Local chefs talk about their love of edible art BY NIKKI RAE CHAIREZ

Professional

artists work with all sorts of mediums, from oils on stretched canvas to instruments on audio consoles, but those who work with delicious ingredients seem to have only recently received similar recognition for their creations in the art world, especially in Ventura County. While every longstanding cook and chef has a similar passion for delicious dishes, just a handful shine locally for their expert technique in composition, presentation and flavor. While we couldn’t feature every master of this tasty art in the county, we talked to a couple of chefs who aim to make the food look as good as it tastes: Morgan Carroll, Chef de Cuisine at Brasserie Communautaire in Oxnard and Gabe Garcia, Head Chef at Tierra Sur in Oxnard. Why did you become a chef? Carroll: I always loved working with my hands, and right out of college I went to culinary school. I fell in love with the ingredients from small farms in Colorado, and from there knew that the kitchen was the place for me. Garcia: Well, I am a lover of art and I also love creating it –– cooking just happens to be the most delicious art form. It’s also something that can be shared and enjoyed while connecting my passions. I just ran with it. I followed my interests and it turned into a career. Where and how were you trained? Carroll: I trained in a few nice restaurants in Denver. I’m a lifelong learner and will never stop absorbing. Garcia: I grew up in Ventura County, but I received my culinary degree at the Art Institute of Los Angeles in Santa Monica. Following graduation, I worked for CONTINUED ON PAGE 10

several of the top companies in the hospitality industry and was able to gain a range of experience. Coming to Tierra Sur, I originally served under the renowned Chef Todd Aarons before leading the restaurant as its head chef. I’ve been with Tierra Sur at Herzog Wine Cellars for more than seven years now, and I’m proud to be working in my hometown. With my own kitchen, I’ve been able to hire an incredible staff. I’m now learning and growing from their experience as well. How do you find your culinary inspiration? Carroll: Local produce excites me. I love the changes of the season, the bountiful produce available in California and the wide and varied selection that small farms bring. Garcia: My inspiration comes from the ingredients. We have close relationships with our partners –– all of our produce is locally sourced, providing a farm-to-table experience that can only be found at Tierra Sur. Because of these relationships, I’ve been able to go to Dave Pommer of DP Produce, Tamai Family Farms or Rio Gozo and make my selections by hand. The farmers nurture each and every piece. Whether it’s vegetable, citrus, rare or abundant, it’s our job to honor these ingredients. From there, each dish becomes a beautiful puzzle to assemble. It’s incredibly inspiring and this inspiration is also why there is so much variety in our menu from one season to the next. Do you have a culinary philosophy? If so, what is it? Carroll: Quality and hard work. Food takes time, and paying due respect to the farmer that grew that component is important to me. an overcast, cold evening in late January, my world was turned upside down by one of the best salsas I’d ever consumed. The blend of several different types of peppers and tomatoes brought the heat enough to break through the winter chill. Farm & Flame’s salsa slathered my plate and I demanded seconds. Naturally, it stayed on my mind long after. Co-owners Daniel and Sunni Duncan, and Sunni’s sister Heather Worrell, operate Farm & Flame, both a catering business and a food truck, out of Thousand Oaks, serving up Texas-style barbecue with an eclectic variety of sides. The smoked chicken tacos with jalapeño ranch and “Texas Toothpicks” (deep-fried jalapeño strips) is a fan favorite, and on that night in January became the vessel by which that mighty salsa was consumed. Daniel says that making the salsa has been an ever-changing experiment, utilizing whatever pepper is in season. “We like sustainable ingredients, so sometimes peppers are available like habaCONTINUED ON PAGE 14

neros and fresnos, other times it’s jalapeños and pasillas,” said Daniel. “I try to put a little bit of everything in there.” Due to the use of in-season produce, each batch varies in spiciness, but Daniel says he likes to keep it between a six and a 10 on the scale. The salsa has been a blank page for Daniel’s pepper experimentation. “We have some friends who have pepper gardens and they grow some really unique peppers,” said Daniel. “I’ve tried that in the salsas and created an awesome batch . . . but sometimes you’re sweating and going cross-eyed.” Daniel recommends the salsa on the smoked chicken tacos, of course, but also suggests that a big plate of chips and salsa, which comes with every meal, is perfect in itself. Hot sauce is a different monster altogether and is often the subject of obscene names, usually referencing the pain that it will induce on the consumer. There’s a softer side, however, and Chef Tim Kilcoyne has been working on a combination of sweet meets heat to please fans of Scratch, the granddaddy of Ventura County food trucks. Kilcoyne turns to the olden days of fermentation for his 14 | Ventura County Dining Guide | 2017 |

