editor’s note

T

Bring on the Cat

They’re calling for last orders in kitchens across California. Restaurants are being shuttered faster than you can say “$14 martini.” Sad? In some cases, yes. I hate to see a good restaurant go down. But perhaps it is time for a thinning of the culinary herd. Before a couple of kids put the kibosh on our restaurant habit, my wife and I finished too many meals out with a synchronized sigh of disappointment. The bitter pill of humdrum food and lukewarm service. My signature gouged into yet another credit card slip. So do I mind when lazy dining rooms fall like soufflés in a thunderstorm? Not necessarily. I like to think it creates space for new and better tables to rise. When we go out nowadays we tend to stick to our old favorite restaurants. Time is precious and, like you, we just aren’t slinging money around in this economy. With the restaurant recession in full swing, what kind of entrepreneurial masochist dives headlong into an all-ornothing eatery? A concept restaurant, no less! A gobshite, that’s who. Or, if you’re to believe the title printed on his business card: “Chief Gobshite,” Brendan Searls, whose namesake Irish pub and restaurant in Camarillo (page 30) erases the soggy memory of Sizzler and brings a wee bit of Dublin to Daily Drive. Searls is a businessman, that much is clear—from his foray into video rentals to more recent ventures as a restaurateur. Though his passion is evident in the details at Brendan’s Irish Pub and Restaurant, it’s safe to say he’s confident the numbers will add up. Beyond the bottom line, though, Brendan and his partners hope to usher in a new perception of the dining-drinking experience. “Pub culture,” they call it, a concept largely absent in America’s 21-and-up dens of drinkers and mingling singles. A proper pub, you see, is not just a watering hole. It is a gathering place for folks young and old: families, children, serious drinkers, singers and dancers, conversationalists, poets, lonely men and women, romantics. At its best, the pub is a Switzerland of food and drink, a place where a cross section of society converges in all its differing opinions to hoist a pint and break bread under a neutral roof.

February 2011

The fact that an independently-owned theme restaurant/pub (Can an Irish pub truly be authentic outside of Ireland?) has replaced Sizzler’s assembly line feedbag version of the dining experience indicates a change of taste in Camarillo. On a recent evening, the parking lot was full; patrons lined up out the door. Once the novelty wears off, of course, quality will determine whether Brendan’s enjoys longevity or falls like an overheated soufflé in a curdled heap. But what does any of this have to do with February? Our cover story, an interview with locally-based matchmaker Julie Ferman (page 21), is more obviously linked to the Valentine’s Day theme, as is the aerial love story on page 15 and the flowery travel piece on page 28. It’s just that, well, I have a thing for Guinness stout, a love affair of sorts. And nothing represents the Irish pub or speaks to the passion of a nation like a creamy pint of the black stuff, that magical elixir whose proper pour is timed to the hundredth of a second, whose heavy sweetness and fuzzy embrace have made it the darling of drinkers for centuries. Yes, Irish pubs are fueled in part by conviviality and Jameson. And some say the blood of the Irish can be seen in a ruby-colored pint of Smithwick’s. But only Guinness can make a mouse roar: Some Guinness was spilled on the barroom floor when the pub was shut for the night. Out of his hole crept a wee brown mouse and stood in the pale moonlight. He lapped up the frothy brew from the floor, then back on his haunches he sat. And all night long you could hear him roar, “Bring on the goddamn cat!” — Matt mattk@ventanamonthly.com

