CHOOSE YOU! Remember the song, “The toe bone is connected to the foot bone, the foot bone is connected to the heel bone…”? Well, it’s all connected to the brain. Your brain health is important for your emotional wellness, and for your physical as well. I’ve woken up after having a few too many drinks the night before, and decided not to be hungover. I chose to focus elsewhere, and then the pain was gone. As Deepak Chopra says, “That which you pay attention to flourishes; that which you ignore withers.” So, having a choice, why wouldn’t you choose wellness? Choose happiness. Choose success. Because when you feel good, it’s no wonder things go your way. So, how do you feel good? For me, it’s unequivocally yoga. Taking an hour and a half a day to ignore drama, turn off my phone, quiet my mind, enter into a moving mediation, and focus on nothing except my breathing, does wonders. Afterwards I’m calmer, less reactive, more focused, and ready to conquer the day. Often, naysayers make the excuse, “I’m not flexible!” It doesn’t matter. It’s not about what you can or cannot do physically; it’s about what you are doing mentally and emotionally, just by taking the time to be present with only yourself, which affects you physically.

I also use mantras; little sayings I repeat to myself when I need a boost. When I walk out on stage, I remind myself of what a reviewer once said, “Grossman masters the evening.” Before I go into casting, I remember the anonymous note I found on my car following a performance of one of my one-woman shows, which read, “You are a star.” These quick phrases help me remember what a badass I am. When I was a struggling actress, waiting tables, I would race to my auditions directly from the restaurant, covered in ketchup, and a deflated ego. I was in no position to book work, and I didn’t. Why would anyone entrust a role to someone who couldn’t even get a side order of fries right? Feeling good about yourself, emotionally, mentally, physically, is paramount. So, if you have a job that’s sucking your soul, find another that doesn’t. If you have a friend that leaves you feeling depleted, limit your time with them. Time is your greatest asset — you choose how to spend it. Use it wisely, doing things that feed you creatively, intellectually, emotionally. Find something you love, and incorporate it into your life as much as possible. It will make you happy, keep you healthy, and ultimately, lead you to success.

H E ALTH NEWS PROBLEMATIC PROTEIN A protein in humans called RGS8 may revolutionize depression treatments. This protein controls a hormone receptor called MCHR1, which helps regulate sleep, feeding, and mood, and scientists had discovered "that RGS8 inactivates MCHR1 in cultured cells." A study conducted at Hiroshima University in Japan, used swimming mice to measure the time that each mouse was active. Mice with more RGS8 in their nervous systems recorded shorter immobility times than those with a normal amount. When given an antidepressant, immobility times shortened, however when given a drug preventing MCHR1 from working, immobility time was not affected. This shows that RGS8 plays a part in the development of depressive behaviour.
DAILY DAIRY Popular belief has it that full-fat dairy products should be avoided, due to their high content of saturated fats, resulting in a negative impact on cholesterol levels. However, a recent study led by Dr. Dariush Mozaffarian from the Friedman School of Nutrition Science and Policy at Tufts University in Boston, Massachusetts, challenges these claims. They argue that whole-fat dairy does not raise cardiovascular risk. Some fats present in certain dairy products might even keep stroke and heart disease at bay. The researchers measured more than 2,900, U.S. senior participants’ blood plasma levels of three fatty acids contained by dairy products at the beginning of the study in 1992, six years later, and then 13 years later. During the 22-year follow-up period, 2,428 of the participants died. Of these deaths, only 833 were due to heart disease. The analysis revealed that adults with higher levels of fatty acids overall, were 42 per cent less likely to die from stroke.
DO AS THE EUROPEANS DO A European trial of 1,150 people suggests that the Mediterranean diet could be good for bone health. The trial, which was led by the University of Bologna in Italy, showed that seniors with osteoporosis who followed a Mediterranean-like diet for 12 months had a much slower rate of hip bone loss than peers who did not follow the diet. The diet used a high amount of fruits, vegetables, wholegrains, nuts, olive oil, and fish; small amounts of meat and dairy produce; and a moderate amount of alcohol. Decline in bone density was seen in two of the bone density measures — lumbar spine and whole-body — in the participants with osteoporosis in the Mediterranean diet group. 30

DIET-DRIVEN DAMAGES In a study conducted in mice, researchers from Johns Hopkins were able to confirm that a Western-style diet — high in fats and cholesterol — has a negative impact on hair and skin health. They went even further, however, developing a drug that is able to reverse the damage. The researchers split a big group of mice into two distinct groups: one maintained a regular mouse diet, while the other had a high-fat, high-cholesterol diet — similar to a Western-style regimen. Results showed that the mice on a Western-style diet had begun to lose hair and displayed hair whitening and skin lesions. When the experimental drug, DPDMP, was tested on mice following the Western diet, it reduced the number of neutrophils (white blood cell that plays a role in inflammation) observed, suggesting that the substance was effective in reducing skin damage and inflammation.
Individuals with Type 1 diabetes require daily injections for the condition, and don’t have an oral form as of yet because insulin quickly deteriorates when coming in contact with gastric acid or digestive enzymes. Specialists from the Harvard John A. Paulson School of Engineering and Applied Sciences in Cambridge, Massachusetts, have come up with a pill that, they say, is able to do this job. Researchers created a pill coating, which shields the insulin from gastric acid and the enzymes of the small intestine, and is also able to penetrate the intestine’s protective barriers. "Our approach is like a Swiss Army knife, where one pill has tools for addressing each of the obstacles that are encountered," says Samir Mitragotri, the senior study author.
DIETING: IT’S ALL IN YOUR HEAD Brain anatomy may be the reason you struggle to maintain a healthful. Researchers have found gray matter volume in two brain regions; the gray matter is predicted to have the ability to exercise control over food choices, while the brain regions are believed to be important for evaluating options and self-control. The study, lead by Hilke Plassmann, the INSEAD chaired professor of Decision Neuroscience based at Fontainebleau in France, consisted of imaging data from brain scans taken of healthy men and women. Participants looked at food images and placed values on them according to tastiness and healthfulness. Findings revealed that those with more gray matter volume tended to show more self-control. “In the future, we may be able to come up with brain-based interventions, so that you can change the gray matter density in these regions,” said Plassmann. Dr. Alex Dimitriu, double-board certified in psyhchiatry and sleep medicine, as well as the founder of the Menlo Park Psychiatry and Sleep Medicine Center in Menlo Park, California, explains that sleepless nights have implications well beyond making you sleepy the next day. “Some of the most exciting research in sleep science is studying the effects of sleep on the brain, and what happens when you deprive your brain of restorative sleep,” he says. Not getting enough sleep is detrimental to daytime functioning – to our mood, energy, concentration and reaction time – and over the long term, it contributes to obesity and the risk of serious illnesses. “New research suggests that sleeping less than seven to eight hours a night can be linked to memory loss, cognitive decline, and even Alzheimer’s disease.”

