The Champagne region awaits you

T

he Champagne region doesn’t have all the answers. Tourism is something you have to learn. For several years now, and particularly since our hillsides, houses and cellars were included in UNESCO’s World Heritage List, initiatives have burgeoned in the region. Hospitality breathes new life into the wine-growing villages, and Champagne is proud of its history. Come to Reims, to Troyes, to Épernay or to Château-Thierry, and you’ll see what we mean. The people of Champagne have converted to wine tourism, and we are waiting for you. Tourists now have a huge variety of activities to help them discover our wine country. You’ll be spoilt for choice when visiting the wineries or selecting a special cuvée to take home with you. You can opt for a B&B or a hotel room with a view. And why not surrender to the delicacies on the menu of a Michelin-starred restaurant? With a little planning, your stay will be an unforgettable experience ; but in order to organise it, you must have all the necessary information. This is why, with our partners Groupama Nord-Est, the Marne and the Aube Tourist Boards, the UNESCO Mission and the Syndicat Général des Vignerons (General Winegrowers’ Union), we have designed this magazine. Ask for the map The vineyards of Champagne are as vast as they are varied – among plateaus and valleys, hills and forests, atypical towns and authentic villages. Here, a whole range of landscapes are on offer to visitors, like so many cuvées slowly ageing in the subdued atmosphere of the wine cellars. From the Aisne to the Haute-Marne, passing through, of course, the Aube and the Marne, one grape variety follows another without actually resembling each other. And this is what you are invited to discover, along a path which will inevitably deserve to be revisited two, three or four times.

I

n the south of the Champagne region and only an hour and a half from Paris, the Aube region is one of the four major Champagne producing areas. A quarter of its vineyards, on the Côte des Bar, contributes in its excellence to the influence of champagne. Along the 220-kilometre tourist route the appellation’s 63 communes, including the medieval Bar-surSeine, the commercial Bar-sur-Aube, the prolific Riceys and the cultural Essoyes, contain proximately fifty wineries that welcome you with open arms. Aube is the land of Pinot Noir, of rolling hills and expanses of vines (8,000 hectares in total), among genuine forests, plateaus and rivers. Further north, in the continuation of the Sézannais hillsides, the vineyard of Villenauxela-Grande can also be discovered (notably by the Oudard family, whose grandfather, Frère Oudard, had Dom Pérignon as his superior), as well as the Montgueux hill, near Troyes. The capital of the Champagne region still has a memory of the commercial wealth of its medieval fairs, and even a disturbing memory: the plan of its historic centre is in the characteristic shape of a champagne cork. With the vineyards of Montgueux, perched on their hill 10 km from Troyes (19 winegrowers share a chardonnay terroir eulogistically dubbed the ‘’Montrachet of Champagne’’), the landscape is a happy omen, which can still be savoured today along the terraces and timber-framed houses.

