One of Scotland's most remote, starkly beautiful islands, Skye is also the centre of a startling culinary scene: fish and seafood thrive in its lochs, rare herbs are foraged daily, venison is wild and delicious.
A Gourmet discovery Hand-harvested Scottish scallops are a true delicacy, highly prized by the world’s top chefs. Scallop diver Davey Oakes has been collecting them on his small scallop farm for over 30 years.

line of bubbles is all we can see of Davey Oakes, but we're expecting him back any moment now. The Isle of Skye's foremost scallop diver went under about 45 minutes ago, his dry suit and neoprene helmet not looking like much protection against water that - even in summer - never rises much above 14 C. We squint across the shiny surface of Loch Sligachan, hoping to catch a first glimpse of him rising, his rope bag bulging with some of the finest treasure this western isle has to offer, but all is calm. No one is complaining about the wait though. Beneath the towering slopes of the Cuillin Hills and the soft morning sun, it's really not a bad place to be. Bobbing about on a boat, waiting for a man to emerge from the depths, might be a strange introduction to the delights of Skye, but it's an apt one. This island off Scotland's north-west coast has long been a popular

Pan-fried scallops with green asparagus, leek and saffron foam Serves four, preparation time approx. 40 minutes, difficulty rating: easy INGREDIENTS
PREPARATION
2 shallots 1 clove of garlic 3 tbsp butter 100 ml dry white wine 6–8 saffron threads 125 ml fish stock 100 ml whipping cream Sea salt Freshly ground black pepper Lemon juice 1 kg green asparagus Sugar 1 leek 120 g washed salicorn (seaweed) 12 prepared scallops 2 tbsp oil
1. Peel and fi nely chop the shallots and garlic and sauté in 1 tbsp butter until translucent. Add the white wine and saff ron threads and simmer over a medium heat for five minutes. Add the fi sh stock and bring to the boil. Pour in the cream, add the lemon juice and season with salt and pepper. Purée with a hand blender until very smooth.

2. Wash the asparagus and chop off the ends if they are woody. Bring a large pan of water to the boil with 1–2 tsp salt, approx. 1 tsp sugar and 1 tbsp lemon juice. Blanch the asparagus for about three minutes, and then remove and rinse with cold water. 3. Wash and clean the leek and cut into thin strips. Wash the seaweed and drain. 4. Fry the asparagus in butter for approximately two minutes, turning regularly. Add the leek and seaweed and season with sugar, salt and pepper. 5. Wash and dry the scallops and season with salt. Next, fry in hot oil for about two minutes on each side. Heat the saff ron foam and froth with the hand blender. 6. Spoon the asparagus, leek, seaweed and vegetable mix onto plates and arrange the scallops on top. Drizzle a little saff ron foam over the vegetables and the plate.

Closer to Oslo than Southampton, the island's landscape is a dramatic northern wilderness that resembles the peaty moors of Iceland. Overhead the clouds and mist scull across the skies, lending a constant mystery to the hills and valleys, which change by the minute. One moment they're soaked in fine-sieved sunlight filtered through a high mist, the next they're drenched in rains that leave its green glens with the oily sheen of an oil painting. What better way to begin our Skye adventure then, than by meeting a man who's bringing these pure local ingredients from the bottom of its lochs to the island's top tables? “They're known as twice dived, hand-picked scallops,” says this burly, bear-like man when he finally emerges and has had time to count out his haul, each of the 250 shells domed by its fat pocket of meat. “I dive

once to move them from the bottom of the loch to about five metres, then harvest from there, as and when they're needed.” He explains that the unusually large molluscs are down to the fact that he leaves them to grow for seven years, rather than the four required by EU directives. “I measure them using my hand,” he explains, stretching out one giant paw to demonstrate. A major player in the Scottish ‘Slow Food’ movement, and with a number of well-reviewed new restaurant openings, this island is stepping up to the plate, as it were. Since British chefs began to praise Scotland’s treasure trove of natural resources, demand has grown. The Scottish scallop is renowned for its exceptional
quality, and seafood trade is the country’s booming business. For us, it will remain a memory that will always make the mouth water. This isn't our first encounter with Skye's giant scallops. The real introduction to the island and its food came at the Michelin-starred restaurant of Kinloch Lodge, a family-run hotel perched on Loch na Dal. Here, a king-size example provided the fish course in a fivecourse tasting menu, slathered in a Thai-inspired satay sauce for just that kind of nutty, meaty, comforting juiciness that makes for a memorable experience. In fact, for food lovers like us, a visit to Skye is a little taste of paradise.