OUR BRAINS DON’T SLEEP WHEN WE DO During waking hours, the brain is bombarded with more stimuli than it can process. When we go to sleep, the brain goes to work, making order out of chaos and archiving memories for future retrieval. It does this by strengthening critical neural connections, discarding unimportant ones, and solidifying new memories. “We’ve all noticed, and research has confirmed, that ‘sleeping on it’ helps us recall a newly learned task,” says Dimitriu. “This explains why people suffering memory deficits can recall a name from forty years ago, though not what they had for lunch yesterday. Their brains have become less efficient at making new connections and storing new memories. Better sleep may improve this key brain function.”
As with every organ in the body that converts fuel into energy, the brain produces waste that accumulates during waking hours, which is then cleared out while we sleep. There is more space between brain cells while we’re asleep, making it easier for cerebrospinal fluid to flush out toxins. Researchers are just beginning to understand this cleansing process – called the glymphatic system – however it appears that the more waste that’s littering the brain, the easier it is for degenerative diseases to take hold. Among these waste products is beta-amyloid, which is the toxic protein best known for its presence in the brains of people with Alzheimer’s disease. The glymphatic system, which becomes less efficient as we age, does its work while we sleep, raising the possibility that better sleep can improve the processes that flush beta-amyloid and other toxins from the brain. Older adults with dementia suffer sleep disturbances that have generally been considered a consequence of diseases such as Alzheimer’s. Now researchers are looking into whether sleep problems might be a risk factor for cognitive decline, dementia, and Alzheimer’s. In a recent study funded by the National Institutes of Health, it was found that losing just one night of sleep would lead to an immediate increase in beta-amyloid in the brain. These beta-amyloid proteins clump together to form the amyloid plaques that impair communication between neurons and are a hallmark of Alzheimer’s disease. “While previous studies have shown that sleep deprivation elevates the level of beta-amyloid proteins in the brains of mice, this is one of the first to show that sleep may play an important role in clearing beta-amyloid in the human brain,” Dimitriu notes. “This is an important step in helping us understand the pathology of Alzheimer’s and potentially how to prevent it.” REVERSING COGNITIVE DECLINE “We are seeing more and more evidence that sleep plays a critical role in maintaining brain function as we age,” Dimitriu continues. “The question of reversing cognitive decline by improving sleep is another interesting avenue for investigation.” A study done in 2014 tested a novel therapeutic program for reducing mild cognitive impairment, based on the idea that clinical trials in pursuit of a ‘magic bullet’ drug had yielded little. Though a combination of therapies that address multiple targets in the
underlying pathology of Alzheimer’s might have an additive or synergistic effect. The program included lifestyle changes, such as sleep optimization, and also a regimen of medication and supplements designed to optimize metabolic factors implicated in Alzheimer’s, correct imbalances, reduce beta-amyloid, and more. “The study was small but showed impressive results,” says Dimitriu. “Clearly this combination approach shows promise.” IMPROVING SLEEP Everyone has trouble falling asleep occasionally. For most of the millions of Americans who regularly struggle to get to sleep or stay asleep, improving sleep habits can restore a restful night's sleep. Dimitriu makes these recommendations: ❯ Don’t eat a heavy meal or drink a lot of liquid close to bedtime. Reduce or eliminate stimulants such as caffeine and nicotine during the day, and alcohol in the evening. ❯ Exercise regularly – but early in the day, not within several hours of bedtime. ❯ Stick to a sleep schedule; going to bed and waking up at the same time each day, including weekends. Avoid naps or limit them to 30 minutes; don’t nap after 3 p.m. ❯ Keep your room cooler during the day. Use a fan or noise machine to mask distracting sounds. Try room-darkening shades if morning light wakes you too early. ❯ Take about 30 minutes to wind down before going to bed. Do something relaxing, like reading or listening to quiet music. If you can’t fall asleep after 20 minutes, do something relaxing for another 20 minutes, or until you feel sleepy. ❯ Sleeping on your side, particularly on your left side, may improve circulation while you sleep. ❯ Don’t use a computer, tablet or smart phone right before going to bed. The light from the screen stimulates the brain and makes it hard to fall asleep. “We’ve long known that sleep is important for overall health and especially for brain function,” Dimitriu concludes. “Now, as we uncover the mechanisms at work, we have the opportunity to make great strides in preventing and treating cognitive decline and degenerative disease.” VM BRAIN HEALTH 2018 / VIVAMAGONLINE.COM

