I

really don’t think there is anything more awe-inspiring than spring in South Africa. As the grey of winter surrenders to the return of our famous sunshine, thousands of small, otherwise insignificant plants burst into full bloom, covering the plains of the Western and Northern Capes in particular in a brightly coloured carpet of flowers. The best time for game viewing is also in spring, with the reserves playing host to newborn animals and the coastal waters of the Western Cape graced with the presence of the majestic southern right whales. Diving and surfing opportunities

are great this month too, and spring and autumn are the best times for hiking, as temperatures can be too high in summer and rain, snow and thunderstorms can hinder expeditions in the winter. In this month’s edition we present some inspiring ideas of ways in which to spend this glorious time of year in our country, from pristine wilderness expeditions and slick city getaways to rejuvenating pamper escapes and fresh wine and dine experiences. Kapama Karula

Set on the banks of the perennial Klaserie River is Kapama Game Reserves most secluded and prestigious lodge, Kapama Karula. Main areas include lounge and bar, all finished in modern whitewashed wood and vast sections of glass, complemented by a neutral colour palette, offering a contemporary African feel. The open-plan lounge and bar are spacious yet cosy, with skylights drawing in natural daylight and moonshine. Alternatively, enjoy the African sunshine on the outside wooden deck, with views over the Klaserie River. 5 Suites: these have indoor and outdoor showers, full ensuite bathrooms, minibars, Nespresso coffee machines, safes, international adaptors, telephones, overhead fans, air conditioners and gas-heated fireplaces. For connectivity and entertainment, there is Wi-Fi and an iPod docking station. 5 Superior Suites: these are slightly bigger than the standard suites, at 130m² each and includes the same features as per the standard suites, but in addition there is an outside deck area, with a full-size heated swimming pool and sun loungers. Two of the superior suites, each measuring 170 m², are purpose-built for families. The second bedroom leads off the living room and can be accessed through an interleading door or its own entrance. This bedroom features a full ensuite bathroom, flat-screen TV, selection of movies and Wii game console. Each family suite also has a private outside deck and a large heated swimming pool. For an experience that’s closer to nature and authentically African, Kapama Karula offers guests the opportunity to sleep in one of two traditional Meru tents. There’s no compromise to comfort and the tents have all the amenities of a luxury game lodge. he stylish, soothing space boasts eleven ambient treatment rooms, a rooftop pool and relaxation station, a steam room, sauna, floatation pool, rasul chamber and a tapas bar. Our favourite feature is the rooftop pool deck, on which we spent a glorious afternoon lazing on the comfortable loungers and sipping cocktails whilst marvelling at the expansive views of Table Mountain and surrounds. Although it would be easy to simply spend a day disappearing into oblivion in the floatation pool or detoxifying under a simulated tropical rain shower in the rasul chamber, the treatments offered by the warm and professional spa therapists are truly world-class. Life Day Spa offers an extensive range of relaxing, invigorating and beautifying skincare, body and grooming treatments. Tailored packages allow for bespoke pampering, and there really is something for everyone – from the stressed executive to the sportsman or the mom-to-be. Whereas we opted for the more standard massage, manicure and facial package (although there wasn’t anything ‘standard’ about the treatment itself), guests looking for something out of the ordinary could choose an experience like the Polynesian Spa Ritual, which includes unusual delights such as a Mahana massage from Bora Bora enjoyed with a tasty pina colada on the side. andton Convention Centre’s Executive Chef James Khoza’s exhilarating journey with food started almost 20 years ago. His steadfast commitment to improving the quality, variety, research and presentation of food has seen his passion develop, providing a platform from which to explore the characteristics of ingredients through experience, experimentation and recipes. Khoza completed his studies at Tecknikon Witwatersrand and has had the opportunity to travel and work in places such as France, Guinea, the Democratic Republic of Congo and Berlin. It was in Berlin that Khoza was given the amazing opportunity to work in a Michelin-starred restaurant. He has been tutored by the likes of Thomas Kammeier Hugos, Dr. Billy Gallagher, Luke Dale Roberts, and Klaus Beckmann. James has furthermore had the chance to create culinary experiences for some well-loved and respected icons, including Nelson Mandela, former President of South Africa and international freedom icon and Richard Branson, Founder of the Virgin Group. He has also catered for Jacob Zuma, President of South Africa, Kgalema Motlanthe, Deputy President of South Africa, Thabo Mbeki, former President of South Africa and Jeremy Mansfield, former 94.7 radio presenter. Khoza currently works under the guidance and mentorship of Tsogo Sun’s well-known Executive Chef, Garth Shnier, who he regards as someone who contributes daily to his steadily growing knowledge of the profession. Khoza says that travelling the world opened him up to a new way of thinking. “Essentially, I embraced a more creative approach to thinking about the nature of food - what you can do to a simple product to turn it into a masterpiece.” Khoza’s passion for food is what has driven him to strive for perfection with African flair. F

