A TASTE OF AUSTIN

W

e have gathered some of the new and some of the best. As purveyors of the best trends and tastes in and out of Austin, our summer issue helped us come came across tantalizing wine, yummy appetizers, decadent desserts, intricate cocktails and truly Austin entrees. With a little help from our friends, we were able to uncover some hidden gems and to become proud to be bearers of news for some cool openings around the city. We also celebrated some of the places that are surely becoming staples in the Austin dining scene and we thank you for the great care you have taken of our editorial team. It’s wildly interesting to us that until a couple of years ago, Austin was synonymous with barbecue, but a new wave of change is undoubtedly sweeping. We are filled with hope for the city and its potential every time we witness a new concept on the Austin horizon. This editor is thrilled to see that – unlike in other markets – ‘making it and moving to New York or LA’ is no longer the norm in the restaurant business. It’s not a secret – as Travel and Leisure stated – that Austin is America’s Next Great Food Town. (Foodies and bloggers rejoice!) This book just reunites a glimpse of that creative splendor. We also made a huge effort to integrate our favorite flavors and the flavorful foods in season with the signature mix of fashion and style we bring to every issue, by creating some interesting editorial fusions that tingle the senses. Meanwhile, our customary style guides were seriously upgraded into elegantly curated look books for the sunniest of seasons. Bikinis, shades, health, technology, food and lipstick have been all fused into an amalgamation of VETTA splendor, if I may exaggerate… Needless to say, it was a fun issue… Buen provecho!

LET’S CELEBRATE WITH YUMMY WINES AND COMA-INDUCING DISHES, EXPERTLY PAIRED BY THE ACCOMPLISHED SOMMELIER AND CURRENT BEVERAGE DIRECTOR FOR PARKSIDE PROJECTS.

1. CHAMPAGNE + BONE MARROW “All that rich fatty goodness gets washed away from your palate with each sip of bubbly. Champagne’s cold climate guarantees the wines will maintain vibrant acidity, which keeps your mouth watering for another gelatinous bite. I like Bollinger for ‘big house’ and Selosse for ‘grower,’ particularly if someone else is paying!” MAY WE SUGGEST Bollinger ‘Special Cuvée’ Champagne, France NV 2. RIESLING + ANYTHING SPICY “The riesling and Thai food pairing’s been ‘a thing’ for quite a while now. Given that I live in Texas, my favorite twist is off-dry riesling with spicy al pastor tacos (the spicier the better!). The residual sugar in the wine latches onto the sugars of the pineapple to create a perfect barrier to ward off the spice. A shout-out to Taco Deli for their homemade habanero salsa to take it all to the next level, and a bottle of smaragd riesling from Rudi Pichler in Austria’s Wachau would make for a wonderful date.” RECOMMENDED Rudi Pichler riesling smaragd Wachau, Austria 2013 3. ORANGE WINE + NIGIRI “I’m a big fan of sushi in general, but over the years my cravings for it center around bite after bite of nigiri (protein on top of vinegared rice). The rice adds texture, the vinegar acidity, and the protein, say premium white anchovies from the Mediterranean, a salty brininess that’s just simple harmony. Throw Steve Mathiasson’s skin-fermented ribolla gialla from Napa Valley into the mix and your tastebuds are firing on all cylinders!” SPECIAL PICK Steve Matthiasson ribolla gialla Napa Valley, California 2013 4. NEBBIOLO + RIBEYE “We’ll never agree on what cut of beef is best or why, so feel free to tweak this one to your own personal preference. For me, the prevalent marbling of a great ribeye is key to creating a decadent balance rarely experienced elsewhere. Nebbiolo may be the most gorgeous red grape varietal on the planet, and the inherent high tannin not only binds to the fat in the steak but also aids in digestion. The old adage was that steak had to go with heavier wine styles such as California cabernet or Australian shiraz, but big wines with a massive steak take the meal into gluttony. Nebbiolo and pinot noir lighten the meal and add a touch of elegance to such a primal experience. Marchesi di Gresy would be a wonderful producer to explore for such a pairing.” TRY THIS Michele Chiarlo ‘Tortoniano’ Barolo, Italy 2008

VETTA MUSTS

1. Invest in a few good suits. When you put on a suit, you assume the role that comes with it. Buy quality, not quantity. It will be more cost efficient in the long run if you purchase suits made from fabrics such as wool or a wool-blend and in colors such as black, navy, and taupe. 2. Carry a quality pen. You don’t have to spend a lot of money on a pen but it should look attractive and write well. 3. Beware of bulky baggage. A bag overstuffed with papers can give people the impression that you are disorganized and sloppy. Your briefcase does more than just hold important papers, a wallet, and cell phone; it holds clues about your success, professionalism and personality. 4. Put your best foot forward. Shoes are your most important accessory because they do more than simply complete your ensemble; good-looking, polished shoes help convey your professional image and attention to detail. VETTA

Dawn of the

SUPERFOODS

I

by nathan cranford

t’s a bird, it’s a plane, it’s...superfood! In recent years superfoods, a label for foods packed with nutrients that supposedly ward-off disease and combat aging, have become a household name on par with Superman. But are the health claims attached to superfoods true, or a fiction on par with our favorite hero in blue?

