Carols for a cause If you’re not feeling Christmassy yet, The Rockdale Organisation has got something planned that will surely get you into the spirit of the season. On December 10 at 6.30pm the organisation, which works to find comfortable housing for the elderly, will be hosting a Concert of Christmas Carols at the stunning Tonbridge School Chapel featuring the Sackville Singers’ Adult and Children’s Choirs. The event will help raise money for the Rockdale Appeal which is dedicated to building a new residential care home to replace the organisation’s existing outdated Victorian residence. Falling £150,000 short of their £1.75 million target, this concert will help them close the gap on this vital project and provide some festive entertainment to leave you full of good cheer. n Tickets cost £15. Teen Cancer Appeal Six young people are diagnosed with cancer every day, yet are often treated in adult or children’s wards due to the lack of facilities for adolescent sufferers. Teenage Cancer Trust is dedicated to helping teens in the southeast fight cancer by providing them with expert teams who recognise their specific needs in a comfortable, modern environment that is shared with other patients the same age. Following their first Teenage Cancer Trust Blue Day last month, which raised money for the trust’s south-east appeal through volunteers selling and promoting all things blue, the trust is now appealing to businesses throughout the south-east to pull together and set up fundraising groups. Sevenoaks Christmas lighting Watch Sevenoaks light up! The town’s Christmas lights will be turned on the night of November 25. The high street (closed to traffic from 5.30 – 9.30pm) will have its shops open until late and feature a variety of market stalls. In the spirit of the season, parking in town will be free from 6pm.

Kent College turns 125 Having already received a birthday lecture from historian Dan Snow, Kent College Pembury continues to celebrate its 125 years this month. Project Japan success October 4 was definitely not a typical school day for the students of Dunton Green Primary School, who celebrated Japanese Charity Day with Japanese lanterns, flags, food and a special visit from a member of the Japanese Embassy. The barrier is your friend and the ice is your friend. Don’t let other people intimidate you. Also, if you feel yourself falling do not try to stop yourself – it’s best to flop like a rag doll instead of tensing the body. But it is just about coming and having a good time! Have you had any falls? Yes. Some have been in public which is humiliating! I tend not to do any tricks and things; my students do all the things my body can’t do any more! What has been your career highlight?

Q. What is the government doing to ensure growth in Sevenoaks? A. Our economy faces a number of challenges. Abroad, the Eurozone is in crisis. At home, we are still dealing with the legacy of Labour’s debts. The months ahead will not be easy. Yet, I remain cautiously optimistic. Why? Because I have faith in the quality of British businesses. Every week I visit businesses in my constituency which, although small, are selling their products and services around the world. Rotosound, the Sevenoaks guitar-string manufacturer, is a good example. Employing some 50 staff, this business exports guitarstrings to over 60 countries. The unique sound produced by Rotosound strings has been sought by world famous musicians and bands, from Jimi Hendrix to The Who. Rotosound, and companies like it, succeed because of hard work and entrepreneurship. They remind us that

How will the new ice rink affect Tunbridge Wells? it is business, not government, which creates jobs. For too long, they have been ignored. That’s why the government is reducing business taxes and cutting red-tape. To date, we have scrapped new regulations that would have cost business £350 million. We’ve also struck a deal with the big high street banks to increase lending to small businesses by 15 per cent this year compared to last. The government is also investing in the workforce: by 2015, for example, 250,000 more apprenticeship places will be available. And by reforming the benefit system, to make it always more worthwhile to work rather than to claim, we are renewing the work ethic. Businesses are the key to new jobs. It’s about the core of the town and the surrounding neighbourhoods. There are rinks in London, but there might be people further south who think “I’d rather go to Tunbridge Wells.” It’s lovely: perfectly placed and a really easy, fun day. Is the rink on par with Somerset House in London? Absolutely. It’s accessible and it will be dressed well and very classy. It will make people want to come back! Although livestock now rarely use the pond, the Buck’s Head – named after the Sackville family crest – continues to flourish. What a great month October was: crisp mornings, plenty of sunshine and cold evenings, which were perfect for sitting next to an open fire with a glass of red wine. Here at the George & Dragon, Chipstead, the most coveted spot is the sofa in front of the fire. Whether it is a couple of coffees mid-morning, a glass of wine and a steak sandwich for lunch or one of our cocktails in the evening, the sofa has certainly had its fair share of occupants and I’m sure its popularity will continue as the cooler weather continues

