he lends his quiet authority and expertise to the restaurant, which has become a favourite amongst local and international patrons. Pasch’s formal education in viticulture and oenology is immediately evident in the restaurant’s carefully planned and extensive wine list, which includes favourites from leading local estates the likes of Anthonij Rupert, Pierre Jourdan, Graham Beck, Boschendal and Waterford, as well as a few lesserknown yet equally satisfying gems. It is however Pasch’s years spent at the Institute of Culinary Arts that really saw his passion come to light. “I soon learnt that I was most drawn to simple, honest food that really focuses on flavour,” he shares. “I love refreshing old favourites with new influences – infusing recognizable dishes with quirky twists,” he explains. “Steak and chips, for example, is a very familiar dish worldwide, but nobody does it quite like we do it,” he adds. As for the name of the restaurant, Pasch explains that his family is originally from Holland, and that he has always loved the spicy, aromatic and flavourful cuisine of the East. 40

Gareth Patterson The elephants of the Knysna forest have long been the subject of mystery and conjecture. In 1994 the local forestry department maintained that there was only one surviving Knysna elephant, and they were thus declared functionally extinct. In 2001 Gareth Patterson began an independent study of the Knysna elephant, covering thousands of kilometres on foot, following ancient elephant paths through the dense forest and surrounds. His fieldwork established that the forest is in fact still home to a small herd of elephants.

“ Where else in the world “
Tintswalo Atlantic is situated off Chapman’s Peak Drive outside Hout Bay. It is the only lodge, in Cape Town, nestled on the Atlantic Ocean’s water’s edge. Every suite along the shoreline is decorated to emulate an island of the world with en-suite bathrooms in each. All ten Island Suites, as well as the Presidential Suite, open to the most incredible view of the Sentinel, Hout Bay and the Atlantic Ocean. These views are superb from sunrise to sunset. The Executive Chef will happily allow interaction in the open-plan kitchen and encourages guests to enjoy her culinary creations beyond just breakfast. The pebbled beach directly in front of the lodge is secluded and sheltered from Cape winds and forms one of the boundaries of the Table Mountain National Park. As Tintswalo Atlantic is tucked away within the Table Mountain National Park, globally known for its extraordinarily rich, diverse and unique fauna and flora, it lends itself to be the ultimate Atlantic Ocean retreat.

ince most of the activities in South Africa happen outdoors, sunburn is a potential health hazard. Cover up and use sun screen lotion whenever you are outside. Malaria risk areas include Northern KZN and Zululand, the Northern Province and Mpumalanga. The risk of contraction in South Africa is minimal when the proper precautions are taken. These include taking malaria tablets, using insect repellent and mosquito coils, and wearing long sleeved clothing. Tap water in most areas is safe to drink, but be sure to double check with your hosts first. One of the biggest health risks in South Africa is HIV and Aids. If you plan to be sexually active during your stay in South Africa, be sure to take necessary precautions. Check out www.redribbon.co.za for more information. Visit www.brillianttan.co.za for a safer way to obtain that holiday tan.
02Safety • Do not to walk alone at night. • Do not flaunt your possessions when you are out in public. • Only allow clearly uniformed guards and personnel to handle your possessions. • Be aware of what is happening around you. • If anything should happen do not hesitate to phone the police.

Smoking in partially enclosed public places such as covered patios, verandas, balconies, walkways and parking areas is also prohibited. Children under the age of 18 are prohibited from entering designated smoking areas and purchasing cigarettes. There are stiff penalties associated with anti-smoking legislation in South Africa, including hefty fines for both the smoker and venue operator. Be aware that smoking is banned on all domestic flights in South Africa. Keep a look out for ‘no smoking’ signs and only smoke in designated smoking areas.
