WINTER LIGHT

here’s a cold wind blowing and lots of rain coming down as I type out this Editor’s Note, and that chill in the air is helping to put me in the holiday spirit. One of the charms of Ventura County, of course, is its extraordinary weather, and while it seems churlish to bemoan warm temperatures and lots of sunshine, the novelty of a storm has me downright giddy. It’s nice to put together a December issue when it actually feels like . . . well, winter. With that in mind, this month’s issue is filled with stories that celebrate the season — both the time of year, and the events that have come to define it. When the chill sets in, I find myself heading into the kitchen to rediscover my love of cooking. There’s nothing better than a hot bowl of soup or a mug of cocoa on a cold winter’s night, and for once, I don’t mind turning on the oven. With that in mind, we asked chefs around the county to share their favorite recipes for comfort foods, hot beverages and spicy treats — fare designed to warm you up from the inside out. Delicious, nutritious and easy to prepare, we think the offerings in our Cook This feature will be welcome on any table throughout the cold months. Of course,’tis also the season for holiday festivities. And no city is more festive this time of year than Ventura. Making the most of its seaside location, it offers

holiday merriment and sparkle with a beachy twist: Santa on a paddleboard, a light parade on the water, carolers singing aboard boats in the harbor. Ventura is full of light and life in December, and we showcase all its special facets in this month’s cover story. If wanderlust has you craving adventure more than the comforts of home, take a look at our latest Travel feature. Up a long, winding highway north of Ojai and nestled between the Caliente and Temblor Ranges is the Carrizo Plain, California’s largest single native grassland. Remote and unspoiled, a haven for Tule elk and numerous other wildlife species and home also to pictographs thousands of years old, it is a reminder of a California that existed hundreds of years ago. In winter, it takes on a lonely mystique, cold, clear and remarkably quiet: the ideal location for a silent night. Hot food for cold winter nights. A sparkling seaside community. 3 CASA PACIFICA SPOTLIGHT ON STYLE FASHION SHOW The Casa Pacifica Angels held the 17th Annual Spotlight on Style fashion show and luncheon on Nov. 17. The setting was the beautiful Four Seasons Hotel in Westlake Village, and included a runway, high-end boutiques where guests could shop and a champagne reception. The highlight of the afternoon was, naturally, high-end fashion: the Casa Pacifica Youth Fashion Show followed by the main show featuring couture by Los Angeles-based designer Robert Ellis. Over $5,500 was raised for Borderline shooting victims, while other proceeds supported Casa Pacifica’s therapeutic programs and services for at-risk youth.

entura County, like much of Southern California, is not known for being an icy wilderness, even in the winter months. But between wind, fog and

(when we’re lucky) seasonal storms, we get our share of days and nights that are less than balmy. And when the sun goes down and the temperature drops, we, like the rest of the country, turn to that ageold cure for the winter blues: comfort food. We’re talking delicious edibles served piping hot, straight from the pot or oven: big bowls of hearty stew, beverages served in thick mugs to wrap cold fingers around. This was our inspiration this month, and we turned to local chefs for a batch of recipes designed to make you warm and cozy from the inside out. And boy, did they deliver. The Spicy Feisty Kimchi Bacon Pancake

Creamy Lemon, White Bean and Kale Soup

For a spicy and sophisticated appetizer, look no further than these Koreaninspired discs made from salted and fermented Napa cabbage and dressed up with bacon, jalapeño and chili oil. Prepared kimchi can be found in Asian markets and specialty food stores, and sometimes in the Asian food aisle of wellstocked supermarkets.

Megan Roosevelt, RDN, founder of HealthyGroceryGirl.com, is also a spokesperson for Limoneira’s One World of Citrus. This recipe, using the Santa Paula grower’s award-winning produce, features tangy lemon juice, smooth white beans and crunchy kale. It comes together fairly quickly — just a little chopping, sautéing and simmering are all that’s required — so it’s a fantastic choice after a long day at work. With coconut milk and coconut oil instead of cream and butter, it makes a delicious dairy-free meal, too.

