THE ULTIMATE REALITY

T

RIPLE-DIGIT TEMPS CAN’T KEEP A GOOD man down. So, with pen clipped to pocket protector, intrepid writer (and self-proclaimed former nerd) Mark Storer braved the heat wave of May and took one for the team, enlisting as the experimental guinea pig of his own journalistic research. Now, I’m no sadist. And Ventura-based physical trainer Blair Ferguson (page 28) is no Dr. Mengele. But I confess to a callous snicker while reading a last-minute plea for mercy from a guy whose regular workout consists of walking the dog. With a gentle editorial nudge, Storer took the first step—a mere assessment—of a cutting-edge fitness process called Muscle Activation Techniques, or MAT, which aims to reestablish proper neuromuscular function by getting one’s muscles to fire correctly again. In all honesty, it wasn’t terribly grueling for our brave wordsmith. It did nothing to exacerbate his tendonitis or chronically stiff neck. And who knew it would be 95 degrees at the coast? The intent was simply to jazz up a first-person article,

to offer Ventana readers something more entertaining than a lifeless business profile. But since Mark’s email plea landed on my birthday, just as a bartender slid an icy pint glass my way, I couldn’t help but revel in a moment of poetic retribution toward a writer who has been known to swirl and sip his way through, ahem, research—and pause to remind me that I’m not doing the same. As you can imagine, plenty goes on behind the scenes here. I’ve been knocking out these front-of-book notes every month without fail since Bush was president and the iPhone was still a rumor. Some flow, others clunk to their death at the bottom of page 6. But I’ve never just listed the stories in a particular issue. I typically devote Wednesday of press week to writing something relevant to our theme—and hopefully more entertaining than our table of contents. This week, sadly, it was given over to a funeral. RECIPE FOR SUCCESS

Ventura’s Jason Hendrick started the blog Everybody’s Hungry to chew the fat about food. Now the savvy Samaritan has taken his online platform to a higher level, spicing things up with a generous splash of food-oriented philanthropy. BY NANCY D. LACKEY SHAFFER | PHOTOS BY MARIE GREGORIO-OVIEDO

F

EW THINGS SHOW THE DISPARITY BETWEEN RICH and poor like food. This is especially apparent in Southern California, where organic gardening, high-end cuisine, and artisanal everything (from cheese to beer to spirits) have grown in lockstep with poverty and food insecurity. One man attempting to change that is Jason Hendrick. The food lover, philanthropist, and local brand ambassador has used his business, Everybody’s Hungry, as an anchor for a wide range of initiatives, all aimed in some way at fighting to end hunger in Ventura County.

Hendrick always loved food, even if his initial experience with it was rather modest. Like many a good Midwestern boy, the Indiana native grew up on a steady diet of meat and potatoes: simple, hearty, humble. He graduated with a degree in Hospitality Management from Purdue University and took a variety of jobs that allowed him to travel the world, working with resorts, cruise lines, and hotels—and sampling some of the best cuisine every region had to offer. “I’ve always been into food,” he says, “but [travel] gave me a deeper appreciation and more sophisticated vocabulary.” A stint as a project manager at Goleta-based hospitality software company InfoGenisis (now Agilysis) brought Hendrick to the Central Coast. “I really connected with the guys I worked with,” he recalls, “and fell in love with the area.” He took up scuba diving, skydiving, and disc golf. He also gravitated towards the local foodie culture, roaming the streets of Santa Barbara and Ventura hunting down the perfect carnitas, the best IPA, classic recipes, and unusual fusion attempts alike. After getting married, he moved to Ventura and, in 2011, started a food blog called Everybody’s Hungry—which started out being just RIGHT: Everybody’s Hungry founder Jason Hendrick with his wife, Bree, at the Saturday morning farmers’ market in Ventura.

