Another August brings a return of Craft Beer Month in Virginia.
The month is traditionally one of the busiest across the Commonwealth for tourism as millions of visitors head to the beaches, theme parks, and historical sites.
The economic impact expands to the benefit of hotels, restaurants and craft beverage producers, and more folks than ever crave a taste of what’s local within their destination vacation spot.
Here in Virginia, independent breweries are already debuting their fall releases. Over the past decade, that’s meant pumpkin beers galore.
In this issue of the magazine, Farmville-based writer Chris Cook takes us beyond the plentiful pumpkin patch to sample other early fall flavors ranging from traditional Oktoberfest brews to beers using freshly harvested seasonal ingredients like blackberries.
In a related column in this issue, we get a wee bit buzzed by those wee pollinators — the honey bee — and get a taste of how breweries are exploring this naturally sweet stuff in beer.
New locations: Jennifer Waldera of Orange County shares news of Selvedge Brewing’s new space at the Bellair Market, while Diane Catanzaro and harmonica puffing hubby Chris Jones of Norfolk explore Aslin Beer Company’s latest satellite destination — Virginia Beach’s ViBe Creative District.
Finally, as we mark Virginia Craft Beer Month it’s certainly worth noting the ingenuity of our craft beer industry and marvel over its unique ability to pivot and adapt to ever changing trends in the marketplace while staying true to their core mission and providing an enjoyable public space for communities to gather.

Former Washington Nationals first/third baseman Ryan Zimmerman recently collaborated with Lost Barrel Brewing Company to brew No. Eleven Kolsch, described as “a golden, refreshing ale brewed with traditional German Hops, with a touch of subtle fruitiness and a crisp clean finish.”
The summertime season beer comes in a crushable 4.8% ABV. It was brewed for a cause.
In 1995, Zimmerman’s mother was diagnosed with multiple sclerosis (MS). Ryan founded ziMS Foundation to raise money for treating and curing MS. A portion of No. Eleven Kolsch beer sales will go to the ziMS Foundation.
Ryan Zimmerman’s #11 jersey was retired by the Nations in 2022. Over the course of his career with the team (2005-19, 2021), Zimmerman had a batting average of .277, smacked 284 home runs, and had 1,061 RBIs. He was voted on the NL All-Star team in 2009 and ’17. In 2009, he won the Gold Glove Award and helped the Washington Nats win the 2019 World Series in seven games over the Houston Astros.
Virginia breweries scored multiple medals at the 2024 US Open Beer Championship.
Benchtop Brewing took home a pair golds (Disturbance in the Schwartz, Nectaron Machine) and a bronze (Crispy Whip).
Other gold medalists from VA included Caboose Brewing Company (Boxcar Brown), Caiseal Beer & Spirits Co. (Red Ale), Iron Pipe Alewerks/Patch Brewing (No Place Like Gnome), New Realm Brewing Co. (Lime of the Party), and Olde Salem Brewing Company (Main in the Box).
Caiseal’s second medal came in the form of silver for its Peach Apricot Creamsicle Ale.
Iron Pipe and Patch teamed for another award — bronze — for their Untouched by Monks collaboration. Additionally, Patch soloed for a silver with its Goldensville Lager.
Double winners also included Tradition Brewing Company (silver for Hang Ten Gose, bronze for Tradition Honey Brown Ale), Barrel Oak Winery & Brewery (Lucky Rabbit Barrel Aged Irish Red Ale garners a silver, bronze for Belgian Waffle Hammer) and 2 Silos Brewing Cream Ale got a silver, Barrel Reserve Imperial Pumpkin Ale for the bronze).
MoMac Brewing Company (Sunset Burst) and Barley Naked Brewing Company (Rockhill) received bronze medals.
In the Top 10 Beer Names category, Afterglow Brewing’s “Hopswitch Engage” Hazy IPA made the list at #10.
Mitch Steele (New Realm Brewing Co.) and Julie Rhodes (Not Your Hobby Marketing Solutions) have been tapped as the keynote speakers for the inaugural Virginia Brewers Conference scheduled September 16-18 at the Four Points by Sheraton in Richmond. The conference is part trade show, educational, and there’ll be copious networking opportunities.

The Hampton Roads Honey Festival will debut August 4 at The St. George Brewing Company with a little help from the Colonial Beekeepers and 1700 Brewing. The event will be educational, yet delicious with all things bee-made, including a variety of honey products, honey beer, and honey crafts. Attendees can even learn how to be a beekeeper and maintain a backyard beehive.