First and foremost, superfoods are a marketing term rather than a medical term used to refer to a wide-range of foods. A Google search for superfoods produces nearly 10 million different results. The Oxford English Dictionary defines superfoods as “a nutrientrich food considered to be especially beneficial for health and well-being”, whereas the Merriam-Webster dictionary makes no reference to health, defining superfoods as “a super nutrient-dense food, loaded with vitamins, minerals, fibre, antioxidants, and/or phytonutrients.” Of course, superfood enthusiasts would connect the two definitions and argue superfoods are healthy because they are loaded with vitamins. Generally speaking, however, superfoods are food, usually fruits and vegetables that are considered to be more healthy and nutritious than other foods. Many foods meet this criterion, from green tea on one end to salmon on the other end. Given the many different shades of superfoods, any Decalogue that claims to list “the top-ten superfoods” is based upon subjectivity and personal preference. Nevertheless, among all the superfoods promulgated on the web - trumping apples and acing avocados - blueberries are the royal flush. Packed with antioxidants, photochemicals and soluble fiber, the blueberry is the posterchild for superfoods. In addition, blueberries tend to be more palatable than its cranberry and raspberry brothers and sisters. In terms of the health benefits of blueberries, research suggests blueberries can help lower blood pressure, cholesterol and even improve memory, making blueberries and excellent health boost for both body and mind.

52 VETTAMAGAZINE.COM

We all know that green food is healthy food, and have been reminded since childhood to eat our broccoli. Amongst all the green veggies in the land of superfoods, kale superpasses both brocolli and brussels sprouts in terms of blandness and nutrients, and follows close behind the trails of the indominus blueberry. Kale is upheld as the golden calf of superfoods for its nutrients rather than its taste with high amounts of vitamin A, C & K. Eating kale also helps maintain healthy skin, hair and bones, as well as lowers the risk for heart disease. Extending fruits and vegetables, salmon also takes the superfoods spotlight. It’s an excellent source of protein, lowers the risk of heart disease and is an excellent source of Omega-3 fats. For those cautious of salmon because of trace amounts of mercury, any fish that falls lower in the food chain generally qualifies as a superfood, including oysters and shrimp. It is important to look at the scientific evidence for superfoods in order to cut through the mainstream hype. At first glance, the scientific evidence would seem to be in favor of superfoods, given the vast amounts of nutrients attached to superfoods. On the other hand, the scientific evidence for superfoods is remarkably thin; not because superfoods are unhealthy but because superfoods are difficult to study in the lab. The conditions under which food is studied in the lab tends to be different than the conditions under which people normally consume food. For example, cocoa found in chocolate is believed to have a variety of health benefits, but doctors don’t recommend consuming large amounts of chocolate on a regular basis. This being the case, the health claims surrounding superfoods tend to be exaggerated. Conclusion: the human body was designed to intake a variety of nutrients, not just a narrow list of foods that fall under a specific category. Although superfoods certainly have health benefits, they are one ingredient among many that make-up a healthy, well-rounded diet. VETTA

The

MACHINE in the

MACHINE WHAT CAN NANOTECHNOLOGY DO FOR THE HUMAN BODY?

T

by nathan cranford

he human body is crudely analogous to a machine. Yet there is a rift between the cold silicon of artificial robots and the breathing tissue of biological organisms. With the rise of nanorobots, however, the dividing line between humans and machines is becoming fuzzier and fuzzier. Nanorobotics is a subfield of nanotechnology that deals with the development of molecular machinery designed to diagnose, treat and even prevent various illnesses from the inside-out rather than from the outside-in. Just as an artificial defibrillator can correct an irregular heartbeat, nanorobots can be inserted into the body to treat a host of maladies. But how do nanorobots work? Picture a hexagonal tube a nanometer in size. The ends of the tube are connected by a latched hinge. The nanorobot is inserted into the bloodstream where it coasts along the murky waters looking for signs of distress. The nanorobot latches onto the surface of cells, which consist of a lipid bilayer embedded with protein molecules. If the nanorobot recognizes an abnormal protein molecule that is associated with a specific cancer, its latches swing open and administer a lethal cocktail of drugs that cause the cell to self-destruct. Nanorobots have many advantages over traditional treatment methods. For example, a doctor might boost a patient’s immune system by administering a powerful antibiotic with a syringe. The antibiotic becomes dilute as it travels through the bloodstream, so that only some of the drug reaches the infection. In contrast, a nanorobot--or a team of nanorobots-could travel through the bloodstream and deliver the same drug at the site of the infection. The patient would suffer fewer sideeffects and the drug would be able to better treat the infection. That’s just the tip of the iceberg. Nanorobots could also assist in spinal surgeries by mending and re-attaching severed nerves. Furthermore, by working inside the body, nanorobots could perform various surgical procedures without requiring patients to go under the knife. Last, nanobots could also

