Since our last issue something very special has happened to the food and drink scene in Ipswich...

Three new restaurants have opened in the Buttermarket Shopping Centre and more are on their way. Coast to Coast, Prezzo and Cosy Club opened this Summer and, by the time you read this, they will have been joined by up-market grill Byron Burgers with Wagamama opening later this month. Cosy Club owners, Loungers Group, have invested a hevty £950K in their bar and restuarant and created 30 jobs for local people in the process. It certainly is an impressive venue – quirky, eccentric and playful – think gents club meets village hall meets cricket pavilion! Mix matched tables and dining chairs, battered old cocktail armchairs, sleek 1930’s sofas and mid-century sideboards make you feel immediately at home. The walls are adorned with enormous rousing Soviet-era masterpieces, family portraits, flags, banners and iconic 50’s artwork peppered with the odd piece of taxidermy thrown in for good measure! By the end of the year there will be a total of nine new food and drink operators in the Buttermarket as well as the 12-screen Empire Cinemas complex, which will definitely breathe some life into the heart of the town centre at night!

MAUD’S ATTIC One of our favourite Ipswich retailers is celebrating a major milestone this autumn as it will be 20 years since it first opened its doors to customers. Maud’s Attic, situated in the quaint and vibrant St Peters Street, started trading as an independent retailer in 1996, and over the last couple of decades it has grown into a flourishing business that is well known for its quirky character and eclectic mix of jewellery, gifts, furniture and lighting. DON’T MISS! WOODBRIDGE SHUCK SHELLFISH FESTIVAL The fifth annual Woodbridge Shuck Shellfish Festival returns from 30 September to 2 October, with a fun, relaxed community food fest with live music and children’s entertainment at the Tea Hut. On Friday and Saturday the popular Shuck Shack pop up restaurant is back at Woodbridge Tide Mill. On Sunday evening there will be a Safari Supper in Woodbridge, where diners move between restaurants having one delicious locally sourced course in each. thewoodbridgeshuck.org.uk

Ipswich’s hippest hotel has arrived!

he trendy global hotel brand, pentahotels, celebrated the £2 million refurbishment of pentahotel Ipswich on Ranelagh Road with a Grand Opening party this month. VIP Guests were treated to a live performance by pop band Blue and rubbed shoulders with celebrities from hit TV programmes including TOWIE, Love Island and Hollyoaks. The 4-star “neighbourhood” lifestyle pentahotel Ipswich is certainly unique to our region. Its distinct interior promises to offer both business and leisure travellers a relaxed place to stay, as well as adding a grand helping of “coolness” to the town. What to wear?

I

T'S a fabulous time of year for fashion right now with new stock arriving in our stores daily. It's like Christmas morning when the delivery guys stick their heads around the door and we grin and clap our hands like seals. I'm sure they think we’re a few votes short of a full referendum, but hey, we love it. This season I'm pleased to say there is more colour around, with khaki making a strong appearance and probably continuing into next summer, so if your picking up basics, that could be a useful colour to work with. I love the neon peachy reds that have been so strong this summer against a khaki trouser, or a grey jean. So keep out those bright T-shirts and layer them with a bit of colour peeping out from a winter knit. There are still some neon brights making appearances in prints and patterns, accessories and maybe just a tiny detail on a cuff or trim. Colour always makes people smile and on a grey winters day (winter will be here before we know it) that bit of colour could just do the trick. But our main colour palette is rich and deep with plums and autumnal coppers and browns, reminiscent of shades of the

