editor’s note
WINE, WINDMILLS, AND WALLS

ix years ago on this page I introduced myself to Ventana readers. At the time, I was the editor of a travel magazine and had recently returned to the U.S. after living abroad for the better part of a decade. I’d gotten married the year before; we’d bought a home and were talking kids. Change was afoot. Again. I was the third editor of this publication and it was still younger than my marriage.
In the spirit of out with the old, we immediately contemporized the design of Ventana and tweaked the editorial approach. We also tacked a cute little quote onto the Editor’s Note of that July 2007 issue: “If nothing ever changed, there’d be no butterflies.” Since then—or until now, I should say—little has changed. Enter Dean DeWinter, our new art director. And raise a glass to Christy Sisneros as she moves on. I won’t bore you with songs of praise or tired clichés: greeting the winds of change with a windmill rather than a wall, that sort of thing; I’ll keep the Buddhist blah blah internal. For now, let’s just exhale and keep rolling. The best way forward, I believe, is to pay heed to the younger generation. (Just ask Twitter-whipped former despots in places like Egypt and Tunisia.) Indeed, the 20-somethings of 2013 are hip to a revolution-in-progress, and staidness is nothing short of a death knell. Consider the neoteric wine aficionado. No upturned nose or raised pinky there. No pompousness. The elitist wine snob of old has over-aged into a puddle of vinegar while a new generation soaks up the full wine experience: the viticulture and vintnering, the tasting, learning, and sharing.

Then there’s the modern X-factor. Take Wayne Kelterer (p. 15), a young man from Ventura who paired his own unique wine experience with an immersive multimedia approach to artistic expression. An online platform, of course—writing, video, photography—set to the ambient sounds of post-rock bands like Sigur Rós rather than Bach or Beethoven. Spurred by creativity as well as wine, Kelterer took it upon himself to visit 52 California wineries in 52 weeks, one full year, while working full-time. His blog, “A Long Pour,” while respectful—nay, reverent—of winemaking tradition, represents a new youth movement. It is a symbol of change. He emailed me a couple years back. A simple note from a reader. I stepped through a hyperlink into his blog and found it compelling enough to add his name to our list of potential interview subjects. He’s since left a lucrative career to pursue a new line of work—in the wine industry, of course. For this issue, we connected him with writer/sommelier Mark Storer, who discovered that Wayne’s love affair with wine began when he was just 21. Perfect. He’s still not yet 30. Sure, we could’ve interviewed an established winemaker. We’ll do more of that in the months ahead. Wayne’s perspective, though, is patently unique, his passion contagious. Casa Pacifica Angels Wine & Food Festival Cal State University Channel Islands, Camarillo Showcasing the culinary creations of restaurants and caterers from Santa Barbara to the Conejo Valley, as well as wineries, vineyards, and microbreweries from all over California, the 20th Annual Casa Pacifica Angels Wine & Food Festival raised money for Casa Pacifica, a Camarillo-based organization that provides help for abused, neglected, or at-risk children and families in Santa Barbara and Ventura counties. Along for the Ride: Wine Talk with Wayne Kelterer It began with a barely legal sip. Then came the blog, a merger of art and passion that led a local oenophile on a weekly mission to the far reaches of the Golden State—and ultimately down a new life path. By Mark Storer

t was a bottle of River Run Carignane from Santa Cruz that changed Wayne Kelterer’s life. Some eight years ago, the then21-year-old construction worker who moonlighted playing guitar in a band was getting his wine on with a pal at Westside Cellar in Ventura. The wine, he said, blew his mind, and over time he and his friend Jordan got a reputation for being young Turks interested in the good stuff. Working stiffs, they made enough money to buy a few bottles —and each time they went, they bought a few more. During return visits, they tried different wines and took to “stealing” tastes from a friendly waiter who came to appreciate the boys’
take on various bottles, including leftovers from other patrons or returned bottles. Intrigue plus passion led Kelterer to start a blog called A Long Pour, documenting his wine-soaked travels around California—52 wineries in 52 weeks. The purpose was simple: to meet winemakers and tell their stories. But the blog evolved, earning acclaim and ultimately leading to a new career in the world of wine. Over sobering cups of coffee, we spoke with Wayne about his Ventura County roots, his development as an oenophile, and his ever-evolving passion for the real deal. 88