Love From Above Romance takes flight in Ventura County

i

By Matt Kettmann Photos by Gary and Pierre Silva

If the chance to fly above the Santa Barbara Channel on the closest thing to a magic carpet wasn’t memorable enough, imagine proposing to your future wife while seated in a whirling helicopter, your proposal painted upon a billboard in your grandparents’ Carpinteria yard, all of your families gathered a couple hundred feet below to cheer you on in your brightest hour. “She can never forget that,” said Grant Hutchinson, the man whose New Year’s Eve day engagement plan for his girlfriend, Melissa Vickers, should go down in Ventura County’s archives de amor. “She’ll have a story to tell when people ask.” Not surprisingly, she accepted. Although perhaps the grandest love story yet, Hutchinson’s was nothing new for Channel Islands Helicopter, the Oxnard Airport-based company that was started in 2009 by Dan Casey as the region’s only federally registered chopper tour provider. There are plenty of sightseers simply seeking out the unparalleled views that Casey can provide of both Channel Islands National Park and the scores of whales that swim along the coast, but couples seem to

be a steady draw, as the short flight makes a perfect explanation mark to what could otherwise be a run-of-the-mill date. “We’re the only helicopter tour company going out there,” explained Casey, who studied engineering at San Jose State, got certified as an aircraft repairman and pilot by the Federal Aviation Administration (FAA), and moved to the area after running a successful chopper maintenance business in Burbank, where he watched helicopter tours crisscross the Los Angeles basin. Under the FAA’s license, Casey can take customers anywhere within a 25-mile radius, roughly from Malibu to Carpinteria and out toward Anacapa and the east end of Santa Cruz Island. He offers a number of trips, none of which are cheap, but all enhanceable with a $25 champagne boost. That option always becomes more popular in the month of February, when couples strive to do something special around Valentine’s Day. “Last year we had a red carpet, roses, and champagne,” said Casey, who nailed the carpet down to the tarmac. “Our customers loved the fact that we land right on the red carpet.”

Channel Islands Harbor resident Shane Savage was one such customer last year, when he took his wife and five-year-old son up for a Valentine’s Day flight. “She’s scared of heights but was absolutely thrilled to be on a helicopter,” said Savage, whose son loved it too, evidenced by a photo of the boy with headphones on and thumbs up. “It was a perfect day. The islands were absolutely gorgeous and it’s a totally different perspective being in the air and flying along the coastline.” It’s not hard to imagine why it was way better than the usual Valentine’s Day outing. “You can go out to dinner at a nice restaurant, but two to three years later, you completely forget about it,” said Savage, a corporate executive who actively volunteers for both the Bill of Rights tall ship and Casa Pacifica. “When you do something like this, you’ll always remember it. This was one of those cool things we did together and it was something that was completely different. Thirty years from now, we’ll still be saying, ‘That was fun.’” That’s pretty much the reaction that everyone has after taking a Channel Islands Helicopter flight, whether you’re a couple on the champagne boost or not. Even on the windiest of days, Casey says

February 2011

his “ship” is “one of the smoothest helicopters there is.” He gets most excited talking about his continual hunt for marine mammals from the sky, which has recently resulted in spotting orcas as well as the more usual gray, humpback, and blue whales. “Oftentimes, there are so many dolphins that they change the color of the water,” said Casey, who usually sees both whales and dolphins on his flights. “We can see the whole whale from above.” One day last year, when flying over a massive blue whale, Casey enthused, “It felt like we were flying over a submarine.” And then there are the jaw-dropping views of the Channel Islands, on display like never before. When Casey perches his chopper near the Anacapa arch, the views extend westward to Santa Cruz, Santa Rosa, and San Miguel islands, blowing even the best Inspiration Point photographs way out of the water. v Channel Islands Helicopters offers tours ranging from Surf & Whale (about 20 minutes, $350 for three passengers) to the Two Island Tour (40 minutes, $550 for three passengers). Relationship maker Julie Ferman talks romance in the 21st century By Andrea Kitay