look way out of their comfort zone, it can be a real revelation! OMESPUN is celebrating our first birthday in Woodbridge. As Homespun Cashmere is based in Woodbridge, we are so happy to have a shop to sell our fine cashmere in the town. We could not resist adding other international clothing and shoe brands for men and women, most of these are unique to us in Suffolk. Helping your children on to the property ladder MY PROBLEM: Having had our daughter, Michelle, live with us to the age of 28, as much as we loved her and knew that we would miss her when she moved out, we were conscious that it really would be advisable for her to get on the property ladder before too long. She was planning to buy a house with her boyfriend and had a good job that would enable her to afford mortgage repayments. With both her and her boyfriend having not long finished studying, however, they hadn’t yet been able to save any kind of deposit. My husband, Mike, and I were keen to help Michelle but, given she was moving in with her boyfriend, we were concerned as to how we could protect the money we were putting in should things not work out between them. HOW IT WAS SOLVED: We were unsure as to how best to go about this and so felt it a good idea to seek professional advice. We’d used Barker Gotelee for conveyancing when we purchased our own house and found them to be extremely helpful and thorough, so we didn’t hesitate in contacting them again. Not only did she take the time to explain the various ways in which we could protect our interest in the property, she also explained that there had been a change in Stamp Duty Land Tax (SDLT) earlier this year, meaning that an extra three per cent duty is payable on the purchase of additional residential property. If we were looking to be named on the deeds as co-owners of the house with Michelle and her boyfriend, it would be considered a second property for us and the purchase would, therefore, be subject to a significantly higher sum of tax than it would be if we weren’t involved.

his really gave us lots to think about. Thankfully, Linda took the time to go through all of the options available and involved her colleagues from different departments, as necessary, to be sure that we were entering into this knowing all of the facts and able to make the most appropriate decision for all of us. We obviously trusted Michelle, so it wasn’t vital for us that we were named on the deeds, but we did want to be sure that we had some kind of legal claim over our share in the property. We are extremely fond of Michelle’s boyfriend, but who knows what the future might hold. We didn’t want the prospect of things becoming awkward and messy, so felt it best to tie everything up formally. Having considered all of the options and taken advice from Linda and her colleagues, it

seemed the sensible thing to do would be for us to take a charge over the property. Michelle’s mortgage company had to agree to this, but were happy to do so in our case. This meant that a significant saving was made in SDLT, yet our interest in the house was legally protected.

H

ow pleased we are that we consulted with Linda before we did anything else. Of course, the advice we were given was suitable for our individual needs and it may be that somebody else with slightly

different circumstances would have been best arranging things in other ways. This is why we are so hugely grateful that Linda took the time to understand what we personally wanted to achieve, and benefitting from the wealth of expertise from her and her colleagues resulted in the best outcome for us. We were able to help Michelle and her boyfriend get on the property ladder, they saved over £5,000 in SDLT and we have the peace of mind that whatever happens in the future, our hard-earned savings are legally protected. ■

“W

hen you try your best, but you don’t succeed, when you get what you want, but not what you need…” Chris Martin’s lyrics from Coldplay’s hit record “Fix you” really resonated with my own life at the end of 2015; I was facing a new year as a redundant professional and single parent, after 15 years in marketing and nearly the same in my marriage. Suffering with anxiety, stress and a complete lack of confidence, my friend recommended Katrina Love’s Life Check course. Katrina is a qualified integrative Psychotherapeutic Counsellor and life coach and her philosophy and techniques were forged through her personal life experience: She became interested in the effects of trauma and vicarious trauma over 18 years ago, when a close family member had a severe head injury. Through learning to cope and live with the consequences of her own traumatic situation Katrina wrote the Life Check Programme and her insight into how the mind works began. Meeting with a group of three over a six week period, two hours every week, I discovered that although the challenges we were facing were all distinctly individual to our own circumstances, careers

ESSIONS were an hour long and after my sixth one the results were really noticeable. The main improvements I have seen are my nasal labial folds are lifted and less pronounced, the lower jaw line and neck are firmed, lifted and toned and my upper eye area is smoother. Overall the texture of my skin has vastly improved, with a more toned and radiant glow. I’m definitely going to have the ‘top up’ sessions every month to maintain the wonderful results achieved and because I can enjoy an hour of escapism which I feel I deserve! This is not a one hit fix, it is a non-invasive gradual improvement and it’s all about being the best you can be without resorting to needles and knives. But the treatment itself is quick and has no downtime so you can carry on with your day. I’M JUST BACK FROM HOLIDAY AND MY FACE HAS TANNED BUT IS VERY PATCHY? WHAT IS IT AND WHAT CAN I DO TO GET RID OF IT?

