APPELLATION: OAK VIEW

There’s a stack of ordinary white boxes to my right. They’re labeled, “Next of Kyn,” an apparent misspelling that is, I assume, intentional. Everything Manfred Krankl does is intentional. At least I think it is; I’ve given up trying to figure it out—“it” being his artistic approach to winemaking and wine marketing. Whatever it is, though, it works. We’re inside Manfred and his wife, Elaine’s spotless new winery overlooking Lake Casitas, a place better known for largemouth bass than big syrah—or in the case of Next of Kyn: a cuvée of 92 percent syrah, six percent grenache, and two percent roussanne. This is the first bottling of the wine, made here in this contemporary facility from grapes grown right outside. In Oak View. The entire batch sold out in less than three minutes. Bordeaux, Napa, Rioja… Oak View. Sounds funny, I know. One doesn’t normally think of Oak View in terms of terroir. Yet wine lovers around the world snapped up the 2007 vintage in a supernova of online consumerism. And who’s laughing when the cost of one of these boxes—each containing three 750-ml bottles and one 1500-ml magnum—is $1,100? (One buyer promptly flipped his on eBay for a cool four grand.) We devoted a few pages and a cover to Manfred Krankl and his Sine Qua Non wines in the December 2007 issue. Here, beginning on page 36, he’s part of a larger story about the current state of winemaking in the Ojai Valley. And any such discussion comes back to one man: Adam Tolmach, who started The Ojai Vineyard in 1983 when you could practically count all the wineries in Ventura and Santa Barbara counties on your fingers and toes. But it’s not Tolmach’s longevity that’s set him apart. Quite simply, it’s his wine: nuanced, delicate, balanced wines that have earned him a stellar reputation among vintners and wine aficionados. To be sure, Adam and Manfred are bound by mutual respect and the respect of their peers, yet they couldn’t be more different: the cult hero artist and the quiet genius, working a stone’s throw from each other in an unaffected little town where the corner market is called The Corner

Market and bills itself as a purveyor of “THE BEST BEEF JERKY.” Well, welcome to Oak View 2011—where world-class wines join world record bass. We’ve got plenty of other characters in the pages ahead, but I keep coming back to the intriguing contrast of these two: Tolmach, the quiet yin to Krankl’s sonic boom yang; Krankl’s famously huge, luscious Rhône-style reds and Tolmach’s elegant, refined products. Manfred, a fabulous artist, designs his own labels with sly, somewhat dark artwork and names like “Imposter McCoy” and “Poker Face.” Tolmach, on the other hand, goes with “Ojai White,” acknowledging on his website, “OK, I’ll admit it. The name proves I am not a marketing genius. But what a wine!” Yes, what a wine. That’s what it all ferments down to. Beyond the personalities and marketing approaches, both of the main characters in our cover story are out to catch lightning in a bottle. And more than ever, they are looking to do so with grapes grown in the Ojai Valley. The Johnny Appleseed at the root of most of the vines, by the way, is a viticulturist named Martin Ramirez (vineyardsofojai.com), who has planted more than 15 vineyards throughout the Valley, though not the Krankls’. The surge of vineyards in one of Ventura County’s most picturesque settings could well spark the interest of wine country tourists. I’ve been to celebrated appellations around the world: Bordeaux; Napa; Stellenbosch, South Africa; Maipo Valley, Chile. And of course closer to home in Santa Barbara. One thing these places have in common, beyond great wine, is Arcadian scenery—namely, grape vines. Not just winemaking facilities. They’ve all got fine dining, too. Which reminds me that I’ve neglected to mention food in this note. (For a toque-worthy taste of summer, see page 18.) But now it’s closing time; I’m coming to the end of the page. Casa Pacifica Angels Wine & Food Festival Cal State University Channel Islands, Camarillo Showcasing the culinary creations of restaurants and caterers from Santa Barbara to the Conejo Valley, as well as wineries, vineyards, and microbreweries from all over California, the 18th annual Festival raised more than $300,000 for Casa Pacifica, a Camarillo-based organization that provides help for abused, neglected, or at-risk children and families in Santa Barbara and Ventura counties. Our watermelons are all grown at California farms.” TOMATO GAZPACHO WITH RED AND YELLOW WATERMELON PICO DE GALLO (serves 4) Tomato Gazpacho 10 roma tomatoes halved 8 garlic cloves ¼ cup apple cider vinegar 1 seedless cucumber 1 poblano chile 1 tbsp Sriracha (Thai chile sauce) Salt and pepper 2 cups extra virgin olive oil Place all ingredients except olive oil in a container and blend with buerre mixer until well combined. Puree small batches of mixture in Vita-Prep, drizzling olive oil as you puree. Strain through a fine chinois and chill.

