Blackpool Illuminations – now until 1st January More commonly known as the greatest free light show on Earth, Blackpool Illuminations have been a Blackpool staple for over 100 years. Lighting up the sky from late August, the six-mile stretch of traditional festoons and tableaux provide entertainment for visitors of all ages. This year’s newest additions are a reimagined Spitfire Island which has been created in conjunction with designer Lawrence LlewelynBowen, Iconic Blackpool, which is a new section of illuminations posters dating back to the 1920s and Festival Headland pieces including the 9-metre-long Blackpool sign and 26-metre-long Spiro Tunnel. Walk or drive from beginning to end, or for something special, become part of the illuminations by boarding one of the extraordinary, illuminated tram cars, that run from Blackpool Pleasure Beach to Bispham and back.
Light Up Lancaster 2nd-4th November See Lancaster in a whole different light as the city comes to life with an illuminated art trail, performances, and a special evening food market. Lancashire’s Yuletide connections Did you know that the first written mention of Santa Claus dates back to 1871, from a poem published in the Preston Guardian. The idea of Santa delivering presents to children dates back to around this time so it’s not a stretch to suggest that Santa became more prevalent in published pieces around the UK then too. That’s not the only festive connection to the county, Lancashire also has its own Wassail Song. Wassailing is the custom of toasting trees or crops with hot spiced ale or cider during the depths of midwinter or visiting houses singing and offering a drink to residents in exchange for a gift, usually on the twelfth night of Christmas. Throughout the years, Christmas has been celebrated in different ways. The Lancastrian’s of Tudor times would burn a large “Yule Log” for the twelve days of Christmas, believing that if it extinguished before the twelve days were up then the year ahead would bring bad luck. Friends and family would gather around the log and share stories and sup spiced porridge. While the burning of logs hasn’t stood the test of time, the tradition of “flesh day” which saw the rural communities around towns like Poulton-le-Fylde, Garstang and Ormskirk descend the towns on Christmas Eve to purchase the meat they needed for the festive period, has now transformed into the festive markets we see today.

INGREDIENTS Sprout Slaw
The Tart

100g raw sprouts, thinly sliced
•
1 pack ready to roll puff pastry
•
1 carrot, shredded
•
100ml cranberry sauce
•
1 shallot, sliced
•
6 cherry tomatoes, sliced
•
1tsp wholegrain mustard
•
150g Brie, sliced
•
½ lemon, juiced
•
1 parsnip, thinly sliced
•
2tbsp buttermilk
•
1 shallot, sliced
•
Salt and pepper to taste
•
25ml olive oil
•
1 handful fresh sage leaves
•
Salt and pepper to taste
•
1 egg, beaten
METHOD 1.
For the sprout slaw, mix together all the slaw ingredients and season with salt and pepper.
2. Preheat the oven to 220°C / 200°C Fan / 425°F / Gas Mark 7. 3. Keeping it on the parchment, roll out the ready to roll puff pastry into a thickness of 3mm and place onto a 25cm square baking tray. 4. Spread the cranberry sauce onto the pastry leaving a 2cm edge of pastry. 5. Top with the cherry tomatoes, slices of Brie, sliced parsnip and sliced shallot. 6. Drizzle with olive oil, scatter with sage leaves and season to taste with salt and pepper. 7. Brush the edges of the pastry with beaten egg and bake in the oven for 15-20 minutes. Allow to cool for 5 minutes, then cut into slices and share. 8. Serve with sprout slaw and your favourite pickle.

1 Booths Madiera Loaf Cake

200g tub ready-made vanilla buttercream
•
300g milk chocolate
•
100g ready-made red fondant
•
100g ready-made white fondant

50g ready-made yellow fondant
•
1 pack candy eyes
•
1 pack food colouring gels
•
Paper straws
METHOD 1.
Crumble the sponge between your fingers until you get a fine breadcrumb consistency.
2. Add the buttercream and mix until it comes together. 3. Mould the cake mix into round balls, using a small ice cream scoop to make them evenly sized. Freeze the balls for an hour. 4. Melt the chocolate in a bain-marie and cool to 30°C, use a temperature probe to help you. This will temper the chocolate and give a nice snap to the texture. 5. Press each cake ball on to a straw and dip into the melted chocolate until they are fully coated, then allow to set (they will set quickly). 6. Using some of the white fondant and food colouring gels, create your desired wing colour and cut them out. 7. Dip the cakes into the melted chocolate again and decorate with the fondant and decorations, using our robins as inspiration.

