n perfect harmony, the distinctive sounds of bluegrass music and the spicy tastes of chili are sure to delight, as Claremore hosts the 38th Annual Bluegrass & Chili Festival on the grounds of the Claremore Expo Center on September 7, 8 & 9th. Free activities will be offered at the Kiddie Korral, and the Festival Market, inside the Expo, will include a variety of crafts and vendors, showcasing their wares. On Saturday, teams will vie for a golden seat and silver plunger award during the Outhouse Races. The Open Car Show will host a wide array of entries, classics and current automobiles alike. Just as the event name suggests, there will be chili for the tasting! Visitors will need to pick up their taster kits for a donation of $5.00 well in advance of the 4 o’clock tasting time on Saturday, as the chili goes quickly each year. Several divisions will participate in the cook-off, including a non-profit division open to non-profits, schools, churches, etc. First prize will be $1,000. As if the activities and chili were not enough, the onstage entertainment is second to none. “It is one of the largest music festivals in the nation—and it’s free,” explains Dell Davis, CEO and President of the Claremore Chamber of Commerce. “Visitors from seven states, including Oklahoma, are represented... approximately thirty thousand visitors come over three days, and the economic impact is huge—well over $1 million.” 8

would say I am a fan of sushi, but that really isn’t true. I am more of a sushi fangirl. Give me all the sushi. First of all, sushi is arguably the most adorable food. If a sushi chef has any degree of competence, it is highly instagrammable. As a person generally fond of snack foods, anything that falls in the dual appetizer-meal category is high on my faves list. If you’re a sushi novice, I’ve put together a few little tips for expanding your sushi horizons.

KNOW THE LINGO. Trying to order sushi can be intimidating (shout out to anyone who ever tried to discreetly google “unagi” on your iPhone before the sake arrived). In fact, the only thing more intimidating than trying to navigate unfamiliar terminology is sitting down to eat with someone who inexplicably knows every Japanese term on the menu. It is a common misconception that sushi is always raw fish. Sushi is just a blanket term for bite-sized food rolled in vinegared rice. There are two main kinds of rolled sushi: maki and uramaki. All rolled sushi consists of rice and nori (seaweed) wrapped around other ingredients, typically fish and vegetables. Maki basically means any rolled sushi, typically with rice wrapped in nori. Uramaki means “inside-out roll” because the nori is on the inside of the rice. The other main food items on a sushi menu are typically sashimi (sliced raw fish) and nigiri (sliced raw fish served on rice). You 16 |

probably know what wasabi is, but you may not know that another word for soy sauce is shoyu. The only other thing you really need to know is the name of the fish you are ordering. Unagi is eel, tako is octopus. Ikura is salmon roe, masago is smelt roe. No one knows what a smelt is, but their eggs are orange and delicious. Sake is the Japanese word for salmon, maguro is tuna, and hamachi is yellowtail. Ebi is shrimp, kani is crab. There are many other items you might encounter, but if you learn these terms, you can order off the menu with some degree of competence. If you’re wary about eating raw fish so far inland, set your mind at ease. Most sushi restaurants in Tulsa have fresh fish flown in every two days or shipped overnight. Tuna comes from Honolulu, while most other fish comes from Los Angeles. Ingredients like eel and octopus are flown frozen because they have to be shipped from Japan. Sushi chefs take pride in serving only the very best ingredients, so you never have to ask if the fish is fresh.

EAT LIKE AN EXPERT.

Even after eating sushi for years, I still struggle with eating it the way it’s intended, so I don’t. Sushi is meant to be eaten in single bites, which is why sushi has to be rolled very tightly and served in small pieces. With each bite, you taste the fresh ingredients, the flavors blending together perfectly. The problem is that often, those bites aren’t really very bite-sized, and there is just no graceful way to shove an entire piece of sushi in your mouth without looking like a giraffe at feeding time. Try cutting it in half or eating it in two bites and you’re likely to end up wearing rice. My advice is to eat it however you can get it in your mouth. It is also a no-no to dip the rice side of nigiri into the soy sauce. If you dip the fish, you get the perfect portion for flavor enhancement, but if you dip the rice side, your rice soaks up the soy sauce like a little sushi sponge and turns your perfect bite of salmon or tuna into an oilcolored sodium bomb. Worse, your

Course soy sauce dish becomes a wasteland of errant rice soldiers drifting aimlessly in an ocean of MSG. When it comes to wasabi, just remember that if you add too much, you can’t taste the sweetness of the fish. If you still aren’t sure what the ginger is all about, it is for cleansing your palate between bites. The biggest sushi etiquette you need to worry about has to do with appreciating the food you are eating for what it is: art created by an artisan.

SHARING IS CARING. Eating family style is the best way to try many different rolls, and it can be the most fun way to break bread with your tribe. But when you eat from the communal candy roll, turn your chopsticks backward so the blunt end is touching the sushi. This keeps your germs out of contact with everyone else’s food. Sushi burritos, spam sushi, and sushi “burgers” are all actual things that exist in the world. You can even order a “sushi bazooka,” a device

resembling a piece of PVC pipe for rolling sushi and pushing it out in much the same way your Play-Doh pasta maker did when you were a kid. And some of the sushi rolls you can get at grocery stores are actually pretty decent.