More than 1100 and still counting. Marriages, that is. All thanks to Julie Ferman, the founder and CEO of Ventura County-based Cupid’s Coach. While getting a helping hand in the relationship department may not sound as romantic as the amorous missives sent by Saint Valentine himself, check your guffaws at the door because Ferman’s magic, according to thousands of singles for whom she’s found the “perfect partner,” is literally life changing. To get the skinny on just how Ferman gets the love lights to shine, we sat down with the confident, petite blonde for a crash course on love and dating in the 21st century. A member of the board of Matchmaking Professionals, Ferman— who has been a dating coach for more than 20 years—speaks nationally on the subject and has appeared on Dr. Phil, Kendra, and NBC’s new dating show, The Match Off. In 2010, the business she began from the ground up was awarded “Best Matchmaker” by iDate. 888

Above: Though they lived around opposite ends of the county—he in Thousand Oaks, she in Carpinteria—Doug Spellman and Trish Mickelson were an easy mark for Cupid’s arrow. Julie Ferman introduced them at a Valentine’s Day party in Westlake and the couple left hand-in-hand. They plan to marry soon.

VENTANA: How does Cupid’s Coach differ from popular online dating services like Match.com and eHarmony?

JULIE Ferman: Cupid’s Coach is a personal introduction company, which means we guide our clients through a careful process that includes screening them about who they are and what they are looking for in a match, providing counseling, and ultimately making recommendations on potential matches. We provide a wide array of services to help prepare our clients for their perfect partner, including relationship and personal coaching, etiquette lessons, image consultations, and even practice dates. If necessary, our image consultants will go so far as shopping with clients. We even offer guidance on how to have conversations with open-ended questions and how to comfortably, and graciously, end a date. With online dating sites, in which you are matched by a computer, you need to have a sense of humor and patience. And, of course, there is no guidance throughout the process. So people who are standing in their own way—emotionally,

| February 2011

intellectually, physically—will have a harder time being successful. As it turns out, nearly one-third of the people signed up on online dating sites are technically married. VEN: Is your business model similar to the TV show The Millionaire Matchmaker?

JF: I work closely with Patty Stanger from The Millionaire Matchmaker. The biggest difference in our businesses is that she only takes on male clients. They are typically well-to-do and looking for a younger woman, generally a 20-something along the lines of arm candy. Cupid’s Coach has both male and female clients, and our clients are looking for a different experience. In some instances when a better match can be made, we refer to each other. VEN: Are people today really unable to find their own partner?

JF: People still meet each other the old fashioned way, every day. Some have more success or luck with this than others. We’re here for the times when it’s just not happening on its own.

VEN: Who are your typical clients?

JF: First is the younger set: 20s and early- to mid-30s, those who have never been married and are mostly seeking marriage and family first time around. The second group is in the middle, usually 40s; some of the men are in their early 50s. They’re a maybe on having kids. Many have kids already, and most of them are undecided about having a kid or more kids. The “grownups,” as we call them, are 45+ and usually they’re done with having kids. They’re looking for companionship, someone to spend their later years with. One of my most successful clients is a 72-year-old woman. She’s a rock star with high romantic market value! She does everything right: she’s accepting, warm, never jumps to conclusions, and communicates her appreciation to her dates. She always has a second date to give the guy a chance. We find the easiest clients to work with tend to be in their mid50s to mid 60s and have a high RMV. VEN: What are some of the greatest challenges your women clients face?

JF: Most of us can’t see our own challenging issues in relationships, so

He dated no one after her. They got married, are still together, and he has since referred both his son and his ex-wife to me. VEN: So when it comes to relationships, you’ve found there are profound differences between the sexes.

JF: Men are very, very visual and really need to be attracted from the beginning in order for a romance spark to be ignited. Women have a much greater ability to develop attraction over time, even if she’s not initially drawn to his looks. If she respects him, feels comfortable with him, and feels appreciated by him, he can actually grow on her. Women are often looking for security and humor. One thing both men and women need? Appreciation and respect. VEN: What is the biggest “no-no?”

JF: Intimacy. No sex before monogamy. VEN: That must create quite a stir. How does that go over with your clients?