The Barfontarc champagne growers await you for a delectable picnic in the vineyards (preceded by a tour of the facilities) with a cold meal, champagne, tablecloth and cutlery (also available in a premium version using porcelain tableware). A cooperative like no other The Gaston Cheq cooperative in Meurville is an iconic figure in the history of the vineyards in the 20th century, and a defender of the appellation in Aube. And its commitment to the territory is still going strong. All inclusive The OenoSphères organisation, offers a day (or two) to explore Champagne and its Cistercian style. We begin with an awareness-raising session on the vineyards of the Aubagne region – their geography, history, grape varieties, and so on. This is followed by a tour of the Drappier champagne house and its stunning cellars dating back to the 12th century, a visit to the Clairvaux Abbey and its old cellar, and other tastings and lunch break activities. Harvesting the grape Many winegrowers play the immersion game – for what better time than harvest day to discover the world of champagne? The participants are welcomed to the estate and get acquainted with the estate’s history before getting down to business. Armed with secateurs and documentation, our transient grape pickers begin their harvest, and will conclude their day’s labour with a glassful in their hands. In the vicinity of Bar-sur-Seine Under the stars 500,000 Bottles are produced each year from the vats of Gremillet Champagne in Balnot-sur-Laignes. During their original tour, not only do you get to find out about all the stages of champagne production, but you also visit the enclosed vineyard, the cadole (or vineyard shelter) and the 82 conifers of the Vaucelles arboretum. Adjacent to the Clos Rocher, where the best cuvées are made, a comfortable, idyllic glamping bubble offers shelter for a romantic night at the foot of a sequoia tree with a view over the vines. Not your typical wine tasting The Devaux champagne house in Bar-sur-Seine offers blind tastings of three cuvées – brut, rosé and vintage – at one of the most beautiful cooperatives in the vineyards. Founded in 1846 and handed down to winegrowing families over thirty years ago, their winery still uses oak barrels to age its wines, in a sumptuous 18th century manor house nestled in a park by the Seine. Tasting workshops are offered to better explore the subtlety of champagne aromas – try the cheese and champagne duo or the unusual chocolate pairing. From €39 to €43 per person. Effortless mountain biking

From April to September, go on a guided tour of the Richardot champagne vineyard in Lochessur-Ource on an electric mountain bike. This is followed by a tour of the cellars – for instance, you can see ancient winemaking tools juxtaposed with contemporary compression of bottle wirecaps in the style of César Baldaccini – and a wine tasting. The vineyards by Segway... Champagne Rémy Massin has been operating for 5 generations, growing herbicide-free vines that respect the ecological balance. The winery to visit

Welcome to the oldest monument in the heart of Troyes, which has stood facing the cathedral since the 12th century. More recently, it became a wine shop. Introductions to oenology are regularly organised here, including the presentation of the best cuvées in the Côte des Bar. Even better, the workshop adjoining the store houses a historical still that since 1840 has been producing Prunelle de Troyes – a liqueur made from sloe pits crushed and macerated in alcohol. No less than three appellations cohabit in Rosé des Riceys wine – Champagne, Coteaux Champenois and Rosé. The rarity of the latter is due to its small-scale production of Pinot Noir on some 30 hectares, harvested in sunny years for optimum sugar content. The Rosé de Saignée (where the juice is released from the vat after some hours of maceration) is similar in texture and ageing to a red wine.

I’m in Reims

A

city of history, gastronomy and culture that is determined to make its treasures known. The champagne capital cheerfully vies for this title with its neighbour, Épernay. Reims is at the heart of the inclusion of the most famous sparkling wine in UNESCO’s World Heritage List. In 2015 the Saint-Nicaise hill and the wine cellars that call it home between its depths and the secrets of its surface, became part of a concept of cultural landscape that received international acclaim. Known as France’s “Coronation City” due to the fact that 33 French kings were crowned here, Reims boasts three other World Heritage sites since 1991: the Cathedral of Notre-Dame, the adjoining Tau Palace and the Basilica of Saint-Rémi.

In the aftermath of the Great War and the terrible fire, the Allies provided for the renovation of the roof, while other patrons restored the monument’s finery to its former glory. One example is the Champagne stained-glass window that graces the south transept was generously sponsored by the Winegrowers and Houses of Champagne. It happily marries the names of wine-producing villages with the representations of their patron saints and other biblical scenes: from the grape harvest to the alchemy of the winery, via the bottle and cork industries, wine finds its symbolic value here, between earthly nourishment and divine elevation. Not to be missed – the Smiling Angel, visible from the forecourt and from the kings’ gallery at the top of the tower.

This chalky hillock is made up of old quarries and wells which, in medieval times, were used to extract chalk. The famous ‘’chalk pits’’ as time passed time (new building materials emerged) became a site for storing and maturing wines. Under the Saint-Nicaise knoll, there are 57 kilometres of galleries that keep the products of six major champagne houses at a constant temperature: Ruinart (the oldest), G.H. Martel, Charles Heidsieck and Veuve Cliquot. On the surface, one can also find their built property, some vineyards, the remarkable Saint-Nicaise church and the garden city of Chemin-Vert. It is the only place in Reims where there are remains of the old medieval rampart.

