THE FOLLY OF F2T CALIFORNIA CUISINE WAS THE HARBINGER OF the “farm-to-table” movement. When Alice Waters began itemizing farm names on her menu at Chez Panisse, it was a guileless attempt to reestablish a connection between the seasons and her food, and to celebrate the farmer-chef-diner relationship. It was the move of a purist. But things have gotten out of hand. Marketers have run amok with the term and its associated jargon—artisanal, handcrafted, blah, blah—reducing these once-potent buzzwords to hollow strings of letters. Or worse: false advertising designed to mimic a time-honored philosophy and sell more product. Take Blue Moon beer, which MillerCoors, the secondlargest beer company in the nation, bills as “artfully crafted” and sells alongside legitimate craft beers, at a craft beer price. None of which sits well with serious beer nuts like Evan Parent, a San Diego home brewer who recently filed suit against MillerCoors for falsely portraying the mass-produced beer as a handcrafted, independently owned product. Even McDonald’s has launched a “farm-to-fork” campaign, reminding their customers that, yes, some of their ingredients were actually grown in the dirt. And just the other day, outside of a home improvement store in Ventura, I purchased a hot dog from a “hotdog crafter” (according to his folksy chalkboard sign). It’s everywhere. And I’m guilty of overusing words and phrases like this too. But when words fail to accurately describe something, they deflate into meaningless puddles, becoming little more than placeholders. With so much emphasis on soil-under-the-nails food prep and foodie jargon, we wanted to hear from a few of West County’s top fine dining chefs (page 47). It wasn’t hard

to pick. There are plenty of good restaurants countywide, but Watermark has become the flagship of fine dining in Downtown Ventura; Tierra Sur practically screams out from the Oxnard Plain; and Suzanne’s Cuisine in Ojai—well, Suzanne’s is an institution, an exemplar of comfortable fine dining. Among the three chefs, there was consensus that food is but one part of the experience—and that without on-point service, careful presentation, and the right drinks, you’re just having a meal. Which is, of course, enjoyable in its own way. Our early efforts to find a local chef doing something avant-garde, like molecular gastronomy, failed. Interestingly, two of the three pointed to molecular gastronomy as a food trend they never understood. This was precisely why we wanted to find someone making transparent ravioli, oak moss vapor, or some other offbeat edibles. Call it morbid curiosity. The gastronomic equivalent of watching a train wreck. What we did find is a lot of straight-up good food. It was growing in the fields of Underwood Farms (page 36), and came together for a picturesque brunch at Solimar Beach (page 29). It’s served regularly at our trio of chefs’ restaurants, with just the sort of casual refinement you’d expect in Ventura County. Farm-to-table? That’s nothing new, especially in an area like this, with our rich flatlands and deep agricultural history. Maybe it doesn’t matter that the term has been overplayed to such a degree that it’s spun off an abbreviation: F2T. Or that it’s muddled up honest cooking with pure schlock. Good kitchens will continue to churn out good food. And inevitably, we’ll wash our hands in the puddles of deflated words and move on to the next ones. – Matt Katz mattk@ventanamonthly.com

Chef and Garden Instructor Jon Ellis worked with locally sourced ingredients, many of them grown on campus, to prepare Montessori School of Ojai’s inaugural Garden-to-Table Dinner. Parents and other supporters enjoyed an al fresco feast that included smoked oysters, steamed mussels, seasonal salads, and seared local filet mignon with a red wine demi-glace. The event raised funds for the school, which serves children from infancy through eighth grade. Based on the philosophy of Italian physician, educator, and humanitarian Maria Montessori, the Montessori School of Ojai places a strong emphasis on academics in a child-centered and creative environment. On a working avocado ranch in the Las Posas Valley, architect and owner join forces to build a mouthwatering retreat from city life. BY LESLIE A. WESTBROOK | PRINCIPAL PHOTOGRAPHY BY GASZTON GAL AS ONE ENTERS THE LAS POSAS VALLEY, IT FEELS LIKE nothing short of a miracle, the manner in which the freeways and suburbs and shopping malls melt away in the distance as the scenery transforms into the idyllic California of yesteryear. In fact, this area was once part of a large Mexican land grant—and Somis, my destination, first established in 1892 as an agricultural community, remains so to this day. Berry farms, citrus groves, and avocado orchards line State Route 118 en route to a very special spot in this bucolic valley. Another kind of miracle has taken place on a chevron-shaped
piece of land, located on a working avocado ranch, that’s been thoughtfully adapted for outdoor entertaining, thanks to the imagination and skill of Ventura architect C.J. Paone and his client, Alexandra Vorbeck. Vorbeck, an entrepreneur who spends her days in the city conceiving and managing high-concept restaurants and creative real estate ventures, needed a retreat—a place that reflected her love for wide-open spaces. “Alex found this property and it called to her,” Paone told me. “The hillside and views gave me the opportunity to create many }}

