NEWS TIME TO TALK WEDDINGS 2018 There’s plenty of choice for Norwich Bride-to-Be’s in planning mode. The wedding show season kicks off with the The Stunning Spring Wedding Fair on Sunday 4th March at The Forum and The Norwich Wedding Show on the same day, at Holiday Inn Norwich. For the style-savvy couple, A Most Curious Wedding Fair returns to Norwich on Sunday 25th March at The Fire Pit Camp near Dereham and, as always, promises quirky and creative wedding ideas.

Legally Blonde The Musical arrives on stage at Norwich Theatre Royal in March and the www.jampotnorwich.co.uk producers are holding auditions to discover a four-legged star for the show. There are two dogs in the cast – a Chihuahua called Bruiser and another called Rufus. Bruiser is already cast and will be on the road with the show, but producers have decided to hold auditions for Rufus in every town and city on the tour and are looking for a British Bulldog. Other breeds with similar robust looks may also be considered if their temperament is suitable for appearing on stage. The auditions in Norwich will take place on Monday February 5, 12noon to 3pm in Castle Mall shopping centre. SUNDAY 14 APRIL BABY SHOW RETURNS Back again this Spring, on Saturday 14 April, the show will be at the UEA Sportspark 10:30-3pm and will cover everything an expectant parent all the way through to what five year-olds could want! This year the show takes on a festival theme with indoor tipis, relaxation and maternity zones, pregnancy, newborn, soft play – you name it! Tradition dictates that the proposer shops for the ring and surprises his or her intended with the bauble as a gift, but many modern women (and men!) would prefer to have some say in the style of the ring. And in 2018, that’s totally fine; you can go shopping together, suggest designers, send inspiration, whatever you like. After all, if you’re the person wearing it, you should like it! YOU DON’T HAVE TO HAVE A DIAMOND SOLITAIRE

The classic diamond solitaire is really the original ‘engagement ring’. The singular stone initially came about as a form of insurance to protect women in the event that a suitor decided he no longer wanted to marry her; of course, this way of thinking is largely outdated nowadays, as is the rule that a diamond solitaire is the way to go. Contemporary jewellery designers now create engagement rings with unique stones and design elements, often foregoing diamonds altogether. The most important thing is to feel comfortable with a ring that suits you.

PAYING FOR THE RING

Tradition stipulates that the proposer pays for the ring. But since, ideally, you are entering into a partnership with someone who you consider your equal, why not also share equal responsibility with the purchase of the ring? Of course, if you want to be gifted the ring, there’s nothing wrong with that, but if you do want to help pay, the gesture will likely be appreciated. HOW MANY MONTHS SALARY ON A RING?

There are old ‘salary rules’ that a man should spend two or three months of his salary for your ring. This stems from an advertising campaign run by DeBeers in the 1930s – created to drive sales of diamonds – and has absolutely nothing to do with any sort of tradition. Couples should only spend what they can afford. FAMILY HEIRLOOMS

Heirloom engagement rings are not only symbolic of the giver’s love; they are also full of tradition

and family memories. Make sure other family members agree with the decision, however, so there's no familial strife over who possesses the jewellery. Also be sure to make provisions for the ring to be returned to the family in the event the relationship does not work out! IF YOU BREAK IT OFF, OFFER TO RETURN THE RING

If something sours and you decide to break off the engagement, you should at least offer to return the ring, particularly if it was gift. If you helped pick out the ring or even helped pay for it, ideally you’ll return the ring and split the financial gains. RING PLACEMENT

Modern tradition dictates the engagement ring be worn on the ring finger of the left hand. After the wedding, the wedding band is traditionally worn closest to the heart, with the engagement ring on top of it.

A declaration of trust is the next option you could take. This is more tailored towards your family home. The document sets out how the property is owned and in what shares. Therefore, if you were looking to purchase a home and not contributing in equal shares, it would be advisable to set up a Declaration of Trust so that you both know what you will get back if the property was to be sold in the future. MAKING A WILL

