Cards, balloons and stationery, music and DVDs, two barbers’ shops, eye-brow threading and children’s toys sit happily alongside jewellery and watch repairs, mobile phone and device accessories and repairs, pet supplies and e-cigarettes. DIY, foam and electrical spare parts add to the mix alongside scented stones and oil burners and Nepalese clothing and accessories. The market is the heart and soul of the city – a place for those who’ve come for years for their

cup of tea and bacon roll, as well as for the younger generations wanting falafel, vegan and vintage! And it serves us with those everyday practical things that you need in your life like a tailors, the DIY stall and the haberdashery.

he 35 food stalls are a wonder to behold. There’s a good range of speciality treats that you just wouldn’t find elsewhere – the herbs and spices stall is well-known for its wonderful range. The Cheeseman stall is the friendliest place ever with great advice and an even greater range of cheeses both local and international. Pickering’s sausage stall is brilliant for healthier sausages in an amazing range of flavours – lamb kofta, merguez and all sorts. and the Asian supermarket stock Japanese, Chinese, Thai, Korean, Malaysian ingredients that are so difficult to find elsewhere.

HERE is a free consultation service for brides aimed at helping them find the right piece of pearl jewellery to match a bridal gown, and above all suit the wearer. “It’s a bit like a personal shopping experience, we ask for an idea of what the gown is like and help the bride-to-be decide what will complement it the best,” she said. Julie sources from suppliers both at home and abroad, but she also offers a bespoke service using her own skills to make pieces on request. “I can make jewellery to order as well as re-string or re-model older jewellery and fashion it into something the owner will want to wear again and again,” she said.

The range includes silver, gold and Cubic zirconia (faux diamonds) and other gem stones to 18 carat gold with diamonds, and everything in between. Prices range from £12-£15 for simple silver-set earrings to pearl necklaces costing anywhere between £50 and £1,500. Julie’s top tip for looking after pearls is to make sure you wear them regularly and don’t put them in a box. Do we have any rights to see our grandchildren? OUR QUESTION:Our son and his wife have sadly recently separated and matters between them have become very acrimonious. We have two grandchildren, aged 5 and 7 and as a result of the bad feeling between my son and his wife, my daughter-in-law is refusing to let my husband and I have any contact with our grandchildren. Having previously enjoyed a very close relationship with them, my husband and I are very upset by the situation. As grandparents, we are unsure what – if any – legal rights we may have to gain contact. What can we do?

ADLY, it is sometimes the case that when parents separate, the children of the relationship can lose touch with their grandparents. The first step should be to approach the children’s mother to try and deal with the issue in a positive and nonconfrontational way. Mediation is another possible route to try and resolve the issue. However, it may be the case that the relationship has broken down to such an extent that it is impossible to agree. If no progress can be made then it is possible to make an

application to the court for a Child Arrangements Order, however, this should always be a last resort. A Child Arrangements Order sets out the type of contact a grandparent may have with the grandchildren and states the frequency of contact. For example, the court may order that the grandparents have supervised or unsupervised contact at set times or indirect contact with the grandchildren by letters or email. The court’s decision depends on the circumstances, which are different in every case. Vanilla February/March 2017

HE court’s paramount consideration will always be what is in the children’s best interests and family courts do recognise the invaluable role that grandparents have to play. Grandparents can be great role models and influences, and provide a sense of cultural heritage and family history. However, unlike parents, a grandparent does not have an automatic right to apply for a Child Arrangements Order and will have to apply to the court for permission to make that application. In order to be successful the grandparent must show that they have a meaningful and important connection with the child. In most cases establishing this is relatively easy as the grandparents are already involved in their grandchildren’s lives. If a Child Arrangements Order is made, the court’s powers to enforce such orders have been increased so that it makes it extremely difficult for parents to ignore them. They are therefore a powerful way to ensure that grandparents can maintain a meaningful relationship with their grandchildren. The courts also have the power to determine where a child should live or to grant a special guardianship order in favour of grandparents or relatives, should this be in the children’s best interests. If your son is having contact with the children, then in the short term, it would be advisable to have contact with the children when they are with their father. It is important that when there are problems legal advice is sought early on, as this area of law is not straightforward and each case is judged upon its own particular merits. ■

