St Elizabeth Hospice has teamed up with Wild in Art to stage Pigs Gone Wild, which is set to be the biggest ever mass participation, public art event in Ipswich, raising £100,000 for the local charity. The interactive sculpture trail will feature around 40 pigs, which will be on display for 10 weeks across Ipswich and the Waterfront during the summer, from 27th June to 2nd September. The life size pig sculptures, which will be beautifully decorated by artists and generously sponsored by local businesses, will be joined by more than 30 junior pig sculptures creatively designed by local school children and teachers, which will appear in litters across the town centre stores and venues. After you have enjoyed Pigs Gone Wild during its 10-week extravaganza, the large pig sculptures will be auctioned to raise funds for St Elizabeth Hospice. Last year in Suffolk, ChildLine received 1877 of landline calls from local children. This year is the 30th anniversary of the service being launched and the NSPCC is asking local companies to join a new initiative in support of their vital work. It is called ‘30 for 30’ and the idea is simple – 30 local companies each raising £2,000 for ChildLine in its 30th year. £2,000 represents the cost of recruiting and training each new ChildLine volunteer counsellor and the first 100 calls they receive. Turn to page 36 to read about one local businesswoman who has already taken up the challenge!

MAKE A NEW FRIEND & CHANGE A VULNERABLE PERSON’S LIFE!

The Befriending Scheme is looking for volunteers, aged 16+, to become One-To-One Befrienders for vulnerable people in Suffolk. Our members may have a learning disability, be rurally isolated, elderly or suffer with mild mental health illness. You might share shopping trips, a coffee, a mutual hobby or simply have a chat about your favourite things. There are over 130 people in our county who would love to find a friend, but the right person hasn’t yet come forward.

Students rehearsing Bridge Over Oblivion at Suffolk One

TALENT SPOTTER

LOCAL YOUNG TALENT TO DEBUT ORIGINAL MUSICAL

W

hat to do when you’ve got bags of talent, enthusiasm and drive, and an ongoing love for musicals? Well you work hard with your friends and write your own musical, of course! Charlie Pittman, 18, who studies at Suffolk One, composed the score for upcoming original musical Bridge Over Oblivion – a love story set in New York in the midst of the 1960s, complete with a modern rock and pop score. Pittman, alongside fellow students who wrote the script and lyrics, has been working with a number of drama groups across Suffolk and the cast is made up of local talent in Ipswich. Due to overwhelming interest, an extra matinee performance at 2.30pm on 7th July has been added to sold-out evening shows on 6th and 7th July at the New Wolsey Theatre. Tickets are £10 for under-26s and £16 for adults. For tickets go to www.wolseytheatre.co.uk

WINDOW DRESSING Giving windows the wow! factor at Coes

W

indow dressing is a form of theatre, sprinkling a little bit of magic onto our high streets. The rise in online shopping means stores have to be innovative, and visual merchandising, as it is known, has become an art form. Coes department store is a local thirdgeneration family business and has garnered praise for its visual displays. William Coe, Managing Director, told Vanilla: “We are very proud of our display team. There is a tremendous skill in first establishing the concept and then in its implementation to get people to stop and say wow, to capture public interest and drive footfall into the shop. I consistently get compliments on our window displays and they form an integral part of the shopping experience, not just in their physical presence but also a growing online appreciation as well.” Vanilla spoke to Sonja Talbot, visual display manager at Coes, and asked her about her work.

Tell us about your job.

I’ve worked at Coes for 27 years, since I left school, and every day is different. I have to make sure my team has jobs to do on

a daily basis and plan ahead for what needs doing across all our stores. I discuss future window themes with William, liaise with the social media team on promotions and talk to the departmental managers about new brands and what new stock they might like in the window displays. Talk us through a typical planning session.

I meet with William Coe and the social media team to plan window themes. William will sometimes give me the brands he wants in each window or it could be a simple word or sentence for a theme, e.g. “summer days out in Suffolk”. I’m left to think of a concept for all ten windows and run ideas past my team – Annette, Bronya and Chris – until we have the final plan. I have a yearly budget but ready-made props can be expensive: we have to make a lot ourselves. I source materials and props, install displays and outsource jobs we can’t do ourselves. Keeping on top of the work load and co-ordinating tasks can be tricky, but we always get there because we have such a good team.