The event is a natural for St. George as it maintains several honey bee hives and produces the multi-award-winning Honey Mead Lager.
Honey, of course, is often associated with mead and its production during Medieval times, especially in Ireland,
Scotland, Wales, and England. And yet, mead actually is thought to date to 6500 BC China, making it older than the wheel. Other research suggests it dates back to 20,000 BC when it was made by bush tribes in Africa.
Mead — a sweet fermented liquid made with water, spices, and honey — was consumed in ancient times by everyone from the Vikings to Egyptians, Roman citizens to the Greeks and Mayans. It is confirmed as the oldest alcoholic drink in human history.
Inspired, perhaps, by this ancient drink, craft brewers today are integrating honey beers into their portfolio of releases.
The National Honey Board has
researched the applications of brewing beer with honey. These include adding honey to the boil to primary fermentation, the high Krausen (to soften bitterness), and packaging.
According to the Honey Board, “The strength of the honey flavor in honey beer depends upon four major factors: the stage of the brewing process at which the honey is added, the type of beer, the quantity of honey used, and the type of honey used.”
And, honey beers are trending up, say the folks at the NHB: “One of the main reasons craft brewers are drawn to honey is its ability to provide a variety of flavor profiles to match the type of beer being brewed. In the United States
alone, there are more than 300 varieties of honey, all with unique flavor profiles, derived from floral sources such as alfalfa, wildflower, buckwheat, and tupelo.”
According to the 2024 Global Honey Beer Market Research Report, sales of honey beers are projected to reach $1.85 billion by 2029.
Virginia’s craft beer makers — in addition to St George Brewing — are expanding use of honey as an ingredient.
This past spring, Stable Craft Brewing held its Britchin’ Brown Renaissance Fest where it debuted “Brag About It” Braggot Ale — a special mead-inspired beer, partially fermented with honey and conditioned on blueberry and chipotle peppers.
Stable Craft will double-down on this renewed trend in late summer with Honey Lager, which they describe as a “carefully crafted lager infused with the richness of pure, locally-sourced honey, creating a golden-hued brew that perfectly balances the crispness of a lager with the delicate sweetness of honey.”
Bear Chase Brewing serves Honey Badger, an amber lager made with honey from the Quail and Hound Farm in Middleburg.
Blue Mountain Brewery produces the seasonal Monticello Mountain Ale using honey produced at Monticello.
Old Bust Head Brewing describes its crisp and refreshing Herb and Honey Ale as a “unique brew inspired by the traditional Tej honey wine from Ethiopia. Herb & Honey Ale was made from fermented honey and the twigs of the hoplike gesho tree.”
Mineral Brewing uses local honey from Hungry Hill Farm in its Hungry Hill Hazy NEIPA to add a noticeable sweetness.
Clover honey is added to 2 Silos Brewing’s Cream Ale “as a tribute to the brewery’s past as a dairy” along with the ingredients milk sugar, natural vanilla, and orange peel.
Other honey brews to try: Tradition Brewing Company’s Honey Brown Ale, Strangeways Brewing’s B-Sides Honey Bock, Brown Bear Honey Pot by Benchtop Brewing, and Hardywood’s Hopkeeper Double IPA with Virginia Honey.

As the merciless heat of the summer will soon wane and the colors of autumn begin to decorate the tree line, another shift is taking place in Virginia’s breweries and taprooms.
Fall is here, and with copperhued styles like ambers, browns, festbiers and Märzens becoming more prominent, autumn marks a seasonal shift in style away from the crystalline lagers and quaffable summer ales of summer. In their place come more complex offerings that demand a slower pace due to their higher ABV, focus on darker malts or even unique, locallyharvested ingredients.
And while pumpkin beers abound, there is much more to the fall season for Virginia’s craft brewers.
The shift in taste that occurs from summer to fall is something that Chris Ray, co-founder and brewer at Center of the Universe Brewing (COTU) in Ashland, attributes to a byproduct of the season. As gatherings move from the back yard to the den, from poolside to the fire pit, so slows the pace of life and
the role of Virginia’s favorite beverage.