Created in 1910 on the initiative of the Marquis de Polignac, then director of the Pommery Champagne House, for the relaxation and physical exercise of his workers, Champagne Park combines a landscaped garden with many sports and outdoor facilities. Its 22 hectares of greenery and games now host numerous events. It is evidently the ideal place to have a picnic with friends over a bottle of champagne. 10 Avenue du Général Giraud. The most authentic It was in order to venerate the relics of Saint Nicasius that in the 13th century Benedictine monks built an abbey on the site of his burial. It was sold as national property during the French Revolution and used as a stone quarry until it was demolished in the 19th century. The discovery of the remains of the abbey and the Gallo-Roman chalk pits are therefore at the heart of a visit to the House of Taittinger, which also owns other heritage sites like the residence of the Counts of Champagne in the historic centre of Reims. A partner in many cultural activities, Pierre-Emmanuel Taittinger, who has entrusted his daughter Vitalie with the management of the house, is also the president of the association responsible for promoting the UNESCO listing locally. 9 place Saint-Nicaise, 03 26 85 45 35

The Elizabethan architecture of this immense residence pays tribute to its clientele across the Channel. Taken over by Louise Pommery upon the death of her husband, the house took shape in 1868 via the metamorphosis of the old chalk pits. The 116 steps of a mythical staircase still give access to 18 km of galleries, where works acquired during the widow’s lifetime are exhibited. Nowadays, under the leadership of Nathalie Vranken spectacular exhibitions known as ‘’Experiences’’ are held in the cellars each year. Back to the city G.H. Mumm, from Reims to Japan The visit to the cellars of this prestigious house, which was founded in 1827, takes you through this exceptional site and retraces the main steps involved in the production of champagne. The tour includes through 25 kilometres of cellars, including the museum and exciting tasting experiences. If you wish to go further, then you need to go across the street. In 1964 the Japanese painter Léonard Foujita, who had converted to Catholicism, and René Lalou (his godfather, then head of the House of Mumm) decided to build a chapel in Reims. Situated in a wooded park a stone’s throw from the Mumm house, the chapel (managed by the City of Reims) can be visited, perhaps accompanied with a glass of Rosé Foujita. Lanson, its house and enclosed vineyard

At Lanson (since 1760), you don’t go down into the cellars, you enter them horizontally! All in all, there are 7 km of galleries and 5 million bottles. It is also the only house to have an enclosed vineyard in the heart of Reims – one hectare of vines with a view of the cathedral, yielding the best cuvées. Fun facts: in June 1945, General Eisenhower had Lanson served at the Allies’ dinner. On 1 June 1961, de Gaulle received Kennedy at Versailles with Lanson. The winegrowers have their own shop

This new space dedicated to the champagne of winegrowers and cooperatives will open its doors to welcome lovers of iconic AOC cuvées. The store of Syndicat Général des Vignerons (General Winegrowers’ Union) will be unveiled on July 12th at the famous Avenue de Champagne in centre of Épernay. It will be an exceptional place where tradition and innovation meet to offer a unique atmosphere. Visitors will be able to discover more than a hundred new and surprising cuvées. From the moment they enter, they will be invited to immerse themselves in the authenticity and diversity of character of the winemakers’ champagnes. The Mountain of Reims

I

t is only 286 metres high at the top, but the Montagne de Reims, crossed by the forest massif of the eponymous Regional Nature Park, has some surprises for you once you reach the summit. Containing 9,000 hectares of vines, it is one of the 4 champagne vineyards, or terroirs — the kingdom of Pinot Noir, which covers over half the area. This vigorous grape variety is perfectly adap-

ted to limestone soil, although this mountain is in fact a geological ‘’layer cake’’. Its layers of chalk, sand and clay give its champagnes some very characteristic notes.

