o it’s summertime, apparently, which means that on a nice day we all go mad for a BBQ. We have all been there. We set about throwing an amazing BBQ for friends and family. We buy a butchers shop load of meat - of every description, prepare your secret BBQ sauce, prepare delicious salads, butter the corn on the cob, pack the fridge with ice cold beer and have every last detail in order. Everything is perfect. Well, that is, until the actual BBQ’ing begins. Whether it’s the dreaded empty propane tank, or the distracted chef cremating the burgers, or of course our not-so-Great British Weather, a BBQ dinner can go from great to “hurry up love, call for pizza” in a heartbeat. Poisoning your guests, running out of fuel, and other BBQ disasters, however, are easily preventable. Here are a few great tips to help you get through your next BBQ unscathed. 1. Check the Heat. Not everything needs to be cooked on the highest flame. If you are cooking a ‘well-done’ burger, turn the heat down. Slower cooking allows for the meat to cook without creating an over charred burger crust. 2. Good vs. Bad Flare-ups. Grilling anything with marbling will cause the fat to drip and create a good flare up that results in a great tasting cut of meat. Contrary, drips from BBQ sauce, oily or sugary marinades will cause bad flare ups, and spoil the taste of your foods. 3.Check Your Gas. If you are hosting a big

party, buy an extra tank of BBQ Gas. There is nothing worse than getting halfway through the grilling to find that your gas has run out. 4.Know Your Temperatures. Serving under-cooked meat can only lead to disaster. Invest in a cooking thermometer and check the temperature before you serve to avoid food poisoning. 5. Serve it Fresh. Keep hot foods hot by placing them on the cooler side of the grill until you are ready to serve them. Keep cold foods in the fridge until you are ready to serve them. With these glamourous thoughts in mind, I suggested to my wife we coast down the Lakes with the top down. The

ast year, I had the pleasure of watching the mythical morning migration of super yachts from St Tropez. After breakfast in the Vieux Port, a billionpound parade pours out into the bay. A super-yacht is any privately-owned pleasure yacht over 80 feet in length. The biggest now (Eclipse, owned by Roman Abramovich) surpasses 535 feet and comes equipped with cinema, anti-missile shield and a submarine. I call that overkill. Dressed in gleaming white with high gloss black alloy wheels, neat little black spoiler, oozing class with it’s sumptious interior cabin, the Mercedes SL400 glided out of the showroom ready for its maiden voyage (with me, anyhow). I had chartered this super-yacht for the day (albeit it

heading to Ullswater in spitting rain, rather than St. Tropez in scorchio heat). With a super-yacht, power has to be delivered in a refined, silky smooth way so as to not upset your passengers. The SL400 doesn’t disappoint. In fact it’s so smooth, you really have to keep an eye on the speedo, because very quickly and quietly, you could land yourself in a lot of trouble going at an excessive rate of knots. (This would have gone unnoticed by most passengers, looking out portside at spectacular scenery, but my passenger was my wife). There’s no doubting that you do feel like a pampered guest when you are seated deep into the plush seats of the SL400. These two perforated Nappa Leather seats offer 12-way adjustments, heating, ventilation,
novel Airscarf Neck-Level Heating system surely appeals to all. However, in a not-soBardot-way, my passenger looked more like a yeti, having pulled the hood of her parker jacket so tight it looked like a snorkel. Glamourous clientele will much prefer this turbocharged 3.0-litre V6 over the car it replaces; the 3.5-litre SL350. There’s more power and lots more torque, which means the SL400 is faster in every respect. As ever, the interior is pretty much as good as it gets, so tally-ho all round I’d say skipper.

Fishy Dishy Mouth-watering inspiration from food editor Jane Ferguson
I
have never quite understood why so many English holiday makers still want to eat English food when they go abroad. To me the whole point of going abroad is all about the food, there is so much variety. Recently there was a series on TV called ‘A Cook Abroad’ which was great. The series centred on celebrity chefs sharing their passion for exquisite food and exotic flavours from around the world. Each celebrity chef travelled to a different country to track down the origins of the dishes they love and discover how history, geography and culture have shaped what we eat today.

The one thing that stood out to me though was that the best recipes are always the simplest, and I am a great believer in that. Now I know we are living in hope for some kind of summer, but when we do get the odd day of sunshine let’s make the most of our barbecues. Sticking with the ‘simplest is best’ theme I have recently found the easiest meal to make. First though I have a confession to make. Although I love cooking I have always found fish stalls quite daunting, I am never quite sure what I am looking at and feel

a little bit out of my depth. But, as I have recently learnt, just ask. Don’t be afraid to buy a whole fish (gutted of course) but still with the head and tail on. Trout and Sea Bass are always a good option. Stuff the fish with some flavoured butter (which most supermarkets offer for free) then wrap the whole fish loosely in foil and put on the barbecue for about 20/25 minutes. After about 10/15 minutes, add some small vine tomatoes directly to the heat. With five minutes to go, heat up some crusty bread and voila, the easiest meal ever. Just put the whole lot on a platter, drizzle with olive oil, and share to eat. The skin peels back easily and after eating the first layer of fish, just pull the bones off and enjoy the second layer. While your fish is cooking, prepare some bananas by cutting through the skin almost down to the bottom to create a pocket, stuff with chocolate and drizzle with syrup. Wrap loosely in foil and add to a low heat barbecue for about 10 minutes or until the skin is brown and the banana is soft. Cook this while you are eating your fish for a very simple dessert. Serve with ice cream.