peppers, much as one would create a barrel of dill pickles or sauerkraut. For his cranberry jalapeño hot sauce, Kilcoyne sourced fresh cranberries from a friend’s Oregon cranberry bog, blended them with jalapeños and a bit of salt, and allowed the mix to rest for a few days. During that time, the friendly bacteria lactobacillus (among others) breaks down the sugars from the cranberries. The finished product is a unique hot sauce that the chef has used on items from the Scratch kitchen, including a sandwich melt featuring smoked mozzarella and braised turkey. Kilcoyne rates it about a five or six on the heat scale. For fans of batting your brow like a southern gentleman on a hot day, Kilcoyne has produced a habanero-only hot sauce using the same method to slightly ferment the peppers before blending them into a sauce, finishing it with a bit of vinegar. The result, he says, is similar to a Tabasco with the heat turned up to 11, and is used on Scratch’s breakfast burrito, vegan and vegetarian quinoa bowls and tacos. The hot sauce isn’t on offer every day, however. “I do it occasionally when we get an abundance of things that I know I’ll be able to use it right away,” said Kilcoyne. “Like with the habaneros, we had 80 or 100 pounds of habaneros.” For more information on Scratch, visit scratchventura.com.

Ventura and I’m trying to restore it while giving it a more modern-day look with my own artistic flair.” Woodward restored the authentic menu from the original owners with some new additions to appease a new generation of mindful eaters. The menu will have

come a long way, baby. If you’re a beer aficionado in Ventura County, no longer are you a prisoner of the beer aisle, as breweries and brew pubs have sprung up like flowers from Ventura to Thousand Oaks and everywhere in between. There is no better place to be than Ventura Coast Brewing Company this Saturday, April 15. Ventura Coast opened in October of 2016 in downtown Ventura and will host a rather epic event dubbed the “Cask Off,” a festival featuring one-off collaborative brews from Ventura’s Topa Topa Brewing Co. and MadeWest, as well as from Oxnard’s Casa Agria. Tickets are $25 (available at the brewery) for what promises to be a progress report on the state of West County’s beer scene. Speaking of MadeWest, expect the Standard Pale and other classics to hit store shelves soon, canned, and Surf Brewery’s still drawing in visitors and has become a hit up north with its

barrel-aged and bottled program. Meanwhile, Ventura Coast and Topa Topa may get a new neighbor soon, as Leashless Brewing has broken ground on the corner of California Street and Thompson Boulevard; and on Main Street and Fir, Fluid State Beer Garden recently acquired a resplendent 90-degree-angled sign, soon to anchor Downtown’s bustling beer trail. One could theoretically begin at Fluid State, Barrelhouse 101, and then decide which of downtown’s four breweries to hit first — adding Anacapa Brewing Co., downtown’s original brewpub. Oxnard’s Red Tandem Brewery opened in 2016 on Harbor Boulevard, giving certain locals who may feel left out of the craft beer boom a place to call their own, along with the ever-expanding Casa Agria Specialty Ales on Del Norte Boulevard, which CONTINUED ON PAGE 30

Brazilian Cuisine Moqueca is a fish stew traditionally composed of saltwater fish, minced garlic, tomatoes, olive oil and the crucial urucum powder, which gives the stew its signature flavor and red color. The owners have been serving it in myriad seafood incarnations, from the traditional white fish fillets to shellfish and whole lobster tail, since 2010. The proprietor, Maria-Gloria Sarcinelli, who hails from bucolic VitoriaEs, Espirito Santo, still imports the traditional clay pots that are made by local paneleiras. The pots impart a crucial flavor to the traditional contents of the stew. White rice is served on the side. Incendiary malagueta (tiny Brazilian chili peppers) steeped in olive oil are offered tableside to give the bubbling seafood stew an added fiery kick. For vegetarians, the restaurant offers plantain moquecas. Moqueca Restaurant also serves the usual Brazilian standards.