“I think there’s more intent in the fall and winter, a willingness to try different styles and savor what you’re drinking,” he said. “You don’t want to be around the pool drinking beers that are 6% or 7% ABV – maybe some people do – but for me, it’s more about slowing down while drinking a beer. It’s not ‘I’m hot, I’m thirsty and this beer is light and easy to drink.’”
In more than a decade running COTU with his brother Phil, Ray has observed that when fall hits, his customers’ preferences trend more toward those savory beer styles. Labeling it as a “return to malt,” COTU’s taps change over from the light and fruited offerings of the hotter months to beers that are higher ABV and “a little heavier on the palate.”
And like many breweries, COTU meets a portion of that seasonal consumer demand with a pumpkin beer named Giant Pumpkin – an amber ale boosted by traditional pumpkin pie spices like cinnamon, ginger and
nutmeg. However, their fall beer tentpole is their Oktoberfest, a personal favorite of Ray’s and a big draw for COTU’s annual AUGtoberfest event (scheduled August 10). Their take on the German-inspired style is a blend between a Märzen and festbier, which yields a “nice and light” copper-tinged brew that comes in at 5.7% ABV with a dry finish and flavor profile that evolves as it warms in the stein.
But, tradition and consumer trends aren’t the only drivers for what Virginia breweries serve in the fall. Some like Fine Creek Brewing let nature dictate what’s on tap.
Located on a scenic 10 acres in Powhatan, the land Fine Creek Brewing sits on and around provides an everchanging bounty for head brewer Brian Mandeville to experiment with. In the months leading up to the fall – when Mandeville and the Fine Creek team actually brew their fall beer – they are flush with sassafras leaves, pawpaws and even grape skins sourced from local wineries.
As a result, Fine Creek’s fall lineup is among the most unique Virginia’s craft beer scene has to offer.
“We’re always releasing things a season behind because we get the ingredients one season, we make the beer with them, and then it’s the season that follows when we finally get to release those beers,” Mandeville said. “The fall is kind of an accumulation of a lot of summer projects finally coming to fruition.”
Fine Creek has developed a reputation as a craft beer playground of styles and ingredients, and their fall menu shows it. Along with a traditional Oktoberfest, their lineup typically offers a Belgian abbey-inspired quartet of a singel, doubel, tripel and quad; a brett saison conditioned on pawpaws, which gives it a fruity, citrusy tartness; a Norwegian-inspired farmhouse ale brewed with sassafras leaves that contribute to an earthy and fruity profile with hints of ginger, mint and citrus; and a mixed fermentation saison conditioned on grape skins from Blenheim Vineyards (alternating red and white, depending on what’s available), which create a wine-like blend of tartness and fruitiness.
Fine Creek isn’t the only brewery to take advantage of Virginia’s agricultural offerings, though. Blue Mountain Brewery’s rural setting and proximity to nature’s beer-friendly bounty make the fall a time to celebrate, a time to experiment, and a time to add a little extra to the fermenter.
“As a brewer, the concept of fall beer brings one word to mind: ‘harvest,’” said Taylor Smack, founder of Blue Mountain Brewery in Afton.
For Smack, that harvest entails the fresh hop crop from Blue Mountain’s own hop bines and freshly malted winter barley varieties…and plenty of both.
“Harvest season is a time to celebrate bounty,” he said. “A little more grain in the mash, a little more hops at the end of the brew. Bigger, fuller-bodied, more flavorful beers.”
For years, the arrival of Blue Mountain’s “The Range” fall 12-pack sampler on store shelves signified the arrival of autumn. That curated collection of fall stars included Hop Duster DIPA, the Classic Lager, Red Fox Belgian-Style Amber Ale, and the flagship Full Nelson Virginia Pale Ale, all of which fit the profile of complex and sippable in their own way. And while distribution challenges have forced Blue Mountain to suspend The Range in the past recent years, they still offer a number of fall-centric beers both on store shelves and in their Afton and Nelson County taprooms.
Among those are 13.Five Ofest, a medal-winner Märzen at the renowned Great American Beer Festival that is also slated for distribution this fall; a hop-harvest beer brewed exclusively with Cascade hops grown in Blue Mountain’s own fields in Afton; and two variations of the bourbon barrelaged Spooky pumpkin beer that is a product of the Blue Mountain Barrel House Series. The spooky variants include a salted caramel version and a dunkelweizen
version called Punkelweizen.
