On September 7, 1936, Lubbock welcomed a big personality to the world with the birth of Charles Hardin Holley, better known as rock 'n' roll legend Buddy Holly. The Buddy Holly Center is dedicated to the music of this hometown star whose voice was tragically silenced much too soon. Take a picture by the oversized replica of Holly’s iconic glasses. Browse the artifacts and memorabilia of Holly and other artists and musicians from West Texas. You can also check out the childhood home of J.I. Allison, drummer of Holly’s band “The Crickets.” This is where Holly and Allison penned many of their famous hits, including “That’ll Be the Day.” Just west of the Center, is the West Texas Walk of Fame, featuring the Buddy Holly statue by sculptor Grant Speed. » buddyhollycenter.org

LUBBOCK MUSTS
Visit Lubbock: What gave you the idea to start the records truck? Christian Romero: My business partner and I really wanted to set up a brick-and-mortar store with a music venue. We started with the truck as a marketing technique to build hype around the idea and to start getting some brand recognition.
vintage albums; there’s a section of the truck dedicated to the new stuff. Pricing is pegged as close to online prices hoping that locals would rather have the experience of flipping through a box of records supporting a local business as opposed to clicking through a website. Some are $2 some are $80, it just really depends on the album.
VL: How many records are there in the truck at a given time? CR: We’re constantly buying and selling, so it obviously will vary, but I would say between 3,000 to 4,000 at any given time. It’s a constantly evolving collection though, so there’s always going to be something new in there today that I didn’t have yesterday.
VL: What events have you been apart of/going to be a part of? CR: Flippers Tavern has a festival in the fall where we had our debut pop-up. We were thrilled to join the most recent BLNKA Jam on Broadway in downtown Lubbock and hope to continue participating in their events. We’re a part of a small but growing house-show community around Lubbock where we’ll set up the trailer. There are so many different music scenes in Lubbock, we’d like to be a part of as many of them as we can. We try to be at music festivals and other local music events. We’re all about supporting local music first. VL: Where can people find the truck? CR: We’ve been at First Friday Art Trail for a few months now. You can usually catch us out there in the LHUCA / CASP area. We’ll also be joining Chicago Station Market Days as a vendor. You can follow us on Instagram at @flatland_records to keep up with where we’ll be. VL: How do you make money? Can people buy the records? How much are they? CR: Selling records, of course, is the main business model, but we have shirts and stickers and some other merch. We’re a sell-and-trade shop so feel free to bring in your records to see if we can make a deal. With the resurgence of vinyl, we’re constantly getting new music to sell alongside the

VL: What has been challenging about this business? CR: Really it’s gone a lot smoother than I expected. I think there were a lot of internal concerns about whether or not this concept would work, but the support has been incredible. The worst thing we’ve had happen so far was breaking a shelf in the trailer. There hasn’t been a big loss so far, just lessons learned. It’s been a fun ride. VL: Do you have a favorite record? CR: Oh, tough question. Right now I’m going to have to say Sturgill Simpson – Meta Modern Sounds of Country Music. It’s like this mid-century psychedelic outlaw country. You should really check it out. To round out the top three, it would have to be blink182’s self-titled record and Tom Petty and The Heartbreakers debut album. VL: Where do you get the records from? CR: We trade a lot in our truck and really get a quality selection from that. We hunt through old record stores and thrift shops. Sometimes we get really lucky at a garage sale. VL: You mentioned a business partner, how did you meet? CR: Karson Nance is my business partner; he’s my neighbor. I just knocked on his door one day to introduce myself and that eventually flourished into a friendship. VL: Is there anything else you’d like to tell us? CR: The community of entrepreneurs in Lubbock is incredible – we wouldn’t exist without each other. This town is on the verge of blowing up. If you’re thinking about starting a business here, do it. Build a foundation here with deep roots, it will pay off.

