he beer industry is alive and well in Ventura County. Oh, sure, we’re still small potatoes compared to San Diego and Portland, but it seems that every season brings a new craft brewery for hopheads to obsess over. In the last year alone, the area saw MadeWest, Ventura Coast and Ojai Valley Brewery come online, and the organic brewer, Leashless, is set to open this July. Like the farm-to-table restaurants that abound here, microbrewers often rely on locally sourced ingredients — everything from herbs to fruit and even coffee — to build their beer lists. Casa Agria, which opened in Oxnard in 2015, also relies on homegrown produce for its recipes. But the pale ales and IPAs that dominate the craft beer market are a small fraction of what Casa Agria has to offer. This brewer specializes in farmhouse-style ales and unusual (yet refreshing) sour ales made with a variety of local fruits, and fermented with wild yeast collected in the county, too. Still something of an acquired taste, sour ales are growing in popularity, thanks in no small part to Casa Agria’s liquid persuasion — and possibly to a beerdrinking population ready for something new. This craft brewer isn’t the only company changing hearts and minds through its products. Cindy Liu of Black Sheep Food Company has used the food industry to blaze a trail for her daughter, Sammy. The one-time caterer wanted to build a busi-
ness that would provide Sammy, who has Down syndrome, with the means to support herself. Knowing that people with physical and mental disabilities are frequently at a disadvantage in the job market, her mission moved beyond the personal to encompass a movement: Changing the way these individuals are perceived. She intends for Black Sheep to provide training and employment for people with disabilities, and hopes that through the company’s products and services, others will begin to recognize that those with special needs are different, perhaps, but no less valuable. The revolutions underway at Ojai Olive Oil are less about product than process. The oil pressed from olives harvested from trees more than a century old continues to be of an exceptional quality, winning awards at international competitions every year. But Phil Asquith, whose role at the company has expanded in recent years, is looking at operations a little differently from how his parents (the founders) viewed them. Community building, selfsufficiency, less stress and more joy — these priorities are part of his business plan . . . and his lifestyle. What all three of these stories share is a new lens through which to view food, and how it’s brought to market. And through these individuals, we, as consumers, gain more than just access to quality products. We have the opportunity to expand our palates — and perhaps our perspectives, too. – Nancy D. lympic athletes came out to play at the Sports Academy in Thousand Oaks last month. Kids ages 6 to 14 had the opportunity to practice volleyball, learn the indoor soccer sport of futsal, show their skills on the basketball court and more, with former Olympians providing guidance and feedback. Team USA athletes included Ron Skarin (Cycling), Kim Gilbert (Table Tennis), Barbara Ann Ferrell-Edmonson and Jeff Williams (Track and Field) and Sean Rooney (Volleyball). Canadian Track and Fielder LaDonna Antoine-Watkins also joined in the fun. The event was held on Olympic Day, June 23, which commemorates the birth of the modern Olympic Games in 1894.

WINE& WISDOM Joe Hurliman of Herzog Wine Cellars shares some perspective on the Ventura County wine industry.