Another option which people neglect is to ensure you have a Will prepared, or to review your existing Will if you have one. For many people it is something that they do not think about, particularly at a young age. A Will would allow you to leave your assets to your partner, as cohabitants do not have automatic rights to inherit their partners’ assets. IZE matters, or so Hermione is always telling me. So we were both pretty keen to test drive the new Volkswagen Tiguan Allspace. There’s a clue in the name! Here we have a Volkswagen Tiguan, already heralded as a “must have” in the right circles but stretched to become ‘Allspace’. This gives an extra, third row of seats, meaning up to seven people can be transported and there is still good boot space. Alternatively the seats can be folded flat to provide a cavernous load area. The interior is packed with clever details like the centre arm rest and storage compartment, which can slide forwards and up and down and which also houses air vents to the rear. The backs of the front seats have folding tables, which can be adjusted to support a tablet or a book. One of my personal favourites is the cooled glove box but Hermione favours the ambient mood lighting! Other thoughtful ideas that caught my eye were the 12 volt

power outlets in the luggage area as well as for the rear seat passengers. Of course, the steering wheel adjusts for height and reach and as we have come to expect with any Volkswagen, all the driver controls are intuitively positioned. The dash layout means that all driver information is in clear view. The navigation and in-carentertainment system are easy to use and usefully – two mobile devices can be paired to the system simultaneously. Outside, the Tiguan Allspace has a presence. The styling is unpretentious but meaningful; this is a vehicle to take to any event! It is quite big, but given all the driver aids, which come as standard, day-to-day living, is

NEW YEAR NEW KITCHEN Our homes are an investment so, when it comes to property value many homeowners ask, ‘how can I add value to to my home?’ A new kitchen will make your property more appealing to buyers and, according to the Royal Institution of Chartered Surveyors (RICS), can add as much as 4% to its value. Opt for clean, neutral kitchen designs and always keep expense in proportion to the size and current value of your property; for example, there’s little chance of adding value (or even recouping costs) if you add a bespoke £25,000 kitchen to a semi that’s valued at £170,000 – even if it is in a brand new kitchen extension. n July last year Norwich Market welcomed a new addition to its vibrant and bustling array of stalls. The Other Curator is best described as a mix of quirky Bohemian chic mixed with a pinch of vintage fun offering a fascinating, bright and very original collection of beautiful finds from around the world. As well as this Caryn displays and sells original local art and crafts. Before she set up shop on the market, owner Caryn Louis had a shop at her home in New Buckenham. But taking her wares to the market last summer and running a ‘pop-up’ stall for a week brought about the most unexpected change. “The atmosphere and the buzz of Norwich Market was incredible and our pop-up stall was so successful that we quickly realised this was the best place for us to be long-term,” says Caryn. "I decided

the time had come to close the shop and give ‘The Other Curator’ a permanent home in the centre of the city. My friend Kim and I are thrilled to be here. Kim is my right arm woman. We share the same vision and get a real buzz from working together.” The Other Curator is an eyepopping Aladdin’s cave of treasures that will appeal to people who march to their own drum beat. Here you will find bohemian clothing designed in the Far East, vintage-style dresses that will flatter skinny and curvy shapes, beautiful new and vintage jewellery, silk and cashmere scarves, pashminas, colourful cloth and leather bags, embroidered Chinese shoes, artist cushions and much more. “We sell the biggest range of Frida Kahlo cushions and Chinese embroidered shoes in Norwich,” adds Caryn. “These are both very popular and big sellers. I’m also passionate about showcasing art and crafts, so we display the work

of very talented local people, plus some of my own artwork. I think it’s so important for local artists to be seen, Norwich has such a rich seam of creativity.” The originality, colour and fun of Caryn’s store is a welcome breath of fresh air. She has dressed the double stall beautifully and created a raised, tented ceiling with a chandelier. “We are at the top of the market opposite the town hall. Our row features other vintage clothes stalls and bohemian style products. “I love that the market people act like a warm and supportive family. The welcome we have received from the other traders has been fantastic. NSPIRATIONAL Norwich baker, Imogen Davison, is seeing an increasing demand for her popular classes and parties where participants can learn how to put their very own icing on the cake. Imogen, who started up her own business, Sugar Buttons, nearly six years ago, teaches cake decorating skills to a variety of groups and offers one-to-one sessions for any hobby bakers or, indeed, anyone who wants to improve their mastery. She specialises in hen and children’s parties as well as group learning sessions for all ages at either her home base in Constitution Hill, Norwich, or venues selected by her clients. She said: “Last summer, I was invited to do a cake decorating activity for about 50 staff from two schools as part of a team-building exercise. “I made them all create their own cupcake designs and displays. It was only a two-hour session, but the results were amazing and everyone had so much fun.” Hen parties normally take place at a designated venue where

Imogen will come along with all her equipment and ensures that at the end of the session all the guests will take a way a beautiful box of hand-decorated cakes they have produced themselves and there is no washing-up for them to do! Equally, she ensures children parties are fun-filled and often themed to something the child loves and chooses such as the Wizard of Oz or unicorns. “I also do an extra thing now where the groups can make their own themed party food to take away with them,” explained Imogen. “Recently, parents have asked me if I would do parent and child classes as a quality-time activity, which I am looking to organise very soon.” Imogen’s artistic background began with a degree from the