BE CREATIVE. There’s no wrong way to make or eat sushi. Technically, at least. People are doing weird things with sushi in this postmodern age. Many completely legitimate sushi restaurants offer the east Asian answer to the Monte Cristo, deep fried sushi rolls. ogers County Fair is one of the best-kept secrets in Green Country. It has all the bells and whistles of the Tulsa State Fair--a midway with every fried monstrosity your little taste buds can dream up, mind-numbing carnival rides, red dirt-kicking live music-without draining your bank account on entry and parking, which we all know means more cash for funnel cakes. Once upon a time, county fairs were a showcase for local farmers and makers. Farmers would vie for biggest produce and finest animals, children would compete with farming skills, and women folk would don their finest gingham to show off their recipes. Rogers County Fair today still captures that agricultural heritage and competitive spirit, encouraging locals to compete in all kinds of areas from agricultural to artistic in nature. The result is that Rogers County Fair has become a haven for artisans and makers, with categories for competition including every imaginable

FAMILY FUN IN OKLAHOMA BY KRISTI ROE-OWEN

all is almost upon us, and before we know it, it will be time to trade in ice cold lemonade for pumpkin spice lattes. But don’t mourn the end of summer-- there’s plenty of fall festival fun to be had in northeast Oklahoma before the weather starts to cool. Claremore’s 38th Annual Bluegrass and Chili Festival is September 7-9 at the Claremore Expo Center. Load up the minivan with your lawn chairs, because it’s BYOS (Bring Your Own Seat) at this free annual three-day event. Top regional bands will entertain on three stages performing a variety of music including country, gospel, bluegrass and classic rock and rhythm & blues. The Mid-America Regional Chili Cook-off is on Saturday with a spicy salsa division. The event will also include a Festival Market, arts and crafts, a car show, vocalist competition, and more. There’s even more fair fun in September at the Rogers County Fair in Claremore. The festival and parking are free, leaving you with plenty of cash to spend on funnel cakes and carnival rides. This fair is a great place for makers, as it is home to some remarkable competitions and arts and crafts shows. The fair also offers talent shows, parades, fireworks, a 5K fun run, pumpkin patch, car shows, live music, and pageants. The Tulsa State Fair is also coming up, opening on Sept. 28. Don’t miss the Gatesway Balloon Festival that same weekend in Broken Arrow. Balloons inflate at dusk and dawn September 15-17. This breathtaking annual event supports Gatesway, a non-profit organization which helps adults with intellectual disabilities develop the life skills, social skills, and vocational skills they need to live more independently. The festival offers live music on the main stage and tethered balloon rides for $20 per person or $15 for folks under 12 years old. A host of family activities will be offered including an inflatables zone for kiddos with an all-day wristband available for $10 over age 6 or $5 under. On Saturday, the festival will host the Green Country Classic Mustang Show, also free to attend. There will also be a 1K family fun run and sanctioned 5k run. Mannford hosts its annual Boats, Melons, & BBQ Festival on August 19. The end-of-summer festival includes a free kids’ fishing derby, games, waterslides, a vintage vehicle show, and live music. Cardboard boat races will offer cash prizes to the fastest boats in each category as well as a “White Lightning” prize for fastest overall boat. One of the highlights is a good old-fashioned gun show from the Green Country Gunslingers, a traveling group that competes in Cowboy Fast Draw competitions with wax bullets. If you’ve ever wondered how you would fare at high noon, now is the chance to find out. Attendees can pay $5 for 10 shots and compete against their friends.

Skiatook Pioneer Day Festival 2017 is September 16 in Skiatook Central Park. Skiatook was founded in 1872 when it was established as a frontier trading post, and they pull out all the stops for this annual shindig. This is one of the bigger Pioneer Day celebrations in Oklahoma, including carnival rides, the “Fantasy on Wheels” car show, parade, fly-in, chili challenge, petting zoo, rodeo, tractor pull, horse shoe tournaments, live music, and fireworks display. The event kicks off with a 5K color run and fitness walk along the Osage Prairie Trail. The parade begins at 9 a.m. The festival will also host a youth talent show which is sure to include plenty of adorable local talent.

Eric and Christy dated for nine months. One evening Eric told her, “I want my own business one day.” The discussion concluded with Christy offering to loan Eric $10,000 to purchase a van and begin his dream. Eric and Christy beam when they talk about Torchwood’s beginnings. “I asked Christy to marry me two months later and we were married two months after that,” said Eric. In 2010 Christy quit her job and joined Eric full time at Torchwood. “He was trying to do it all himself,” said Christy, “office work, service calls, bookkeeping and advertising.” Using the Guerilla Marketing book by Jay Conrad Levinson, Eric began growing his business. contacted people he knew and the Torchwood phone began ringing. “I’ve always enjoyed fixing things and making people happy,” says Eric. “I’m a problem solver and it’s not unusual for me to get a call to inspect a home where there’s an unusual noise or smell.” One of Eric’s most comical challenges was after receiving a call from an elderly gentleman who was hard of hearing. Each morning between 2 and 3 a.m., he was awakened by an unusual noise that he could not pinpoint. He emphasized that it always happened precisely between 2 and 3 o’clock each morning. Eric made repeated visits to locate the source of the noise. He checked AC/Heating, the water heater and each faucet to see if one was rattling. All to no avail, but he reassured him that the equipment was in great shape. “One morning the gentleman came in beaming to see Eric. He had a clock-radio in his hands. “This is it!” he exclaimed. He had purchased the clock months ago not knowing that someone had preset

the alarm, but had not set it to any station. “Therefore,” said Eric, “at exactly 2 o’clock each morning the radio alarm would go off and emit the static you hear when a radio is between stations.” “Our customers just love Eric,” says Christy. “He can fix anything. He’s loyal, he’s fair and a man of his word. In addition to air conditioning, heating, plumbing and minor electrical services, Torchwood does kitchen and bathroom remodeling. “We gut, redesign areas, replace surfaces, fixtures and appliances.” The Danels also own Robertson Plumbing Supply in Tulsa. Both businesses office and warehouse together. “Relationships are what we’re all about,” agree Eric and Christy. “We hope you’ll give us a call next time you need our services.”
