County Fair Premium Sale Benefits Local Youth Through Raising Funds, Character BY TOM FINK

F

or more than 100 years, the Rogers County Fair has drawn livestock exhibitors from across the county to compete, with those earning top honors getting the opportunity to qualify for the Rogers County Junior Premium Sale. Working in conjunction with the Rogers County Fair Board, the Rogers County Premium Auction Committee (RCPAC) organizes the premium sale honoring the hard work of the top livestock exhibitors. The premium auction supports several students within Rogers County’s 4-H and FFA programs. These funds aid in their future agriculture project endeavors, as well as their education goals. “Premium sale participants, the ‘top cut’ of all of the livestock species shown – this includes beef, swine, sheep, goats and dairy,” said Susan Gebhart, committee member. “Of the species, the top 81 make the sale, so when you have a premium sale, the

option is for it to be what’s called a terminal sale – this means that the animal actually changes hands, versus one where it’s just a ‘premium sale’, and that means, the students get a monetary award, and the animals

Kids, for example, like Meggie

Froman-Knight. “When I was a student, I was in both FFA and 4-H, and the experience of showing cattle taught me skills that have benefited me throughout my life,” FromanKnight said. “After I was out of high school, I used what I’d won at the premium sale to help pay for my undergraduate degree, but the sale and all the work leading up to the sale itself taught me life skills that have benefited me.” Last year, more than $211,000 was raised at the premium sale – roughly $2,600 per student. “This community has historically been very generous and very supportive of the youth, and the success of the premium sale is certainly evidence of that,” Gebhart said. “What the premium sale committee does, being a non-profit organization, is to handle the sale itself as well as the logistics, the overhead expenses that occur from year to year, reporting, photographs,

the dinner that precedes the sale as well as the sale itself – a lot of that happens either through volunteer efforts, donations, or things which are supplied to us at a reduced price. Even so, there is overhead which occurs, so when those kids get their bid, a small percentage is taken out for the overhead, but the rest of it goes directly to the students.” “You learn so much through the competition and the sale – you learn project management, finances and time management, several life skills,” Froman-Knight said. “The students aren’t just investing in their project, they’re investing in themselves, teaching themselves habits that will carry them into the future in their careers, relationships, lives. We see these students are typically the shining stars, and ultimately, this (event) isn’t just about the sale, it’s about changing student’s habits,

character and lives.” Gebhart concurs. “This sale is a fundraiser that’s clearly excellence-driven – this is totally based on the kid’s performance and their work ethic,” she said. “Those who are involved in agriculture in this county have a real vested interest in making sure that those kinds of young people make it into the agriculture industry as adults, but even if they don’t choose a career path in ag, there are still many who have a life that’s impacted directly by agriculture. They might be a banker by day, but still run cattle in the evenings and on the weekends. “Also, I believe that even people who aren’t involved in agriculture still recognize the value in raising kids who have a strong work ethic and character, kids who are in the barn or field and staying out of trouble,” she said. “Lessons that the

students learn competing at the fair and the premium sale are lessons that they’ll take with them throughout their life, no matter what they do.” The Rogers County Youth Livestock Premium Sale is slated for Monday, Sept. 16, at the Claremore Expo, following the Rogers County Fair at the Claremore Expo Center. Baby boutique opens in downtown Claremore BY TOM FINK

ecessity, as it’s been said, is the mother of invention. In the case of Claremore’s newest – and exclusive -- baby boutique, The District Baby, necessity was invention’s “mother” in every sense of the word. Just ask shop owner Cari Bohannan. “We opened The District on Main (women’s clothing boutique) in October 2012, and what led me

to decide to open the baby store was that I had an employee – two employees, actually – who were expecting, and there was really nowhere in Claremore that they could buy baby gifts,” said Cari Bohannan, owner of The District on Main and The District Baby. “In response to this need, we started a small section at The District – about 4x4 foot area – to offer baby items.” According to Bohannan, her small offering of baby items at The District turned out to be “extremely popular” with her shoppers, so after discussion with her employees and members of the public, she decided to open a second “District” shop to offer “baby only” items. “We knew of one business downtown – Outwest Home Décor – that the owner there was going to be retiring, so we felt it would be a good opportunity for us to take the plunge and open a baby store,” she said. “We

offer a large selection of items from newborn to 4-year-old/toddler – clothing, shoes, toys, gifts, books and various necessity items.” In keeping with her personal high standard for quality, Bohannan’s shop carries several recognizable and affordable quality brands such as Little Unicorn (diaper bags, blankets, car seat accessories and more), Copper Pearl baby gear (custom bibs, blankets and more), Aden + Anais blankets, quilts, swaddles, towels and much more. In the clothing department, brands carried include Milk Barn, which features certified organic cotton, a bamboo/cotton blend, and adorable prints in regular overalls, ruffle or dress overalls, joggers, dress and leggings, organic or bamboo dresses and bloomers, headbands, rompers, hooded rompers, organic zippered pajamas and more.

