My only criticism was that I thought it didn’t fit her as well as it could, the bodice and sleeves looked slightly too big? Something we would have sorted out in minutes with a few pins in the Fanny & Frank dressing room. Perhaps she got the jitters and had a dramatic loss of weight after the last fitting. Or maybe, in order to keep the designer a hidden secret, there wasn’t a last minute fitting.

Really positive, energetic, hardworking, funny and smart – clients are going to love her.” So what’s next? I never imagined something like this happening to me – I’m going to give it everything I’ve got and make the most of every single opportunity that comes my way, I know it’s a really competitive industry but I’m really determined to succeed.” Sophie has one more year of school before finishing her A levels but JMM will take her to see London agencies in the summer, so she can start building her portfolio in the holidays. She’s already generated quite a bit of interest. “I’ve even had an agency in Milan asking about her,” says Sam “but they’ll have to wait until she’s had a little more experience in the UK first.”

Cake & Catwalk The Mooch!
It’s not a rude word. It’s all about relaxed clothing. You don’t have to slob about the house in the most horrendous outfits that really are only fit for decorating in! You can wear something that you would not be embarrassed about when you open the door to ‘sign for’ from the postman. I am loving this new collection from A POSTCARD FROM BRIGHTON. Not only are the colours full of summer but they are so soft and of course comfy. A couple of the tops will rock up with trousers that you could wear out for drinks on the Waterfront or a BBQ. The prices are great. From £38 to £55. So ladies get ready for the Mooch! LYNN TURNER P.S. Summer events start in the garden from June
15th. See my website and facebook page for all the details. Singing, fashion shows, market and party...

“We can both relax knowing that the trust has been set up with proper attention to Dad’s individual circumstances”
Regaining control over a mis-sold trust HOW IT WAS SOLVED: MY PROBLEM: A few months ago, my dad suffered a heart attack. Fortunately he’s fine now, but while he was in hospital, he worriedly confided that the house – which he’d lived in for over 25 years – wasn’t actually his, but held in a trust administered by a third party. I was mightily confused and felt sick at the thought of our family home being in the control of people we didn’t know. DENISE, WOODBRIDGE
32
It turned out Dad had attended one of those ‘wealth management’ seminars held in a local hotel. The company hosting it told him if he took out a trust with them, more money would pass to me than the taxman when he died. Convinced by the slick sales pitch, he’d signed away control of the house, with the company appointing themselves as trustees. He showed me the documentation and, sure enough, I was shocked to see two strangers’ names on the deeds. He explained that he’d paid Vanilla Summer 2018
REAL LIVES
around £5,000 to have the trust set up and that he pays an ongoing maintenance fee of £150 per year. Although in good health now, his recent scare had made him think about downsizing to a more manageable property and he was worried about how this would work with his house being in trust.
I
DECIDED it was time to seek legal advice. I’d previously dealt with Rebecca McCarthy at Barker Gotelee regarding my Will and been very pleased with how she handled everything, so I gave her a quick call and we agreed to meet. Over a coffee, Rebecca explained to Dad and me that such trusts are known as Discretionary Trusts, where the individual agrees to transfer their assets into the trust for the benefit of certain people. While the company Dad had used wasn’t acting illegally, they had convinced him to part with a significant sum of money for a product that wasn’t paying its way: for example, Rebecca took a look at the rising value of Dad’s house and said it was about to enter into an Inheritance Tax charge – something he’d signed up to avoid! Rebecca outlined the various options in a way that was easy for us both to understand: he could keep the trust, reduce its value (to avoid the inheritance fee), wind up the trust and get his home back, or remove the trustees. Despite my initial concerns about it, having spoken to Rebecca and fully
understanding the implications, Dad and I both agreed that the trust principle was a good idea – Dad’s health could deteriorate in future years, and having a trust could help ring-fence his assets against future care fees.
S
O, we decided to keep the trust, but to reduce the value, thereby removing the tax implications. He confirmed, however, that he wanted me to manage the trust instead of the corporate trustees. As a result, we would have flexibility to use the monies generated by the trust without having to consult these
people who he had never met. Rebecca set the wheels in motion and the process of reassigning the trust in this way was really simple. Even though we had used the services of a professional solicitor, it cost just a fraction of the many thousands of pounds that Dad had paid back when it was first set up and there are no ongoing costs. More importantly, we can both relax knowing that the trust has been set up with proper attention to his individual circumstances. Dad has come away happy, wishing he had visited Barker Gotelee all those years ago. n