With so many takes on what “fall beer” can be – whether it’s trick-or-treat favorites like malt balls and Tootsie Rolls, native Virginia flora like pawpaws and sassafras, or reliable favorites like dark malts and freshly harvested hops (and even pumpkin) – Virginia breweries offer many different tastes of fall. But soon the seasonal change will sweep through again, the temperatures will dip even more, and the sippable treats of fall will be replaced by darker, festive brews of the holiday season. Until then, Virginia beer drinkers should enjoy the weather, and the beer, together.

The topic of whether beer has become boring, especially for the coming-of-age generation, popped up in a barroom conversation the other day.
In an article published July 4 titled “Gen Z wants flavorful drinks. Here’s how Big Beer is trying to attract them,” CNN Business breaking news writer Jordan Valinsky states younger drinkers are preferring “anything but a regular beer.”
Valinsky notes Gen Z’s statistical preferences for alcohol in “flavor-forward” categories, using examples such as spiked seltzer, alcoholic iced teas and lemonades, and canned cocktails.
The CNN reporter used Constellation Brands’ “Corona Sunrise” as an example of how major corporate brands are addressing the evolving market demand. The fruity Corona is a blend of the famous Mexican lager, orange juice, grenadine, lime juice, and tequila.
Valinsky quotes Feel Goods Company analyst Bryan Roth: “Young drinkers can now find just about any kind of drink in just about any kind of flavor practically whenever they want, and they get to choose from the most diverse collection of beverages that has ever existed.” He added, “These longtenured and often historic companies are adapting to the market. What makes it particularly exciting is that consumers are more often leading the way.”
NONE OF THIS IS NEWS, of course, to independent producers of craft beer.
Where major corporate beer makers such as AnheuserBusch InBev, Diageo, and Heineken are often slow to
react, anticipate, and innovate, craft breweries have the unique ability and spirited philosophy to adapt quickly to incorporate any trend into their product mix. A “sure, let’s give it a shot” mindset prevails.
Local breweries have no need for conducting focus groups, test marketing, conducting additional market research, and selling board members on shifting suds. Independent brewers hear directly from their consumers in the tasting rooms and have a willingness to create something new.
When Hazy IPAs became a thing — BOOM — everyone started making them; even craft beer purists who at first-sight snarled at the lack of clarity in the liquid, quickly changed their thinking — especially when tasting the refreshing, nonbitter outcome.
Ten years on, Hazy IPAs have proven they’re here to stay, rivaling traditional West Coast IPAs in popularity and sales. In the 2023 Great American Beer Festival competition, the most entered style category was Hazy (or Juicy) IPA.
The Hazy IPA story is a great example of exactly why craft beer is NOT boring.
As a “refresher” it’s worth looking back to where Virginia’s modern craft beer revolution got its start for insights as to where things may move forward.
You could think of it as BC and AD. Before the Virginia Assembly voted in 2012 to allow craft breweries to sell directly to customers through the tasting rooms, brew makers either operated strictly as a manufacturing company — beer factory, essentially — or as a brewpub, meaning they were a restaurant that made its own beer. In 2009, there were roughly 30 breweries in the Commonwealth.
After beer producers were allowed to operate in a similar fashion as winer makers, the number of independent breweries rapidly exploded to nearly 350 today.
Over the past 12 years, craft breweries have gone from producing a primary portfolio of traditional European-style beers promoted as their flagships to an environment where those mainstay brands are minimized in favor of providing space for weekly new releases.
Beer styles such as IPAs have a ton of flexibilities where brewers can experiment with newly developed hops and other ingredients to keep loyal followers intrigued. Sours are much the same.
Some breweries also produce their own hard ciders, wine, hard seltzers, and crafted cocktails. Add slushie machines to the mix.
Food trucks became an exciting addition to the craft beer culture, primarily for the many upstart breweries without an operating kitchen.
Other ways the craft beer industry is not boring in Virginia?
Breweries maintain a unique ability to be public gathering spaces in a way that regular restaurants and most traditional bars cannot.
Some breweries offer quiet morning yoga classes. Others focus on creating a special space for children with games and even a petting-zoo-like yard. Pets are also welcomed to party alongside their human families.
Breweries host weddings, retirement parties, business meetings, military social gatherings, and the like.
Some breweries have become entertainment centers hosting big name concerts and local bands. Breweries produce trivia nights, handmade craft markets, farmer markets, thematic food festivals, movie nights, group bike rides, and 5K races.