e all know that sensation of waking up after a truly good night’s sleep and feeling like we can take on the entire world. Unfortunately, in today’s fast-paced, screen-infested modern world, that feeling is all too rare. Fewer and fewer of us are getting the rest our bodies so badly need. Which is bad news for our mental health. Chronic sleep deprivation – consistently getting less than seven hours’ kip a night – has been linked to increased levels of anxiety, stress, depression and even suicide. What’s concerning is that getting less than seven hours a night is a situation that one-third of North Americans are currently in. So serious is the problem that in 2014 the U.S. Centre for Disease Control declared sleep disorders to be so prevalent as to constitute a public health epidemic. Below, we take a look at the role sleep plays in mental health and how getting more of the good stuff can help build mental resilience. SLEEP AND EMOTIONAL REGULATION Mood swings are a familiar consequence of a bad night’s sleep. Why should this be the case? Well, it’s all to do with a small almond shaped collection of nuclei hidden deep in the medial temporal lobe. Say hello to the amygdala, also known as the emotional control centre of our brain. The amygdala, while small in stature plays a big role in how we respond emotionally to external stimuli. When everything is working well we respond in an emotionally balanced way. However when we sleep badly studies have shown the amygdala becomes overly sensitive to external stimuli. The result can be dramatic mood swings. The link between the amygdala and mental resilience doesn’t end there. A host of conditions including depression, stress and anxiety are thought to be linked to the malfunctioning of the amygdala. Abnormal functioning may be due to developmental problems, damage or neurotransmitter imbalances, the latter of which can be strongly linked to poor sleep. More on that below. The better we sleep, the better our emotional stability, the greater our resilience. SLEEP, CORTISOL AND DEPRESSION While we lie dreaming of chocolate unicorns, our brain is busy preparing itself for the day to come. As we slumber, a number of
vitally important processes take place. One of the most important for our emotional wellbeing is the regulation of a number of powerful neurotransmitter levels in our system. This includes cortisol, also known as the “stress hormone.” If we don’t sleep for long enough, or our sleep is broken, then the regulation of these hormones can be impaired. It’s thought the knock-on impact of this can either cause, or at the least amplify, pre-existing mental health conditions such as stress, anxiety and depression. Such is the link between poor sleep and mental health, it’s been stated that insomniacs are a mind-boggling 20 times more likely to suffer from panic related stress disorder than individuals who sleep well, and five times more likely to be depressed. SLEEP AND POSITIVITY While not getting enough sleep can have a severe impact on our emotional resilience, sleeping well can have the exact opposite effect. Researchers at Johns Hopkins University found that individuals who slept through the night without interruption had a much more positive outlook than individuals who woke once or twice during the night. A complementary study conducted by the University of Binghamton found that individuals who got less hours sleep were more likely to be overcome with “repetitive negative feelings.” According to these findings, when you go to bed and how much sleep you get can have a very profound impact on your ability to control how much you worry about things. FINAL THOUGHTS When we rest, our mind repairs and rejuvenates itself after the hardships of the day. These processes require long stints of deep and unbroken sleep to be successful. If we consistently sleep badly we are interrupting these process and ultimately our mental stability is going to suffer as a result. To be ensure mental health you have to give your brain’s need for sleep the respect it deserves. Treat your bedtime seriously and it will treat you to improved mental resilience in return. VM

holesterol, more often than not, is spoken about in a negative light; however, it plays a vital role in the functioning of the body. It is something that is found in every cell in the human body, and it assists with hormone production. Cholesterol is obtained in two ways; first, it is synthesized in the body and produced by the liver. Second, the body absorbs via the intake of animal products from our diets. There are two types of cholesterol; high-density lipoprotein (HDL), which refers to good cholesterol; and low-density lipoprotein/very low-density lipoprotein (LDL/VLDL), which refers to bad cholesterol. Lipoproteins are complexes that carry hydrophobic plasma lipids, in particular cholesterol and triglycerides, in the blood. Each form of cholesterol transports lipoproteins through the blood, however it is VLDL and LDL that are responsible for transporting triglycerides and cholesterol from the liver to the cells, while HDL returns the lipids to the liver where they will be metabolized for elimination via bile salts. High levels of LDL and VLDL are associated with the increased risks of atherosclerosis and cardiovascular diseases when linked with chronic inflammation whereas high levels of HDL reduce the risk of heart disease. Excess weight and a diet particularly high in saturated fats complicate the situation, because they are associated with metabolic syndrome including hypertension, dyslipidemia, obesity and diabetes. Managing cholesterol requires an approach that factors in many variables. The management of cholesterol requires a comprehensive, holistic assessment of the person in order to achieve sustained and successful results. Diet, lifestyle, stress factors, oxidation, free radical damage, emotional state and the severity of the issue must all be considered. Many are in search of alternative solutions as the conventional approach offers a solution, which comes along with complicated side effects. When doctors are addressing cholesterol with a patient, they need to consider reducing homocysteine levels, curbing inflammation, addressing athermoatous plaque, preventing clot formation, and making sure cellular metabolism is well-functioning. The patient must also consider eliminating trans fatty acids from the diet, consuming essential fatty acids and assessing and
evaluating their current diet and eating patterns. If the patient smokes they should quit, they need to maintain a healthy and balanced weight, through exercises and engaging in movement. Mental state must also be addressed, so learning to manage anxiety and depression becomes essential. An effective strategy is embracing the practices of meditation, yoga and deep breathing. In addition to a balance of exercise, eliminating trans fatty acids, and evaluating their overall diet, the patient can start using red yeast rice (RYR). RYR is an effective solution for lowering cholesterol naturally, without the detrimental side effects; it’s the ultimate example of using food as medicine. RYR is a fermented product that has been used in traditional Chinese medicine for thousands of years to manage cholesterol. Today, modern science is catching up. RYR has proven to be effective in treating and improving overall cardiovascular health. The complexes and components within RYR are well balanced in terms of ingredients and synergistic constituents that offer exemplary results. RYR alone reduces cholesterol by 25 to 35 per cent according to conclusive studies. It reduces triglycerides by 12 to 20 per cent, as well as acts as an inhibitor of HMG-CoA, which will reduce the production of cholesterol in the future. Instead, healthy lifestyle choices, nutrition and the mental emotional state of the person must be addressed. However, if the patient needs the added support of a product to accelerate the process, make sure to choose one without the side effects, and will not compromise other aspects of their health. athleen Robertson is being pulled in more directions than a loose-fitting diaper: acting, writing, motherhood, marriage. But after the birth of her 18-month-old son, Robertson’s body told her to be gentle with herself and stop putting the pedal to the metal. The new addition to an established family that already included nine-year-old son William, the Canadian native says that part of her personal maturation process has been the introduction of a new life survival guide. “If my body is telling me something just isn’t right, I need to listen to that. Take a step back, listen and trust yourself. I don’t run, run, run ragged anymore. Now I take the time to care for myself and slow down. If you have a horse and work it really hard, that horse isn’t going to take care of you. So I now not only take care of my body but my mind too.” She doesn’t seek out fad diets or the newest and craziest workout to keep her figure in check. Each day the former dancer begins with a good strong cup of coffee and a green smoothie. “In my dream breakfast, I’ll have a chocolate croissant, but that dream doesn’t happen often.” Currently filming the anticipated Netflix/CBC family drama Northern Rescue in Ontario, Canada while writing the Amazon Studios screen adaptation Little Bee for Julia Roberts, the multi-hyphenate has earned the right to enact a personal survival strategy. Part of that is her nightly bath, supplemented with Saje bath swishes that contain an inspirational wish inside. “Last night my little message was `integrity is doing the right thing even when no one is watching’. I keep all of them.” The 45-year-old confesses to a lifelong dedication to bath products. “Bath salts, bath oils, scrubs – I have 100 different products around. But the Saje bath products are something my mom introduced to me as a birthday gift. I love the lavender and eucalyptus scents – herbal, medicinal ones as opposed to flowery. That’s just not me.” Robertson says sleepless nights have come to an end with her little one finally snoozing through the night. And that’s good for the woman who enjoys a good 10 hours of slumber. “I love to sleep – it’s never an issue for me.” Born in Hamilton, Ontario, Robertson has been creating memorable and distinctive characters, launching her career on Maniac Mansion for famed producer George Lucas. TV and big screen projects continued to catapult her into the bright lights of Hollywood: as Hildy Mulligan in the drama series Murder in the First, Jodi

