I really enjoy Long Island all year long; from fall festivals to winter holiday celebrations and spring fairs, there is always something to look forward to. But, I have to admit that I am a bit partial to Summer. Especially after the winter we just survived, everyone is anxious to get outside and enjoy all that our beautiful island has to offer. June is like a Friday morning before a long weekend. The time you have waited for is almost here but not quite started yet. And because the time is short, it's best to slow down and enjoy every moment before we are saying goodbye once again. We've listed some upcoming events in this issue to give you a hint of what's to come. July and August will be jam-packed with all of the fair, festivals, outdoor concerts and family fun that you could possibly hope for, so don't miss an issue! We've also been distributing our new publication, LIVE Magazine, and the feedback has been amazing so far. LIVE is a full color glossy magazine that covers Long Island's Dining, Nightlife, Music and Entertainment scene, and is distributed at many of the most popular venues in Nassau and Suffolk Counties. The size is smaller than Village Connection so that you can grab a copy and keep it around for a handy list of all of the live music and entertainment events happening all across the Island. In the meantime, we are out and about exploring some of our new distribution areas. I'm not going to lie, Fire Island was one of my favorites. Taking the ferry over and spending a long (gorgeous) day meeting some of the business owners and talking to them about sharing their news with our readers...well, all I can say is, "It's a tough job, but someone's got to do it." Mary’s Grave For generations, people have been looking for the location of Mary’s grave. Some claim it is located in the woods off Mount Misery Road in Huntington. Other stories place her grave in Stony Brook, Head of the Harbor and Mt. Sinai. One story claims that Mary murdered her two children and her husband, and because of doing this dreadful deed, she cannot rest peacefully in her grave. It is said that her tombstone has her birth date but no death date, and the location of her gravesite is a center for strange happenings. Supposedly, if the tombstone is found and you shine a flashlight on it at night, the face of Mary appears. Another story claims that Mary became possessed by an evil spirit. She was a lonely girl who kept herself occupied with her animal friends. Her father built her a stone clubhouse on their property, and apparently it was there where she became possessed. She mutilated the animals she loved, and then set out to kill her brother and father with an ax. As time went on, the townsfolk wondered where the landowner was. When people came to the house to check on him, they found Mary sleeping in bed next to her dead father, who was covered in blood. Mary was hung by the townspeople in a nearby tree. This tree, which appears to be dead all year long, is said to still exist, although no one seems to know where. It is rumored that her stone clubhouse exists somewhere in Stony Brook on private property. In the 1960’s and 1970’s there was another story surrounding the Stony Brook location of the grave. Young men were considered brave if they went up to the haunted gravesite and urinated on it. Rumor had it that whoever did so would get into

a car crash on his way home, trying to avoid hitting a ghostly girl wearing a white dress. Another stone clubhouse is said to be located somewhere in Head of the Harbor. This particular story states that the father would abuse Mary at the site of the clubhouse he made for her. Not being able to bear it any longer, Mary took her own life by hanging herself in a tree. Her body was buried nearby, and her gravesite is said to contain an angelic statue that appears to be crying. Some believe it is Mary crying for other abused girls that she cannot protect. Finally, there is the story of Mary’s grave being on the old Chandler estate in Mt. Sinai. When Mrs. Chandler converted her house to a boarding house, a girl named Mary came to stay. Supposedly, she had been a patient at Kings Park Psychiatric Center. As the story goes, Mary disappeared suddenly and Mrs. Chandler was concerned about her whereabouts. The rent had not been paid, yet her room looked still lived in. At night, the lights were said to go on in her room when nobody was there, and strange noises could be heard. Mrs. Chandler was quite worried, but never did she see Mary again.