What makes a great visual merchandiser?

Understanding the brief and working to a budget. Creative flair and a practical mind are important as you may come up with a fantastic idea but you need to know how to bring it to reality and achieve the result you envisaged. You need to have a good eye for colours and shapes in order to balance a display and a sharp eye for detail: there’s no margin for error. What do you enjoy most about your job?

The process of coming up with a concept for a window display, making it and seeing it through to installation gives me the most enjoyment and a real thrill. We challenge ourselves by using new materials and problem solving to get the look we want. It’s nice to get good feedback from staff and directors. The Christmas windows give me the biggest buzz. We start the process in the summer and we install behind blanked-off windows for the big reveal in early November. It makes the hairs stand up on the back of your neck because it’s been such a long build-up. ■ NICOLA MILLER

“I chose to appoint my daughter as my attorney... I knew that I could always trust her to make the right decisions for me�

Making a decision on Health and Welfare LPAs MY PROBLEM: Living a very happy and healthy life, and blessed with a beautiful daughter and three delightful grandchildren, it had never occurred to me that I ought to think about making plans for my future welfare. I was confident that it was, firstly, a long way off and, secondly, that I had my lovely family around me who would make the right decisions on my behalf. It was when I noticed the mental capacity of a close friend of mine deteriorate, however, that I realised just how important it could be to appoint somebody, legally, to make decisions about my future healthcare. I was shocked to find that the son of my dear friend has no given right to make decisions on her behalf and has been having extreme difficulty in being able to obtain necessary information from the doctors so as to be able to make the best decisions for her care. HOW IT WAS SOLVED: Having seen how upsetting the ordeal has been for my friend and her son, I was determined never to find myself in that situation, or put my family through that. I made a Will a number of years ago with Barker Gotelee Solicitors. At the time, I put in place an Enduring Power of Attorney (EPA) to ensure that my finances would be cared for, should I lose mental capacity in the future, but I had no provision in place for decisions regarding my health or welfare. Naturally, Barker Gotelee was my first port of call again to discuss Vanilla June/July 2016

my concerns. I phoned and spoke to somebody extremely kind and understanding and made an appointment to meet with Lindsey Sharples in the Private Client Team. My daughter, Julie, and I went along to their pleasant offices to meet with her. Instantly, she made us feel that we were in very caring and capable hands. Lindsey took the time to explain the different options available to me and we agreed that a Health and Welfare Lasting Power of Attorney (LPA) would be best. I hadn’t realised until Lindsey explained, that not only does a Health and Welfare LPA take into account decisions to be made regarding matters such as life sustaining treatment and a move into residential care, but it also covers day-to-day decisions such as what clothes you would like to wear and any specific dietary requirements.

chose to appoint my daughter as my attorney – of course. I knew that I could always trust her to make the right decisions for me. Lindsey also recommended appointing a replacement attorney in case my daughter should, for any reason, be unable to act on my behalf. I, therefore, included my niece – to whom I am also very close. Having gathered all of the necessary information, we then left Lindsey to draft the LPA. We just visited her once more to sign the documents and she took care of the registration procedure; sending us copies of the LPA once it was complete.

The whole process was extremely simple, efficient and painless for both my daughter and me.

Health and Welfare LPA will only come into action at such time as mental capacity is lost, so I know that while I am still capable, I will, of course, continue to make all healthcare decisions for myself. Whilst I hate to think of the prospect of not being able to in the future, I can now rest assured that, should that ever be the case, my daughter will be able to make the best decisions for me; with rightful access to the medical information she needs in order to be able to do so.