Spaghetti in olive oil and garlic with mussels Serves four, preparation time approx. 30 minutes, difficulty rating: easy INGREDIENTS 500 g spaghetti 1 kg mussels 4 garlic cloves 1 bunch of flat-leaf parsley 2 chillies, dried Sea salt and pepper 8 tbsp olive oil 120 ml white wine ½ lemon 50 g grated Parmesan
2. Remove the mussel from the shell with a pair of tweezers. Discard all mussels that have not opened. 3. Place the spaghetti in boiling, salted water and cook until al dente according to the pack instructions. 4. Meanwhile, prepare the sauce: finely chop the parsley, chilli and garlic and set the parsley aside. Sauté the chilli and garlic in olive oil.
PREPARATION
5. Deglaze with white wine and add ⅔ of the parsley and all of the mussels to the stock. Squeeze lemon juice into the pan and simmer for 2–3 minutes with the lid on. Season to taste with salt and pepper.
1. Clean the mussels under running water and only add the closed ones to a large pot with plenty of salted water. Boil for 5–7 minutes.
6. Drain the pasta and mix with the mussel stock and coarsely grated Parmesan. Garnish with the remaining parsley.

How to get there Flights to Edinburgh, Glasgow, Inverness or Aberdeen, then from there by hired car. From Inverness, for example, it takes two and a half hours. Ferry connections are available, but are now unnecessary, since the Skye Bridge spans the sea between the Kyle of Lochalsh and Skye. There’s also a bus from Edinburgh to Skye, and the journey takes about eight hours each way.

ometimes, success stories begin very differently from how they were planned. To start with, all Marie Olsson, a much sought-after interior designer, really wanted was to open a cowboy bar. The 40 year old had studied economics and information technology and finally realised her dream of running her own company. She called her bar Saloon Easy and it was an instant success, due in no small part to its brilliant interior design, conceived by Marie herself. “Just for fun”, Marie then turned her hand to creating interior design concepts for friends and guests. The results were so impressive that she was soon asked to take on entire houses. “From that point on, I taught myself everything about design and decoration.” The hallmark of her success is her unique ‘luxury bohemian’ style, in which she imaginatively combines antique furniture and souvenirs from far-off places. With her penchant for special finds, exotic souvenirs and vintage furniture steeped in history, she turns every new house into a fantastic space brimming with extraordinary ideas. “What inspires me much more than new trends is the charm of old, well-used furniture that has its own story to tell.” Her style also says it all. “I have always loved travelling. Above all, I’m always blown away by the flair of great cities around the world.” She falls in love with so many things on her
trips that she once filled a huge shipping container in India. This type of ‘travel flotsam’ then either assumes a place in her own home, or in those of her clients. She quickly understands their tastes and preferences and gains an immediate feel for which pieces might suit them. It’s hardly surprising, therefore, that style magazines and agencies soon began to knock on her door. Today, the mother of three works as a stylist for magazines, television channels, advertising agencies, as well as private clients. And when the briefing involves transforming an ordinary house into a stage for her creativity, she is completely in her element. Her statement is astoundingly simple: “I love old houses!” This is also the reason why she and her family have moved several times. She currently lives in Höganäs, a picturesque little town on the western coast of Sweden where she grew up. She moved there with her husband and three children, Vida (11), Otto (9) and Ingrid (4) a year and a half ago. This is the home to which we have been invited to spend Christmas with her and her family. The morning sun is beaming in and the children excitedly eye the stockings laden with gifts, which they are allowed to open on waking every year. “The ‘stocking ritual’ is my saviour since it alleviates at least some of the unbearable anticipation of the main presents,” she says with a

