Gone are the days of mandatory bridesmaids uniforms. Now brides are allowing their ladies to choose their own dresses in colours and styles that flatter their bodies. Plus, many of these outfits end up being worn more than once, which we love! It’s a stunning look.

It’s out with the full-skirted bridal dresses and in with the slimmer-fitting, fish tail styles for many Norfolk women heading down the aisle this year. Brides-to-be are also shunning traditional veils in favour of decorative head pieces like fascinators and combs. According to Maggie Palmer, who runs Exquisite Boutique in Hurn Road, Drayton, the style of wedding gown depends on the age and size of her valued customers, all of which receive a personalised service dedicated to finding the perfect dress just to suit them. “Our younger customers seem to be opting for more fitted styles, while our more mature clients always prefer to wear something which covers the arms,” said Maggie, whose shop also sells evening and prom gowns too. “In my experience, a lot of brides, particularly those marrying second time around, do not want veils. They don’t want to pay for something they will only wear once, which is why hiring accessories is popular for those on a tighter budget.” Maggie opened her shop six years ago and 2015 was a bumper year for her bridal business. She said: “I think what makes us different is that we both sell and hire dresses, and take particular care of our older and larger ladies. “We can alter dresses to individual requirements such as widening straps or making a matching bolero to cover arms. We have something to suit all pockets.”

Kay has taken over the old cobbler’s shop at 81 Park Lane and transformed it into a haven for craft lovers offering handmade

gifts for sale, café, workshops and specially-themed crafting parties for both children and adults. Prior to opening 18 months ago, Kay ran Arts Desire as a shop in St Benedict’s Street, in the city centre. “When the Park Lane premises came up for sale it was too good an opportunity to miss as it offered us more space to do our very popular crafting events,” she said. Kay organises a variety of creative workshops including felting, sewing, hat and jewellery making. Time slots are much sought after for the children’s crafting, birthday parties where youngsters aged

between six and 13, in groups of at least six can choose to make an owl bag, sock friends or bunting before tucking into an optional celebratory buffet. Similar events are also organised for Hen parties where a group can make personalised bunting to mark the occasion of a wedding and then use to decorate at the reception venue. “Our party packages are really popular and we are flexible in what we can offer,” said Kay. “In the future we are planning to use our courtyard area as a farm shop selling fresh goods such as bread, cheeses and olives.” www.your-artsdesire.co.uk

Our latest find is the unique and gorgeous jewellery made by Cat Nash at Love Spoons. What makes Cat’s jewellery so special is that she creates her pieces using antique sterling silver cutlery – such as spoons, forks and sugar tongs – which are brought in or sent to her by customers. She then transforms them into the most beautiful jewellery such as rings, bracelets, necklaces, pendants and earrings. “Antique jewellery has a warmth and character that ‘new’ items cannot replace, says Cat. “The jewellery I make has a history and, for many customers, these are things that have been in the family for years. By making them into a lovely piece of jewellery that can be worn every day, it gives the item new life and new meaning.”

AT’S creativity and passion for her work is clear. She is known as ‘Shiny Cat’, not only because of her jewellery, but because of her happy, positive nature. A qualified silversmith, Cat’s idea for Love Spoons took shape when she made her father’s christening spoon into a ring shortly after he died. “It was a very emotional

experience because of the enjoyment and comfort it gave me to wear something of my father’s. I realised that I wanted to do the same for other people, and help create the same connection for them. “Working with antique silver is a privilege, because its beauty is timeless. Many people don’t know what to do with their old spoons, other than sell them, or melt them down. I bring that beauty back into focus, with a modern twist. We can engrave, too, so a personal message can be incorporated. “Jewellery is also more likely to be kept in the family and passed to the next generation. Each piece I produce comes with a Provenance Card telling the customer when and where it was originally made.” But what about the people who

“Family courts do recognise the invaluable role that grandparents have to play�

Do we have any rights to see our grandchildren? OUR QUESTION: Our son and his wife have sadly recently separated and matters between them have become very acrimonious. There are 2 grandchildren aged 5 and 7 and, as a result of the bad feeling between our son and his wife, our daughter-in-law is refusing to let us have contact with our grandchildren. What can we do?