54 VETTAMAGAZINE.COM

be used to break-up blood clots, dissolve kidney stones, clean wounds and destroy parasitic intruders. These ideas are preliminary. Nevertheless, they shed insight on the stupendous possibilities nanorobots might have to offer. Sounds good in theory but do nanobots work in practice? Engineers face the daunting challenge of designing a minuscule machine that can effectively navigate through a maze of veins and arteries in order to deliver a specific drug on site. Although nanorobots are still in the early stages of development, preliminary trials on cockroaches and rats have shown promising results. According to two studies published in the journals Science and Nature, nanorobots were able to kill half the cancer cells in cockroaches in three days without causing damage to neighboring, noncancerous cells. Researchers plan to conduct the first nanorobotic trial on humans this year. The patient selected only has a few months to live. The researchers hope to remove the cancer cells inside the patient within one month. One challenge about treating cancer is the multiplicity of cancers that plague the humanity. Unlike HIV and Polio, which have diverse though similar strands, cancer is a beast of many rather than a beast of its own. Cancer occurs whenever a mutated cell makes copies of itself that fail to die. As a corollary, the cells conglomerate into masses or tumors. The tumors feed off the energy of neighboring cells, therefore depleting the body of nutrients. But the human body is made-up of many different kinds of cells, meaning there are a vast range of shapes that cancer can take, from brain cancer on one end to pancreatic cancer on the other end. As of right now, nanorobots are capable of detecting twelve different types of cancer cells, including solid tumors and white blood cells associated with leukemia. Using machines to treat various illnesses is sure to spark debate within the public square. Philosophers and theologians have spent centuries debating whether man is purely a material being or whether there is a ghost in the machine. Now, advances in health technology have given us something new to ponder: the machine within the machine. VETTA

o you feel like you are drowning on ludicrously high cultural expectations just trying to keep yourself up? Our daily beautification process doesn’t have to be such an overwhelming endeavor. From regular monthly visits to our favorite hair and nail salons, to the day to day grind of shaving our legs and applying mascara. With so much to maintain, take a few tips from us on how to maximize your efforts on our daily skincare and beauty routine. You have heard people say that your hair is an accessory. Slow air dried hair is in with a vengeance; let that work for you. If your hair has some natural wave or curl to it, embrace it. Most salon quality hair care lines have cream or balm that can be worked evenly through damp hair and left alone to achieve a calm, clean, daily, natural curvy look. For the bone straight girls out there, sleep yourself into some texture for a great wear the next day by braiding your damp hair into a loose braid. Also, regular appointments with your stylist for a quick trim will maintain your style while keeping you in the loop about what products are hot for achieving your ultimate personal look.

If hair is an accessory it wouldn’t be such a stretch to say so is your skin! A few minutes of attention morning and night can sustain a clear healthy looking glow. A quality exfoliating face brush can do wonders for a complexion, either during the morning shower or at evening before bed. Remember the importance of daily moisturizing as routine washing may dry the skin causing increased oiliness. Keep in mind that finding an age appropriate moisturizer will make a difference. The light tinted moisturizer you threw on in your college years may not be rich enough for your thirty plus. A more hydrating, wrinkle prevention product used in your routine may be just the ticket. EYES Tips for a naturally beautiful face…

T

by katy kinney

he light breezy fun feeling of summer in the air has a way of intuitively getting us to revamp your look! When it comes to eye make up, pick up some fresh natural hues, reflected in nature for a playful summer outcome. Be it a glistening glow, matte finish or the sun kissed look of a simple bronzer, find out what works for you and play with it! Summer eye makeup is care free and fun.