Mark Storer: What role has Ventura County played in your evolution as an oenophile? Wayne Kelterer: My love of wine was really spurred along by Ventura County. It’s certainly no epicenter of wine, but the connections here are pretty deep for me. Meeting and talking with Adam Tolmach (Ojai Winery) was a really big part of that. His approach to showing off what terroir means and what good wine is—that’s where a lot of this started for me. MS: I understand you recently left a lucrative career as a contractor to get into the wine business. Wasn’t that a risky move? WK: I felt like I was burning out, and I didn’t want to do that. I needed a creative outlet. My then-girlfriend, now my wife, Damaris, and my friend Jesse encouraged me to start a writing project. I’d had this idea to start a wine blog for a long time, so I decided to do it. For a year and a half, I traveled about 6,000 miles up and down California. I had a pretty good job as a contractor, but on the weekends we’d go to wineries. I’d talk to the winemakers for a couple hours, they’d take me into the cellar and we’d taste. I designed the blog, did the photos, and wrote the stories myself. I didn’t write reviews, though. MS: So your blog wasn’t about ratings, and it wasn’t dependent on money or advertising? WK: No, the blog was more about the winemakers—who they were and what they did. Before I knew it, I got in with a pretty legit crowd. They knew I wasn’t reviewing wines or scoring them, I was just telling stories and talking about what they do. Here locally, I spent hours with Adam Tolmach tasting great wines and talking. I’d go out on a limb and say he’s
really the godfather winemaker of our region, including Santa Barbara County. I met Matthias Pippig of Sanguis wines, too; he lives in Ojai. And although I don’t really know Manfred Krankl (Sine Qua Non winery), I’ve met him, and the fact that he [makes his world-renowned wines] in this sort of off-the-radar way, in Oak View, is such an inspiration. MS: We heard a lot about Pierce’s disease and the sharpshooter bug in the ‘90s. Any other reasons we don’t see more wine grapes being grown in Ventura County? WK: The few vineyards we have do not produce enough grapes, or enough diversity of grapes, to keep operations like Ojai Vineyard or Sine Qua Non going. And many of the more ideal sites are already planted to cash-heavy crops, providing little incentive to change them over … At Jonata, we grow 10 grapes and all of them thrive. But most of the 600acred property is sand—straight beach sand. The owners selected some of the best spots and planted grapes to see what would take, so there are these little fragmented blocks of land where the soil and microclimates are perfect … The challenge is not to grow grapes, but to grow great grapes, and you need special sites to do that. MS: How would you define good winemaking? WK: Matthias Pippig and his wife, Jamie, have a poster in their living room that sums it up for me. In big bold letters it says, “FOOD.” After that, it lists seven food-related principles: buy it with thought, cook it with care, use less wheat and meat, buy local foods, serve just enough, use what is left, don’t waste it. You would have to change some words, but something similar could be said of wine. If we aim to buy wine thoughtfully, to respect it as something someone made, we are doing well. I buy

wines I like from people or places I like. I support many of our local producers who are doing good things while providing for their families. I try new things and don’t let trends or marketing slogans dictate my palate. Look, making good wine is hard under the best of conditions, and sometimes wine gets caught up in kitsch and marketing rather than the land and the fruit. MS: How did your passion become your job? WK It was funny. Being in construction for so long, I know about demanding customers. I was working 70 hours a week, then spending time on these creative projects. One Sunday night, my wife saw an ad on Craigslist for Jonata Wines in the Santa Ynez Valley; they were looking for someone to take care of their customer base. I knew the winemaker, Matt Dees, and the assistant winemaker, Drew Pickering, from the writing I’d been doing. I knew the region, I knew the wines, and I knew how to handle demanding clients. MS: So you invented a new career for yourself? WK: Yeah, I literally wrote myself into a job. Mostly I work from home. But the work I do puts me in touch with people. That’s the key to it all. That’s why I have low tolerance for the lifestyle brands of wine and the dumbing down of it. Winemaking is hard work. Anybody can buy fruit and put it in a barrel. ARMING AND RANCHING FORM THE CORE of Ventura County’s past, present, and future, and you can’t travel far anywhere in the area without passing green fields of veggies, undulating orchards of fruit, or grassy hillsides lined with livestock. But when it comes to discovering the county’s gourmet fringes of food production, there’s only one place to go: the western stretch of Highway 150, that winding country road connecting Carpinteria to Ojai, where the region’s first cheesemaking operation in at least a decade has opened within a few minutes drive of fancy fowl and orchards of exotic fruit. While not all of these farms are open to the public, you can find their goods in numerous stores, restaurants, and farmers markets. So enjoy these brief tastes of each spot, and remember to pay attention next time you’re on this palate-pleasing pass. 28

