THE LAND OF PLENTY
A
LITTLE MORE THAN 45 YEARS AGO, I began a daily ritual. I dug in with delirious verve, practicing as if my young life depended on it, and I’ve never skipped a day. Few things have stuck with me so long, but those early sessions were a mere preamble: a milky lead-in to the main course—that being a deep appreciation for good food. No, I am not a chef. I am not a gastronome or connoisseur. And please, don’t call me a foodie—I am not a foodie. I am simply a man who loves to eat. Like most men, I occasionally do so without thinking. But that’s not to say I don’t think about what I eat. Even ingredients with irreconcilable differences find harmony in a tortilla. I know that much. And you don’t have to be a chef to grill like a king. That, too, is one of life’s incontrovertible culinary truisms. Or so I think. But real cooking—now that’s a different subject altogether. Chefs are a strange breed; they work when others are having fun. They tend to be artistic types, a sensitive lot prone to petulance in the back of the house while up front it’s all ivory smiles. Having worked in a number of restaurants over the years, I’ve witnessed and been on the receiving end of chef wrath many times. No one invites a chef over for dinner. We did enlist three of the county’s best to share a seasonal recipe, however, expecting brief, accessible dishes. What we received were culinary magnum opuses (page 17) with word-counts running longer than some of our articles. Even trimmed, these aren’t pop-in-the-oven recipes; each requires dedication and a certain level of technique. And there’s a good chance many of you possess both of those things. Foodism, for lack of a better word, while creating bizarrities like the celebrity chef—think chirpy-charming Giada De Laurentiis, the celluloid bellowing of Gordon Ramsey—has led to a widespread appreciation for the culinary arts, not just cuisine. It’s also raised the bar on booze, with craft breweries and micro-distilleries multiplying like tipsy rabbits in recent years. Not that a human fascination with alcoholic beverages is

anything new, of course. People have been tinkering with the sauce since the Stone Age. Every culture has its own special recipes: the wines of Babylon, Chinese rice mead, Mesoamerican pulque. The Egyptians worshipped Osiris not only as a god, but also as the inventor of beer, which they considered a necessity of life. A truly advanced culture. But none of this was on my mind when I first visited Institution Ale Company in Camarillo (page 49). I was simply keen to try beers that friends in the know had compared to some of California’s best—a giant statement when you consider that we’re in a Golden Age of beer and Californian craft brewers, not Belgians or Brits or Germans, are leading the charge. What I found was a couple of brothers and their dad, the Smith family, working quietly in a nondescript industrial park. Well, welcome to Camarillo, where a staid façade conceals hidden treasure. That humdrum exterior belies a fiercely contemporary approach to brewing, and I’d be willing to bet that Institution Ale is on the cusp of major accolades, well beyond little Ventura County. The name, by the way, is a play on the old Camarillo State Mental Hospital, which was redeveloped as Cal State University, Channel Islands. Those of us who were around preCSUCI remember the place and its inhabitants, the silhouetted bars on the windows, the rumors. Change is inevitable. But for now, rich agricultural flatlands still surround that site. The Santa Monica Mountains still plunge into the Pacific nearby and reappear as islands teeming with seafood. The local soil is still as good as it gets anywhere in the world, and the climate is still perfect. Ventura County may be the coast that California forgot, largely eluding the bikini vendors to the stars and manicured cuteness of her glossy sisters, Malibu and Santa Barbara, but make no mistake: this place is more than the homespun sister of supermodels. T WASN’T ENOUGH FOR BERNARD AND Claire Becker to uproot from Paris and move to California. The story of their emigration is nearly a fairytale, and without really planning it, they are living an American dream. Bernard was a music composer working on films, and Claire was an art restorer working itinerantly around French museums, including, at one point, the Louvre. Suddenly, they’re living in Ojai with their four children and baking cookies for a living. But it wasn’t all that simple… or, maybe it was. “We wanted to leave Paris. We knew it too well,” said Claire, a native Parisian. “We had two kids at the time and we didn’t just want to stay there for our whole lives. We wanted to go and try something new.” They landed in Echo Park, Los Angeles. There was a bilingual school in Los Feliz called Lycee International where their children could learn English and French, and Bernard was working on films between Los Angeles and Paris. But Claire was ready to try something else entirely. “I was a painting conservationist and wasn’t happy doing it anymore,” she explained. “I worked in private collections