Riding along the “done / undone” current trend for hair is our eye make up theme this season. Wear clean and clear coverage that looks almost naked. A soft romantic glow that simply comes across as healthy. A minimal sheen of shadow covering the lid in an airy caramel, honey or glossy rose, well blended will grant you that warm glisten to your eyes, as well as enhance your long natural looking lashes. Let them focus on your beautifully stunning simplicity. For a vogue daytime wear, begin by switching out your heavier winter coverage for a tinted moisturizer or a mineral base foundation over face and lids. This will keep product from building up in the creases of skin and lids and caking in the heat. Urban Decay’s Naked Basics eyeshadow palette has perfect shades to give natural tones around the eyes. For maturing women, pop the lid and brow bone with a brighter matte or demo-matte nude, and scale back the shade to a warm light brown caramel to darken your crease. As irresistible iridescent shadows and sparkles are, they do highlight wrinkles that form with age. Especially in the warmer months, veer away from using overly glittery shadows and products that could melt and travel the face to accentuate fine lines. Whether you are still pale from winter’s cold aftermath or your skin is beginning to show that sun kissed glow, you may need a fast, foolproof, on-the-go option to get your eyes feeling flutter ready! Benefit Cosmetics Hoola Bronzer Box makes a great addition to your travel make up bag. It’s available in several dewy shades, each of which build on the other for cheek bone contouring, or eye crease definition. Keep it simple by deepening contoured areas a few more times for contrast! Beauty Tips from PATRICIA DE LEÓN

1 2 3 4 5

When I need to have that fresh look in the morning, I usually keep frozen tea bags handy to put under my eyes. It helps to reduce the puffiness. You can also use cucumber slices to ease your eyelids. If you are afraid to use an eyelash curler, you can always go old school and curl them with a spoon. Yes, you heard me right. You take the spoon and put it behind your lashes, then press in. For faster results, you can always rub the spoon against a piece of fabric until it warms up a bit. It would work like a curling iron! Take a moment to relax and apply a facial twice a month to detox your skin. Go with a mask that matches your skin type. There are 6 mask types to choose from – Clay, Thermal, Peel Off, Natural, Warm-Oil, and Natural. Each has its benefits depending on your skin. I recommend Aniise Natural Skin Care’s Restorative Botanical Masque as a good starting point for detoxing and declogging your pores. A thing I would like to make light of is the proper application of moisturizers. I’ve often seen women apply it onto their faces and stop there. It isn’t just the skin on your face you should take care of, but around your neck as well. You’ll want to apply your moisturizer from bottom to top, in an upward motion. If you apply in a downward motion, you’ll just help create sagging and wrinkles, which we don’t want! For around your eyes, you’ll want to tap your eyes with the moisturizer using your fingertip. Under your eyes, apply it from outward to inward. As a woman constantly on the run, I always keep 2 pieces of makeup on me at all times – a good mascara and—a great lipstick. With these 2 products, you can be ready for any occasion or outfit in a matter of minutes. That’s not to say if you don’t have the time, skip foundation, eyeshadow, eyeliner, etc. But if you only have a moment’s notice to freshen up, just keep it simple. Always use nude or a complimentary shade of red lipstick, because both go with everything. I prefer to use Aniise line of lipsticks, which come in a wide variety of shades.

LIFE

C

hotsie Gregson and Willem Sypesteyn melded their lifelong passions and experiences in art, design, and architecture to create reworks, after making a bold and life-changing decision to leave their established businesses and homes in New Orleans to move to Austin following Hurricane Katrina. The result is reworks, a company of artisans and craftspeople who design and fabricate furniture, lighting, and home accessories from beautiful and unusual objects sourced from around the world, distinctive raw materials, and architectural remnants. The collection offers two distinct lines, classics and limited editions, and their pieces are described by many— interior designers, colleagues, friends, and clients alike—as welding the classic history of New Orleans to the edgy playfulness of Austin. “This creative couple has merged their talents in reworks, an atelier for furniture, lighting, mirrors and accessories created from found objects, architectural remnants and distinctive raw materials such as steel and glass,” says Helen Thompson, writer and editor for various interior design and architecture publications. reworks classics skinny leg double end table with silver burnishing and limited edition white antique reclaimed floor lamp. A hallmark of the home accessories and furnishings in reworks classics collection is their ability to create a palatable juxtaposition between the old and the new and to fit well in both modern and traditional spaces. The reworks classics line is constantly evolving, yet always includes pieces that reworks fans associate with their designs, such as skinny leg tables, unusual sconces, and spectacular dining tables. The reworks limited edition line includes pieces developed in collaboration with clients, who are often interior designers and architects, for their specific needs and those of their own clients. reworks limited edition pieces incorporate rare and unusual elements and materials, carefully curated. Both lines have in common the use of distinctive materials and high-quality craftsmanship, and are pieces that you could never find in a catalog or a highvolume retail outlet.

olor. It teases the spirit in whimsical décor, triggers emotion when splashed on canvas, and tempts like foreplay when served on a plate. It is also the essence of Mexico’s interior, brought to life at Fonda San Miguel, Austin’s premier restaurant for the distinctive cuisines of Mexico.