AN INSIDER’S LOOK AT PRINTMAKING IN LUBBOCK By James Waterson
LUBBOCK’S THRIVING ART SCENE is comprised of painters, ceramicists, illustrators, glassblowers and others who inspire locals and visitors alike with their creative vision. One of these artists is Victoria Marie Bee, a printmaker, photographer and artist-in-residence at the Charles Adams Studio Project (CASP). Visit Lubbock caught up with Victoria to chat about what inspires her and what we can learn from her talent to create our own masterpieces.
22
VISIT LUBBOCK | 2019
VL: What led to your interest in printmaking? Victoria: In the fall of 2011, I started the Master of Art Education degree program at Texas Tech University. One day Dirk Fowler, professor for the visual art component, brought in a bunch of posters. They were unlike anything I had ever seen. Much like the day I knew photography was always going to be a part of my life, I knew that day was to be the start of another passion: letterpress. I borrowed a tabletop line-oscribe press and some type from my professor and set up shop in my tiny one-person darkroom. In that small space, I spent hours experimenting with overprinting, setting type, locking up the press and more. I made
ARTS & CULTURE
postcards for friends, broadsides for poetry readings and birthdays—even collaborated on a national project with Kentucky for Kentucky. During the fall of 2014, I set up a meeting with Charles Adams and CASP Director Chad Plunket to discuss bringing letterpress to everyone. They went with my crazy idea! With grant money, Charles Adams Studio Project found a Vandercook SP-15 from the LA Printing Museum and a C&P Press with vintage cuts and furniture. Charles purchased some type, and more came from selling my letterpress prints at the First Friday Art Trail. VL: What’s your favorite thing about using a letterpress to create something? Victoria: Do you like wine and prints and texting and ink? If yes, chances are you might also love letterpress printing and how it got started. In the mid-15th century, Johannes Gutenberg realized books were only able to be purchased by the very wealthy, as each individual page had to be carved by hand on blocks of wood. He would go on to invent a “screw press” modeled after a wine press; a lacquer-like ink he created himself out of soot, walnut oil and turpentine; and (most importantly) movable type. Letterpress was the biggest revolution in print technology, allowing manuscripts to be massproduced at relatively low costs. In terms of the artistic process, I love the repetition involved with letterpress. My aesthetic also uses materials that I utilize in all artworks (such as lace), and I often explore the concept of “press” in my art. Three of the main themes in my current art research include pressure versus the act of pressing, creation from
destruction and revealing the beautiful within the grotesque. For my ongoing series, PRESS(v.), I use the scanner and letterpress printing to draw the viewer uncomfortably close, and I search for the sublime in personal histories of the body. I flip the power of pressure and actively engage in the verb press. I am especially interested when the physical process itself embodies
part of the concept, such as in the persistent and unrelenting actions involved in the action of pressing. My work is influenced by Emily Dickinson—for her words, her envelope poems and how she pressed and preserved nature in various indexing formats (including her extensive herbarium of pressed botanical specimens). This inspired me to start

pushing objects and images onto fabric or paper with type-high materials in a press bed and manipulating garments and pressing them with other materials in a camera-less scanner. VL: What other letterpress artists inspire you and why? Victoria: Dirk Fowler (f2 Design) is the reason I’m a letterpress printer and why the art form is important to Lubbock’s art community. [Fowler] is an internationally-known printer and I’m so grateful to him. Curtis Bauer (Q Ave Press) is also a local printer who, alongside Jennifer Snead and others, helped start the Letterpress Studio in the English department at Texas Tech University.

VL: What upcoming printmaking workshops do you have scheduled? Victoria: I’m offering a workshop with the local group Coffee & Creatives (facebook.com/ccreativeslbk) that all creative people are welcome to attend. I’ll also be teaching an introduction to letterpress class. In my introduction classes, students learn how to hand-set type from our expanding collection of metal and wood typefaces, proper use of a Vandercook SP-15 and other proof/ relief presses in the Helen DeVitt Jones Print Studio, how to mix ink for custom colors and more. It is one of the most popular classes at CASP, so sign up as early as you can! Also, I’m working on two intermediate letterpress courses (anyone who has
taken my introduction course can sign up for these): the first in collaboration with a local book artist and the second that will focus on experimental letterpress methods of printing. For a full list of upcoming classes and workshops visit casp-arts.org, follow CASP on Facebook or @casp_lbk on Instagram. You can also email info@casp-arts.org if you would like to set up a private workshop for a group. VL: When are the printmaking studio open hours and what do visitors need to know about open hours? SURROUND YOURSELF WITH THE SOUNDS OF LUBBOCK FOR LUBBOCK SONGWRITERS, 1806 Buddy Holly Ave. is sacred ground. On the street named for Lubbock’s favorite son, The Blue Light Live’s family of musicians keeps the music alive, standing on the same stage that raised legends such as Josh Abbott Band, Wade Bowen, William Clark Green and Red Shahan, just to name a few. FLATLAND CAVALRY
Dustin Six, co-owner of The Blue Light Live, once promised musician Dalton Domino (ddfpfb.com), “You’ll never find another room that’s like this room or the energy and spirit that’s in this room.” Ghost signs (hand-painted advertising), murals by Bristen Phillips, and—as musician Brandon Adams sings—“faces pinned like tattoos on the wall” give this songwriter haven its character. The venue’s famed, habanero-infused Apple Burn shots, diverse crowd of music lovers and delightful bartenders give it a pulse. But what gives The Blue Light Live its soul are the musicians who cut their teeth there every Monday night at Songwriter’s Night. They play at many venues around and outside of town, but living in Lubbock, these can’t-miss songwriters call The Blue Light Live home, sharing a stage and proverbial bloodline with all who came before them.
FLATLAND CAVALRY
You cannot talk about The New Lubbock Sound™ (newslanglubbock. com) without mentioning the Cleto Cordero-fronted Flatland Cavalry (flatlandcalvary.com). While their sound is their own, they draw comparisons to Turnpike Troubadours and John Mayer, but with the added sound of the High Plains air, demonstrated decades ago by Joe Ely. The quintet, which tops the iTunes country charts, sells out their favorite venue frequently.
ZOË CARTER
We mentioned Songwriter’s Night, and Zoë Carter (zoekcarter.com) is the current queen of the Songwriter Competition. With experience on both sides of music education, Zoë knows exactly what she’s doing musically and lyrically. With her warm

