or over 20 years, SpringFest at Woodward Park has been a must-visit event for all things gardening. SpringFest is a garden market and festival and is one of the major fundraisers for the Tulsa Garden Center, whose mission is to provide horticultural and environmental education opportunities as the horticultural headquarters of the Tulsa area. SpringFest will be held at the Tulsa Garden Center Mansion, 2435 S. Peoria Ave. April 5-6 from 9 a.m. to 4 p.m. There will be a large variety of plants, gardening information, garden art, a kid’s zone and food and fun for the whole family. Local plant nurseries will offer the newest and best plant selections for sale, while the popular Linnaeus Teaching Garden plant tent will be full of plants for sale as well. It’s also the perfect opportunity to ask any gardening questions you might have – beginner or advanced – to
professional nurserymen and women, as well as Linnaeus Gardeners and Tulsa Master Gardeners. Organizations expected to participate are the Green Country Water Garden Society, Northeastern Oklahoma Beekeepers Association, Tulsa Garden Club, Tulsa Herb Society, Tulsa Rose Society and Up With Trees, with many more on the way. Food trucks will be parked outside, and TW’s Catering will also be serving food inside the Mansion. After shopping and grabbing a bite to eat, guests are encouraged to visit the rest of Woodward Park. Take a stroll through the peaceful arboretum, the first one established in Tulsa back in 1964, or the historic Rose Garden, which is currently housing perennials and test roses since being affected by Rose Rosette Disease. Explore the Conservatory, a beautiful Victorian-style greenhouse, or the Linnaeus Teaching Garden, a state-of-the-art demonstration
garden in Woodward Park which offers an array of ideas for the home gardener. Our next-door neighbors at the Tulsa Historical Society will also be open and free to the public with their Free First Saturday event which features a special program for visitors. In order to maintain a safe environment for pedestrians and vehicles, all customer parking in front of the Tulsa Garden Center Mansion is considered “Preferred Parking” and will have an associated parking fee of $5 per vehicle. Tulsa Garden Center members and those with visible Disability Parking Placards park for free, and a free offsite shuttle service will be available as well. Proceeds from SpringFest at Woodward Park benefit Woodward Park educational programs. Colorectal cancer is the third most common cancer diagnosed in the United States, but thanks to prevention efforts, earlier detection, and advances in cancer treatment, the survival rate is improving. Routine screening can help prevent colon cancer or find it early when treatment is most effective. Unfortunately, colorectal polyps (abnormal growths) and colorectal cancer in the earliest stages may not produce symptoms. If symptoms do occur, they may include blood in the stool, stomach aches or pains that do not go away, and unexpected weight loss. Most physicians recommend screening for people aged 50 or older, or earlier if there is a family history of colorectal cancer and for those with inflammatory bowel disease. There is a range of screening tests available to find polyps or colorectal cancer, including stool tests, colonoscopy, CT colonography (virtual colonoscopy), and others. Not every test may be offered in your area, so check with your doctor or local hospital to see which tests are available. Each method has different risks and benefits; you and your physician should decide together which test is right for you. Most insurance plans cover colorectal screening for those aged 50 or over, often without a deductible or co-pay.

That evening I was privileged to cook with chef Nir Feller in Inbal’s rooftop apartment. We made homemade pita, hummus, poached fish in a spicy Libyan sauce called fifel chuma and a Jewish milk dessert, malabi. The following day I met Adeena Sussman, a cookbook writer who had recently moved to Tel Aviv from New York City. She took me back to the Carmel Market and Levinsky Market in Tel Aviv where I saw some familiar faces from my previous visit with Gil. We tasted
Green Shakshuka Serves 4
Ingredients: • • • • • • • • •
1 cup fresh cilantro leaves (packed) 1 cup fresh parsley leaves (packed) 1/2 cup fresh mint leaves 2 garlic cloves, minced Juice of 2 limes, divided into 2 bowls 1 tsp. ground cumin 1 tsp. ground coriander 1/2 cup olive oil, plus 3 tablespoons 2 bunches Swiss chard, washed & dried
Preheat oven to 375 degrees. In the bowl of a food processor, put the cilantro leaves, parsley leaves, mint leaves, garlic, juice of one lime, cumin, coriander, and 1 teaspoon of Kosher salt. Pulse a few times, and slowly add the 1/2 cup of olive oil. You may need to add more oil until mixture becomes a loose sauce (not too thick). It should be coarsely processed, not puréed. Scrape into a bowl and set aside. Cut out the stems from the Swiss chard. Chop the stems and coarsely and tear the leaves. In a 10” heavy skillet, heat 3 tablespoons of olive oil. Add the chard stems, celery, and onion, and