This sounds like pigmentation – it is a very common skin condition and can be caused from over exposure to the sun, pregnancy and hormones. It is important to wear at least a factor 30 on your face and when you are abroad I would up that to a factor 50 and wear a hat. There are products and treatments on the market that will help to reduce the appearance but unfortunately will not get rid of the pigmentation permanently. Laser facials work deeper into the epidermis than a hands-on facial so could be beneficial. DO I REALLY NEED TO WASH MY MAKE UP BRUSHES? IF SO HOW OFTEN AND WHAT WITH?

You should wash your make up brushes once a month, as this removes all the bacteria that builds up and also makes them easier to use as your make up will glide on more evenly. Gently dip the ends of your brushes in warm water and massage with either a make up brush cleanser or baby shampoo (this is gentle and won’t hurt the bristles or

your skin) then rinse again with warm water and leave them to dry on a towel. I HAVE NEVER BEEN INTO A BEAUTY SALON BEFORE I AM NERVOUS ABOUT GOING AS I DO NOT HAVE MUCH SELF CONFIDENCE?

endy enjoyed being part of the local business and retail community so much that in 1998 she decided to open a second shop, Merchant House, just next door to Maud’s Attic and managed by her son Robert Manning.

Then, in 2011, a rare opportunity to acquire the second adjoining shop on St Peters Street came up, and Wendy’s son John Manning, opened up another outlet, the House in Town, which specialises in selling contemporary, on-trend furniture, interiors and artworks. So, the business is now a family affair with Wendy’s two sons, John and Robert, both involved with the operation of the three shops. ne of our favourite Ipswich retailers is celebrating a major milestone this autumn as it will be 20 years since it first opened its doors to customers. Maud’s Attic, situated in the quaint and vibrant St. Peters Street, started trading as an independent retailer in 1996, and over the last couple of decades it has grown into a flourishing business that is well known for its quirky character and eclectic mix of jewellery, gifts, furniture and lighting. “This October marks our 20th birthday and we’re thrilled to be celebrating such a big milestone,” commented owner, Wendy Childs. “Maud’s Attic has become widely recognised as one of the longest running retail outlets in the Saints area of Ipswich and this is something we’re hugely proud of.

It’s hard to beat opening a beautiful bottle to enjoy with friends, but making the most of your palate can do wonders in elevating flavours and textures. Here are our top wine tasting tips. 1. Look

Firstly check the colour of your chosen wines and look for opacity, clarity and viscosity (wine legs). Most bottles will provide the answers you are looking for in appearance so don’t worry about spending too much time on this (i.e. vintage, grape varieties). Clarity in wine is its ability to absorb light – every wine should have a sharp clarity. 2. Smell

It’s easy to get caught up in trying to guess the exact and intended aromas with wine. It’s better and far less frustrating to theme smells, such as forest fruits or berries. Smells can be loosely divided into three aromas: • Primary – grape derivative and fruit driven with herbal and floral notes • Secondary – these come from the winemaking process, including notes of nut husk, yeast, and cheese rind • Tertiary – age dictates the final aromas as a result of bottle or possibly oak storage, these are mostly savoury including spice, vanilla, and leaves 3. Taste

This is twofold – our tongues observe and once swallowed we experience wine retro-nasally which may alter the aromas. Again, taste can be divided into three key main areas: • Taste – our tongues can detect salty, sour, sweet or bitter notes. All wines include sour tastes due to the acidic nature of grapes, but this varies with climate and type. • Texture – the higher alcohol and riper wine content tends to mean bigger textures. We all know that red wine leaves a dryer sensation, this is due to tannins. • Length – taste is time-based with a journey of flavours resulting in different stages. There is a beginning, mid-palate and finish. 4. Conclude

Trust your senses and conclude the overall balance of the wine. Were the flavours correct? Too acidic? Too tannic? Were there any unique characteristics or memorable notes? www.thecrownatwoodbridge.co.uk

Esther Brunning runs The Shepherd, at Langham, with her husband Richard, and has a lifelong passion for cooking. The friendly pub has a reputation for fine food and drink, and Esther has developed a menu that offers unpretentious dishes made with only the best fresh local ingredients. What ingredients do you always have in your store cupboard?

