A Taste of

Nayarit, Mexico BY SHANNON SMITH

I

spent the first two weeks of this new year in the state of Nayarit, Mexico, located on the Pacific coast, just north of Puerto Vallarta. Most people travel to Puerto Vallarta to enjoy the beaches and perfect weather, and I did my share of that. But, the main reason I went was to meet Chef Alondra Maldronado, a cookbook author who has lived her entire life in the state of Nayarit. Alondra and I cooked for four days, where she taught me about the history of the ingredients and recipes that have been passed down since the Spanish conquest in the late 1500s. The Spanish brought spices, wheat, sugar and pork to Mexico, which are now a huge part of Mexican cuisine. Many Filipinos and Chinese traveled on Spanish ships as slaves, and made their homes in Mexico. The Chinese taught the fishermen how to dry shrimp for preservation, and today some of the best dried shrimp is from Nayarit. Alondra and I made dried shrimp tamales and ceviche, using recipes that have been shared for centuries. One of the main ingredients in Mexican cooking is chiles, both fresh and dried. They are used in many different ways, and each variety adds a different element of flavor and heat. The most common way chiles are used is in salsa (sauce), which is prepared every day in Mexican kitchens, and used to accompany nearly every dish. Alondra and I made at least 10 different salsas, including fresh, smoked and fire-roasted. We also stuffed poblano chiles with local cheese, and dried ancho chiles with steamed shrimp.

After four days of cooking, Alondra took me on a drive up the coast to her hometown of Tepic. We spent the entire day stopping at beach cafes, eating ceviche, oysters, and redfish cooked over open fires in the sand. In Tepic we visited a small cheese factory where we sampled three different cheeses made from the milk of mountain cows. We spent another day cooking in Alondra’s apartment, preparing refried beans and homemade corn tortillas to dip in charred tomato salsa. Cooking with Alondra filled me with so much knowledge and appreciation for the ingredients and efforts that go into making the traditional foods of Mexico. The importance of salsa, the simplicity of ingredients, and the stories behind Alondra’s recipes gives me a deeper appreciation for not only Mexican food in general, but particularly the food from the state of Nayarit. Like most countries in the world, the food and traditions change from corner to corner, making each place within special and unique. It is the same in Nayarit, but I not only gained knowledge in its food, I gained a new and dear friend named Alondra.

Stuffed Poblano with Red Chile Sauce - Serves 4 Red Chile Sauce: • 2 dried ancho chiles • 4 dried guajillo chiles (or dried California chiles) • 2 garlic cloves • 1/2 cup onion, chopped • 1/2 teaspoon salt • 4 poblano chiles • 8 ounces Chihuahua Cheese (or other good melting cheese, such as Monterrey Jack or Fontina), cut into four (or more) 1/2” slices • 1 cup all purpose flour • 2 eggs • 1/4 cup vegetable oil • 1/4 cup queso fresco (or other crumbling cheese, such as Feta) • 1/4 cup fresh cilantro, chopped To make red chiles sauce, remove the stems and seeds from the ancho chiles and guajillo chiles and discard. Place the chiles in a bowl and cover with 3 cups of hot water. Soak for 30 minutes. Put the chiles and the soaking water into the bowl of a blender. Add the garlic, onion, and salt. Blend until smooth. Pour into a saucepan and bring to a simmer for ten minutes. Remove from heat and set aside. To roast the poblanos, light a gas cooktop and place a chile directly on the grate over the flame. When the bottom of the chile has blackened, turn to blacken all sides. Repeat with three remaining chiles. Place in a bowl and cover with plastic wrap until cooled. Alternatively, you can place the chiles on a broiler pan and cook in the broiler of your oven, turning the chiles after the tops have dried and blistered (they won’t turn as black as on the stove). When chiles are cooled, carefully peel off the skins, trying not to tear the chiles. Lay out the chiles on a board or platter and carefully cut a slit down the center of each (like a pocket). Insert the cheese into the chiles, making sure the slit can still close so the cheese doesn’t ooze out. Use a toothpick to close the slit. Meanwhile, heat a skillet with the vegetable oil over medium high heat. Put the flour onto a plate, and put the beaten eggs and 1/2 teaspoon of salt into a shallow bowl. Coat the outside of each chile with the flour, then coat in the eggs. Place two chiles into the hot oil and fry until the bottom is browned. Using tongs, carefully turn the chile to brown the other side. Remove to a plate lined with a paper towel and repeat with remaining two chiles. To serve, place chiles on a plate and cover with warmed red sauce. Garnish with queso fresco and cilantro.

The show features vendors and experts from across the region to aid attendees in various aspects of home and garden renovation and improvement. “When you come to the show, you’ll have everything you might want, from outside home repair needs, full kitchen and bathroom remodels, decks, some home lending options will be here, and there will be vendors who deal in the home décor,” said Kendel Stocker, Special Events Manager. “J. Farley’s Irish Pub will be in the concession offering up some great specials should you get hungry while you’re here. We’ll also have some of Claremore’s favorite food trucks on-site.” This year, due to COVID-19, the committee has implemented several changes. First the show is now a two-day show; March 26 and 27. “We have maxed the number of vendors to 75 to allow more space between vendors, and help keep everyone socially distanced. large items out in front of the Expo Center,” according to Andrews. Although exhibitors from across the state will be in attendance, Andrews noted there will be a “tremendous amount of support” from those in the Claremore and Rogers County area, many of whom are exclusive to the Claremore show. “We have many exhibitors who aren’t at the Tulsa shows, because they might not feel them to be very beneficial to them, so you’ll see things at the Claremore show that you won’t see at other shows around the state,” she said. “Some of our vendors will only do the Claremore show because they like to see the return in their hometown, in their region.” “There is no admission charge to enjoy the show. This will be our fifth year not to charge admission,” Andrews said, “and it has made quite a difference in attendance. It is all

made possible by our partners and sponsors; we have great community support and this is a great way to pay it forward to the consumer.”

