on't you just hate changing the clocks - why do we have to go through this every year? The clocks have changed and, while computers and phones usually update themselves, we have to manually adjust the time on the microwave, our wristwatches and on any traditional timepieces on walls and mantelpieces. You would think we would be used to it by now. But no, every time, we react as if it has literally never happened, greeting it with a mixture of shock, resentment and downright despair. Our house becomes a weird world of twin time zones. Alarm clocks say one thing, but the microwave says another for weeks (because we can't remember how to alter the time or just can't be bothered). It's dark before you leave work. In fact, it gets dark mid-afternoon, so we feel like we're still working in the dead of night. All thoughts of going to the pub later and sitting out in the beer garden just disappear. Instead, we just feel like rushing home as quickly as possible to switch on the central heating, eat comfort food and binge on Netflix. The whole clocks changing thing is the main topic of conversation for a long time before it actually happens. Some people go on about it for weeks, even months, before we actually need to do it. As if we need reminding that winter gloom is coming. Still, it could be worse. You could have decided to fly for some holiday sun only to be onboard the plane and hear, "This is your pilot speaking. I’m working from home today”. As this is the last issue of 2021, our 10th anniversary year, I would like to thank all of our advertisers, contributors, competition winners, distributors and printers, but most of all, you, our reader. t the northern end of Blackfriars Street in Carlisle is Heads Lane leading to West Walls and the Sallyport Steps. The Sportsman Inn is on the south side and the Tithe Barn on the north side. Heads Lane took its name from the landlady of the Sportsman many years ago, Bella Head. Isabella Warwick married Thomas Head in 1757. Over the years the name was shortened to Head’s Lane. With dissoluton in 1540 the Tithe Barn of the former Priory of St Mary

was redundant and was let to various tenants for the storage of carriages. Then in the 19th century it was put to other uses, one end becoming the Carlisle Dispensary, and when that moved in 1851 it became a cottage. The building was threatened when the west gable collapsed in 1875. Then, in the 20th century, to prevent the roof falling in, the roof was stripped of its sandstone

slabs. Demolition was called for in the early 1960s but a restoration trust was formed and work began in 1969, providing a parish hall for St. Cuthbert’s; opening in 1971. Much more about this historic area in our city can be found in a new book written by Denis Perriam and to be published by me in time for Christmas 2021. JANE’S KITCHEN Mouth-watering inspiration from food editor Jane Ferguson

W

anting to lose a few pounds before our holiday, I came up with the ‘Gin and Rich Tea Diet’ for my husband and me. Let me explain. Overall, I would say we eat quite healthily in that we don’t eat processed food, everything is cooked fresh, plus we eat a lot of ‘greens’. However, it would appear that our main downfalls are a glass or two of wine at the weekend, and a biscuit with a cup of tea. Firstly, the wine. Do you know how many calories there are in a glass of wine? You may be surprised. In a 250ml glass of wine, there are about 228 calories, which is the equivalent of a standard mars bar. On the other hand, in a 210ml serving of gin and slim line tonic there are 115 calories. Now we are by no means alcoholics, but come the weekend it’s so nice to have a treat and wind down with a drink, so we swapped a glass of wine for a small G & T. Secondly, biscuits. Apparently, one of the signs of getting older is that you always have to have a biscuit with a cup

of tea, and yes, we do fall into that category. A cup of tea is just not the same without one. Therefore, I decided that the only biscuits we would have in the house would be Rich Tea. Boring I know, but a biscuit nonetheless. And there began the ‘Gin and Rich Tea Diet’. Did it work you may ask? Yes it did. My husband lost more weight than I did, which was very annoying, but we both lost weight. So overall, a big thumbs up for the ‘Gin and Rich Tea Diet’. Talking of biscuits, one of my

most favourite biscuits is the ‘Empire Biscuit’, which obviously has been off the biscuit list recently! After much searching, I found a great recipe, so here it is. Pre-heat your oven to 160°c. Cream together 225g soft salted butter and 125g caster sugar until light and fluffy, then add 1 beaten egg and mix in. Gradually mix 325g plain flour in (if possible use a mixer as it will be hard by hand). Do not overmix. Turn the dough onto a floured board and roll out to ¼” thick. Using a 4” round cutter, cut out 14 biscuits (this will make 7 finished biscuits). Bake for 12-15 minutes and then transfer to a wire rack and cool completely. They should look very pale. When cold, spread one biscuit with jam and place another biscuit on top. Mix some icing sugar with water to form a thick consistency (so it won’t drip off the biscuits). Coat each biscuit, and top with a fruit jelly sweet. Now where’s my cup of tea!