JF: Most clients are here as referrals, so they know what they’re getting into. We also explain why we are serious about this, that oxytocin, the bonding hormone (the same one women produce during nursing), is

“The kiss of death in dating is a sense of entitlement and not being appreciative. This is a huge problem for women with their own money and good looks.” part of our process is to enroll all of our new clients in our coaching guru Alison Armstrong’s courses. We call her God’s Gift to Dating. We provide the “Celebrating Men, Satisfying Women” weekend workshop for most all of our female clients. There’s a panel of men onstage at the end, and the women get to ask questions. That’s a really special part of the weekend workshop. The kiss of death in dating is a sense of entitlement and not being appreciative. This is a huge problem for women with their own money and good looks. Another problem is taking things for granted. Men are really turned off when they aren’t appreciated, even for the little things. VEN: And the men?

JF: Men operate differently. They can rule out someone who might be the perfect match on the basis of a photo. Jack is a case in point. He had 20 or so introductions before I put him and a particular woman—whom he had previously declined based on her photo—I felt would be perfect in the same room together. I made the introduction and left them to talk.

stronger in women than men, and lasts longer. I have never had a call from a woman Monday morning saying, “I wish I had slept with him.” VEN: What’s one of the strangest matches you’ve made?

JF: A man and his ex-wife came in together with the goal of finding her a partner so he could stop making alimony payments. When the match was made, he presented us a bonus check equal to three months of alimony payments. VEN: Tell us a story with a happy ending—a local love story.

JF: Patricia, “Trish,” from Carpinteria, was my client. Doug, from Thousand Oaks, was privately registered with me but wasn’t an active search client. I recruited him to participate in our matchmaking community and he had attended some of our social mixer events. They both attended our Valentine’s party several years ago in Westlake Village and I took the opportunity to introduce them. They sat together all night and left hand-in-hand. Now they’re engaged and planning their upcoming wedding! It makes me so happy when this happens. v

On the Blossom Trail

B

This spring, take your sweetie on a walk in the wildflowers—because sometimes a dozen roses isn’t nearly enough By Alan Kandel

Beyond the mountains that separate California’s coast from its interior lies an unassuming yet vitally important agricultural region: the San Joaquin Valley. Travelers won’t find much in the way of metropolitan appeal out this way, and of course there are no Ventura-style beaches. But those in the know recognize the Valley’s rural charm. Eight distinct counties comprise the San Joaquin Valley, with Fresno topping the list in terms of agricultural production. One of Fresno County’s sweetest offerings—in addition to the raisins that make it America’s “Raisin Capitol”—is a 62-mile loop of vivid colors and sweet aromas known as the Blossom Trail. In late winter and early spring, the Trail affords visitors a uniquely breathtaking attraction, as thousands of acres of orchards, citrus groves, vineyards, and rangelands come to the peak of their florescence. And much of the spectacle is set

against the picturesque backdrop of the snowcapped Sierra Nevada Mountains. Simonian Farms in southeast Fresno, at the corner of Clovis and Jensen avenues, is the unofficial starting or finishing place for both the Blossom Trail and the Fruit Trail, the latter of which occurs later in spring. “You can gain knowledge of the Trail, pick up snacks, and start your trip with an interesting view of history and agriculture,” explains Stacey Grote, Simonian Farms’ operations manager. “Or, you can end your trip here and pick up souvenirs. To cap off the experience, there are antique farming implements, including tractors, scrapers, antique horsedrawn plows, and traditional steam tractors.” (You’ll also find a nice assortment of regional food to nibble on or take home.) Circumnavigating the Trail loop, one follows a meandering but easy to follow route through verdant rangeland—much of which hugs the scenic Kings River—

rocky and rolling hill country, small backcountry towns, and urban settings. Pamphlets with maps and strategically placed signs dot the Trail, helping to guide everyone from hardcore trekkers to busloads of casual sightseers. Places of interest along the way include Hillcrest Tree Farm in Reedley, where train rides are offered on the Hillcrest & Wahtoke R.R.; Luke’s Almond Acres, where nut lovers will find a captivating collection of almond blossoms; the Cash Store in Minkler with its display of antique retail history; and the nearby town of Kingsburg, where Swedish culture abounds. The Blossom Trail is by no means all the San Joaquin Valley has to offer. But for Ventura County residents it provides a good taste of the region, a reminder that the hinterlands to the northeast possess a magic of their own— and it’s practically in your backyard. v

it’s about blooming time! Though weather-dependent, the Blossom Trail is typically at its best in early March. For updated information, log on to goblossomtrail.com or call 559-600-4271.

