Emersumnice Brewery is Hopping in Downtown Owasso BY TOM FINK

hen it comes to brewing, timing is everything. Knowing when to add the carefully selected ingredients, how long to let the product ferment, and when to add the hops can make all the difference between a bad beer, a good beer and a great beer. Just as important as it is in brewing, so is timing in the opening of a new business – something which Emersumnice Brewery owners Donnie Eldridge and his wife Jennifer, found out firsthand. “We opened up in March of this year – probably not the best timing (at the outset of the coronavirus pandemic), but even so, customers found us, and we’ve been doing fairly well, considering – I think we’re seeing about 50 percent of what we should be seeing, but I think that as things return to normal, our numbers will pick up.” Located in the Mowery Building on Main Street in Owasso, Emersumnice Brewery is Owasso’s first on-site micro-brewery and pub, offering patrons a variety of menu items and original brews, with something for the casual and serious adult beverage aficionados. Even the name– Emersumnice – is a play on words, Eldridge said, as it’s pronounced to sound like “’Em are some nice (beers).” “We could have easily been the Owasso Brewery, but the name is a conversation piece, a curiosity,” he said. Former Tulsa native Eldridge joined the Oklahoma Army National Guard at age 17 when he was still in high school. After graduating, he made a career out of the military, serving for more than 30 years, as well as being a full-time employee of the Army National Guard for 27. “About 15 years ago, brewing was kind Left: Emersumnice Brewery is located at 102 South Main Street in Owasso.

of a hobby for me, like it is for a lot of people, but as I’m in the military, I’m a real stickler for details – always taking notes, always trying to make things better,” he said. “So, each time I deployed to Iraq, I would come back with a bigger brewery system. In 2010 I was deployed to Iraq and roomed with Frank Montgomery, the other brewer here at Emersumnice.” “We started out basically like every other home brewer starts out, with a turkey fryer in the garage. That deployment we both built a 20 gallon three vessel system that’s digitally operated,” he said. “ Jump forward to 2017, I lost some friends and thought to myself it was time for a change.” “One of the guys I was stationed with was another entrepreneur, and he suggested I just open my own brewery,” he said. “After that, I sat down and over the next couple of weeks, came up with a business plan, and almost two years to the day later, we opened up.” “Although some of the technology has changed over the years, the basic beermaking process has remained the same since Egyptian times,” Eldridge said. “What we do is take all kinds of different grains and add them to a recipe as we’re ‘mashing’ those grains, which is basically adding water to it, heating those grains to a certain temperature,” he said. “We extract the starches from those grains and convert them into sugar. Once it goes through that process, which takes about an hour, we move it to our boil kettle, and then it’s known as ‘wort.’ While it’s in the boil kettle, we boil it, sanitize it, and reduce the amount of water, making it a higher concentration of sugar water.” (continued on next page)

“At that point, we add hops to it, which counteracts the sweetness of the wort – we can also use hops for flavor and aroma,” he said. “We’ll boil it for anywhere from 60-90 minutes, depending on the recipe, after which, we cool it down to about 65 degrees, put it in one of our fermenters, where it will sit for roughly two weeks. During those two weeks, we’ll add yeast to it – start to finish, it’s about two and a half weeks to make a batch.” Emersumnice offers eight different original beers on tap for the most discriminating beer connoisseurs. “All the beer recipes are my own – they’re recipes that I’ve worked with Frank to develop,” he said. “Of these, one of our customer favorites is the Blonde Moment Ale, which is a cream ale and a great beginner beer that’s lightbodied with a full flavor, citrus notes, and a smooth finish. “Another favorite is our Ram’s Head Wheat, which is an American Hefeweizen (German-style beer) that’s a refreshing wheat beer with a clean character that allows a bready dough and graining wheat flavor with banana esters to be complemented by its smooth hop flavor,” he said. “And

of course, Hopback Mountain, which is a red ale that’s a moderatestrength American craft beer with a caramel malty flavor.” As much as Emersumnice is a brewery, it also boasts delectable menu items from appetizers to salads, lunch specials, and more. “When people come in here, I like to think of it as a date night at a brew-pub for them,” Eldridge said. “We have pizzas, hamburgers, sandwiches, but also sophisticated items – a Caprese salad, a tomahawk pork chop, Cajun pasta – there’s a little bit of everything, and I should mention we have our own woodfire oven. You’ve never had a pizza until you’ve had it baked in a woodfire oven, and sometimes, we’ll even cook other menu items but finish them in the (woodfire) oven so they can get that unique quality to them.” As Owasso’s only working brewery, Emersumnice offers a one-of-akind experience for patrons, with “something for everyone,” Eldridge says.