Morgan in Emmy nominated Bates Motel and as Colleen Howe in Mr. Hockey, for which she received a Leo Award for her performance – just to name a few. Yet Robertson has stayed grounded with the aid of yoga, stretching and meditation, cornerstones to her peace and creativity. “I love the outdoors and have never been a gym person. For me, it’s very relaxing to connect with nature on a hike”, which she does regularly when back in her Hollywood Hills home. “It’s quite beautiful there, considering we’re right in the middle of Hollywood.” While filming over the summer in Canada, the Robertson clan bunked down in a house right on the water. “So I kayaked and did outdoor activities that I wouldn’t have access to living in the Hollywood Hills.” The three-time Canadian Screen Award nominee takes her professions all in stride. She readily confesses that acting is really out of her comfort zone and she prefers a much simpler lifestyle. “I hate to wear makeup, I don’t enjoy wearing designer clothing, and would rather be going for a walk or hike”, she says, beginning to tick off her a list of activities in and out of her comfort zone. “I don’t like photo shoots and really don’t like to be looked at. I love the acting part itself but I feel embarrassed by even posting a photo of myself on Instagram.” Now don’t rush to your computer and look up her Instagram account because it’s private and blocked. “Being a writer is when I work in my sweat pants, wear my glasses and can be my introverted self.” Balancing her professional life with her personal life can sometimes leave little time for Robertson’s favourite massage sessions, which have dwindled from weekly to bi-monthly. Yet she still manages to experience tranquil moments throughout her day. “I love tea and a good green mate tea is soothing. It’s hard to turn my brain off because it’s always going but sipping tea helps calm me.” Still, Robertson insists she’s quite happy in her lot in life being a lesser-known Hollywood actress and successful writer. What really empowers her as a woman of today is “my brain”, she readily says. “As I’ve gotten older and become a more successful writer, I have more ability to focus on my writing. It’s changed my perception on everything. Today, there’s so much pressure on women to look a certain way, to present themselves in a certain way – especially for young girls. I feel our society is going back to the ‘60s in what is expected of women’s looks. Now it’s become so hyped that there’s no reality in the business anymore. Everyone needs to take a breath and slow down.” Being an accomplished writer, what would she title her autobiography? “Lifelike,” she muses. How simply appropriate. VM

BOULART BAKED CAMEMBERT INGREDIENTS: • 1 Boulart Focaccia • 1 wheel of camembert cheese • 1 sprig of thyme, leaves picked • 1 tbsp of honey • 1 tsp of chilli flakes (optional) • Extra virgin olive oil • Seas salt and ground pepper

DIRECTIONS: 1. Preheat the oven to 350°F. 2. Unwrap the cheese and discard the plastic wrapper. 3. Place the cheese back in its wooden container and score the top with a small knife. 4. Drizzle the honey over the cheese then sprinkle over the thyme, chilli and a pinch of salt and pepper. 5. Place the cheese in a round oven proof dish and place in the oven for 15-20 minutes. 6. While the cheese bakes, slice the focaccia with a breadknife into breadsticks. 7. Lightly brush the focaccia breadsticks with the olive oil and grill or toast in the oven until golden brown/crisp but the center is still soft. 8. Once the cheese is done serve immediately with the focaccia, some fresh fruit and preserves if you wish.