as well as museums and churches. I just wasn’t happy.” Bernard felt the same way. “I didn’t see myself doing what I was doing anymore,” he said. “It wasn’t about the music, per se, but the industry. I wanted to try something new. And so here we were making this great change in our lives, and it became more natural for us to keep changing.” But all that time, there were macarons—quintessentially French macarons, delicate little puffs, not chewy macaroons. If you recognize the name, then perhaps you’ve seen them. They are made with egg whites and almond flour for the most part, and then, of course, various fillings. Unlike the ubiquitous macaroon, two cookies are made and sandwiched together over a filling. Claire had been making them for many years. “Usually all for me,” Bernard said. “She had a gift for it.” While they were still in Paris, the Beckers began making macarons for their friends and trying different kinds with different fillings. They used all-natural ingredients and tried new recipes. “In France, it was easy to find those things,” said Claire. “I wanted to find all-natural ingredients in good quantities, but that was harder to do once we came to the U.S.” They did their own version of market research, taking the cookies to parties and giving them to friends to see if they liked them. “It was this kind of new cupcake craze and we wanted to see if they would be culturally accepted,” said Bernard. The cookies are naturally gluten-free and come in many colors, all of them natural. There are no additives or processed sugars. Flavors include orange blossom, coffee, lavender-blueberry, and chocolate, and the natural ingredients, Claire said, are the key to their delicate flavors. “We tried them out at farmers’ markets in Los Angeles and they became very popular,” Claire said. So they began bak-
ing as a business, calling their product Duverger, Claire’s maiden name. They rented space at a bakery in Echo Park, selling to that bakery and other clients. Virtually overnight, the cookies took off. At one point, they sold 3,000 in four days. “It was very encouraging,” Bernard
said in his typical understated fashion. “There was some potential.” They moved into a different bakery, this one in Culver City, and worked Southland farmers’ markets. Then, they got a call from Whole Foods. “That request changed a lot of things for us. We’d reached the next professional level and it meant a lot more demands in terms of food safety and such,” Bernard said. “Concurrently, we met with Raymond Lovjois, an old baker at the Paris Bakery in Oxnard, which was a commercial bakery. It was perfect for us.” Lovjois befriended the Beckers and the relationship bloomed over a sixmonth period while they ramped up production for Whole Foods markets. “In January of 2012, we moved into the bakery in Oxnard and moved our family to Ojai,” said Claire. “We wanted to live in a place where it was small, quiet, and safe—where the kids could be kids. And we didn’t want to live in the bakery.” Whole Foods represents about 20 percent of their business, although you won’t find Duverger macarons at the
Ventura County locations, only Los Angeles. They also distribute the cookies (and a few other products, like an all-natural almond cake and Florentine cookies) to 15 states outside of California. “A [North Carolina-based] chain called Earth Fare found us online,” recalled Bernard. “I remember the first purchase order we received from them. We were very small and they wanted seven palettes—which is 80,000 macarons. We were used to doing boxes of 12 or 24.” Duverger now has a dozen employees, and the Beckers treat them like family. On a recent day at the bakery, the couple provided a break to celebrate their kitchen manager’s birthday with a Napoleon cake, candles, and singing. “We source mostly local ingredients,” said Claire. “Sometimes it’s harder, and we do what we have to, but we stay local when we can.” The ingredients remain allnatural, of course. Duverger keeps growing, and the couple is open to expansion. “We have a lot of room to grow in the bakery; we have 15,000 square feet and use just a portion of it,” Bernard said. Claire wants to make other products, and the couple has even talked about creating a Duverger store. Meanwhile, Bernard feels another change coming on. He’s working on a Ph.D. in clinical psychology. With four children, a thriving business, and an active home life, one might wonder how it all fits together. “It’s actually kind of a natural extension from being a musician,” he said. “It’s all about composing, about composition and putting pieces together to make something wonderful.” v

I like to use unripe stone fruit in savory dishes like ceviche, and even chimichurri sauce. It’s a diverse fruit because it doesn’t have to be at its ripest; it can be used when green and crisp to add crunch and acidity, both of which are great for savory dishes.”