Lighthouse or museum? No need to choose! A lighthouse dominates the landscape, surrounded by a “sea” of vineyards This was the bizarre project dreamed up in 1909 by Joseph Goulet, the owner of a champagne house which he wanted to advertise for miles around. No sooner said than done: he had his name and surname inscribed vertically on the 25-metre tower in such a way that the second row of letters became a circle of Os surrounding it. In 1999 the lighthouse became a museum where you can learn about the appellation of champagne, the landscape and the tools of the vineyard. It also hosts exhibitions, and includes a tasting area and even a ‘’maritime’’ garden outside. A meal among the vines

No, champagne is not the only wine produced on the Reims Mountain. With the best grapes from the finest harvests, a handful of winegrowers also produce a still wine that meets the specifications of the Coteaux Champenois AOC (red, white or rosé). Among these winegrowers is the Vesselle family in Bouzy (whose cellars are open to visitors), and there are others in Cumières, Ambonnay and Aÿ (Maison Collery).

Shellfish caves under the vines In remembrance of the lagoon that existed here 45 million years ago, the Cave aux Coquillages is a fossil site that is unique in the world. The sandy caves contain thousands of shells from the Middle Lutetian period, exactly as they were discovered. What is the connection between the vineyard and these incredible fossils? The subsoil, of course – it is rich in sea minerals which are absorbed by the vine roots, giving the wine a salty tang. The galleries were hewn out in 1993 by Fabrice Legrand-Latour – a winegrower who to this day digs into the hillside’s 10-metre-deep fossiliferous layer to enrich his fascinating museum, kept at a constant 12°C and 95% humidity. The church, cradle of History The monk Dom Pérignon spent 47 years of his life here, contributing to the progress of sparkling wine. To find out more, you must visit the abbey church. Stroll through the quiet gardens or in the building itself, where you can see the tomb of the ‘’inventor of champagne’’ – he mainly developed the wine blending method. Here, we are on the road to Santiago de Compostela, where the abbot met many pilgrims in the 17th century. On their way back from Spain they passed on to him a method for making bottles stronger, as well as the idea of using a cork stopper instead of the pieces of wood and oakum that had been used till then.

De Castellane, a house to see among others Only its tower, 66 metres high, is visible from the Avenue de Champagne between numbers 53 and 55. It is actually a copy of the tower at Gare de Lyon in Paris. The museum of ancient champagne crafts houses a collection of mannequins evoking grape harvests and the arts of woodworking, riddling, disgorging and packaging, among others. There is an exhibition of ancient tools and trades related to champagne – printing, glass, cork, labels, cardboard. At a height of 150 metres, from a tethered balloon It’s a journey back to its roots for this flying machine that is as light as it is silent. It was Eugène, the founder of the Mercier company, who first took a tethered balloon into the air in Paris to advertise his champagne. Visitors to the World Exhibition could fly over the crowds while sipping his bubbly. Just over 120 years later, the device and its helium bubble have settled in Épernay. For 12 minutes in the gondola, you will enjoy a bird’s eye view of the prestigious hillsides of the champagne vineyards and the mansions located on the most famous avenue in the region, at the heart of the UNESCO World Heritage site. €20 with tasting, €12 without. A new museum to visit At 13 Avenue de Champagne, the Château Perrier – built in 1854 by the founder of Perrier-Jouët – is a mansion built of cut stone which became a wine and archaeology museum in Épernay in 2020. The tour not only shows the stages of champagne production, but also caters to the social, economic, cultural and sensory dimensions. Through ten rooms, visitors are invited to discover tools, machines, glassware, paintings, lithographs, posters and advertising signs. Prices: €9 for adults and children over 13. et us continue on the sunshine trail. Because if the southern slopes are really ‘’the other mountain’’ of the Épernay countryside populated by fifteen or so delightful villages, it’s in the nearby Côte des Blancs that the true treasures of the vineyards can be found. There, they produce champagnes made exclusively from Chardonnay that are acclaimed by the connoisseurs. These wines – a also known as blanc de blancs – can be distinguished by the elegance and flair of their light, delicate aroma. The villages of Cramant, Avize and Mesnil-sur-Oger are the best representatives of these wines, which sometimes hint at the chalkiness that is part of their heritage.