T
here is no easy way to say this but apparently I’m officially 27.8% fat. According to my Well man test results that is. I’m not sure how scientific these tests are but I’ve decided that as I’ve not gained any weight in the last couple of years this is nothing to worry about. I think it’s more a problem with subsidence than over eating. Because I used to be 6” 2 and now for some reason I’m 6”1 therefore I think that the extra inch has subsided into the space vacated by my stomach muscles when they left me in 2004. Anyway my Well man test results came back from the doctor’s surgery Question
and if you’ve had one of these recently then you will know that your results come back as either a happy face or a sad face or a blank face which I think means the medical fraternity haven’t got a clue what it is that they’ve found in your bloodstream. Probably bicarbonate of soda or horse tranquilisers. Anyway I had a lot of unhappy faces on my report as I seem to be almost totally made up of fat or cholesterol. Therefore I’ve decided that these tests are rubbish and I’ve designed my own Well man/woman test for the over 40’s. I haven’t finished it but I’ve got the first few questions done already. Choose your new bulbs from the catalogues and concentrate on the different colour combinations and sequences you would like to create for spring next year. 9 Bed and border maintenance is essential in summer. Cut back early flowering plants such as lupins and delphiniums and continue dead-heading in order to encourage a lovely later second display that will take you to the very end of September. Dispose of all sickly or diseased material by burning - do not put any of it into your compost bins. THE Crown and Mitre Hotel’s Peace and Plenty Restaurant ha s just undergone a refurbishment with new lighting, a new service area, modernised features and extra seating.

T
he Crown and Mitre Hotel is an iconic building in Carlisle city centre where royals have lunched, rock bands have slept and numerous newlyweds have celebrated their wedding day. The hotel was built 110 years ago on the site of the original Crown and Mitre Coffee House, a popular stopping place for coaches making their way to London, Glasgow and Edinburgh. By the end of the 18th century the coffee house had become Carlisle’s main Coaching Inn and in 1902 it was knocked down to make way for the new hotel. The hotel has continued to flourish throughout the last century, with visits from statesmen, royals and celebrities including Woodrow Wilson in 1918 and The Queen and Duke of Edinburgh in 1978. The Grade 2 listed building is run by the Peel Hotels Group, which recently spent £240,000
giving it a major facelift including the Peace and Plenty Restaurant. The restaurant has been modernised and had extra seating fitted to allow more room for larger bookings. With a Table D’hôte menu that is updated monthly and a new A La Carte menu just been launched, it is an ideal place for both lunch and dinner. The hotel also has a Birthday Club which diners can sign up to and receive a free birthday cake when they book a table in the restaurant. f you’re in the market for a new road bike you are faced with a number of important decisions before parting with your hard earned. One of these decisions is should you go for aluminium or carbon. Aluminium bikes are great, and not to be knocked, but what is it about carbon that gives it that extra appeal. Here are a few things to consider:1. Lightness. While is possible to build high quality and very light aluminium frames it is generally accepted that carbon fibre bikes are lighter. Generally carbon framed bikes are more expensive but if you watch out for a deal you can sometimes pick up a real steal! 2. Comfort. As a general rule aluminium bikes are stiffer and less comfortable than carbon framed bikes. Aluminium tends to transfer vibration through to the rider whereas carbon dampens it and makes for a slightly more comfortable ride. 3. Is carbon stronger? There is so much said on this subject. But don’t get hung up on it, either material will accomplish what it is designed for. It is very rare for bike frames to break. If you were to hit the crossbar on an aluminium frame with a modest hammer blow it would likely make a dent. Do the same on a carbon frame and it may
absorb the impact. However, hit it hard and the aluminium frame will get a bigger dent whereas the carbon frame would likely crush. Both are now damaged. Who hits their bike with a hammer, anyway? But what if I crash my bike? Bikes are not designed to be crashed and either way there’s trouble? 4. Desirability. It’s fair to say carbon will win hands down when it comes to desirability. Most high end road bikes are made with carbon frames and look fantastic. Avoid “cheap” carbon as build quality may suffer. Quality aluminium is a better option than cheap carbon. Stick to the leading brands and you won’t go far wrong. The choice is yours, but if your budget will stretch carbon is where it’s at!