1/2 teaspoon pure vanilla extract 1 tablespoon good honey 1 tablespoon cinnamon 1 teaspoon sweet Spanish paprika 1/2 teaspoon kosher salt 1 large loaf brioche bread Unsalted butter Vegetable oil INGREDIENTS FOR STONE FRUIT SALAD: 3 cups wedged selection of summer stone fruit (such as apricots, donut peaches, plumquats, plums, cherries, white peaches) 2 each vanilla bean pods 2 cups pure maple syrup

Preheat the oven to 250 F Ingredients for Torrijas: 6 extra-large eggs 1 1/2 cups Half-and-Half 1 teaspoon grated orange zest
STONE FRUIT SALAD In a large bowl, toss in wedged stone fruit. In a small sauté pan, warm up maple syrup. While heating, cut and scrape vanilla pods for seeds. Add seeds to mixing bowl. Once maple syrup comes to a simmer, add

it to stone fruit in mixing bowl. Toss and let steep for 15 minutes. TORRIJAS In a large shallow bowl, whisk together the eggs, Half-and-Half, orange zest, vanilla, honey, cinnamon, paprika, and salt. Slice the brioche in 3/4-inch thick slices. Soak as many slices in the egg mixture as possible for 5 minutes, turning once. Heat 1 tablespoon butter and 1 tablespoon oil in a very large saute pan over medium heat. Add the soaked bread and cook for 2-3 minutes on each side, until nicely browned. Place the cooked French toast on a sheet pan and keep it warm in the oven. Fry the remaining soaked bread slices, adding butter and oil as needed, until it's all cooked. TO SERVE: Serve hot with vanilla maple syrup, stone fruit salad, a dollop of mascarpone, and a dusting of confectioner’s sugar. Serves 4.

FAVORITE SUMMER INGREDIENTS: Sweet corn, tomatoes, and sweet peppers
Rinse fish thoroughly, removing any blood and the bloodline. Pat dry and set aside. Place a sheet of aluminum foil on a cookie sheet large enough to leave 2-3 inches all the way around the fish, then roll foil lengthwise and connect the ends to form a “boat.” Drizzle fish with olive oil.

INSPIRATION: “When I think of summer, I think of barbecue and cooking outside on the grill. This recipe is great because it can be done on the grill or in the oven. In summer, I also think of relaxing, and lean toward dishes like these that don’t need a lot of attention. This dish is great because you don’t have to eat it hot. Perfect for serving for company and great for busy moms like me who never get to eat their food hot.”

Salt Baked Thai Snapper with Green Curry Sauce and side of Summer Sweet Corn, Cherry Tomato and Sweet Pepper Salad Preheat oven or grill to 400F THE FISH: Get a large-boned, meaty whole fish such as snapper or rockfish. Branzino and trout also work well, just take caution with small bones. Have your fishmonger remove the fins, gills, and guts. Keep the head, tail, and scales. LOOHOO’S TIPS: A 1 ½-pound fish will yield two hearty portions. If serving more people, purchase more fish or one larger fish. Keeping the scales on the fish will help protect the flesh from the salt and make serving/removal of salt crush easier. Fish is fresh when the eyes are clear, the gills are bright red, and it passes the sniff test.
SALT MIXTURE: 5 cups Kosher Salt 5 Egg Whites ½ cup chopped Cilantro 2 tablespoon of chopped Lemongrass (fresh or dried) 8 Kaffir Lime Leaves (fresh or dried) chopped 2 inch knob of Galangal root (fresh or dried) 2 Tablespoons of olive oil Mix salt mixture ingredients in a large bowl. The mix should hold its form when packed in your hands, like wet sand. If not, add another egg white and some water. Tightly pack to cover all parts of the fish except head and tail. Cook in oven or grill for approximately 30 minutes or until the eyes turn white. Remove from oven or grill when done. Let rest for 10 minutes before removing salt crust and skin of fish. Use a knife to cut the salt crust in half down the length of the fish for easy removal. It should remove easily in large chunks. Gently peel away the skin to expose the tender cooked flesh.