about food, but quickly evolved into the idea of savoring everything life had to offer. The way Hendrick sees it, “everybody’s hungry” for something: love, excitement, camaraderie, purpose. Part of Hendrick’s purpose: giving back to his community. “In order to be original and more interesting to me, it needed more than food,” Hendrick recalls. “I started documenting my dining expenses, and donating 10 percent to FOOD Share. Now we donate a flat $50 a month.” Which would be a laudable, if modest, accomplishment in and of itself. But that’s not the only thing Hendrick has done with Everybody’s Hungry. He’s used it as a platform to launch a food education and awareness campaign, a media consultancy, and a brand ambassadorship. And no matter where his company is going, he brings FOOD Share along for the ride. “It’s important to me to loop FOOD Share somehow into all of these endeavors,” he says. Take, for example, his radio show, “The Hungry Man,” on Tom & Sandy 805, which airs on KVTA 1590AM. Talking about everything from apples to ziti, he gives listeners an in-depth look at the local food scene, and has several segments featuring FOOD Share. Commercials for the nonprofit air during his podcasts “Pints & Pairings” (recorded with Curtis Taylor of HopHeadSaid) and “Happy Hour with Joby & Curtis” (featuring Taylor and Joby Yobe, owner of Barrelhouse 101). A running enthusiast, he even started a racing team, which has raised some $1,700 so far for the hunger-fighting organization. FOOD Share is the nonprofit with which Hendrick is most closely associated, but Everybody’s Hungry is something of a multiheaded hydra (albeit a hydra with a penchant to do good). Hendrick serves on the advisory board for Food Forward, and has put his media knowledge to work on their behalf. He’s also been involved with Casa Pacifica as part of their festival committee and a judge for their annual Yummies Culinary Competition. “Helpful is not a strong enough word to describe Jason,” Taylor says of his Pints & Pairings co-host. “He’s thoughtful on a global order. Whatever he’s working on, he’s always thinking about how that can help other people or other projects.”

Which includes local food. Using his vast connections and a penchant for event planning, he has done much to raise the profile of local food purveyors. The first food tour organized by Everybody’s Hungry was at the now defunct California Mushroom Farm. “The attendees paid with canned goods for FOOD Share,” Hendrick recalls. Rio Gozo Farm, Four Brix Winery, Ventura Meat Company, Montalvo Tequila, and Barrelhouse 101 are just a small sample of the businesses he has either profiled on his website or in a podcast, or promoted with an event. The businesses enjoy the exposure Everybody’s Hungry offers, while local residents learn more about the fantastic food and beverages available in their own backyard. Hendrick believes that going local is key to a sustainable food source, and it’s important to him to get the word out. “I’m learning more about the local and organic angles of the agricultural industry,” he says. “I’m able to get exposure to these people through my work with the radio shows, events, and other projects I take on.” One of his most recent projects involves Ventura-based Beacon Coffee, which is working with Everybody’s Hungry to create and market a special blend, a portion of whose proceeds will go to FOOD Share. Beans should hit the shelves later this year. The relationship with Beacon Coffee perfectly encapsulates all that Jason Hendrick is about: supporting a local food product he loves while growing his brand and benefiting his community. “All of these endeavors allow me to educate people about the things I’m passionate about, and also help causes I believe in,” he says. The fight to end hunger continues, and Hendrick is committed to doing his part, sharing his largesse the best way he can: by enjoying local food and beverages while giving back to those who have a harder time partaking. “With a gap of almost 30,000 individuals still needing assistance in Ventura County alone, there is still plenty of work to do,” he admits. In the echoing canyons of Arizona, gregarious travel writer Kathy Chin Leong tunes in to her inner voice.

t began as a vision: a destination spa that would take advantage of the incomparable views of the red rocks of Sedona, Arizona at the base of Boynton Canyon, legendary for healing and restoration. It would be a luxurious world unto itself nested within the existing five-star Enchantment Resort. Three years and $16 million later, Mii amo Spa at Enchantment finally came to life.

The name signifies passage or journey in the Havasupai Native American dialect, and it is an apt moniker. Since its inception, Mii amo has offered extraordinary journeys to well-heeled customers and earned a reputation as one of the most elite all-inclusive spas on the planet. At 24,000 square feet, the size of many museums, the spa features 16 wondrous guest quarters, 23 treatment spaces, meditation grotto, restaurant, juice bar, fitness room, swimming pools, organic garden, and gift shop.

