New Year’s resolutions have a bad rap. Sure, most of us do not end up learning to play jazz flute or never again picking our nose in the car, but what about those resolutions that are not as challenging to observe – the ones that enhance our lives by necessitating a certain joie de vivre rather than certain deprivation? As if we weren’t already steadily going through the bucket list this side, we decided to investigate a few offerings that may prove helpful in fulfilling some of our more enjoyable resolutions this year. While American comedian Pete Holmes describes New Year’s resolutions as the word “stop” written above everything we did on New Year’s Eve, we argue that the complete opposite could also make for a most pleasant year. We were so inspired by the fantastic bubbly we popped open as the clock struck 12 that we went out of our way to offer a bumper wine section in this edition. The food we enjoyed on the evening was so good that we decided to find out where we could learn to make it ourselves. The weather was so balmy that we resolved to spend more time

on the beach, featuring one of our alltime favourite island escapes by way of inspiration should you wish to do the same. In short, “more memorable moments” is our mantra for 2015. If we can’t achieve that flying over the Twelve Apostles in a helicopter or wooing our significant others on a five-star romantic bush getaway, we probably never will. And if the hedonism of it all becomes too much, we would happily head back to our cover destination, Bushmans Kloof Wilderness Reserve & Wellness Retreat, to restore our bodies and minds while disappearing back into the awe-inspiring natural splendour from which all else arises. hamwari Game Reserve in the Eastern Cape and sister property Sanbona Wildlife Reserve near Cape Town, in conjunction with GOLD Restaurant and Stir Crazy Cooking School, have opened two unique cooking school experiences aptly named COOKING WILD. Open all year, COOKING WILD presents the opportunity to learn to cook or perfect your skills whilst enjoying the best of the African bush on a Big 5 safari in a choice of two unique locations. ituated on the southern slope of Simonsberg in the Stellenbosch wine region, Uitkyk Wine Estate creates a range of accomplished wines that reflect the allure and magic of its rich history. The elegant Glass Memoires Cap Classique is a classic blend of 51% Chardonnay, which imparts body and complexity, and 49% Pinot Noir, which brings a minerality and flintiness to the blend. The Chardonnay vineyard is 14 years old and planted 262 m above sea level. The Pinot Noir vineyard is a 25-year-old block planted on a slope 326 m above sea level. Both vineyards are trellised on a low five-wire canopy and receive supplementary drip irrigation. The grapes were harvested by hand in January 2011. Whole bunch pressing was done after cooling, and no skin contact was allowed. After an overnight settling period, clear juice was inoculated with pure Prisse de Mousse yeast culture and fermentation was completed in three weeks. Twelve percent of the wine was fermented in older 300 litre French barrels, and 65% of it went through malolactic fermentation to bring more balance and complexity to the final product. In August 2011 the base wine was bottled with added yeast and sugar for the secondary fermentation in the bottle to create the beautiful fine bubbles. Thereafter the wine was left on the lees in the bottle for 25 months before the lees was removed in the traditional method of remuage and degorgement in September 2013. ugby, sports tourism and history are the unusual confluence of factors in a R40-million IrishSouth African collaboration resulting in a new landmark wine estate project trading under the name Doran Vineyards on the farm Far Horizons in the VoorPaardeberg area of the Western Cape. 

 Irish sports tourism specialist and wine connoisseur Edwin Doran and his long-time friend, Constantia wine route pioneer Andre Badenhorst, have joined forces in what they refer to as “two old buggers having fun”. But the new venture, 15 km from Wellington and 40 km from Riebeek Kasteel, is by no means a whimsical escapade. 