cook until just soft. Add the jalapeño, chard leaves, reserved herb sauce, 1/2 cup water, and cook until leaves are just wilted. Using a spoon, make four “wells” in the sauce to hold the eggs. Break each egg and carefully place into the wells. Sprinkle a little salt onto each egg and do not stir. Let eggs cook for one minute over medium high heat, then put skillet into preheated oven to allow eggs to finish cooking, about 7 minutes. Make sure egg whites are cooked through, but yolks are still runny. Remove from oven and serve immediately with crusty bread.

I learned many things on these tours of Israel, and since I’ve been home, I’ve cooked a lot of foods I learned while I was there. One of my favorite dishes that is very popular in Israel is Shakshuka, a North African dish that has made its way all over Europe, but particularly Israel. It’s a stew of tomatoes and vegetables with eggs gently baked into it. In Israel,
Traditionally, Shakshuka is a dish of eggs poached in a spicy tomato stew, but I like to make this green version using herbs and Swiss chard. If green tomatoes were in season, they would be delicious is this version too. Make this for breakfast or brunch, and serve it with crusty bread to scoop up all the yolky goodness. Shakshuka is on many menus for breakfast or brunch, and it’s served with fresh pita. I also make a variation called Green Shakshuka, which is made with green herbs and chard instead of tomatoes. W
hen you walk into Arubah Community Clinic, there’s an immediate sense of hospitality, safety and community. Dozens of volunteers have worked hard to ensure each patient that comes for treatment feels right at home. Founded in 2011, this free clinic sits in the heart of downtown Collinsville and is a labor of love from community leaders to anyone without insurance in need of medical assistance. “One of the things that draws people here, even if they live closer to another free clinic, is

the unique atmosphere that we provide to our patients,” said Arubah’s executive director Gary Nunley. “They feel that genuine love and concern when they walk through the door.” Funded entirely by private donations, the clinic is open every Monday and Thursday evening and the third Saturday of the month. Arubah draws more than 150 patients each month for medical assistance from not only Collinsville, but also surrounding areas, and it operates primarily through volunteers. That volunteer base includes medical doctors,

nurses, phlebotomists, X-ray technicians and receptionists. “It’s the heart of the place that draws a lot of our volunteers here— the opportunity to do what many of us feel called to do at some level, to be of service, to make a difference in our community, and to be the hands and feet of God,” Nunley said. This January, Arubah introduced a partnership with the Oklahoma State University Center for Health Sciences and College of Osteopathic Medicine, where second-year medical students serve at the clinic as part of the volunteer medical team. This semester, Arubah has

It’s a great partnership. Everyone has been blessed by it, for sure.” Working alongside local medical professionals, these students get real-world experience in an environment many of them have yet to see in their field of study. “For a lot of them, this is their first opportunity to help a real patient,” Mallory Hamilton, the clinic’s volunteer coordinator. “This is really
teaching them to see all aspects and all the variables.” Arubah clinical coordinator Susan Scott hopes they are making a lasting impact on these students, one they will remember long after they graduate and step into their profession. “The big picture is that they have this need in the back of their head so when they become the professional they know there’s a need and think, ‘What can I do?’ ‘How do we fix that problem?’” Just weeks into the program, these medical students have not only gained knowledge and experience, but they have
adopted the same passion for the clinic and its patients as its volunteers and staff. “We try to heal the whole person— physically, spiritually, mentally and emotionally. That’s the focus of everyone that comes in,” Hamilton said. “Everyone is so invested in every person that comes in with a sincere passion to help.”
