I
’m currently trying to practise the often frustrating but truly rewarding art of mindfulness in my everyday life. Each morning sees me undertaking a series of meditations that assist me in waking up to my everyday life and relishing the present moment. Why am I telling you this? Because I think it’s a great skill for everyone to attempt to master. But also because I know a few shortcuts. There are a variety of places and experiences in Southern Africa that allow me to enjoy the richness of the present moment with little to no effort on my part. A pristine beach in Mozambique is one such place. Obviously. The soft white sand, the lapping of the tide against the shore, the smell of coconuts and grilled prawns… it would indeed be difficult not to enjoy each moment spent in such a paradise. It is my dream to travel to the picturesque island on the opulent MSC Opera Cruise Ship, which we present on our cover this month. You will no doubt also have an extra point on your bucket list after reading the feature on all that the cruise (and its sister cruise) has to offer. Other moments in which I find myself unable to focus on anything but the present include (of course) those in which I am indulging in the consumption of quality local food and wine. This month we welcome an acclaimed local chef onboard (I’m clearly still thinking of the ship) to present a month-by-month series of some of his favourite traditional South African recipes. We managed to win him over by taking him to the annual Robertson Wacky Wine Weekend. We knew we would. Being with animals also helps me to be fully present, and a real treat for me this month was visiting Eagle Encounters birds of prey rescue and rehabilitation centre at Spier Wine Farm in Stellenbosch. My to-do list swiftly flew out the window (excuse the pun) as I cradled a majestic eagle in my arms. So seize the day and use this moment to enjoy all that is presented in this edition of our beautiful guide. I’m off to meditate on the sound of that lapping tide…

At this point the sex of the calf is unknown, as the rangers are keeping their distance to ensure that mother and calf have sufficient time to bond. SA Tourism RANKS Higher This year, South Africa has improved its ranking in the World Economic Forum’s (WEF) Travel & Tourism Competitiveness Index to 64 out of 140 countries. The number of overseas tourists visiting the country rose by 12.2% at the end of last year and has continued to rise, revealed a recent study by Statistics South Africa. Mauritius is currently the highest ranked African country. At the time of the study, the distribution of visiting nationalities in South Africa was 62.1% European, 15.6% Asian, 12.4% North American, 4% Central and South American, 4.6% Australasian and 1.3% Middle Eastern. www.southafrica.net

he MSC Opera departs on 30 December 2013 from Durban, spending New Year at Mozambique’s pristine Portuguese Island. The ship will then cruise onto the bustling capital city of Maputo before heading for the island port of Fort Dauphin in exotic Madagascar. MSC Sinfonia offers five departure dates: 7, 14 and 21 December 2013 as well as 1 and 22 February 2014 with a new itinerary visiting Portuguese Island in Mozambique and Anakao and Fort Dauphin in Madagascar. Portuguese Island has long been South Africa’s favourite cruise destination. The uninhabited nature reserve with pristine beaches, dense vegetation, pleasant lagoons and small patches of mangrove make for a real island experience. The newly-built eco-friendly restaurant structure, the island bar, kiddies jungle gym and beach club
with deck chairs and umbrellas offer cruise passengers an ideal lazy day on the beach in comfort and style. Transfers to the neighbouring island of Inhaca allow for a real cultural experience in the local African village, where one can experience prawns and peri-peri chicken as only Mozambique can prepare them. Anakoa, the second stop on the MSC Sinfonia itinerary, is a small fishing village where the locals still carve oceangoing dhows from huge logs, much as their ancestors have done for centuries before. Anakao is also a popular seaside getaway on the shores of the Mozambican Channel with miles of unspoilt beaches. The port of Fort Dauphin is the final destination for both ships. It is situated deep in the South East of Madagascar. Set in a huge bay, Fort Dauphin offers sandy white beaches

Set on the banks of the perennial Klaserie River is Kapama Game Reserves most secluded and prestigious lodge, Kapama Karula. Main areas include lounge and bar, all finished in modern whitewashed wood and vast sections of glass, complemented by a neutral colour palette, offering a contemporary African feel. The open-plan lounge and bar are spacious yet cosy, with skylights drawing in natural daylight and moonshine. Two of the superior suites, each measuring 170 m², are purpose-built for families. The second bedroom leads off the living room and can be accessed through an interleading door or its own entrance. This bedroom features a full ensuite bathroom, flat-screen TV, selection of movies and Wii game console. Each family suite also has a private outside deck and a large heated swimming pool. For an experience that’s closer to nature and authentically African, Kapama Karula offers guests the opportunity to sleep in one of two traditional Meru tents. There’s no compromise to comfort and the tents have all the amenities of a luxury game lodge. En suite with his and hers basins, a bath and private outdoor shower, the tents both have air conditioning, telephones and Wi-Fi, fully stocked minibars, Nespresso coffee machines and lock-up safes.