TABLE TALK

Pouring the Perfect Pint

Before the first creamy sip and subsequent quiet numb there is an art to pouring Guinness stout. At a new pub in Camarillo, the passion of the Irish—with all its ritual, theater, and frothy reverence—finds a home. Dilettante bartenders need not apply

T

BY MARK STORER PHOTOS BY JIM RUSSELL THERE IS AN IRISH BLESSING that is, perhaps, less blessing than wishful thinking: “May you have older whiskey, younger women, faster horses, and more money.” While it is a decidedly biased blessing, it does put into focus the perception most people have of Ireland. It’s a quaint and green little isle kissed by sea breezes and damp fog, warm fireplaces, and pubs dotted with colorful characters who will talk your ear off if given a chance. It’s not a myth, either, at least to hear Brendan Searls tell it. “It’s what’s missing in America,” said Searls over a Black and Tan, a heavenly mixture of Guinness and Smithwick’s beers, watching his staff go through their paces at his namesake restaurant and pub in Camarillo. “There’s a culture in a pub. It’s not a bar, it’s a community,” he said. “In America, our young ones can’t go into bars. There’s no community in there. We’re bring-

ing back a dead art.” In short, American bars don’t wish blessings upon their patrons. At Brendan’s Irish Pub and Restaurant, a converted Sizzler restaurant that opened last month, they adorn the walls, along with myriad other Old Country accents. Designed by Searls and a cadre of local craftspeople, the place offers a taste of Dublin on Daily Drive, right here in Camarillo. It might be a sunny Southern California day outside, but inside Brendan’s it’s dusky and cool, and the fireplaces are warming. American bars, according to Searls and his bar manager, Michael Delahunty, also an Irish immigrant, don’t inspire passion. Here, passion is evident in the details: including nearly 10,000 stone pieces hand-placed by another local Irishman, Bobby English, a master stonemason. as a canvas for Ventura artist MB Hanrahan, who painted an original rendition of an Irish pub. The only thing missing is… well, Ireland. “I’ve been pouring Guinness since I was 12,” said Delahunty. If Searls has an Irish accent, Delahunty has a dialect. Three is pronounced “tree,” pub is “pobe,” and Guinness is “Gennis.” At times, I’m not entirely sure what he is saying until he slows down, seeing my confusion. “That’s the beauty of Gennis,” he said. “The slow pour of it and the creamy texture. It’s not a beer, it’s an experience. It’s the Irish experience.” The Irish experience is what Searls and Delahunty are selling at Brendan’s, what Searls calls “Irishness.” And nowhere is that Irishness more visible than behind the bar, where some 200 whiskeys are offered alongside a fine selection of beers, of which the crown prince—of course—is Guinness on tap. According to both Searls and Delahunty, Guinness is a symbol of what pub culture is all about. They mix the 75 percent nitrate and 25 percent CO2 on premises, and every pint takes nearly two minutes to pour. The mixture is vital to the creamy texture and the “crown” that develops on the glass. They insist I try to pour one. “It’s a process,” Delahunty explained. “It’s a vital thing; the Gennis has to rest a bit, and it has to work a bit.” The process goes like this: a glass is pulled and checked for moisture. Any water inside it will ruin the Guinness. “It’ll destroy the crown, and you need the crown,” said Delahunty. The glass also needs to be at room temperature. Brendan’s uses glasses similar to a Guinness pint glass and the Brendan’s logo, an Irish harp, is situated in just the right spot. “You aim for the harp,” said Delahunty. “But don’t touch the nozzle to the glass. Just let it go right above.” And then, you pull the lever. “You pull hard, all the way down,” said