grand and intimate outdoor spaces that are available to match any mood. Each person who visits gravitates to a particular place that resonates with them.” In the 1969 book “The Teachings of Don Juan, a Yaqui Way of Knowledge,” by Carlos Castaneda, the sage Don Juan speaks about people finding their “spot.” I found mine immediately, at a long marble table under the open-air, shaded gazebo. I even returned to make certain this was “it,” after trying out other areas. I asked C.J. if he, too, had “a favorite spot.” He chose the small table and chairs slightly hidden under an olive tree on a raised deck at the far end of the property. The Yaqui Indian sorcerer also spoke about following a path with heart. All the paths in this terraced garden seem to have heart, and were surely created with it, so perhaps that’s why one feels so blissful in this outdoor architectural and botanical space. Thanks to the pairing of Paone’s ingenuity with the shared vision of gentlewoman farmer Vorbeck, the result is more kaleidoscopic than staid. Take in the sweeping views: shifting patterns and colors, from the grey-blue pool to the vast sky; the changing light, with wind rustling through the pine trees… it all adds up to pure magic. During my morning tour, I experienced no less than eight distinct outdoor areas, each possessing unique views and its own vibe. When asked, the owner said her favorite spots change depending on a variety of factors. “Different spots, at different times of day and under different weather conditions,” Alex replied. “There are good spots for being alone (like a two-seater wood bench and the upper area next to the bar) and good spots for being with groups, including the barbeque and the bar.” At the far end of the garden, a small metal café table beneath one of the grand, gnarled olive trees is a perfect breakfast spot to start the day. Here, an over-scale mirror hung on the pool house exterior reflects the sunrise over wavy mountain ranges. Poolside drinks might rest on the petrified wood tables while the lounger gazes across the water at a cropped panorama framed by dwarf olive tree plantings that Paone calls a “green infinity edge.” An afternoon luncheon al fresco, shaded by the bamboo-covered palapa made of raw steel in the upper level, would include vast views of avocado orchards and stands of stately eucalyptus trees—and beyond them, Point Mugu and the Channel Islands. At one end of the simple, sublime pool (Alex wanted it to look like a swimming hole), Champagne corks would pop in the pool house bar, while traditional Argentine style barbecue smoked on the other end. Friends might share drinks and conversation around a huge metal vat, a former water trough turned upside down to serve as a table. A good book and a cup of tea while curled up on the outdoor couch in the shade of a covered patio would suffice for solo time. How does one recreate this “feeling”? So much has to do with balance, as well as the familiarity of materials that relate to the landscape: 100-plus-year-old olive trees that were “field dug” and transported from California’s Central Valley then planted “just so”; reclaimed wood scaffolding repurposed as decking; low, boardformed concrete walls textured with wooden plank patterns. Sculpture in the garden includes big concrete balls, a Zen-like disc, rusted metal hoops. It’s all part of the hugely successful mix. 16

“The owner wanted the house to tie into the landscape and wondered what to do with all the space that was on a hillside,” C.J. told me, noting that the hill had to be reconstructed. “We took a narrow band of land with a kink in it and used the point to break it up into the variety of spaces.” Paone also re-clad the house and replaced the original stucco and tile roof with corrugated metal. He used wood, stone, and raw steel, recycling as much as possible throughout the project, incorporating old beams on a new second-story deck. “My client is very visual and has a great eye. If we tried something and it didn’t work, we tweaked it,” the architect said. “It was all about finding the balance between giving the outdoor space structure and boundaries and defining spaces, yet have it still feel organic.” These subtle tweaks, he noted, added more flow and visual connection through the spaces. “She had a lot of faith,” the modest Paone said of the owner. Well placed, it appears, as this is one of the finest, most well balanced and thoroughly enjoyable outdoor living spaces I’ve experienced in Ventura County. “Working with C.J. was great. I work with many different designers and architects, and it’s clear from his work that he loves nature,” noted Alex, adding that she was drawn to the property not just for “the climate and how everything seemed to grow well,” but also because “the area is under the radar yet close to Los Angeles.” Indeed, so close yet worlds removed. v

DEEP ROOTS
The Underwood family cultivates a farming legacy that spans generations.