This creative process is very powerful for any individual, no matter what their age, and for groups and organisations too, because it uses a person’s strengths, hopes and dreams in order to plan next steps. “One of the most popular processes we use is called a PATH (Planning Alternative Tomorrows with Hope), which is wonderful for empowering people who need support finding the right career path. With PATH we create time for a person to think about their life in terms of what it would look like ideally. We give them time to dream aloud, to go wherever their mind wants to take them, and not to worry about whether their dreams are possible or practical. “We do this because we know that dreams are a key part of the process. I take the time to personalise a treatment plan for each of my clients and study and monitor what levels of treatment work best for them.” “It is important for the majority of my clients to achieve natural looking results – they want to look better but not as if they’ve ‘had work done’.

Soft Surgery: Non-surgical Blepharoplasty before and after results and immediately after treatment
So what is Soft Surgery? It is a very safe, minimally invasive but effective treatment that utilises plasma technology. A beam generates heat and causes ‘sublimation’ of the outermost part of the epidermis (turning the surface into gas), without damage to the surrounding or deeper structures of the skin. In doing so, the tissue underneath is protected from heat whilst the surface of the skin contracts and heals in order to effect results. Healing is quick and scar-free, improving skin elasticity and resulting in smoothness. It is a very precise treatment which gives good correction with minimal downtime. The results are long lasting. n

MESOTHERAPY
Laser skincare specialist, Juliette John, tells us what we need to know WHAT IS MESOTHERAPY?
Mesotherapy is a procedure in which nourishing substances including vitamins minerals, amino acids and hyaluronic acid, is delivered by multiple microinjections into the mesodermal layer (middle layer) of tissue under the skin where they boost cell activity and stimulate the production of collagen and elastin. A tailor-made cocktail is created to address each individual’s needs and concerns. The treatment helps to improve dull, tired looking skin, dry, fine lines and wrinkles, pigmentation and melasma, dark circles under eyes, acne, double chin, slack skin, scars, stretch marks, cellulite, fat reduction and hair thinning. DR LINEA AESTHETICS New Ipswich practice for experienced Facial Aesthetician
D
R LINEA STRACHAN has always been interested in cutting-edge treatments in facial aesthetics, and over the years while she worked at A&L Clinics in Ipswich she gained a reputation for introducing more advanced procedures to the practice. Dr Linea, who trained as a dentist before specialising in the aesthetic field and gaining experience in Harley Street, has
48
now opened her own practice, Dr Linea Aesthetics and continues to pioneer the use of innovative and effective procedures. “Facial aesthetics are now easily available to people in Suffolk but it is always worth stressing that you should make sure you are confident that your practitioner is highly experienced and trained. “I have been training for years and now teach other professionals – dentists, nurses, doctors and
plastic surgeons – how to perfect their techniques. The result I’m trying to create is not to completely change someone’s face but to make them look like their best selves: beautiful, glowing and confident. “I see patients every day who put their trust in me and I see how the treatments make them look their best and feel amazing.” For more info and consultations contact: Dr Linea Aesthetics 9 Lower Brook Street, Ipswich t: 07541 507042 e: info@drlinea.co.uk www.drlinea.co.uk

INNOVATIVE TREATMENTS BY DR LINEA

JUVAPEN
Unlike traditional needles, where Botox is manually delivered, Juvapen, also known as ‘Robot Botox’, is delivered via a mini-motorised syringe to exact required dose. With gradual placement and less pressure via the motorised device, there is a reduced risk of bruising and other immediate side effects. A very fine needle is also used which makes it a much less painful for patients, studies showing that patients find it at least 50% less painful than the traditional method of delivery. A very precise method of delivery means Dr Linea can work by her ethos of ‘less is more’ and helps achieve natural results without any overdosage of toxin.

JAWLINE FILLER
Jawline Filler is fast becoming one of our most popular treatments. This treatment is a nice subtle way of reducing the appearance of jowls, adding definition to the jawline and giving a more youthful appearance. The hyaluronic acid fillers, which we use for all our treatments, help to boost one’s own natural collagen production and the results can last for up to one year. Delivered by a much less traumatic technique, using a cannula, means that a lot less needles are involved, which in turn means minimal down time and immediate results. Dr Linea would need to see you for a full consultation to formulate a treatment plan with you to help you achieve the best results. Jawline filler starts from £325.