“Mom and dad can bring the kids in here, watch something on TV, have a meal – there’s something here for people of all ages to eat, and they can feel like they’re at any other restaurant in town, with a brewery atmosphere,” he said. “Having said that, we also have an upstairs area that’s for people 21 and over, where we regularly host musicians playing acoustic music, and where adults can get away from the kids, enjoy the view and have a really cool place to just hang out.” Acoustic music is played 6:30-8:30 p.m. on Wednesdays, and 8-11 p.m. on Fridays and Saturdays. Other nightly events include Brewery Bingo on Mondays, Cornhole League on Tuesdays, Bike Night on Wednesdays, with live music. Plans are currently being made to introduce Trivia Night on Thursdays. truly uplifting event will be taking place on August 29, at Wings, Wheels, and Wishes, benefitting the Make a Wish Foundation. This fan-favorite festival of flight and fenders is fuel for the soul! In its 4th year, the annual fundraiser takes place in Collinsville at Airman Acres, 12600 N. 73rd E. Ave, from 8 a.m. to 4 p.m. Guests can enjoy

fly-ins, a car show, food vendors, a kid zone, ice cream, a live DJ, raffle, silent auction, and more, all free to the public! Flight enthusiasts can experience general aviation with a broad range of exhibits, including antique and modern planes, helicopters, and other flying machines. The car show portion of the event will host an average of 80 registrants,

and anything goes! “The weirder, the better,” said event coordinator, Cindi Conner. “If it’s got wheels and you think it’s cool, bring it!” Registration for the car show begins at 8 a.m. until 10:30 a.m., with a $25 participation fee. Trophy presentation is at 1:30 p.m. A great show is promised, with lots of participants eager to make wishes come true for critically ill children. Cindi got involved with Make A Wish when her son, Bill, was a recipient in 2005. He received the coolest big yellow bus that had been converted into a playhouse, with all of his favorite stuff inside. “He had the biggest smile that day!” said Cindi. “For me, doing this event is personal. I know what Make A Wish did for my son and for our family. It gives kids hope.” Bill was all about cars and planes from a very young age. Wings, Wheels, and Wishes was created and continues in his loving memory. Each year, one lucky car show participant is chosen for the “Bill’s Favorite” award. “This is such a unique event and a really fun day,” Cindi said. “You have to experience it. Celebrate W ‘The Cherokee Kid’ on August 15 BY FAITH WYLIE, OOLAGAH HISTORICAL SOCIETY

ill Rogers spent his last summer in Oologah in 1906. He returned to the downtown pump 89 years later as “The Cherokee Kid” statute on August 12, 1995. On Saturday, August 15, walk through the past as we observe the 25th anniversary of “The Cherokee Kid” and the restoration of Historic Downtown Oolagah, which began in 1984 under the vision of Wanda Sanders. The downtown walking tour is from 5 to 7 p.m. The Oolagah Historical Museum at 202 W. Cooweescoowee Ave. will be open, and other historic buildings may be open, depending on COVID-19 status. Plan to wear a face mask and practice social distancing. Other events that day will include the Will Rogers/Wiley Post Fly-in at the Birthplace Ranch from 7:30 a.m. to 1:30 p.m. The ranch is located on 380 Road two miles east of US-169. The Chamber plans downtown activities for children in the afternoon if health precautions allow. As a teenager, Will rode into town and took advantage of an artesian well in the center of downtown. In fact, he met his wife, Betty, at the Oologah train station, and they married in 1908. The Society has a limitededition mug for the event, and a commemorative shirt will be available at the fly-in and Will Rogers Memorial gift shop. If we are closed because of COVID-19, the event will become a driving tour. A brochure describing the buildings and their histories will be available.

Beat the Heat BY SHANNON SMITH

e’ve arrived at the time of year when everyone complains about the heat and humidity of Oklahoma. When I hear someone say, “Can you believe how hot it is?” I can’t help but chuckle. I’ve lived in Oklahoma my entire life, so how can I be surprised at the sweltering heat we get every single summer? One of my best memories of childhood was going to church camp in July, where we had no electricity in our cabin, and we had to wear long pants the entire week. There were always a couple of kids who had to go home because they were overheated, and we were given salt tablets to help us stay hydrated. The best part of the day was when we got to go swimming, and the best part of the entire week was Sadie Hawkins Night when the