“Heirloom tomatoes can be used in so many things and are very sturdy. They are the quintessential California fruit and Ojai’s environment is perfect for growing them.” HEIRLOOM TOMATO SALAD WITH GREEN GODDESS DRESSING AND TORN CROUTONS (serves 4) Green Goddess Dressing 1 avocado 1 bunch of basil 1 bunch of tarragon 2 tsp lemon juice Here at the Ojai Valley Inn we make a Caesar salad dressing from organic free-range eggs and use that as our base for the Green Goddess dressing. Since making a Caesar dressing for four is a bit ambitious for most home cooks, we’ve substituted our Caesar base with your choice of premium, all natural prepared dressing. Simply pour the dressing into a food processor or blender, add herbs and skinned and deseeded avocado, then blend until smooth. Adjust the seasoning with salt and lemon juice and keep cold. Torn Croutons Day-old focaccia or olive bread 2 tbsp extra virgin olive oil Corse sea salt Using your fingers, pinch and pull small pieces of bread from the loaf and toss them with olive oil in a mixing bowl. Lay them out flat on a sheet pan and bake in a 300-degree oven until they are dry and crunchy. Tomatoes 3 heirloom tomatoes of differing varieties Coarse sea salt Cracked black pepper Sherry vinegar 2 cups burrata mozzarella cheese Just prior to serving, use a sharp knife to cut each variety of tomato into a different shape. There are no rules here; be creative and have fun. In a stainless steel mixing bowl, toss the tomatoes with a small splash of sherry vinegar and season with salt and pepper. Plating Spread a generous amount of dressing on four plates. Place the tomatoes as you like on top of the dressing and spoon the buratta, alternating between the tomato slices. Place the croutons where you like. Garnish with a sprinkle of coarse sea salt and a drizzle of extra virgin olive oil. For smaller meals, they are great smashed up and used as both an acidifier and an emulsifier for dressings. They taste kind of like key limes with a hint of lime leaf.” FRIED GREEN TOMATOES WITH DUNGENESS CRAB, SOUR PLUM AND DAIKON SLAW, AND FINGER LIMES (serves 4) I gathered the produce for this recipe from my Camarillo garden, but you can find most of the ingredients at local farmers’ markets. The McGrath Family Farms stand in Camarillo has a good inventory of coriander. Finger limes are available in limited quantities from two Ventura County farmers: Dave Pommer, Ventura Farmers’ Market (order them a week in advance); and Jim Churchill, Ojai Farmers’ Market. Tomatoes 2 cups pomace olive oil (not extra virgin) for frying 4 small-medium-sized (smaller than your palm) green tomatoes, such as roma or globe ½ cup cornstarch ½ cup yellow cornmeal 1 egg Kosher salt, cayenne pepper, freshly ground black and white pepper Heat oil in an enameled cast iron pot over medium heat until it is about 350 degrees. Meanwhile, slice the tomatoes into ¼-inchthick rounds (if using romas, slice lengthwise) and set aside. You should get about 3-4 slices out of each tomato. Put cornstarch into a small bowl, season with salt and three peppers. Put cornmeal into a small bowl, season with salt and three peppers. Break the egg into a small bowl, add a splash of water and whisk until the mixture is homogenous. Toss tomatoes into seasoned cornstarch. Dust