TALL GRASS PRAIRIE GRASS ROOTS BISON STEW SERVES: 2 AS A MAIN DISH
INGREDIENTS: • ∏ cup all-purpose flour • 1 tsp plus ∏ tbsp salt • 1 tsp plus ∏ tbsp freshly ground black pepper • 1 tsp ground juniper berries • 3 lbs bison stewing meat • 31 cup vegetable oil • 4 cups white onions, chopped • 1 Tbsp minced garlic • 4 cups mushrooms • 1 tsp thyme • 1 can (30 oz) diced tomatoes, well drained
• 1 1/3 cups beef or chicken stock • 1 ∑ cups dark beer (we prefer Half Pints “Stir Stick Stout”) • 1 Tbsp balsamic vinegar • 1 cup cubed potatoes • 4 cups chopped carrots • 4 cups chopped celery INGREDIENTS: • ∑ cup butter • ∑ cup and 2 Tbsp all-purpose flour
DIRECTIONS: 1. To make the Roux, combine butter and flour in saucepan over medium heat. Cook until mixture starts to brown and emits a nutty aroma, about 5 minutes. Remove from heat and set aside. 2. Preheat oven to 350°F. 3. In a large bowl, combine flour, 1 tsp salt, 1 tsp pepper, and juniper. Add meat and toss to coat. 4. In a braising pan (or Dutch oven) over high heat, heat oil. Add meat and cook until well browned on all sides. 5. Add onions and cook, stirring occasionally, until browned. Stir in garlic and mushrooms and cook a few more minutes. Until softened. 6. Season with ∏ Tbsp salt, ∏ Tbsp pepper, and thyme. Add tomatoes, stock, beer, vinegar, and reserved roux. Stirring to combine. 7. Transfer stew to a roasting pan. Add potatoes and carrots and stir to combine. Cover and roast for 2-3 hours. Until desired softness of meat. Add celery for last 10 minutes of cook time.

BOREAL LATTE: • Double shot of espresso • 1 oz house made Boreal syrup • 8 oz steamed whole milk

SYRUP INGREDIENTS: • 3 L simple syrup • ∏ cup sacred Boreal tea (Boreal Wildcraft Teas) • 40 g crushed juniper berries • 1 cup elderflower concentrate
7. Add bacon and continue to cook for 1-2 minutes. Add white wine to deglaze pan and reduce down to 1 tbsp. Add stock and bring to a boil. Season with salt and pepper. 8. At the last moment add the chives. You can make the sauce thicker by reducing it a bit longer. If you want the dish to have a more ‘broth’ like texture, add more stock and bring to a boil before plating. 9. Place gnocchi in bowl and garnish with fresh Parmesan, more chives, fresh cracked pepper, and some extra virgin olive oil.
PASSERO RICOTTA GNOCCHI with black boar bacon and parmesan SERVES: 6
INGREDIENTS: • 2 cups ricotta gnocchi • 1 tbsp olive oil • 2 tbsp butter • 1 tbsp small diced shallot • ∏ cup thinly sliced black boar bacon (regular bacon can be used as a substitute) • ∑ cup white wine • ∏ cup chicken or vegetable stock • 1 piece Parmesan (approx. 40 grams), shaved with a vegetable peeler • 2 tbsp freshly cut chives RICOTTA GNOCCHI: • 1 kg fresh ricotta • 2 eggs • 3 tbsp salt • 1 tsp freshly grated nutmeg • 5.5 cups organic white flour, sifted DIRECTIONS: 1. To make the gnocchi, mix ricotta with eggs, salt and nutmeg in a large bowl. At this stage you could add other flavours as desires, such as truffle, like we do in the restaurant. 2. When everything is mixed together, add the flour and knead by hand for a minute until the dough is completely together. The dough should be smooth and somewhat tacky, not wet or overly dry. If the mixture is wet, add more flour. Wrap in plastic wrap and refrigerate for 3-4 hours, or preferably overnight if you have time. 3. Bring a large pot of salted water to a boil. 4. Sprinkle a large work surface with flour and lay out the dough. Cut dough into 4 pieces and work with one at a time, leaving the others covered while you work. Cut each piece of dough into thin manageable strips and roll out into cylindrical logs. If the dough begins to stick, dust with more flour. Then, cut the dough into small bite sized pieces and place on a baking sheet. 5. Blanch gnocchi in boiling water for 3-4 minutes, or until they float. Strain and either use immediately with recipe or coat with a small amount of olive oil and put in fridge for later use. At this stage the gnocchi can be frozen in a covered container for up to a month. 6. In a large sauté pan, add oil over medium heat. Add gnocchi and sear until golden brown on each side. Add butter and shallots and sauté for 1-2 minutes until fragrant.
CYNTHIA BERETTA’S MEATBALLS SERVES: 8 TO 10
INGREDIENTS: • 2 lbs Beretta Certified Organic ground beef • 1 egg, beaten • ∑ cup milk • 2 tablespoons Worcestershire • ∑ cup Panko bread crumbs • ∑ cup freshly shredded parmesan cheese • 2 tablespoons fresh parsley, minced • 2 teaspoons Italian seasoning • 1 teaspoon oregano • 1 teaspoon basil (fresh or dried) • 2 cloves of crushed garlic • ∏ teaspoon smoked paprika • Salt and pepper to taste Optional: Beretta’s Sauce-EH BBQ Dip & Marinade, for dipping DIRECTIONS: 1. In a large bowl, combine all the ingredients together, using your hands to thoroughly combine. 2. Line a large baking sheet with parchment paper. 3. Start forming golf ball sized meatballs and arrange spaced slightly apart on your baking sheet. Continue shaping until all raw mixture has been used. 4. Place the baking sheet in the freezer for about 2 hours, until meatballs feel firm. 5. Transfer the meatballs into bags and freeze until you’re ready to enjoy them! Meatballs can be safely stored in the freezer for up to a year. 6. Frozen meatballs should be cooked at 350°F for 25-30 minutes, with freshly made meatballs taking only 15-20 minutes at the same temperature. TIP: Serve to guests on a platter, topped with your favourite sauce and toothpicks for extra dipping!