He certainly loves a challenge! “We are quite unique in Norfolk, with our open workshop and on-site designers who offer both hand and CAD drawings” says Sara. “Our award-winning designer, Susan, creates fantastic designs and we use CAD to produce pieces that would not be possible by hand. It enables us to be incredibly accurate, technically ambitious, and complete the finishing much more quickly, which saves the customer a lot of money. It allows us to blend traditional jewellery skills with the best of modern technology to create the most exciting pieces.” This innovative ethos has certainly paid off. Last year Sonkai celebrated its 10th

birthday, and one of its most exciting achievements was being selected to design the new civic chain for the Sheriff of Norwich. “We were asked to submit a design, along with other local jewellers,” Sara says, “and we were thrilled that our chain with 18 motifs featuring the rich history of Norwich was chosen.” So what next for the ambitious Sonkai? “We’re looking to take on another experienced jeweller, another Craig, so we can expand our range of branded designs, meet the growing demand for bespoke pieces and ultimately we want to be able to have time to hold workshops and teach courses from the premises.” explains Sara. Granting the holiday would leave them short-staffed and they can’t take the risk of allowing the worker the time off. The employee then comes back and says she is taking the time off anyway, regardless of her request being declined – what can an employer do? Write to the employee stating the reasons you have refused the request. You should also tell them that their absence will be unauthorised and could run the risk of disciplinary action. If the employee still goes, then the disciplinary should be held on their return. HE Smart Forfour is a bit of a tardis! Its small exterior proportions could give a false impression of how spacious the inside might be. But inside the forfour feels like a much larger vehicle. Transporting four people with all the luggage for a weekend away is no problem. Being so small makes it an obvious choice for city driving. Along with spirited performance and being able to turn on a sixpence, makes it incredibly maneuverable in and out of the traffic. Its ‘park anywhere’ dimensions, the ability to nip in and out of limited spaces coupled with its striking looks make this a real fun package around town. SURPRISINGLY SPACIOUS

ITH CHRISTMAS memories fading, my thoughts have already turned to this year’s wish list for Santa. I need to be on the (extremely) good list because I would very much like a Skoda Kodiaq on the driveway! I could have seven seats at my disposal. If cousin Hermione were to bring her entire entourage to visit I could fit them all with the seven-seat option. More likely, though, is the use it would get being loaded with all the tack and saddles needing delivery to the stables, and there would still be room for the dogs. With a four-wheel-drive option and such a cavernous boot, I can’t think of a vehicle more suited to country living. Perhaps one could use a panel van, but would that be acceptable on the school run? The Kodiaq also has the capability of towing up to 2.5 tons, so I’m sure it will be pressed into action pulling someone off the rain-soaked meadow on gymkhana days. I was thrilled to bits to find

Y SKIN has been feeling pretty lacklustre this winter so, I took a recommendation from a friend and booked in for a Decléor facial at Norfolk Spa, North Walsham. Decléor’s holistic facials are famous worldwide for their heavenly feel and simply stunning results. I chose the award-winning Ultimate Vitamin Glow Facial which promised to leave my skin ‘replenished and glowing’. I must admit "Spa" sessions are very few and far between although I do try to do a couple a year. I just think that we all deserve some "me" time and it really helps me centre and get back to me. I usually choose to have a back massage when I get the choice so it was lovely to be going for a facial which I don't usually do. The amazing thing about the Decléor treatment facials are that they all

include some back massage, which was wonderful. My therapist was able to use the back massage to find out that my skin was dehydrated, and therefore this was the focus of the facial. The facial began with an eye cleanse, lip cleanse and facial cleanse that removed all of the grime from my skin. As someone that is guilty of using make-up wipes and not cleansing my skin properly this was an extremely important stage to get all the toxins and build up out of my skin. As my skin was cleansed I felt all my stress simply melt away and I felt completely relaxed and comfortable. Warm mitts were used to cleanse my face, these were absolutely wonderful and made me feel extra sleepy, then the delicious and warm decongesting mask was placed over my skin.