ITB Syndrome I work with so many people that have “knee pain”. Knee pain can be caused by so many different things. One cause of knee pain is a tight ITB or Iliotibial Band. Your Iliotibial Band is made of fascia leading from the lateral aspect (outside portion) of your pelvis, along the outside of your hip and knee and inserts just below your knee on your tibia. When you do certain activities such as running and cycling it moves from behind the femur (thigh bone) to the front of the femur and this motion combined with flexing and extending (bending and straightening) the knee, the ITB continually rubs on the lateral epicondyle of the femur (end of the thigh bone) and the ITB can become inflamed. A burning sensation near the outside of the knee along with swelling in the knee joint can occur. The most common causes of this injury are overusing it while running (especially up and down hills), weight training the legs especially squats and cycling. How do you relieve the symptoms? You always want to consult your doctor first before assuming what the injury is. Once you know its ITB Syndrome then you want to rest and ice the area. Rest is crucial because the pain and inflammation come from overusing it. Ice will help to bring the inflammation down especially when used immediately after a workout. How do you fix the problem so it doesn't happen again? Make sure you are wearing the proper foot wear by seeing a physical therapist or doctor and getting your feet assessed for the proper sneaker. A knowledgeable runners shop can also help fit you for the appropriate sneaker for your foot type. If you run on the

same side of the road in the same direction most of the time then you need to frequently change directions and sides of the road that you run on. This will change the direction of the force that is put on your foot and reduce the risk of overusing the area. Mix in runs on flat surfaces so you are not always running on hills. Strengthening of your hip muscles especially your hip adductors that work to bring your leg across your body can help fix muscle imbalances (weakness on one side and tightness on the other side of the limb.) And my favorite is stretch the area! You work hard exercising and shortening your muscles so you need to stretch and lengthen them so they loosen up and don’t cause you problems. I will leave you with this stretch: stand sideways with your right hip facing the wall. Place your right foot behind your left foot. Keep your right foot flat on the floor. Lean your right hip into the wall until it touches the wall. Then lean your trunk outward away from the wall. If you're ITB is tight you will feel the stretch from the top outside part of your pelvis down to the outside of you knee. Hold for 30 seconds. Repeat 10 times. Repeat on the other leg.

Prepping Your Home For Summertime

As schools close for the summer, and families all over America prepare to vacation, it’s easy to forget to adapt your home to accommodate the extreme temperatures during the hottest months of the year. Whereas it’s common practice to “winterize your home” or partake in “spring cleaning,” changes needed for your home during the summer are often upstaged by fun in the sun. Here is a short summer home checklist to get your home up to date, so you can enjoy a fun and safe summer!

Clean your guest room

During the summer months, chances are you’ll entertain more company than usual due to holidays and impromptu BBQ cookouts. For this reason, it’s always a great idea to have a spare room ready just in case your company overindulges in libations, or simply prefers to drive home in the morning.

Change your linen

As the temperatures change with the season, so should your bed linens. If you have the same linen

on your bed from the winter season, it’s safe to assume your bedding is as hot as the current triple-digit heat wave blanketing most of America. Lighter sheets can make a drastic difference during the hottest months of the year. Cool off by trading in your heavy linen for lightweight sheets.

Pre-prep your grill

In my opinion, the worst part about barbequing is scraping the old seasoning and leftover meat off the grill. There’s no feeling worse than craving BBQ while you waste time cleaning a grill that should have never been left in such horrid conditions. By prepping your grill ahead of time, you can spend more time entertaining your guest, and less time cleaning a mess.

Treat your home windows

While Americans nationwide welcome the warm weather that accompanies the summer months, most would agree the unwanted ultraviolet rays that penetrate the

atmosphere and your windows are a nuisance. By covering your windows with transparent window film, you can shade your home from harmful ultraviolet rays while keeping your house much cooler.

Green your lawn

If your front lawn is not a perennial, such as Ryegrass that comes back to life season after season, chances are your grass is browner than a UPS uniform during the hottest months of the summer. By power raking, fertilizing and watering your lawn often during the summer, you can increase your chances of maintaining green grass. Prepping your home for summer can help you keep tabs on the current condition of your house while you inspect the hidden areas for any signs of insects seeking food or refuge from the summer heat. By using the tips above, you can spend more time enjoying what summer has in store, instead of focusing on annoying and seemingly endless summer chores.


Sun Exposure Safety

While some exposure to sunlight can be enjoyable, too much can be dangerous. Overexposure to ultraviolet (UV) radiation from the sun can result in painful sunburn. It can also lead to more serious health problems, including skin cancer, premature aging of the skin, cataracts and other eye damage, and immune system suppression. Children are particularly at risk. Most people are not aware that skin cancer, while largely preventable, is the most common form of cancer in the United States. More than one million cases are reported annually. By following some simple steps, you can still enjoy your time in the sun and protect yourself from overexposure.

