where Credit is Due “Winter is the time for comfort, for good food and warmth, for the touch of a friendly hand and for a talk beside the fire.” – Edith Sitwell Although renowned for her blazing sun and great outdoors, Africa takes on an altogether unique kind of magic during the winter months. For one, experiences are more private and intimate over the off-season period, with bespoke offerings, great value-for-money packages and true solitude to be found at many of Southern Africa’s top destinations. Winter is also a great time to immerse oneself in Africa’s myriad culinary delights. This month’s feature on South Africa’s top food destinations presents just the tip of the iceberg that is the area’s rich dining culture. There is of course also an internationally acclaimed wine offering to complete each dish, and each experience, perfectly. While there are ample opportunities to celebrate Africa’s chilly delights, there are also unique spaces, such as KwaZulu-Natal’s pristine coastline, that are blessed with year-round sunshine, providing the perfect escape for those looking

to enjoy an eternal summer. This month’s cover destination, the five-star boutique Hotel Izulu in KwaZulu-Natal’s Ballito, provides the best in luxury accommodation for those wishing to marry the advantages of warmer weather and off-season privacy. Whatever you choose to do in Africa this winter, rest assured that you will no doubt leave with a heart warmed by the sizzling pulse of her eternally enlivened people and places. Enjoy the mag!

Another Prestige Cuvée from

T

he House of J.C. Le Roux, South Africa’s leading home of sparkling wine, has added another prestige cuvée to its elegant Méthode Cap Classique collection - the highly anticipated 2008 Scintilla. This signature Cap Classique is only produced in exceptional vintages and follows in the footsteps of its award-winning predecessor - Scintilla 2003, which won the Amorim Méthode Cap Classique Challenge in 2012. Luxuriously smooth and well balanced, Scintilla 2008 is made in the classic French tradition, in true champagne style. Secondary fermentation takes place in the bottle in the dark, temperature-controlled cellar, giving rise to the minute, scintillating bubbles that enliven the palate. This all takes place under the watchful eye of Cellar Master Elunda Basson. Using age-old French traditions combined with the latest technology, The House of J.C. Le Roux creates Cap Classiques that can compete with the best champagnes of France. Scintilla 2008 is a classic blend of Chardonnay (70%) and Pinot Noir (30%), and spent a minimum of five years on the lees to develop its complexity and regal character. Created in a stylish dark bottle for the connoisseur, the graceful flagship evokes an air of elegance, beauty and sophistication, representing one of life’s finer pleasures. “Our outstanding J.C. Le Roux Scintilla 2008 is made from only the very best grapes of the vintage. It has a brilliant light straw colour, fresh citrus notes on the nose, integrated baked bread flavours and an elegant youthful finish that will benefit from additional bottle maturation,” says Elunda. J.C. Le Roux Scintilla 2008 is available at boutique wine shops and restaurants, selling for R175 at the cellar door in Stellenbosch. Visit www.jcleroux.co.za for further information. 32

We are excited about the prospect of training chefs that have a huge passion for and commitment to the industry. Making its debut in the awards stakes, the Simonsig Roussanne 2012 was the only Roussanne to make the cut, whilst the Simonsig Cuvée Royale 2010 and the Kaapse Vonkel Brut Rosé 2012 clinched two of only six Méthod Cap Classique spots on the 2014 hotlist. The fourth Simonsig wine to be selected this year is the wooded Chenin Avec Chêne 2012. “Simonsig Estate has always strived to achieve consistent and trusted quality and the Vineyard Consistency Award is

a welcome accolade to encourage my team of hardworking winemakers to aim even higher and never become complacent,” says Simonsig Cellarmaster Johan Malan, who believes that this competition gives producers a better idea of what the world market is looking for, as well as providing guidance to consumers in a super saturated wine market. The Top 100 Wines competition had a record number of entries this year, with 491 wines competing for a place amongst South Africa’s finest. The high calibre of judges who bring local and international expertise to the competition include UK journalist and Master of Wine Tim Atkin, Jamie Goode, UK wine columnist for The Sunday Express, Greg Sherwood of UK wine merchants Handford Wines, Cape Master of Wine Jenny Ratcliffe-Wright and winemakers Duncan Savage and Richard Kershaw. For further information or wine orders call +27 21 888 4915 or visit www.simonsig.co.za. Simonsig Wine Estate is located outside Stellenbosch, on the Kromme Rhee road between the R44 and R304. 34

From Farm to Fame

La Residence’s Chef Lennard Marais A

Text & Image: © Leanne Sutherland

lthough the epitome of sophistication and refinement, the five star La Residence Hotel in Franschhoek believes in maintaining its alignment to simple traditional South African country values and techniques in its culinary offering. It has to this end joined forces with Chef Lennard Marais who, although internationally tutored and widely acclaimed, remains true to his local farm roots when creating timeless magic in the kitchen. Lennard grew up in a farming community in the Swartland region of the Western Cape. With no grocery stores nearby, everything was made fresh at home. Lennard quickly developed a passion for cooking, as he would spend large portions of his days helping his mother with her fresh food preparations. Lennard knew from an early age that food would always play a significant role in his life, and it seemed only natural for him to pursue cooking as a career. He joined John Jackson at his acclaimed Jackson’s restaurant early in his career, where he underwent his in-service training receiving mentorship from one of the best chefs in the country. He then moved on to Klippe Rivier Homestead, one of the first five star guesthouses in the country, where he took on the role of resident chef. After this, he moved on to form part of the opening team at the V&A Waterfront’s Table Bay Hotel, where he was exposed to new cooking styles as well as to some of the best chefs in the world. Lennard’s warm personality and love of intimate interactions drew him back to boutique hotels, where he could spend more time interacting with guests. After spending some years at the very exclusive Ellerman House Hotel in Bantry Bay, he took time off from hospitality to travel the world and learn as much as possible about new international cuisines. In between trips, he used the knowledge and experience that he had acquired to present cooking classes, as well as to offer private catering solutions specializing in wedding cakes. In 2010 Lennard joined The Royal Portfolio, where his rustic, country inspired cooking came into its own as the French-inspired offering that has come to define La Residence’s cuisine. He is most thrilled that the baking, pickling and preserving techniques that he so enjoyed as a child are put to good use at the hotel, where he incorporates fresh produce from the farm into all aspects of his menus.

A Hippo Love Story Karen Paolillo When the threads that hold human society together unravel, the animal kingdom suffers. Karen Paolillo discovered this first-hand in Zimbabwe when she developed a close connection with thirteen hippos in their natural habitat, the Turgwe River. Her mission to save these exceptional animals after they came under threat of drought, land invasions and poachers developed into a beautiful African love story. It is also the stirring tale of how one woman faced personal and financial adversities while ensuring the survival of a family of hippos, with Bob, a three-ton bull, as their leader. With the establishment of the Turgwe Hippo Trust, Karen has triumphed as guardian of the hippos, and the animals have prospered ever since. A Hippo Love Story shares this heroic journey of a nature lover who became an ally of one of Africa’s most fearsome animal species. For further information about Karen’s remarkable story or to order a copy of the book visit www.savethehippos.info.