adly, it is sometimes the case that when parents separate, the children of the relationship can lose touch with their grandparents. The first step should be to approach the children’s mother to try and deal with the issue in a positive and nonconfrontational way. Mediation is another possible route to try and resolve the issue. However,

it may be the case that the relationship has broken down to such an extent that it is impossible to agree. If no progress can be made then it is possible to make an application to the court for a Child Arrangements Order. However, this should always be a last resort and can only be made after mediation has been attempted. A Child Arrangements Order Vanilla February/March 2016

sets out the type of contact a grandparent may have with the grandchildren and states the frequency of contact. For example, the court may order that the grandparents have supervised or unsupervised contact at set times or indirect contact with the grandchildren by letters or email. The court’s decision depends on the circumstances, which are different in every case.

he court’s paramount consideration will always be what is in the children’s best interests and family courts do recognise the invaluable role that grandparents have to play. Grandparents can be great role models and influences and provide a sense of cultural heritage and family history. However, unlike parents, a grandparent does not have an automatic right to apply for a Child Arrangements Order and will have to apply to the court for permission to make that application. In order to be successful, the grandparent must show that they have a meaningful and important connection with the child. In most cases, establishing this is relatively easy, as the grandparents are already involved in their grandchildren’s lives.

f a Child Arrangements Order is made, the court’s powers to enforce such orders have been increased so that it makes it extremely February/March 2016 Vanilla

difficult for parents to ignore them. They are therefore a powerful way to ensure that grandparents can maintain a meaningful relationship with their grandchildren. The courts also have the power to grant make an order defining where a child should live or a special guardianship order in favour of grandparents or relatives, should this be in the

children’s best interests. If your son is having contact with the children, then in the short term, it would be advisable to have contact with the children when they are with their father. It is important that when there are problems legal advice is sought early on, as this area of law is not straightforward and each case is judged upon its own particular circumstances. ■

I was fascinated by hair, and the hairdressing experience, from a very young age. I used to go with my mother to our local salon and look at the women working there, and I remember thinking “I can do this, and I know I can do it better”. It fostered a passion that never left me and it was always my ambition to have a salon of my own. WHAT DO YOU LOVE MOST ABOUT YOUR SALON?

The whole space – it’s a very calming and pleasant place to be, and has an incredibly happy and friendly atmosphere. This

is due to our wonderful team of stylists, who are the nicest people you could meet and so happy in their work. I like that it’s spacious, too, with three rooms, and that we’re in the city centre. I also love that we have a shop downstairs and the salon upstairs, because this is very unusual. We opened the shop 10 years ago and it’s been a huge success. People often come into buy our styling products and to get some advice, and these are not necessarily salon customers. It’s great that we can offer this service. WHAT DO YOU LOVE MOST ABOUT BEING A STYLIST?

That’s easy – making people happy. Creating a style that is perfect for the customer and that gives them confidence – for me, seeing the look on a customer’s face when we achieve that… well, there is no better feeling. For a woman especially, hair is

a very powerful and influential part of our personality, and finding the right style that flatters is so important to how we feel about ourselves. Our stylists understand this, and we all have that same work ethic here. Our ongoing training means that we keep our fingers on the pulse of the latest trends and styling technology, so our customers know they are getting the best advice. WHAT WAS THE BIGGEST CHALLENGE IN RUNNING YOUR OWN SALON?

Keeping ahead of fashion and trends is paramount for us, and it means constant training and updating our methods and services. We are also styling more mid-length bobs, gamine pixie styles and tousled soft waves. There will be a very much less severe, softer look for 2016. WHOSE HAIR DO YOU LOVE?

I love Pixie Lott’s hair, very interesting and creative. She isn’t afraid to try new things and set her own style. The actress Emma Watson has a lovely tousled bob at the moment, which really suits her. I also love the wavy bob of US actress Brooklyn Decker. It’s an old fashioned sleek look which is becoming very popular. WHO CUTS YOUR HAIR?

My lovely daughter Katie, who is in her second year of training, but already a vital part of the business here. She is passionate about hair styling and is adding her own creative twist. She is the next generation of Garner and has the attitude, skill and flair which is essential for the future of hair styling. ANY LAST WORDS?

