Happy New Year, friends! IT’S THAT TIME AGAIN! It’s the time of year we drop big bucks on detoxes, dieting challenges, gym memberships, and other efforts intended to fix what’s “wrong” with us. But why do we need to be fixed? Who decides what “wrong” is? And can’t we do things just because we like the way they make us feel? Marketing messages bombard us with products intended to shrink our waists, fill in our wrinkles, and freeze our fat. And media supports and promotes these messages. As the founder of a progressive publication, I’m intentional about the brands we partner with and highlight editorially—staying away as much as possible from diet culture and other toxic wellness trends. I try to focus instead on guiding you toward options that have the potential to nourish your body and fuel your joy. In this issue, we’ve rounded up everything from self-care according to your zodiac sign (page 60) and sound healing basics (page 28) to the best vegan spas (page 36), smoothie shops, and bakeries (treat yourself!) (page 46). We also have interviews with Chef Shenarri “Greens” Freeman, Dr. Michael Klaper, and NBA’s Chris Paul. The VegOut team and I had the pleasure of doing a photo shoot with Chris at Miami’s hottest plant-based restaurant, Planta. And let me tell you, I am a major CP3 fan now—he’s not only passionate about basketball and committed to creating change for the vegan movement, but he’s truly an amazing human being. So here’s to having a little more compassion for the person you see when you look in the mirror, to celebrating YOU, exactly as you are.

Chris Paul It’s no secret that nutritious vegan food can help improve one’s athletic performance. So it’s exciting to see more and more professional athletes making the switch to a plant-based lifestyle! Among these is NBA’s Chris Paul.

CURRENTLY IN HIS 18TH NBA SEASON, Chris Paul is one of the best point guards of all time! He currently plays for the Phoenix Suns and holds up his nickname “The Point God,” making steals and assists left and right. Over the years, Paul has won NBA Rookie of the Year, All-Star Game Most Valuable Player, and two Olympic gold medals, among other awards and titles. As an athlete in the spotlight, Paul uses his platform to advocate for plant-based living. He invests in and has partnerships with a number of vegan brands, including Beyond Meat, JUST Egg, Koia, and Umaro Foods. Most recently, he launched his own plant-based snack company, Good Eat’n. In addition to playing in the NBA, working with a number of vegan companies, and making public appearances, Paul prioritizes family time with his wife Jada and their two children. And because family is an integral part of his life, he launched the Chris Paul Family Foundation, an organization that aims to positively impact individuals and families through education, resources, and community initiatives. So, how did Chris Paul's vegan journey begin? Has his new lifestyle affected his performance and team relationships? And what does an average game day look like? Read on to learn the answers to these questions and more!

WHEN AND WHY DID YOU FIRST TRANSITION TO A VEGAN DIET?

CHRIS PAUL (CP):

When I moved to LA, I started to eat cleaner. My chef at that time introduced new options to me and my family. I was [also] fortunate to be included in producing The Game Changers movie. After that experience, I went plantbased immediately [and] saw a change in my body [right away]. The most significant was that I didn't need to ice my knees anymore. VO: HOW WAS YOUR NEW DIET

RECEIVED BY THOSE AROUND YOU? WERE ANY OF YOUR TEAMMATES INFLUENCED BY YOU TO TRY MORE PL ANT-BASED FOODS?

CP: Each year, I get a lot of questions about diet and can honestly say that I might have influenced a teammate or two to go fully plant-based. It's cool to introduce guys to new things that might help their game. VO: CAN YOU TELL US YOUR GO-TO

CP: My pregame meal changes often, but leafy greens, protein, and a shake are my go-to items. VO: WHAT OTHER WELLNESS

CP: My foundation was created to honor my grandfather, who was the leader of my family. [I’m] most proud of the scholarship we started at Wake Forest University in his name.

TRAVIS BARKER Launches Vegan Skincare Line Vegan celebrity Travis Barker added skin care to his vegan wellness brand Barker Wellness. Barker Wellness offers CBD-infused wellness products for sleep, muscle recovery, and pain relief. The vegan skincare line launched in September and features cleanser, moisturizer, and serums infused with various cannabinoids to support skin health. All products are vegan and cruelty-free, of course!