“Our official first day of business was Monday, Aug. 12, but we had customers coming in the week before we were open to look around, see what we had, learn more about us,” she said. “The Friday before we opened, we had three customers come in the door, and they actually bought stuff. That was very good to see – people getting excited about us before we were really open. This told us in advance that this (business) was a good idea and one which would benefit a lot of people.” Bohannan said she’s particularly excited about The District Baby in that it offers Claremore and Rogers

ept. 19, 2019, marks the 59th Tulsa Greek Festival held annually at the Holy Trinity Greek Orthodox Church in Tulsa, Oklahoma. What started as a simple dinner fundraiser at a local hotel has blossomed into a community event people of all ages have come to enjoy. It is the oldest ethnic festival in Tulsa. Thursday kicks off the festivities with “Lunch by the Greeks,” which are traditional Greek meals available for order to local businesses. If you can’t get enough Souvlaki (delicious grilled meat on a skewer), cater it in Friday as well. There’s no such thing as too much Greek! Beginning Friday, a wide range of activities open the celebration under a festive tent, next to the church. Traditional dancing, games, contests and shopping for everything from souvenirs to fine jewelry. Also, the food, for the love of Aphrodite, the food! If you believe in the old adage that you should always start with dessert, this is the perfect opportunity. Traditional baklava is served as well as loukoumades, which are the best honey-glazed

their hands at arts and crafts and even take a tour of the fire station nearby. Once the dancing begins, you will see Greek culture unfold before your eyes. Each dance pays homage to different regions, complete with colorful and dynamic costumes and spectacular music. Even though Greece is 5,900 miles away from Tulsa, you won’t help but think you’re at a big fat Greek wedding on an island! There is also an opportunity to tour the Holy Trinity Greek Orthodox Church. The church, which was founded by Greek immigrants at the turn of the 20th century, was Tulsa’s first building in the Byzantine style. The rounded corners of the church, along with the dome, is the traditional architecture of the Greek Orthodox. Once inside, clergy discusses the history of the religion as well as the building and answer any questions you may have. On your way out, light a candle in memory of a loved one. The festival concludes Sunday, Sept. 22, 2019. After 6 p.m. Thurs., Fri and all day on weekends, tickets for adults are $5 and kids are always free. Tickets can be purchased at the door. O

ne of the most common questions people ask me is, “What is the best way to train?” The problem with that question is that everyone’s body, nutrition and lifestyle is different, so there is no one-sizefits-all miracle workout or training program. The real answer is the way that best suits your specific goals and body type. For one person, the solution may be CrossFit, for another, it’s heavyweights and for someone else, it’s yoga and running. Just because it works for them does not necessarily mean that it will work for you. So how do you figure that out? STEP 1: SET GOALS What are you specifically seeking to accomplish through your exercise regiment? Gain muscle? Build strength? Develop endurance? Burn

fat? Improve flexibility? Train for a sport or competition? All of these goals are achieved through different types of training. Deciding on clear intentions helps you to focus specifically on getting the results you are after. There are many approaches to exercise, and not just any single one is the “best.” STEP 2: MAP OUT A PLAN If you are just starting out or have limited experience, finding a fitness mentor to answer your questions and assist you in your programming is a great way to start out. Just like with diet opinions, always consider the source of information and do your own research and fact-checking if you decide to build your own plan. Hiring a personal trainer who has in-depth professional experience in the type of program you decide on will be the most beneficial in the long run. If you find yourself in a place where been training for years but seem to stagnate in your progress, find a more experienced mentor who can offer insight and suggestions to assist you in adjusting your training methods. The most dangerous approach is to dive head-first into a program, class or

activity that you’ve never tried. Going hard at a new sport or program without taking the time to ease into it and test how your body responds is the fastest way to find yourself injured, in pain, and eventually losing motivation and giving up. Most gyms offer a free day pass, so check out your options and make sure they provide the amenities you want at a price that fits your budget. Sports and training classes typically offer tryouts and free trials as well, so take advantage of those opportunities before spending money and committing. Once you’ve done your research and learned how to take into account your body type and how you recover doing specific workouts, map out a scheduled plan that you can commit to following weekly. Schedule around various muscle groups, rest and intensity levels. Training all-out every single day is not the most beneficial approach. Your body isn’t built to handle that kind of abuse. Rest and recovery are just as important when it comes to your progress, so giving your body time to heal and build makes a significant difference in your results and will optimize your strength and energy for higher output on training days. Physical activity, nutrition and supplementation each play a role in the fitness process. If you’re eating too much, not enough, or even the wrong kinds of foods that will sabotage your training efforts. Different types of supplements work together with your

