he term coined these days is 'Staycation', which is basically holidaying in the UK. With flights to foreign destinations still looking sketchy, holiday options at home will no doubt involve renting a cottage or maybe a static caravan. From experience though, you might want to pay attention to the following observations; A stop at the services is compulsory. It doesn’t matter if you are only going 20 miles or if everyone has used the toilet before setting off – your staycation won’t begin until you’ve eaten a disappointing Whopper in a miserable food court surrounded by grumpy families. The kitchen will be bafflingly equipped. Your holiday home kitchen will contain a milk pan, a blunt serrated knife, no bowls and a scattering of implements so colossally impractical that you’ll all have to eat your breakfast cereal together from the same jug – with forks. You will have a meltdown over the wifi. You get there. The mobile coverage is almost zero. Your first sense of isolation kicks in, you’re cut off from the world. What if there’s an emergency? How will you finish watching that thing on Netflix? There has to be wifi. The booking website said it was provided. So where’s the password? No, really, this is urgent. How are you going to cope without wifi? You might die here. Your chest. You can’t breathe. Your highlight will be a trip to an obscure museum. Doesn’t matter what. A local history museum. A shipwreck museum. A pencil museum. A teapot museum. A marble museum. A lawnmower museum. A museum of dog collars. You will go – and you will force yourself to enjoy it. You will order a takeaway online. Your rental home will contain a painstakingly compiled, beautifully presented portfolio of local attractions, such as the wonderful market town ten miles west, the charming little restaurant that was once on Saturday Kitchen and the harbour where they sell fish straight from the boats. And yet, after 48 hours, you’ll shrug, stay in and order a deep-fried kebab from Just Eat, like you do at home. Whatever your plans are this summer, have a good one! JANE’S KITCHEN Mouth-watering inspiration from food editor Jane Ferguson
W
hen it comes to food I am not one for waste. There is always something you can do with leftovers. One of my favourite go to websites for recipes is BBC Good Food mainly because there are few adverts and it is easy to navigate. If you have some leftovers that need using up, or some food stuffs that are nearing their sell by date, just type the ingredients in the BBC Good Food search box, and it is amazing what recipes come up. I am forever looking for inspiration. For example, I recently had some leftover beef, which I must admit I was pretty tempted to throw away as it was quite tough, but I just couldn’t bring myself to do that. So having searched ‘leftover beef’ recipes I came across a beef stroganoff which sounded good. There are not many ingredients in a beef stroganoff and I had most of them in, but if you haven’t you can always improvise. For example, I didn’t have any cream in, but I did have some crème fraiche in my fridge. Now I know that crème fraiche is often used as a healthier, lower
calorie alternative to fresh cream but other than that I knew very little about it, so I looked up what the difference between the two was. I found out that crème fraiche is double cream which is cultured but made from cream with a high fat content and is rich and thick, whereas sour cream is single cream that has been given a sharp, sour edge by adding a bacterial culture. Not quite sure how that is healthier, but you learn something every day. Trying to think of different meals is a real challenge, but there are so many recipes and ideas out there. Simply by creating a meal from leftovers and food nearly out of date can give you the variety you crave, and even if you don’t
have all the ingredients in, you can always improvise and make something tasty. However rather than share a stroganoff recipe with you, as it is summer I thought I would share something bright and cheerful using strawberries. You cannot beat British strawberries which are always so sweet and juicy, so we need to make the most of them while they are out. Here is a recipe to make refreshing Strawberry Lemonade. Remove the stems from 450g strawberries and puree them, then strain through a fine mesh sieve. Set aside. Make a syrup by adding 12oz sugar to 40 fluid ozs water. Bring to the boil and stir until the sugar is dissolved. Remove from the heat and cool. Juice between 6 to 8 lemons (depending on your taste) and then strain through a fine mesh sieve. Add the cooled syrup and strawberry puree to the lemons and stir until combined. Refrigerate. When ready to serve, add cold water to your taste. Serve with ice. Jane ferguson

ine productions, in England, most certainly have several centuries of knowledge and expertise. I searched for a company that produces an excellent range of wines – something for all tastes and palates. Denbies Wine Estate is located in Surrey and was established during 1986. Several grape varieties are grown, many of which are award-winning. BACCHUS (11% vol) is produced only in the best seasons, from 100% Bacchus grapes. The mouthfeel and palate enjoy the dry and fullbodied effect, perfectly, for this Vineyard Select, white wine production. SURREY GOLD (11.5% vol) I found this white wine possess a bouquet of fragrances, then, following on, to have an excellent mouthfeel and palate. ROSE HILL (11.5% vol) is in the ‘middle’. Between white and red, this ‘pink’ production certainly does not disappoint. The bouquet of summer fruits
extends to a real, bursting mouthfeel. REDLANDS (12% vol) is to be found amongst the Cellarmaster’s Choice range. A splendid red wine to accompany red meats and casseroles. WHITEDOWNS BRUT (12% vol) I consider a very good sparkling wine. Providing fruits, with fresh flavour and a perlage which entices to a lengthy appeal, this is a splendid wine to enjoy pre-dining. GREENFIELDS (12.5% vol), from their Vineyard Select range, is a further example of a superb, bottle-fermented ‘sparkler’. The golden-straw colour complements a most wonderful bouquet. The Pinot Noir, Chardonnay and Pinot Meunier grapes give the impressive, crisp pleasures for the mouth’s enjoyment, which is extended. ho remembers the Hokey Cokey song? It was made popular in the 80s, firstly by the Snowmen then again by Black Lace. The words of the song are quite relevant to overseas travel right now: In – out – in – out, shake it all about!’ I got quite excited in May as I booked holidays to Madeira and the Algarve, and personally delivered travel wallets to my clients. My first lot of clients flew to Madeira on 17th May (the day the world opened up again) and the following week another couple flew to the Algarve. All was well in my world – but it came to a grinding halt when Portugal was rudely taken off the green traffic light. I had just confirmed a booking for another couple to Madeira, I had even delivered their travel documents; I then spent the following couple of days unbooking it all. On each occasion I had given my best advice so my clients knew exactly what they needed in terms of PCR covid tests on the outward and return journeys, which online forms they had to complete. Although overseas travel has come to a halt for the time being, I’ve had clients enjoy holidays and short breaks in various parts of the UK. I even managed a week away with my husband
walking the southern stretch of the Pennine Way from Edale to Horton-in-Ribblesdale. We’ll be finishing the rest of it later this year. It was so good to get away from my laptop for a week and spend time outdoors just putting one foot in front of the other and just watching the landscape unfold in front of my eyes. If you haven’t yet booked your holiday for this year, and you’re wanting a break, there are so many different types of UK breaks you could consider – lodge, cottage and canal barge holidays, luxury hotel stays, road trips and rail tours, walking and cycling holidays, either self-guided or guided. Why not try a different type of holiday?