Nicolas Feuillatte invests in contemporary creativity and he opens the door to his art collection, exhibited close the bottles that lay aging within miles of cellars. CHOUILLY AND CRAMANT WANDER AS YOU PLEASE

Gardens of vines, Garden of Eden The concept of the vineyard gardens is a way of reconnecting with the roots of the Champagne region by promoting the land and its winegrowing identity. In Chouilly, in the continuation of the Avenue de Champagne, this is a multi-themed space with a giant map of the vineyards of France, a wild vine running along the ground and a miniature vineyard reconstituted with the grape varieties of the AOC. Cramant welcomes you with an 8-metre-high bottle. It also boats a museum featuring the vineyards, their management, the subsoil and the landscape, as well as wonderful views over the surrounding villages.

In this kingdom of Chardonnay, nearly 300 winegrowers cultivate 2,300 hectares of vines surrounding a medieval town that has become a Petite Cité de Caractère (small town of character): Sézanne, nestled in an indentation between Brie and Champagne. Sézanne has kept its picturesque streets and the church of Saint-Denis, whose massive tower dominates the sloping roofs of the old houses.

All you need to do is pick up a voucher at the Tourist Office at Place de la République. Then, on a Saturday you make your way to the relevant estate – Dekeyne in Bethon, Jacopé in Broyes, Pietrement-Renard in Villevenard, etc. Eight dates have been scheduled between 19 June and 7 August 2021, from 11am to 1pm.

From the vineyard to the bottle

Wine tastings in a shelter A bus shelter? A bomb shelter? No, a vineyard shelter! These small cabins scattered around the vineyards were initially used to store tools, as shelter for winegrowers, or as a hiding place or refuge. Having gradually lost their usefulness, they are making a comeback because of their value to the heritage and the landscape. The tourist office of Châlons organises tastings in Tours-sur-Marne, Cumières or Champillon, for two hours of happiness inside a champagne bubble. €68 for 2 or 3 people. €38 for a group of 4 to 15. Going further The Architecture and Champagne road tour (350 km) takes you from Châlons to Les Riceys (Aube) to visit twenty or so of these repurposed vineyard shelters. If you prefer to walk, the village of Trépail offers visits along a 5.2 km trail punctuated by signs highlighting the history of the shelters and of the vineyard.

The winegrowers of Bonnevie-Bocart Champagne in Billy-le-Grand offer this guided tour of the vineyards in their green vehicle. The tour culminates in a tasting of two different cuvées in the vineyards, followed by a guided tour of the facilities – the wine press, vat room, etc. Duration: 2 hours. From €70 for 2. y heart see-saws between wine and the river… but not for long. Here we are in the prefecture of the Marne, which has changed its name several times in the past. Châlons-en-Champagne, which became Châlons-sur-Marne during the Revolution in honour of its main river, was given back its original name in 1997 so that its visitors would not make a mistake. Like its sister-cities Reims and Épernay, this town with a population of 45,000 has no vineyards, but has a close connection to champagne. It’s time to spend a few hours in the heart of ‘’sparkling Venice’’, discovering its rich heritage and charming squares where you can stop for a glass of champagne.

A story of words From the countryside to Champagne, there is only one plain A bit of etymology will tell us about the origin of the word ‘’champagne’’, and Châlons is precisely in centre of this landscape. Yes, the word champaign derived from the Latin campania, meaning nothing more than ‘’a large expanse of flat country’’. It was this topographical term that gave its name to the province of Champagne in 1065, representing an open chalky plain. Much later, in 1927, it also became the name of the appellation d’origine contrôlée (registered designation of origin) for sparkling wine. Therefore, Châlons is a wine city that is also – and mainly – located in the centre of these fields.