The new cellar, which was created out of the former milking shed on the farm, now holds the estateproduced Shiraz, Cabernet Sauvignon, Merlot, Cabernet Franc, Mourvèdre, Chenin Blanc and Rosé in varioussized barrels. Doran Vineyards’ recently released Rosie D captures summer perfectly, with freshly cut strawberry and raspberry aromas carried by flavours of rose water and candyfloss. The grapes were picked at 21 Balling, cooled overnight to 5˚C, de-stemmed and crushed the next morning, and left for two hours of skin contact resulting in the wine’s tickled pink colour. This was followed by a delicate press cycle to ensure optimum freshness. The wine was fermented at 11˚C, resulting in slow even fermentation over 20 days, respecting the fruit and freshness and securing it into the bottle. The cellar door price of the wine is R59.00. tellenbosch wine farm Kleine Zalze is renowned for its award-winning wines of distinctly South African character. The Cellar Selection Chenin Blanc 2014 shows strong litchi, citrus and guava aromas on the nose, with ripe pineapple and peach flavours following through on the palate. These are complemented by a long, clean, crisp aftertaste. This fresh and fruity style of Chenin Blanc will develop well through bottle ageing. The range’s Gamay Noir Rosé 2014 shows a pale salmonhued colour, which points towards the deep, bright, vibrant colour of the grapes. Soft tannins were extracted due to a low amount of grape tannin in the skins. The crisp, dry fruit and creamy palate end as a clean, light and easy-drinking wine. omond Wine Estate in Gansbaai has recently added another award-winning wine to its highly acclaimed portfolio. The 2013 Shiraz, Mourvèdre, Viognier (SMV) is the estate’s first red blend, and showcases the uniqueness of the Cape Agulhas appellation. Produced from selected vineyard blocks on the farm, the wine was vinified as naturally as possible by winemaker Kobus Gerber. The Lomond maiden vintage SMV 2013 offers an abundance of dark fruit, floral nuances and sweet spice. “The very rich and bold pepper flavours combined with the silky tannins make this wine a wonderful pairing for a slow-roasted venison casserole, fillet or traditional South African bobotie," says Gerber. The maiden vintage SMV 2013 also recently achieved a coveted Double Gold medal at the 2014 Veritas Awards. “We are ecstatic that the first red blend made at Lomond achieved such high honours. Our whole team pulled together to create this special wine,” says Lomond shareholder and viticulturist Wayne Gabb. 
 Situated in the Uilkraal River Valley, Lomond is one of only a handful of wine farms within the Cape Agulhas appellation of origin. Gabb and Gerber have managed to bring true terroirstyled wines to the market. Focusing on mainly Sauvignon Blanc and Syrah, they have recently expanded the range to showcase even more of their unique surroundings. According to the Lomond team, the SMV completes the circle of hard work and endurance they have put into the estate. Their efforts have created highly awarded wines throughout the entire range while still respecting the land on which they farm. Each section of Lomond land planted under vine has been carefully chosen for its exceptional natural properties, from its geological foundations and mesoclimatic conditions to its surrounding flora and fauna. Lomond is a member of both the Walker Bay Fynbos Conservancy and the Biodiversity and Wine Initiative (BWI), which rewards producers for sustainable winegrowing practices. eopard’s Leap Family Vineyards in the Franschhoek Valley is offering exciting cooking classes ideal for passionate home cooks and aspirant chefs to fine tune their culinary skills and add some variety to their tables. Seasonal and relevant, the courses cover a wide spectrum of cooking styles and food types. In-house Chef Pieter de Jager, responsible for the delectable food offering at Leopard’s Leap, will be sharing recipes and tips on an array of cooking methods, while popular chefs and food-enthusiasts will regularly feature in the exciting programme. Each class repeats in order to offer a morning class with lunch or an evening class with dinner. Attendees can expect the chef to share techniques and cooking methods for each recipe, as well as general cooking tips and interesting facts about the ingredients and their origins. 44

Classes take approximately three hours and are presented in the state-of-the-art kitchen. Each session can accommodate 22 enthusiasts at individual cooking stations, each with his or her own stove and utensils. The chef’s every move can be followed on big screen television sets, while printed recipes will serve as guidance on the day and be available to take home for further practice. After a busy cooking session, students are able to relax and indulge in their own creations, all beautifully paired with Leopard’s Leap wines selected by Cellar Master Eugene van Zyl. he extraordinary life of heiress Pat Cavendish O’Neill took a turn for the unexpected when she moved from Kenya to settle on a Cape farm in 1968. Here she found a new channel for her remarkable gift with animals: she became one of South Africa’s first female racehorse trainers. As always, Cavendish O’Neill and her famous mother attracted a colourful international audience into their extremely lavish lifestyle, and the two women would regularly fly to Australia to bid on some of the world’s finest fillies and colts. Cavendish O’Neill’s first book, A Lion in the Bedroom, described how, after a life of flitting around the world from bases in the South of France and the Bahamas, she found her place in the world in Kenya when she was given a lion cub to raise. In the Rift Valley a pet gazelle accompanied her lioness on glamorous safaris, and in South Africa the pampered racehorses of Broadlands shared their space with a menagerie of equally loved baboons, vervet monkeys, various farm animals saved from their fate, cats, parrots and – at one point 35 dogs. But a rescued chimpanzee named Kalu found her way deepest into Cavendish O’Neill’s heart. A Chimpanzee in the Wine Cellar is rich in anecdotes that will make you laugh and cry. Now in her late eighties, O’Neill leads a very different life from the enormous wealth into which she was born, yet she still remains true to her first love: animals. 01 Health sunburn is a potential health hazard

ince most of the activities in South Africa happen outdoors, sunburn is a potential health hazard. Cover up and use sun screen lotion whenever you are outside. Malaria risk areas include Northern KZN and Zululand, the Northern Province and Mpumalanga. The risk of contraction in South Africa is minimal when the proper precautions are taken. These include taking malaria tablets, using insect repellent and mosquito coils, and wearing long sleeved clothing. Tap water in most areas is safe to drink, but be sure to double check with your hosts first. One of the biggest health risks in South Africa is HIV and Aids. Cars

Most of the main car rental companies have outlets at the international airports and in major centres. In South Africa, we drive on the left side of the road. The general speed limits are 120 km/h on the freeways, 100 km/h on major roads outside built-up areas and 60 km/h in built-up areas. A Note for Smokers South Africa became one of the first countries in the world to ban smoking in public places in 2000 when it introduced its Tobacco Products Control Amendment Act. The Act prohibits smoking in restaurants, pubs, shopping centres and offices where there are no separate, enclosed smoking rooms. Smoking in partially enclosed public places such as covered patios, verandas, balconies, walkways and parking areas is also prohibited. Children under the age of 18 are prohibited from entering designated smoking areas and purchasing cigarettes. There are stiff penalties associated with anti-smoking legislation in South Africa, including hefty fines for both the smoker and venue operator. Be aware that smoking is banned on all domestic flights in South Africa. Keep a look out for ‘no smoking’ signs and only smoke in designated smoking areas.