Summer Corn Salad with Cherry Tomato and Sweet Summer Peppers 1 cup of cooked corn (approximately 2 ears of corn) ¼ cup of cherry tomatoes cut in half 4-5 sweet peppers cut in to thin slices ½ of medium shallot, sliced ½ lime In a sauté pan, toss ingredients with some olive oil and gently cook for 1-2 minutes. Garnish with fresh cilantro leaves and a squeeze of lime. Quick and easy Green Curry Sauce 1 teaspoon green curry paste 1 cup coconut milk 3 tablespoons water 2 tablespoons sugar ½ lime In a sauté pan, add some oil and cook the curry paste for 2-3 minutes. Add 3 tablespoons of water until the paste is smooth. Add coconut milk and sugar and let simmer on low for 1-2 minutes. Yellow curry or red curry can be substituted, depending on how spicy you like it. Drizzle curry sauce over fish. Add a squeeze of fresh lime and garnish with cilantro leaves. Serves 2 people with a 1 ½-pound fish. SERVING OPTIONS: Serve family style with the fish as centerpiece and a side of salad and curry sauce. Or, to plate “restaurant style,” use a ring mold and place the salad on the bottom, then top with pieces of fish. Remove ring mold, spoon curry sauce around the base of the salad. Add a squeeze of lime and garnish with cilantro leaves and a drizzle of good olive oil. JULY 2014

Heirloom Tomato Tart with Homemade Ricotta and Brown Butter Lobster
CHEF: Marcus Hollingsworth TITLE: Executive Chef, The Ranch House WHERE TO FIND HIM: theranchhouse.com FAVORITE SUMMER INGREDIENT: Heirloom tomatoes MEAL: Decadent summer dinner INSPIRATION: “When I imagine cooking for the summertime, I might picture a picnic lunch or hiking in Matilija Canyon, and the flavor profile of the dish comes from that. In summer I am drawn toward lively, bright foods built around ingredients like citrus, fresh greens, and olive oil; and I prefer making light dishes, ones that leave you wanting to go out and do something.” Heirloom Tomato Tart with Homemade Ricotta and Brown Butter Lobster When preparing for this dish it is important to NEVER refrigerate your tomatoes. Buy a tomato that gives a little bit when you gently squeeze it, and it should have a sweet floral smell towards the stem. Let the tomato sit out in your kitchen to ripen, if need be. If you want to speed to process, place the tomato on top of a bunch of bananas; the enzymes released from the ripening bananas help other fruits ripen as well. TOOLS NEEDED: cheesecloth fine sieve strainer heavy 6 quart stock pot sheet pan micro-plane zester PIE DOUGH: 1 pound of unsalted butter