It doesn’t seem like a big thing now, but having seen what my friend and her family have been through, I am only too aware of what a big impact something like this can have further down the line. I now know that doctors simply aren’t able to disclose information about a patient’s health without the authority to do so, which, of course, a LPA provides. I truly can’t thank Lindsey and Barker Gotelee enough. Obviously, it is never nice to talk about illness or consider that you may one day lose mental capacity, but they made the whole process as pleasant and worry-free as it could possibly be. ■

2016 is 30 years of ChildLine and to mark the occasion the Children’s Charity introduced “30 for 30” whereby 30 local businesses sign-up to raise a minimum of £2000. Déjà Vu Boutique in Ipswich was one of the first businesses to respond. In order to generate funds Déjà Vu will be hosting a Black & White Ball alongside Reminisce Entertainment in July this year. Titled “Soul and Sophistication” an evening of fashion, music and entertainment will be held at the prestigious Wherstead Park, Suffolk. Soul and Sophistication was

co-founded by Mandy Errington (Déjà Vu) and Tony Walters (Reminisce) in 2014 when they held their first event. This year’s Ball promises to be bigger, better and even more glamorous! Vanilla spoke to Mandy about what promises to be a unique event…

After working with Tony on projects in the past we decided to collaborate by introducing something different, tastefully bringing together Fashion and Music. Following the huge success of 2014 Soul and Sophistication has become an anticipated bi-annual event.

Tell us more about the night…

We don’t want this to be a conventional Ball with a corporate feel, where people sit at formal tables all evening. The idea is to get people to mingle and dance to the sophisticated soul sounds. We’ve taken a very elegant approach, designing the event around a raised catwalk, where we’ll showcase all that’s fresh in both male (The Italian Shirt Shop) and female (Déjà Vu Boutique) trends. We’ve asked our guests to “Dress to Impress” for their chance to win our best-dressed male or female competition.

Mandy Errington, owner of Déjà Vu, the fashion boutique on Ipswich’s Norwich Road, is keen to emphasise her customer-orientated approach and describes her store as offering “a unique shopping experience”. What do you enjoy about being based in Ipswich, I ask. “Being based on Norwich Road means we benefit from a customer base from all walks of life. hen you meet Christine it is impossible not to be drawn into her enthusiasm for her work. She lives, breathes, studies and talks about massage for an inordinate amount of the day and this only looks to increase given the recent training she has completed. Christine has now branched into ScarWork treatments, which are primarily to improve the feeling and functionality in a scar and surrounding tissue. ScarWork was developed by Sharon Wheeler from Seattle, United States, who works with Jan Trewartha, the only accredited ScarWork trainer covering the UK and Europe. It

was Jan who trained Christine. Having a scar can often cause distress, whether it be restricting movement, causing pain and/or numbness, or for cosmetic reasons, and Christine’s treatment aims to improve such problems in a non-invasive way.

An initial indepth consultation allows her to discover the “story” of the scar and helps her figure out the best methods to use. The spirit of the scar is just as important, with many personal emotions attached to it. Christine describes how some clients have not touched their scar since their surgery and have no idea what it feels like. lso known as eyebrow embroidery, feathering or etching, microblading is a permanent make-up procedure that has become massively popular recently and is perfect for those who want to reconstruct, define, cover gaps or fill-in over plucked brows. A perfect treatment then for Issy (above), who didn’t suit the heavier and darker style brows, being fair-haired, but she needed a better shaped arch and more definition towards the tail of her brows. It was also important to her that her brows would still look quite natural. Because the microblading uses a special ‘pen’ to draw on individual strokes, a much finer result can be obtained than the normal semipermanent make-up effect. Each stroke is finer and more 'hair-like'. It’s a meticulous process that took nearly two hours to complete but the results should last for 6-18 months.

The first and most important part of the process was establishing the ideal shape of the brow – one that both balances the face and that Issy was happy with. Sue at Image Salon recognises this is the part of the process worth taking the most time over. “I keep drawing, reviewing then adjusting until we get to the perfect shape”.