Norwich School of Art before she went on to do her masters at the Camberwell School of Arts in London. She has previously worked as an art teacher, a prop and set designer for a TV production company and in various art galleries. Her celebration cake-baking prowess has won her clients from far and wide particularly those seeking something different and unique. Here’s a tasty, healthy winter warmer from Executive chef Jules Hetherton at Strattons

Sea bass with celery, fennel, roasted garlic and lentil stew SERVES 6

6 Sea bass fillets 2 bulbs of fennel, half diced and half cut chunky 1 head of celery, half diced and half cut chunky 1 bulb roasted garlic 6 large carrots cut chunky 1 onion diced 150ml white wine 1 litre veg stock

1 Fry the diced celery, fennel, and onions until soft. 2 Deglaze the pan with the wine and reduce. Add the veg stock to the pan and bring up to a simmer. Add the rest of the veg and lentils and allow to cook until all are tender. 3 Dry the fish fillets on kitchen paper and season well with salt and pepper. 4 Place a heavy skillet on a high heat. Add a small amount of rapeseed oil with a knob of butter. Add the fish, skin side down and crisp until golden. Turn the fish and then take off the heat. Leave for a couple of minutes in the pan for the

ERE’S ANOTHER new Norwich restaurant destined for great things. Craft Burger on Unthank Road is the brainchild of Andrew Hubbard, who wanted to open a restaurant that combined his two great loves – superb quality food, especially burgers, and craft beer. He opened the first Craft Burger in Cromer 3 years ago, and it has been so successful that he has now brought this unique dining experience to Norwich, opening in December 2017. Restaurant manager Niki Armstrong says: “Gourmet burgers and craft beer is a modern concept that is becoming very popular and we are delighted to be the first to bring this original idea to Norwich.” Craft Burger has a very rustic feel, all wood with a scaffolding bar, and is friendly and relaxed. The focus is firmly on the burger, but not as we know it. “Quality is everything and we source only the finest ingredients,” says Niki. “Our 8oz burgers are hand crafted from 100% steak mince from local butcher Hazels and combined with ten top-secret ingredients. There is a variety of delicious and innovative burger styles and a choice of brioche, wholemeal or gluten free bun. “But we are more than just burgers. Our slogan is ‘gourmet burgers and much more’, and our chefs have developed a creative menu that also appeals to diners who want to eat something else. We offer a great choice of chicken,

He started off as a trainee chef in his home city before moving down to London to take a job at Hilton Hotels. He then decided to travel around a bit: Munich Germany, London again (Heathrow Marriott), Bologna, Liverpool (Marriott), Bologna again, Manchester (Worsley Park Marriott), Swansea (Marriott), Chepstow (St Pierre Marriott), St Kitts (Marriott), Ayia Napa Cyprus and now Norwich at the Sprowston Manor working at his seventh Marriott Hotel! What ingredients do you always have in your store cupboard? Pasta, chopped tomatoes and

Breakfast in Bed Cupcakes MAKES 12 CUPCAKES

120g unsalted butter 250g caster sugar 60g light brown sugar 3 eggs 100g buttermilk 70g melted coconut oil 1 tbsp vanilla extract 200g plain flour 40g cornstarch ¾ tsp salt 1½ tsp baking powder ¼ tsp nutmeg

1 Preheat the oven to 170°C. Carefully butter and flour a muffin tin and set aside. 2 In the bowl of an electric mixer with paddle attachment, beat butter and both sugars together until creamy. 3 Add eggs to the sugar mixture and beat until light and fluffy, for about 3 minutes. 4 Meanwhile, in a small bowl, whisk together the buttermilk, melted coconut oil and vanilla. 5 With the mixer on a low speed, slowly pour buttermilk mix into the sugar mix to incorporate. Turn the speed up to medium-

high for about 5-7 minutes until your batter completely emulsifies. Initially, it may look like the batter has split or is lumpy, don’t panic and keep the mixer going! 6 Once you have a smooth, light batter, add the flour, cornstarch, salt, baking powder and nutmeg into the bowl of the mixer. 7 On a low speed, mix the dry ingredients into the batter until just combined, being very careful not to over mix. 8 Fill the prepared tin half way full and bake in the centre of the preheated oven for 18-22 minutes until golden brown and a knife inserted to the center of the cake comes out clean. 9 Allow to cool for 10 minutes and then turn out onto a cooling rack. Using a pastry brush, immediately drench with maple infused buttermilk. 10 Allow to cool completely before decorating. To Decorate: On each cooled cake, pipe maple icing in small rounds to build a beehive shape base. Sprinkle candied bacon pieces atop of the icing, paying particular attention to the sides. Place 2-3 mini pancakes on the top of the icing, gently pressing to create a solid foundation. In previous columns I have talked about the move towards a more natural diet without so much processed food, and the revolution has begun. Since the New Year there has been a massive increase in vegan and vegetarian ranges across restaurants and stores, people have realised that they need to look after their health more and be more responsible for their choices.


cDhENeTn it K IAL CONFI SOPHIE WATSON When she started as a Sunday waitress in the village where she lived, Sophie Watson had no idea she would one day end up as manager of the same establishment. One of two thriving pub restaurants owned by Victoria and Gavin Hunt, The Lodge at Tuddenham has become a home from home for Sophie, and keeps her very busy.