Artisanal Cheeses: Casitas Valley Creamery Though the Regenerative Earth Farm was only recently founded, there’s already a lot of promise on the horizon for the nearly 50-acre property located a couple miles east of the squab ranch. Persimmon brandy, apple cider, heritage pigs, and plenty of avocados are already in the works, each being done as sustainably as can be. But all eyes are now turned to the Casitas Valley Creamery, the first commercial cheesemaking operation to hit the Tri-County region in years. “It’s the largest and most exclusive enterprise on the entire farm,” said Ana Brush, who runs the operation with her fiancé, Jesse Smith, and friend Makaila Harvan-Thompson, the head cheesemaker. With permaculture guidance from Ana’s father, Warren Brush (who advises farmers worldwide), and expert advice from “cheese guru” Keith Johnson (who helped start Cowgirl Creamery), the team has already made a variety of cheddars, fetas, bries, and curds, with flavors ranging from smoked and spicy to olive oil and lavender. And that’s
just from two batches of milk. “We ended up with a much huger variety of cheeses than we expected,” admitted Ana, “which is really fun.” Getting the milk proved to be the first hurdle, as small-time, family run, organic dairies are in short supply. “We were very fortunate to find a dairy,” said Harvan-Thompson, who started her cheesemaking studies with an intensive class at Cal Poly. And it turns out that actually making cheese takes a bit of effort as well. “Every minute counts, every degree counts, every time you stir counts; every step changes the cheese,” she explained while inside the small creamery itself, which was refurbished extensively after more than a decade of sitting unused. “When we’re making cheese, I do not leave this room.” While that makes for the occasional 20-hour day, the results are already causing cheeseheads to drool. One can only imagine what’s going to happen when you can pair their products with similarly handmade apple cider and persimmon brandy.

Gary Carpenter carries on the bird business his grandfather started in 1921. Squab is still the focus, though he now raises ducks and chickens as well.
Fancy Fowl: Carpenter Squab Ranch As his golf cart zips around rows of feather-filled coops, Gary Carpenter looks proudly out over the ranch where he can house up to 16,000 carefully bred pigeons at a time, their collective job being to raise four-week-old offspring known as squab, a delicacy worldwide. “I built this place almost 50 years ago,” said the 70-year-old, who erected the cages atop a former walnut orchard in 1966 and is just now considering how to pass on the reins, “but my family has done it since 1921.” That was his grandfather, who fell in love with carrier and homing pigeons during his World War I stint in France and returned to La Cañada to raise them himself. “He was a lot more into it than my father and me,” said Carpenter in his usually dry tone. “I’m not that enamored with pigeons, to be honest.” Indeed, he never thought he’d take up the family business until a doctor told him he had diabetes and should maintain an active life. “So that’s how I got into the business,” he explained. In addition to moving the ranch to Highway 150, Carpenter has also

started raising ducks (which he sells direct-to-consumer and to restaurants) and chickens (whose eggs his daughter sells), and developed a state and federally certified slaughterhouse, which is also used by neighbors such as Watkins Cattle Company and Picaflor Farms. But squab remain the main game, with about 1,200 harvested per week, the bulk of which go to the Chinese market in Los Angeles. “I can’t keep up with them,” said Carpenter of the ravenous Chinese customers. “I haven’t had enough squab in 30 years.” Fine dining restaurants of more Western traditions, such as Spago in Los Angeles and Downey’s in Santa Barbara, also covet the birds, which Carpenter said are quite tough to prepare correctly because they are easy to overcook. On his side, however, the formula isn’t so difficult. “It’s a fairly simple operation,” he said. “What’s time consuming is pairing up new birds. I’m constantly moving them around.” Complaints aside, Carpenter isn’t looking forward to retirement. “I’m getting old, so I gotta get out,” he said. “But I really don’t want to. I really enjoy raising pigeons.”