voice, she utilizes many literary devices—stylistically, alliteration is the most apparent. There is a depth and sweetness to everything she puts out, whether it be folky tunes, love songs or church hymns.
RANDALL KING BAND
Randall King (randallkingmusic.com) reminds many folks of why they fell in love with country music. With traditional roots and a strong voice, this young gun can croon and honky tonk. His style of music works just as well on a front porch as it does on stage with a full band and pedal steel. If you’re in town visiting and see that he’s playing, you better be there.
CHARLIE STOUT
The myth of Charlie Stout (charliestout.com) precedes him. His debut album was recorded in an abandoned ghost-town church in the middle of the New Mexico desert. The grittiness of his murder ballads and hymns were only exemplified by the space of the recording, but can still be heard in live performances that, somewhat regret-
tably, don’t feature trains chugging and crickets chirping. While Randall King’s songs take you to the 1980s, Stout’s take you to the 1880s.
NO DRY COUNTY
While all of the artists noted have tinges of country and Americana in their sound, none rock as hard as No Dry County (nodrycounty.com). These guys bring together the most eclectic crowd in Lubbock. Whether it be vested punks, tattooed hipsters or white-haired gentlemen ready to swing their ladies, all are in for a good time. No Dry County, alongside the likes of Dave Martinez, Hogg Maulies, Danny Cadra and Wade Parks bridge the gap between the generations of Lubbock music. They have honed their musical chops, paid their dues and are surely a must-see.
JERRY SERRANO
You can find Jerry Serrano at the head of vocal jazz and Latin band Alma Quartet (almaquartet.net). Playing all over town, the band is best paired with a glass of Lubbock wine. A multi-
instrumentalist and former winner of the Singer/Songwriter Competition, Jerry is one of the most gifted musicians in town. He currently hosts the Singer/Songwriter Nights and competitions on Mondays, helping others make their mark in The Blue Light Live’s history books. If you’re looking to start playing music and writing songs, he is the man to talk to. The Blue Light Live family is always growing, and there are plenty more artists you need to see while you’re in the “Hub City.” During your visit, surround yourself with the sounds of Lubbock and share your favorites using #LiveLoveLubbock. CAMERON WEST - THE WEST TABLE KITCHEN & BAR
To get an idea of what’s cooking in the Hub City, we sat down with three local tastemakers, experts in their own right, who have developed their palates in kitchens across the country and returned to Lubbock to redefine the local dining culture.
CAMERON WEST
Chef-Owner of The West Table Kitchen & Bar
THREE CHEFS WHO ARE RESHAPING LUBBOCK’S CULINARY SCENE. By James Waterson for TourTexas.com
FROM TRIED-AND-TRUE TEX-MEX STAPLES to perfectly hand-battered chicken fried steaks smothered in gravy, traditional Texas fare is as hearty as it is delicious. These are the kinds of dishes you’d expect to find in abundance in Lubbock, yet this West Texas town’s menu is much broader than that. These days, seasoned chefs are creating innovative cuisine using the freshest—and often locally sourced— ingredients, all while redefining what it means to eat like a Texan in the Hub City. 36
VISIT LUBBOCK | 2019
A Lubbock native and Texas Tech University graduate, chef-owner Cameron West honed his craft in restaurants across the country before returning to Lubbock to open The West Table Kitchen & Bar (thewesttable.com) with his wife, Rachel. Since opening its doors, The West Table has become a go-to for food lovers. Central to its success is West’s emphasis on serving the highest quality ingredients in daily-evolving dishes. While each menu features flavor profiles from around the world, the produce used is a little closer to home. During Lubbock’s peak growing season, the restaurant sources as much as 80 percent of its produce from local farms. “With vegetables being cut that morning, you can taste the care the farmers put into their work,” West said. True to its West Texas roots, braised beef short ribs, pan-seared ribeye, and beef tenderloin make regular appearances on the menu. But another West Table standout is the seafood. From Blue Point oysters to seared mahi-mahi and grilled ocean trout, West sources his fish straight from the Atlantic. “The fact that I can bring fish right out of the water and straight to Lubbock is what really sets us apart,” West said. For West, opening a downtown restaurant is about more than just the incredible food. “I would see people go back and help revitalize cities around the country,” he said. “I always wanted to have my