Among the curiosities on display in the museum is a studded cork from the time when they were personalised in 19th century brothels. This trick made it possible to keep track of bottle sales, of which the prostitutes were among the main ambassadors. The Champagne Famille Carbot Museum welcomes you in a historical building in the city centre. On the ground floor begins a journey through time. Picture yourself at the bottom of the Baltic Sea where, 170 years after a shipwreck, divers rescued bottles of champagne that were still intact. Among these were Juglar cuvées, named after the wine merchant from Châlons who once lived in the house that is now a museum. Follow me to the first floor and into the champagne terroir, with an exhibition of over 500 viticulture tools. Unusual From the cellars of the city...

The Tourist Office organises tasting sessions led by an oenologist, in a very special place: the medieval cellars located under the Place Foch, covering an area of 200 m2. One of these stone vaults date back to the 13th century, and another to the 15th. They bear witness to the undeniable growth of the town during the Middle Ages. Among all inventors, Adolphe Jacquesson stands out for his famous wirehood. In 1837, this native of Châlons took over the management of the estate of the same name, using it as a laboratory to improve champagne production techniques. He had the cellars lit by a system of reflectors, and installed machines to wash and cork the bottles. But his most important invention, in 1844, consisted of a sort of cage made of twisted wire, together with a metal cap and a stopper that is now known as a ‘’bidule” (thingummy). The patent was registered and still in force 150 years later.

places … to those of a famous Champagne house Of the four champagne houses that once existed in Châlons, Joseph Perrier is the only one that remains, and it has been operating since 1825. Its Gallo-Roman cellars, dug into the hillside, are unique in that they are entirely on one level. The tour route was redesigned in 2020, taking you under ogive-shaped vaults and skylights that can be as high as 10 metres. Protected by a wooded park that acts as climate control, the caves extend over 3 kilometres and are still used to make Joseph Perrier champagne. Duration: 75 minutes. Sipping on the waters A city of water, before wine arrived

As indicated by the names of Châlons’ streets and bridges – Mariniers (bargemen), Viviers (fish ponds) Poissonniers (fishmongers), Batellerie (inland boating) – there is water is everywhere. From the river Marne to its side channel, along which barges and pleasure boats sail on their way to the marina, via the Mau and the Nau. For an overall visit, the tourist office will take you on a boat trip during the day (Eau’Dyssée) or at night (Métamorph’eau’ses), including a sound and light show and a glass of champagne. From Châlons to Vitry-le-François

H

ere is a new gateway to the vineyards only an hour from the famous Lac du Der, to the delight of water sports enthusiasts and bird watchers. But first, the champagne! Coteaux Vitryats is centrally located approximately fifty kilometres from the Coteaux du Sézannais and the Côte des Blancs, and 70 kilometres from the Côte des Bar, and offers wide open views. Mostly planted with Chardonnay, its 480 hectares of chalky soil are revealed in the nuances of its wine.

