Life after Via Magna
Kitchen and Gastronomy in Via Magna Xavi Montañés, student of the first promotion of Via Magna school, graduated with a Diploma in Kitchen and Gastronomy. His culinary vocation has deep roots and gastronomy is part of the family environment, as his parents have a restaurant on the camping La Tancada in the Ebro Delta During his studies at Via Magna, Xavi favorite subjects were the most practical content, such as food processing and culinary techniques. Over time, however, he has become aware that other content such as organisation and management have been very helpful. He also keeps very good memory of Professor Francesc López, who has greatly influenced his view of the kitchen.
Can Fabes Xavi made his internships at a restaurant that is among the most recognised and honored, as is Can Fabes, with a great kitchen. It was a very intense experience for Xavi, who completely engaged in working and got a very satisfactory outcome. In fact, among all the interns from different schools, he was the only one who stayed for six additional months!

Culinary projection After his experience at Can Fabes, Xavi returned to La Tancada family restaurant with lots of new ideas. He started by creating dishes and teaching them to his colleagues in the kitchen. On our visit, we were able to enjoy two of the creations by Xavi: A prawn carpaccio with a coloured and elegant presentation, a well balanced and really delicious dish. While the dessert was a perfect combination of sophisticated truffles with homemade ice cream prepared by Xavi personally. We are very proud of how well he works.

He was aware that he improved his culinary knowledge, but he also highlighted that he acquired mental speed, reducing the reaction time considerably. Xavi was obviously very comfortable in the family restaurant but would not change the kitchen because he values and respects the work of his parents. The paellas and rice dishes the customers of the restaurant love, are prepared by Xavi’s father following his own technique.

New challenges Continuous learning is the approach chosen by Xavi to drive his career progress. One example is that he has set a new challenge. Along with a good friend, professional colleague, has gone to Mexico to work at a restaurant where he can learn from the best chefs in the country. It is located in the Valle de Guadalupe and is called Corazón de Tierra. From Via Magna, our congratulations to Xavi Montañés. We wish him a great success in the future.