On the forager’s trail The sun-filled days have been ideal for the walkers and foragers among us, the hedgerows are changing, winter berries and holly are reaching full ripeness and the cobnuts and walnuts are starting to fall from the trees; all of which are contributing to a beautiful assortment of colour as autumn really takes hold. Back at the George & Dragon, Chipstead our garden has just about given up the last of its crop for the year. The marvellous horseradish is the last of our home-grown vegetables to be pulled from the ground. It probably exists in many people’s gardens without anyone realising. If you have got some it is well worth digging up a root or two to grate into a home-made horseradish cream to accompany your Sunday roast. At the George & Dragon, Chipstead we will be using it to make many accompaniments over the coming months: perhaps the most popular of these will be the horseradish butter served with our steaks or the horseradish potato that accompanies a plate of the Weald Smokery’s salmon. For two people: 180g smoked salmon 220g new potatoes (boiled and quartered) 25g shallots finely chopped 20g fresh grated horseradish 30g mayonnaise Pinch of freshly chopped chervil Salt and pepper Micro herbs (optional)

Fresh from the farm

Along with writing our menu for Christmas Day lunch at the George & Dragon, Chipstead, I have been revisiting some of my favourite farms to collect great produce for our autumn menus. With over six different edible varieties of pumpkin and squashes to choose from, the Hop Shop at Castle Farm in Shoreham is one of the best places to pick up a glorious stone-coloured Crown Prince pumpkin or a smaller Gem squash. They make fantastic soups and risottos, or a great addition to your roasted vegetables on a Sunday. The Weald Smokery in Hawkhurst is another fantastic local farm shop, producing an array of smoked and local artisan produce that we use regularly and which is ideal for Christmas hampers and festive meals.

Sour notes

With local wild nuts coming to the fore for foragers this month, the George & Dragon, Chipstead has used a nut-based liqueur for its cocktail of the month in November. Served in a jam jar, the amaretto sour will be a very refreshing yet comforting accompaniment to any fireworks display in November.

Mix all the ingredients (except the salmon) together and place in the centre of a plate, arrange two slices of smoked salmon on each plate (lay them in a crescent shape so they wrap around the base of the potato salad). Drizzle a little extra virgin olive oil and finish with a little sprinkling of micro herbs.

50ml amaretto liqueur 25ml freshly squeezed lemon juice 15ml sugar syrup 1 egg white 1 squeeze of lime Vigorously shake all the ingredients with cubed ice. Quarter-fill a chunky glass with fresh ice and then pour the shaken cocktail into the glass, allowing the ice that was shaken to fall in as well.

eptember saw the resident businesses of Hollybush Lane welcome new proprietor Sarah Butterworth into the close-knit clan, along with her bounteous collection of delicate teacups, mismatching saucers and more floral cupcake stands than you can shake a stick at. Inspired by 18 months of collecting vintage wares for her wedding last May, Sarah adopted her cosy boutique in the prime Sevenoaks hotspot and started trading within a month. The market for this unique business venture became apparent after her stall at the Vintage Fair in Tunbridge Wells was completely cleaned out. Since the start of the event-hire business and the vintage emporium, Lady Butterworth’s has gone from strength to strength. “I have been a freelance photographer for seven years and getting another business under my belt has been a high point. It’s great to have a completely different type of shop in Sevenoaks. I am constantly sourcing new and exciting suppliers so the shop remains fresh and offers something unique that you can’t get on the high street. “My favourite items are probably the shoe lasts [wooden feet made to a shoe size for bespoke shoemakers] which were rescued from a factory in Northamptonshire that was being demolished. Our bestsellers are our Blade and Rose baby leggings, and the vintage Lexicon card wall pictures are a favourite. The Doors of Sevenoaks picture is now on sale too – it was the cover photo for Vine magazine in March 2010 in fact!”