M

icroblading uses a very small blade, similar to a group of fine needles, that ‘etches’ the chosen pigment into the skin, to give the appearance of hair. Before the microblading begins, a topical numbing cream is applied to the area to minimise discomfort. The skin surface is slightly broken, but surprisingly, there is no downtime to this treatment. Issy was given some balm to put on her brows over the coming days and told to avoid getting them wet for four days, so that

the skin could repair quickly and to reduce the chance of infection. Issy was really thrilled with the result and couldn't believe how natural they looked. To finish the effect she had a LVL lash lift which includes a tint – the final effect really opened up the eye area. The new microbladed shape has given her the perfect template to add brow make-up should she want a more dramatic effect with full make-up. Sue at Image tells us microblading really is the “new, big thing” in beauty treatments at the moment and can barely keep up with the 7-day demand for bookings. We can see why! fter a gruelling couple of weeks finishing my dissertation, I had the absolute pleasure of getting a Sensory Body Wrap at Ufford Park Spa. Just outside Woodbridge, the spa is nestled in the beautiful Suffolk countryside, painting the ideal picture for my relaxing session. I was greeted by my beauty therapist and led to a beautiful candle-lit room, with soft melodious music playing in the background. I was given a large soft towel and left alone for a few minutes to undress and position myself on the treatment table in preparation for the wrap. If, like me, you’re a little hesitant about being undressed in an unfamiliar place with a stranger, don’t be. Ufford Park Spa prides itself on making customers feel totally at ease. I had the choice of a smaller

towel to cover my bust, but it entirely depends on your preference. This treatment is all about you. Disposable underwear is also provided, or wear bikini bottoms if you don’t mind them getting a little oily. I immediately felt relaxed on the comfortable treatment table and was asked to smell three body oils. I opted for a calming lavender which was gently massaged into my legs, arms, stomach and back. I was then carefully wrapped in plastic and covered with the large towel to allow the oil to work its magic. The body wrap lasted about 30 minutes, but time flew by. I was given a warm compress to cover my eyes and treated to an indulgent scalp massage – absolute heaven! The Sensory Body Wrap is

HOW DO I PICK THE RIGHT BRONZER AND HOW SHOULD IT BE APPLIED? The trick to finding the right

bronzer is to look for a shade two to three shades deeper than your natural skin tone. Peachy tones are better suited to fair skin, golden brown bronzers suit olive skin and if you have a darker skin tone then you should opt for a rich bronzer with an orange or apricot undertone. Bronzers come in a matt finish or with a shimmer which adds extra highlighting effects. The best way to apply your bronzer is with a big fluffy brush as this will ensure that it is applied nice and evenly. Apply the bronzer along your hairline, the bridge of your nose and the sides of your cheeks. These areas are where the sun would hit the most naturally and will give you a nice natural glow, whilst subtly contouring your face at the same time. I’M GOING AWAY ON HOLIDAY SOON AND ALWAYS BURN, HOW SHOULD I TREAT SUNBURN?

Obviously prevention is the best option here. First, look at the sun cream you are using and the SPF level it contains. I would recommend always using an SPF of at least 30, even when you have a tan, because it protects the sun

from damaging the skin for a longer period of time. If you have sensitive skin consider using a sun block rather than a sun cream, in particular those made for children and babies as the SPF level is always a minimum SPF 30, they don't contain the 'bad' chemicals and will act as a block, physically reflecting the sun's rays from penetrating the skin. If however you do still burn or get over exposed, avoid heat and further sun exposure until the skin has healed and use an aloe vera product on the area. Aloe Vera is a natural antiinflammatory and if kept in the fridge will have a welcome cooling effect on the skin. I’VE BEEN RECOMMENDED THE HD BROW TREATMENT AS I HAVE REALLY SPARSE EYEBROWS. WHAT DOES THE TREATMENT INVOLVE AND WOULD IT WORK FOR ME?

‘High Definition Brows’ is an eyebrow styling treatment involving waxing, threading, tweezing, trimming and the use of HD Brow products. The aim of the treatment is to create a bespoke eyebrow style for you and your facial shape, if your eyebrows are sparse you may need to follow a regrowth programme to achieve your desired look which can require more than one treatment. Results will last up to 4 weeks, however this varies with every client. There is a range of products you can purchase to enhance your brows in-between salon visits. n

We had a quick word with store owner Jill Barrett about her fantastic shop, her love of her hometown and her key tips for maintaining a successful business. What do you think is behind Barretts’ successful longevity?