• Generously apply sunscreen

Use about one ounce to cover all exposed skin 20 minutes before going outside. Sunscreen should have a SPF of at least 15 and provide protection from both UVA and UVB rays. Re-apply sunscreen every two hours – even on a cloudy day and after swimming or sweating.

• Do not burn

Sunburns significantly increase the risk of developing skin cancer, especially for children.

• Wear protective clothing

Wearing protective clothing such as long-sleeved shirts, pants, a wide-brimmed hat and sunglasses will prevent too much sun exposure.

• Seek shade

Seek shade whenever possible and remember that the sun’s UV rays are the strongest between 10am and 4pm.

• Use Extra Caution

Be sure to use extra caution when near water, snow and sand. These elements reflect the rays of the sun and increase the chance of sunburn.

Outdoor Kitchens

O

utdoor Kitchens are popular remodeling projects. Many homeowners find it easier to gather the entire family for a cookout or barbecue rather than a family meal and an outdoor kitchen allows you to enjoy a backyard setting without sacrificing the conveniences of indoor kitchen! Choosing a Site If you already have a deck or patio, you’re ahead of the game; your outdoor kitchen won’t cost as much to implement if it encompasses a pre-existing foundation. Have a professional evaluate the structure before proceeding, however. Your space might need extra bracing to hold the additional weight of an outdoor kitchen. Place the outdoor kitchen as close to the house as possible—in particular, near your indoor kitchen—to minimize time and energy spent moving food and supplies between the two rooms. Take into account the potential site’s exposure to the elements as well as any flammable hazards overhead such as tree limbs, trellises or a patio roof. Construction Considerations Modern kitchens require, by definition, water and electricity. If you’ve chosen a gas grill, you’ll need access to a gas line as well (keep in mind that gas grill inserts must be enclosed in a non-flammable material). Sinks will require proximity to a clean water supply and a drain. You will also likely need to obtain a permit for any electrical or plumbing additions.

As with any project of this magnitude, check with local zoning authorities before moving forward with your plans. When constructing cabinetry for outdoor use, take into account how well your chosen materials will withstand the weather. Use pressure-treated lumber and countertops that are similarly weatherproof. But even with weather-resistant materials, the better shielded they are from the elements, the longer the kitchen will last without need for repairs. Design for Comfort Outdoor kitchens should be designed with nods to functionality, comfort and aesthetic appeal. For instance, a small outdoor refrigerator may ease food preparation effort considerably: You’ll be able to store mayonnaise and other perishables to have on hand during the cooking process. (If you decide to install a refrigerator, choose a stainless steel model designed to fit under the counter to protect it from the elements, and keep it locked when storing items long term.) A well-placed sink is not a necessity, but will usually prove to be a great convenience, especially compared to using a garden hose or a trip inside for water. Some modular units offer grills with side sinks, along with other features. Evaluate which design will work best for your needs, space and budget. A number of websites offer free kitchen plans and ideas; browse through some to get a solid idea of what you want from your outdoor kitchen.

Blue By You...

W

hen I saw a blue Morning Glory in bloom many years ago it inspired me to go and buy a pack of seeds so I could watch it grow on my cyclone fence. I thought the blue flowers were really cool and I wanted to see it growing in my yard as well. All of you plant enthusiasts know how it is when you see that plant that you gotta have! It was like magic when that first flower finally opened! Since that time there have been so many other plants to come along that made an impression but recalling those that were influential to me in those earlier years gives them more meaning in the garden today. Blue has always been a favorite color of mine so I had a tendency to choose that color for the landscape. Some other great blue flowering choices include clematis, campanula, nepeta, all the blue salvias, scaevola, hydrangeas, lobelia, evolvulus, forgetme-nots, delphiniums, pulmonaria, brachycome, ageratum, cornflower, caryopteris, plumbago and iris. There are other choices as well such as blue leaved hostas and ornamental grasses like Blue Oat Grass, Festuca 'Elijah Blue' and the native grass Little Blue Stem. They also will add interesting texture to your landscape. Consider combining yellow and orange colors in the garden with blue since they are complementary colors. From a design aspect, the blues help to "cool down" or "tone down"