If you’re prone to falling asleep during treatments, this is the point at which you’ll do so! The Decléor products smelt wonderful and it was good to know they were all natural (apparently you can eat the mask although I didn't fancy it!) While my face mask was working its magic, I had a hand and arm massage – ensuring every last bit of tension in my body had now floated away. The treatment finished by applying the Decléor Aromessence serum – which was so amazing I couldn’t resist purchasing it after. The facial left my skin feeling brand new and glowing – my skin felt so soft I didn’t want to apply make up for days afterwards. truggling to stick to my new year detox plan, I decided to give myself a helping hand with the Spa at St Giles signature detoxifying treatment – the Elemis Body Sculpting Cellulite and Colon Therapy. It’s supposed to help with water retention, reduce cellulite, and is very detoxifying by aiming to break down fatty deposits. It's more of an invigorating massage than a relaxing one. However, Elemis has taken a much more scientific approach to the matter by creating a treatment which combines colon-cleansing massage techniques with their gorgeous products, with the theory being that by increasing circulation and encouraging the body to flush out all those nasty toxins, we can at least improve the appearance of these areas.

It’s a 50 minute treatment and is essentially a massage for the thighs and stomach. First, my skin was body brushed with natural cactus skin (not as painful as it sounds although stimulating!) to boost circulation and exfoliate the skin. Be warned: this isn’t a treatment for those of you after a relaxing pamper; this one means business. My therapist then applied Elemis lipo-refining serum and spent some time massaging each leg, focusing on the thighs using hacking and pummelling motions to break down the fatty bits on the thighs. This starts on the back of the body, followed by the front. Next, a detoxifying fennel (known for its diuretic properties) and birch (to stimulate blood flow) peel-off body mask was

applied to the legs and top of the thighs, drawing out any impurities to help firm and smooth the skin. Now for the cleanse. Your therapist massages around the stomach, starting at the base of the ascending colon and moving round clockwise, following the line of digestion. The abdominal massage is an important technique to detoxify the body. Finally, the body mask is removed using Hot Lime Mitts before the Body Sculpting Firming Cream. While no treatment is ever going to replace the results achieved by regular workouts in the gym, this treatment is the ideal option for those keen to give their New Year detox plans a boost, while the emphasis on ridding the body of excess fluids means you could well find your jeans feeling – albeit temporarily – a little looser. This really is a treatment to tone, smooth and firm, and results were instantly noticeable; however for best results, a course of three or four treatments over a 28 day period is recommended. Judging by the number of classes available, there is no doubt that many Norwich citizens enjoy the healthy benefits of practising either yoga or pilates. There are differences between the two: Pilates helps to strengthen your core and overall fitness; while yoga has evolved over 500 years since it was first practised by the Chinese and has a spiritual connection. Both can help to boost your overall wellbeing, so with that in mind, here we take a closer look at some of the classes available.

JACKIE HEFFER-COOKE: BABY YOGA / ORANGE GROVE CLINIC

Birthing specialist Jackie admits wanting to see the babies whose mothers she had helped prompted her to train in baby yoga. Her classes have grown in popularity so much that she now holds them at seven different locations around the city including at Norwich School for Girls and The Garage. At the beginning of January she had 180 women booked on to her classes which tend to cater for up to 20 people at a time. She offers a variety of ante-natal and post-natal classes, whereby mums can bring their babies and toddlers along. She also teaches the Hatha style of yoga to anyone who wants to learn. “Practising baby yoga enabled me to focus on my baby and do something lovely and bonding,” she explained. “But more than anything my classes encourage community. There is nothing more pleasing to me than seeing 14 mums having coffee together after class.”