Just some advice for anyone looking for a new hairdresser. Find someone you can relate to, who can listen to you, what you want, how you want to look… but who won’t be afraid to tell you if it won’t suit you and who can create something that will. A good stylist can translate a customers ‘hair dream’ into their perfect style. It’s about finding the right fit of customer and stylist – it’s a relationship. Also, for salons, it’s important to be true to who you are, not be pretentious or to make promises you can’t keep. Keep pushing yourselves and asking if you can improve. I

t’s not quite sandal season but, as far as I'm concerned, it’s always a good time to take care of your feet. If you look after them while they’re hiding away in boots, you're going to have less of a hard time whipping them into tip-top shape when summer comes around. This is why I was only too happy to test drive the new Elim Spa MediHeel treatment at Spruce House in Norwich. In the tranquil setting of Spruce House, I relaxed back into one of their mammoth pedicure chairs, complete with massage effects, and allowed my hard-worked feet to have a complete overhaul. SO, HOW DOES IT WORK?

To begin the treatment, a callousremoval tonic was applied to the soles of my feet and left on for about four or five minutes. A potent kerolytic, it loosens the bonds between dead skin cells making them easy to scrape

off with a scraper. This gentle process didn’t hurt a bit. In fact, it tickled! After the peel, a neutralising tonic was wiped onto my feet to bring them back to a neutral pH. (the callous-removal tonic has to be highly alkaline to work, which is why you need a neutraliser when you’re done.) Next, it’s time for yet another painless chemical process using Elim MediHeel AHA Foot Exfoliator. No exfoliating beads involved. It merely sizzles away dead skin using a 20% concentration of glycolic acid and is left on for about five to 10 minutes. Afterwards, to cleanse my feet of the exfoliator, they were left to soak for a few minutes in a foot spa with water softened by Elim’s fresh-scented Spa Additive. This contains tea tree and rosemary oils as they have anti-fungal and anti-bacterial properties, which are great for feet.

THE RESULT?

My MediHeel treatment took less than an hour and afterwards my feet felt baby soft. While I didn’t have calloused or cracked heels to begin with, I could see that the skin in areas that are usually thicker was definitely more refined-looking. It has now been almost a week since my treatment and my feet still feel amazingly smooth and look better than they did before the peel. All this without having to reach for a foot file! My treatment didn’t end with the massage. Spruce House’s talented and super-friendly beauty therapist, Olivia Fleck, gave me a pedi with gel finish (file, cuticles, paint) too. Our patients, clients and customers all talk about ‘botox’, but have you noticed when looking at clinic websites that often the word is not used, & instead treatments are described as ‘wrinkle reduction’? MY SKIN IS BECOMING MORE SENSITIVE TO WAXING TREATMENTS. I DON’T WANT TO GO BACK TO SHAVING CAN YOU SUGGEST ANY ALTERNATIVES? A: I would suggest that you firstly find out what type of wax is being used and whether or not this has been changed recently. There are several types of warm wax available; honey, cream, tea tree, chocolate – you may be sensitive to a particuler type. You could ask your therapist to apply a barrier to your skin prior to the wax being applied as this will help to reduce the reaction or apply a cold compress or towel to the area. If the warm wax hasn't been changed then it would be sensible to look at other forms of hair removal. You could consider hot wax this is similar to warm wax but the difference is that it has a higher temperature and it sets on the skin and peeled away quickly to remove the hairs. Hot wax sets around the hairs rather than the skin. The heat encourages your pores and hair follicles to open up making it easy to remove hair without irritating the skin. You could also consider threading depending on the area, as this is generally done on facial areas. Threading removes the entire hair follicle, lasting up to 6 weeks