Exotic Fruit: Rincon del Mar’s Cherimoyas True, it’s much easier to reach the gates of Rincon del Mar by taking the 101 freeway to Bates Road than by sneaking in from the backside where Highway 150 connects, but nowhere in the world is a more intriguing orchard of labor-intensive yet lucrative fruit. This is the hub of North America’s cherimoya industry, which revolves around the stunningly finicky fruit, originally from South America, that requires hand-pollination of every flower because there are no native pollinators in this hemisphere. “Everyone told us we would fail,” explained Nick Brown, whose father, Anthony Brown, imported the first cherimoyas to California three decades ago and eventually developed two of the most planted varieties. “It’s absolutely a temperamental tree and a temperamental fruit. But when it’s right, like it was last year, we could do no wrong.” When handled correctly and eaten at the peak of ripeness—think avocados and peaches: not overly gooey—the cherimoya exhibits a range of tropical fruit flavors imbued with powerful sweetness and hints of savory vanilla. It’s become a very expensive dessert in Spain, where diners pick out their selection like we do lobsters, and also the primary gift given during Chinese New Year. In the United States, it’s also finding a
home in mixed drinks and ice creams, and the Browns have done a tremendous job of informing the public of its health merits through their farmers market presence in Santa Barbara, Ojai, and Santa Monica. “They’re not just delicious,” said the younger Brown, 21, who recently graduated from college in Colorado and entered the family business, “they’re also really good for you.” Unlike Gary Carpenter, whose kids don’t want anything to do with his squab, the elder Brown is happy to have an eager generation to take over. Said Anthony, “It’s good to get v new blood.”

I
’ve always thought it a shame that visitors to Northern California’s Wine Country spend so much time in wineries. Or worse, cloistered in cars as they zoom from one tasting room to the next. After all, with so many wineries, from homespun to elegant establishments, the temptation to cram in as many as possible can be irresistible. In the past, that’s what I, too, had done. But on every visit, as I peered out the car window and watched the scenery fly by, I wondered what it would be like to instead cycle my way through Wine Country. The region’s quiet country lanes and gentle rolling hills are perfect for biking. On a bike, I reasoned, I could combine wine tasting with sightseeing, adventure, and exercise. I would not just glimpse, but truly experience, the region’s beauty—its olive groves, green pastures, and manicured vineyards. And so I recruited my friend Jennifer to join me, and we headed to Sonoma County. Healdsburg, 70 miles north of San Francisco, served as my base. With its galleries, antique shops, and specialty boutiques, the picturesque town is the kind of place where the local market stocks its shelves with fancy vinegar and chipotle sauce, rather than paper towels and canned soup. Honor Mansion, a Victorian inn built in 1883, is a short walk from the town square. A
century-old magnolia tree shades the front lawn; an enchanting koi pond fills the back patio; and platters of home-baked cookies and iced tea lure guests into the antique-furnished lobby. Randy Johnson, the owner of Getaway Adventures in Napa, burst through the door as I polished off an apricot scone. Getaway Adventures offers customized private rides and one- to six-day group bike-and-kayak tours, including all the gear, van support, and lunch. Randy suggested that we pedal south along the grape-growing region of Westside Road, then continue along River Road (which follows the Russian River). From there, we could take redwood-lined Moscow Road to the coast. In all, it’s a 47-mile ride, but he promised we could always drive a portion if it became too arduous. “For a one-day trip, this is pretty exciting,” he said. “Its’ a good way to see three different microclimates.” Westside Road is a wide country lane lined with scores of vineyards. “This is quintessential wine country,” Randy said, as we pedaled along at an easy pace. Licorice-scented fennel grew wild along the road. The rolling hills were sunbaked, brown but for golden mustard patches, studded with oak, bay, fir, pine trees, and an occasional barn. As we rode, Randy and I chatted. He explained that he launched his biking business after a ski injury put him out of commission. He took up bicycling to get back into shape. Then his uncle, a wine buyer, joined him and suggested they combine bike riding with wine tasting.