1 cup all-purpose flour 2 ounces iced water salt to taste In a large bowl, place the all-purpose flour. Add salt and taste. You should be able to faintly taste the salt when you pinch a bit of flour and press it to your tongue. If you have the time, freeze the butter and then grate it with a box cheese grater. Grate the butter directly into the flour and salt mixture. Pour in about half the water and mix by hand. Add the remaining water, and mix completely. You should still be able to see some of the butter pieces suspended in the mixture. Do not over mix. Shape dough into a round piece. Press dough slightly, so it becomes flat. Wrap and place in refrigerator for at least 20 minutes.
fine-mesh cheesecloth Line a large sieve with a layer of heavy-duty (fine-mesh) cheesecloth and place it over a large bowl. Slowly bring milk, cream, and salt to a rolling boil in a 6-quart heavy pot over moderate heat, stirring occasionally to prevent scorching. When simmering, add lemon juice then turn off heat. Let stand for about 5 minutes and then heat again over high heat. When the mix begins to bubble vigorously around the sides, turn off heat and let sit for 10-20 minutes. This is the “recooking” that defines ricotta. Pour the mixture into the lined sieve and let it drain 1 hour. Keep the liquid that has separated. This is whey— it makes a great soup base. Chill the ricotta, covered; it will keep in the refrigerator 2 days.
Roll the dough out on a clean, floured surface, turning a quarter turn every other roll, achieving a disk. Use a pastry brush to brush away excess flour. Cut the dough into a disk about the size of a tomato—it helps to use a coffee saucer to trace along the outside of with a paring knife. Place new disk on a cookie sheet with parchment on the bottom and freeze for 5 minutes. Remove from freezer and poke small holes in the shell with a fork.
LOBSTER: 2 tablespoons unsalted butter 5 ounces precooked lobster claw meat 1 lemon
Cook at 350 degrees for 10 minutes. Turn the shell 180 degrees and cook for another 5-8 minutes, until golden brown. Cool at room temperature.
ASSEMBLY: Make a baby greens salad to put in the background of the dish. Toss together some baby greens, hand-torn fresh herbs with a little splash of fresh lemon juice, salt, pepper, and extra virgin olive oil. Place the tart shell on top of the greens. Slice a round of heirloom tomato and place it on the tart shell. Slightly salt the tomato with Italian sea salt. Place the ricotta on the tomato and sprinkle with fresh-ground pink peppercorn. Top with lobster and a little fresh lemon zest.
HOUSE RICOTTA: 1 cup heavy cream 1/2 teaspoon salt 3 tablespoons fresh lemon juice large sieve
Cook the butter in a sauté pan over medium heat until butter becomes very aromatic and brown (not burnt). Add the lobster and cook for 3-5 minutes.

To build the perfect restaurant, chef Robin Byle and her woodworker husband Eilam hardly had to leave their house. Welcome to Table 18 and the rise of pop-up restaurants.

hen I bought my ticket to Table 18, I felt like I was going to a speakeasy for foodies. Billed as a pop-up restaurant, I had to be vetted first and wouldn’t get the address until the day before. Other than a teaser description of a few choice menu items, including a fresh organic celery and lemon gin martini, citrus-marinated yellowtail crudo, and Watkins Ranch grass-fed beef with preserved lemon chimichurri, I had no idea what I was in for. Charmed by savory aromas swirling through prayer flags hanging from the “restaurant’s” front porch and a shabby-chic front door flung wide open, the home on Rice Road in Ojai was nondescript and seemed tiny. I stepped over the threshold and down into an intimate gathering of exactly 18 well-dressed hungry guests.