W

ho believes in love at first sight? Isn’t that found just in fairytales? Isn’t love at first glance only found in television shows like “Married at First Sight”? Does that ever happen in everyday life and the relationship actually have a happy ending? One Tulsa couple says, “Yes!” Megan Williams was 12 years old and at a church youth group event when she laid eyes on what she believed to be the love of her life. Colby Roof was tall, dreamy and an older man; he was all of 13. There was a lot of youth group flirting, chemistry and chasing that went on for the years until the two were old enough to date. This match made

in heaven would be devoted to each other even through some rough patches for 10 years until the walk down the aisle was finally scheduled. Now, after nearly a decade of marriage, the Roofs have their differences but know through their long history together how to navigate compromise. “We both believe in picking our battles,” Megan Roof said. “We have been together so long we mostly avoid situations that would put us in the need of compromise. For example, I will avoid things if I know it to be bothersome to Colby within reason. I know some things cannot be avoided, but somehow along the way our thoughts tend to be the

same.” There is one unresolved battle with this amiable couple, however. There is that one thing that keeps these two at odds. “Dogs,” Megan Roof said. “It’s silly but true. How to train the dogs. If we can leave them for a vacation. If we should get another. Colby would bring home a new animal every day if he could.” Communication is key in maintaining a happy home. Megan Roof ’s counterpart has some strong feelings about keeping that running smooth. “I want her to feel safe telling me everything, and I definitely know that I don’t have to hide or


sugar coat things,” Colby Roof said. “It’s difficult to come to an understanding without an open line of communication.” Wow! What a guy. No matter how much a couple is in love, relationships can get a little dicey from time to time when being cooped up during a worldwide lockdown, but this duo has a game plan to keep everyday life stimulating. “We try to keep things interesting,” Colby Roof said. “Before the pandemic, a date night could be a concert, rock climbing, walking through the park, etc. Lately, it’s been a quiet night at home watching movies, cooking good food and avoiding the public.” This couple sounds too good to be true. Surely, they get on each others nerves from time to time. The Mrs. admits to one irritation. “[It’s those] small stupid things like putting trash BY the trashcan but not IN the trashcan because it’s full,” Megan Roof said. Neither of these two came into their relationship from a life of perfect peace on the homefront. Colby Roof came from a divorced family and Megan Roof came from parents – her dad a pastor – who have been married for over 37 years. The successful marriage between the parents was not without their own set of

struggles, but she watched them work through it. This young couple saw examples of what to do and what not to do. With that as their road map, they have circumnavigated their own way. While Megan Roof feels that couples should ask the more experienced for marriage guidance, the hubs doesn’t feel that way at all. “Don’t listen to marriage advice,” Colby Roof said. “It’s a unique experience between you and your partner that nobody has a blueprint for. Keep an open heart and mind.” No matter how happy a couple can be, sometimes a lot can be a lot and a little less can be more. Specifically, these two like to spend a portion of time away from each other just so they can enjoy the reunion. About once a year they have separate vacations with friends. Hubby will hang with the boys while Megan Roof spends time with her chick friends. They like to put themselves in the position to miss each other. Evidently that saying about the heart growing fonder is true. Although this couple has nearly 20 years together, they never take each other for granted. How do they manifest that deliberate

backing? Colby Roof says they always try to be considerate of each other and allow the other to pursue their passions and dreams while offering endless support. In short, he says it’s honoring their wedding vows. Even though this couple is young – still in their early 30s – they carry on like a couple of old souls. They are comfortable with each other and settled. There’s not much drama in this household; neither gets too worked up about anything. Both know no one is going anywhere, their roots run deep and when it all shakes out, they are lifetime soulmates still experiencing that magnetism discovered that first night at the church youth group event. “[He’s] my best friend, my partner in crime, the peanut butter to my jelly,” Megan Roof said.

properly all by itself and neglect the small amount of time it takes to oversee its basic needs. Our busy everyday life has left us lean on time to learn some of the basic skills and tips to save time, money and be safer on the streets,” said Koger. “I have been in the automotive business all my life and considered basic car care common sense when in reality that isn’t always the case, especially with all the new advancements in the auto industry. Trying to teach our kids about something we know little about can be daunting. It would be like me trying to teach mine about algebra or chemistry. Although I know enough about the two subjects to use them in everyday life, I’m certainly not well versed to the point of teaching it to my kids. I would much rather depend on the experts (teachers) to teach those things to my kids.” That got Koger thinking…he relies on teachers to teach his kids about the things that will make them more successful in life, so why shouldn’t “We” as “Auto Experts” in our field do the

same things for kids to help them be successful and productive adults? Our world has become so much about ‘what’s in it for me’ that we have forgotten to be kind to others and most of all HELP OTHERS. With that being said, I have spoken to all my staff about the idea of a program to help parents and teens. All became excited and welcomed the idea of teaching others,” Koger expressed. His staff conversation evolved into a new program being offered about teaching basic auto

maintenance skills, free of charge at Bob Moore CDJR of Tulsa. It is designed as an introduction to the fundamentals necessary to keep your vehicle well maintained and safe in the long run; and pointed out that the program is not designed to teach people how to do everything on their vehicle. “We want to teach you about things such as checking your oil, changing a spare, checking tire pressure, and basic necessary skills that will help build your self confidence and reduce the need to depend on someone else when the need arises.” How do you get started?