he tenth annual Robertson Wacky Wine Festival, which took place from 6 – 9 June this year, was nothing short of a roaring success. With over 40 participating wineries and a host of activities on offer, the picturesque little winelands town really came alive for the weekend. The festival caters for all kinds of visitors, from wine snobs to enthusiasts or those simply wanting to have a good time. Visitors purchase a single passport (R100) at the outset of their experience and are granted access to free tastings at each wine farm in Robertson, Bonnievale, Ashton, Montagu, McGregor and surrounds. That’s a lot of wine to be tasted! Hired designated drivers and buddy buses make travel between the farms safe and easy, so visitors can simply relax and enjoy all that is on offer. The Ultimate Guide to Africa team made the most of the opportunities presented over the weekend, engaging in ‘serious’ wine activities such as master tastings, educationals and presentations by the Cape Wine Academy, as well as lighter activities including a boat trip, comedy show, acoustic rock show and even a few stints on the numerous jumping castles. There was plenty to eat, and we indulged in everything from canapés to buffets and three-course meals that encompassed a range of culinary treats including traditional ‘boerekos’ (Afrikaans food), an abundance of sweet treats and even some delicious fresh sushi! The brave among us enjoyed a trail run and mountain bike route while the rest of us sat back and enjoyed watching the rugby on a big screen or perusing the variety of arts and crafts stalls on offer. After enjoying three days of wine, food and fun, we exchanged our old blankets and winter clothing for bottles of local wine, enjoying the fact that giving to charity could be so much fun! Why are we telling you about our time in Robertson after the 2013 festival has already taken place? Because the everpopular weekend sees the accommodation offerings and bespoke activities booked up months in advance, and we thought we’d give you a heads up. We stayed in a completely charming spacious selfcatering cottage overlooking the vineyards and breathtaking natural beauty of Weltevrede Wine Farm, and we would highly recommend that you book your accommodation there for the weekend. The festival was a riot but returning to the peace and quiet of our quaint retreat was indeed another highlight of each day. Umsila Wenkomo and Morogo (Oxtail Stew with Spinach and Corn) Serves 4 – 6 Oxtail
Morogo
Ingredients: • 1.5kg (3lb) oxtail, excess fat removed • 1 cup plain flour • 1 tbsp dried mixed herbs • olive oil • 1 tsp paprika • salt and pepper • 2L good quality beef stock • 1 cup dry red wine • 2 medium onions • 6 large garlic cloves • 3 large carrots (about 350g/12oz), peeled and sliced • 300g/12oz green beans, sliced • ½ cup fresh white kidney (cannellini) beans, de-shelled • 3 medium potatoes (about 500g/1lb), peeled and quartered
Ingredients: “Morogo”, or spinach, is made of virtually any combination of greens. I have used everything from spinach to pumpkin leaves, wild plants and even beetroot tops. I also like to add a corn on the cob (still in its leaves) to the pot, as the cooking method works well for both the greens and the corn. Method: The secret is in the process! 1. Wash the green leaves thoroughly then slice them finely. 2. Place the corn (if using) into a large pot and pile the leaves on top. 3. Drizzle generously with vegetable oil. 4. Add 1tsp of salt for every 500g/1lb of fresh leaves. Do not add water! 5. Heat gently and it will cook in its own moisture and the steam created from the water left after washing. 6. Simmer on very low heat for an hour, turning gently. Add a little bit of water only if required, as it is basically a steaming process.
Method: 1. Mix flour, paprika and herbs and season with salt and black pepper. Seal dry mix and meat in a bag and shake vigorously to dust the oxtail thoroughly. 2. In a large pot brown the oxtail in olive oil (on high heat) and set aside. 3. Roughly chop onion and garlic and sauté over medium heat until soft and golden. 4. Add the onion and garlic to the oxtail and add 1L of beef stock. 5. Mix wine with remaining beef stock. 6. Bring the oxtail and stock mixture to the boil, then reduce the heat and cook until the liquid has reduced by ¾ and is the consistency of thick cream. 7. Add the paprika and barbecue spice together with enough beef stock/wine mix to cover the oxtail once again. 8. Cover with a lid and cook over a low heat until the oxtail is tender (about 2 hours). Keep checking that there is still enough liquid to cover the meat, adding more when necessary. 9. Add the carrots, beans and potatoes and cook until the vegetables are soft (about 30 minutes).

01Healthsunburn is a potential health hazard
S
ince most of the activities in South Africa happen outdoors, sunburn is a potential health hazard. Cover up and use sun screen lotion whenever you are outside. Malaria risk areas include Northern KZN and Zululand, the Northern Province and Mpumalanga. The risk of contraction in South Africa is minimal when the proper precautions are taken. These include taking malaria tablets, using insect repellent and mosquito coils, and wearing long sleeved clothing. Tap water in most areas is safe to drink, but be sure to double check with your hosts first. One of the biggest health risks in South Africa is HIV and Aids. Cars
Most of the main car rental companies have outlets at the international airports and in major centres. In South Africa, we drive on the left side of the road. The general speed limits are 120 km/h on the freeways, 100 km/h on major roads outside built-up areas and 60 km/h in built-up areas. A Note for Smokers South Africa became one of the first countries in the world to ban smoking in public places in 2000 when it introduced its Tobacco Products Control Amendment Act. Smoking in partially enclosed public places such as covered patios, verandas, balconies, walkways and parking areas is also prohibited. Children under the age of 18 are prohibited from entering designated smoking areas and purchasing cigarettes. There are stiff penalties associated with anti-smoking legislation in South Africa, including hefty fines for both the smoker and venue operator. Be aware that smoking is banned on all domestic flights in South Africa. Keep a look out for ‘no smoking’ signs and only smoke in designated smoking areas.
