Happy New Financial Year everyone! Don’t forget your membership renewals, as the $5 discount only applies if paid before 31 July, so not long left now to take advantage of it! Most Branches will get through their AGMs these next two months, so we all look forward to seeing some new faces in with the old, to keep the good times coming! It really is critical that fresh blood steps in, as you bring new ideas and concepts with you, it just needs a commitment to a short 12 month cycle and working with the rest of the committee to make the job manageable. Without our Committees, Branch and State, there is no Society and no Workshops for anyone to enjoy as we do… SO give it a try!! Hope you all have 26 October in your diaries, yes it’s a Sunday, as this is our State AGM, where such things as the incoming Committee and Membership prices are decided and confirmed for the next year. For the Committee, all positions are declared vacant at this meeting – if you are keen, please send in your nomination and seconder to: victoriancakesociety@gmail.com. Otherwise, if you think you may be interested to take on a role, please do not hesitate to contact any of the current Committee for information. This Committee is particularly critical, as without it we cannot legally continue, so what we need is YOU! At this time there are still spaces and need for volunteers at Cakeriffic 18-20 July at Caulfield Racecourse. Please contact Adrien (me) or Cheryl East if available for the Friday 18th. For Saturday 19th, please contact Erin or Justine at Eastern Branch and for Sunday 20th please contact Adel at Town&Country – you don’t have to be members of these to volunteer on any particular day! With sufficient people helping, there will be ample time for a look yourself and breaks, it was fabulous fun, but busy, last year. We also need your display pieces to show off, people enjoy looking at these as much as anything else! Please contact Adrien for display pieces details on setup and collection. It was our friendly and numerous volunteers which really made the grade last year to engage all those cakers out there. So I look forward to hearing from you soon! May your Art be Sugar Art!

How cold is it out there! Definitely not a fan of winter even if I was born and breed in England! In May Grace from Grace of Cakes came to us again, this time to teach Spring flowers. This time with the Sweet Pea and a hand molded 5 petal blossom. This was the first to be kicking off a series of workshops leading up to a tiered wedding cake later in the year. The results were amazing as you can see! Great learners, great teacher mixed in with pure creates these stunning results! You must come to Western for our next workshop. Speaking of the next time at Western, the AGM is coming up. On August 9th in fact. On that day all positions will be declared open and all members are encouraged to participate to fill positions of President, Vice President, Secretary, Treasurer and at least 3 general committee members. All are vital to keep the branch open and to provide as broad a view of opinions and ideas as possible to enable awesome workshops and demos to continue. There will also be a free afternoon tea! Don’t shy away! The old committee will be there to handover and guide if necessary until you find your feet. Hope to see you all there!

It was also a very special committee’s members birthday on Saturday, happy birthday Yolanda, who recently just become a grandmother again so it was a double celebration Our next workshop is “All about chocolate ” with Anne from the Mixing bowl. Hi, we at Eastern are at the moment looking forward with anticipation to our next very unique and on trend workshop - airbrushing! Photos in the next newsletter. Last month we learnt all about cake ‘techorating’ - special thanks to Barbara from Ninny and Goggle for a professional insight into this amazing side of our craft. We were also thrilled to make a beautiful rice paper flower (love the kit, thankyou Barb :) )- something new for many of us. We had a very busy May gathering, with Minori Baba following Barb’s demonstration. For those of you who have not heard of Japanese candy sculpture ‘Amezauku’, I can report that it was truly mesmerising. July 26 is our AGM, which we will hold during a very brief pause in Sugarnana’s demonstration. This will be a-non-hands-on-workshop, and I hope to see many Eastern members on the day. Please feel free to email us if you are interested in taking up a leadership position for the coming term. Saturday June 19 will see Eastern members contributing at Cakeriffic. If you are free to help out for a half or full day, please let us know! We are also seeking donations of Sugarcraft - so if you have a fabulous piece you just don’t know what to do with, lend it to VCDS and it will go on show! Feel free to email or have a chat at our next workshop. To follow on from Cakeriffic, in August Eastern will be presenting ‘Back to Basics’ - how to ganache, and centre pole. Branch Reports Town & Country Jan

What two great workshops we have just had. In May we had Pam Lane over from Adelaide to help us run a workshop on entering a cake decorating competition. This workshop facilitated by Jan Murphy provided all those who attended with lots of information and a fun afternoon on the highs and lows of entering a competition. Our members imaginations were put to the test and see the winning entry in this issue. Pam also took the time to do two demonstrations for us, a David Austin Rose, and a little Happy Feet character. If you haven’t tried these little penguins yet, they are a must and I just had a go making them out of marzipan stuffed with a macadamia kernel and sat on top of rum infused red velvet cupcakes, topped with cream cheese icing and they were the hit of the party, see my photo in this issue. Our next workshop in June saw our members tackle sugar flowers with training wheels, and all took home a finished clematis with lots of hints and tips along the way. Coming up in July is Cakerific and we need T&C members to help man the stall on the Sunday, contact Adrien or Adel (contact details in this magazine) for further information on dates and timing, but your help in the form of a three hour block will be gratefully appreciated. Now to our next workshop in August, this will be absolutely lots of fun in creating an Hawaiian fancy shirt for Fathers Day. The workshop will be held in Mulgrave Community House from 1-4pm and requirement list will be attached to the invitation that will be sent out soon. Now to a major event for us, the AGM is in September and we need you to step up and come on board the committee All positions are vacant and if you will like any further information contact either Adel or myself to have a chat. Love to hear from you and it is great fun organising our events. Also at this meeting is where we need to hear from you in what you want? Yes, we can organise workshops on what “we think you want”, but given we have over 100 members in our branch and only about 20 turn up at each workshop, what and/or who do you want to see happen in your Branch. Which Branch do you belong to? I am a member of the Eastern Branch, and have been a member for 6 months