Claire is expanding the number of regular classes she teaches at Treat, located in Capitol House, Heigham Street, Norwich. She currently offers small group classes on a Monday afternoon and Wednesday evening, but from February will be including a Saturday morning back pain class and from March another evening class on a Thursday. She also provides community classes on Wednesdays starting at Mattishall Village Hall at 11am and then on to Acle Recreation Centre at 1.15pm. Claire is an advocate of pilates and says it is beneficial for overall strength and fitness, and helpful for people seeking to reduce pain after injury.

“I would encourage anyone to give it a try as it is kinder to your body than most forms of exercise. It is low impact and not going to put any excess strain anywhere,” she explained. “You learn to use your core muscles to develop strength and flexibility and it teaches you how to use your body as it was designed to be used.” Treat classes cost £9 per drop-in session, £32 for 4 or £60 for 8. Her colleague, physiotherapist Hannah Russell, delivers a pilates class on thursday evenings for patients needing to work with their posture muscles. “Dru is not a typical type of yoga and I don’t believe there is another teacher in this area,” explained Evie. “Practising Dru allows us to help people who have had injuries to work gently with their body.” “A lot of research is currently going on into Dru Yoga and it is proving to be beneficial for keeping people at work and helps to calm and destress people.”

LIENTS of The Jefford Centre, in King Street, Norwich, know they are in good hands and can get a full-body MOT if they require it thanks to the staff’s expertise and complementary range of therapies on offer. Owner and director of the centre is Evie Jefford, who is a highly-qualified physiotherapist and Dru yoga teacher. Evie, who qualified in 1997, focused on musculoskeletal physiotherapy and after completing her Masters in Manipulative Physiotherapy at Curtin University in Perth, Australia, specialises in chronic pain. She said: “I wasn’t planning to do my Masters at the time, but was really glad I did as after that intensive year it meant my diagnostic skills, clinical reasoning and hands on skills had improved immensely.” She is now an expert in her field and after and returning to the UK decided to open her own clinic a decade ago. “It was the recognition from others around me, particularly February/March 2017 Vanilla

colleagues and patients, that made me realise I could go it alone and set up my own clinic,” she said. Other physios and holistic therapists, offering more evidence-based treatments including acupuncture and hypnotherapy, were quick to join her team. Today, working alongside her are two other physiotherapists, Hannah Russell, who also teaches pilates classes at the centre, and Katrina Woodcock; traditional Chinese acupuncturist, Nick Careswell; and hypnotherapist and life coach, Matt Reed. EXPANDING SERVICES

Such has been the success of the centre that in October 2015, Evie needed bigger premises again to cope with increasing demand for the clinic’s all-round approach to a healthy body and mind, hence, the move to King Street. “We needed bigger premises to provide a larger studio for our Dru yoga and pilates classes, as well as an area that provided us

with a 10 metre walkway for the AposTherapy we now offer,” she said. The centre has become the only provider of AposTherapy in East Anglia. It is an innovative non-surgical and drug-free treatment for knee and back pain and other musculoskeletal disorders. “AposTherapy patients wear shoes with special pods underneath that causes reactive balance mechanisms and activate the muscles that support the joints eventually alleviating pain. “We need the walkway so that we can analyse a patient’s gait and note improvements in their walking pattern,” explained Evie. So far the therapy has been well received at the centre and Evie, who is also trained in dealing with golfing injuries, is looking to expand the service to local golf clubs. 11. Spring Clean A new year always heralds change. Once the decorations are back in the loft and visitors have dwindled, we cast our eye over our homes again. With Spring not so far away and the days getting slightly longer, our instinct is to freshen things up or maybe even start anew.

I am lucky, I get to start from scratch quite often as I decorate show houses a couple of times a year. A blank canvas can be quite daunting, but if you take a room at a time and keep a style or colour in mind it should all fall into place, like dominos. Unlike with a show home, you don’t have to please lots of different people – just yourself. So if you fancy Flying Duck wallpaper in the smallest room of the house, go for it! Changing or adding a rug can totally lift a room, especially if it is a bold one. It is a much cheaper and easier option than a whole new carpet. You can let the rug dictate all the accessory colours – change the cushions, move some pictures around, add a vase or two.