This year, Fonda San Miguel turns 40, and it is still the grand dame of experiences. That experience begins when you walk up to the front doors, massive and hand-carved, from the state of Guanajuato. Inside, the atrium is a Mexican embrace, big and familial. Around you, art by some of Mexico’s most renowned artists captures the pure soul of Mexico. You can hear the bar bustling with longtime patrons while Fonda’s most dedicated staff awaits you in the dining room. In 1975, Tom Gilliland and Miguel Ravago, the curators and owners of beloved interior-style Mexican restaurant Fonda San Miguel, left their careers to get in to the restaurant business. Gilliland had just completed his law degree at the University of Texas Law School, and Ravago worked at the state Legislature at the state Capitol. They had zero restaurant experience, no formal business plan and little money. They launched San Angel restaurant in Houston, serving “real” Mexican fare. Though San Angel flourished, it outgrew its space and Gilliland and Ravago returned to Austin.

104 VETTAMAGAZINE.COM

“ONE WEEKEND, I WAS IN AUSTIN VISITING SOME FRIENDS AND TOOK A WRONG TURN,” GILLILAND SAYS. “I GOT LOST BUT I SAW A ‘FOR LEASE’ SIGN ON AN EMPTY RESTAURANT BUILDING.” The stucco hacienda would become Fonda San Miguel, a space that, throughout the years has undergone some upgrades and is now considered by many as Austin’s most beautiful restaurant, featuring Gilliland’s carefully curated collection of museum-quality artwork, exotic plants and international décor to complete the exquisite dining experience. Forty years later, Fonda San Miguel is as bright a star in Austin’s culinary scene as ever. Widely recognized as one of the finest interior-style Mexican restaurants in the country, Fonda gained acclaim from many renowned media outlets, and is frequented by celebrities, politicos and average foodies alike. Gilliland and Ravago created Fonda San Miguel: Thirty Years of Food and Art, a cookbook to commemorate their 30-year anniversary. It features some of Fonda’s most cherished recipes, as well as a collection of the artwork featured in the restaurant.

While the décor is impressive on its own, Fonda’s menu remains the star of the restaurant. The Fonda menu has always featured interior-style Mexican cuisine that rivals Mexico’s best restaurants, touting regional fare from Mexico’s interior culinary epicenters: Oaxaca, Puebla, Veracruz and Yucatan.

are authentically delicious. The Crepas de Cajeta (Crepes sauced with a rich goat milk caramel and toasted almonds, served with Fonda’s cajeta ice cream) and other dessert delights are all made in-house. And, of course, Fonda’s Sunday Hacienda Brunch Buffet is legendary and highly popular.

From the selections on the Antojitos portion of the menu, such as Ceviche de langosta y mangó, Tacos al Pastor and the wildly popular Torre de botanas (a delicious tower of tostadas compuestas and sopecitos), to the Enchiladas de pato (enchiladas with shredded duck topped with a poblano-spinach sauce), the menu is extensive, with every dish prepared from authentic recipes and ingredients. The Pescados y Mariscos menu features traditional delights like Camarones en Crema de Chipotle; and the Carnes options, like the Carne Asada a la Tampiqueña (grilled beef tenderloin served with guacamole, rajas and a cheese enchilada)

“The Sunday buffet gives me an opportunity to help people learn about the food of Mexico,” Ravago says. “If customers tell me they’re planning a trip to a certain region of Mexico, I show them what dishes to taste so they’ll know what kind of food to expect.”

t’s a common dining experience at nearly every new restaurant: After poring over the menu, meticulously taking in the ingredients and style of each offering, you order what you think is the ideal plate, but when it arrives, you find you have somewhat aloof feelings about your own meal, though you are inexplicably drooling over your mate’s dish. Fortunately, at Austin’s newest and most anticipated restaurant, you’ll never be forced to dine on a mediocre meal while enviously watching your companion enjoy a dish you’re kicking yourself for not ordering.