LACKEY SHAFFER | PHOTOGRAPHY BY T CHRISTIAN GAPEN “OLD TIME VARIETIES ARE DISAPPEARING BECAUSE farmers need something with a long shelf life,” observes Craig Underwood, the owner of Underwood Family Farms. And often, the produce that lasts longer lacks the flavor and texture that makes quality fruits and vegetables so good. From the moment Craig and Sara Jane Underwood opened their first produce stand in Somis in 1980, growing and selling the items they (and their customers) loved to eat was a top priority. “It’s all about the flavor for us,” adds farm manager James Barker. }}

Strawberries, pumpkins, tomatoes, lettuce, and corn are some of Underwood’s biggest crops—all sustainably farmed through drip irrigation, beneficial insects, and cover crops. But the farm offers many unique products, too: multicolored cauliflower, romanesco, yellow watermelons, and a rainbow of beets. “The golden beet was something of a signature product for us back in 1980,” Craig recalls. “At the time, you could only find it as a Burpee seed.” The exceptional flavor of heirloom varietals was very much a driving force, but the farm was also responding to evolving food trends. Sara Jane distinctly remembers a conversation with gourmet food distributor Freida Caplan of Freida’s Finest (now Freida’s Inc., a family-owned business). “She called looking for Italian parsley—no one was growing it at the time,” Sara Jane recalls. “So we told her we’d plant some.” Underwood was also among the first farms in the county to offer a spring salad mix, as well as heirloom tomatoes and baby carrots. These vegetables are pretty much supermarket staples today, but in the 1980s, they were revolutionary. Underwood Family Farms, now with locations in Moorpark and Somis, sprung out of Underwood Ranches, a wholesale growing operation that Richard Underwood, Craig’s father, started in the 1960s (the business became Underwood and Son in 1968 when Craig came aboard). But the family has been deeply rooted in the local agricultural industry for generations. The ancestors of Gussie Mahan, Richard’s mother, had been dry farming (growing feed grain) in the Camarillo area since 1867; her husband, Urban Underwood, was a pioneer lemon grower. Craig’s mother, Alice, was a Duval whose family were lima bean farmers in Saticoy. With soil seemingly in their veins, it’s no surprise that the Underwoods have continued the farming tradition—and that the whole family has grown up in it. Craig and Sara Jane are heavily involved in every aspect of the business, and daughter Suzannah handles marketing, advertising, and publicity. (Another daughter, Megan, doesn’t work at the farm but remains close to her family and the land.) “The development and evolution of UFF has been a total family effort,” Craig explains. “Sara Jane and Megan and Suzannah went out with me on nights when I was irrigating, and together we checked the fields on Sundays after church.” Megan and Suzannah even ran a stand of their own, selling leftover produce to their neighbors. Sara Jane was the sales manager at Underwood Ranches for a few years, helped establish the Camarillo Farmer’s Market in the 1990s, and ran the Underwood booth there for 14 years. As a licensed nurse, she’s also on hand to take care of minor injuries that are bound to crop up on a working farm. Of course, Ventura County residents with children in elementary school know that Underwood Family Farms is more than just a farm. The original location, in Somis, runs a very popular pick-your-own-blueberries operation, and the Moorpark location is something of an agricultural amusement park. Pens with numerous farm animals, overhead walkways for goats, farm equipment retrofitted for safe climbing, a petting zoo, and several playgrounds 38