Green Chile Egg and Cheese Casserole Serves 6 I’ve been making this egg casserole since long before I had children. I love it because it uses roasted green chiles, and it has no meat or bread. There have been times I have added cooked sausage, and it was good, but I prefer the cheesy goodness with green chiles on their own. I have doubled and tripled this recipe many times to feed a crowd. It reheats really well for several days, and sometimes I freeze individual portions

an you believe it’s time for school to start again? My kids are grown, and frankly I don’t miss the back-to-school stress. But I know lots of parents are busily collecting school supplies, uniforms, permission slips, and after-school snacks. I also don’t miss those mornings getting my kids out of bed and forcing breakfast while they finished last minute homework. Honestly, they preferred Pop Tarts over my homemade breakfast, but at least I ate a hot breakfast while watching them run up and down the stairs searching for backpacks and matching socks. I happen to love eggs in every way, shape, and form. One of the cooking classes I teach kids is how to make eggs scrambled, fried, poached, and in omelets. I also think that most dinner left-overs go great with eggs the next morning. I’ve been know to throw pulled pork, roasted potatoes, curried chicken, and even pasta into my scrambled eggs. A frittata is a great way to “clean out the fridge” by using those lost veggies, bbq sauce, and wilting greens. I have two egg recipes that I particularly love to make for guests (or kids) that can last for the entire week. The first is an egg casserole I’ve been making for 25 years, and it never fails. The secret ingredient is cottage cheese, but no one will ever know. It makes the dish so light and spongy, and great for re-heating in the

microwave for many mornings. It calls for roasted green chiles, but you can add bacon, sausage, peppers, or just more cheese. It’s also gluten free! The other recipe is great for kids to carry with them in the car or bus, and they’re mess-free. They’re baked egg cups made in a muffin tin, and you can add just about anything your kids love. When I was in Rwanda I taught the chef at a school to make them for the kids, and he told me they were the favorite breakfast treat. They have lots of chickens on their property, so it was an inexpensive way to feed a lot of people. We put crumbled bread in the egg cups, but you can use hash browns or roasted veggies if you want to keep away from bread. The point is, you can get creative, and make your own special egg cups that your kids will brag about, and ask for the recipe when they go off to college (I know this from experience). There are a lot of things that cause stress on those early school mornings, but don’t let breakfast be one of them. Make these recipes over the weekend, and reheat them throughout the week to make life just a little bit easier. Meanwhile, I’ll be quietly drinking my coffee while thinking about you awesome parents out there!

Egg Soufflé Muffins Makes 12

I took this recipe with me to Rwanda when I was teaching the chef at a school how to make easy dishes for the students and visitors who were coming on mission trips. The school has a lot of eggs from their chickens, and vegetables in their garden that made this a very economical dish to make. But, they were thrilled when they ate them for breakfast since they’re so portable and delicious. I make a pan of them at home, then reheat each morning in the microwave oven. If you don’t eat bread, you can certainly leave it out of the recipe. • • • • • • • • • • •

3 tablespoons butter 2 tablespoons canola oil 1 cup yellow onion, finely chopped 1/2 cup red bell pepper, finely chopped 7 eggs 3/4 cup plus 1 tablespoon whole milk 1/2 teaspoon kosher salt 1/4 teaspoon ground black pepper 4 slices of bread, crust removed 1 cup shredded Cheddar cheese 1 cup cooked meat (sausage, bacon, ground beef, ham)

Preheat oven to 350 degrees. Spread softened butter in a 12-cup muffin pan. Heat a skillet over medium high heat and add canola oil. Sauté onions and bell peppers until soft. Set aside to cool. In a bowl, combine eggs and milk until blended. Add salt and pepper. Tear the bread into small pieces and distribute into the bottoms of muffin pan cups. Layer the cheese, meat and vegetables, then gently press mixture into each cup with the back of a spoon. Pour over the egg and milk mixture in each cup until almost filled (1/4” from the top). Bake 35 minutes until eggs are set. Insert a small knife into one of the cups, and if it comes out clean, the eggs are cooked. Let cook for 5 minutes, then serve warm. Note: You can leave out the bread, if desired. Also, you can use paper cupcake liners to make it easier to carry the egg soufflés on the go.