The majority of guests are women between 40 and 60. Some arrive solo, others with companions. A stressed CEO from Walnut Creek happily admitted to me that she was treating herself to a week’s worth of pampering. At the pool, I spied a 50-something couple with their adult son, an exception to the rule. Then there were the Midwest newlyweds having a tiff. I know this because he was apologizing in hand motions, then fled to the restaurant and returned with a glass of wine to appease his bride. If Mii amo is a sanctuary within Enchantment, then the spa treatment area is a sanctuary within a sanctuary. The limited number of guests means you are not heeding a cattle call when your name comes up for your massage. And, by the way, the treatments are pretty darn awesome, especially the signature Prickly Pear Butter Wrap, utilizing juice from the local cactus. On another day, the therapist brought me to a massage room with a wall of windows facing the red rocks and bluebird sky, again a reminder of how lucky I was to be in this otherworldly canyon. This place satiates a sojourner’s need for privacy, and if you are as gregarious as I am, keep your outgoing nature in check. Whenever I initiated a conversation with potential spa buddies, they were willing to oblige with simple pleasantries, but that was it; I must have appeared like the girl desperate for friends. But I can understand why people just want to BE here. The modern interiors with simple lines and natural materials result in a Zen-like atmosphere. High ceilings and ample windows reveal the star of the show: the orangered rocks of the Boynton that loom large and foreboding. Each day, up to 23 back-to-back classes focusing on fitness, food, art, and Native American culture are offered. My adult daughter, Gwen, and I were mostly drawn to Mii amo’s healthy culinary focus, including courses on organic gardening and the benefits of tea,

not to mention cooking demos, wine tastings, and Juicing 101. As the spa is located in Sedona, a New Age thread weaves through many classes. In the vision board course, I quietly cut out and pasted positive words and magazine photos to illustrate my life goals and desires. I stifled the urge to go up to each person to say, “What are you working on? That looks so cool. I wish I could be as artistic as you!” When each page was completed, the group stretched out hands over the artwork while the instructor had us repeat a blessing over it to have the themes manifest into being. Meanwhile, Gwen stepped into her dance class

assuming she’d learn a ballroom or jazz routine. Imagine her surprise when the instructor had everyone spontaneously leap around to become elements of fire, wind, earth, and water. For those there primarily to boost physical health and well-being, Mii amo doesn’t disappoint. Daily hikes can be rigorous and take participants off the property to a nearby national forest. Aqua aerobics, cardio tennis, and back exercises also draw folks taking time to work on themselves. This is a place that leads by healthy example. On the tables at the restaurant you’ll find a threetiered oak box with natural salt crystals (no Morton Salt here). On the menu, dishes like wild salmon

with truffle-scented couscous include counts of calories, carbs, and protein. Chefs prep their saucepans with olive oil using a sprayer instead of pouring from a bottle. After my two-day spa adventure, I realized that tempering my eager beaver personality enriched the journey. I initially believed that listening to the chefs and their cooking tips would give me a healthier outlook. I eat relatively well, but I do enjoy the odd glass of wine or pint of ale—and yes, I’ve enjoyed several of them at one time. Sometimes together and sometimes, well, I’ll have yours if you don’t finish. But I’m relatively conscious of the fact I shouldn’t be eating a lot of processed sugars and barbecued hot dogs. Blair Ferguson intuited this about me. It took him about two hours or so, and I had never met him before. But in that time, he got to know me better, perhaps, than my own family does. He knew, for example, that I carry myself with my left shoulder higher than my right shoulder, and he knew this was probably caused by a back injury. He knew that I have tendonitis in my left foot and that I have a chronically (off and on) stiff neck. I don’t think he knows my sensitive side, but he can tell that I’m not an athlete and that I do crave the occasional pint. And chips. Forget everything you know about exercise. It’s all wrong anyway, according to Ferguson. He’s a personal trainer, not a boot camp director, not a drill instruc-