off excess starch and put tomatoes into the egg wash. Coat each tomato in egg, making sure there are no dry starchy bits showing. Remove tomatoes from egg, shake off excess and toss into corn meal. Thoroughly coat tomato slices in corn meal, then put a single layer of tomato slices into pot of fry. (You will probably have to fry the tomatoes in two batches.) Fry the tomatoes on one side for about 3 minutes. Flip them over and fry for another 2-3 minutes or until golden brown. Remove tomatoes from oil with a slotted spoon and place on a paper towel-lined dish. Sprinkle immediately with kosher salt to taste. If you have unfried tomato slices, repeat with the rest of the tomatoes. Keep warm in a low oven (about 250-300 degrees) until ready to serve, but no longer than 12 minutes. Dungeness Crab Salad ¾-1 cup picked dungeness crab meat 2 tsp mayonnaise 1 tbsp chopped coriander leaves “Caviar” of 1 finger lime, squished into a paste Mix ingredients in a small bowl. Keep refrigerated until ready to serve, up to 1 day. Sour Plum and Daikon Slaw 2 small, unripe but red Santa Rosa plums cut into 1/8-inch-thick half moons 2 inches daikon radish: outer 1/8-inch discarded, the inside cut into fine julienne 2 tbsp extra virgin olive oil Caviar of 2 finger limes, squished into a paste (or use the juice of 1 key lime) Pinch of granulated sugar Pinch of kosher salt Mix all ingredients together and refrigerate until ready to serve, up to 1 hour. Assembly Put 1 green tomato slice on each plate. Top with a little bit of crab and put another tomato slice on top of the crab. Don’t worry about stacking the tomato slices perfectly; the dish looks more beautiful when soulfully arranged. Put a little crab salad on top of or near the second slice of tomato, then place a little sour plum and daikon slaw next to the tomatoes and crab. Squeeze a fair amount of “caviar” from 4 finger limes and place it on top of the crab salad. Sprinkle the plates with fresh herbs and edible blossoms (chive flowers, frisee flowers, coriander flowers and green seedpods, tiny basil leaves) and serve. “Pea shoots (also known as pea vines, pea tendrils, and pea leaves) are very versatile and fresh. You can use them in many different ways, and they seem to work with almost everything. You will never find them frozen; they are always fresh during the summer. They add so much vibrancy to my dishes. I just love using them.” PAN-SEARED SEA BASS WITH BUTTERNUT SQUASH MASH, CRIMINI MUSHROOM CONFETTI, WARM PEA SHOOTS, AND PASSION FRUIT CREAM SAUCE (serves 4)

Butternut Squash Cut a butternut squash cut in half lengthwise. Drizzle each half with olive oil and add salt and pepper to taste, then cook at 350 degrees for 1 hour or until soft. When soft, scoop out the flesh and season to taste. Mash until desired consistency is reached. Keep warm for later use. Passion Fruit Cream Sauce Prepare while squash is cooking. In a saucepan, combine the following ingredients, reduce mixture by half and season to taste. 2 tbsp passion fruit puree 1 cup orange juice 1 cup manufacturing cream Salt and pepper to taste

Crimini Mushrooms ½ lb crimini mushrooms 2 of each: red, yellow, and green bell peppers 1 tbsp chopped parsley ½ large carrot, peeled 2 tbsp olive oil Salt and pepper Dice ingredients and sauté in olive oil. Add salt and pepper to taste. Pea Shoots Cook, steam, or sauté as you prefer.

Sea Bass 4-6 oz fresh sea bass filets Salt and pepper to taste 2 tbsp olive oil

Assembly On the center of the plate, add butternut squash. Around the squash, arrange wilted greens. Place the fish atop squash, then top with mixed vegetables and the passion fruit cream sauce.

Heat olive oil in a sauté pan and add sea bass filets. Cook each side for about 2-3 minutes over medium-low heat.

Offering more than a quick caffeine fix, the local coffee house is a social institution—and the increasingly rare site of interpersonal communication in an online world