NON-SURGICAL RHINOPLASTY
BEFORE
AFTER
It is often thought that the only way to straighten or soften your nose is with plastic surgery, which means lots of downtime, trauma and money! Dr Linea offers non-surgical Rhinoplasty with dermal filler, with minimal downtime, no trauma and for a fraction of the cost. The treatment takes approximately 30 minutess and costs from £325. Dr Linea numbs the nose using local anaesthetic, via a dental injection, to make your treatment as comfortable as possible. The results are fantastic and many of our patients have found the treatment life changing for them – often they have had a complex about their hooked or crooked nose and didn’t think it could be resolved without going under the knife.

Mama Wellness
for support through pregnancy and postnatal wellbeing
uffolk business woman, Nina Parnham began working with women over 23 years ago, when she trained locally to become a midwife. Her interest in women’s health led her to gain qualifications in fitness, and in 2005, she began teaching pregnancy and postnatal water aerobics classes for Ipswich County Council. Skip forward more than a decade and Nina is now working with hundreds of women, throughout their childbearing years, to provide support, education, fitness and wellness coaching. In 2016 Nina established Mama Wellness and works with women throughout their lifestyle phases, and also with women experiencing fertility issues. For them she offers a bespoke service involving support, reflexology, nutritional and lifestyle/positive mindset coaching. Mama Wellness offers a host of fitness options – ranging from the popular water fitness classes for

both pregnant and non-pregnant ladies, one to one personal training sessions and group fitness classes.
P
ostnatal care in this country is very limited, and there is no formal system in place that helps new mums with their recovery after childbirth. It is fortunate that local Suffolk women can rely on the knowledge and expertise of Nina, who regularly holds workshops to educate women on their bodies after giving birth and how to safely restore themselves to avoid pain, injury and pelvic organ prolapse. Nina is proud to state that all her fitness classes are core, pelvic floor and diastasis (separation of tummy muscles caused after childbearing) friendly. This is reassuring for those who may be suffering with incontinence issues, prolapses or a weakened core system that is unable to withstand the pressures of a conventional fitness class.
There is also a demand for support for those who have had a caesarean. Nina holds workshops that provide exercises to help keep you mobile after a caesarean, plus a range of techniques that teach women how to prevent problems caused by scar tissue. Nina expanded her business last month and moved into her own premises at the easily locatable venue at Ransom’s Europark. There, she offers all her services, including Mummy MOT® checks, pregnancy massage, fitness classes, workshops and pregnancy and postnatal fitness courses. Nina aims to expand her services to assist women during menopause and for those recovering from a hysterectomy and breast cancer. l For more information on Mama Wellness, classes, therapies and pricing, call 01473 730035 or visit www.mamawellness.co.uk Vanilla Summer 2018

Q: This is the time of year when happy couples and family holidays are taking place around us. But what about the rest of us? The singletons or the independents in a couple... A: Most of us at some point have the daydream (that most of us don’t follow through on), to escape... go it alone. So why do so few of us go away on holiday by ourselves? Let’s look at the negatives and positives. Our (often imagined) negatives could be: That we will feel lonely, left out, we will be unsafe or we will be judged as a ‘Billy No-mates’ as we have no one to go with... and there could be a lack of confidence, or fear, that something bad will happen. Positives to consider: Solo holidays are easily accessible and can be inexpensive with so many options available to us – beaches, retreats (yoga, fitness and health), walking and hiking plus various adventure and adrenaline breaks. There is independence, freedom and empowerment to be found in stepping outside our usual comfort zone. There is no shame today in going on holiday alone. I recently went away on a ‘clean food, yoga and mindfulness’ retreat In Portugal. Were there points when I questioned my sanity? Sure, but it was a life changing positive experience and I’m so glad I did it. And here is an interesting statistic: more than a third of Britains are traveling alone and over 58% of travelling solo is done by women. So perhaps instead of compromising on a holiday with somebody else, look for your inner singleton and consider going alone!