I
oe Hurliman has been a major player in the Ventura County wine scene since its inception. Joining Herzog Wine Cellars as head winemaker in 1998, he was instrumental in establishing its state-of-the-art winery in Oxnard, and has watched as other wineries blossomed throughout the area. He sat down with Ventana Monthly to discuss the local wine industry and what he envisions for the future. When did you first come to Ventura County? I’ve always made wine in the Central Coast. After eight years helping establish Alban Vineyards [in San Luis Obispo County] and being the assistant wine maker, I needed a new, dynamic challenge. I’m an adrenaline junkie — I needed a new opportunity to fulfill that personal urge for being excited about a project. [With Herzog] I thought, “It would be great to evolve kosher wine to the next level.” I moved them to a facility in Santa Maria in 1998; that was my first real project. We were there for eight years, and I knew the Herzog family was interested in doing a winery of their own. That was another thing that was exciting to me. So you helped establish the Oxnard winery, which opened in 2005. What were you picturing during the planning? First and foremost, the breadth of what we do. We designed this facility to produce valuepriced wine but also small-lot winemaking. By doing that, you give the community the ability to come in and appreciate an $8-10 bottle of wine, but also experience a reserve wine. It also gives customers a chance to see a stainless-steel cellar, a barrel room, and understand the importance of temperature, humidification, French versus American oak. . . . We can also provide many
different varietals. We can cover many aspects of what the wine industry has to present. It’s something of an education. Speaking beyond Herzog, how do you think the Ventura County wine industry as a whole is different from other winemaking regions in California — Santa Barbara, for example? Santa Barbara is interesting because you have the urban area that’s very different from Santa Ynez or Los Alamos. That drives the experience. In Ventura County, it’s really driven by the entrepreneurial aspect. You have so many wineries that have really evolved from an entrepreneurial aspect from people’s love of wine. Entrepreneurs are bringing wine tasting and the whole winery experience to an area that historically did not have that many wineries. That’s exciting! People from different worlds and backgrounds are opening up wineries. How are local wines different? You have a real blend and mix of producers doing historically Italian varietals, or Rhone varietals. Maybe it’s the kaleidoscope aspect of what’s available in Ventura County — because the majority of grapes are outsourced. The beauty is that it’s in its infancy. You’re getting all these styles coming out of one small winemaking area. }}

How has our wine industry changed over the last 10-15 years? People in the community have come to understand that there are wineries here. What they bring to the area, in terms of entertainment (events and tastings and so on) has continuously grown. And what do these wineries bring to the area, in your opinion? Hopefully it’s an opportunity to mingle with a variety of people in a situation where you can get so much give and take about wine or food. It’s a way for people to come together and have an enjoyable time. It’s what life should be about. What are the biggest challenges facing the Ventura County wine industry? Ventura County’s wine industry is still very much emerging. We may have awardwinning wines and recognizable brands, but as a county, we haven’t yet established roots as a nationally known wine destination. How are these challenges different than those faced by vintners in Napa/ Sonoma, Paso Robles or Santa Barbara? These regions have spent decades operating as growing regions and tourist attractions. This has allowed them to offer older vintages and cultivate long-established partnerships. A commonality of nearly every winery in Ventura County is that it’s less than 15 years old –– compared to Napa Valley, which was establish in the 1960s. Because of this, most of the support for Ventura County’s wineries come from locals and neighboring cities. What, in your opinion, is the key to overcoming these obstacles? Time and awareness. I’d love for locals seeking wine country to know that it’s right here in their backyard. I’d also love for the wine enthusiasts planning a summer vacation to know that they can visit a number of wineries and taste a wide range of varieties while staying in a beachfront hotel for likely far less than a trip to Napa would cost them.
What changes do you think will take place in the local wine industry heading into the future? I would think that the successful wineries that have been established here in Ventura County will continue to grow. They may branch out into different varietals. I would also think that . . . some individuals that have gone to work at these wineries will branch out. That is how you may see a real snowball effect in what this area can be. What do you personally hope to see in Ventura County? What do you think would be good for the local wine industry? here’s EVOO (extra virgin olive oil, for those who have been living under an acronym rock); VOO (virgin olive oil) and OO (regular olive oil). Then there is the award-winning OOO — Ojai Olive Oil, which comes from a beautiful Ojai property tucked peacefully on Ladera Road in the valley’s picturesque east end. Big changes have been quietly taking place at Ojai Olive Oil. Doyenne Alice de Dadelsen Asquith is passing the baton to her son, Phil. The barn and tasting room are now open seven days a week, with free tours