1 cup chopped kimchi (approximately 1 inch) 1/4 cup kimchi juice (may be strained out from jar of kimchi) 1 teaspoon salt 2 tablespoons chopped green onions 1/2 jalapeño, thinly sliced 1 cup all-purpose flour 1/2 cup water 5 strips of bacon Oil for frying Ponzu sauce Chili oil Toasted sesame seeds Bake or fry strips of bacon, leaving one side about 20 percent uncooked. Add remaining ingredients to a bowl and mix well. In a heated nonstick pan, add 2-1/2 tablespoons of oil and 1/4 to 1/3 of the batter. Spread it out to make a circle. Fry for 1-2 minutes. Before flipping, add a slice of bacon to the “wet” side so that the slightly undercooked bacon can finish. Flip over and fry for another 1-2 minutes. (For extra-crispy pancakes, flip again to cook each side for another minute or so.) Remove to a paper-lined plate and garnish with sesame seeds. Serve with spicy ponzu sauce (about 4 ounces sauce mixed with 1 teaspoon chili oil), if desired.

Begin by rinsing the kale thoroughly, then rip the leaves from the vine, and roughly chop. Heat coconut oil in a deep pan over medium heat, and add the onion, garlic and seasonings. Stir together and saute for 5 minutes. Add the kale and stir and saute for another 5 minutes. Add the stock, coconut milk, juice from one and a half lemons and the white beans. Stir together and simmer for 10 minutes. Serve. Makes 4 servings

Mayan Spice Chocolate Smooth, luscious chocolate is the very definition of decadence. When savory flavors are added to the mix, they bring a depth and complexity that is deliciously addictive. Jennifer Smith, co-owner with her daughter, Sophia Smith-Grunder, of chocolate boutique Ex Voto, has developed two tempting recipes — a hand-rolled truffle and a rich sipping chocolate — that combine piquant seasonings and rich dark chocolate to create a harmonious marriage of sugar and spice.

MAYAN HOT CHOCOLATE “There are two keys to making great hot chocolate,” Smith explains. “First, use high quality chocolate, not cocoa powder. Brands such as Guittard, Valrhona, Trader Joe’s or a handmade bean-to-bar chocolate make excellent hot chocolate. Second, heat the mixture thoroughly for at least 5 minutes. When the chocolate is well blended into the milk, it will thicken and create a rich creamy texture and full-flavored taste.”

MAYAN SPICE BLEND 2 teaspoons cinnamon 1 teaspoon ground dried habanero chile (found online or at specialty food markets) 1 teaspoon ground dried ancho chile

NOTE: This recipe can be made in the microwave or on the stove. MICROWAVE: Place the cream in a small microwave-safe bowl, add the spices and gently heat to around 150 degrees F. Do not boil. Allow the spice and cream mixture to cool while melting the chocolate. Place chocolate in a microwave safe bowl and microwave for 30 seconds. Stir. Continue to microwave chocolate for 30 seconds at a time, making sure to stir between each interval until melted — chocolate will burn if not stirred frequently. STOVETOP: Follow the directions above, heating the cream in a small pan (again, being careful to not bring to a boil) and melting the chocolate in a bain-marie (a bowl set upon a pan of simmering water) or double boiler. Pour the cream and spice mixture into the melted chocolate and stir with a soft spatula or small whisk until an emulsion is formed. The mixture should have the consistency of pudding. Stir in the softened butter until it’s fully incorporated. Let the mixture set up for 1-2 hours or overnight, unrefrigerated. To shape the truffles, use a melon scoop or teaspoon to scoop out 1 inch balls of chocolate. Gently roll the truffles between the palms of your hands to form rustic orbs, and then roll in cocoa powder to coat. You may also roll the truffles in melted chocolate and then in finely chopped nuts or cocoa powder to coat. Truffles can be kept at room temperature for 2 days, but really should be eaten fresh. To keep truffles longer, place in a sealed container in the refrigerator. Bring truffles to room temperature before serving. Makes 16 truffles.

Smith also notes that the recipe may be adjusted depending upon the type of beverage desired. Hot chocolate can be made to taste richer like European hot chocolate by reducing the quantity of milk. Alternatively, a lighter, American-style hot chocolate can be achieved by reducing the amount of chocolate. “The level of sweetness is determined by the percentage of chocolate used,” she cautions. “A high percentage of chocolate will be less sweet.” 6 ounces milk 2 ounces chocolate 1/8-1/4 teaspoon Mayan Spice Blend (or to taste) Place the milk, chocolate and spice mix in a small pan and gently heat on the stove for 5-7 minutes. Stir constantly to prevent scorching and to thoroughly incorporate the chocolate with the milk. Top hot chocolate with a dollop of whipped cream and a sprinkle of spice mix or cocoa powder, if desired. Makes 6-8 ounces.