YOUR BEAUTY QUESTIONS SOLVED
...by Sue Adams and the team at Image
WHAT CAUSE MILIA AND HOW DO WE TREAT THEM?
Milia spots are small white bumps that appear on the skin. They’re usually grouped together on the nose, cheeks, and chin, though they may appear elsewhere. They develop when skin flakes become trapped under the surface of the skin, or when keratin builds up and gets trapped. The condition can effect people of any age and appears as small white lumps on the skin. Milia will occasionally disappear on their own, but ideally they do need removing by a professional. The best way is to have them removed safely with a needle or laser. A good skincare regime and diet will help prevent reduce the problem. I OFTEN FORGET TO REMOVE MY MASCARA BEFORE GOING TO BED, IS THIS BAD FOR MY EYES?
It is important that you remain vigilant with your daily skin care routine, and this includes the removal of eye make up. There is a risk that mascara could build up underneath the eye lid and cause eye problems in the future. The key to removing eye make up is double cleansing; soak a cotton pad in make up remover and gently dab the pad on your eyelids and
54
eyelashes until no further colour comes off. Then, remove the residue with a second facial cleanse. SHOULD I BE USING CUTICLE OIL ON A DAILY BASIS?
We know that you buy cuticle oil, and probably let it fall to the bottom of your bag! However, after care for your nails is paramount, and just as important as your regular visits to have your nails done. Cuticle oil is used to moisturise the skin and nail area, and can protect the them both from damage. It also improves their health and appearance! It also maintains that beautiful manicure that you pay good money for. So make sure you start using it on a daily basis. IF I USE MAKEUP WITH SUNSCREEN IN IT, DO I STILL NEED TO APPLY SUNSCREEN SEPARATELY?
That all depends on the SPF of the sunscreen in your makeup you are using. If your make up contains an SPF 15 or higher, then it should generally be OK as long as you apply it evenly. If your makeup contains an SPF lower than 15 you will need to apply a sunscreen underneath your make up. It is also worth remembering that SPF is not accumulative, so if your foundation contains SPF 10 and your powder contains SPF 8 the maximum protect you are receiving is SPF 10. Also, sun exposure degrades sunscreen properties, which means that you will need to reapply every few hours. n

Colour trends have definitely been more towards the cooler ashier side of late, and although we still love those tones, it’s time to embrace earthier, richer tones. Softer golds and natural coppers make hair look shiny and luxurious and will take you through to Autumn. If you usually have highlights, why not try hand-painted colour techniques like balayage which will keep hair looking effortless and chic... I WANT TO KEEP MY HAIR HYDRATED AND FRIZZ FREE ON HOLIDAY – HELP!
Take advantage of the warmer weather and air-dry your hair, keeping heat styling to a minimum. Scrunch your hair into loose beachy waves with a little help from KMS Curl Up Wave Foam, twisting random sections here and there. Add a hair oil to the mix to keep hair glossy and hydrated. We love Goldwell’s Elixir Oil, it’s rich in super nourishing ingredients like vitamin E and Tamanu oil. You can also add a couple of drops to a hair mask and use to moisturise dry skin! To fight the frizz, finish with a spritz of KMS Anti-Humidity Seal.

IPSWICH CANINE CRECHE
Meet Clare from the newest luxury dog day care in Ipswich! TELL US ABOUT YOUR EXCITING CAREER CHANGE CLARE?
After 20 years in the shipping industry at Felixstowe, I finally decided to do something I was passionate about and run a canine creche. I have always worked, and am qualified, with horses and animals prior to entering the corporate world. ICC is a large custom designed secure 4,500 sq ft unit, in Sproughton, where dogs run freely, off lead, as one happy group (much like a children’s nursery) in our halls and outside areas. We have toys, stimulation games, ‘Wendy houses’, ball pits, paddling pools, climbing frames and even comfy sofas for snoozing!. SOUNDS GREAT, BUT HOW DO YOU KEEP THE DOGS SAFE?
Safety is paramount. All dogs have to be registered and pass a temperament test as not every dog fits in, or would be happy to attend Creche. This ensures every dog is suitable and maintains our high standards of safety and wellbeing. Well socialised family pet dogs are a great match. We do have quite a high fail rate as we are very choosy who we allow to come to creche! We are licensed and fully insured and all staff are trained and fully qualified in pet first aid. WOW, WHAT DOES A TYPICAL DAY LOOK LIKE?
No two days are the same, however we do follow a routine, such as arrivals – we get the pooches arranged into groups to match age, energy and size. We then progress to free play, with mental and physical games, toys and Summer 2018 Vanilla
activities. We break at lunch, then we have a power nap. Afternoons are more varied activities, followed by Storytime, yes we read to them! Then home… tired and contented to their family who have had a guilt free day, knowing their pooches have had the best time. All our creche attendees simply love it, and often pull their owners through the door in the morning to get inside! CAN I BRING MY DOG ALONG?
We are open from 8am – 6pm Monday to Friday and offer both full and half days. We welcome tours to our facility, as we are very proud of it! No need for an appointment, simply pop by and see what you think. We have a super bunch of pooches that are always eager to meet new friends, so book Fido in today! n
SUMMER OFFER!
Until the 31st August 2018 we are offering Vanilla readers: ● FREE Registration ● FREE Temperament Testing ● FREE Half Day Trial (worth £17.95) To CLAIM your offer quote #seizetheplay. Give Clare a call, and pop along to see us. Your dog will thank you for it!