ew can convey the melting pot of South African cultures and traditions as gracefully as Evita Bezuidenhout, dramatic satirist Pieter-Drik Uys’ famous Afrikaner activist and socialite. A figure truly respected, loved and woven deeply into the fabric of South Africa, Evita has survived the country’s evolution and remained true to her own cultural identity, aiding reconciliation through her dramatized opinions and belief that “when

enemies sit and eat together, they talk together”. The famous South African koeksister, a delicious syrup-coated twisted doughnut, is as memorable and unique as Evita herself, who once famously described the confectionary as the Viagra of politics. This month’s recipe is dedicated to Evita Bezuidenhout and the thousands of South Africans to whom she has given voice over the years.

INGREDIENTS:

Dough 1. Sift the flour, baking powder and salt together. 2. Rub in the butter and mix until pliable. 3. Mix this with the egg and water (adding the water a little at a time). 4. Work the dough well. If the dough appears to be lumpy and sticky, continue to work it until it balls up. 5. Let the dough set at room temperature for about three hours (under an inverted mixing bowl).

Syrup • 1kg/4.5lb sugar • 3 star anise • 1½ cinnamon sticks • ½ tsp ground ginger • 1½ cups water • juice of 1 lemon

To prepare the koeksisters: 1. Roll out the dough (5mm thickness). 2. Cut the dough into strips (6cm long, 2cm wide). 3. Cut each of these strips into three strips (not all the way through - leave the strips connected at the top). 4. Plait each strip and pinch together at the end. 5. Deep fry until golden to dark brown (I like mine darker brown and crunchy on the outside, but it’s a matter of preference). 6. Remove from heat and drain quickly. 7. Dip the hot koeksisters in the cold syrup (the secret is to keep the syrup cold and the koeksisters hot so as to draw just the right amount of syrup). 8. After a few minutes, place the koeksisters on a metal rack so that some of the syrup can drip off before serving.

Dough • 2 cups cake flour • 2 tbsp baking powder • ½ tsp salt • 1 large egg • 4 tbsp butter/margarine • ½ cup water • sunflower oil for deep frying

METHOD: Syrup (prepare a day in advance) Mix all the syrup ingredients together in a deep pot and bring to a boil. Place in the refrigerator overnight.

01Healthsunburn is a potential health hazard

ince most of the activities in South Africa happen outdoors, sunburn is a potential health hazard. Cover up and use sun screen lotion whenever you are outside. Malaria risk areas include Northern KZN and Zululand, the Northern Province and Mpumalanga. The risk of contraction in South Africa is minimal when the proper precautions are taken. These include taking malaria tablets, using insect repellent and mosquito coils, and wearing long sleeved clothing. Tap water in most areas is safe to drink, but be sure to double check with your hosts first. One of the biggest health risks in South Africa is HIV and Aids. Bus

Cars

Most of the main car rental companies have outlets at the international airports and in major centres. In South Africa, we drive on the left side of the road. The general speed limits are 120 km/h on the freeways, 100 km/h on major roads outside built-up areas and 60 km/h in built-up areas. A Note for Smokers South Africa became one of the first countries in the world to ban smoking in public places in 2000 when it introduced its Tobacco Products Control Amendment Act. The Act prohibits smoking in restaurants, pubs, shopping centres and offices where there are no separate, enclosed smoking rooms.

Smoking in partially enclosed public places such as covered patios, verandas, balconies, walkways and parking areas is also prohibited. Children under the age of 18 are prohibited from entering designated smoking areas and purchasing cigarettes. There are stiff penalties associated with anti-smoking legislation in South Africa, including hefty fines for both the smoker and venue operator. Be aware that smoking is banned on all domestic flights in South Africa. Keep a look out for ‘no smoking’ signs and only smoke in designated smoking areas.