I think it’s a combination of stocking beautiful and highquality home furnishings, and having a team that genuinely has the customer’s best interests at heart. You are very passionate about supporting British suppliers and designers and are proud of your status as an independent retailer – what are some of the advantages, and equally perhaps disadvantages, that you perceive as an independent retailer?

Being small makes us flexible and nimble. We can give the customer a truly personal experience. A much bigger customer car park would be lovely! Your shop is at the heart of Woodbridge’s Thoroughfare and the name is synonymous with the town – what is the best part of living and working in such a great town?

There’s a real buzz about Woodbridge. The high percentage of independent shops, cafes and restaurants gives it colour and character. June/July 2016 Vanilla

What do you look for when sourcing new products for your store?

Three words – new, aspirational and exclusive. We want people to come into the store and see gorgeous, desirous things they haven’t seen anywhere else. In the beginning the focus of Barretts was mainly on furniture and beds but since then linens, among other things, have been added to the shop – can you elaborate on what products, services, designers etc are available in your linens department?

In addition to what you’d expect from a Linens department – bed linen, duvets, towels, pillows – we have designer lines in table- and kitchen-ware, throws, cushions and gifts. We’ve just got some OS Map of Woodbridge deck chairs which are fabulous!

Jill, you write regular blog posts on your website, from interior design tips to advice on wellbeing (such as getting enough sleep), and even interviews with your staff. It is clear that your passion for the business goes far beyond the shop floor – do you think such enthusiasm is a prerequisite when running your own business?

Oh yes! You’ve heard the expression that business success is 99% perspiration, 1% inspiration, well it’s true. I love it though. Spending time outdoors doesn’t mean you have to forfeit your creature comforts. With a few lost cost adjustments, you can make your outdoor space comfortable and inviting. Turning a porch, patio, garden or other outdoor space into a functional living area can be a rewarding task, and will expand your living area outdoors. With the right set-up you can spend more time in the sunshine and spend that all important time with loved ones, friends, family and neighbours.

Al fresco living has become increasingly popular throughout the years with people not only living this way during the summer months but continuing this way of living across the rest of the year - conservatories, orangeries, summer houses or just creating those secret hidden gems deep in your garden to escape to, are just a few examples of how people are achieving this. As we’ve learnt, you can organise your outside space around anything from a fire pit or water feature or by featuring an outdoor kitchen. Or if you have an eye for the garden, the central point could be a rose trellis or a variety of fruit trees. The key is to effectively use the space you have in order to get the most out of it. Tuddenham Mill has been named Suffolk’s Best Restaurant in the Suffolk Food and Drink Awards 2016. HE CROWN at Woodbridge is a delight. This ancient inn is a maze of meandering rooms, with a pretty little courtyard garden and a cool bar, garnished with a wooden boat suspended above the optics. There’s just the right amount of modern styling to be hip without pretension, and the vibe is relaxed and chilled. Having a whole drinks menu devoted to gin is a convincing start. The Adnams First Rate is served with Fever Tree Tonic, peppercorns and a twist of burnished orange peel in a fabulously dramatic balloon glass. A kilner glass jar of fat juicy gordal green olives, thick slices of the award-winning Cake Shop bread and a pot of creamy whipped butter are sustenance indeed for working through the choices of the daily Market menu and the full lunch and dinner menu. The new head chef at the Crown, Daniel Perjesi has a fine heritage. He began his career working with the legendary Richard Corrigan back in 2005 and has worked his way