Delahunty. I do and the beer drapes the glass in a curtain of inky blackness, steadily forming the foam head. The bubbles migrate first to the top, then down the side of the glass. A creamy texture forms. “You don’t buy a Gennis, you earn a Gennis,” said

as I like to call it. It takes 119.53 seconds to pour a pint. But it’s a valuable 119.53 seconds,” he said. That’s the time during which Delahunty gets to know his guests. “That’s what you do in a pub. I love that people are here for so many different reasons. I want to find out what

“Give me the time and I’ll walk trew your door. But only so far. I don’t want to stay in there forever, just enough to get to know you a bit.” – Bar Manager Michael Delahunty Delahunty. “When I pour one, I want to make my guests feel like they’ve earned it—and they have.” At tree-quatters full, I stop the tap and pull the glass. “Now, we have to let it rest,” said Delahunty. He puts the glass carefully on the bar and we watch. “It needs to cook,

we all have in common,” said Delahunty. “I guarantee I can find it, too. Give me the time and I’ll walk trew your door. But only so far. I don’t want to stay in there forever, just enough to get to know you a bit,” he said. “That’s the pub culture, and I haven’t seen it in America until we

Opposite, top to bottom: The bar at Brendan’s wraps around an island of Irish spirits, but nothing speaks to the Irish pub experience like a properly poured pint of Guinness stout. Above: The restaurateurs tooled around the Old Country gathering charms to adorn their Camarillo establishment. Local stonemason and fellow Irishman Bobby English laid nearly 10,000 stone pieces by hand. The end result: a “super pub,” and a convivial atmosphere that inspires more than mere drinking.

opened Brendan’s. Now it’s here.” We watch, along with pub guests (Searls refuses to let his staff call them customers), as the Guinness does something most other beers don’t do: the creamy foam head forms as tiny white bubbles flow and float downward into the glass, not up. “That’s the magic,” said Delahunty. When he deems the time right, I take the glass back in my hand. “Now, you’re going to push the lever back instead of pulling it down. Only this time, slowly, and top off the Guinness,” he said. I do, and it is harder than it looks. But my training has not been in vain, and as the creamy foam builds, condensation begins forming on the outside of the glass and the cellar temperature pint forms a crown that hovers above the rim of the glass while not dripping down on the side. Searls gives me a grade of 85. “Not bad for a yank,” he said. I drink down my pint with gusto. “You don’t sip it, you drink it,” said Delahunty, exclaiming “Slainte,” a Celtic toast. Camarillo seems to agree. On opening night, January 15, the pub served more than 500 people. For the two hours I spent with Searls and Delahunty, the place never emptied. Nearly every seat was full. “It’s just like home,” said Delahunty, a native of Ireland’s County Leiche. “We have a saying that there are no strangers in a pub. And that’s what we’re doing here. There are no strangers here.” v Brendan’s Irish Pub and Restaurant 1755 E. Daily Dr., Camarillo 805-383-4100, brendans.com

all lit up I purchased this pair of gems from one of the leading gem cutters of Idar-Oberstein, Germany, Paul Wild, many years ago. It was originally intended to be a ring, but I couldn’t do “just another round ring” with them. So they sat. I finally got them out of the safe a bit ago and started working on ideas for rings or pendants. But they didn’t work. When I was recently looking at the cantilevers used in MidCentury Modern buildings I hit it! This pair of earrings hang straight and balanced because I’ve adjusted the centers of gravity perfectly. The stones are a faceted “Cherry” opal and a blue topaz that are matched and small Ideal cut diamonds. “We don’t copy what’s new, I create what’s next!” —Bob Lynn