“My uncle taught me the finer points of wine tasting, the sniffing and the swirling,” Randy said. Friends began asking him to escort them on wine tasting bike tours. Some offered to pay. “That was the point when I realized this could really be a business,” he said. So he left his job in advertising and launched Getaway Adventures. After about an hour of cycling, we stopped at Hop Kiln Winery. The building, a former hop kiln, was built in 1905 by a crew of Italian stonemasons and is on the registry of National Historic Trust Buildings. With its wood beams and floors, the winery was inviting and comfortable. Grateful to step into the air-conditioned coolness, I browsed among the art gallery and gift shop, admiring the grape-themed paraphernalia; then I joined Jennifer and Randy in the tasting room. Randy was describing a cabernet as “meaty,” and Jennifer was raving about her glass of “Big Red,” which, according to the label, had hints of chocolate and tobacco flavors. “Chocolate and tobacco?” she laughed. “No wonder I like it. “ I sampled a white blend and was charmed by its name: “Thousand Flowers.” But I ended up purchasing a rosé, mostly for its brilliant fiery color. As we lugged our purchases out the door and into the van, I understood the wisdom of a support vehicle. Randy dismounted near the end of Westside Road. Beckoning for me to join him in a small patch of shade, he grinned and pointed down at the river. “Let’s take a little dip,” he said. On our way to the riverbank, an old billboard welcomed us to the “Vacation Wonderland” of Monte Rio, a faded riverfront resort that looks like it came straight from a movie set. Once known as the “Queen of the Russian River,” the town enjoyed its heyday in the ‘20s. “This little hamlet may be past its prime, but it offers wonderful river access,” Randy explained. W made our way down the gravely shore, dunked our feet in the still water, and watched a man and his dog glide by in a kayak. Bright yellow flowers grew wild along the banks. The air was fragrant with
sweet clover, and every pebble lining the river bottom was visible. After a short break, we were ready to roll. A quick detour took us to Moscow Road, lined with towering redwoods overlooking the river. These trees, which grow from the central California to the southern Oregon coast, are the tallest and among the oldest living things in the world. “It’s so pretty here,” Randy said. “So quiet, like nature ’s cathedral.” The Russian River meets the sea at Goat Rock, home to a colony of harbor seals. Randy scouted out a picnic table on the sand and shooed Jennifer and me away while he prepared lunch. We strolled along the beach, savoring the ocean breeze. But driven by hunger, we quickly made our way back and were greeted by pesto pasta salad with sun-dried tomatoes and artichoke hearts; organic greens with thick slices of ripe tomatoes; slabs of French bread with brie, melon chunks, and sweet green grapes; and soft chocolate chip cookies. After lunch, we got back on our bikes and pedaled single-file down serpentine Highway 1. We cycled past Whale Point, Arched Rock, Seal Rock, and Salmon Point, stopping frequently to gaze at the dramatic views of the wild Sonoma coast—its long stretches of sandy beaches, craggy cliffs, and secluded little coves. I pulled on my windbreaker, listened to the waves crash on the rocks, and gazed at the fog-shrouded sea. In a single day, I had experienced the best and most beautiful of Northern California—its rivers and redwoods, valleys and vineyards, and one of the most magnificent coastlines in the world. I pitied the people who but glimpse this glory from car windows. v