take up a chunk of the Underwoods’ 150-acre space, giving kids (and their parents) a glimpse of an agrarian way of life that has all but vanished for the average citizen. Offering more than 1000 school tours every year, UFF is attempting to educate the public about what farming is, and its importance to the local economy and community—earning the farm a Small Business of the Year award in June. Suzannah Underwood has found that the public seems to be very hungry for the agricultural experience. “We’ve been responding to what customers want,” she says, explaining that people who shopped at the produce stand would ask if they could take a tour, or would inquire about birthday party opportunities or activities during Halloween or Easter. “The people who come here and email us ideas are planting the seed.” Craig credits farm managers James and Russell Barker, brothers from England and third generation farmers, with spearheading many of the changes that have made UFF more than just a produce stand. “James and Russell have been critical to the development of the business. They have brought creativity and the proper mindset to open our farm to the public.” James’s son, Brandon, has also started lending a hand, continuing the Barker family’s own tradition of working with the Underwoods. One of UFF’s biggest public outreach endeavors is the Fall Harvest Festival, begun in 2000. Running throughout October, the festival offers rides, games, food vendors, a pumpkin patch, and a corn maize, bringing together people from the community, nonprofit organizations, local businesses, and county law enforcement (the fire department and sheriff have a weekend devoted just to them) in celebration of the area’s farming heritage. The fun-filled event is more than just entertaining; it also raises over $100,000 for local non-profits every year. The festival has also allowed the youngest generation to get involved in the family business. Suzannah’s sons, Laird, 9, and Rafe, 6, help restock supplies, assist in the various booths, and serve customers. “Vendors who have been with us a long time let Laird and Rafe help,” Suzannah says. “And they put the kids to work. It really helps them learn.” Laird in particular enjoys this handson experience. “I really like to work in the food stands,” he says. “Older generations appreciate this place because they can share with the younger generations,” Craig Underwood says of his farm and associated enterprises. “So many people don’t have any connection to the farm anymore. But I think people still value traditional rural values.” Values like good stewardship of the land, close family ties, being a part of the community, and growing fresh, healthy, delicious produce. Those values are something Suzannah believes in, and are among the main reasons she is committed to continuing the Underwoods’ farming legacy. “History and my family are important to me,” she says. “I want to keep agriculture in the county. CHEF: GABE GARCIA How do you define fine dining? From beginning to end, the food, beverage, and service are seamless and harmonious.
It’s always great knowing who and where your produce is coming from, and I love supporting the agricultural community.
Have you adapted your menus toward the rustic farm-to-table trend? Or are you aiming for more fancy pants nouvelle cuisine? We always have been more geared towards farmto-table and rustic. Our focus has always been trying to support local farmers, and our style has always been focused on seasonality and sustainability.
What is your favorite summer ingredient? What excites you about summertime cooking? Heirloom tomatoes. Last year was such a bad year for tomatoes, I really need my fix this summer. What excites me about summertime cooking is cooking and eating outside, even at night.
When you’re in the mood for fine dining, what’s your favorite restaurant? I don’t go out to specifically enjoy fine dining. I look for innovative restaurants and am very much into ethnic cuisines. What’s the farthest you’ve traveled in pursuit of a good meal? Chris Constantino’s new restaurant Cocks Comb, in San Francisco. What current food trend in fine dining really excites you? Where the chef makes up the menu to order, and there is actually no menu to choose from. I love the idea of complete submission to what the chef wants to serve. What are the pros and cons of running a fine dining establishment in Ventura County? I always felt that fine dining can be intimidating, so just breaking the ice and getting the customer to understand all the details that go into a fine dining experience are important. Consistency is always difficult; you always want your guests to have a great experience every time. The benefit of being situated here is that I get the first pick! 48