I’M 28 AND AFTER A RECENT HOLIDAY, MY FACE PEELED AND I’M LEFT WITH UNEVEN PATCHES ON MY FACE. COULD THIS BE THE START OF AGE SPOTS ALREADY? This sounds like pigmentation caused by over-exposure and damage from the sun and their harmful UVA/UVB rays. Your skin will need time to repair but unfortunately the damage which has been caused is irreversible and it is essential that you use a moisturiser with at least a 30 SPF to prevent further damage. Even though it is not hot here the sun still omits harmful rays even on a cloudy day. You may also want to consider having facials which target skin pigmentation such as light therapy, microdermabrasion or laser treatment. I TRAPPED MY NAIL A FEW MONTHS AGO AND NOW ITS TURNED BLACK AND IS LIFTING AWAY FROM THE NAIL BED. WILL I LOSE THAT NAIL? Once the nail has lifted away from the nail bed you should be able to see a new nail growing underneath. The new nail is causing the damaged nail to separate from the nail bed as it is starting grow it no longer needs to be protected. Make sure that you do not pick at the damaged nail and you allow the old nail to naturally fall away. Once the damaged nail has fallen off it would be best to get an extension placed on top of the new nail, as this will help to train it to grown back into a normal nail (without ridges, vertical splits and dents). I would advise seeking advice from a reputable nail salon or beauty salon. n

Customers come to us with a concept of what they are looking for, but sometimes, once we have talked to them about their ideas, we can show them something that will take them in a different creative direction – and it will be perfect for them.” So what items and ideas are current now? “The big trend at the moment is eclectic, mixing rustic and contemporary in the home,” says Daniel. “For example, putting a rustic worktop on a modern base. “Introducing vintage and antique items into modern homes has really taken off, because new-builds can be quite sterile. Putting a statement piece with character, such as an old chair or sculpture, into a room with plain painted walls can add real depth and warmth to the living space. “Industrial items are also becoming more popular, things

such as metal fixings, trestles or metal bases for machinery, especially anything that can be used as the base for a chair. “Wood is also very current – we take beams and strip them back to their natural, raw glory. It’s a solid, beautiful product. I think Art Deco is also set to become even bigger in the near future.” Daniel is excited about a recent venture very close to his heart. “We are now making our own Norfolk Red Brick. It is handmade in the same way as it was originally, in the same traditional colour, so it’s an authentic period brick that’s ideal for refurbishments or barn conversions. “Availability is always an issue for period bricks, but by making our own we can guarantee quality and availability at a very affordable price. Mike Read of Loxley Hall Gardens offers advice for the coming season As Spring approaches, the garden is looking empty, planting has either died down, or is dormant, and the layout or ‘bare bones’ of your garden is at its most stark, offering an ideal opportunity to re-evaluate and improve. The structural elements of paving, decking, paths, fences, walls etc provide the permanent framework and if they need replacing or repair, or if the garden is lacking a pleasing design or layout, it will be most evident at this time. Planting design in gardens is highly subjective and personal, and it is easy to end up with a wonderful array of plants without any order

or structure. Planting is dynamic, developing from season to season, and year on year, it’s also affected by soil and site conditions. “Right plant for the right place” is a good term to remember. Consider developing a beautiful, cohesive layout of trees, shrubs, perennials, grasses etc., that will enhance your garden and make

it a pleasure to relax in during the Spring and Summer months. The correct choice of plant varieties and their layout can save ££s in later years by avoiding removing plants at a later stage that have outgrown their space. Invest some time and thought on how to improve this, or consider working with a professional garden designer who can guide you, as well as being able to source the plants. Creole means a mixture of languages and cultures and in food represents a fusion of the many varying styles of cooking used by the variety of different races that first inhabited the island. So when I cook, I use a wide range of spices including ginger, cinnamon, nutmeg, green and black peppercorns, mixed spice, Cajun spice, cumin, coriander, basil and oregano. I use mostly fish and chicken in my dishes and prepare them using my marinades, which I also bottle and sell in the restaurant. I make hot pepper, Jerk and barbecue sauces and people are always asking me what is in them, but the ingredients are a secret. I am currently writing a recipe book, which will hopefully be out by Christmas 2016. I’m planning to reveal some of my marinade secrets in the book! What do you like to eat after a hard day in the kitchen?

I am from an island, we’re surrounded by water, so I eat a lot of fish such as sea bream, red February/March 2016 Vanilla

“People are always asking me what is in my sauces, but the ingredients are a secret!” snapper and seabass. I order it directly from Billingsgate Market in London. I have been in the UK for 47 years now, but it was my grandmother who taught me how to cook. From about the age of six, I would go fishing and whatever I brought home she would show me how to clean the fish and cook it with spices. My wife usually does the cooking for me at home. What, for you, makes Creole food so special?