through Michelin-starred restaurants to arrive in Woodbridge bursting with ideas and enthusiasm which sparkle from the plate. His emphasis is clearly on taste, and this is food with big flavours, from the start. The first of the season’s most local asparagus, topped with a poached pheasant’s egg and hollandaise or a plate of exquisite rolled local quail, lying on a tiny cabbage leaf with textures of beetroot. The soft cubes of tender beetroot-poached trout, with tiny splashes of gorgeous curry sauce, kohlrabi and sprigs of baby watercress, deliciously light and flavoursome. Other starter choices included ham hock terrine with piccalilli; cured duck with tiny carrots, gem salad and truffle dressing; a salad of beetroot, smoked stilton, pumpkin and sunflower seeds, and a crab ballotine with broad beans. The main courses wander happily through the best of local seasonal produce – spring lamb, with a peacake, asparagus and confit lemon; pork tenderloin with braised cheek, rainbow chard and apple; cod, Suffolk chorizo and bean cassoulet

with spicy sausage and crispy kale; dayboat fish with wild garlic, salsify and picked cockles, or a whole salt baked celeriac with steam millet and pickled cauliflowers. A grill menu offers age rib eye steak or whole dover sole with burnt butter and capers. The plates are picture perfect, the portions plentiful and the inescapable quality of the ingredients shines through. Desserts are dreamy and inventive – a little banana cheesecake accompanied by a toasted oat and seed crumb and a lush coconut sorbet; the heavenly chocolate mousse is served with a zesty grapefruit sorbet, transforming a classic creamy dish into a healthy and refreshing delight. The sticky toffee pudding is served with pear and a stollen ice cream; the lemon poppy seed sponge comes with blackberries and a white chocolate ganache, the vanilla panacotta is presented with rhubarb and gingerbread. With a chef of such calibre it is easy to see how the Crown is fast becoming one of the most sought-after places on the Suffolk coast for fabulous food. And with a warm and welcoming front of house team, rightfully proud of their sensational menu, quirky stylish setting and the laid-back atmosphere, the Crown is definitely worthy of a Woodbridge visit. GIN, GIN AND MORE GIN Gin was big news in 2015 and demand will continue to rise over the next 12 months. We can accredit this growth to the younger millennial drinker, those seeking out provenance and top quality. But where next for gin? Flavoured gin? More theatre in the serve? It’ll be interesting to see where distillers and bartenders take the nation’s favourite spirit. We certainly have started to stock the odd flavoured gin recently and have added a gin list that features some really keen garnishing – not just a slice and ice. Taking a cue from Spain: it's time to give your humble G&T something of a continental makeover. “Crown” yours with everything from cinnamon to Sichuan peppercorns, from rose petals to rosemary; serve it in a different glass designed to bring its botanicals to life; and enjoy your serve perfectly frosted all the way to the last sip. For years, Spaniards have been serving their G&Ts in ways that the typical punter might find, shall we say, a bit surprising. For starters, theirs are poured in enormous copa de balon glasses instead of the classic highballs. They’re packed full of very large ice cubes, so they last longer under that famous Spanish sun. At home – salad cream. I literally love this on everything from a roast dinner to a bacon sandwich – it is a bit of guilty pleasure. At work – truffles. I love the aromatics of truffles and I like to include them where they are unexpected – they add a sense of luxury and depth to a dish. What do you like to eat after a hard day in the kitchen?

My favourite is a “Scooby Snack” (named after the cartoon character whose snacks were enormous)– I try to make mine the same size! What type of cooking do you enjoy cooking the most?

HE delightful Chiquito Restaurant Bar & Mexican Grill tucked away in Ravenswood, Ipswich, has a warm, lively atmosphere, with a homely feel the moment you walk through the door. Upon being seated by a friendly server, you’ll be given a complimentary bowl of salted popcorn to munch on while you peruse the vast menu. The drinks list is extensive – bottled beers, wine, refreshing cocktails and a huge number of spirits. And non-alcoholic quenchers don’t disappoint – fruity smoothies, milkshakes and even dessert cocktails. Chiquito has recently released a new menu, a mix of classic Mexican and American cuisine. I’ve always been a little hesitant about Mexican food, assuming it will be loaded with heat, but Chiquito has adjusted dishes to suit those with milder palates.