Marigold Bouillon, because it’s an excellent quality stock which can be used as a basis for soups, pies, risottos and stews. I wouldn’t make a soup without it. Also lemons and limes, because I love the zest they give to salads and Middle Eastern foods such as cous cous. Good olive oil is also my staple; its flavour is superb for marinades, salads and roasting. We also use rapeseed oil from local producer Hill Farm. It’s not too heavy and the flavour is lovely. It’s very important to us to use local ingredients where possible, and there is so much incredible produce in this area. What do you like to eat after a hard day in the kitchen?

Ah, that’s easy – Marmite on toast! When I get home late, I want something easy and tasty to eat but I’m too tired to cook. It’s wonderful with some good seedy

bread, which we make ourselves, and salted butter. Plus of course a good strong cup of tea. Perfect! What do you enjoy cooking the most?

Middle Eastern and European cooking is a passion of mine, which I developed after a few trips to Morocco, Spain and Italy. I love the big markets spilling over with fresh produce, and this style of cooking is big, bold and punchy, with fantastic zesty flavours. It’s everything I believe food should be. What ingredient do you think will be the next big thing?

People are becoming much more aware that cheaper cuts of meat and offal are delicious and should

not be overlooked. Something like a bavette steak, which is from the flank of the animal, is gorgeous. We need to embrace this and use the entire animal, which is far less wasteful as well. Suffolk is full of great food and drink producers. Any recent discoveries you can share?

Country Pies in Capel St Mary are gorgeous! The pastry is out of this world. And, as I have already mentioned, the rapeseed oil at Hill farm is superb. HE White Horse at Easton is an absolute treat. The quintessential pretty English village pub, closed and neglected for quite some time, has reopened as a local pub, but now with outstanding restaurant food. Luring an exceptional head chef to create inventive and enticing plates of foods with fabulous quality ingredients, should ensure a long and hearty future for the Horse. The dining rooms are beautifully decorated in muted grey greens with heavy oak tables, flickering candles and sparkling glass, amid exposed beams and ancient oil paintings. The impeccable service from a friendly front of house team creates a really relaxing and refreshing atmosphere. Small platters of amuse bouche (on the house) were miniscule Thai-flavoured fish cakes and crispy chicken skin slithers topped with a

pistachio pate – quickly followed by a triple deck of tiny loaves of bread, one black and flavoured with squid ink, another with herbs, a third a shiny bloomer, accompanied by three quenelles of whipped butter, flavoured with chopped chicken skin, seeds or rosemary.

TARTERS include slow cooked duck egg with salsify and celeriac truffle, a sumptuously pretty tandoori monkfish, with saag aloo, smoked yoghurt and pineapple pickle, teriyaki beef fillet with fennel and lime or mackerel waldorf with smoked parfait, a crispy fillet served with celery, grapes, apple and walnut. There are seasonal delights – a soft and deeply savoury pigeon breast this week, cleverly accompanied by a trio of textures of pop corn, lemon curd and walnut whip, bringing the freshest local

produce to the table with their own unique style of beautiful plating.