“I don’t think the next big thing is going to be an ingredient” Library restaurant. Working in an independent restaurant, using fresh local ingredients and being in charge of a small team of chefs is something I really enjoy. What ingredient do you always have in your store cupboard?

I always have smoked paprika and fresh herbs like coriander and thyme, anything fresh. What do you like to eat after a hard day in the kitchen?

Something sweet, I loved to finish with a sweet flavour in my mouth.

What ingredient do you think will be the next big thing?

To tell you the truth, I don’t think the next big thing is going to be an ingredient. Right now, we have a massive range of products and we can get anything we want from any place in the world. I think the next big thing will be a type of food, and that is Nikkei, a mix of Peruvian and Japanese. Norfolk is full of great food and drink producers. Any recent discoveries you can share?

What type of cooking (or dish) do you enjoy preparing the most?

I really like a place called The Green Grocers, they work with organic products and everything is always fresh. Also the staff are very friendly and my son loves it.

I love food, so for me being able to work with seasonal products and create a dish with something fresh is incredible. I also love Asian food.

Y NAME IS RICARDO LEGUIA and I am a Chilean chef. I studied in Chile and when I turned 22 I decided to head for Barcelona to keep learning about different types of food and products. Once there, I studied modern cuisine and worked in various hotels and restaurants. In 2010, I started working with probably one of the most influential and important chefs of all time, Albert Adrià. There’s no tapas bar in the world quite like Tickets in Barcelona. In standard Adrià fashion, the eccentric 90-seat restaurant is converted into a culinary amusement park that takes tapas to the cutting edge. Five small-plates bars and open kitchens surround the perimeter of the restaurant, each specialising in different preparation methods. With him I had the opportunity to work alongside some of the globe’s best chefs. They opened my eyes to a completely different world of ingredients, flavours and all kind of techniques. I came to the UK four years ago, and in that time I have been the sous chef at Barnham Broom and head chef at the Norfolk and Norwich Hospital and UEA. Now I have started a new adventure, being the head chef of the

White Chocolate and Berry Cake 250g self-raising flour 100g golden caster sugar 140g white chocolate drops 150g berries (blueberries or raspberries are best, but you can use whichever you prefer) 1 egg 125g butter 125g milk

1 Preheat the oven to 180C / Gas Mark 4. 2 Weigh the flour, sugar, chocolate drops and berries of your choice, then add to a bowl with the egg. 3 Melt the butter in a pan, pour in the milk, and add to the rest of the ingredients in the bowl. 4 Stir everything together until it’s fully mixed. 5 Pour the mixture into a lined 20cm round cake tin. 6 Bake in the pre-heated oven for 40 minutes.

Spiced Apple Tart Tatin Chef Jaime Garbutt’s classic tart tatin will quickly become an at-home date night favourite. YOU WILL NEED : 5 braeburn apples 100g caster sugar 50g butter, cubed 1 Cinnamon stick 1 Star anise Puff Pastry TO MAKE : 1 Peel, core and quarter apples. Leave uncovered in fridge to dry out overnight. 2 Over medium heat, pour sugar in 10” non-stick frying pan with metal handle; melt to a light golden brown. 3 Slowly add butter; swirl pan and stir until it becomes a caramel sauce. 4 Remove from heat; add cinnamon and star anise. 5 Fan apples on top of caramel in pan, packing tightly, round side down. 6 Roll pastry to 3mm thick; cut a round slightly bigger than pan; prick liberally with a fork and place on top of apples. 7 Place the pan over high heat till bubbles appear at the sides. 8 Place in a preheated 180°C oven for 40 minutes till pastry is dark golden brown. 9 Carefully invert onto a plate and serve immediately with vanilla ice cream. Delish!