At VOX Table, the New American-style eatery located in the Lamar Union community complex, the chef-crafted small plates are created with sharing in mind and each artfully prepared dish flourishes with fresh, seasonal, locally sourced ingredients, ensuring every bite taken at VOX Table is guaranteed to be relished. Opened in late April, VOX Table is nothing if not refined and discerning in every aspect. That’s something owner Vincent Manguino has insisted upon from the very inception of VOX Table. The restaurant’s clean style, high ceilings, wood floors, interesting texture combinations and oversized windows reflect VOX Table’s overall concept, and can be attributed to the cultured eye of esteemed Austin designer Joel Mozersky, who designed the space in the French abstract modernist style. The design is soft and approachable, and allows the food to shine as the star of the restaurant. VETTAMAGAZINE.COM 109

Executive Chef Joe Anguiano has built a commendable culinary career at a variety of notable restaurants throughout the world, including a two-Michelin-star eatery in Spain. His dedication to the culinary arts is evident in his stunning small plates, dishes highlighting farm-totable ingredients and influenced by the best of American, French and Spanish/Basque cuisines. “We are determined to surprise and delight Austin diners with unique and flavorful dishes that showcase the best ingredients Texas has to offer,” Anguiano says. “This is food made from people who are passionate about their trade.”

VOX Table’s uncomplicated yet polished dinner menu is defined in five primary parts: Provisions, Leaves + Roots, Fins + Shells, Hooves and Feathers + Beaks. Each section features a variety of delicacies designed to stimulate the appetite and please the senses. The freshly baked bread is irresistible and the charcuterie board is a tantalizing display of rustic meats. Noted selections from the Leaves + Roots portion of the menu

include the glazed baby carrots with hazelnuts, pomegranate seeds, yogurt and a brown butter molasses; and the chickpea fritters with tomato marmalade and Parmesan snow. Share some crispy frog legs, wood-fired oysters and pork crackling with your dinner companions before diving in to the braised Akaushi oxtail, glazed cabrito or grilled duck breast. Restaurant servers often encourage guests to save room for dessert, and in this case, definitely take their advice, as Executive Pastry Chef Allison Henschel’s Sugar + Spice menu features stunning and meticulously crafted dessert and pastry specialties that mirror Chef Anguiano’s dedication to locally sourced, seasonal ingredients. The Sazerac Sunday, a decadent dish of rye whiskey custard, pecan brittle, candied lemon, Paychaud ice cream, fennel chip, caramel and a rye whiskey clementine is unforgettable. And the crème fraiche cheesecake and fool’s gold brownie are magnificent displays of the magic Henschel can work.

VOX Table offers an extensive selection of wine, bubblies and beer, and many of the cocktail ingredients are made in-house. Indeed, Tober and head bartender Jr. Mocanu offer diners a unique approach to classic cocktails. Not to be missed: the Monkey See, Monkey Do, a life-changing combination of Flor de Caña white rum, lemon, lime, Giffard Banane, Tenneyson Absinthe, coconut milk and spiced liquor, served Tiki-style. “We have an emphasis on serious cocktails that are not too serious,” Tober says. “This is a craftcocktail bar, and if it’s on our menu, it’s the best version of that cocktail you will find anywhere.” Boasting a sophisticated yet approachable fusion menu created by a world-renowned chef, handcrafted desserts and an enviable cocktail and beverage menu designed by an award-winning mixologist, all served up in a contemporary space curated by a celebrated designer, VOX Table is the perfect neighborhood restaurant to wine and dine, Austin-style. CONDIMENT LOVE THE STYLE AND COOKING PHILOSOPHY OF VICTORIA AMORY

“In 2012, I was asked to bring some food to a school function and not wanting to make brownies, I decided to make a collection of my favorite savory sauces,” confessed Amory. “I made Ketchup, BBQ sauces, chutneys and savory jams, about 200 of them! I then put labels on the jars and took them to the school; they sold out in 10 minutes.” The intrepid businesswoman honed her skills as a hostess and passionate cook while organizing corporate events and chairing charity galas in New York and Palm Beach, Florida. Entertaining everyone from royals to bullfighters in her casual elegant style, Victoria has successfully intertwined the European style of her youth, adolescence, and lineage with her sense of American spirit and practicality to develop a philosophy of life and entertaining that she has magically captured in her books, magazine and blog articles and in her appearances on television. “As I was born in Spain and have traveled through out the Mediterranean, I wanted to use those flavors and aromas as my inspiration. My goal was to really create a brand of foods that are real, authentic, delicious and all with an elegant twist,” added Amory. She stated that flavors like olive oil, champagne, sherry, pimenton, fresh herbs, lemon are easy to use for everyday and elegant enough for entertaining. “As a Spaniard, it is in my DNA to be hospitable VETTAMAGAZINE.COM 121