What is your favorite thing about your job? What gets you out of bed in the morning? The whole concept of creation and collaboration, and I love getting a chance to show my perspective. I am very fortunate to have a team and an environment where we all contribute ideas. How often do you change your menu, and what is that process like? We change our menu every three months or so. I was taught to follow the seasons, and I know it’s hard to see seasons change in California, but we still practice it now. We have a great relationship with local farmers; we usually get a farm list or text message at the beginning of the week. Then we brainstorm to see how we can utilize as much of the farmers’ products as we can. Where do you find your inspiration when creating new menu items? A lot is from the farmer, because it is our goal to try to keep the integrity of the ingredients and collaborate with the farmer’s product to embrace the hard work that goes into planting a seed and growing food. As a professional chef, what do you do for your own professional development? How do
you get new ideas or learn new techniques? I am a firm believer in the notion that the more you see, the less you know. So I always try to keep my ear on the beat and travel, taste, and take risks. I learn new techniques through life’s experiences and lots of practice. What’s your favorite late-night meal after a long day at the restaurant? Anything and everything thrown into some kind of tortilla, or between two slices of bread. I definitely don’t want to use a fork after a long day! What’s your guilty pleasure? Entenmann’s doughnuts with bourbon. How do you adapt classic fine dining fare to meet kosher standards? We see ourselves as a non-dairy restaurant that doesn’t use shellfish or pork. You still can be a fine dining restaurant. It’s our job to blur the lines of kosher and non-kosher, and to erase bad misconceptions about kosher food. Kosher standards have a strict set of rules like any fine dining establishment would have, so we actually don’t have to make a lot of adaptations. What is it like to helm a winery’s onsite restaurant? Are there special considerations you have to keep in mind? It’s really great to be in an environment where the level of creativity is ever changing, like wine as it ages. After a new dish is conceptualized, the first thing we’re thinking about is what to pair with it. When it comes to wine, we always have to keep in mind that wine continues to change over time … and so shall the food.

CHEF: GARY DANIEL How do you define fine dining? I think there’s a new air of what dining, as a whole, is. Now, the idea of meeting people’s expectations is most important. Attentiveness to needs, quality of product and of service—these are what help shape the overall fine dining experience.
What are the pros and cons of running a fine dining establishment in Ventura County? I think the challenge is putting forward the notion of higher expectations, while providing a good value. The benefits are definitely the local partnerships we have developed with the growers.
Have you adapted your menus toward the rustic farm-to-table trend? Or are you aiming for more fancy pants nouvelle cuisine? We’ve been on track, for my tenure at Watermark, with the farm-to-table trend. We work closely with the local farmers and purveyors, and we have also worked with more nouvelle cuisine. When executed properly, the two styles do work very well together.
What is your favorite summer ingredient? What excites you about summertime cooking? Summer sings of bright, flavorful foods. I grew up with apricot and apple trees in the yard, and corn and avocados always remind me of summer. The exciting part is that everyone is looking to eat lighter and healthier, so crispy, crunchy, and colorful fare tend to be the order of the day.
When you’re in the mood for fine dining, what’s your favorite restaurant? Suzanne’s in Ojai and The Lark in Santa Barbara. Our styles are similar, so I feel my expectations are met. I love the fusion of “funk” and fine dining, and they both execute this well. The experience, without the pretentiousness: there’s a heartfelt feeling you get when you eat their food.
What is your favorite thing about your job? What gets you out of bed in the morning? I am in the fortunate position of doing what I love. That’s the motivator for me. When I attended school, I wasn’t concerned with what I was going to get back, but what was going to be my contribution to the business.
What’s the farthest you’ve traveled in pursuit of a good meal? Bouchon in Napa and Searsucker in San Diego. Bouchon because of Thomas Keller, and Searsucker for its style of fusing funk and fine dining. What current food trend in fine dining really excites you? The movement of using under-utilized products. This is where the local purveyors are great partners for us. Any food trend you never really understood? Molecular Gastronomy. Adios!
How often do you change your menu, and what is that process like? With The Cave (venturawineco.com/the-cave) it was monthly. New and seasonal products were always appearing, and we were always trying to figure out different ways to utilize them. With Watermark the menus sit a little longer. There’s more of a process with dishes, and a little more time is given to the final product. As a professional chef, what do you do for your own professional development? How do you get new ideas or learn new techniques? I try to get out to other places, which isn’t always that easy. Reading is also very important to me;
there’s a world of information out there. I stay away from reality-formatted food programming. I have a small group of chefs that I’m lucky to call my friends, whose input and knowledge are always welcome. What’s your guilty pleasure? Potato chips and anything with peanut butter. Can you describe the shift from the industrial park setting of The Cave to Watermark, the flagship of fine dining in downtown Ventura? With Watermark, it’s necessary to stay within particular parameters. Certain expectations from our customers dictate some of our direction. I think that’s changing a bit, though, and they’re willing to be a little more adventurous. With The Cave, it was based on the notion that everything was going to be wine-friendly, while having the latitude to push the envelope. Both are destination places, but each presents its own set of challenges. We’ve heard talk of a new “Rancho” menu you plan to introduce soon. That’s not the sort of thing you’d have found at a fine dining restaurant a decade ago. What has shifted, and what was your inspiration for this new direction? Rancho California is a name given to the use of local, Central Coast ingredients and ingredients introduced by the Spanish and Latinos, with some Asian thrown in, during the migration of the 1850s. With that came a reinterpretation of familiar dishes. So, with adding basic technique to new or recognizable items, we can follow in those steps already taken. Hopefully, creating a modern rustica.

