Pyrmont & Ultimo — 1790s — Soldier and wool industry pioneer John Macarthur, buys the land for a gallon of rum.

— 1800s —

Australia’s first steampowered mill in Darling Harbour is built in 1815, followed closely by many woolstores. 4 HISTORY PYRMONT & ULTIMO

Pyrmont powers Sydney’s lights and trams and is the epicentre for the export of wool, flour, milk and assorted foodstuffs. Pyrmont had also discovered a new highly profitable resource: Yellowblock sandstone.

— 1930s —

The once picturesque Pyrmont becomes devoid of all trees and scenery due to the industrial growth. The fresh harbourside air is polluted by industrial powerhouses and the infamous Griffin garbage incinerator.


Until the early 1800s, members of the Gadigal people were still harvesting cockles on Pyrmont’s foreshore. Then woolstores and sandstone quarries changed the landscape. Follow the checkered past of this peninsula to discover the pivotal role the suburb played in the development and connectivity of Sydney.

Pyrmont falls into decay after World War II with industries closing. The closing of the Ultimo Power Station in 1963 marks a significant decline in the suburbs population and reputation.

With the property boom of the late 1980s, the old area sees major developments and gains the Powerhouse Museum, Maritime Museum, Star City Casino, Monorail and a walkway to the city.

— Today —

Pyrmont is the new black Masterful Teage Ezard brings his wealth of culinary expertise to Pyrmont with his signature Sydney restaurant, BLACK by ezard.


Needing no introduction, Teage Ezard has been a culinary celebration in this country long before ‘celebrity chefs’ were even invented. Propelled onto the restauranteur podium with his highly successful Melbourne establishments, Ezard and Gingerboy, Master Ezard has more hats than the Melbourne Cup. Teage Ezard is now bringing a little bit of ‘Mel-Berlin’ to Sydney in the form of BLACK by ezard at The Star. “Opening BLACK by ezard presented a wonderful opportunity to create a new restaurant concept within a world-class venue, The Star. It has been an exciting challenge to create an offer that’s so different to my other restaurants, which focus on Asian cuisine” comments Ezard. Ezard’s new venture serves up a bold and boundary-breaking menu; a melting pot of global influences interpreted on a local plate. “Our provocative and challenging dishes are influenced by great American grills and contemporary Europe. Traditional favourites are turned upside-down and reinterpreted with more edge,” says Ezard. The interior design is also more Sydney-centric. Designed by Paul Kelly, the space has an international feel with elegant

booth seating overlooking some of the best views this side of the bay. “It’s moody, sophisticated and more than a little bit glamorous. It features a combination of wood, copper, leather, a beautiful use of stone and marble and of course— those incredible Sydney Harbour views!” exclaims Ezard. If Ezard was a colour he would be BLACK; a manifestation of passion and dark complexity that only comes from honing his craft through an endless drive for perfection. It’s hard to keep up with Sydney’s fast, fickle restaurant scene. Ezard’s fervour for service and thirst for local innovation makes sure he stays ahead. “I love working with the local farmers who are so passionate about their products and keeping in line with the seasonal changes,” he says. The constantly evolving, contemporary grill is not only about the protein. The seasonal produce is complimented by a unique wine offering sourced predominately from the rising US wine regions (something progressive again for Sydneysiders). Classic tradition with a casual, contemporary spin—no shades of grey.

Teage Ezard If Sydney was a type of food what would it be? A combination of every conceivable international cuisine. The best way to experience Sydney dining? Enjoy at least one meal by the harbour and beach.

What colour is Sydney? Sydney represents a multitude of colours thanks to its vibrancy, diversity, fast pace, magnificent harbour and beaches and sunny disposition (weather-wise too). How has Sydney dining evolved? I’ve noticed a trend towards laneway dining in Sydney lately, which Melbourne has always been quite famous for. Best tip for cooking on a budget? Cook with off cuts.

Where do you go for the best Sydney coffee? Single Origin and Sample Coffee (Surry Hills). Best kept Sydney secret? It’s no secret, but walking Bondi to Bronte. Some Sydney favourite spots include: 121BC Cantina & Enoteca, Sailors Thai, Billy Kwong, Porteno. Also newcomers 4Fourteen and The Apollo. Tax Refund for Travellers

Ferries, trains, buses are all interconnected with tickets you can buy to transfer from one to another to get around town cheaply.

GST (Goods and Services Tax) is charged in Australia—tourists can claim back the 10 per cent tax at the airport on purchases over $300 made in one store. Ask for the Tourist Refund Scheme at Sydney airport.

Taxis are available when the yellow light is on and change over time is at 3pm and 3am when flagging one down is a little trickier. Metro Light Rail links Central Station quickly and easily with the great list of Pyrmont/Ultimo destinations including Powerhouse Museum, Pyrmont Bay, The Star and the iconic Sydney Fish Market. Tickets are available from the friendly conductors on-board each tram and Day Passes with unlimited travel are prices from $9.