I was instantly taken with the home’s interior design, a wideopen space of just 1,100 square feet flooded with natural light and full of colorful abstract artwork and intricate wood carvings. Rustic picnic-style tables rested on stained concrete and bordered an open kitchen, where I met host and chef Robin Byle, whose restaurateur parents and grandparents influenced her career choice. “Because of my exposure to fine dining as a child and my grandmother cooking everything from scratch, I was drawn to unique foods and cooking at a very young age,” Robin says. After graduating from New York’s prestigious Culinary Institute of America in 1984, Robin headed west to pursue her culinary ambitions. She cooked in some of the best restaurants in Los Angeles before she found her dream job as a private caterer to the stars (she can’t say who). She later moved to Santa Barbara, and eventually to this home in Ojai where her private catering operations are now based. It was a walk in 2010 with her now-husband Eilam that set the wheels in motion for buying the house and getting married—even though, as Eilam recalls, the couple had only been dating for a short time. “When we used to walk by here, we were new to each other and just trying to learn each other. We would walk by this lot, and we always loved it. But it was not about the house; the house was pretty worn down,” he says. Rather, it was about a “feeling,” recalls Robin. “We always felt it when we walked past.” Soon, the couple, both in their fifties, noticed a for-sale sign. They told the realtor they didn’t want to pre-inspect the house, built in 1947, because they knew they would see its many faults and change their minds. After escrow closed, they finally got a look, and it was worse than they imagined. Fortunately, Eilam is a master woodworker, furniture craftsman, and painter. “It’s all the same skill,” he says. “It’s all hands and patience.” Without touching the exterior footprint, he tore the house apart, opening up walls, floors, and ceilings, converting the tiny chopped-up five-room house into a more spacious-feeling tworoom home, bathroom included. A small second unit on the property has yet to be renovated and currently serves as the family’s sleeping quarters (between them, they have four children ages 11 to 19 who live with them part-time). “A lot people say that when you work on a house, it’s one of the things that either makes or breaks you. For us, it definitely brought us together,” Eilam says.
Six months after escrow closed, the couple married, and Eilam tackled designing the kitchen while Robin scoured Craigslist ads for a commercial-grade oven appropriate for her business and their small residential space. She finally found her dream range: a stainless steel FiveStar six-burner stove with double oven. “It was sitting in someone’s garage for 12 years,” Robin says. It was so big, though, she had to sacrifice having a dishwasher. But she was happy to do it. In fact, with such a small space and a desire to entertain, a lot had to be sacrificed and downsized, something the couple is pleasantly philosophical about. “Owning a lot of things carries a cloud of weight,” Eilam says. “Everything has value, and you kind of feel responsible for it.” Eilam made the custom kitchen cabinets out of beech, a sustainable hardwood, and Kirei, a recycled straw. Opening up the ceilings, he fashioned exposed beams out of Douglas fir, hand selected for the grain, and finished with iron accents. He pulled up the wood floors, revealing the concrete foundation below, which was then polished and stained. The floor planks were handdistressed and repurposed as picnic tables—one seats 10, the other eight—and in 2013, Table 18 finally became a reality. Doors, cabinets, and other furnishings are also Eilam’s creations, always sustainably sourced. “Most of the furniture that I make, it comes from fallen trees in the valley or recycled sidings of old houses,” Eilam says. Each piece has a story, even his carved art pieces. A dead old tree. An old house with layers of paint colors. The local tree trimmers and builders know him well. “Sometimes we come home, and there’s a big stump in the driveway!” Robin laughs. All of the doors have glass insets, some made with vintage shower doors, which, along with the addition of skylights, bring in ample sunlight. Light fixtures made of vintage glass telegraph insulators pinpoint Eilam’s pieces and provide task lighting for Robin’s kitchen countertops. The house is a true reflection of both of them, minimalistic yet with all the necessary comforts and charm. Eilam nods in agreement when Robin says, “I just feel very at home here.” v

CRAFT CULTURE Strange brews. Experimental spirits. Slow-sipping tequilas. How local artisans are raising the bar on booze. BY NANCY D. LACKEY SHAFFER
W
ith vineyards stretching from Humboldt County to Temecula, California has become synonymous with wine. Crystal stemware is now almost as emblematic of the state as the California poppy, black bears, and the Golden Gate Bridge. But while Ventura County boasts its own collection of excellent wineries, an ambitious group of craft beverage makers are steering the conversation away from the grape and toward the grain. Fermentation and distillation are Old World traditions, but a handful of local distillers and brewers are reimagining spirits and brews for a new generation— with delicious results. At Ventura Spirits Company, it’s all about terroir: the unique scents and flavors imparted by the complete natural environment, including soil, climate, and topography. Capturing the taste of the Central Coast is what inspired the four founders—Henry Tarmy, James Greenspun, and brothers Andrew and Anthony Caspary—to go into the micro-distillery business in the first place.
“It’s cool to think about what people would have made if distilling had been invented here,” Tarmy says. Scotland has its peat; Russia has its potatoes; and Ventura County has its prickly pears, which the partners have used to make a flavorful spirit called Opuntia in the their facility on Ventura Avenue. It’s practically an eau de vie, so faithful is it to its prickly pear origins: tropical and melony with a hint of fruity earthiness. Their California Vodka is made with strawberries, but make no mistake: this is a true neutral spirit. Where Ventura Spirits Company really shines, though, is with its Wilder Gin. “We wanted to recreate what it was like JULY 2014