A BRIGHT IDEA
For Tiffany Buchanan, a formally trained pastry chef and resident of Thousand Oaks, the “A-ha!” moment came in the middle of a heat wave as she was making popsicles for her children. Throughout her career as a pastry chef, Tiffany always found herself creating some sort of frozen concoction to go alongside her plated desserts. “It was the most fun part, the most versatile,” she reflects. And now through Freezer Monkeys, her gourmet popsicle business, she gets to have fun with her flavors every single day. Tiffany launched her business in January 2012, but it wasn’t until a forager for Whole Foods tasted her popsicles that things really began to take off. She recalls her nerves in anticipation of the meeting, and how she gambled and left all her marketing materials at home. “Since my popsicles are all about flavor, I simply showed up with eight popsicles and a business card,” she says. His first words after tasting: “How soon can you have them?” Her products are now available in 14 retail locations, and she produces approximately 150 cases each week in the kitchen space she rents in Ventura. It is from her sorbet recipes—like raspberry Thai chile and blueberry orange blossom—that her popsicles have evolved. She also offers flavors like Mexican chocolate, caramelized pineapple, horchata, and her seasonal flavor: white peach infused with Earl Grey tea, inspired by a bite of a fresh peach at the farmer’s market. The unfortunate thing, Tiffany explains, is having to call her gourmet treats, made without artificial flavors or preservatives, popsicles. She likes to think of them as more refined: “Like sorbet on a stick,” she says.
Nancy Pedersen’s story begins with a vision of a cookie shop, a place where customers would come in for a cookie and a glass of milk. A charming idea, to be sure. But for Nancy—a serious home baker, a licensed attorney, and the former VP of Operations for Bon Appetit magazine—that idea couldn’t move forward without the perfect space. When a tiny shop in El Jardin Courtyard on Ventura’s Main Street opened up for the third time in a few years, she knew it was time—“time to stop talking about it and just do it,” she says. She opened her bakery in February and has been serving up “old-fashioned, small-batch baked goods” ever since. Her bakery case now brims with thick slices of rum cake, chocolaty red velvet brownies mounded with cream cheese icing, and squares of Jack Daniels blondies. Then there are the cookies—like her signature cookie, made with Ventura Limoncello and lavender from Ojai’s New Oak Ranch. And you can bet there is ice-cold milk to go along with them. She uses that milk to make her own ice cream, in flavors like vanilla bean, green tea, and cherry dark chocolate. And as you may have guessed, she’ll make you an ice cream sandwich any time you want. Her personal favorite? White chocolate macadamia nut cookies with strawberry ice cream. As for Nancy, her favorite part of the business is the interaction with her customers and what she calls kitchen counter therapy. When customers stop in for a chat and a treat, “I love that they leave feeling better because they have had a chance to interact on a human level,” she says.

that this self-proclaimed serial entrepreneur was looking for a way to put three children through college. It all started with a sad little stick of a lemon tree, planted skeptically in the backyard. Over the years it began to thrive, leading Lori to search for ways to utilize the abundance of tangy citrus fruit. Many of those lemons ended up in her lavender-infused lemonade, which her kids would sell at their lemonade stand. Looking back, Lori says, “We saved that little tree and it saved us; it gave me a new life.” Though she’s been making it for 15 years, Lori started bottling her lemonade in October 2011. Since then, she has sold more than 80,000 bottles. Her lavender lemonade is now in 100 retail locations, from San Diego to San Francisco. In addition to her signature blend, she recently introduced ginger lemonade as well. So, what is about the combination of lavender and lemons that makes this nectar so addictive? It’s the balance between sweet and tart, the surprising floral notes of the lavender, and the whimsy of sipping something so reminiscent of childhood. As for Lori’s favorite part of her business, it’s doing demos and seeing people experience her lemonade for the first time. Many of them end up licking their cups clean. “They get my energy and they get my story,” she says. “They v confirm why I’m doing this.”

Often I build pieces that are components with which to do other things. And so it was with this outside ring of diamonds. Then the question comes up: what am I going to do with this? I end up playing with it, looking at it until it finally tells me what it needs to be. And then I go from there... the design takes off, in this case to outer space! It was telling me it needed something floating in it. But who needs another ring with a row of diamonds around it? But ahhhh, there's a better way of doing this I thought. One with better structure and style. Done with multiple wires which, as they blend from white gold to yellow gold, eventually wind up on the other side. It's a very clean continuous design.