girls got to chase the boys. Whomever we caught was our date for dinner. Now that I’m all grown up, I have other things to look forward to in the summer. I’m usually traveling abroad, but this year is different. My friends around the world keep in touch as we all look forward to meeting again. Since most of us like to cook, we often send each other photos of whatever we’re making. Rachael in England is making elderflower cordial, and Diana in Bali is making fish stew. Inbal in Israel is making chocolate lava cakes I taught her on a Zoom call. In Italy, my friend Diane makes spaghetti with zucchini and garlic. We made it together many years ago in her apartment in Rome. She used tiny zucchini she bought at the market and sautéed them in garlic and olive oil

with a pinch of chile flakes. I’ve never been a huge fan of zucchini, but when we sat down to eat that heaping plate of pasta, I couldn’t believe how delicious such a simple dish could be. I learned an important lesson that day. If you’re using fresh ingredients and really good olive oil, you don’t need to fuss with much more. And it usually takes just minutes to make. The farmer’s markets are brimming with summer zucchini this month, and I highly recommend trying this recipe. I’ve added a few other ingredients, but you can keep it simple with just zucchini, garlic, and olive oil if you prefer. If you’re still complaining about our Oklahoma heat, remember that we’ll be buttoning our sweaters and wishing we had fresh vegetables from the garden in a few short months. Meanwhile, instead of saying, “Can you believe how hot it is?” say, “Let’s make pasta!”

Spaghetti with Zucchini Makes 8 servings - This was the first dish I learned to make in Rome with my friend, Diane. She had purchased the smallest zucchini that morning at the Campo de Fiori market, and we sliced them thinly into little “coins” for a simple sauce to blend with spaghetti. We finished the dish with fresh basil picked from a pot sitting in her kitchen window. This dish takes just minutes to make, yet it is light and filling. A perfect summer dish! • • • • • • •

1 pound dried spaghetti 4 tbsp. olive oil 2 garlic cloves, minced 1/2 teaspoon dried red pepper flakes 4 small zucchini (about 1 1/2 pounds) Zest of one lemon 8 basil leaves

Salt Black pepper 1/2 cup parmesan cheese, grated 3 tbsp. butter

Bring a large pot of water to a boil. Add an abundance of salt, then add spaghetti. Stir to prevent sticking. Meanwhile, heat olive oil in a large skillet over medium high heat. Add garlic and red pepper flakes and stir for thirty seconds. Add zucchini and 1/2 teaspoon of salt, stirring to coat in the oil. Cook for three minutes, then remove from heat. When spaghetti is tender, transfer it to the pan of zucchini, using tongs. Add 1/2 cup of the pasta water and the lemon zest. Stir in basil, parmesan cheese, and butter. Taste to see if more salt is needed. Serve immediately.

Soaring High Over Oologah Will Rogers/Wiley Post Fly-In Promises to be ‘Biggest in Years’ BY TOM FINK

Despite the cancellation of so many 2020 events, festivals, and social get-togethers due to the coronavirus, northeastern Oklahoma aviation aficionados can still make plans to look to the skies for the return of the Will Rogers/Wiley Post Fly-in and National Day of Remembrance. Slated for Saturday, August 15 in Oologah, Oklahoma, the annual fly-in and day of remembrance event will see swarms of planes returning to the Will Rogers Birthplace Ranch for a not-to-

be-missed day of free family-friendly fun and entertainment. “The day will be starting early because, with it being in August, it’s usually a hot day,” said Tad Jones, executive director, Will Rogers Memorial Museums. “Pilots will start arriving early that day, around 7:30 a.m., and continue flying in until maybe 8:30 or 9. After that, we’ll have our remembrance ceremony (at 10 a.m.) to honor the lives of those who have lost their lives in a small plane crash and award special lapel pins to members of their families who are present.

As Rogers was an early proponent of the once-fledgling aviation industry and an inductee into the National Aviation Hall of Fame, to mark the occasion, pilots from across Oklahoma fly to Oologah in their planes, converging on the Birthplace Ranch for a day of aviation appreciation, food, family, and fun. In the past, it’s not been uncommon for there to be more than 125 planes fly in over Oologah Lake before settling at the ranch and allowing the public the chance to get up close and personal with pilots and planes alike.

klahoma is a state famous for some unusual reasons. It has more tornadoes than any other state. Who doesn’t know that one? It has a song that bares its name. It also has a boo coo load of famous people that come from within its borders such as singers, actors, athletes, astronauts, directors, politicians, entrepreneurs, criminals, and even evangelists.

singers Top on the list has got to be Garth Brooks. Born in Tulsa, Brooks attended Oklahoma State University on an athletic scholarship to earn an advertising degree. While there, he performed in Oklahoma bars and clubs. Through a few discouraging false starts, Brooks got his breakthrough, and his career and popularity exploded. He is known not only for his most popular songs like “Friends in Low Places,” and “The Dance,” but for his concert performance.