While she busies herself with decorating the festive table, she explains that the stockings contain books and games to keep the little ones amused. “If nothing else works, I let them watch Donald Duck. It has gained cult status in our home!” But first, it’s time for breakfast. The gentle, natural tones of the laid table reflect Marie’s special flair for nostalgic charm and her talent for creating floral designs. In Sweden, like almost everywhere in the world, Christmas Eve is a time for family, friends and neighbours to come together to celebrate with a traditional festive dinner. There are several warm and cold dishes, which are served one after the other. Essential to every Scandinavian Christmas are the various pickled fish and tjälknöl, a fish dish alternative to roast beef, which is guaranteed to put everyone in the festive spirit. Nevertheless, the highlight of the evening, especially for the children, is the unwrapping of the gifts. When the long-awaited presents are finally distributed, chaos breaks loose under the Christmas tree. Paper flies everywhere, accompanied by screams of delight and children’s blissful laughter. The two Yule goats observe this lively scene in silence. Using straw goats as ornaments is a typical Christmas tradition in Sweden, which dates back hundreds of years. During the 19th century, Scandinavia’s Christmas gifts were delivered by the Yule goat, long before Santa relieved him of his task. As a decorative object, however, it has more than survived the tide of time. Marie still has to shoo away the dogs that have been brought to the party, though. For them, the straw figures are irresistible playthings rather than simple decorations. It’s not just the festive table and the intricately decorated Christmas tree that look great, Marie too looks dazzling in her gold vintage dress, and definitely gives the twinkling candles a run for their money. Her daily yoga sessions are the source of her inner calm. The table decoration is a prime example of her individual style of bohemian luxury. She combines the delicate, graceful

Orange salad with pomegranate Serves 4 INGREDIENTS
PREPARATION
750 g small organic oranges ½ lemon 4 tbsp agave nectar 1 pomegranate 1 fig 1 star anise 1 cinnamon stick 1 pack vanilla sugar Sugar, depending on how bitter the oranges are 4 cl orange liqueur
1. Squeeze the lemon and boil the juice with 50 ml of water and the agave nectar. Simmer for 1 minute and add the orange liqueur. 2. Peel the oranges, ensuring that no white pith remains on the flesh. Cut the flesh into thin slices and collect any juice. 3. Halve the pomegranate and remove the seeds with a spoon. Mix them with the orange slices. Season with star anise, cinnamon, vanilla sugar and sugar. Drizzle with the orange juice and the warm liquid. Garnish with the quartered fi g.

When Marie takes a break, she likes nothing better than browsing in Magasin36, a former factory loft converted by a friend into a trendy concept store that is as good as anything you would find in a major city. Magasin36 offers an array of beautiful, antique and industrial furniture, crafts and design objects. After shopping, a visit to the Koppi Anne café is highly recommended to enjoy one of Höganäs’ finest coffees. At one time, Marie would travel whenever she could. But nowadays, she takes life a little easier. Since the arrival
of her children, her itchy feet have been relieved and she has learned to appreciate the relaxed way of life in her small home town. And because of the kids, she now prefers somewhere with clean air where they have abundant space. Nevertheless, she still has a spark of restlessness and a thirst for the hustle and bustle of the city. “I actually prefer city life,” she candidly admits. “I just can’t stand still – I always want to get on and start something new!” A relaxed contemplative life certainly doesn’t seem to be their thing in the long run. Who knows, perhaps another house for Marie to fall in love with is just around the corner.
Marie’s insider tips for a trip to HÖGANÄS How to get there By car, take the A1 to Puttgarden, and from there, take the ferry to Rodby. Then simply take the E4 or E6 towards Helsingburg, which is just a stone’s throw from Höganäs. The most economical option is to fl y or take the train to Copenhagen and then hire a car and take the ferry directly to Höganäs. Don’t forget to book a place on the ferry, as it gets very busy in the holiday season.
Eating Château Forêt is the best place to eat fresh cuisine in Helsingborg. Regulars swear by the fantastic, home-made bread, and the price is extremely reasonable by Swedish standards. Don’t miss the artistic desserts all presented with attentive service. ➢ For more information: www.chforet.se

Even as a small boy, my mother always let me help her in the kitchen. Unlike my sister, I absolutely loved it! I can still remember the first game dish we made together – I can even recall the smell that floated through the entire house. It was a spicy venison goulash with dumplings and home-pickled lingonberries.
Which dish were you served as a child for your birthday?
If I had been exceptionally good throughout the year, we got delicious schnitzel made with home-reared pork, served with potato and gherkin salad drizzled with pumpkin seed oil.