Spicy Orange and Jalapeño Margarita

Soothing Lemon Cold Cure

They might look and taste like summer, but oranges are at their best in winter, and their sweet juice makes a brilliant complement to tart lime and tongue-tingling jalapeño in this sunny margarita which is guaranteed to make the season bright. Any quality tequila will do, but for added depth and flavor, infuse the tequila first with orange and chile. Simply add 1 to 1-1/2 pounds of sliced oranges and one sliced jalapeño to a liter of tequila and store in a cool, dry place for 4-6 hours. Remove the chile and let the alcohol sit overnight or up to several days with just the oranges. Strain and store in the refrigerator for up to 3 months.

The hot toddy is a traditional remedy for sore throats and raw nerves. Megan Roosevelt’s version skips the alcohol and infuses the lemon juice with savory herbs, pepper, cinnamon and ginger for a little heat, adding a generous dose of honey at the end to help the “medicine” go down. But with flavors this good, there’s no reason to wait until you’re under the weather to enjoy!

1 barspoon of sugar (approx. 1 teaspoon) muddled with a generous slice of orange and a thin slice of jalapeno (use more if you prefer it spicier). 1 ounce lime juice 1 ounce orange juice 1/2 ounce triple sec 2 oz. tequila infused with orange and jalapeño 1 glass rimmed with equal parts salt and sugar Lime slice (for garnish) Shake all ingredients in a shaker two-thirds filled with ice and strain into glass. 1 Limoneira Meyer Lemon 4 cups filtered water 1 inch ginger root 2 sprigs fresh rosemary 2 cinnamon sticks 1 serrano pepper 2-3 tablespoons local honey Rinse the lemon, ginger root, rosemary and serrano pepper. Remove the stem of the serrano pepper, then slice in half lengthwise and remove the seeds. Peel (if desired) and thinly slice the ginger. Slice the lemon into rounds about 1/4 inch thick. In a small pot, heat the water over medium heat. Add the rosemary, ginger, pepper, cinnamon sticks and lemon slices. Drop the heat to low and simmer for at least 10 minutes. The longer the concoction simmers, the stronger the drink will become. Add about 1 tablespoon of local honey into each mug and fill with the steeped drink. Stir well and serve. Makes 2-3 servings. Char Man Verde Mac and Cheese Ojai-based Char Man brand of hot sauces are made from locally available chiles and other ingredients, roasted, steamed and bottled right here in Ventura County. Char Man Verde is on the milder side, with a bright and tangy blend of fire-roasted guero, jalapeĂąo, serrano and Thai chiles. It adds a touch of zing to this grown-up macaroni and cheese, developed by Char Man founder Chris Sutton and made with Monterey Jack and mild green chilis. Comfort food at its best. 8 ounces elbow macaroni (2 cups uncooked) 6 tablespoons butter, divided 4 tablespoons flour 1/4 teaspoon freshly ground black pepper 2-1/2 cups milk 1/2 bottle (2.5 ounces) Char Man Verde Hot Sauce 1 can (4 ounces) mild chopped green chile peppers 8 ounces Monterey Jack cheese (about 2 cups) Salt, to taste

1 cup fresh breadcrumbs, ground fine Heat oven to 350 degrees, and grease a 2-quart baking dish. Cook the macaroni in boiling salted water, following package directions. Drain and rinse well. In a saucepan over medium heat, melt 4 tablespoons of butter. Stir in flour and pepper until well blended and bubbly. Continue cooking for 2 minutes, stirring constantly. Gradually add the milk to the butterflour mixture (roux), stirring constantly. Cook until thickened. Stir in Char Man, chile peppers and cheese. Cook, stirring, until cheese is melted. Add salt to taste. Combine the cheese sauce with the drained macaroni, stirring well. Spoon into the prepared baking dish. Melt the remaining 2 tablespoons of butter and toss it with the breadcrumbs until the crumbs are thoroughly coated. Distribute the buttered bread crumbs over the macaroni and cheese, and sprinkle lightly with paprika. Bake for 25 minutes, or until lightly browned and bubbly. Serves 4 to 6. LAND BEFORE TIME With windswept grasslands, teeming wildlife and ancient rock art, the remote Carrizo Plain promises a taste of “Old California.” STORY AND PHOTOS BY CHUCK GRAHAM