What shall we eat ? An 80 km tourist route by car As you travel around the Champagne regions’ itineraries, between hills and plains, you will come across many villages with the typical timber-framed houses of the Champagne bocage*. Hillside tours: • Glannes and its vineyards • The church overlooking the village of Huiron • Mont de Fourche in Vitry-en-Perthois – the walk uphill takes some effort, but the view is stunning • Bassuet and its winegrowers • Vavray-le-Grand and its retaining wall with impressive arches • Saint-Amand-sur-Fion (from the Latin flumen or watercourse), its wash-houses and the requisite photo of the sign. A pause for pork products and champagne Revisit the past at the Châtel farm, on the grounds of an 18th century castle in Aulnay-l’Aître. Its shop is crammed with traditional farm fare (pork products, black pudding, terrines, cooked dishes) and local products (honey, beer, preserves, etc.). Who says champagne and deli meats don’t go together? Smoked ham or pepper sausage go down a treat with a cool glassful of bubbles. Located 40 kilometres east of Châlons, the town of Sainte-Ménehould (pronounced Menoo), is not part of the Champagne appellation area but is still an iconic town of the Marne. For there were vines here once, up until the end of the 19th century. Better still, the inventor of champagne was born here in 1639. Take a stroll in the garden and look for the statue of a pensive Dom Pérignon. Then walk along the canalised Aisne River and take the Quai de l’Herbette to the gardens of the old hospital. Continue along the Rue Robinet, admire its houses made of brick and gaize, and finish on the knoll with the Château, through wooded paths where the old fortress will reveal its church and half-timbering. Guided tours A walk with an inhabitant The Champagne Tourist Route also goes through Changy, and Jean-Philippe Menu, a local inhabitant and winegrower, wants everyone to know that. So he has taken on the role of ‘’greeter’’ to welcome visitors to his home town. The aim is to offer a fun way of learning more about his occupation – from the work in the vineyards to the making of champagne. To this end, he uses a number of card games that he created himself. A nap under the stars In addition to their traditional B&B, the Menu-Jacquier champagne family in Changy had a vineyard shelter built in 2017, in partnership with architecture students. It’s just that the shelter looks more like a bed… The facilities are somewhat rustic but the bed is comfortable, with a soft duvet and a terrace to enjoy a glass or two at sunset. The Marne Valley Along the Aisne

T

hese vineyards are located along the river Marne, between Tours-surMarne and Dormans in the part that is within Marne. The dominant grape variety is Pinot Meunier, which gives the champagne a seductive bouquet, fruitiness and great suppleness. The hillsides are planted on predominantly clay-limestone soils. From here, we leave Épernay through the west in the direction of the Aisne, where the champagne appellation zone still prevails. In the meantime, here are a few ideas to choose from.

Tasting at the top Make a small detour from the river and go up Reims Mountain – and even higher, since you’ll be enjoying a glass of bubbly inside a giant bottle. Vincent Gobert, a winemaker from Romery and a blacksmith in his spare time, built this 12-metre high, two-storey bottle in 2015. A little further on Dom Caudron was the monk of the village who in the 1920s helped the winegrowers to set up their cooperative. The site is still in operation, and its eco-museum is open to visitors. It exhibits around a hundred ancient tools through a route that takes you from the old wine presses to the vat rooms that are used today. hat secrets are guarded behind Portes de la Champagne? Here, in the western part of the Marne valley, some 560 winegrowers and the Pannier company in Château-Thierry lovingly craft our favourite sparkling wine. The 3,500-hectare vineyard is planted like its neighbour in the Marne with the three grape varieties of the appellation, where Pinot Meunier accounts for 70% of the vines. The champagne route goes on, leaving behind Dormans at Trélou-sur-Marne, to the village of Crouttes-sur-Marne. Altogether, 130 kilometres connect the most characteristic landscapes of the appellation in the Aisne, where 10% of all champagne is produced.

On the Champagne tourist route there is an opportunity to enjoy a unique multi-sensory experience. In their salon on the banks of the Marne, Mireille Jacquesson, an artist and winemaker, and Andrei Mogoutov, a scientist and winemaker, present the Bullescence spectacular: an animation show that is unique in the world, with images projected onto soap bubbles. The origin of the famous Maroilles cheese, with its orange rind and heady smell, is attested to by the Maroilles abbey in the 10th century. But to find it, you have to roam the Thiérache hedgerows looking for cows. It takes 1 litre of milk to make 100 g of cheese, but it doesn’t end there. Extreme care must be taken throughout the process – draining, salting, washing, brushing, until it can finally rest in the cellar. Maroilles has had an AOC since 1976. The archer of Pannier It was in 1899, near Épernay, that Louis-Eugène Pannier stated the history of this estate. Over many years of outstanding work, the brand’s reputation flourished and a new chapter began in Château-Thierry. In this area that has inspired so many artists, remarkable old stone quarries dating back to the 12th century still house the cellars of the Pannier cooperative, spanning 2 km of galleries. On one of the gallery walls, an archer carved in the 14th century stands guard. The company has therefore chosen this symbol of balance, mastery and skill as its logo and representation of its expertise, adopting archery’s motto: aim for perfection.