and tastings on weekends and Wednesdays. Visitors can picnic at tables and admire a grove of very old and stately Spanish varietal olive trees planted over a century ago on the land. What’s also new and noteworthy is that the Swiss-born 40-year-old, who lives with his girlfriend Marleny Aleman (who works in fashion) and their two rescue wolves, Bodhi and Sasha, in a house on the land above the cozy bowl of a valley where the ranch is situated, has forged relationships with surrounding landowners who share an interest in a more cooperative way of life. ily property. Projects aimed at bringing the neighborhood offgrid for water and power are underway, including the creation of a large central pond. Self-sufficiency is important to Phil, who hopes to set an example from which others might learn. “I am into community building and selfsufficiency,” says Phil, who grew up in Europe as part of a musical family, “Our neighbors are leading permaculture educators, East End Eden. There is an increasing trend of people choosing lifestyle over wealth, and health and happiness over the chase of a greater possible lifestyle down the road.” It’s been a circuitous journey for the entrepreneur. He studied molecular biology and theoretical physics at Pomona College, considered medical school but made a U-turn and went into investment banking and formed a hedge fund. He founded Green Monkey, a chain of yoga studios throughout southern Florida. Phil returned to California and started a company in the hemp industry called Green Gorilla. When his father fell ill, he came back to Ojai and began taking over day-to-day operations at Ojai Olive Oil. “I’ve been here for every pressing, which takes place in the fall, but moved back about six years ago,” the tall, lanky olive oil producer told me as we strolled the grounds. This year, due to the rains, 4,000-5,000 gallons of olive oil are expected. In its first year of business, 20 years ago, Ojai Olive Oil produced just 1,000 bottles from a few hundred gallons of oil. The company only presses fruit for its own product (not for others), but it also purchases certified organic olives from other local farmers, including several neighbors in the east end of Ojai. “If a neighbor works with us to plant varieties we approve of, and grows their olive trees organically, we will buy 100 percent of their crop ongoing,” Phil noted. Ancient, stately Lechin de Sevilla olive trees — planted in the 1800s and abandoned for nearly a century after the previous owner’s house burned down in a fire — still produce fruit and should continue to do so for centuries, if not millennia. “We’re the first family to live here and
cultivate them again since the early 1800s. I love the fact that these trees are still young — they can live over 10,000 years!” Phil enthused. Phil explained, as we sat surrounded by the Spanish varietals, the differences in the trees. The oil from Andalusian olives has a sharp, strong flavor. Provençale olive trees, from France, produce a mild oil. The Italian Tuscan oil is green and peppery. All have won awards, in local competitions, such as the Ventura County Fair, and on the international stage, such as the New York International Olive Oil Competition. “My mom is stepping back and I’m taking over all operations full time. For over 20 years I’ve been involved to varying degrees, but never 100 percent in, until now,” Phil said. “I’ve spent recent years working on a way to view and operate the business differently, such that the process is enjoyable and low-stress, and not a drain on my resources and health. Ultimately that’s meant sacrificing substantial income and wealth for a lifestyle that’s happy and healthy. And recognizing that the sacrifice there is really a great one, and a better choice for my life.” The gentleman farmer, who studied and learned to play oboe, cello, recorder and piano in his youth, still plays a grand piano in his home and recently attended the Ojai Music Festival with 20 friends who picnicked on the lawn at Libbey Bowl. “My generation was raised to believe that a person works and works and works, in order to make a lot of money — and then enjoy your life,” Phil says. “More people are tossing that notion aside, and choosing to enjoy the whole journey, not just focused on the end destination. I’m living the good life now! The tradeoffs are clear and I’m happy with the choice. L
oo Hoo’s Asian Comfort Food was Cindy Liu’s idea to bring Asian flavors to the fresh refrigerated section of stores. “It was a business school idea,” said Liu, a resident of Newbury Park, about her first venture. “I’ve always loved cooking and it was learning by doing.” That business evolved into a catering business and, according to Liu, it floated along nicely, though sporadically, until she got pregnant five years ago. The pregnancy was easy and Samantha’s birth, too, went smoothly. Born with Down syndrome, however, complications set in three days later. Liu and her husband, Brad, were told that “Sammy” was having a hard time breathing and that she was being diagnosed with PPHN or persistent pulmonary hypertension of the newborn. “I went home from the hospital after three days, but without Sammy,” recalled Liu. Sammy was treated at UCLA, even spending over 10 days on