Portion sizes are very generous and the choice of starters and mains is impressive. Order an individual or shared starter or maybe go for three to six options from its Street Food menu which offers a refreshing change to the standard three-course meal. Choose three dishes for £12.95 or six for £23.95 and there is a fabulous array of mains, from burgers, fajitas, burritos and Mexican flatbreads with a filling of your choice to classic dishes such as steak and chips. Or for a lighter option, how about a salad and a side or two. The prices are reasonable, you definitely get a lot for your money with Chiquito.

iNtFcIDhENeTn K IAL CO SAM HANISON Sam Hanison is Head Chef at The Ship in Dunwich. Having over 15 years of experience as a chef, with roles ranging from Michelin starred restaurants to being Lord Andrew Lloyd Webber’s personal chef, he has a great passion – and knowledge to go with it – for creating great dishes. Sam’s flair for cooking runs in his family as his parents owned one of Norwich’s most esteemed gastro-pubs, The Unthank Arms, and Sam is continuing this legacy of providing great pub food at his role at The Ship. What ingredients do you always have in your store cupboard?

My four ‘must-have’ store cupboard items are: 1. Cold pressed extra virgin olive oil – for use as a dressing oil to finish dishes and to make dressings, not for cooking with. 2. Flaky sea salt, – for taste, seasoning and to give a crunchy texture – it can also be used in desserts! 3. Smoked paprika. 4. Salted anchovies – full of natural umami to enhance dishes by adding a deep, salty, savoury flavour. What do you like to eat after a hard day in the kitchen?

Generally I opt for something June/July 2016 Vanilla

simple after a long day in the kitchen, maybe a grilled lamb chop with salsa verde, or my particular favourite at the moment is linguine with homemade wild garlic pesto.

My most recent find is a man call David Burns who produces Suffolk honey in Thorington, one of which is Dunwich Forest Honey, produced within half a mile of the front door.

What type of cooking do you enjoy cooking the most?

What ingredient do you think will be the next big thing?

The type of cooking I enjoy the most is probably curries from all over South East Asia. The balance of the spices and variety of different styles is very appealing.

I think that the next big ingredient will be Yuzu, an intense citrus from Japan, great in dressings, deserts or ice creams.

Giovanni De Lellis Trichologist

Giovanni De Lellis is the owner of Ipswich Trichology Hair & Scalp Clinic, the only specialist hair loss and scalp clinic in Suffolk, which opened in 2007. Giovanni initially trained in hairdressing, working in his family’s longestablished salon, but has since branched out to the study of trichology.

You trained as a hairdresser worked at your family’s Francesco Hair Salon. What inspired you to branch out into trichology? My father used to take me with him to the salon as a young boy to “help” sweep the floors, so I have always been interested in hair. In hairdressing I would notice many of our clients visiting us with underlying hair or scalp problems. Not really knowing

what these conditions were or who to refer to, I decided to research it further. I discovered trichology, which is the scientific study of the hair and scalp. I found the scientific aspect so interesting that I decided to train and qualify as a trichologist. I have now been consulting in Ipswich for almost 10 years. Do the two businesses complement each other? Absolutely… people will often go to their hairdresser first for advice on thinning hair or scalp problems. Most hairdressers will be able to offer basic advice, however some clients will require more specialist diagnosis and treatment. We get lots of referrals from hairdressers all over Suffolk. Francesco's has been established for 20 years. Have you noticed any

changes in men's grooming habits over this time? Men’s grooming and fashions are changing all the time. I think men are more conscious of how they look nowadays, and take far more time and care over their appearance than ever before. Men are visiting salons more regularly than ever to maintain their look which is very satisfying. What do you enjoy most about living and working in Ipswich? I love the diversity of the town – and the fact that you are only ever a ten-minute drive from beautiful Suffolk countryside. There are some great local pubs and restaurants in the town that we love to use as a family. Are there any aspects of Italian life you wish you could bring to Suffolk? In Italy we are always outside… eating, drinking and having family fun! Of course, the Mediterranean sun helps make that possible but I always look forward to the warmer weather here when we can replicate that a little. I think we need to learn to make more time for ourselves.