own shop and help change things here. There were one or two high-end restaurants at the time, but nothing chefdriven. That’s what we’re trying to do; have the chef have more of a say in what the restaurant does.” Part of this endeavor has included making The West Table a cultural destination in its own right, featuring the talents of local artists and musicians, and participating in Lubbock’s First Friday Art Trail. “(Lubbock’s) food, culture, music, and agriculture have a symbiotic relationship,” West said. “We try to celebrate the things we have, what makes us different, and what we have to offer.”
Lubbock’s harvest season. While seafood dishes sourced from a co-op of Alaskan fishing families feature prominently on the menu, her favorite dish is the tenderloin filet, seasoned with coriander compound butter and served with a green chile relleno and pinto beans. “We put a lot of care into every single thing,” Fultz said. “From the minute you walk into the door, we want you to have an amazing experience.”
ANTONIO PINA
Owner and Chef of Farm to Fork Gastro Truck Growing up on a farm in South Texas among orange and grapefruit trees, Antonio Pina and his family ate what they raised at home. “If you went to any of my relatives’ houses, we would always hang out in the kitchen. Food was the center point of growing up for us,” Pina said. His passion took him to the kitchen of major hotels in McAllen where he made
COCINA DE LA SIRENA
JESSICA FULTZ
Chef and Part Owner of Cocina de La Sirena Tucked away in Cactus Alley Courtyard is some of the best Latin-inspired cuisine in Lubbock, and it’s all the brainchild of head chef Jessica Fultz. With a seasonally rotating menu featuring tapas, salads, stacked enchiladas and a large selection of tequilas and smoky mezcals, dining at Cocina de La Sirena (lasirenacocina.us) is a sensory experience. “My food is made with a lot of attention to details,” Fultz said. “Fresh and organic ingredients, bold flavors and beautiful plates.” Her love of food began at home with her mother. “She always cooked healthy, organic foods when we were growing up, and that’s reflected in my style of food today.” After graduating from California Culinary Academy, she discovered Latin cooking during a stint in Santa Fe. “I started out bussing tables and moved my way up. Then I kind of fell in love with food,” she said. When the opportunity to open La Sirena came around, Fultz jumped at the chance. Like Cameron West, she sources many of her ingredients, including microgreens and heirloom tomatoes, from local farmers during

meals for touring musicians. It was while working as a hotel chef that Antonio Pina had an epiphany. “I looked at myself in the mirror, and I asked myself, ‘are you going to do this for the rest of your life? Or are going to do what you want to do?’” This defining moment eventually gave birth to the Farm to Fork Gastro Truck (f2fgastrokitchen.com) “I try to do things that people will enjoy and give them a different experience they won’t find anywhere else,” said Pina. Specializing in elegant comfort food with a twist, Farm to Fork Gastro Truck always includes something interesting on its menu, from duck empanadas to fried alligator tacos with an Asian twist. “On the truck, we do something different every day,” he said. “We always have fresh seasonal seafood, which is

hard to find in an area like this.” Of note are the red snapper and the Argentinian wild-caught shrimp, which Pina pairs with flavorful grits. Much of the produce Pina serves is locally grown, he said, particularly the microgreens, radishes, and carrots. When they’re in season, he also sources peaches from Noble Farms, as well as sorghum and wild boar from Dimmit. “We are part of the Go Texan program, so if I don’t source it from Lubbock, it’ll be as much from Texas as possible.” When he launched the Farm to Fork food truck, Pina wanted to push the envelope and offer something different. The response has been positive, with his customers more than willing to try the many creative dishes that are on the menu. “What I love is that they really enjoy what we’re doing. I do it for them
so they can come in and experience a great meal,” he said. And patrons truly do enjoy it, with the truck selling out most days. As part of Lubbock’s emerging culinary scene, Pina noted the change he’s seen even in the last few years. “There are a few people doing what I’m doing but in a different direction,” he said. “We aren’t cookie-cutter corporate chefs. It’s our passion. We push each other, and we push the envelope.”

THE CHILTON: LUBBOCK’S ORIGINAL COCKTAIL
Over the years, Lubbock bartenders have put their own spin on the Chilton. While you can’t go wrong with the original, here’s a look at a few of our favorite takes on the “Hub City’s” unofficial official cocktail.
CUCUMBER CHILTON IN MOST CITIES, ASKING FOR A CHILTON WILL GET YOU A QUIZZICAL LOOK FROM THE LOCAL BARTENDER. This simple, yet incredibly refreshing cocktail originated right here in the “Hub City.” The story goes that a man named Dr. Chilton wanted to enjoy a refreshing beverage while at the Lubbock Country Club. He instructed the bartender to blend lemon juice, vodka and soda water and thus a drink that is truly a West Texas classic was born.