an experimental heart-lung bypass machine, and remained in the neonatal intensive care unit for 72 days. Happily, she survived, but the experience changed everything for the Lius. “The whole business, the whole idea of starting a food company, was on the back burner,” said Liu. “We were depressed, sort of sad. You know you’re mourning the loss of something. But the fact is, we didn’t have experience with Down syndrome.” Liu felt herself at a crossroads. Was it to be career or family? The answer, in fact, was a fusion of both. At the heart of it all was Liu’s two passions of food and social change. “I remember screaming down to my husband, ‘Honey, I’m going to build something for her!’ ” Liu said. She felt that she needed to create a company, not a nonprofit, but a business that would change the perception of how the world sees Sammy, and how Sammy sees the world. Kitchen, a catering company that brought Liu’s passions together. She began to reach out to places like the Institute for Social Business at California State University, Channel Islands, to research how to move forward, taking classes and working with Maria Ballesteros-Sola, a lecturer at the institute, and her students. “If I’m going to change perception,” said Liu, “I don’t want what I’m doing to be seen as a charity. There are certainly supports that are needed and I saw that.” But Liu also knew, after her business school education, that she had to “crack that nut” of creating a business that hired disabled people, paid an equitable wage and provided a new cultural reference for people with disabilities and a public that tends to have one perception. “It’s really been wonderful to follow her through this evolution,” said Ballesteros-Sola. “She’s been such an advocate to change the culture of perception of how people with disabilities are seen.” That may be an understatement. While deeply focused with a passionate love for food and natural ingredients, Liu read, studied, wrote and talked about the culture of perception that surrounds people with disabilities. Ballesteros-Sola connected her with TEDxCamarillo and Liu gave a talk inspired by her encounter at a local McDonald’s while Sammy and her brother, Jack, ate ice cream. A man walked up to Liu and, looking at Sammy, asked, “Is she smart?” Outwardly, Liu simply answered, “Of course she’s smart,” but inwardly, she was infuriated. “Who does that? Who asks a question like that?” she said. It wasn’t the only time she faced the culture of perception of disabled people, but it did spur her into action. “It’s just a truth that people feel uncomfortable being served at a wedding or at a fundraising event by someone in a wheelchair because it highlights privilege and access. . . . People need to see our kids working, doing jobs that kids do, that people do. There’s a cultural shift that needs to happen,” Liu said. She wants people with disabilities to be seen first as people, not as disabled, and be recognized as valued members of society. In her research, she discovered a 1938 law called the Fair Labor Standards Act. Among other things, the law established a minimum wage standard and prevented forced child labor. But the law also stipulates that a company that hires people with disabilities may pay them less than minimum wage. “We’re fighting for minimum wage and an opportunity to be educated equally,” Liu said. That idea coincided with another revelation in Liu’s working life. Sammy’s Kitchen had now changed to Black Sheep Food Company, a name she and Ballesteros-Sola debated for some time. But it was a name she was committed to. “I saw a video documen-

tary and a farmer was saying, ‘Our food culture is damaged and it needs to change,’ ” she said. “Nature designs it that way. I remember when Fuji apples were first introduced to the U.S. and my mom would always want the scarred and bruised ones.” Liu said she remembers the apples tasting tart and crunchy and juicy and wonderful. “Now they’ve been in the market for more than a decade and they’re different. There are no scars on them, they’ve been cleaned and they’re awful.” Liu learned that nature seeks difference. “This farmer talked about black sheep and he said that black sheep aren’t shunned in sheep society. Nature seeks out difference and it values difference.” The lightbulb turned on. She views her daughter’s chromosomal abnormality through a similar lens: different, but not less than. “It’s exactly the way nature intended,” Liu said. The idea also led her to think differently about the food she was creating. She began to seek out producers at farmers markets who had surplus produce that, while perfectly good, wasn’t going to be on the grocery shelves. Black Sheep Food Company was born out of the notion of working with the natural differences in people and in product. “I always say there is a nice poetry of perfectly good food that is blemished and gets cast aside, and perfectly good people who are blemished and get cast aside,” Liu said. Black Sheep Food Company produces artisan jams and jellies using fresh local produce and creating unique flavors as well, like strawberry Meyer lemon marmalade and a triple marmalade using pineapple among other fruits. “We’re working on recipes and different canning techniques,” Liu said. “Eventually we’ll do pickling and other shelf-stable foods, chutneys and other things. The ultimate vision is to have a commercial kitchen where we produce our items as well as contract with smaller producers and support other businesses, with a tasting room with baked goods and coffee.” Working with an advisory committee made up primarily of moms of kids with various disabilities, Liu said the company’s goal is not only to produce quality items, but to provide careers for people with special needs that will allow them to make equitable wages and a comparable way of life. “In the space we have, we’ll also have a window into the working area so everyone can see us and what we’re doing.” What everyone will see, of course, is exactly what Liu has adopted as Black Sheep Food Company’s motto: “Different. POWER Casa Agria finds its sweet spot with sour and farmhouse-style ales.