PLANT-BASED MEALS Are Now the Default at NYC Hospitals

Vegan dinners are now the default for inpatients at Lincoln, Metropolitan, and Woodhull Hospitals. New York City Health + Hospitals partnered with the organization Greener by Default to launch the initiative. This dinner program is an expansion of the health care system’s successful plant-based lunch default program, which launched last year and currently boasts a 95% satisfaction rate. This new program was put in place to combat rising health concerns in patients and to provide a healthier dining option lower in cholesterol and saturated fats. This initiative will impact between 600,000-800,000 meals per year!

PANDA EXPRESS Launches Vegan Orange Chicken at All Locations In 2021, Panda Express launched a vegan version of its Orange Chicken in collaboration with Beyond Meat. The Beyond The Original Orange Chicken was only available in a few test markets. But last fall, the fast-food giant launched a nationwide campaign, bringing the vegan orange chicken to all 2,300+ locations across the country. While the Beyond The Original Orange Chicken isn’t available as a permanent fixture on the Panda Express menus quite yet, we can only hope that this means more vegan options in the future!


TACO BELL Tests Out Vegan Carne Asada Steak In September, Taco Bell announced a partnership with Beyond Meat and released a new menu item: Beyond Carne Asada Steak. The vegan protein option hit its first test market in Ohio in October. Customers in the test market were able to try the plant-based protein as an addition to any menu item. The best part? It’s the same price as traditional steak! The vegan carne asada is still currently in its testing phase, but we hope to see it land on the permanent menu this year.

GHIRARDELLI Debuts New Vegan Chocolate Chips

BEYOND MEAT Releases Vegan Steak

Finally, a solid vegan baking option from Ghirardelli! The chocolate giant dropped vegan baking chocolate chips this past fall. The Non-Dairy Dark Chocolate Baking Chips are now available at retailers nationwide, making them one of the most accessible options for vegan baking. This is the brand’s second vegan option, and we can only hope that we’ll continue to see more!

Beyond Meat made headlines again last fall with the release of its new plant-based steak. The product is a vegan version of traditional steak tips, and packs 21g of protein per serving! Beyond Steak is now available in the frozen sections of Kroger, Walmart, Albertsons, and Ahold stores nationwide. Several more major retailers will be bringing in the product in the coming months. The best part? Beyond Steak is ready in just five minutes in the air fryer or a skillet.

SLUTTY VEGAN Begins Nationwide Expansion The award-winning Atlanta-based vegan burger joint is expanding out of its home state of Georgia. Last year, the brand opened three muchanticipated locations in Birmingham, Brooklyn, and Harlem. Slutty Vegan now has eight locations across three states, with several more in the works. Additionally, the brand’s food truck, aka The Big Ol’ Slut, continues to pop up in popular East Coast cities. Founder Pinky Cole shows absolutely no signs of slowing down, and we can’t wait to see where Slutty Vegan will open next!

Shenarri “Greens” Freeman Is Taking the NYC Culinary World by Storm


As a native Southerner and world traveler, Shenarri “Greens” Freeman knows a thing or two about rich flavors and textures. From working private events to cooking at plant-based restaurants Greedi Vegan and Cadence, Chef Shenarri veganizes comfort food like no other. Now, Chef Shenarri is a household name in New York’s food scene. So, what led this award-winning chef to her immense success? What are her thoughts on veganism? And what advice does she have for hopeful chefs? Keep reading to find out! INTERVIEW BY

VegOut (VO): What inspired you to pursue a career in culinary arts? Shenarri “Greens” Freeman (SGF): After studying at Howard University, I transitioned to a plant-based diet and ended up attending ICE (the Institute of Culinary Education). It gave me the space to express myself creatively through food, and I saw it as a chance to expand my knowledge on food and cooking.

VO: Before you went vegan, what was your perception of the lifestyle and food? How did that change once you transitioned to veganism? SGF: My perception of veganism is and always has been very whitewashed. The food comes off bland and full of soy products. As a plant-based chef now, I’m doing the complete opposite. I focus on building flavor with real fruits and real vegetables, playing around with textures, and using those recipes from my childhood as a guide.

VO: Was the culinary school you attended welcoming to vegan chefs? What was that experience like? SGF: It was 100% friendly toward vegan cooking. I attended the Institute of Culinary Education, and luckily the Health Supportive Culinary Arts program launched a month before I applied, so I was able to have a plant-forward experience. The chef instructors, the recipes, the knowledge, and the dedication of this program opened my eyes to a new side of food and helped polish up my chef career before heading into restaurants.