Dirt Farm Brewing, as an example, recently created 3.5 miles of hiking trails on its scenic property.
Breweries celebrate the established holidays as well with beer releases and events tied to everything from Valentine’s, St. Patrick’s, and Christmas to Pride Month, Oktoberfest, and Juneteenth.
Seeking to expand brand awareness beyond distributing packaged and draft products to other markets, a growing number of Virginia’s independent breweries have opened satellite locations. These include Starr Hill, Three Notch’d, Aslin, and Commonwealth just to name a few.
All of these things were likely unthinkable in 2012, yet craft breweries — being who/what they are — have been quick to think outside the box and imagine the possibilities. Is beer boring? Certainly not craft beer.
That’s our take. To share some additional perspectives, we invited input from some industry folks as well as craft beer enthusiasts.

The brewmaster names his beers after local, historical figures or events and shares four of them each month with attendees from across Southside Virginia. For four hours, neighbors and new friends of all ages (0-80+) and backgrounds come together as one community.”

“While I certainly am not bored with the current craft beer landscape, I personally feel that the “exploratory” phase of my beer consumption has come to an end. I first got the itch to expand my pallet and go out of my comfort zone around 2015, when the IBU wars had come to an end and hazy/ New England style IPAs were emerging as the new and exciting thing. In the past decade, I’ve tried as many styles and interpretations as I responsibly could, but not find myself consistently buying the same few styles that I’ve grown to love during that phase. While I am still quite the beer enthusiast, I now search for breweries new to me, as opposed to styles that I may or may not enjoy. I believe that harder economic times also plays a huge factor, as now I’m considering the money spent on a beer that I may not enjoy. I feel that there will be another “pop” for craft beer, as a younger generation discovers the craft beer itch.”

“As a former taproom manager for two Virginia breweries, I would say that craft beer is definitely not as exciting as it used to be. Beer festivals and special beer release events are increasingly becoming a thing of the past and the market has just become over saturated. The haze craze was cool at first and while I do still enjoy hazy IPAs, I now find myself drinking bourbon or pilsners more often. Some people may feel differently, but I feel like craft beer has hit a bit of a wall with most breweries making the same generic beer styles over and over again. After a while, you get palate fatigue and crave something else. I think that’s why we’ve seen such a big rise in bourbon, hard seltzers and RTD cocktails. Lastly, I would expect the trend that we’ve been seeing over the last year or so of breweries going out of business to continue. The ones that make excellent beer and/or have a large fan base will continue to do well, but the ones that have average to mediocre beer will continue to fall by the wayside.”

We googled Otter & we googled Calypso - here’s what we found - Calypso hops brings seductive apple, pear and stone fruit flavors with hints of lime to this brew. This is one complex beer with dirty earthy tea notes & an Otter malt backbone.

How fortunate we are in Hampton Roads that the popular Aslin Beer Company has opened a taproom and brewery in Virginia Beach? Excellent beer, a diverse food menu, colorful outdoor seating, a two-hole putting green, and plenty of parking just across the street makes Aslin a winning destination. On Virginia Beach Boulevard at the edge of the VIBE District, cattycorner to the large free parking lot shared by the Virginia Beach Sports Center and the Convention Center and easily accessible via a crosswalk, parking is easy year-round even at peak tourist season. Aslin has their own small parking lot also.
Aslin already has taprooms in Herndon, Washington DC, Pittsburgh, and Alexandria. Alexandria is also home to the main production brewery, although some of the other locations also brew for their local market. The new location in Virginia Beach has a small brewery on site that will begin brewing operations soon.
When we visited Aslin in July, they had twenty-two of their beers on tap, covering a wide range of styles. We noted five lager/pilsners, five IPAs, three double IPAs, five sour ales, two peanut butter stouts (don’t laugh, they were delicious), a hefeweizen. Wine drinkers can enjoy a choice of six Virginia wines and house-made craft cocktails like Aperol Sunset, Painkiller, Sangria, and Mai Tai. They have a non-Alcoholic sour fruit beer for those of us traveling light. There is also a fridge with select beers canned for take-away. Every beer we tried was spot on.