W
hen thinking of beer, most people don’t typically conjure up images of ripe, fresh fruits. This is where Ventura County-based sour brewery Casa Agria stands out from the pack. Blackberries, raspberries, peaches, apricots, mango, passion fruit — any berry you can think of really — have all been featured within Casa Agria’s tart, fruity sours. “We’ll take upwards of a thousand pounds of local fruit and age six barrels on that for months,” explains co-owner Michael Weyandt, 40, of Simi Valley. “And then the really concentrated fruit sour, we’ll blend that in fresh sour bases to get a balance of fruit and sour.” Weyandt says their passion fruit-guava beer has been one of the most popular varieties they sell — “Everybody loves the guava beer” — but adds that the fruity options in general are the most popular of the sour beers they offer. “If we take the same base beer and add fruit, it’s going to sell.” All these beers are sold out of Casa Agria’s 3,600-square foot taproom in Oxnard, a beautiful space with 120 barrels surrounding a handful of tall tables, a small bar area, a vintage Simpsons arcade game, and frequent food trucks parked out front. There are typically 10 to 12 sours on tap, including saisons, and two to three hazy IPAS. While a handful of other breweries in the Ventura County area have from time to time offered their own sours, Casa Agria is the only local brewery primarily focused on them. The name itself even means “Sour House.” Casa Agria’s origins are as unique as their offerings. The brewery began as a homebrew passion between two architects, Weyandt and Eric Drew, 40, now Casa Agria’s head brewer. Weyandt and Drew are longtime friends who were college roommates at the University of Oregon, though both originally came from Ventura County — Weyandt from Simi Valley and Drew from Ventura. After grad school in Los Angeles, Weyandt met back up with Drew at an architecture firm in Ventura, and the two began homebrewing in Weyandt’s Simi Valley garage. After entering and winning several homebrew contests, they began toying with the idea of starting a brewery. With the help of Ryan Exline, who was very plugged into the local brewing community, and later, Terre Haff, the four were able to create }} Casa Agria in late 2015.