I usually arrive an hour before we open to set up. I check bookings, adjust table settings, set the bar, light the fire, salt the glass washers and dishwashers or clean beer lines. Once open my role is very customer focused. Meeting and greeting, taking orders, serving – we are very good at making our guests feel welcome whether they are locals or visitors. Rising up through the ranks no doubt gave you invaluable experience?

I’ve had experience of all the roles – including washing up, driving the delivery sandwich van to local businesses, learning how to deal with customers front of house – and they’ve all been very important. Working in the kitchen was vital as it taught me about oven capacity and about understanding how many covers can be taken at one time. Taking on a management role has meant new duties, from wages and invoicing to event planning. I have

definitely learnt the ‘swan effect’ – regardless of how busy we are it’s very important to remain calm and in control! The Lodge relaunched last year as the Griddle & Grill. What kind of menu and dining experience can customers expect?

It’s a more casual dining affair – more fun and social – and the menu has a wide range of homemade burgers, ribs, combo plates and sharing platters. Our food remains freshly prepared and made on site, and we have kept a few pub favourites such as lamb shanks and pork belly. The interior refurb has created a warmer feel (for example laid tables are out, pots of cutlery on the table are in) and in attracting more of the local community there’s a great atmosphere in the bar too.

What’s your favourite thing on the menu?

I absolutely love the halloumi fries on the starter menu which are served with yoghurt, pomegranate and fresh mint with a sweet chilli dip. I am a bit of a ‘dessert girl’ too... especially the waffles! The Lodge now has a successful decade under its belt, how do you see it developing in the next ten years?

Over the past ten years the Lodge has gone from strength to strength and I am proud to have been a part of that. I definitely see its success continuing. Meet Dennis Bacon, owner of three Norwich businesses: boutique hotel 38 St Giles; Alchemista Coffee Co; and the Orford Flat Iron restaurant.

Three fabulous, stylish businesses… lucky Norwich! What made you choose this city? Norwich was part of my regional territory during my days in corporate banking. Having spent time working in Norwich, Cambridge, Ipswich, Peterborough and other centres throughout East Anglia, deciding where to settle was easy. I believed then – in 1990 – as I do now, that Norwich is the best place to live in the region if not the country. Great place, great people. Have you always lived in Norwich? I was born in Harwich, Essex but ended up settling in Norfolk. Despite travelling and working across SE Asia and Australia, I still see Norwich and Norfolk as my home and always will. Have you always been in the hospitality business? I left the banking sector in my mid-30s before working in Health & Social Care, which I loved. At 50 I wanted to move into hospitality to follow in the footsteps of my grandfather who employed me as a teenager at his hotel in Scotland. I loved it

there - it was hard but I learned how to take care of guests. A former military officer, he was uncompromising about quality and customer service. He loved wine and cooking and I learned so much watching and listening to him. How easy was it to find your perfect locations? It took time to find the right city centre locations. I remember dropping off my daughter, Holly, at 38 St Giles when she was at school because the parents of her schoolfriend owned it. I marvelled at the building and its history, knowing if ever it came on the market I would buy it. And eventually I did. Holly,

now 22, manages this and associated businesses at 48 St Giles and Rigby’s Court. The styling and decor of all three are exceptional. Who designs your interiors? I plan out and design everything though I don't have formal qualifications. I love interiors and the buzz of bringing the aesthetics of a business and property together. All ideas are borrowed, most recently from SE Asia and Australia where the indie retail coffee scene is incredibly inspiring. I started developing property in my early 30s and it's never been primarily about profit. I’ve genuinely blown pretty much every budget on every project! What can we expect next? I’m getting to the point where I have what I’ve always wanted: a family-run boutique hospitality business focusing on quality and doing things a bit differently. I have recently acquired a site on Surrey Street and have been working with Hudson Architects to bring together a unique project that comprises specialist coffee and food outlets, a 5* spa plus Asian-inspired boutique hotel rooms with a large rooftop penthouse. The scheme is currently with Norwich City Council planners - my fingers and toes are firmly crossed! ■