THE SOUND OF SILENCE The remote and unspoiled Carrizo Plain is one of California’s best-kept secrets. A grassland surrounded by mountain ranges, it feels as far away from civilization as the lunar surface, and sits in a quiet stillness that roars with majesty and grace.

D

uring the winter, one of my favorite drives is northeast on Highway 33, past Ojai and up and over the chaparral-choked coastal mountains and through the Sespe Wilderness. The winding road leads to a stunning overlook of the Cuyama Valley and its barren badlands. From there, it’s a serpentinelike descent until the road parallels the Cuyama River, through Ventucopa (where Kern, San Luis Obispo, Santa Barbara and Ventura counties meet), eventually meeting up with Highway 166. Heading east on the two-lane Highway 166, the Carrizo Plain National Monument signage comes up quickly. It’s only 10 minutes down the road before a hard left is required at what once was an old Union 76 station. As soon as that left is made, everything slows way down for me. Much of the Carrizo Plain still appears as it did 200 years ago. “Old California” beckons.

At just over 5,100 feet the Calientes are the high point in San Luis Obispo County and fall within the national monument. Snow dusted its upper reaches. A herd of Tule elk grazed in the dewy, mid-winter grasses at the base of the mountains in the Carrizo Plain. This is one of the fastest growing herds in California, living on what is the last of California’s historic grasslands. Last winter was kind to Central California. Early rains had produced the foraging habitat these large herbivores needed. My companion and I counted 81 elk as they had slowed to a crawl on a lush hillside, enjoying nutrient-rich grasses covering the frigid foothills of the Caliente Range. Not far away, on a steep sandstone face honeycombed in alcoves and small caves, one can find Chumash or Yokut Indian rock art. At one site is a depiction of a lone elk tucked into a small, gritty alcove 10 feet off the ground. Whoever drew it so long ago may have been watching thousands of Tule elk browsing as far as that artist could see.

BLAST FROM THE PAST: A remnant of California’s long-ago past, the Carrizo Plain is the largest single native grassland remaining in the state. Its ample vegetation supports a herd of Tule elk, which once roamed far and wide across the Central Valley. There are signs that humans thrived here as well: Pictographs thousands of years old adorn sandstone alcoves at Painted Rock.

sandstone amphitheater, it’s one of the more significant Native American sites in North America, and one of the main reasons former President Bill Clinton deemed it a national monument in 2001. Due to where it’s located and the tremendous view it offers from within, the swarm of nature can be overwhelming around Painted Rock, especially early in the day and late in the afternoon, when wildlife is most active. When I’ve walked inside Painted Rock in the past, I’ve been startled on several occasions by barn owls and prairie falcons emerging in a flurry of feathers from potential nest or perch sites, clinging to the multi-colored lichen that cloaks the upper reaches of the sandstone cathedral. A walk around the perimeter of Painted Rock is a haven for desert cottontails, white-crowned sparrows, soaring red-tailed hawks, American kestrels, raucous ravens, burrowing owls, coyotes, western Pacific rattlesnakes, sideblotched lizards and maybe even the endangered San Joaquin kit fox. Despite being vandalized in the past, there are still some fine examples of elaborate rock art on the shaded sandstone that has withstood the test of time. Wind and rain can be detrimental to rock art during the winter. During the summer sandstone can sweat in the sweltering heat and humidity, the Carrizo Plain being one of the sunniest places in the state. Painted Rock was and still is a vital gathering spot for local Native American cultures, resting on the boundary of Chumash and Yokut territories. It looks out over the extent of the Carrizo Plain, Soda Lake and the Temblor Range on the far eastern side of the grasslands. With much more wildlife back then, the spiritual significance must have been undeniable. It’s certainly evident in the rock art clinging to the sandstone. Due to a throng of nesting birds, visiting Painted Rock is by permit only from July 30 to March 1, through www.recreation.gov. There are a few tours led by naturalists after March 1, offered through the Goodwin Education Center located within the national monument. Winter is a great time to visit when temperatures are cooler.