HE main courses are as intriguing. Stone bass with roasted cauliflower, kohl rabi, almond and brown shrimp, or a rich and darkly delicious rare breed pork belly, served with braised sticky pigs cheeks, barbecue hispi cabbage, cider onions and a sage quaver. The haunch of venison, the autumnal Suffolk offering, was served with parsnip, hazelnut chocolate and King Edward. The butternut squash risotto served with pumpkin seeds, goats curd and sage. The pan roasted Loch Dochart salmon is served with squash, mooli, bok choi and kombu. The desserts are as picturesque – treacle tart came with candied walnut, Guinness and black – was light, fresh, sharp and delicious – the mesmerising ‘chocolate and hazelnut’ was an invention of exception – aerated, roasted, white, dark torte, salt caramel – made into smooth mousses, slick slithers and crunchy sweets. Other choices include vanilla panna cotta with roast peach, honeycomb and pistachio, or poached pear with granola, cinnamon and vanilla ice cream, or a cheese board served with pear chutney, truffle honey and celery. There’s a blackboard menu with pub classics, fish and chips, rib eye steak, moules marinière and even coq au vin, and bar snacks – no doubt executed to the pub’s high standards while crowd-pleasing those who stick to the traditional, cosy nooks and a wood panelled saloon bar for drinkers. The White Horse rides again and is definitely worth the trip.

Maple roasted butternut squash, apple and pecan meringue MAKES 4

100ml egg whites 100g caster sugar 100g icing sugar 200g butternut squash (diced) 2 eating apples (sliced) 100g pecans 100ml maple syrup, plus extra for pouring over top 200ml double cream (whipped)

1 Pre-heat oven to 100°C. 2 Whisk the egg whites to stiff peaks.

3 Add the caster sugar, bit by bit, until all incorporated. Fold in the sifted icing sugar with a metal spoon. 4 Line a baking tray with parchment. Pipe the meringue into nests on the lined tray. Place in oven for 2-3 hours (approx) to dry out – keep an eye on them and adjust the oven temperature accordingly. 1 Once cooked allow to cool. The meringues can be kept for a couple of days in an air tight container.

For the roasted filling: 1 Roast the butternut squash in the oven at 180°C until tender. 2 Warm up a frying pan and add a table spoon of butter, sauté the sliced apple, add the butternut squash and continue to sauté, add maple syrup and let it bubble and reduce. Add the pecans and cool on a tray. 3 To assemble spoon some of the squash, apple and pecan mixture into the bottom of the nest. Pipe in some cream and top with more of the squash mixture. 4 To finish drizzle with some maple syrup. Bon appetite! Vanilla October/November 2016

Annie Averdieck is the owner of Bathsheba Spa, a luxury beauty salon in the heart of Woodbridge town centre. Annie has recently moved to the Suffolk coast from London and has managed to create a little haven of calm with her successful business venture.

You are the owner of the fantastic Bathsheba Spa in Woodbridge. What is the recipe for making a spa a success? Running Bathsheba, like any small business, has been a constant learning curve for me. The key ingredient is of course producing a consistently good product, in our case, a consistently good experience. A lot of time and investment goes into creating a venue which is attractive, comfortable and

What is the ethos behind Bathsheba Spa? I started Bathsheba because I thought there was a space for a centrally located spa in beautiful Woodbridge that offered luxury treatments as well as ‘no nonsense’ beauty maintenance. I am a huge fan of REN Clean Skincare and the treatments they have developed – they are much slower paced and more ‘hands on’ than other methods. The interior is loosely based on colonial plantation style, as Bathsheba is my favourite beach in Barbados, a breezy, white washed surf village on the Atlantic Coast. We now have a wonderful regular clientele and also quite a lot of visiting clients to the area and guests of the Crown Hotel in Woodbridge, who we have partnered with, for Spa Breaks. What is your personal favourite treatment that you offer at Bathsheba? The 75 minute REN Radiance

Facial is pure heaven and you really do emerge with plumper, radiant skin. Our most luxurious treatment is the Moroccan Rose Ritual – a head to toe body exfoliation, soak and massage which includes a facial and uses the full range of Moroccan Rose products. You have lived in many different places but what do you enjoy most about living and working in Suffolk? I have always had ties with Suffolk, having holidayed as a child on the coast, but moving here from London full time has been a real joy. I love the combination of unspoilt coast and beautiful countryside, the gentle buzz of Woodbridge life, the seasonal change of visitors and the variety of people, new and old, that call Suffolk their home and always have time for a friendly exchange. You have been involved in a number of successful ventures, what advice would you give to someone who is thinking of starting their own business?