Central Market has been instrumental in using our condiments and sharing them with their clients. I am very impressed that our mayonnaises, hot sauces and ketchups have been so well received. “Very soon we are coming out with a new collection of Flat Bread Crisps also in Mediterranean flavors and extending the condiment line with a new mustard and a new spicy mayonnaise. oted #1 in the state and #12 in the world by Conde Nast Traveler, Gateway Canyons sure delivered unexpected thrills. During our recent visit, VETTA was swept away by the natural wonders and the rustic luxuries awaiting to be uncovered…. Gateway Canyons was founded by Discovery Channel Founder, John Hendricks. As a child, Hendricks’ father would tell him tales of the beautiful red rock country in Colorado. It took him a while to finally see it with his own eyes, but when he and his family first came to Gateway, Colorado in 1995, they were moved by the beauty and history of the area, as well as the spirit of its community. Mr. Hendricks knew that he was home. But he also felt compelled to share this special place with others. Soon Mr. Hendricks began the design for a sustainable, outdoor recreation resort that would highlight the beauty and take advantage of the endless adventures possible in this amazing location! Gateway Canyons is located in Unaweep Canyon, one of the most unique red rock canyons in the world. We met their Curator of Curiosity, Zebulon Miracle (that is his real name!), who can set up time to speak with you about the wonders of this area, which touts special recognition in Colorado geology. Mr. Miracle will take you to explore sites that contain elements of more than a hundred million years of geological record, including fossils of dinosaurs and early amphibians. At night, Gateway Canyons offers a session from the Adventure Center to see the constellations – Venus, Jupiter and Saturn – all clearly visible in the evening sky. What a magical experience! Even the rooms at the resort are named after the constellations. VETTA’s hacienda casita was named Libra, and next to us was Orion.

Upon entering our own Hacienda Casita, we found unimagined comforts, including the open living room area, amazing art adorning the walls, a giant TV, our table set with beautiful fresh flowers and two lavish bathrooms (with indoor and outdoor shower/bathtub). Outside there’s a fire pit on the patio that turns on via wall switch (no need to worry about wood for the fire) and of course the gorgeous and peaceful red canyon in the background. VETTA even had furry friends visiting most mornings: a cute bunny and a colorful bird. We all took the time to enjoy a breath of fresh air.

PARADISE ON EARTH by olga czarkowski

VETTA ESCAPED TO A PLACE OF LEISURELY LUXURY AND PEACE, OFF TO THE ALLINCLUSIVE CURTAIN BLUFF RESORT IN ANTIGUA & BARBUDA.

VETTAMAGAZINE.COM 131

L Every morning is marked by breathtaking views from the suites.

eaving behind the social media, along with the city pollution and fast-paced environment, I escaped to the Caribbean’s all-Inclusive resort Curtain Bluff. Located on Antigua & Barbuda, it has consistently ranked among the finest resorts and tennis centers in the world, and is a prime destination for weddings, family gatherings and spa holidays. More importantly, it’s the perfect place to decompress, and indulge in activities for your body, mind and soul that can be personalized based on your interests and needs. Just a short ride from the airport, you arrive to the relaxing, luxurious atmosphere of the lovely Curtain Bluff Resort, greeted with a refreshing drink from friendly staff. Just as impressive as the atmosphere, the food can’t be beat! Being in the Caribbean, your natural inclination is towards the fresh seafood, but meat lovers are also catered to with steak, veal and chicken options, and not to be overlooked, there are plenty of vegetarian and vegan choices. Award winning chefs Christophe Blatz and Rodrick Beazer ensure that every food preference is available on any given menu! The best part is that most of their food, excluding the red meat, is grown organically and cultivated locally on the island. The result is a guaranteed flavorful and healthy meal. VETTA HINT! Make sure to try the fruits and vegetables, like tomatoes and mangos; the taste is so different from what you’re probably accustomed to – it really cannot be described, only experienced. To my pleasant surprise, most meals are accompanied by live music. My favorite is Curtain Bluff’s fantastic reggae band. A wine tasting can be arranged right before dinner from the Resort’s extensive collection. They tout one of the biggest wine cellars in the Caribbean, including many fine exclusive European and American wines and champagnes. You will be delighted by the wine along with the knowledgeable wine experts. This is one of the not-to-be-missed highlights of Curtain Bluff. Kayaking, snorkeling, sailing, yoga, tennis classes, a playground for kids, basketball court, gym, pool and spa are some of the amenities offered at Curtain Bluff! And if you’re not into organized activities, you can lie down on one of the many hammocks or beach chairs and just relax and admire nature while drinking one of the Resort’s signature award winning cocktails. Caribbean Fantasy (similar to a frozen piña colada, but made with banana) was an easy favorite, and so was the Wadadli Rock (another mix blended rum cocktail).