op of the toxic list has to be chocolate! Toxicity varies with the cocoa content, but high-quality dark chocolate is more likely to be lying around at Christmas. Try and find the packaging if you can and assess how much might have been eaten to help your vet make the right treatment decision. Grapes and dried fruit are also common problems, especially with mince pies, Christmas Cake, Stollen, and bowls of nibbles being out on tables for guests. Some nuts can be safely eaten by dogs, but the macadamia nut (a festive favourite) is more toxic. Dregs of alcoholic drinks are appealing to dogs and could cause symptoms from nausea to severe alcohol poisoning. As well as these very toxic foods, there is also a risk of more general overindulgence at this time of year. A small amount of lean turkey and boiled vegetables makes a nice Christmas dinner for your dog, but too much of the skin or roast potatoes could cause pancreatitis, and stuffing or gravy

containing onions or garlic should be avoided as these can be toxic too. Be very careful if the turkey carcass is left out on the worktop - cooked poultry bones can cause intestinal damage. Talking of intestinal damage, vets also see extra cases of ‘foreign bodies’ at Christmas time, with presents, toys, and ornaments lying around, and perhaps guests staying who aren’t careful with their socks and gloves! If you are concerned that your dog has swallowed something inedible call your vet for advice. Most of these risks can be managed by planning ahead: keep decorations out of dogs’ reach, don’t put gifts that might contain food under the tree, and give guests clear instructions about where to store their things. It’s not just things indoors that can be a poisoning concern in the winter though. One of the most dangerous things your dog could ingest is engine antifreeze which causes acute kidney failure. This highest risk comes from puddles on driveways, garages, or farmyards. If you suspect your dog has ingested antifreeze you must contact your vet immediately as treatment is only effective in the first few hours. Dogs may also become ill from licking rock salt from their paws after a pavement walk, so a rinse in clean water is recommended.

he South Ormsby Estate is located in the heart of the Lincolnshire Wolds. Tristan Jorgensen is the Head Distiller at South Ormsby Estate. Tristan gained distillery experiences in Scotland and is now utilising that knowledge and those experiences to great advantage, having created a multi awardwinning brand for South Ormsby Estate’s own craft gins, with several of the botanicals used coming from the estate. History dictates that Charles Burrell Massingberd (1749 – 1835) became the squire of South Ormsby Estate during 1802. I found Burrell’s Dry Gin (43% vol) superb. This elegant, refined production is classic and fresh. Burrell’s Dry Gin has botanicals that include juniper, angelica root, coriander seeds, lemon peel, apple and almonds, plus some more, that make this gin the very worthy and excellent quality production that it is. Fragrant, smooth and crisp is how I would describe this gin. The mouthfeel and palate’s sensation enjoy the fruitiness. I found that with an added tonic, this production came into its own, having delights of citrusy overtones and really great for a G&T mix garnishing with citrus fruits. Marie Jeanne Rapigeon of Versailles (1764 - 1863)