VO: You’ve got quite an impressive resume! Was there a specific moment when you realized you’d “made it” as a chef? SGF: There are quite a few moments that really stick out for me—such as being named to NY Times’ top 50 restaurants of 2021, Esquire’s [40 Best New Restaurants of 2021], and Esquire’s Rising Star of the year 2021. [Also], gaining a James Beard Nomination, Michelin Star nomination, and being featured across press like Vogue (twice!) and being featured on the cover of Edible Manhattan! Outside of these accolades, it’s so amazing to be leading a kitchen at a young age and to be tapped for different cooking opportunities and festivals around the world. It’s affirming not only of my personal career, but of the plant-based industry and its future direction, as a whole.

VO: You’re currently Executive Chef of Overthrow Hospitality’s Cadence. What do you love about working at this restaurant? SGF: I get to be myself, crack jokes with my staff, and make food that will blow someone’s mind. Not really much more you can ask for as a chef, honestly. Plus, working with a larger group means that I have support coming from different angles—whether it’s with logistics, events, etc.

VO: The menu at Cadence is influenced by your Virginia upbringing. Was it hard to veganize traditional Southern Soul Food recipes? SGF: Honestly, not really. I understand and know the flavors and textures really well, so it was just a matter of recipe development, putting in the time, exploring different techniques, and figuring out how I wanted to plate everything. For me, it was honestly a surprise that there was so little plant-based food being made in this genre of food!

VO: What is it like to work as a vegan Black female chef in a non-vegan, white male-dominated industry? SGF: It’s both empowering and incredibly humbling. Every day I wake up feeling unique and gifted. I’m not one of those chefs that grew up with cookbooks, watching cooking shows, or paying attention to credible chefs in the industry, so that doesn’t inspire or intimidate me. I’m creating my own lane, and I encourage so many other chefs to do the same!

VO: Do you have any advice for other POC hoping to make it as chefs? SGF: The hospitality industry can be challenging for POC, and especially WOC. I want to let people know to trust the process and enjoy the journey. Every chef has a story to tell, and if you let your food speak for you, you’ll shine in your career.

Sound Healing 101: Everything You Need to Know Sound healing has become a hot topic over the past few years. But what is it, and how exactly can it have a positive impact on our bodies? by CAY L A W H I T E

Albert Einstein once said that “Everything in life is vibration.” Our bodies are constantly resonating and operating at certain frequencies. Sound healing is the practice of using particular sounds to encourage the body’s own vibrations into a more resonant state. Ancient cultures in Australia, Egypt, and Tibet have been incorporating sound into by their meditation and healing practices Cayla White for thousands of years. What these cultures have tapped into is the power that sound can have on our bodies. Studies have shown that experiencing these frequencies can have calming effects on the nervous system. Certain sound vibrations can help induce meditative flow, help clear blockages in the body, and even move the brain to deeper, more relaxed brainwave states, such as alpha and theta. Over the last couple of decades, researchers have conducted several studies on the impact of sound healing on mental health. A 2016 study found that participants reported significantly less anger, fatigue, tension, and depressed mood following a sound meditation with crystal singing bowls. The most popular way to experience sound healing in today’s age is through a sound bath. A sound bath is a meditative experience in which a group of participants lie down while a sound practitioner “bathes” them in sound using a variety of instruments. Here are some of the most popular instruments used in sound baths today.


CRYSTAL SINGING BOWLS These sound bowls are the ones that you’ve probably seen on Instagram or at the local artisan farmers market. While they haven’t been around as long as some of the other modalities, they have quickly become the most popular. These bowls are traditionally made out of quartz and are a smoky clear color, and they produce different frequencies depending on the size of the bowl. Larger singing bowls are generally used to produce frequencies to match the lower energy centers in the body, while the smaller bowls correlate with higher energy centers. Generally, a sound practitioner will use several bowls of different sizes to create sound that resonates throughout the entire body. The bowls are played by hitting the side of the bowl with a rubber mallet to produce a tone. The tone is then carried on by a circular motion around the bowl.