Chocolate Truffles MAKES AROUND 60 SQUARES

Base

175g dark chocolate buttons Truffle mix

550g milk chocolate buttons 10 egg yolks, beaten 110g butter 5 teaspoons double cream 25ml (5 tsp) rum-optional 20g (4 tsp) cocoa powder Any flavour you fancy, e.g raisin soaked in rum, roasted salted pecans, dry roasted pistachios etc

1 Line a swiss roll tin with non-stick baking parchment. 2 Melt the base chocolate in a glass bowl in a microwave very carefully or over a pan of boiling water until melted. Spoon the chocolate into the tin and spread to create a thin base of chocolate for the truffle mix to sit on. You can add to the prepared base roasted salted nuts, dried fruits, cherries in kirsch or stem ginger-whatever you fancy! Place in the fridge to set the chocolate. 3 For the truffle mix, melt

the chocolate and butter in a glass bowl in the microwave. Microwave in 30 second bursts until completely melted, do not overcook it’s easy to burn chocolate! 4 Stir in the egg yolks, cream and rum and allow to cool. 5 Spoon the soft truffle mixture over the set base. 6 Finish with melted white or dark chocolate drizzled over the top. Add chopped pistachios for colour and crunch. 7 Store in the fridge and enjoy at your leisure! Vanilla February/March 2017

inner at Delia’s Restaurant & Bar carries with it a certain air of expectation; and with good reason. Norfolk’s best-loved celebrity chef personally creates the menus here, and diners can enjoy her recipes cooked, and served, to her exacting standards, using only the finest fresh, local and seasonal produce. We were expecting great things. We were not disappointed. The menu is a tempting mix of imaginative dishes. Starters include Quiche Lorraine, Delia’s own version of this French classic; Rillettes de Tours with Spiced Pickled Prunes, a shredded pork pâté flavoured with wine and junipers; and Gratin of Mussels with Sizzling Garlic Butter. My partner chose an unusual starter, Libyan Soup with Couscous. This lamb broth with chickpeas was expertly flavoured with Middle Eastern spices, and came with some wonderful homemade flat bread for dipping. It was a big hit, the perfect tongue-tingling winter

warmer on an icy January evening. The wine list at Delia’s has been painstaking created to complement the dishes, with mainly French wines, and a few New World choices as well. We select an Australian Shiraz Bushranger; a full-bodied, punchy wine with a spicy sweetness. My starter of Warm Puy Lentil Salad with Walnuts and Goats’ Cheese was a very simple dish, but expertly executed, with rocket leaves delivering a peppery yet refreshing crunch, earthy lentils and a lovely dressing. A perfect light starter. Mains continue to impress. The selection includes Chargrilled Entrecôte Steak with Sauce Marchand de Vin; Braised Beef Goulash with Smoked Pimenton; and Pancake Cannelloni with Spinach and Four Cheeses.

y partner can’t resist the Pork Stroganoff, with Three Mustards, Pilau Rice and Buttered Leeks. The pork

was incredibly tender and full of flavour, with a creamy yet light, delicate sauce. Buttered leeks are cooked al dente, fresh and crisp. My choice is equally mouthwatering; Smoked Haddock with Chive Butter Sauce, Potatoes Boulangère with Rosemary and Buttered Leeks. A generous portion of fish, which tastes like Smoked Haddock used to taste, with an intense, satisfying flavour. This was perfectly cooked, packed with flavour and served on a bed of spinach with a superb sauce, and more of those splendid buttered leeks. A real fish lovers dish. Desserts include Meringue with Vanilla Bean Ice Cream and Homemade Lemon Curd; Spiced Apple and Cider Cake with Whipped Cinnamon Cream; and Caledonian Ice Cream with Raspberry Purée. For my partner, the cheese lover, a Durrus from Neal’s Yard Dairy, a