Aslin brewed an exclusive beer for the Virginia Beach location, called Swell Maneuvers, a surfing reference. It’s a Mexican style lager with lime, and a sure crowd pleaser. The juicy lime presence in the nose follows through in the thirst-
quenching taste, and a great lime-citrus balance that happily lacks that pithy lime bitterness that makes you think of Burma Shave. Very drinkable, and totally suitable for your next surf party, beach day, or backyard BBQ. With its approachable 4.5% ABV, you won’t fall off your board. Another fun summer beer is the Radler. A combination of their clean and smooth American Light Lager and grapefruit, at 2.5% ABV it’s a perfect beer for hot weather hydration and ultra refreshing. Invented by Germans, ‘radler’ is a reference to the cyclists who want to drink at their local bier garden but keep the ABV low enough to ride the bicycle home.
Of course there are several IPAs, of both the hazy New England and West Coast varieties. A lot of us like the juicy tropical-note hazies, but often we long for an old school West Coast IPA with the crisp bitterness of the original style we fell in love with. Have it your way at Aslin.
Other beers of note at Aslin include their popular sour ales like Volcano Sauce and Tropical Sauce, both are conditioned on summer fruits and contain milk sugar. Yeast can’t convert milk sugar (lactose) to alcohol, so these beers will have a residual sweetness to balance out the sour fruit, and a fuller mouth feel. Another creative fruit beer offering is the award-winning El Frutero Watermelon, which they describe as a sweet-and-spicy watermelon margarita of a beer in a habanero-rimmed glass. Ay carumba!
With a kitchen called ‘Izzys’ and good-sized food menu, Aslin is a full-fledged brewpub. The kitchen opens for breakfast from 8 am – 11 am, with a focus on bagel sandwiches with eggs, smoked salmon, bacon, avocado, and more. Are you a coffee achiever? switches from breakfast to lunch and dinner beginning at 11 am, with Korean and Nashville chicken sandwiches, salads, wings, ‘Fry-Chos’ (look it up!), smoked pork butt, wings, homemade pizzas (with many topping choices including anchovies, soppressata, vegan cheese, hot honey, and meatless sausage, in addition to the usual suspects like pepperoni and sausage). They also have smashburgers (including an Impossible Burger version). The lemon-garlic kale salad looks like a must-try on our next visit, along with an anchovy pizza.
General Manager Angelo Martinez is proud of the food and has restaurant experience from Smoky Bones and Jimmy G’s Chop House. He mentioned that Aslin makes their own pizza dough, hand-stretched and baked to order, and that about 85% of the kitchen’s offerings are made fresh on premises. You order food from the kitchen with a QR code from anywhere on the property and your food will be delivered to your table. They do have a physical menu, just look for it in the taproom. Our Beyond Smashburger, waffle fries, and brussels sprouts were tasty and we enjoyed them in the indoor tasting room with the A/C cranked up to 11 while tasting samples of the well-made draft beers and chatting with multilingual beertender Maggie. We have found our new happy place!
What do we mean above where it says you ‘order your food from anywhere on the property’? Well, you have choices. There is the indoor taproom and bar. Outdoors is a good-sized beer garden with blue and yellow Adirondack chairs, picnic tables, umbrellas for shade, and couple of fire pits that will be great when the weather gets chilly. The beer garden is accented by colorful repurposed shipping container towers and one container that houses merchandise. Also outdoors is a covered bar area with seven core beers on tap, craft cocktails, and beer slushies. Up a set of stairs is an outdoor deck where you can drink in the view from above. Then, around the front of the tasting room is a two-hole putting green. Clubs and balls provided. There are large screen TVs outdoor for sporting events and movie night Wednesdays. Check the website for the live music schedule. Aslin has a friendly and welcoming vibe, excellent beer, and is a fantastic addition to the Hampton Roads craft beer scene.

Selvedge Brewing initially opened its doors in July of 2020 in The Wool Factory in Charlottesville. But, with an eye on a space not shared with an event venue, the brewery recently transitioned in February to a new location. Now at the Bellair Market, the spot sports a wide open floor plan, large screen TVs, and plenty of room to lounge or gather.
At the heart of Selvedge’s brewery operation is the love of local ingredients. From malts acquired from Murphy & Rude and hops from Greenmont Hopworks in Esmont to sourced yeast from Jasper Yeast in Dulles, the beers exude the taste of Virginia’s makers. Likewise, the food offerings reflect the same dedication to supporting locals with a menu from renowned local chef Tucker Yoder that includes beef from Timbercreek Farm, hot dogs from Autumn Olives, and greens and other products from respected local purveyors.