It is definitely down to the spices I use and to get the authentic Creole flavours, I import a lot of them, such as bay leaves and cinnamon, because they taste differently to those you can purchase here.

What ingredient is popular with your customers?

Ginger. We use it in both savoury and sweet dishes. It is natural and good for the digestion. We also use it for making ginger tea. What do you love about Norfolk?

St Lucia is a beautiful island, but I love the wide open spaces and the people in Norfolk. I trained and worked in many hotels and restaurants in London, but I moved here over 26 years ago so this is my home now. I can recommend a lovely ginger wine liqueur produced by Adnams of Southwold. HE Library Restaurant Bar & Grill, in Norwich, has been impressing diners for 10 years with its philosophy of fresh, simple, locally sourced food. It feels like we are making a grand entrance when we arrive for dinner at the imposing historic building, with its open-plan lounge and upper art gallery. The welcome is warm from host Dion. I immediately note that the kitchen is open plan – always a good sign – and it provides great entertainment for diners, with a reassuring transparency. Our charming waitress Alex shows us around the menu, and we see immediately that it proudly features wonderful, abundant local produce – eggs, cheese, meat, veg, ice cream – that makes Norfolk such a great place to eat. As well as à la carte, the Library offers a prix fixe menu, astoundingly good value for a restaurant of this high standard. We’re pretty hungry, so choose our starters. For my fellow diner an assiette of Parma ham, sun-blushed

tomatoes, rocket and Manchego cheese with balsamic reduction; for me, a French onion soup flavoured with local cider and topped with Gruyère cheese croutons. The assiette was pronounced the best start to a meal – fresh, tasty and packed with flavour. My onion soup was thick rather than clear, which I prefer, and zinged with that local cider. And it came with wonderful warm, homemade wholemeal bread. My friend perused the wine menu, an eclectic selection from around the world, with something to suit all palates, occasions and wallets. He opted for a black Australian Chiraz – intense, dark purple with big, bold flavours – and said it was “the kind of red that kicks sand in your face, just the way an Aussie red should be!”

HERE was a tempting selection of mains, but for me it had to be the fillet of wood-grilled salmon with roasted beetroot, watercress, new potatoes and a light caper sauce. My fellow diner chose an 8oz cut of local sirloin steak, cooked on the grill and served with

a choice of dressing (Béarnaise here), hand-cut chips, onion rings, salad and Californian coleslaw. My salmon was cooked to perfection, with crispy skin, and a roast lemon adding a wonderfully bittersweet note. I am delighted that the beetroot has made a comeback in fine dining. This robust little veg is taking its rightful place again on our plates, and here it was the perfect addition. The steak was also very good indeed, cooked rare as ordered, and tender and moist. The generous portions of chips and onion rings were crisp and moreish. Feeling very well fed, we took a look at the dessert menu – well, it would be rude to refuse! Something fresh and light for me – a passionfruit panna cotta with strawberry foam and fresh strawberries. For my companion, a selection of cheeses – Norfolk Dapple, Binham Blue and Cornish Brie – served with water biscuits, celery, grapes and homemade chutney. Both were the perfect end to a lovely meal. Over very good coffee, we took time to survey our surroundings. Fellow diners were a mix of young, not so young, casual and smart, and everyone was clearly having a good time. Whether it’s a relaxed meal after work, special celebration or more formal occasion, take a leaf out of our book and choose The Library.

ITH the party season over now’s a good time to talk about lower-alcohol wine. These are naturally lower in alcohol (between seven and 11%). The best are subtle, elegant and just as tempting as the stronger varieties – and with fewer calories. They tend to be white or sparkling and usually hail from cool climates, where the grapes simply don’t get as ripe. The most obvious example is German Riesling, which can be exquisitely delicate and crisp, laced with apple and citrus, but won’t knock you for six. I’ve lost count of the times I’ve been offered a big New Zealand Sauvignon Blanc as an aperitif and feel pretty drunk before I start eating! Better to serve lighter, leaner Prosecco, Cava or dry champagne. Portugal’s vinho verde (green wine) refers not to the colour but its fruity youthfulness. We sell Brisa Do Mar (9.5%), delicious with flavours of elderflower. Or how about an Australian Riesling, which mingles intense lime and lemon notes with a long quality finish? Larry Cherubino, a distinguished winemaker from Western Australia, produces one of my favourites, Ad Hoc Wallflower Riesling (11%). Enjoy it with a Thai curry – or just pour yourself some sunshine on a winter’s evening! Happy drinking in 2016!