1 large jar mincemeat

360g plain flour

250g unsalted butter,

METHOD 1.
Place 360g plain flour and 250g softened unsalted butter in a bowl and rub together to a crumb consistency.
2. Add 120g caster sugar and 1 large beaten egg and mix together. 3. Tip out onto a lightly floured surface and fold until the pastry comes together, be careful not to over mix. 4. Wrap the pastry in cling film and chill for 15 mins. 5. Scoop the large jar of mincemeat into a bowl, with one finely chopped apple and zest of 1 lemon. 6. Heat oven to 220C/200C fan/gas 7. 7. Roll out the pastry to 3mm thick. 8. Using a round cutter (about 10cm), cut out 15 bases and place them into muffin trays. Put 1½ tbsp mincemeat mixture into each. Brush the edge of each pie with a little beaten egg. 9. Re-roll out the pastry to cut 7cm lids and press them on top to seal, then glaze with the beaten egg. 10. For Italians, Christmas is an important time – not only an occasion that has religious meaning but also a time for family and friends to come together to celebrate the good things in life; and to an Italian, that of course includes delicious food and drink.
Each Italian region has their own traditions based on their history and local heritage. With typical Christmas dishes varying from region to region. This recipe for ‘Coniglio alla Ligure – Ligurian rabbit’ comes from the Liguria region in Italy.
INGREDIENTS •
1 wild rabbit about 1.5kg
•
A handful of pine nuts
•
1 clove of garlic
•
½ white onion
•
1 tablespoon of thyme
•
1 sprig of rosemary
•
6 sage leaves
•
150gr taggiasca olives
•
½ glass of red wine
•
Salt and pepper
•
Extra virgin olive oil
For the broth •
½ white onion
•
1 celery stem
•
1 carrot
•
2 (optional) cherry tomatoes
•
1 (optional) clove of garlic
•
1 litre of water
METHOD 1.
For the preparation of the Ligurian rabbit, start cutting the rabbit into pieces, keeping aside the liver and all the parts of fat, then rinse it aside well under running water to eliminate any trace of blood.
2. Prepare the vegetable broth with half the white onion, a stem of celery and one carrot. If you like to give more flavour to the broth you can add 2 cherry tomatoes and 1 glove of garlic, in about 1 litre of water. Bring to the boil and cook for 20 minutes, then add salt and turn off the heat. 3. Finely chop the other half of the white onion and pour it into a large pan together with a clove of whole poached garlic. Chop all the fats you have recovered from the rabbit and pour in the pan - start sauteing and add a drizzle of extra virgin olive oil (if you don’t want to add the rabbit fat just add some more extra virgin olive oil). 4. Finely chop the thyme, rosemary and sage.
5. When the sauté begins to sizzle add the pieces of rabbit and brown them well an all sides, turning them every 2-3 minutes. Then add the chopped spices, salt and pepper. 6. Stir, then add the pine nuts and pitted taggiasca olives. 7. Mix everything, adding the red wine over a high heat to let the alcohol evaporate. 8. After about 3-4 minutes, add 2 or 3 ladles of broth (the amount of broth to add is used to prevent the rabbit from sticking during the cooking process). 9. Stir and cover with a lid for approximately 45-50 minutes over a low heat (if the rabbit should dry excessively add a few ladles of broth). 10. In the last 10-15 minutes of cooking, you can add the rabbit liver - always finish cooking with the lid over a low heat. 11. Plate the rabbit and serve

200g egg yolk
•
100g caster sugar
•
250ml milk
•
350ml Baileys
•
1000g dark chocolate
•
500ml double cream
•
300ml double cream (semi whipped)
METHOD 1.
Whisk your egg and sugar together
2. Place your double cream and milk in a pan and bring to boil 3. Once boiled, pour your cream/milk over your egg mixture and stir into a custard 4. Add the full mixture back into your pan, and heat to 80°C 5. Break your dark chocolate into a separate bowl and set to one side 6. Once your custard mixture has reached 80°C, pour over the chocolate. Leave this for two minutes, before whisking together until chocolate has melted and is silky, smooth 7. Add your Baileys to this mixture, and stir in fully 8. Once cooled, fold in your whipped cream and pour into your moulds or frame 9. Enjoy with a Baileys Hot Chocolate!
Chef’s Tips Chill for a minimum of four hours to set, or freeze for a minimum of 8 hours if using silicone mould. At Mytton Fold Hotel they set the delice into separate silicon moulds, though you can add this to whatever frame, ramekin, cup or mould you prefer.

500ml Prosecco

To make the pomegranate syrup, bring to the boil the pomegranate juice, lemon juice and sugar and reduce by half and cool.
2. Store in a clean air tight container in the fridge. This will keep for up to 2 weeks.
For a nonalcoholic cocktail add 50ml of lemon cordial to the 50ml pomegranate syrup and top with chilled lemonade.

“One of sour, two of sweet, three of strong, four of weak.” That is, one part lime juice, two parts sweetener, three parts rum (preferably from Barbados) and four parts water. Moor Hall’s take on this classic uses tea instead of water, to add some extra depth of flavour.

Put everything into a large bowl, add lots of ice and stir well. Ladle into tumblers filled with fresh ice, garnish each glass with a slice of lemon or orange (we use dried orange slices), and serve.

Homemade Spiced Bramble Syrup (30ml)

• 350g brambles

• 125ml water
• 1 egg white
• 1 orange rind
• 2tsp honey

Add all the syrup ingredients to a pan and heat until the sugar has dissolved, and the brambles are soft.
2. Once cool pass of the syrup leaving you with a smooth syrup. For the Cocktail 1.

Add all ingredients to a cocktail shaker (adding the egg last),

PLANNING YOUR TRIP By Road
By Rail
The M6 runs right through Lancashire connecting to the M61, M65, M55 and several major A roads. In less than an hour’s drive from Manchester, Liverpool and Leeds you could be exploring the vast Pennine Fells, beautiful Ribble Valley or driving along the world famous Blackpool promenade.
Lancashire has excellent rail connections from all over the country – just two hours from London on the West Coast Line with Avanti West Coast with stations at Preston and Lancaster. Change at Preston to reach the towns of Clitheroe, Burnley, Blackburn, Colne and Ormskirk. There are also direct trains traveling from Manchester to most Lancashire towns and cities.

By Air
If you’re lucky enough to travel by water then both the Lancaster canal and Leeds-Liverpool canal give you the chance to sail right into the heart of places like Lancaster, Garstang and Burnley, whilst you’ll also get amazing views of our stunning countryside and wildlife on route.
Both Liverpool John Lennon Airport and Manchester Airport have frequent flights serving Europe and international airports including Beijing, Hong Kong and New York. Manchester Airport has direct trains to many Lancashire destinations every 30 minutes and it’s less than an hour’s drive from Manchester to Preston.