fresh and fruity semi soft cheese, served with a gorgeous pear chutney, celery and melt in the mouth homemade biscuits. For me, a dreamy Sticky Gingerbread Pudding with Ginger Wine and Brandy Sauce with chilled Pouring Cream. This was a perfect dome of indulgent, warm, soft and sticky sponge, wonderfully spiced, but not over sweet. Some homemade raisin and nut fudge and very good coffee rounded off a perfect meal. Dinner at Delia’s is elegant dining at its best, but it’s affordable too. I suspect this is Delia’s intention – she wants everyone to be able to share her love of superb food, simply but expertly cooked. You can recreate all the dishes. his year we have hit the ground running with celebrations in full swing for our 25 years in the Norwich restaurant trade and have been busy planning some rather lovely events over the next few months, from cookery demos to pampering evenings and skincare masterclasses (a glass of champagne makes for a glowing complexion, I am told!) A winemaker’s dinner on Thursday 9th March is hosted by Jose Maria Fraile, a leading light in the Navarra wine-making scene. The Tandem winery is a perfect example of newwave Spain, with many top awards. Its wines will not disappoint, from Immacula to the very special Ars Macula. Our head chef Ricardo, who spent time working at world-class Tickets in Barcelona (with Albert Adria), will prepare a signature Spanish three-course meal to complement the wines. He will also give a short talk on his working career in Spain and Chile. Tickets are on sale from the Library for £45pp including all wines and a three-course dinner. As many of us go for a Dry January, I have decided life is too short. Instead try to drink wines low in ABV which still gives enjoyment. Pouring a smaller, more dainty glass helps too. My choices are German Riesling (not fashionable but so elegant), a wonderful wine called Alaia Txakoli from the Basque region of Spain, and let’s not forget Prosecco – drink a good one and those long winter evenings will no longer seem so dull. ■

However, after meeting wife Victoria and now the owner of two successful pub restaurants (The Fox at Lyng and the Tuddenham Lodge) he has retrained, learning his culinary craft over six years at the former. He displayed a natural flair for cooking and flavours and now heads the kitchen team at The Fox, recently voted Norfolk's best pub at the EDP Food and Drink Awards. Gavin also cooks in the Lodge kitchen on a Sunday, when head chef Mark is off. What ingredients do you always have in your store cupboard?

I love cooking with fresh herbs, chillis and garlic. A good salted butter also makes such a difference. What do you like to eat after a hard day in the kitchen?

Anything which doesn't involve cooking! Usually a selection of cheese, chutneys and crackers or if it's really late I have been known to resort to a chicken Pot Noodle, with extra soy sauce of course! What type of cooking (or dish) do you enjoy preparing the most?

I love working on the pans, and steaks. Some chefs hate cooking them and find it hard to judge. My pet hate is under-

seasoned steaks when I go out. A great sauce is also key. To get a great Stilton cream is more than just warming Stilton and cream! What ingredient do you think will be the next big thing?

With a greater amount of people having dietary requirements I think a lot of foods will sway towards the “good ole-fashioned” principles of eating plenty of fresh vegetables, slow-cooked meats, grains and pulses. All of our dishes and sauces are prepared and cooked on-site so we can be sure of the ingredients and therefore cater to different requirements. We do not use flour to thicken our sauces or gravies, so most dishes are gluten free, but we also have gluten-free bread available to substitute on starters such as our homemade pates and terrines.

Spring Lamb BY KEITH CHARLISH The Paddocks Butchery and Deli

Spring lamb, also called early or summer lamb, is 3 to 5 months old. It is very tender though doesn't have as much flavour as lamb later in the year since the lambs haven't had as much time to graze.

Choose the best Look out for our Spring lamb from February through to early Summer. You want firm, slightly pink meat with a velvety texture. As the meat ages it becomes darker in colour. Prepare it Lamb shoulders and legs may be boned before roasting which makes it much easier to carve. Lamb can also be butterflied for barbecuing. Remove fat and back bone when preparing a rack of lamb. Store it Store on a low shelf in the refrigerator, away from cooked foods and food that is to be eaten raw. Lamb also freezes well. Small cuts can be stored for up to three months and larger cuts for up to six months. Cook it Roast a leg or loin of lamb. Grill middle loin or loin shops. Braise the shoulder, neck chops and shanks and mince the shoulder, loin or leg to make lamb burgers.