in-khao-reu-yang – a very hospitable Thai greeting which means ‘have you eaten yet?’ Or specifically, ‘have you eaten rice yet?’ I haven’t, not today anyway. What a great excuse to ditch the diet and eat out! The Tamarind Tree opened last year and is true to its ‘roots’ with a full menu of authentic Thai dishes. Owner Peerada Morgan Johnson also heads the Thai Herbal Retreat Spa and hopes The Tamarind Tree will offer well-being from the inside with tasty, wholesome food. I always swear that Thai hot and sour soup is a healing elixir, so I can’t wait to tuck in! In the shadow of All Saints Church on Westlegate, the restaurant has plenty of room for an after-work bunch or a big family meal. But it does also feel cosy if dining in a pair as we are. When we arrive, a golden fortune cat waves at us from the bar, a Beckoning Cat, who

is supposed to bring prosperity inside. He brings an exotic charm to the place. Bamboo partitions and split-level floors give guests extra atmosphere and the twinkling fairy lights in the window are very pretty to dine by. It’s really handy to see that shellfish, nut, gluten ingredients etc are clearly labelled on the menu. And I needn’t really have worried about said diet thanks to Joy, our host, who points out the healthiest dishes. She encourages us to try a Papaya Salad with our Satay starter, which comes with a perfect peanut sauce. We wash it down with a not so healthy but very lovely, cold Singha beer. Also on our table, crispy duck and heaps of jasmine rice. A bowl of Tom Kha Gai arrives – the famed aromatic and spicy chicken coconut soup. A complete meal in a bowl, the coconut milk smoothes away the fiery after-burn. And in the spirit of trying something other than a Jungle Curry, I order a Cashew Nut Pad Med Ma Moung.

It’s a stirfry with fresh vegetables and a nice rich sauce. Thai food is meant to be spicy and can be hot but it is also more fragrant and light than its Chinese counterpart. Lemongrass, kaffir lime and galangal are key ingredients in Thai cuisine and the Tamarind Tree serves up these signature flavours in spades. As we leave, it looks like Beckoning Cat is now waving us goodbye, a little golden paw swaying au revoir. We’re looking forward to seeing him again soon... REVIEW: HEIDI SECKER

A

POST-XMAS shopping spree in Norwich gave us the perfect opportunity to discover why so many people are getting so excited about Côte Brasserie – described by the Sunday Times as ‘fantastic’ and judged by the Good Food Guide as the best value restaurant in the UK. As we’re something of Francophiles ourselves (and long-time fans of the classic Gallic bistro) I must admit we were a little sceptical as we initially made our way down Exchange Street. Just how authentic a French dining experience can you expect in the centre of Norwich anyway? The answer (to coin a phrase) is très authentique indeed. Côte Brasserie has a lovely and warmly welcoming atmosphere that manages to be both elegant and informal at the same time – and the service was excellent throughout. To start (naturally enough) we enjoyed an apéritif in the shape of refreshing glass of Kir Royale, a

blanc de blancs brut with a fruity touch of cassis. Any fears about the restaurant’s credentials were swiftly allayed by the menu, which offered a mouthwatering choice of dishes such as steak frites, moules marinières, corn-fed chicken from rural Brittany and tuna Niçoise. For myself, I ordered the traditional Breton fish stew, a delightful mix of sea bass, mussels, clams, prawns and squid in a light base of tomato, white wine and chilli. My dining partner’s vegetarian preferences led her to order the warm goat’s cheese salad, which was accompanied by roasted vegetables and a black olive tapenade crostini. Both meals were beautifully presented and packed with flavour, and really couldn’t be faulted in any respect. Of course, any Frenchman deserving of the name will tell you a good meal is nothing without a matching wine, and Côte Brasserie