Find shelter amid the vineyards Alain Bedel Champagne, at the entrance of Seine-et-Marne, has been established on the Porteron hillsides for three generations. Nothing unusual, you might say. Admire the view... Set off go for a 14-km walk departing from Azysur-Marne. Take the path that goes up through Bonneil and discover a breathtaking panorama, especially over the ‘’belt’’ surrounding the vines as far as the eye can see. After climbing Mount Bonneil, stroll through the Champagne vineyards to the Abbey of Essômes – and its wash-house, which pays homage to La Fontaine’s fables – then walk back to your starting point along the curves of the Marne. ‘’A superb walk alternating between the hills of the Champagne region, the heritage, wooded areas and the banks of the Marne. epartment 52 is not to be outdone when it comes to champagne, and it holds some secrets about the appellation area. Located on the border with the Aube, the villages of Argentolles, Colombey-lesdeux-Églises and Rizaucourt are some of the stops on the Tourist Route, in the continuation of the Côte des Bar. Here you can taste champagne made from Pinot Noir (the dominant grape variety in the area), Pinot Meunier and Chardonnay in a guided tour by one of the local winegrowers in the area – a total of approximately 80 hectares of vineyards.

A museum in the SaintVincent wine cellar This is the reception point of the Champagne tourist route: a wine-tasting cellar full of character, a few kilometres from Colombey in the former washhouse of Argentolles. There is a permanent exhibition of old winegrower’s tools, a projected video on the world of champagne, a presentation of the cuvées of Godin-Schuester, Hudelet, Mocquart-Esmard and Daubanton, and a tour with one of the winegrowers. Langres cheese with champagne As you explore the green countryside of the HauteMarne, you will discover vast pastures that bear witness to abundant milk production. Since 1991 the Langres AOC has recognised an industry that dates back at least to the 18th century. Langres is a soft, washed-rind cheese made from cow’s milk, with a dominant lactic character. Its fine, creamy texture is not runny, and it is sometimes matured in Champagne or Burgundy marc, which reinforces its character. Better still, as Langres cheese is never turned over, a small bowl-shaped hollow (or “fountain”) forms on the top, delightfully lending itself to a new way of tasting: a few drops of champagne can be poured into it before enjoying it. Several dairies in the area are open for visits.

AND STILL...

The still wine of Haute-Marne It’s not all champagne in the Langres region! There is still wine too, which has enjoyed an IGP (indication géographique protégée, or protected geographical indication, formerly known as vin de pays) since the year 2000, whilst not seeking to compete with its neighbours in Burgundy, Alsace or Champagne. Grown in a semi-continental climate in chalky or claysandstone soils, the Pinot Noir-based red wine has a beautiful garnet colour and primary aromas of red fruits (cherry) and spices. A perfect match with venison, it can remain in the cellar for two years before being enjoyed. There is also Haute-Marne rosé and a white Chardonnay, very distinctive, with a pale-yellow colour and citrus notes.

Langres cheese flambeed with Marc de Champagne • Choose a mature Langres cheese, a little dry. • Accentuate the characteristic hollow of the cheese with your thumb, put it in a deep dish and bake it for five minutes at 60° to warm it, then five minutes at 150°. The cheese will sag. • Meanwhile, heat the marc slightly in a saucepan over high heat – take care not to let it boil, otherwise it will not flambé. • Take the Langres out of the oven, pour the marc over it and flambé, then baste it again with the liquid. • Serve with bread and a salad of lamb’s lettuce or young dandelion.