SALTY SODA Soda Lake, an expanse of white sulfates and carbonates, is so dry that the salt deposits crunch beneath one’s feet. In winter, it is also frigid, early morning temps hovering around 30 degrees. At just over 2,000 feet a thin layer of frost will add to the crunch, breaking the utter silence on the Carrizo Plain. Soda Lake needs at least 6 inches of rain for it to fill with water. Once it does, however, it becomes an important stopover for migratory birds along the Pacific Flyway. American avocets and a variety of other shorebirds and waterfowl forage in the shallows. Soda Lake is the largest remaining natural alkali wetland in southern California, and the only closed basin tucked within the Caliente and Temblor Mountains. It has several advantageous viewing platforms. Two of them are on either side of Soda Lake Road, the main drag through the national monument. There’s the very short but steep hike to an overlook with amazing views not only of the alkali lake, but also of the entire grassland habitat. On the other side of Soda Lake Road is a

carpark and a trail leading to a raised boardwalk with interpretive signs. On the east side of Soda Lake is dusty Simmler Road, a dirt track that isn’t always passable after wet weather. It’s one of the roads that connects Soda Lake and Elkhorn Roads on either side of the grasslands. When it’s passable there are several pullouts along the way offering different perspectives across the lake toward the Caliente Range. Afternoons are also entertaining when Soda Lake is dry. Winds typically increase, and huge dust devils may stir across the glaring pan. Particles of carbonates and sulfates swirl in the winds like small tornadoes as the plumes waft skyward.

PLAN YOUR VISIT INFORMATION CENTRAL The Carrizo Plain is managed by the Bureau of Land Management. A visit to the Goodwin Education Center offers information about wildlife sightings, road conditions, maps and interpretive displays about the grassland habitats in the southern San Joaquin Valley and all the endangered flora and fauna in the Carrizo Plain. The center is open at the beginning of December through the end of May, Thursday-Sunday, 9 a.m.-4 p.m. 805.475.2131, www.blm.gov/programs/nationalconservation-lands/california/carrizo-plain-national-monument. LODGING There are two free campgrounds within the Carrizo Plain National Monument. Semi-primitive Selby and KCL Campgrounds are first come, first serve and have shade and restrooms. They are both located off Soda Lake Road at the base of the Caliente Mountains. Dispersed car camping is allowed in designated areas off Soda Lake Road. Visitors need to bring all provisions with them, as there are no facilities within the Carrizo Plain. Check with the BLM regarding locations, rules and regulations. For options other than camping, try the Buckhorn Motel, Bar and Grill in New Cuyama. Located along Highway 166, it’s been newly renovated and offers simple but stylish rooms with décor inspired by the American West and midcentury design. t’s that time of year again, when many of us are faced with a series of puzzles to solve. How do you navigate the holidays? What do you get the person who has everything? How do you take time for yourself to enjoy the season? Ventura to the rescue. You can shop ‘til you drop and pop into local venues for sustenance to keep on truckin’. Time for a break? Enjoy a fun activity — solo or with friends — between all those to-dos. From an overnight stay in a restored vintage trailer to harbor cruises or live theatre productions (all of which, by the way, could make great gifts) there’s so much to do, and share with loved ones, in this city by the sea. After the devastating Thomas Fire last winter — and in light of the wildfires and other tragedies which struck East County in November — this is a holiday season to regroup, reflect and support local businesses and charities. MERRY AND BRIGHT: By day, Ventura’s oft-sunny skies make for spectacular shopping, dining and sightseeing in cool, eclectic downtown, at right. After dark, don’t miss one of the city’s best-loved traditions: the annual Parade of Lights, above, where brilliantly lit and decorated boats cruise Ventura Harbor, filling the night with holiday cheer.