“THE POUR-OVER METHOD, that’s the best way to do it,” says Mike Colston, inserting a filter in a single-cup holder and reaching for the Ethiopian beans. “Coffee made cup-by-cup from freshly roasted beans is something to be appreciated and savored, like fine wine.” The customer, standing at the counter in Element Coffee Lounge, Colston’s coffee house in Camarillo, watches as he drips a bit of water over the grounds, just enough to wet them. As the moisture spreads, a rich aroma with a hint of fruit wafts upward, the promise of a startling sensation. He pauses then pours the rest of the cup. “This is the moment when a customer discovers that a cup made this way tastes nothing like coffee you buy at Starbucks or the Coffee Bean,” he says. Colston, immersed in the arcane minutiae of coffee flavors and origins, is a man of parts, as complicated as the coffee he sells. “Once I began to learn about coffee, I had to do it with excellence,” he tells me. But it wasn’t coffee that drew him to this storefront location in Old Town Camarillo. “My passion began with the coffee shop culture,” he says, “an inviting alternative to home, office, or school, a place where people can relax and meet friends, or sit in a corner and read. We’ve got sofas and chairs where people can talk, or use their laptops or play checkers. Book clubs come in occasionally, and so does a knitting group.” Coffee houses are nothing new, of course. A fixture in urban centers, the corner chain store works for a quick cup of joe and yesterday’s muffin. But Ventura County’s independent coffee houses are as beguiling as their coffee. Here among the lemon groves and strawberry fields, where plowed earth and steep hills divide neighborhoods, coffee houses are like fly paper; they bring people together. “It’s a community melting pot here,” says Rick Stewart, co-owner of Palermo, a popular coffee house in Downtown Ventura. “We get hundreds of customers every week, everybody from students and shoppers to business people and retirees. Some people stay for a few minutes, some for hours.”

When Stewart leased the space ten years ago Palermo was an interior design and furnishings store with a coffee bar. Now it’s a full-fledged coffee house, with a tiny gift and greeting card corner and a partnership with a local roasting company. In a busy week, Palermo grinds up to 250 pounds of fresh-roasted beans, brewing coffee all day in four-cup drip pots. Our customers are looking for that one-on-one experience,” says Jennifer Wheir, the manager. “Small independent guys like us can take the time to create a personal atmosphere, the kind of environment where people can connect.” A self-described purist who prefers her java black, Wheir says her current favorite bean is “La Flor,” from Guatemala. For latte lovers, she recommends Palermo’s two best sellers: “the Viennese,” whose secret recipe includes vanilla and a hint of cinnamon, and “the “Buddy,” a half-chai, half-coffee latte. Also in Palermo’s cornucopia of goodies look for frappacinos, horchatte, hot chocolate, and lemonade, as well as bagels, croissants, sweet rolls, brownies, and cheesecake. The gelato wins rave reviews. Just inland from Palermo, on Highway 33 midway between Ventura and Ojai, the brightly colored façade of Full of Beans invites passersby and regular patrons to linger over a cup. Out back there’s an art-filled garden patio where musicians play and local groups from teachers to paramedics gather. “Motorcycle-friendly, bicycle-friendly, and dog-friendly,” the coffee house also offers a “horse-friendly” hitch out front, as if to say, Welcome to the Ojai Valley. (FOB was located on Seaward Avenue in Ventura, near the beach, for nearly two decades.) Unlike most other local coffee houses, Full of Beans is set away from the street, and on warm summer evenings with the patio festooned in twinkling lights and a guitarist softly strumming, the setting has an undeniable magic. The Ojai Coffee Roasting Company, in the heart of Downtown Ojai, started small, roasting beans for their own use. But this was a coffee town, ripe for a community hangout and a cozy café. Today owners Kent and Stacey Jones share the honors, Stacey creating the menus and Kent roasting the beans, supplying fresh-roasted coffee to local B&Bs, restaurants, and, more recently, Whole Foods. “People use this place for everything,” says Kent. “Meetings, lunch with friends, even as a home office. My daughter and her friends do their homework here after school, and I give them a discount. She calls it ‘the half-price homework hangout.’” Like all roasting companies, Ojai Roaster buys green beans in bulk because they have an exceptionally long shelf life. But once roasted, the flavor degrades. “In the first week, the coffee is amazing. In the second week, it’s superior. Older than two weeks, and your coffee will be lackluster,” he says. “Come in and see what real coffee tastes like.” It’s a promise. v

The Grapes of Shangri-La Two decades after a disease decimated the region’s vineyards, a growing cadre of winemakers is again asking the question, “Can the Ojai Valley become a world-class wine growing spot?”