has a simply stunning wine list, which includes no less than six champagnes, 14 whites and 17 reds – and every single one of them is French. It would have been nice to try them all, of course, but we limited ourselves to enjoying a glass of Côtes du Rhône rouge 2014 Cuvée Laudun. Although the dessert menu was full of sweet treats such as Côte’s much-loved house specialities of crème caramel and crème brûlee, we shared a cheese board, which included Roquefort, Reblochon (a nutty semi-soft cheese that originates in the Alps) and a strong and slightly sweet Comté. If you do fancy a real taste of superb French food in a truly authentic atmosphere, Côte Brasserie comes very highly recommended and is a very welcome addition to the city's dining choices. He started working as a chef from the age of 17 and has recently become head chef at the Bawburgh King’s Head. Ingredients I tend to have to hand would be items that can be made into anything without having to give much thought, such as pulses, beans, honey, olive oil, vinegars, salt and chocolate. What type of cooking or what dish do you enjoy cooking the most?

I’m happy with something quick, but tasty, something fresh, something versatile… Something like an omelette. I always find adding and trying different ingredients in an omelette can make the next one different from the last. What do you love about living in Norfolk?

I love the hustle and bustle of living in big cities, as mentioned, I spent a year in Australia. Coming home from the big city life and back into Norfolk, showed me what I had missed. When it gets busy at work, you learn to appreciate the smaller things; long walks on our beautiful coastlines, ice creams on the pier. I enjoy being able to

go out with family and friends to find all the small and quaint, or the up and coming, places to eat and drink in and around Norfolk. Something I found that was not so easy during city life. What ingredient do you think will be the next big thing?

I’d like to start seeing seaweed become more appealing to the customers. It is such a complementary ingredient. I’ve tried and tested it on friends and found that if it’s prepared and served correctly it can alter a lot of people’s views. Yes Chef! Try this delicious, boozy mussels recipe from chefs Lee and Jason at 42 King Street in Norwich.

Norfolk Cider and Smoked Bacon Mussels 800g mussels 160g smoked streaky bacon 200g shallots 4 garlic cloves 1 tsp chopped thyme 1 tsp chopped parsley 100ml Norfolk Cider Co. cider 150ml double cream

1 Wash and debeard mussels. 2 Dice the garlic and shallots and cut the bacon into small pieces. 3 Heat a pan (large enough to hold mussels) with a small amount of oil, fry bacon until it starts to brown, then add shallot, garlic and thyme. 4 When shallots have softened, add mussels and cider, turn up heat and place lid on pan. 5 Once most of the mussels have opened, add cream and continue cooking. 6 Once all the mussels have opened, place them in a bowl to serve, pour cream sauce over and garnish with chopped parsley. 7 Serve with warm crusty bread.

What sets Tilletts apart from its competition? We don’t just sell jewellery, we have our own workshop on site where our goldsmiths can create bespoke pieces for customers and provide a repairs service. We also specialise in antique jewellery. We get customers who re-visit us every year while holidaying here who want to buy a little memento to take home.

When did you first get involved in the business? I am originally from Scotland and was four years old when we moved to Norwich. I started on the shop floor while I was still at school working Saturdays and in the holidays. This is now my 33rd year working in the business and as director I do everything from choosing the stock to emptying

the bins. I come in at ‘silly O’clock’ in the morning and leave at ‘silly O’clock’ at night. There are a lot of jewellery shops in Norwich, why is that? There are not as many as there used to be. At one point there were 58 jewellery shops in Norwich. I think the reason they are here is because Norwich is probably one of the best shopping destinations outside of London. We have an eclectic mix of retailers from lots of independents to our very own department store, Jarrold. I believe that is a real attraction for people who want to visit our county, not just for our fabulous coastline and the Broads, but what the city offers too.

And finally the two questions we ask everybody. What do you think is Norwich’s jewel in the crown? I think our castle is something pretty special and the two cathedrals. I like nothing better than going for an evening stroll around the city because you always manage to spot something you haven’t noticed before. It is a calm and safe city. Secondly, where is your favourite place to eat out? We tend to do a lot of home entertaining as my partner loves to cook. However, Don Pepe in St Benedict’s is a favourite, we’ve known the owners for a long time.