to go hiking in the hills around here after the rain,” Tarmy explains. Purple sage, California bay leaves, sagebrush, and yerba santa are all wild-harvested locally. Citrus notes come courtesy of dried Ojai Pixie tangerine peel. Crazy herbaceous and a bit wild: a taste of the Ojai Valley. A whiskey made from kernza is slated to debut later in the year. Found in the Midwest, kernza is a perennial wheatgrass developed by the Land Institute as a possible substitute for wheat. Exceptionally nutritious and low in gluten, it uses less water than wheat and coexists easily with other native grasses, offering tremendous benefits to society and the environment. “By making whiskey out of it, we hope to raise awareness about the plant,” Andrew Caspary says. “There’s an element of innovation in the idea as well,” says Greenspun. “We’ve opened this space to experiment, to do something never done before.” A few miles down the road is Channel Islands Distillery, nestled in the heart of Rum Row, where bootleggers made booze during Prohibition. It’s fitting, then, that this distillery’s signature product is quality rum (although they make vodka, brandy, moonshine, and whiskey, too). Unsatisfied by most of the rum on the market, owners Michael Machuzak and Joe Freas founded the company as a way to get the smooth, rich rum they craved. “We wanted to make a nice, full-bodied, sippable rum,” says Machuzak. Mission accomplished: their spirit is exceptionally smooth, amber in color, with toasty spices in the nose and vanilla and oak on the tongue. The lighter Silver Rum is ideal for mixing. Grey Ghost, not yet available, has rum lovers waiting with anticipation: a “devil’s cut” (the alcohol that gets trapped in the wood during the aging process) held longer on oak chips to impart greater flavor and character. The name comes from a famous rum-running ship. “We want to promote this as a local product,” Machuzak says. “Our rums are an homage to the rum runners. … That history brings the color and life to the story that our spirits tell.” In Moorpark you’ll find the modest but comfortable offices of

Montalvo Tequila, where Alex Viecco operates the public side of the business he started with Sergio Gonzalez Rivera and Carlos Gonzalez. “Carlos introduced me to tequilas,” Viecco recalls. “I dove head and feet into the process and fell in love: the culture, the soil, the product.” Rivera and Gonzalez handle production in the town of Tequila, in the Mexican state of Jalisco (a product can’t be called tequila unless it’s produced in designated areas of Mexico) but Montalvo is very much a local company. Viecco spends much of his time running tastings at Ventura County bars and restaurants, trying to educate the public about his premium spirit. “I want to be a catalyst for creating the tequila revolution,” he explains, expressing a desire to see it regarded on par with the finest scotch and brandy. Triple-distilled and handcrafted, all three Montalvo offerings (Plata, Reposado, and Anejo) rise to that expectation, expressing pure agave flavors along with more complex notes. Wonderful in a cocktail, they’re even better straight—and served with a fine meal. The Central Coast beer renaissance is much older than the microdistillery revival, but one of the newest breweries on the block embodies much of what makes the local beverage scene so exciting: handcrafted with local ingredients and a penchant for experimentation. Walking into Institution Ale Company on any given evening, you’re bound to find something creative on tap: a smoked jalapeño porter, a coffee-infused stout, ales with a fruit base. “If we can squeeze a specialty in, we will,” says Shaun Smith, who co-owns the brewery with his father, Roger, and brother, Ryan. Something not seen much around these parts is a sour beer, which gains its unique flavor from lactobacillus bacteria (the same found in yogurt). “It’s low alcohol, light, sour, and acidic—really interesting,” Smith explains. Seasonal ingredients drive these pilot batches, which are frequently tested on customers. “Because we do most of our business in the tasting room, we have more flexibility.” Ventura County is a bountiful place, and it’s no surprise that the farm-to-table movement would eventually catch up to the beverage industry, as a thirsty public demands more locally sourced libations. “It’s the Golden Age for beer right now,” Smith says of California’s craft beer revolution and the enormous popularity Institution Ale has enjoyed since opening its doors eight months ago. As Anthony Caspary of Ventura Spirits Company puts it, referencing West Coast beer and wine styles, “California has a way of putting its stamp on things. We think we have something substantial to offer in the way alcohol is made and consumed.” v