of Going Keto
The ketosis diet is all the rage, but do people really understand its effects on the body? The “keto” in ketogenic diet is short for ketone, a tiny fuel molecule produced by the body as an alternative fuel when the supply of blood glucose is inadequate. Ketones are generated when you eat very few carbohydrates (which are promptly broken down into blood glucose), and only moderate quantities of protein (excess protein can also be converted to blood glucose). The liver converts fat into ketones that are used as fuel by the brain and throughout the body. The brain is never satisfied – it

consumes a lot of energy every day, which means it can’t run on fat directly, only glucose or ketones. When our body produces ketones, it’s assumed to be in ketosis. Although fasting is the quickest way to get there, no-one can go forever without eating. The keto diet approach appears to work for many as a weightloss solution. There are even some clear-cut benefits of which you might not be aware. But there are also some serious drawbacks to putting your body in ketosis.
PROS of Going Keto When your body is in ketosis, it processes fat and uses it as fuel in a way that no other state easily allows. Carbohydrates are much easier to break down and use as fuel, so when you are providing lots of ketones to your body, you must burn and use all carbs before your body begins converting fat into a source of fuel. Excess ketones are in and of themselves not dangerous to your system in any way. Any ketones you produce that aren’t required by your body are eliminated through urine, easily and harmlessly. In fact, this excellent benefit allows you to confirm that you are in a state of ketosis using urine-testing strips in the morning. When your body is used to being in ketosis, it will start to prefer ketones to glucose. This is the perfect state that you desire your body to be in; no more sugar cravings whatsoever, and in fact, your body will start having a preference for protein as fuel as opposed to glucose. Being in a ketogenic state is very helpful for controlling insulin levels in the body. Insulin is one of the factors that make you crave food, so controlling it to healthy levels can be a key component of weight loss. “There are benefits to a ketosis diet, but we only like to recommend restrictive diets for medical necessities,” say Jenni Bourque and Mirna Sharafeddine, registered holistic nutritionists and the founders of Naughty Nutrition. “Keto has shown successful for obesity, and those with neurological issues, such as Parkinson’s, Epilepsy, or Alzheimer’s, but the research and efficacy for any other conditions is very limited,” says Bourque. “Keto may also be beneficial for those with diabetes and need to manage their blood sugar levels, but only with a guidance from a medical professional.” The majority of people who take an interest in ketogenic diet weight loss claim that being in a ketogenic state makes them feel significantly less famished than when they are in a non-ketogenic state. It is much easier to stick to a diet – any diet – when you’re not fighting cravings and hunger every step of the way. In fact, hunger pangs can often derail a person’s best efforts, and not having to deal with them makes it easier to meet your goals, all the way around. Keto has shown successful for obesity, and those with neurological issues, such as Parkinsons, Epilepsy, or Alzheimers, but the research and efficacy for any other conditions is very limited. “We do know people who have had serious weight issues affecting their day to day, and they have lost the weight on keto and maintained the weight loss,” says Sharafeddine. “We also know many (and the majority) that have been unsuccessful and would return to their habits after the diet is stopped.”
CONS of Going Keto The state of carbohydrate deprivation is not only unhealthy, but is viewed by your body as a crisis. This is quite adequate to make me ban this diet for life. But if that’s not enough to inspire caution around the keto diet, there are plenty of other negative side effects. “If you have a negative body perception, or fear certain foods, the restrictions with the keto diet can fuel those thoughts,” says Bourque. “The mainstream thought behind keto really emphasizes carbs being the enemy, which just isn’t the case from a biological standpoint. If you go through keto, lose weight and feel amazing, the idea of carbs = bad may always linger in the back of your mind and can contribute to the negative food associations.” Other primary side effects of a ketosis diet are persistent tiredness and generalized fatigue and similar bodily malfunctions precipitated by not having enough glucose in your body. On top of that, it can also cause life-threatening liver damage and destruction of muscle tissue (muscle atrophy). I’m sure you don’t want any of those. But that isn’t all. “We don’t have enough studies on the long-term effects of the ketogenic diet but we have enough information to understand that a diet that is high in saturated fat (from animal sources) as well as protein can be hard on the body especially on the heart, kidneys and liver,” says Sharafeddine. “Depending on the foods the person is consuming by following a keto diet, if there is a lot of focus on processed meats, it may also increase the risk of colon cancer and lead to nutritional deficiencies. The most common shortterm side effects are fatigue, headache, brain fog and digestive issues or constipation/diarrhea.” Although extremely rare, ketoacidosis a serious condition that can be fatal has been observed in several pregnant women on a very low-carb diet, Sharafeddine adds. Considering that one of the effects of a ketosis diet is persistent fatigue, it’s very likely that you won’t be able to follow even the easiest workout regimen. And as we all know, working out is a vital part of losing weight. So you are constantly tired, you can’t exercise because you don’t have sufficient energy, you have a lot of constraints regarding what you can and can’t eat, and your body uses its fat as a last-resort energy source. “The keto diet shouldn’t be a DIY diet – you are either in a state of ketosis or you’re not, but when you flip flop in and out of ketosis you run the risk of experiencing more of the negative side effects as well as getting into a yo-yo diet cycle,” says Bourque. “Both of us have a history of habitual diet cycling and negative body images, so something as restrictive as a keto diet is not something we would try as it may be a trigger those negative body perceptions,” adds Sharafeddine. “Our personal food philosophy comes from a place of balance – you can have some sugar in your diet but portion control and craving management will be much more successful long-term.” “That being said, we do know people who have had serious weight issues affecting their day to day, and they have lost the weight on keto and maintained the weight loss. We also know many (and the majority) that have been unsuccessful and would return to their habits after the diet is stopped.”
In the end, it will be up to you and your doctor to decide if a keto diet’s the right path for you, especially if you would like to stay on it for an extended period of time. Keto diets are really only encouraged to use by doctors when patients are suffering from obesity or in need of specific surgeries. The key takeaway here is: consult your doctor when making this decision.
The trick for success is to wean someone off of keto into a healthy, whole food-based diet that doesn’t focus on carbs as being the enemy, but rather something that’s necessary for survival, they say, with a post-keto diet being one that has balance and wiggle room. “The keto diet can definitely be successful for those who really need to be on it, but if you are just trying to lose weight and get healthier, there are plenty of other ways to do that (and feel the same as on keto) without the restrictions.” According to the Naughty Nutritionists, the best diet for most people is one filled with fresh, whole foods with an emphasis on plants, low in added sugars, processed food, rancid oils or vegetable oils cooked at high heat, and with a balanced amount of dairy and animal protein. “We find the most success comes from diets that can be sustained long term,” says Borque. “We also know that individual needs vary so there is never one diet that fits all. Working with a nutrition expert to gain more insight into your own individual needs may be the best diet for you. Nutrition experts can help assess your symptoms and build an exact diet plan for what you need.”