tor telling me how flabby I am. He didn’t work me until I broke down in blood, sweat, and tears. He studied me, took measurements, asked a ton of questions, looked at how my body is positioned, and then discussed with me how to get from where I am now to where I want to be. Or at least where I might like to be was I not stopping at the brewpub and the donut shop on a regular basis. I never broke a sweat. Ferguson said that doesn’t happen until after the first two meetings, which are essentially evaluations. Welcome to Ventura Training and Athletics. Ferguson and his small team of professionals work here and they don’t do what you might be expecting them to do. “So much of what I do here is talk to people. We get a pretty complete history of each person, their health, their well-being,” said Ferguson. “That history tells us where things have potentially gone wrong or what they need. And then, regardless of how they’re feeling, we get a sense of where we need to start with each person and help them build up to their peak performance.” Ferguson is not your typical gym master. He cuts a fine figure himself, if a little bit sleep-deprived after the recent birth of his first child. In his gym and office on Main Street, he works with all kinds of people, including professional athletes, to help them optimize their performance, build muscle, and get in top condition. He also works with, well, people like me who spend a lot of time looking at a computer screen and talking to people and sitting in front of plates of rich food, glasses of wine, and pints of ale. I should probably add that he also helps people like me who are largely afraid of exercise, even if I do obsessively walk and hike and take my dog on long jaunts. I had been suffering a sinus infection with the added pleasure of vertigo when I visited Ferguson at his gym. I was off balance and not up to snuff and felt every bit of it. But I submitted myself to an evaluation by Ferguson because, well, anything for the First Amendment, and I thought maybe this would be the motivation I need to bypass the next bypass-triggering meal. You won’t find nutritional supplements in his store or motivational videos or anything like that. What you’ll find is a serious, focused, and trained exercise physiologist with a degree from Cal State Northridge who takes the body and its muscles very seriously. “It’s not a typical kind of ‘come in and exercise,’” explained Ferguson. “We’re constantly asking the question, ‘How is your body doing?’ Regardless of how you’re feeling, how is your body doing? Most people really don’t know; they go by how they’re feeling, and how you’re feeling is just a little biased.” Ferguson uses something called Muscle Activation Technique, or MAT, invented by Greg Roskopf, an exercise physiologist. He is certified in the technique and it’s a far cry from “taking you in and letting you beat yourself up.” When Ferguson told me that sports are not healthy, I perked up. “Athletes are the most beat-up people out there,” he said. “Physical competition is not necessarily healthy. We do get athletes here, but we also get people who simply want to get healthy again. We meet them where they are. It’s a process— exercise is a process, and it is dependent on what your body can do, not what I can do to it.” At last, I had confirmation of the fact that my bookish years of sitting about listening to Rush albums, reading Tolkien and

Twain, and being a nerd were probably better for me than, say, playing football. Right? Not quite. “The body is supposed to be symmetrical,” Ferguson explained. “We’re designed that way. Often times what we see is that people aren’t symmetrical, and that is the beginning of things like tension and pain.” He said this as he measured my thighs. Turns out, my left one is nearly an inch bigger in circumference than my right. The imbalance has likely been caused by the way I sit, stand, and walk. And that’s probably more a product of my bad back and feet than anything else. Ferguson said my orthotics probably don’t help either: “Invariably, wearing orthotics means the foot muscles, which are so complex, aren’t working the way they’re supposed to.” He said he sees people like me all the time. But I think he meant it in a good way. “People with pain symptoms go to physical therapists, and that’s a good thing,” he said, “but once the pain is gone they tell you you’re clear.” He was reading me now. I have a physical therapist on call, pretty much. He’s a good dude and he likes wine. Ferguson continued, “But once you’re clear of pain, unless you’re building the area, you’re inviting the pain back.” He activates the muscles in a specific way: by working with the brain, essentially. “I want the brain to hold the muscle at a specific place, and it decides whether or not it can,” Ferguson said. The information he’s collected from a client then tells him how the muscle responds to each contraction or palpation. “Most people don’t know where that