MAIN STREET Shopping in Downtown Ventura on Main Street and its side streets is fun and easy — whether it’s jewelry, clothing, stocking stuffers or unique gifts for family and friends, you can discover all kinds of cool stuff. One “go-to” shop for many is Copperfield’s Gifts and Rarities. Copperfield’s has unique gifts, plenty of whimsical items and great stocking stuffers: socks, candles, journals, quality shaving products and more. Lots of cool “very Ventura” stuff for hip guys can be found at Iron and Resin Garage, including apparel, outdoor gear, leather and bar goods and even surfboards and hand planes for body surfing. Look to B. On Main for fun tea towels, tablecloths and wooden spoons. Armchair travelers would be thrilled with Passport Habits’ handmade leather sandals from Spain, blankets from England, Moroccan rugs, hammocks from Tulum and backpacks from Bali. A percentage of sales from kids t-shirts, caps and onesies made by Jolly Boy goes towards summer camps for kids. Upstairs, locally made OK Candles can be customized. A shiny bauble from Fox Fine Jewelry would probably go over well with the ladies on your list, and the staff is super helpful if you are stumped. Great stocking stuffers can be found at all of these shops and more, as well as The Refill Store (inexpensive veggie scrub brushes, dryer balls and bath bombs). For one-of-a-kind gifts, there are plenty of antique and thrift stores to comb, and The Calico Cat bookshop has a cornucopia of used and rare books for the booklover on your list. Avoid the post-shop drop by grabbing a bite at one of the excellent downtown eateries. How about champagne and oysters at Lure (they have a great happy hour too), a cocktail and bite at Rumfish y Vino, or a quick slice of pizza at Jimmy’s Slice or Tony’s Pizzaria? Tea or coffee and a sinfully sweet pastry at Marie Shannon Confections can provide an afternoon 32

pick-me-up. Refuel on a burger or mac ’n’ cheese at Paradise Pantry or sip a glass of wine or beer from Grapes and Hops or Vintura. If you’re feeling holiday fatigue, how about a trip to the tropics with the musical South Pacific, onstage Dec. 5-23 at the Rubicon? The 20-yearold professional theater company always presents cream-of-the-crop talent and exceptionally staged productions, and this year offers an excellent alternative to traditional Christmas fare.

HO-HO-HARBOR A free trolley runs between Downtown Ventura and the Ventura Harbor. Or, you can add a dash of scenic exercise to your shopping list by parking at Ventura Harbor Village and taking a 15-minute stroll along the harbor to the Channel Islands National Park Gift Shop for great books for readers of all ages, as well as toys, notecards, mugs and more celebrating the Channel Islands. Ladies, if you are looking for fabulous accessories for holiday parties, check out the newest shop in Ventura Harbor Village, Anja’s Boutique. Owner Anna Sosnicki imports lovely, affordable items from her native Poland including wonderful shoes, unique scarves, handmade jewelry and purses. Barefoot Boutique also offers a large selection of women’s apparel and sea glass jewelry. How about a cozy hand-knit mermaid tail blanket or similar gifts from The Mermaid Gallery for the Ariel wannabe on your list? boasting harbor views and full bars. Good restaurants abound at Ventura Harbor Village, so let your appetite be your guide. If you want to do something other than shop, December at the harbor promises a sleigh full of fun. Father Christmas himself gets into the nautical spirit when he takes to the sea for the Dec. 8 Santa Paddle. Capt. Claus trades in his sleigh for a standup paddleboard and invites the public to join in with their own watercraft. He and his (real) reindeer also pop in for the Winter Wonderland and Holiday Marketplace on Dec. 15. The festivities include Dickensian carolers, faux snowfall throughout the day and numerous vendors. Stick around until after dark for the annual Parade of Lights, Dec. 14-15, where boats get all decked out in glittery finery and cruise the harbor. The event ends with a fireworks display. One of the best ways to enjoy the parade is aboard an Island Packers vessel, which offers special cruises just for the occasion. But

you can enjoy the harbor’s holiday lights all month during a Caroling Cruise, setting off on select weeknights Dec. 11-23.

MERRY MIDTOWN Further inland is Midtown Ventura, and in this off-the-beatenpath suburban environment you’ll find a few treasures. One of these is Larriane’s Small Wonders, home of enchanting dollhouses and fine miniatures. Many of these wee items have surprisingly large price points, but dollhouse kits for handy builders are more affordable. Very unique, and worthy of a visit, even if just for browsing. Right next door, Allison’s Country Cafe has for decades been a local favorite for amazing breakfast and lunch.
