for thought: What would you do if, inexplicably, all food retailers shut down? The cause could be a natural disaster, large scale cross contamination or even a matter of national security. Despite the remote possibility this might happen, the uncertainties surrounding it still exist. How would you feed yourself and your family? How would you know which plants are safe to consume? That’s the purpose of this article: By learning how to live off of the land we’re going to literally get back to our roots. Lanny Kaufer is actually the one guy you would want to be lost in a forest with. Think a foodie Bear Grylls, but with a focus on sustainability and not just survival. Kaufer, who used to run the restaurant at Wheeler Hot Springs in the early ’90s, heads Herb Walks, and leads foraging hikes into the wilds of Ventura County. Along these adventures, Kaufer identifies native species of flora that can safely be consumed, and also used for various other products such as soap and rope. In addition to the nutritional and environmental benefits of foraging,

some of the foods harvested are invasive weeds. The yellow tops of the black mustard (Brassica nigra) that spray-paint our hillsides this time of year are a prime example. According to Kaufer, “the flower heads can be eaten at any stage from green buds through full flowering, and have that spicy arugula taste associated with the mustard family.” Mix this peppery addition into a salad for a unique kick. Two other nonnatives, hedge mustard (Sisymbrium officinale) and chickweed (Stellaria media), produce edible leaves which, when harvested before flowering, are both welcome additions to the salad bowl. Continuing with that theme, miner’s lettuce (Slaytonia perfoliata) can also be spotted now by the coast. It’s deliciously sweet and salty, but make sure to harvest only an appropriate supply. Though it was a good season, quantities of this treat are still limited. Another abundant species available for the picking is cheeseweed (Malva parviflora). The hearty leaves can be collected and cooked, making a great side CONTINUED ON PAGE 10

dish, especially when drenched in garlic and butter. And there’s also black sage (Salvia mellifera) flowering right now, which produces small light purple petals that are loaded with intense bursts of mint. All these can also be added to accent your favorite grilled meats or veggies. Of course, whenever foraging for native plants, it is important to practice proper etiquette. Avoid nature preserves or environmentally protected areas and private property. Always make sure to check the endangered species list before harvesting, and never take more than your share. For your own safety, make sure the area being foraged wasn’t sprayed with herbicide or other harmful chemicals. This can be common where large amounts of edible weeds exist.

Kaufer recommends first timers go with an experienced forager, this way safety and a low carbon footprint are ensured. He usually leads a few hikes a month, and will be joined on Saturday, April 30, by famous forager Pascal Baudar (TV’s MasterChef) for an afternoon of hiking, learning and snacking. Register for this event, or any other, through Kaufer’s website at www.herbwalks.com. And if trouncing through the hills for your food is still out of the question, but you still want the experience, there are a few local restaurants, including Osteria Monte Grappa and Ojai Valley Inn & Spa, that use foraged produce based on the time of year. I recommend calling in advance to inquire about menu items and availability.

What

comes to mind when you think about alcohol in California? Most likely it’s wine and craft beer, two staples long associated with this Golden State. But what about spirits? You know, the “hard stuff.” Are you drawing a blank? Well don’t feel alone, because most native Californians have little to no idea that we have an abundance of first-rate spirit distilleries throughout our land. And a couple of those even happen to be within arms-reach of the 101 here in Ventura. Tucked away in an old storage building near Shell Road, Henry Tarmy and Anthony Caspary of Ventura Spirits Company are hard at work. Along with co-owners Andrew Caspary (Anthony’s brother) and James Greenspun (Henry’s brother-in-law), this clan of spirit enthusiasts are also intrigued by the identity crisis question surrounding California. “We want to help establish, not only a local, but a California tradition for spirits,” Henry and Anthony said. “By using native species and local produce, we’re working to support and continue the history of agriculture in the state.” Their three main products support this declaration whole-heartedly. any vegan what the most common question they’re asked about being a vegan is and the answer is sure to be, “What do you eat?” Consider your question answered, well, at least find satisfaction for your sweet tooth in this handy guide to Ventura County’s vegan desserts. What makes a dessert vegan? It’s simple: no animal products are used in the creation of the cakes, pies, muffins and so on. That means no butter, no milk, no cheese — nada. “Raw” simply means that none of the ingredients were cooked. None of this, however, translates into a lack of flavor. Ojai is where you’ll find the largest concentration of vegan-friendly eateries, and therefore the most variety. Hip Vegan, a quaint restaurant tucked away inside a wellgroomed patio, offers a number of vegan desserts made on premises. Here’s a fun contradiction: what is a vegan cheesecake? Owners Marisa and Ben Dichiacchio make their vegan cheesecakes using either an avocado or cashew nut base.