refurbished and transformed South Ormsby Estate, bringing further elegance and glamour. Marie Jeanne became the second wife of the squire and the gin created by Tristan Jorgensen pays a great tribute to this lady. Red fruit aromas and flavours are evident, in this splendid, pink gin (43% vol) production. Also, fabulous for adding colour, to any occasion. The botanicals used for this gin include juniper, angelica root, coriander seeds, cassia bark, pink peppercorns, strawberries, raspberries and cranberries. Again, I found this to be another extremely well-balanced production. Certainly, the bouquet is fruity and, with the palate following through, having further highlights of complexity and depth, this much appreciated and respected delectation is a ‘pink gin’ lover’s delight. t’s been a strange few weeks at the Sedgwick house. A month ago my husband Pete retired, so roles have changed. I’m now the major breadwinner and he’s cooking all the evening meals during the week. As if that wasn’t concerning enough, we had signed up to walk 180 miles along the Pennine Way for a fabulous charity close to our hearts. Believe it or not, that was our holiday. I run a travel business, we could have gone anywhere, but seriously, we should have been trekking to Everest Base Camp in September for the same charity, but Covid put a stop to that. We couldn’t have picked a worse 2 weeks for weather for our Pennine Way walk. We had rain, hail, really strong winds. The main thing was, we completed our 180 miles, and so far we’ve raised a massive £4500 for our charity. In amongst all this, there have been major positive changes in the travel world, and all of a sudden, people want to travel. I am in demand. This is a fabulous problem to have after

all the difficult months since March 2020. I’ve got enquiries on my desk for Sri Lanka, Fuerteventura, a last minute holiday for Cyprus, a backpacking trip for Central America, a honeymoon to The Maldives, a luxury self catering accommodation in the UK for

Since I started writing this, I’ve had two more enquiries pop in, one for a family winter sun holiday and the other for a Mediterranean cruise. There is definitely more confidence in travelling. Fully vaccinated travellers now only have to take a lateral flow test on their return to England, there is no longer a requirement for a test prior to returning to the UK and there are only 7 countries on the UK red list. It’s still a bit complicated out there though, so it’s great that more and more people are using my services. Recently I had clients return from

Due to a combination of panic and technology issues at their end, I completed the forms for them. Within seconds the data I had entered was linked digitally to their passports and they had no issues returning through immigration. It could have been a very different outcome; they could have been turned away from the flight, or fined on arrival. You don’t get this kind of service from the internet. Please remember to listen to the advice you receive from an expert. I’m getting excited now, by the time you read this, I will be heading to Tromso for a weekend of hunting for the Northern Lights. Saving Britain's Trees

t has variously been described as a ‘treedemic’, and a national tragedy. The subject is the loss of Britain’s trees to a variety of diseases, pathogens, and pests. From Phytopthora, to Ash Dieback, Horse Chestnut Bleeding Canker, and Plane Wilt (to mention a few) our trees are being assaulted as never before. Add to this macabre list a host of destructive insects – well you get the picture! Most will have heard of Dutch Elm Disease that swept the country in the 1960s and in to the 70s. I remember as a child growing up in the leafy suburbs of North Leeds crying over the felling of a favourite street tree and wondering how many more would have to be felled. We all know how that turned out, but perhaps it wasn’t until Ash Dieback reared its ugly head that we all came to realise that Dutch Elm Disease wasn’t a one off. In fact, since Dutch Elm Disease there have been some 20 odd serious tree diseases recorded in the UK. In Cumbria you don’t have to wander far to see some of the effects of these diseases. Across Dumfries and Galloway, large areas of Larch have been felled, and will continue to be felled. The range of trees effected by disease is sobering. No longer can we look at single species of tree such as Elm and Ash, but rather a range,

Trees Produce Oxygen Let’s face it, we could not exist as we do if there were no trees. A mature leafy tree produces as much oxygen in a season as 10 people inhale in a year. What many people don’t realise is the forest also acts as a giant filter that cleans the air we breathe. Trees Clean the Air Trees help cleanse the air by intercepting airborne particles, reducing heat, and absorbing such pollutants as carbon monoxide, sulphur dioxide, and nitrogen dioxide. Trees remove this air pollution by lowering air temperature, through respiration, and by retaining particulates. Trees Clean the Soil The term phytoremediation is a

fancy word for the absorption of dangerous chemicals and other pollutants that have entered the soil. Trees can either store harmful pollutants or actually change the pollutant into less harmful forms. Trees filter sewage and farm chemicals, reduce the effects of animal wastes, clean roadside spills and clean water runoff into streams. Trees Control Noise Pollution Trees muffle urban noise almost as effectively as stone walls. Trees, planted at strategic points in a housing estate or around your house, can abate major noises from roads and airports. So you could say trees are a pretty important part of the world we live in! So lets look after them, maintain them and give them the best possible chance to allow them to do their job – making our world a habitable one!