hoosing the right carpet colour can be a daunting process. Unlike fashion trends for interior furnishings such as cushions, throws and homewares (which change each year), carpet trends can have a much slower pace of change. Also, your floors occupy a significant amount of the surface area in any room and so the carpet colours you choose can dramatically change the way a room feels.
Having a blue carpet can promote both physical and mental relaxation. Use lighter blues to create a calming effect or make a sophisticated statement with indigo and denim tones. Of course, you could always be bold and pack a punch by pairing a darker blue carpet with white walls.

The simple solution is to replace old for new, but there are some essential dos and don’t to consider before you start:

For a real ‘wow’ factor install a free-standing bath or an island bath with only one side of wall tiles. If space is limited a shower/bath is a great solution.
Summer 2018 Vanilla
Here’s how to create more space: ● Use wall-mounted toilets and basins. ● Lose the bath for a large walk-in shower, frameless glass panels are easier to clean and look sleek. ● Create storage by adding a vanity unit for sinks, mirror cabinet, wall units or shelves. ● Towel radiators can provide drying for the whole family. ● Pinch extra room by removing a redundant airing cupboard ● Think about installing a sliding pocket door. ● To bidet or not bidet that is the question?... it depends on space.
Once you have decided what you want to do try not to change your mind as it may delay the work and add to the cost! Approach a reputable builder to get free advice and a fixed price to complete the task. We strongly recommend you only pay for work as it is completed, you should never be asked for money in advance. Good luck, with the right tradesman it should be a hassle-free task. Mark Crisp MCIOB CCM Chapel Properties, Quaypoint, Station Road, Woodbridge IP12 4AL 01394 610526 www.chapelproperties.co.uk

TIPS FOR THE SUMMER
Blinds & windows TIP NUMBER 1: PERFECT FIT BLINDS It’s that time of year again – the doors are open to make the most of the warmer weather, and if you have a conservatory or garden room – those rooms where shade is especially important – you may find yourself moving your blinds backwards and forwards as you go in and out or as you open and shut the door or windows. If “flapping blinds” is a problem, take a look at perfect fit blinds. These blinds fit to UPVC windows and are enclosed in a neat frame, so that the blinds move with the window or door. These are fantastic in any room in the house but are especially useful for bi-fold doors and conservatories. They are childsafe and are available as roller, venetian or pleated blinds.
TIP NUMBER 2: BLACKOUT BLINDS Blackout curtains or blinds work well for blocking light and have the added advantage that they help to keep heat in during the colder winter months. If you think blackout blinds are boring, think again. Advances in technology now mean that these blinds are available in decorative fabrics. Rich colours and textures look sensational, especially with Louvolite’s luxurious Chenille, shot silk and satin ranges. Vision blinds offer an alternative option. Cutting edge blinds alternate mesh paneling, which can filter light, with solid fabric, which can be lowered to block out the light completely. TIP NUMBER 3: SOLAR PROTECTIVE COATING Some of the best performing fabrics have a solar protective coating that reflects the heat and light. Louvolite’s Solar Protective Coating (SPC) lets in natural light whilst reducing solar gain. Look out for fabrics that have this protective coating. TIP NUMBER 4: FLY SCREENS Fly screens can be custom made to fit your doors and windows to stop the creepy crawlies coming in – useful at this time of year when windows are kept open.