When did you start cake decorating? I started cake decorating fresh cream cakes back in 1996, (eek....so long ago!!!). I have been decorating sugarpasted cakes for 3 years.

What got you interested in cake decorating? I got interested in cake decorating by landing a job in the industry, I didnt really know what I wanted to do as a career. I moved to London for 4 years where I was able to watch and manage some amazing cake artists, at a popular London cake company. I dabbled in creating cakes over there, but I was there to manage the team.

What do you love most about cake decorating? is creating something special for someones special day, weather it be a wedding or a birthday.

What do you love least about cake decorating? What I love least, is when things go wrong....We create things out of sugar, unfortunately sometimes things dont go accordinly to plan.

Who is your cake idol and why? mmmmmm! My cake idol! my god! I have so many!!!! Probably two people i used to work with at Cakes 4 Fun, London; one is Victoria Gadsdon from Victorias Kitchen in London, who specialises in cupcakes, they are just divine! Her work is always so clean/neat and has a very distinctive style=LOVE!!! My other idol would be Pervin Isik of Elegateau, who is an amazing royal icer! Definately will be up there with Eddie Spence one day!!! What I love about Pervin, is I have been able to see a lot of her journey, and know how hard she works to get to the unbelievable standard she now achieves!


If you could give fellow decorators one tip what would it be? A handy tip would be to back yourself and be yourself and dont sweat the small stuff! Ive only just developed the confidence to really back myself when i’m working on the cakes I create. We all roll a ball differnently or see things differently, thats why we all look at each others work with delight while saying to ourselves “why didnt i think of that?” hehe!!

If you would like to take more cake classes, what would they be? More classes!!!! there is never enough! I was luckly enough in the UK attend a Royal Icing masterclass with Eddie Spence MBE... an amazing 3 day workshop....if you ever head to London, its a must! but at the moment, I’m wanting to learn structure cakes, Mikes Amazing cakes are really amazing!!! I would love to be able to do one of his classes one day!

Not for Profit

‘Not for Profit’ – what does it mean? One of the most recent queries I have heard when talking about our Society with different people, is – what exactly is intended and expected if we are ‘not for profit’? Well hopefully this article clarifies it for everyone. A Not-for-Profit organisation is one which does not operate for the profit, personal gain or benefit of particular people. The definition applies even if an organisation has been wound up. Staff or r esponsible persons of the organisation can be paid a reasonable wage – for the Society all positions at both State and Branch Committee levels and the appointments of those Committees (eg Editor) are voluntary. A not-for-profit organisation can make profit, but any profit made must be applied for the organisations purpose(s). Any profit made can be retained (or any portion of it) as long as there is good reason for it – for example in the case of the State Committee finances, we need to maintain a level of income in order to meet our Public Liability, and Volunteer insurance levies, our affiliation fees with the Australian National Cake Decorating Association and producing our newsletter, to name a few items. Branches need operating capital in order to cover hall hire expenses. If an organisation continues to retain significant profits indefinitely without applying this to its purpose, this may indicate the organisation is not solely working towards its purpose. According to the ATO, any profit made by a not-for-profit organisation goes back into the operation of the organisation to carry out its purpose and is not distributed to any of its Members.


This is not to say that when bringing in a demonstrator/workshop facilitator, you must not pay them, or cannot pay them for the time, effort, expertise and preparation they have made for your event. As we abide by the Model Rules for Incorporated Associations, we have included by default in our constitution that we will not distribute to our members, any profit or assets of the Society – whether operating or not. (This is the dissolution clause). Looking at the ATO’s examples of not-for-profit organisations, we would seem to fit in the category of “scientific societies”, afterall, wouldn’t you agree we all enjoy dabbling in the science of Sugar! This is all quite legalistic for us, but simply – the Society’s purpose is to share and encourage Sugar Art, and to do so our Branches for the most part, are the ones who organise events for a fee in order to cover the obligations – costs – of providing that event and engaging artists willing to share their skills and experience. Any profit from these fees and frequently the raffles run at workshops, can then be used to form the basis of the next event or procure a Guest to a bigger event later on. So do of course make the most of what is on offer and attend as many and as varied workshops you can get to, this is how we re-invest the profits (if/when any) back into our purpose and what we exist for.