TIBETAN SINGING BOWLS

TUNING FORKS

These sound bowls have been used by Buddhist monks for thousands of years. They are traditionally made out of a blend of metals, such as brass, copper, and nickel. These bowls are played the same way as crystal singing bowls, by hitting the side with a mallet and drawing the sound out through a circular motion.

Whereas singing bowls produce a loud, resonating sound that can fill a room, tuning forks are used for a more focused sound.

While not necessary, these bowls are often filled with water before they are played. The water is a good visual representation of what happens to matter when exposed to sound frequencies, as the vibration causes the water molecules to jump and dance. Tibetan singing bowls produce a more complex and higher frequency sound than crystal singing bowls.

These steel forks are made up of a handle and two tines. When the fork is hit against the palm of the hand or a rubber mallet, the fork vibrates and produces intense frequencies. Sound practitioners will often bring the fork near the part of the body that needs healing, as the frequencies are so strong that it causes the air around the fork to vibrate. This encourages the body to shift its own frequencies to the more balanced frequencies of the tuning fork. This method is often compared to acupuncture, as it works to stimulate points in the body to promote release. While attending a sound bath in person is the most popular way to experience the healing powers of these instruments, it’s by no means the only way. Breakfast Hash Bowl BY LAUREN TOYOTA

There’s more to vegan breakfasts than oatmeal and smoothies. With a mashed potato hash and savory tofu scramble, this is a lighter, plant-based version of the diner-style favorite.

PREP TIME: 18 minutes COOK TIME: 22 minutes SERVINGS: 2

INGREDIENTS Mashed Potato Hash - 2 cups peeled, cubed, and cooked potatoes - 1-2 tablespoons grapeseed oil - ¼ teaspoon paprika - Sea salt and ground black pepper, to taste Tofu Scramble - ½ brick medium firm tofu - ½ cup chopped mushrooms - ½ teaspoon turmeric - 1 tablespoon nutritional yeast - 1 tablespoon non-dairy milk - Sea salt and ground black pepper, to taste - ½ cup finely chopped spinach - 2 tablespoons salsa DIRECTIONS 1. Peel and cube 2 small potatoes and boil for 10 minutes. Drain from water (do not rinse). 2. In a large pan heated to medium, add 1 tablespoon of grapeseed oil and the cooked potatoes. Using a fork or a potato masher, mash up the potatoes so they are chunky and sort of half mashed. Spread them out in an even layer in the pan and allow them to cook on one side for approximately 7 to 8 minutes or until the underside is golden and crispy. Flip the potato mash and add another tablespoon of grapeseed oil to the bottom of the pan, if necessary, and cook the other side for another 7 to 8 minutes or until golden and crispy. Watch the heat and lower to medium-low to prevent burning. Once the potatoes are done crisping, transfer them to your serving bowl and cover with foil to keep warm. 3. You can use the same pan for the tofu scramble, since there will be residual oil. Heat the pan over medium heat again, crumble the tofu in the pan, and add chopped mushrooms. Cook for 2 minutes. 4. Add turmeric, nutritional yeast, non-dairy milk, sea salt, and ground black pepper. Stir to combine well and cook for 3 to 4 minutes or until mushrooms are nearly done. Add spinach during the last minute of cooking, allowing it to wilt and soften. 5. Put tofu scramble on top of potato hash and add a dollop of your favorite salsa on top. Serve immediately.

PREP TIME: 25 minutes COOK TIME: 40 minutes SERVINGS: 4 wraps

DIRECTIONS INGREDIENTS Caesar Dressing (Makes 2 Cups) - 1 bulb of garlic - 1 teaspoon olive oil, for roasting garlic - Pinch of sea salt and ground black pepper - ¾ cup cubed medium or firm tofu - ¾ cup water - 2 tablespoons olive oil - 1 pitted Medjool date - 3 tablespoons lemon juice - 1 teaspoon lemon zest - 3 ½ tablespoons nutritional yeast - 1 tablespoon apple cider vinegar - ½ teaspoon Dijon mustard - 1 teaspoon sea salt - 1 teaspoon ground black pepper

Tofu Bacon Bits - ½ brick of firm tofu - ¼ cup low-sodium soy sauce or tamari - ¼ cup water - 2 tablespoons liquid smoke - 2 tablespoons maple syrup - 1 ½ teaspoons smoked paprika Caesar Salad Wraps - 2 teaspoons vegetable oil, for frying - 10oz unbreaded vegan chicken strips - 4 cups roughly chopped romaine lettuce - ¼ cup thinly sliced red onion - Sea salt and ground black pepper, to taste