re you the parent of a teenager? If you are, you likely already know that many teens want to look their best, at least fashion-wise. For that reason, many teens keep up with the latest fashion tends and use them. While this is okay in some aspects, in others, it can result in your teenager wearing baggy pants and showing their boxers, or wearing revealing shirts that show off too much cleavage. While these do seem to be popular fashion trends, do you really want your teen to be following them? If not, you may be wondering what you should do. When it comes to your teenager and fashion trends that you may not necessarily approve of, your first thought may be to lay down the law. As a parent, this is your right to do, however you might actually end up causing more damage. Take a second to remember what it was like to be a teenager. If you yourself were like most teenagers, there was a good chance that the last thing you wanted was to be told how to dress by your parents, and the same is likely so for your own teen. That is why you may want to think about taking a different approach. One point you can bring up is that you don’t want their outfits to end up causing them harm. As previously mentioned, many of the latest fashion trends for women and for girls are low-cut shirts and low-rise pants. This often ends up leaving a good portion of the body exposed. In today’s society, you always need to be on the lookout for sexual predators. While your teenager may not necessarily be interested in someone, someone may actually end up getting that type of feeling from your teen. This could put them in a weird, and possibly dangerous situation. If that is the case, you may want to take the time to explain that, as it may sink in better than if you were just to say, “Change your clothes;
you can’t wear that.” It is also important that both you and your teenager remember that fashion trends regularly change. It is not uncommon for a fashion trend to only last a few months. If you are not happy with the current fashion trends and your teenagers are, you may want to encourage them to explore other options. There are a number of fashion magazines and websites that have a large number of fashion trends, as well as information on those trends. Not all trends require the wearing of extremely revealing clothing. For that reason, you may want to explore other options. If your teenager is a girl, it could actually turn into a nice mother-daughter bonding experience between the two of you. Something else that you may not necessarily think about, and should, is if your teen attends high school. Many high schools have dress codes and they often prohibit the wearing of revealing clothing. While not all schools actively enforce their dress codes, many do. Just like being told not to wear certain clothes by their parents, many teenagers may feel angered being told by school officials. For that reason, you may want to take action before anything serious happens that could really jeopardize your teenager and their school records. It is not uncommon to hear of instances where kids are suspended from school due to not following the school’s dress code. In short, teenagers and fashion seem to click together. While it is important to your teenager that they fit in with others and be popular at school, they do not necessarily have to be wearing the ‘hottest’ clothes or fashion accessories to do so. THE DAILY CHOICES All we do all day is to make choices. Should I eat this, or that for breakfast? Should I cut gluten and dairy? Should I use this route or that one to drive to work? Should I register for a fitness class or hire a personal trainer to keep me accountable to my workouts? Should I keep dating this guy that doesn't really seem to be into me? Should I apply for this promotion or should I remain in my current role? Should I start my own business? Should I buy the blue outfit or the black one? We tend to have many different reasons to question ourselves daily. Whether it’s a big decision or not, it’s quite impressive, the 66
VIVAMAGONLINE.COM / BRAIN HEALTH 2018
amount of time we spend arguing the pros and cons in our head. How can we make decisions quickly and – most important of all – be sure about the direction in which we are going? Confidence in our choices gives us tremendous peace of mind. With it we can focus our attention and move forward in whichever direction we choose, as opposed to staying stuck and feeling that a roadblock is keeping us from growing and achieving what we are supposed to be doing with our life. KNOW THYSELF According to the Greek Encyclopedia of Knowledge, the proverb is a warning to pay no attention to the multitude. We tend to seek advice for all the choices we need to make but ultimately we can just look inside and find the answers we need. The brain is the most complex structure in the human body.
It creates different neurological pathways that will dictate our behaviour. It was coded as we grew up between ages zero and seven at the imprint stage of our life, as if we were sponges, absorbing everything. Then, between the ages of eight and 13, we were introduced to modeling as we copied what we saw, heard and felt. Later on, between 14 and 21, our relationships began to influence the formation of our values as we got introduced to socialization. These values are now ruling our decisions and behaviour at an unconscious level. When our actions are aligned with our values, we feel great and we know for sure that we are doing the right thing. It is when our behaviours don't match our values that we feel that we have a problem. Have you ever been in a position where everybody is telling you the same thing? You know what the "obvious" thing to do is and it looks great on paper, but your gut is telling you something else? Your "gut talk" comes from your values. And sometimes, even if it seems great on the surface, it is not aligned with your values. So, if you chose what’s really important to you without consulting your values, you will run into challenges and experience negative emotions. For example, there’s a great job available and you can have it – great salary, great prestige, etc. It looks great on paper. However, your most important value is your family and this new career will require that you spend most of your time away from home. Knowing what you value most will help you make a clear decision. Deciding without hesitation, without regrets, with full assurance. NOTHING IN EXCESS The second rule is quite general and it can apply to every area of our life. In the health and fitness part of our life, we can apply this rule to nutrition and exercise. The reason why most people are overweight and unhealthy is very often related to the portion size or the number of times they chose to indulge. We know the rules. If you eat well 80 per cent of the time, and eat healthy on a regular basis, you will be fine. Now, eating healthy doesn't mean eating
too much healthy food either. To my mind, you can eat too much quinoa and avocado, though I do consider them healthy. What about exercise? Can you exercise too much? If you keep your fitness as a whole and observe your exercise on a global health point of view, yes you can exercise too much. Too much impact exercise might affect your joints. Too much upper body exercise and not enough lower body work might create an imbalance in your overall strength and cause back problems or other related challenges. Too much cardio might put unnecessary stress on your heart. Too much exercise altogether could lead to fatigue if you don't compensate with the proper amount of nutrition. Now, who can relate to workaholism? If you’re the first one to arrive at the office in the morning and the last one to leave at night, you could easily be creating imbalances in your life. Work can be done in excess. Ask yourself, I’m working in search of what? Money. Most likely when you get more, you’re going to want even more. We tend to have this neverending search for more so that we can buy bigger houses to contain more stuff that we don't need. On the flip side, can you play too much? Could you be avoiding responsibilities and experiencing stress, as you are not able to make ends meet and indulge your whims? Indulging in fun can lead to addictions and all the negative emotions related to feeling helpless. LISTEN TO YOU Know yourself. Listen to your values. Eat well 80 per cent of the time, exercise to be healthy, work to make a living and obtain achievement, make money to buy what you need, not all that you want and enjoy life! Have fun! THE DIPLOMAT BEACH RESORT HOLLYWOOD’S ICONIC VACATION SPOT BY BONNIE SIEGLER