LUXURIOUS AND LEISURELY, CURTAIN BLUFF RESORT HAS CONSISTENTLY RANKED AMONG THE FINEST RESORTS AND TENNIS CENTERS IN THE WORLD, AND IS A PRIME DESTINATION FOR WEDDINGS, FAMILY GATHERINGS AND SPA HOLIDAYS.

VETTAMAGAZINE.COM 133

Curtain Bluff is really a perfect place to celebrate any occasion. You will find yourself among many honeymooners and anniversary celebrations, since it is the ultimate couples getaway destination. Most of the rooms give a new meaning to the concept of “on the beach” since the Resort is literally located on a white-sand bluff between two beaches. At night, you can seat outside your room and listen to the waves and birds while gazing at the stars and the moon. Not to be missed, the Resort’s Spa is one of the ultimate sources of relaxation. It is not just the available treatments offered that make you stop and think “WOW,” but the feel of the natural products, the plush bathrobe, the terrace with breathtaking ocean views, the muscle-soothing Jacuzzi and the never-ending supply of refreshing drinks (available based on your mood including champagne, wine, sparkling water and fresh juices). At one point, I felt as if the staff were hidden throughout the Spa, awaiting the opportunity to refill my glass at the moment of my last sip (are they popping out of closets or from under my massage table?). After or before treatments, you can sit and relax in the lounge area on the terrace. Or take a dip in the jacuzzi, conveniently located on the same terrace. But it’s the quality of the products and the plethora of treatments available that keeps the Spa busy not just with guests from the Curtain Bluff, but also visitors from other locations and even locals – with the Spa’s rating as best on the island, it’s no wonder that reservations are coveted. Afterwards you will be offered a refreshing pineapple gazpacho or some other fruits. VETTA HINT! Make sure to try the signature caviar facial and/or caviar & champagne massage….it’s unlike anything you’ve ever experienced. Your skin will be glowing for days following either treatment. Last but not least, Curtain Bluff is well known for hosting tennis trainings, tournaments and championships. Very few resorts can claim the quality and beauty of the courts, the tennis program, pros on staff, equipment and events available. Their Tennis Center has four championship hard courts centered around a Pro Tennis shop, which is an easy lob shot from the sea! So, what are you waiting for? Plan your own visit to Curtain Bluff Resort and experience it for yourself. VETTA 134 VETTAMAGAZINE.COM

few weeks ago a very odd thing happened at this party. A billionaire entered the room and all real conversations ceased. Everyone’s energy instantly focused on the man who is revered as a tech celebrity because he had built a very, very successful corporation. People gawked. To the chagrin of his bodyguard, some tried to get close. Perhaps they believed his riches would somehow cause a gold coin to appear magically in their own pocket. Money is a powerful life tool, but not the end all, be all. Unfortunately it is becoming a success metric our society champions. Sadly so. When was the last time you were at a party and someone couldn’t contain their excitement because of the spontaneous conversation they just had? “I just met this guy who had the most playful wit,” or “See that woman over there in the black glasses, she has some of the best listening skills I have ever experienced. Her insightful replies were spot on!” Social currency champions money along with prestige, ego, and status. Noticing someone’s wit or listening skills go largely unnoticed. We have learned to acutely determine only if the other person is of value to our success, instead of connecting through pure curiosity or awareness.

Our culture is fixated on want, and the pursuit of money is king. Forbes annually splashes ‘The Richest People on the Planet’ compilation proudly across their pages. The Dow Jones performance has now become a key part of every newscast and cable news ticker. Almost daily, we are reminded of the meteoritic rise of the new Uber or Instagram like billionaires. We gasp when we discover that a fledging start-up is now worth… how much did you say?! Immediately following the devastating tragedy of 9/11, there was welcoming respite to the great money chase. We as a nation were temporarily shocked into focusing on what really mattered, our intrinsic values, such as heartfelt connections and quality time. Simply connecting with a stranger in the elevator or leaving the office at a reasonable time to attend one’s daughter dance recital was important to our individual and collective bottom line. Although we were shocked into this behavioral change, it didn’t seem to last long. Old habits will return unless one consciously creates a shift. Soon it was back to business as usual. Somehow we got it wrong, this current false mirror of riches. It can be best illustrated by a piping hot pizza pie, each slice demonstrating our values. Currently by far the largest slice is the pursuit of cash, because beyond meeting our basic needs, cash can buy and amass things that others can readily see, ultimately bolstering our sense of ego, power, and control. All the other slices are small. Short shrift is given to family, friendship, humor, creativity, compassion, giving, adventure, wellness, etc.