ANILLA IS VERY EXCITED to report that CoCoes Café Deli at Strattons Hotel, in Swaffham, is opening larger premises to meet increasing demand for its fabulous homemade food. CoCoes are champions of Norfolk produce, and the café features a mouthwatering menu of wholesome and delicious dishes made using only the finest local ingredients. Whether it’s breakfast, brunch, afternoon tea, or a hearty meal, there is a superb selection of salads, quiches, fish and vegetarian dishes, gooey cakes, biscuits and pastries. Everything is made fresh on the day by CoCoes’ experienced chefs, and there are always gluten free, vegan and diabetic choices. The deli side of CoCoes showcases the finest of Norfolk

cheese, meat, fish, beer, wine and pressed juices to take home, plus of course those wonderful cakes and bread made on the premises. With this tantalising assault on the senses, it’s no wonder CoCoes has become the café of choice in the area, and it’s always packed out with hungry diners. But with only a small seating area it was time to expand. “The deli is very popular, but people really come here to eat,” explains owner Ness Scott. “With room for just 14 diners, the space was just too small to cater for the increasing demand, so we have converted a large barn on the site which can seat 45 people and give the café the space it needs. The deli will still be here as well, and we are turning the old café into a lifestyle shop selling books, home wares and vintage items.” The menu at the new CoCoes will still feature the same delicious food customers have come to know and love. “Everything will be the same high standard, but with even more choice,” says Ness. “We will have 25 different types of cakes, biscuits, and meringues

freshly made by us every day, and some superb lunch dishes. As well as all the usual favourites, the chefs work on daily seasonal specials such as Florentine Pie, North Norfolk mussel chowder, pigeon and wood nut terrine or beetroot falafel in pitta bread. “Our aim is to carry on providing a flexible and informal eating experience, any time of the day, with the spotlight on the ingredients. We have so many excellent producers in Norfolk, and people come here to sample the very best of fresh, homemade food, and eat what they want. We also cater for special dietary needs, with a range of diabetic, gluten free, vegan and dairy free dishes each day, and ingredients are clearly labelled.” The new CoCoes will be open every day from 7am to 5pm, and cooking Sunday lunch too. What a great way to spend time sampling the best Norfolk has to offer!

Jonty Young Norwich Lanes Association

Jonty Young not only lives in the Norwich Lanes but he’s also charged with marketing the area to others. In 2014 the Lanes won a Great British Hight Street of the Year Award under his guidance and this beautiful area is thriving. Quite an achievement for a man who is partially sighted and works only with an iPhone and a magnifier.

How long have you lived in Norwich? I was born in Norwich and spent my early years in North Norfolk. Although I've spent large pockets of time in both France and Spain I’ve always returned to the place I call home. How did you first get involved with the Norwich Lanes Association? I was already living in the Lanes when I was approached by the association’s committee, some of whom I already knew. I spent my teenage years hanging around the area so it was a task I couldn't resist. What do you think makes the Norwich Lanes so very special? I’ve travelled extensively across both the UK and Europe and I really don’t think there is another place quite like it. Just take a look what the Lanes have to offer. Over 300 independent

retailers and more than 100 restaurants, cafes and bars. Add to that list an independent cinema, a community theatre, two superb museums and countless music venues. It really doesn’t get much better than that. The Lanes have gained a far-reaching reputation as a great place to shop. You must be really pleased with with the success? I’m obviously very pleased but there is still plenty of work to be done. We also have some great places to stay in the Lanes, so I’d like to encourage more City Breaks. We're currently

developing a lovely new website which I believe will deliver just that. What advice would you offer to first-time visitors to Norwich? I guess just slow down and take a good look around. Norwich is the most complete medieval city in the UK and that means there’s great architecture and fascinating stories to be found. Do you have a favourite part of the city outside of the Lanes? I don’t really, but I do like the Golden Triangle because I lived there for so many years. I guess the thing I do most which I enjoy is to walk down the river from Norwich Playhouse and back into the city via Cathedral Close. Beautiful any time of the year. What do you think are the best things about living in Norwich. As I hinted before, I love both the architecture and the overall ambience of the city as well as the friendliness of the people. Norwich no longer aspires to be anywhere else which has allowed it to grow into the great place it is today. That and the close proximity to beautiful countryside and the much-loved Norfolk coast. There’s just no other place quite like it.