Thirty years ago, the future of wine grape growing in the Ojai Valley was almost blindingly bright. Old Creek Ranch Winery had planted about 20 acres of cabernet sauvignon, merlot, chardonnay, and sauvignon blanc while, across San Antonio Creek, a young UC Davis-educated winemaker named Adam Tolmach decided to plant five-and-a-half acres of syrah and sauvignon blanc on land his grandfather purchased in 1933. “There was good potential,” recalled Tolmach of his first vintages in the mid1980s. “Some turned out quite well.” But in the early 1990s, both Old Creek and Tolmach’s Ojai Vineyard were being strangled by a vine-suffocating louse known as Pierce’s disease, and the hopes for Ojai Valley as a world-class wine region were nearly dashed on the wings of the sharpshooter bug that spread the plague. Though his property’s last harvest was 1995, Tolmach managed to keep the Ojai experiment alive by suggesting two years earlier that a vineyard of syrah be planted upon the Roll Ranch in Upper Ojai, far away from the creek beds where sharpshooters preferred to hang out. The pests didn’t come, and the syrah grapes grew as they should in a warm climate: full of juicy, fruitforward goodness, but with enough balance to make excellent wine. “There’s something magic about the Roll,” said Tolmach, who’s gone on to

become one of California’s winemaking legends, in part for his Ojai gamble but mainly because of the cooler climate wines he sources from Santa Barbara County. “We are able to catch all of that exuberant fruit before all of the acidity is gone.” Such disease-free, award-winning success over the past 15 years at Roll Ranch has steadily inspired others to plant grapes in the Ojai Valley, and today there’s even talk of petitioning the federal government to list the region as its own appellation. It’s still way too early to declare Ojai the next Napa—or even the next Westside Paso Robles, which more closely mirrors its warmer growing conditions—but with six commercial vineyards now in production and a dozen or so more popping up with regularity in backyards from Casitas Vista to Dennison Grade, it might not be too long before tourists and locals alike start thinking seriously about tasting rooms and vineyard tours in this already epicurean-minded corner of Ventura County.

R

oll Ranch may have never blossomed if it weren’t for Martin Ramirez, the day laborer-turned-viticulturist who Tolmach calls “a genius with the farming.” But it’s 100 percent certain that the current Ojai Valley vineyard explosion would have never sparked at all if it weren’t for his Johnny Appleseed-like role in planting grapes throughout the region. Ramirez, meanwhile,


attributes the proliferation of local vines to Tolmach’s success. “Everyone wanted to grow grapes for Adam’s syrah,” he said. “That was the dream.” As owner of The Vineyards of Ojai, Ramirez—who took over at Roll in the mid-‘90s—has planted and cares for more than 15 Ojai vineyards, from small backyard plots of private homeowners to the certified organic vineyard of syrah, grenache, semillon, and viognier grapes at Casa Barranca. (He’s actually spread the vineyard trend to backyards in Camarillo, Agoura Hills, Carpinteria, and other spots as well.) “What we find with the grapes here in Ojai is that they are really fruity because of the warm weather,” said Martinez, who’s constantly expanding the region’s palette of varietals, from the known Rhônes (syrah, grenache, viognier) and popular Bordeauxs (cab, cab franc, sauvignon blanc) to riesling, nebbiolo, sangiovese, barbera, and tempranillo. “We’re trying a lot of different stuff, and leaning toward Italian grapes because they tolerate heat and hold their acids very well,” said Ramirez, who is also seeking to start his own winery with his friend Bruce Freeman. The winery, called Clos de Amis, or “Circle of Friends,” will source from the numerous vineyards he manages around town. The folks at Noble Oaks, located near the Ojai Valley Inn, are also exploring slightly more obscure varietals. “Originally it was just a malbec vineyard,” said Anne Cuthbert of her family’s one-acre plot that was planted in