CHEF: SUZANNE ROLL How do you define fine dining? For me, fine dining highlights a level of attention to detail and service that is a step, or several above, the everyday. The plates are carefully presented and the service is on point. Have you adapted your menus toward the rustic farm-to-table trend? Or are you aiming for more fancy pants nouvelle cuisine? We have always been farm-to-table. While we don’t think of ourselves as rustic, we also aren’t fancy pants. We are somewhere in the middle: an honest, simple presentation of what should be delicious food. When you’re in the mood for fine dining, what’s your favorite restaurant? Like most chefs, I don’t crave fine dining. I want my favorite comfort foods: sushi at K-Zo in Culver City, pizza and butterscotch budino at Mozza, and homemade pasta at the home of my lifelong friend Sally. What’s the farthest you’ve traveled in pursuit of a good meal? This summer to Vancouver, B.C. for live Alaskan king crab. Any trip to Asia must include an overnight stop at Narita so we can have sushi at our favorite local sushi bar. And to L’Auberge de l’Ill in Illhaeusern for foie gras “softballs” with black truffles in the middle. What current food trend in fine dining really excites you? I’m too old to get excited about food trends. I care about fresh ingredients that are honestly and carefully prepared. Any food trend you never really understood? 50

Molecular gastronomy. What are the pros and cons of running a fine dining establishment in Ventura County? Running a fine dining establishment anywhere is challenging. However, we are grateful for our longstanding relationships with local growers and loyal customers. What is your favorite summer ingredient? What excites you about summertime cooking? Zucchini blossoms! We serve them stuffed with goat cheese and warmed slightly on a bed of tomato-vodka cream sauce with crostini. I love the classic Mexican prep of a zucchini blossom quesadilla with epazote. I’ll eat the filling just plain and straight out of the pan. If you are skilled at frying, then the classic Italian prep of fiori fritti is a treat. In the summer, I love zucchini blossoms with a side of garden zucchini and heirloom tomatoes. What is your favorite thing about your job? What gets you out of bed in the morning? My favorite part is relationships—with suppliers, growers, guests with whom I have become friends, loyal guests who return annually, dedicated employees, and, of course, my daughter (also my business partner). I appreciate the sense of community that hubs from my simple restaurant, and I get out of bed because I care about all of these people and they care about me. How often do you change your menu, and what is that process like? It’s funny, we talk about it often. Sometimes we will test new recipes and then we stack them up against a tried and true favorite, but in the end our regulars often prefer our classic menu items.
As a professional chef, what do you do for your own professional development? How do you get new ideas or learn new techniques? Ideas come from shopping, cooking, and eating. Some of my best ideas have come from making my husband dinner. Stand and face the stove, and an idea will generally make its way to the surface. What’s your favorite late-night meal after a long day at the restaurant? Miso soup. What’s your guilty pleasure? Nothing scandalous here. A dozen oysters, Laurent Perrier Brut Rosé, and Pierre Marcolini chocolates. What changes in fine dining have you observed over the years? We have been in business for 22 years, and in that time our guests’ knowledge and understanding of our ingredients has increased exponentially. In the beginning, we were educating our guests, but now many of them are telling us about things to try. The exposure to new food, new ideas, and fresh, regional cuisine is now expected rather than unique. What do you think visitors to Ojai are looking for in a fine dining experience, and how do you provide that? A dear friend, whose wife worked for us years ago, came for a visit recently. He referred to our rack of lamb as “what comfort food is supposed to be.” We hope that for many, a visit to Suzanne’s Cuisine is a trip home.