1. Preheat oven to 425°F. 2. To prepare the bulb of garlic for roasting, peel the outer layers of the garlic bulb skin, leaving a thin layer still intact, and cut the top of the bulb off, approximately ¼ inch from the top, ensuring the cloves are visible. Place on a small lined baking sheet. Coat the top with olive oil, a pinch of sea salt, and ground black pepper. Bake for 25 to 35 minutes until the cloves are browned and soft. 3. Bake the tofu bacon bits in the oven at the same time as the garlic. Finely crumble the tofu into small bits or pieces with your hands into a mixing bowl. Add the soy sauce, water, liquid smoke, maple syrup, and smoked paprika. Stir to combine and coat all the tofu. Lay it out on a parchment lined baking sheet in an even layer. Bake for 25 minutes until browned and crispy. You may need to bake it for less time depending on your oven, and be sure to flip it once or twice throughout baking. Watch closely to prevent burning. 4. Place all the dressing ingredients in a high-powered blender along with the roasted cloves, which you squeeze out of the papery skin of the bulb and cloves. Blend on high until very, very smooth. Refrigerate the dressing until ready to assemble and serve. 5. Sauté the vegan chicken strips in a pan with vegetable oil over medium heat for 6 to 8 minutes until browned and cooked through. 6. Toss chopped romaine, red onion, and some dressing together in a large bowl until well coated. Lay out a portion of the salad onto a wrap and add browned chicken. Add sea salt and ground black pepper to taste. Wrap tightly and cut in half. Serve immediately.

Asian Noodle Salad with Edamame and Sweet Ginger Dressing

Ditch the takeout, and try this Asian noodle salad! It’s a healthier substitute for chow mein and loaded with edamame and a spicy ginger dressing.

PREP TIME: 20 minutes COOK TIME: 11 minutes SERVINGS: 4 salads

INGREDIENTS Sweet Ginger Soy Dressing - ¼ cup sunflower oil - 3 tablespoons unseasoned rice vinegar - 3 tablespoons water - 2 tablespoons sesame oil - 2 tablespoons miso paste - 1 tablespoon maple syrup - 2 to 3 knobs of peeled ginger Asian Noodle Salad - 1 cup frozen shelled edamame - ½ teaspoon sesame oil, (for edamame) - ½ lb (225g) chow mein noodles or rice noodles - 1 tablespoon vegetable oil, (for noodles) - 1 tablespoon + ½ teaspoon low-sodium soy sauce or tamari, (for edamame and noodles) - 10 cups lacinato kale, finely chopped into ribbons/shreds - 1 cup shredded carrot - 1 cup shredded purple cabbage - ⅓ cup finely chopped green onion - 1 red pepper, julienned - 1 cup bean sprouts - ¼ cup sesame seeds

DIRECTIONS 1. To make the dressing, combine all the ingredients in a blender until very smooth. Refrigerate until ready to serve the salad. It will keep for 4 to 5 days in the fridge. 2. Cook noodles in boiling water for 3 minutes or as per cooking instructions. Drain and set aside. 3. Cook edamame from frozen in a cast iron pan over medium-high heat in ½ teaspoon of sesame oil and ½ teaspoon of low-sodium soy sauce for 4 to 5 minutes. Edamame should appear toasted and browned, but still have some bright green color.

RECIPE NOTES

I also like adding some roasted kabocha squash if I’m having this for dinner. Just slice the squash and coat the slices in a bit of sesame oil, sea salt, and ground pepper. Place on a baking sheet. Bake in pre-heated oven at 425°F for 15 to 20 minutes or until golden brown and softened.