2002, “but two years ago, we decided to switch some of it over to tannat.” Her dad, John Cuthbert, a retired mechanical engineer, quickly admits it’s an unusual grape, but one of the most intense reds available. “Not many people have had it,” he said. “But once people try it, they’ll like it.” The Cuthberts are also leading the charge to get the Ojai Valley listed as its own American Viticultural Area, or AVA, which is federal-speak for appellation. The application is about 90 percent done, but no one’s sure what the government will do. “Until you submit,” said the elder Cuthbert, “you don’t know how they’re going to react.” “We’re definitely supportive of the Ojai Valley AVA,” enthused Ojai Ridge owner Mark Dufau, who planted six-and-a-half acres of syrah and cabernet sauvignon atop 1,400-foot-high Sulfur Mountain in 1999. “It’s great syrah country. It has a lot of potential to be a destination for wineries.” A third generation Ventura County resident whose dad is a farmer from Oxnard, Dufau uses only Ojai grapes for his wine and says the results are consistently nice each year. “If someone wants to taste something that’s truly locally grown, try us,” said Dufau, noting that other winemakers tend to source grapes from other regions as well. “That’s how we really distinguish ourselves from the rest of the people making wines in the county.” Although perhaps best known for Boccali’s Pizza & Pasta restaurants in Ojai and Oak View, the Boccali family has been in the agriculture business for 60 years, and started their vineyard operation in 2003 by ripping out their yuletide crops. “We basically got out of Christmas trees and put in wine grapes,” said Joe


Boccali, who makes the wine that his dad, DeWayne, grows beneath the Topa Topas, including syrah, cab, zinfandel, viognier, and grenache blanc. It was no surprise to the Boccalis that the grapes are doing well, for the property was home to a vineyard from the 1890s until it petered out after Prohibition. “The original homesteaders of the land knew what they were looking for and it worked for them,” said the younger Boccali. But best of all, they can now serve their homemade wine to the masses who have come to love their home-style food. “We’ve always been local farmers, and people are finally starting to realize that locally grown is as important as organic,” said Boccali. “We’re excited to be able to taste wines that are truly from Ventura County.”

P

robably the most promising thing about grape growing in the Ojai Valley is that it’s home to one of the modern wine world’s most worshipped icons—Manfred Krankl, whose limited production Sine Qua Non wines have attracted a cult following around the world. The Austrian-born former Los Angeles restaurateur had been making wine out of a dusty warehouse on Ventura Avenue since the 1990s, and recently completed a stunning, contemporary-styled winery on the 205-acre ranch next to Lake Casitas where he and his wife, Elaine, have lived for nearly two decades. The June 2010 cover boy of Wine Spectator magazine whose ridiculously sought after wines sell for hundreds of dollars, Krankl planted six acres of syrah, grenache, and rousanne on his Oak View property in 2004, adding another six or so acres of mourvedre, petite sirah, touriga nacional (a Portuguese grape usually july 2011

used in port), and petit manseng (a French white) along the way. “The terrain is so different and the climate is so different than anything else we have,” explained Krankl, who also owns Santa Barbara County vineyards in the Sta. Rita Hills and Los Alamos. “We wanted to make something exclusively from the site.” So in June 2010, he put together a package called Next of Kyn—wine made at the new winery with grapes grown exclusively on the ranch—that included three bottles and one magnum of his Oak View wine, bound together by the hefty price tag of $1,100. Then he sent an email blast to his aficionados, both the 1,500 members of his wine club and the “multiple thousands” more who are waiting to be, some for as long as six years, and offered the package as a first-replied/first-served sale. “The whole thing sold out in less than three minutes,” he said, his casual laugh belying what was definitely the loudest Ojai Valley wine advertisement in history. As the most well known vintners to plant wine grapes in the Ojai Valley again, the Krankls have fended off questions about Pierce’s disease for years, and happily report that they’ve never seen a sharpshooter in their traps, which have been out since day one. But Manfred is quick to argue that, even if it were to strike again, the folks like him who are meticulously growing small vineyards would be able to manage it properly. For Adam Tolmach of The Ojai Vineyard, he’s got his fingers crossed that the scientists at UC Davis will come up with a safe cure for Pierce’s disease in the near future, allowing him to plant his home vineyard once again. But until then, he’s still having a blast fermenting juice in his Oak View barns and offering sips at his new tasting room in downtown Ojai, three decades since he began. “You don’t ever achieve perfection—it’s striving toward perfection that’s the fascinating thing,” he explained. “Every harvest brings you new problems, and hopefully you grow as a person. I don’t ever get tired of it.” v ­­