line is, where the muscle can respond, and that’s why they have pain issues. What we do is to get the body more symmetrical and get it to function better, and that pushes up the threshold of what you can do. It’s not haphazard; it’s a very precise reading of what you can and cannot do.” His goal, he explained, is to safely bring the muscle to the point of failure. “Optimal to me is focused, intense exercise. You don’t have to do a whole lot of exercise—you just have to do the right kind.” I wasn’t worked-out or sweating, it’s true. Not yet. But I was a bit wiser, and my head was swimming with the thought of what exercise looks like now versus the thought of punishing myself with Pilates or yoga or running a few miles. I was also more aware of how incredibly complex the human body is. Every muscle, every fiber, every nerve, all meant to do very specific jobs. Could I optimize who I was and train to become the best physical specimen I could be? No, that was just the vertigo—and my head was indeed swimming. But as I walked out into the bright sun, getting my bearings and thinking about an optimal me, I did decide to sit a little straighter and pay attention to my body’s own dynamics. I even decided to have a glass of water with dinner instead of a glass of Chardonnay. So, that’s something. v

Cluff began teaching aerobics nearly a decade before the word was coined, using “cardiovascular dancing” to inspire her young students.

FOUNDING MOTHER Ojai’s Sheila Cluff sparked the destination spa industry, taught aerobics before there was such a thing, and introduced fitness to the masses. Here, the indomitable 77-year-old talks about her remarkable life—past, present, and future. INTERVIEW BY MARYANN HAMMERS BACK IN THE ’50S, BEFORE AEROBICS WAS INVENTED, Sheila Cluff was teaching people to move to music. Long before yoga studios had popped up on every corner, she was leading exercise classes at YMCAs and parks, using bicycle tubing as resistance bands (which didn’t yet exist), while upbeat tunes blasted from a record player. And years before Richard Simmons had become a cult figure and Jane Fonda donned leotards and leg warmers, Cluff had founded The Oaks at Ojai, one of the nation’s first destination spas to focus on wom-

en’s fitness and healthy eating. Today, at age 77, Cluff continues to teach several classes at The Oaks, which is now mostly run by her daughter Cathy. Cluff also leads fitness cruises, produces fitness videos, and is a competitive figure skater. For Cluff, fitness is always fun, never forced. It’s part of one’s life. It is life. In this interview, Cluff—fitness pioneer, spa legend, and healthy living role model—explains how it all began and what she’s doing now.

You refer to yourself as “the grandmother of aerobics.” Why is that? In 1959, I was a new P.E. teacher at a junior high school in Ottowa, Canada. On any given day, out of 60 girls, 40 were holding pink slips asking to be excused because they were on their periods. No one wanted to take P.E.—it was considered boring and unpleasant. Not to be defeated, I convinced the principal to hire a pianist and play tunes of the current day. This was before boom boxes. As a figure skater, I knew that movement to music is fun. It also gets the pulse rate up, improves the circulatory system, and burns calories. I coined this “cardiovascular dancing,” which the girls shortened to CV dance. This was the forerunner of the aerobics movement. So how did you go from teaching junior high P.E. to becoming a spa legend? The mothers of my students saw the dramatic improvement in their daughters, and they wanted to try it for themselves. So I began teaching CV dance to adults. I realized that fitness wasn’t just a fad, but was here to stay, so in 1960 I founded a company called Fitness Incorporated. I taught classes at Ys and Rec Departments, everything from Diaper Gym to Geriatric Fitness. We did exercise and modern dance to jazz—just a little different from today’s Zumba. I started a “Wellness in the Workplace” program; I coined that term. I had to be creative to keep clients interested. Resistance bands had yet to be invented, so I went to bicycle shops for old tubing. We attached two-pound weights to broomsticks. I had a huge record player, and when I led classes in the park, the 45- and 78-rpm records warped in the sun. In 1970, my family moved to Ventura County and I expanded Fitness Incorporated to include skincare and teen fitness. No one was teaching teenagers how to keep their skin and body healthy, so there was a need. We filled that niche. What was the spa scene like back then? “Massage” was a dirty word in those days, and aromatherapy was a foreign language. There were no day spas. “Spas” were alcoholic dry-out

centers or fat farms that starved and punished their clientele. And they were very expensive.