4. Remove the edamame from the pan and set aside. Keep pan on medium heat. Add the cooked noodles to the pan and toss with 1 tablespoon of vegetable oil and 1 tablespoon of low-sodium soy sauce, frying for 2 to 3 minutes. You might not need to add more oil depending on if there is some sesame oil residue still in the pan from cooking the edamame. Adding a little oil to the cooked noodles immediately after draining from the water will prevent them from becoming sticky if you’re storing leftovers for the week. 5. Mix the finely chopped kale with shredded carrot, cabbage, and green onion, then toss in 2 to 3 tablespoons of sweet ginger dressing. Only dress what you’re immediately eating. You can store the mixed salad without dressing in the fridge for the week. 6. Divide this mixture among your serving dishes. Top the greens with noodles, edamame, julienned red pepper, bean sprouts, and sesame seeds. Drizzle a little more dressing on top, if desired. Serve immediately.

VEGOUT: What advice would you give someone who wants to transition to a vegan lifestyle?

AR: When first ditching animal products, quinoa bowls were a staple for me. I’m big on prepping ingredients for easy and fast meal creations, so I would always have pre-made quinoa in the fridge ready to go. Pile on roasted sweet potato, steamed broccoli, chickpeas, greens, and a citrus tahini sauce for a [nourishing], yummy bowl! When I was on the go and needed to bring snacks along, I chopped up fresh fruit [and] added fresh mint and lime to make it extra refreshing.

AA: Seek out defense against misinformation in the form of documentaries, books, mentors, organizations, trusted resources, and friends, because these tools will strengthen the decision you originally made. It’s easy to succeed when we have a strong purpose, support system, someone to get ideas from, vent to, ask questions, go through uncertainties with, and most importantly, relate to, so we don’t feel alone on this journey.

Your Moving Medicine Forward Initiative aims to bring revolutionary ideas of disease management and reversal through plant-based nutrition and lifestyle medicine to medical schools across the country. Why is plant-based nutrition the missing link in the current medical school curriculum?

Many of our readers are interested in plant-based nutrition. While your initiative is geared toward medical professionals, what can our readers expect to learn from these masterclass sessions? What are some key takeaways from previous classes that they may benefit from?

How can our readers lead by example and promote their own health and well-being through preventative plant-based nutrition and lifestyle medicine?

The media has become a saturated source of nutrition information. While there is a lot of accurate nutrition data to be found, not all of it is factual. Which wellness trends and myths would you like to see disappear and why?

Modern medicine’s failure to recognize nutrition, in general, as a key determinant of health is a major deficit in the education of virtually every Western-trained physician. For many reasons, [chiefly] economic and political, [the medical community does not recognize the] role of the fast-food-heavy, Standard American Diet [SAD], laden with meats, dairy products, oils, sugars, and processing chemicals, [along with] restaurant meals, as the main driver of most degenerative diseases such as obesity, atherosclerosis, and type II diabetes.

In the introductory masterclasses, the concept of the “Red Tide” is introduced. [This refers to] the surge of disruptive chemicals, such as oxidized cholesterol, free radicals, advanced glycation end products (AGEs), endotoxins, Neu5Gc, and mutagenic aldehydes that pour through every cell, disrupting enzyme systems and damaging tissues throughout the body. In the various masterclasses, the student will learn how the SAD creates thrice-daily surges of the “Red Tide” that chronically damages various organ systems from blood vessels and gut lining to joints and the immune system. [Students will also learn] the mechanisms by which a whole food plant-based diet reverses these maladies.

Just because a food product is labeled “vegan” does not mean it isn’t filled with salt, sugars, oils, and processing chemicals, making it a “vegan junk food.” It is now evident that a diet heavy in these processed foods can produce vegans who are overweight, inflamed, and suffering from high blood pressure, type 2 diabetes, and a variety of inflammatory diseases. Basing each meal on minimally processed plant foods, like whole grains, legumes, nuts, seeds, vegetables, and fruits, will provide the body with the fuel that optimizes performance, reverses disease, and radiates health.

Trends I’d like to see disappear: paleo and ketogenic diets. These fantasy-driven eating patterns promote the consumption of fatty, flesh-laden foods based upon misinterpreted historical beliefs. [For example, the idea that] Paleolithic humans ate daily portions of mammoth meat and other flesh foods. [Additionally, these diets promote] distorted understandings of physiology, namely that dietary fats are the best daily fuel for the body. Diets based upon these beliefs seduce their adherents with juicy beef steaks and grilled salmon filets. Admittedly, [these foods] often produce initial improvements in weight loss and blood sugars, but ultimately open the door to clogged arteries, heart attacks, strokes, colitis, diabetes, and dementia—along with a ravaged planet.