hot colors in the landscape and also helps to soften the effect of what is sometimes considered too harsh without it. If you choose to use blues with annuals and perennials, you may want to mass plant them for a more "Wow" affect because it is a subtle color and will make for a better show. Small pockets of blue colors can be very effective however when it comes to help breaking up or accenting other colors in the planting bed. Blue flowering shrubs and vines can make an impact as single plantings or small groupings because of their larger size and spread. Chef Tito Onofre Jonathan’s Ristorante Chef Tito Onofre, a native of Peru, discovered an interest in cooking at a young age. He was influenced by his mother, who encouraged his culinary curiosity in her kitchen. Onofre received his degree in Hotel Administration and Culinary Arts from El Centro de Formacion en Turismo in Lima, Peru. Hungry for more, he continued his culinary education at Florida Culinary Institute in Palm Beach, Florida and was inspired by popular chefs such as Mario Batalli, Alfred Portale and Jamie Oliver. The Peruvian chef took up a position with a popular Italian restaurant–Boom–which had two locations in Manhattan and Bridgehampton, NY. Onofre was working at both locations and spent much time commuting from the city to Eastern Long Island. In 1997, Onofre’s daughter Ashley was born and he wanted to spend more time at home with his family. He accepted a position as executive chef at Jonathan’s Ristorante in Huntington, NY and hasn’t looked back since. At Jonathan’s, Onofre is charged with designing menus that encompass European flavor and refined Italian cuisine. “I like recreating old recipes and sometimes forgotten dishes that are reminiscent of ‘Nonna’s cooking,’ Onofre said. “We also believe in having a courteous and knowledgeable staff to enhance the experience.” Maiale con Vegetal Tartufati is one of the restaurant’s most popular dishes. A double cut pork chop with cipollini onions, Tuscan potatoes, artichokes and truffle oil. “The dish has Northern Italian roots,” chef said. “It’s simple food with a somewhat complex preparation, making it desirable to those who feel they couldn’t emulate the plate at home.” What’s a perfectly prepared pork chop without a glass of red to complement it. The chef recommends a “super Tuscan” wine with this particular dish, for example a Gagliole which is 90% Italian Sangiovese grape with Cabernet Sauvignon. “It’s a dark and hearty Tuscan red with thick layers of black fruit and spice,” he explained.

In a small tray put the potatoes with oil, salt & pepper, place them in a 400 degree preheated oven for about 20 minutes or until tender. 2. Bring water to a boil in a medium pot, cook artichoke about 6 minutes until tender, then set aside 3. Bring water to a boil in a medium pot cook the asparagus until tender, then transfer them to an ice bath to cool for 5 minutes. Remove them from the bath & let them dry on a kitchen towel 4. In a medium pan, sautee the artichokes, cipollini onions, asparagus & potatoes together, add rosemary, thyme, parsley, salt & pepper. Pork chop: 1. Season with salt & pepper 2. In a sauce pan heat oil over high heat, add pork chop and cook for approx 2 minutes on each side.  Transfer to oven, preheated to 500 degrees for approx 18 minutes 3.When ready add the balsamic & butter and heat together until that becomes your glaze.

Serve: Place vegetables with onions & potatoes in middle of plate, then lean pork chop over them. Drizzle truffle oil on top of pork then add the balsamic glaze from the pan.

WHAT’S COOKING WITH BACKYARD HARDSCAPING? The thought of backyard cooking has been long-linked to summertime grilling of chicken, hot dogs and burgers, but by today’s standards, cooking outside can mean different things for different people and can extend into all four seasons. Chances are there’s a cooking component that falls right into your outdoor lifestyle and indoor culinary tastes. The first step may very well be putting that old portable gas grill on the curb in favor of one or more “cook-ready,” multi-featured products available. For Cambridge and other hardscape manufacturers, the mission is to produce a comprehensive line-up of open-air kitchen and recreational grilling components that creates a balance of hassle-free pleasure for the traditional backyard chef while also respecting the authenticity of popular and regional cooking procedures for the more adventurous outdoor chefs.