What did you eat at Christmas?
On Christmas Day, we usually started with smoked trout and lamb’s lettuce or a hearty beef soup. To follow, we had a whole Sulmtaler chicken with cabbage. And for dessert, one of my mother’s famous puddings. Of course, we also had a never-ending supply of Christmas baking to get us through the festive period, especially the traditional Spagarkrapfen.

When it comes to game, my tastes tend towards the classic choices, such as pear stuffed with lingonberries; bread, poppy seed or walnut dumplings; Brussels sprouts; or red cabbage. But now, there are a variety of ways and modern techniques to prepare them. My favourite accompaniment at the moment is baked red cabbage dumplings.
Celebrity chef, Johann Lafer revels in the mouth-watering memories of his childhood on a culinary journey back to his native Styria, and shares some of his favourite game recipes.
Which mushrooms did you eat at home, and what were they served with?
We always picked our own mushrooms, such as porcini, chanterelles and the like. Our favourite dish was a mushroom goulash with bread dumplings and lots of whipped cream. In autumn, we often ate baked porcini mushrooms with a delicious tartare sauce and lettuce. Another classic was the famous Jägerschnitzel.
How does one prepare fresh, healthy game dishes? What does one need to look for when buying the meat, for example? Game is a complete matter of trust. It is best to go to a game butcher you know, who is also passionate about his own products. Game should be matured for a sufficient time, and it shouldn’t come from old animals. Game is also generally served pink, so it should be cooked at a very low temperature (120° C). With stews, the meat should first be thoroughly seared and infused in a strong red wine with lots of spices before slowly cooking in a casserole in the oven to make the meat succulent and tender.
Which spices do you use and can you let us in on any special tips for cooking game?
To marinate game, I love using a mixture of pimento, coriander seeds, juniper, brown sugar, lemon peel and coarse sea salt. When roasting, in addition to the cooking fat, indispensable ingredients are thyme, rosemary, red onion in the skin and crushed juniper berries. In order to get the best from venison saddle, for instance, I carefully loosen the two saddle fillets from the bone, arrange orange peel, thyme, rosemary and coarsely ground pepper on the bones, replace the fillets and lay thin slices of bacon on top, which I tie with string. Next, I pan fry the venison in hot clarified butter until crisp and then pop it in the oven to bake at 120° C. This keeps the meat beautifully succulent and retains its mouth-watering flavour.

Autumn salad with saddle of wild hare Serves 4 Preparation time: approx. 40 minutes

INGREDIENTS 100 g autumn salad leaves (e.g. spinach, lamb’s lettuce or oak leaf lettuce); 2 juicy oranges; 20 thin slices of bacon; 4 wild hare saddle fi llets, approx. 150 g each, with tendons removed; 20 g clarified butter; two sprigs thyme and rosemary; approx. 5 juniper berries, crushed; 1 garlic clove, crushed; 2–3 tsp blackberry or raspberry vinegar; 1 tbsp orange marmalade; 1–2 tbsp walnut oil; 3 tbsp olive oil; salt; pepper; 200 g ripe blackberries
JOHANN LAFER PREPARATION 1. Clean and wash the lettuce and pat dry. Remove the orange rind and cut into thin strips. Halve the oranges and squeeze. 2. Preheat the oven to 160° C. Season the hare fi llets with salt and pepper and wrap each in five slices of bacon. Sear the meat with the herbs, garlic and juniper berries in a frying pan, then bake in the oven for 10 –12 minutes. Deglaze the cooking juices with orange juice, add strips of orange peel and reduce by half. Remove the herb sprigs, garlic and juniper berries, pour the liquid into a bowl and stir in the marmalade and vinegar. Gradually stir in the oil. Season the vinaigrette with salt and pepper to taste. 3. Mix the salad leaves and the blackberries with the vinaigrette in a bowl and arrange on plates.