They decided to focus on sours because they were most interesting to Weyandt and Drew on a scientific level. “Eric and I, being bookworms and coming from an architecture background, it’s always like we focus on something and learn as much as we can about it. We fell in the love with the process.” During their sour-beer education, they visited Russian River Brewing Company in Santa Rosa and Sante Adairius in Capitola, just south of Santa Cruz. Weyandt says it was interesting to see how different all their techniques and methods were — and none completely divulged their process. Casa Agria’s own blending process has evolved as the principles have learned more, but it’s something of a cross between making beer and wine. The concoctions will sit in different wine barrels for periods of time — hence the 120 barrels in the taproom. Weyandt says he and Drew often sit down together and pour samples, weighing if sips are too acidic, too sour or not sour enough. They may then return to the barrels for more oak character or blend together for a more distinctive flavor. Weyandt says they focus on sours also because they were both interested in the farmhouse style of brewing. This includes, among other things, using their own wild yeast, as opposed to store-bought. For their yeast, Drew did a test batch of wort and let it sit overnight on a ranch in Santa Paula. “So whatever bacteria and yeast is flying in the air, it will inoculate the beer, and when it inoculates the beers you can ferment and that will become sour,” explains Weyandt. They captured the yeast and bacteria, catalogued it, and sent it out to a yeast bank. It has a distinct flavor that they add to some (but not all) of their beers. “It’s interesting to see how our yeast and bacteria evolve over time,” he adds. “They change but we try to keep consistency.” Before Casa Agria even became a company, it began sending out test samples to beer bloggers and people in the industry, including the Oxnard Beer Club, to ask for feedback. What they got was hundreds of emails asking if they had a bottle club, essentially a membership that would allow beer enthusiasts first picks at new bottles. “We ended up selling 400 memberships before we had a commercial beer,” says Weyandt “It grew organically like that,” says Weyandt. “I kind of relate it to being in a band or something like that, it’s totally grassroots.” The membership is now up to 450 loyal and supportive members, who get 10 bottles a year, along with other perks such as first rights to purchase any public release of sour bottles of IPA cans. As if to further punctuate the band metaphor, Weyandt adds, “We’ll have an IPA can release and sell three quarters of our batch to members, and then we’ll have a line of 100 people on the day of the opening and it will sell out.” Devoted beer club members and taproom enthusiasts aside, Casa Agria still has an uphill battle with local name recognition. Weyandt is hoping that will change as more people get to know their unique brand of sours — especially with the expansion of their space coming in 2018. It’s 8,000 square feet in the same building but in the front of the space, street-side with more opportunity for street exposure. “We’re going to double our capacity,” Weyandt says. “Hopefully we’ll keep growing the membership but also get people who have never heard of us to try us.” v

ith more and more breweries popping up locally, Ventura County beer lovers are blessed with an excess of superior options: Casa Agria’s sour ales, MadeWest Brewery or Ventura Coast Brewing Company’s IPAs, Enegren Brewing’s German-style lagers and American pilsners. Get to know a few unique beers and brewers in Ventura County, each with its own distinct style.
LEASHLESS BREWING (585 E. Thompson Blvd., Ventura, www.leashlessbrewing.com) is the latest in downtown Ventura, opening just this month. Leashless is offering some gluten-reduced beers, and all the Belgian-style beers will be certified organic, making it the feel-good choice for those looking to lower gluten intake or keep it organic, while still enjoying an adult beverage. OJAI VALLEY BREWERY (at Azu, 457 E. Ojai Ave., Ojai, www.azuojai.com) is a nanobrewery and sister business to Azu Restaurant and Bar that offers beers
filled with bits of local flavor, like sage, California Medjool Dates, and of course, Ojai pixie tangerines. Rather than focus on the well-worn territory of IPAs, Ojai Valley Brewery instead specializes in “dry, maltforward lagers and light-bodied ales.” POSEIDON BREWING COMPANY (5777 Olivas Park Dr, Ventura, www.poseidonbrewingco.com) offers a crisp Grapefruit IPA — brewed with grapefruit zest from Mud Creek Ranch in Santa Paula — that is one of its top sellers. The décor features reclaimed wood throughout, along with lamps hanging above the bar that resemble vintage diving masks. These along with
the old-timey, salty-sailor-meets-mermaid motif are reason enough to visit the relatively diminutive space next door to local favorite Beacon Coffee. INSTITUTION ALE COMPANY (3841 Mission Oaks Blvd., Camarillo, www.institutionales.com) last summer released beers such as an Imperial Stout with roasted coffee beans from Beacon, in a limited release in-house batch dubbed “Batch 002 W/ Coffee.” Institution also celebrated a huge milestone in 2016, a supersized addition to their brewery and tasting room, making it now 14,000 square feet, with a full kitchen.