“I am a big fan of buying local fresh things, trying my best to support those close to us,” Yoder said. “As much as possible, we are trying to serve things that are fresh and local. Local beef, chicken, and the like. We have a freezer, but it usually does not have much more than French fries.”
Yoder, a primarily self-taught chef, has previously led kitchens throughout the area for over two and a half decades, from Boars Head and Maya to the Clifton Inn, The Red Hen, and JM Stock Provisions. In addition to his work at Selvedge for the last four years, he is also at the helm of his own upscale
restaurant, Broadcloth. At Selvedge, his focus is on pairing those local goods with the brewery’s high-quality beers.
“We want to serve things that work well with Josh’s beer and any beer really. At the new location, we have made the menu a little smaller, eliminating some of the items that require more prep as well as adding things that people had been requesting for a while like the veggie burger.”
Selvedge’s brewer, Josh Skinner, has been with the brewery for several years but is no newbie to brewing. Not only did he start out as a home brewer over a decade ago, but he also took the in-person Concise Course in Brewing Technology at Siebel Institute of Technology before he brewed at Blue Mountain Brewery and then Champion Brewery, as well. All of his experience led him to be more passionate about how he approached the process of making beer, which turned into the perfect opportunity for him to brew for Selvedge.
“I wanted to shift gears and work in a brewery where I could be more hands-on in the process and have more control over the product every step of the way. Since we only sell our beer through our tap room, this allows us to ensure that our beer is always being stored properly and being served exactly how we intend it to be served,” Skinner said.
Skinner’s philosophy about brewing is focused, yet openminded. The Virginia native embraces local ingredients but also stays true to styles, crafting brews that are as accessible as they are satisfying.
“I’m usually hyper-focused on balance when thinking about recipe development, or more importantly, the brewing process. If you study the parts of the world that have the most prolific or storied pub cultures (Czechia, Franconia, England, etc), the beers originating from those areas almost universally exhibit balance & drinkability. Ultimately, I want my beers to be the kind that people want to order another of. They should pair well with food and compliment conversation.”
If you’re looking for variety at a brewery, Selvedge has that, too. While Skinner says that his ultimate love is brewing a lager, there’s no shortage of other styles that he enjoys brewing and that can be found on Selvedge’s menu.
“I love brewing a wide variety of styles. I get really excited whenever I have the chance to brew a Barleywine, English Bitter, or Mild, but nothing quite drives obsession for me like brewing lagers. Lager provides such a rabbit hole to get lost in. Every time I brew one, I learn something new, and that constant learning is what I love most about being a brewer. I’d also be remiss if I didn’t mention my love for the “farmhouse” ales and mixed culture beers of Belgium, but the market for those has sadly dwindled to a trickle in recent years and I don’t currently have adequate space to make those styles in tandem with “clean” beers.”
The brewery also likes to collaborate with other local breweries or create styles that support local organizations.
“Last year, we did a collaboration with Tabol Brewing called ‘Tabolcloth’, an ode to the rustic beers of the Franconian countryside. Most recently, we did a collab with Starr Hill RVA ‘If You Want To Destroy My Sweater’, a European Pilsner that used Belgian pilsner malt, a little biscuit malt from Murphy & Rude here in VA, Alsatian-grown hops & Swiss lager yeast.
“Each fall, we brew ‘Infi-Knit Trail’, a Session IPA/Pale Ale where a portion of the proceeds go to the Rivanna Trail Foundation to help support their trail construction and maintenance efforts. Most recently, we joined some of the other breweries in Charlottesville and brewed our own unique version of Simcoe for SARA, a collaboration with the Sexual Assault Resource Agency (SARA), who will receive a portion of the proceeds from the beer sales. Our version is a hazy IPA brewed with Simcoe Cryo & Elani hops. I’m really proud to have the opportunity to play a small part in their efforts.”
Even though the brewery just opened its newest location, it still has plans for more, including building out the brewery space and new beers to add to the menu. But, the primary focus remains on providing top-notch beers to patrons from the brewing process itself to the way it looks when it lands at the table.
“The presentation of the beer is paramount to us. We use appropriate faucets (traditional, side-pull, beer engine w/ sparkler, etc.) and glassware for the style and ensure each pint is served with plenty of foam for enhanced aroma, better mouthfeel, oxygen protection, and making it look badass.”