The Cookhouse Restaurant The
Vanilla Reader Review
T
he epic view of The Cookhouse Restaurant dominates the huge light space of the top floor of the converted barn. It’s panoramic, dramatic and hypnotic, stretching from the monumental Orwell Bridge across meadows and farmland, busy with grazing cattle and the wide blue expanse of the Orwell meandering down to the

sea, dotted with the white sails of yachts. The restaurant may be busy and bustling but eyes are drawn again and again out to the view, and the ever-changing Suffolk skies. Whatever the weather this is a view to savour, and unsurprisingly it has in the past attracted some very famous visitors, including the late Professor Stephen Hawking. The Cookhouse Restaurant fare celebrates everything local, with food so fresh from the farm. This is good traditional seasonal flavoursome British cooking, making the most of the butchery, fishmongers and bakery next door in the Suffolk Food Hall. The emphasis is on well sourced, delicious ingredients, from fancy pork scratching nibbles through to burgers made from beef reared on the banks of the river in view.
The summer starters are startlingly fresh – the fishcakes were crispy coated fluffy and soft, paired with a creamy homemade tartar and sweet lambs lettuce, the grilled mackerel fillet starter was perfectly matched by piquant escabeche vegetables, tomato and chives. There’s a heritage tomato salad with goat’s curd, shallots, parsley and Seggiano flatbreads, or a ham hock salad with boiled egg, pickled vegetables and rustic croutons.
T
he mains are substantial and commanding, their very own Butcher’s beef burger being the star attraction, served in a brioche bun, topped with melting cheddar cheese, a lush tomato chutney, salty bacon and accompanied by a Vanilla Summer 2018

mountain of skin-on fries. The Suffolk classic, the beer battered fish, comes with crushed minted peas, chunky chips and tartar. The delicious Barnsley lamb chop was thick and sticky with flavours accompanied by a slab of summer bubble and squeak, bursting with greens and peas, and a tasty salsa verde. Also on the menu a Filotea pasta for vegetarians, with garden vegetables, garlic focaccia and a vegetarian parmesan, or Crescent farm chicken breast, with a parmesan gnoochi, braised baby gem, peas, broad beans and marjoram, or there’s a summery fillet of bream, with crushed new potatoes, courgettes and a tomato and fennel salad. The desserts are a real treat – the ice cream sundaes are spectacular long glasses of Summer 2018 Vanilla
indulgence – the Banoffee was a tower of toffee sauce over vanilla ice cream, caramalised bananas and whipped cream, the Strawberry Eton Mess was strawberry ice cream smothered with meringue, more cream and strawberry sauce, and Billionaire’s Shortbread has salted caramel ice cream, covered in toffee and chocolate and whipped cream. The other desserts were as summery and fresh – the summer fruit pudding so light, sharp and yet sweet, with a delicious vanilla cream. Other choices include arctic roll, with coconut ice cream and mango sorbet, or chocolate mousse with local raspberries, macadamia nuts. The Cookhouse Restaurant serves a light options menu with the traditional Ploughman’s Lunch
with a sturdy wedge of Truckle Mature Cheddar, celery, apple, mixed leaves, pickled shallots and Stoke’s piccalilli sauce, or hot smoked salmon salad, Eggs Benedict or Eggs Florentine. It’s very family friendly, with a children’s menu too. There’s also a fantastic Afternoon Tea menu, to be reserved in advance. The Cookhouse Restaurant is cool, calm and the staff are charming. Come for the food, fabulously fresh and so seasonal, but stay to savour the view, this wide slice of stunning Suffolk scenery. DUMENIL NV BRUT PREMIER CRU £29.50
It is my specialist subject, having spent a fair bit of time in the region, enjoying the food and wine. Also having to drink Champagne at every meal and squeeze in tastings during the mornings and afternoons, too. It was a tough job but someone had to do it!! I was spoilt. I am the UK agent for a small family run “House” called Dumenil. I remember them years ago based in the Montagne de Reims – barely mountains, more a range of lowish hills between Reims and Epernay. They make a superb Champagne from the three ‘legal’ grape varieties, namely: Chardonnay, Pinot Noir and Pinot Meunier. The nonvintage Brut is made from a third of each of the grapes. Good small bubbles race up the flute, the wine is a pale yellow. Aromas of biscuit and brioche abound. The taste is a light dry wine, a little sugar is added after fermentation which just gives it a little softness in the initial taste. They make a full range and I will write about them all at some point. For a perfect wine which can be drunk anytime the Dumenil N/V Brut Premier Cru sells at £29.50 per bottle. Spoil yourself!