I’m constantly having to check and recheck everything. Booking a holiday is no longer a simple matter. Hopefully you haven’t been caught out if you’ve been trying to do a DIY holiday. All of us in our industry are really hoping that we can still have some kind of summer season, albeit a bit later than expected. This time we are looking at the tax reliefs available for furnished holiday letting (FHL) properties. Where a property is let out as a furnished holiday let as opposed to a longer term residential let, there are a number of advantageous tax reliefs available including the following: Business Asset Disposal relief - Taxable gains on disposal of FHL properties are charged at a lower Capital Gains Tax rate of 10%. I How do you get a country girl’s attention? A tractor.
n the sleeve notes to one of the LPs on this 2 x CD set, Pat Boone says "Rock and roll has been good to me - and I'm glad it came along at about the same time I did", except that he was never really rock 'n' roll. He was the clean-cut, all-American boy who covered some of the big rhythm & blues and rock 'n' roll hits of the day, sanitising them for the white teens of the midfifties who, largely, hadn't had the chance to hear the originals by artists like Fats Domino (Ain't That A Shame), Little Richard (Tutti Frutti) and The Flamingos (I'll Be Home). It wasn't long before he found his own niche; Love songs, mostly ballads like April Love and Twixt Twelve And Twenty which consolidated his standing with teenage girls who bought his records in the millions from the mid-fifties to the mid-sixties. Moody River (1961) may have been more up tempo, but the message in the song still resonated with his fans. So, here we have the two sides of Pat Boone, on all of which his rich, mellow, baritone voice shines through. He's easy to listen to, if a little
stilted on those rock 'n' roll numbers, but even when recording other people's hits like The Great Pretender, El Paso, Will You Love Me Tomorrow or Send Me The Pillow You Dream On, it becomes easy to understand why Boone was second only to Elvis Presley as far as chart success was concerned in the mid to late fifties. Here are five albums full of songs (62 of them) most of which you'll already know, from Rock Around The Clock to Georgia On My Mind and all points in between, all indelibly stamped with Boone's distinctive, warm and friendly voice. Pat Boone was always 'safe', but while he was often derided for the way he lived his life and steered his career, there's no escaping the fact that he made some great records. Herein lies the proof. Austin Powell has spent his entire working life in the music business. From being an agent and manager of ‘beat groups’ in the sixties to working for major record companies in the seventies and eighties, he has also held management positions at radio stations in England, Wales and on the Isle Of Man.

Ash Dieback –What you need to know LOCAL ARBORIST ANDREW EDGAR [ORCHARD TREE SURGERY & MAINTENANCE] SHARES HIS EXPERIENCE AND TIPS ON CARING FOR TREES AND SHRUBS • •
O
ver the past few years, you have likely heard the term, Ash Dieback. Unless you have an Ash Tree in your garden or have noticed the recent increasing effects this disease is wreaking on Ash trees in your area, you may or may not have given it much thought. So far it has had the most impact in the South of England. However, as the Spring and Summer arrived this year, it’s clear the North is becoming significantly more effected. As the other trees turn green and come to life again, evidence that this disease is not going anywhere, is apparent. Simply put, Ash Dieback (also called Chalara) is a disease affecting Ash Trees cause by a fungus (called Hymenoscyphus). It is a
very slow progressing, generally untreatable disease. It’s said to have arrived in Europe on imported commercial trees from Asia. Spreading across Europe, and first having been official identified in the UK in 2012. With up to 120 million Ash Trees in the UK, this disease could have major ramifications on this species of trees. Affecting clean air, water, the many species of birds and insects that rely on Ash Trees as part of their natural habitat. How do I know if my tree has Ash Dieback? Symptoms of Ash Dieback to look out for include: • Dark brown or orange spots on the leaves • Wilting Leaves • Crown Dieback – the upper
branches or branch tips dying off Bark lesions (lesions also on branches). Weakening of the tree, leaving it open to other diseases
What do I need to do if I think my tree has Ash Dieback? Your first point of call should be to get in touch with an Arborist. It’s important to be sure your Ash Tree has contracted ADB before any action is taken, therefore correct diagnosis is vital. There are short term options that could be considered in an attempt to lengthen the lifespan or allow potentially tolerant trees to resist the disease. By increasing light, airflow and reducing the damp conditions, your Ash Tree may be given a chance to fight it off. If the Ash Tree is diagnosed with ADB and it has spread to around 50% of the tree however, it’s very unlikely that the Tree will survive. In these cases, it would eventually need to be removed. The removal must be done very carefully and properly to ensure minimising the exposure and risk of spreading the disease to other species in the same family.