Through my travels to Europe, I realized they were way ahead of the United States when it came to meditation, taking the waters, and massages. I had the concept of opening a spa that would combine the best of Europe with physical fitness and good nutrition. I wanted a spa to include accommodations, meals, fitness programs, and speakers. I wanted to teach people a new way of life, so they can make good food choices and stay fit with movement that is fun, rather than making them stiff and sore and discouraging them. My goal was to expand fitness to the average person, so I wanted my spa to be affordable. We came across a run-down hotel in Ojai and leased the property in 1977. We had to renovate it and make monthly payments. We borrowed against our house, my husband’s pension plan, and our children’s college funds. We ran through our money and were down to our last $10,000. But if you are going to take a risk, you can’t put one toe in the water; you have to jump in with both feet. And we could see the light at the end of the tunnel. We opened The Oaks in 1979, and we just grew and grew. How has The Oaks changed over the years? We are constantly reinventing ourselves and have changed to suit both younger and older populations. Our fitness director is a step ahead of the trends, and offers cutting-edge classes like Zumba and Nia. But people also want to stay fit as they age, and we want to accommodate every ability. I teach one class that’s a real workout—all done from a chair. And we teach activities that people can do at home, such as yoga, meditation, and aqua yoga. We now offer more outdoor activities, with more emphasis on lifestyle. Some people won’t

summer, and in November, we’ll cruise the Rhine River … When you travel with a fitness group, you build camaraderie and have a lot of fun while staying fit. I am at a place in life where I have the luxury of giving back as a volunteer. I’m active with the Ojai Valley Land Conservancy and Ojai Valley Hospital Guild, and I play Mrs. Santa Claus every year at the Holiday Ice Show, a fundraiser to raise money for local foster children. At 72, I returned to competitive figure skating. I take oil painting classes, and will have an art show next year. Between January and April, my husband, Don, and I live in Mammoth, where we snow ski. And I am a really good grandma to my seven grandkids, ages 7 to 21. I am very involved in their lives.

participate in a typical aerobics class, but they will go on a six-mile hike or take a cycling class. We’ve also added interesting classes, such as trips to an olive farm. On our art walk, we’ll visit about 10 galleries while covering about two miles. It’s another way to burn calories. We’ve made a lot of improvements to the structure, too. In 1960, before I owned it, the façade had been stripped down, with mirrors around the fireplace. I had a plan to bring the building back to its 1919 historical origins, and we are about 75 percent done. We also recently finished a million-dollar renovation, and we put in cottage and mini-suites to accommodate anyone with a disability. And how about you—what are you up to? My daughter has taken over as CEO and president at The Oaks. But I am not retired: I am reinvented. I teach more classes and lead evening lectures. I lead mountain hikes and brisk walks. I spend more time chatting with guests. Since 70 percent of our guests are repeat, that’s really rewarding. Through my company Health Holidays, I lead fitness cruises. I’ve taken people to spas in Lapland on the Russian border in the middle of winter. We exercised in an indoor swimming pool surrounded by artificial palm trees with reindeers pressing their noses against the window. I’ll have 40 people going with me on a Princess cruise to Alaska this

Do you have any words of advice? Don't compare yourself with anyone else. Recognize your own body type, and be as fit as you can be. Don’t force fitness, but rather make it a lifestyle change. Be realistic: Start with something simple and convenient, and commit to doing it for just six weeks. For example, make weights by filling plastic bottles with rocks. Or practice standing on one foot to improve your balance, which has been shown to reverse chronological age. I make use of what I call “wasted moments,” such as when I’m holding on the phone or heating tea in the microwave. Once, while waiting in a long airport security line, I started doing squats. I got funny looks, but I explained that I was reducing stress and boosting my circulation. Before I knew it, about 20 people in line were exercising with me. The bottom line is this: Staying fit isn’t something you do on a spa vacation.