Beetroot & Goat’s Curd SERVES 8
1 litre of goat’s milk 1 tbsp rennet 1 tbsp lemon juice 1 bunch of golden baby beetroot 1 bunch of candied baby beetroot 4 large red beetroot 300ml white wine vinegar 235g caster sugar 1 small Handful juniper berries 1 bunch of spring onions 150g fresh peas podded
1 Heat the goats milk on the stove in a large pan until it reaches 32˚C. Remove and stir in the rennet and lemon juice. Cool and then refrigerate for 2½ hours for the curd to set. 2 Meanwhile clean all the beetroots under a cold running tap. Steam the large red beetroots for 25 minutes or until cooked through and boil the baby beets for 14 minutes. When all the beetroots are cooked, run under a cold tap for five minutes to chill and prevent over cooking. Leave them to soak in cold water for 30 minutes to enable the skins to come away easily. 3 Quarter the baby beets and place into sterilised kilner jars. Run the large red beetroots
76
through a mandolin to get thin even slices. Place the white wine vinegar, 200ml of water, the juniper berries and the sugar into a saucepan and bring to the boil. Once boiled remove from the heat and allow to cool for 20 minutes. Pour into the kilner jars completely covering the baby beetroots. Thinly slice the spring onions. 4 After 2½ hours the curd should have separated from the whey. At this point pass the mixture through a sieve lined with muslin so you will be left with the curd. This will take a little bit of time so leave the sieve and curd in the fridge to drain for approximately 1 hour. 5 Place the drained curd into
a bowl with a generous pinch of sea salt and cracked black pepper. 6 To construct the dish place eight thinly sliced beetroot circle onto the plate forming a circle, on top of this sit 6 pickled beetroot quarters, three of each colour. Use a tea spoon and delicately place 5 half teaspoons of curd on top of the red beetroot. Sprinkle over the fresh peas and spring onions on top to garnish and bring a bit of freshness to the dish. Garnish with pea shoots and red veined sorrel. Strattons Hotel, 4 Ash Close, Swaffham PE37 7NH Tel: 01760 723845 www.strattonshotel.com

Kim Trotter Founder of Future Female Society
My East Coast Life coaching drop-in type thing, that one’s still rattling around in my head mostly at the moment! Our goal is to make Ipswich the BEST place to be a woman or girl in Suffolk.
Any great success stories?
Tell us how the Future Female Society came about? I was working at an Enterprise Hub and got the opportunity to create a programme to help young mums to become entrepreneurs or get into work or education. It was really successful and it started me thinking about how little support there was for women and girls locally when it came to raising aspirations and combatting underachievement. I had been a young, single mum myself and was shocked to find that 30 years
later things hadn’t really moved on. After that I felt compelled to create something that could change this.
What sort of help are you able to offer women and girls in Ipswich?
At the moment we run two programmes, More Than Mum and Girls, Where You AT? MTM is a continuation of the programme I ran before, and GWYA started as a six month media based programme at South Street Studios where we are based, but it has turned into a weekly group! We have around 15 girls aged between 13 and 19 and we do different activities with them, such as video production, song-writing and performing, poetry, DJ’ing – they even have their own weekly radio show on IO Radio. It’s hectic but brilliant! We have just received funding to work with refugees and migrant women creating a radio project and have plans for a career/
How long have you lived in Ipswich? All my life.
What are your favourite haunts in the town?
Often found in The Woolpack as it’s my local, love the Waterfront and all the new and old restaurants Ipswich has to offer.
What do you do to relax?
I am a complete telly addict, Netflix is my best friend.
If you had £5 left in the whole world, how would you spend it? Cheeeese! n

A fully-qualified teacher and facilitator and an instinctive coach, Kim Trotter has been working with young people and adults for the past 20 years to help them achieve their goals and transform their lives. In October 2016 she founded Future Female Society which has the aim of making Ipswich the BEST place to be a women or girl in Suffolk.
We have had some amazing women come through our programmes. One lady joined us aged 19, she had a history of drug abuse but had stopped when she had her son. She was isolated and depressed and rarely went out of the house and had never worked. She joined our MTM programme and her confidence blossomed. She became so determined it was fantastic to watch. Within six months she had gained an apprenticeship then she contacted me a while ago to say she had gained her first full time role with the council. Her story is just one of many.