ince opening its doors in 1958, a veritable who’s who of the rich and famous has walked through the halls of The Diplomat Beach Resort in Hollywood, Florida. Frank Sinatra and his Rat Pack frequented the resort, as did the Kennedys, Reagans, Mohammed Ali, Tony Bennett, Mel Brooks and former U.S. Presidents Bill Clinton and George Bush, Jr. just to name a few. In fact, every elected U.S. president to date has enjoyed the amenities and luxury of The Diplomat. Guests have been entertained by the melodic sounds of Sinatra and Judy Garland, while laughter filled the ballroom with Bob Hope at the mic. Perfectly situated between Miami and Fort Lauderdale, the

iconic property just completed a US$100-million transformation, boasting 1,000 guestrooms and suites, 10 different culinary locations, two pools, an ultramodern spa and fitness centre and more than 200,000 square feet of meetings and event space. So, what has always been the draw for the rich and famous (plus those just looking for an ultra-vacation, as was the case in my recent visit)? “With year-round sunshine from the Atlantic coast to Intracoastal, The Diplomat is meant to create happy, genuine and memorable vacation experiences”, says Lauren Zieren, General Manager of the resort.
“We’re at the very heart of Hollywood but there is an array of activities guests can enjoy in the area while staying here. The Everglades, sea turtle excursions, world class art museums, luxury and outlet shopping and so much more.” The ideal location is 10 minutes from casino and nightlife at The Village at Gulfstream Park and 20 minutes away from dining on famed Las Olas Boulevard in Fort Lauderdale. But, as I always say, there’s no such thing as too much shopping. After a day of adding to the coffers of a few boutiques, and golf for my husband, I decided to take advantage of the resort’s Spa and Wellness, especially noting the variety of signature eco-friendly treatments offered. Their Holistic Hydration facial had my skin glowing while my husband opted for the healing Herbalistic Ritual Massage which incorporates Mary’s Nutritionals CBD Oil Massage and muscle freeze products that not only helped relieve his muscle tension and pain in his body after 18 holes, but also gave him an overall sense of well-being. “Our fit and wellness philosophy here means fitness is a mind, body and spiritual journey”, states spa director Shane Upson. While the resort offers many outdoor activities ranging from ocean kayaking to sandy beach volleyball, coming from Southern California, I am fully aware no amount of SPF could shield me enough from the day’s unrelenting sunshine. Instead, I rented one of the Trina-Turk designed poolside cabanas and read an old Dennis Lehane book. Okay, the sunrise beach yoga sounded like a plan to begin my second day, but I guess I just wasn’t ready to begin my next day
at dawn. A Pilates class later in the morning was more to my liking and timing. The outdoor Jacuzzi was a wonderful, relaxing treat at sunset. In fact, sunrise and sunset are themes displayed in the guestroom theme designs. “Sunrise rooms are modern, vibrant and refreshing with earthy tones that provide a calm atmosphere while sunset rooms present a more subtle, modern and organic design giving guests a front seat view to stunning sunsets”, explains Zieren. As you might have already guessed, sunrise is not my choice time of day. We opted for the sunset themed room with a view overlooking South Florida’s west horizon. Absolutely beautifully coloured sunsets. During our three-day stay at The Diplomat, I had the chance to experience an array of culinary delights. “We boast 10 new world class restaurant and bar concepts”, says Zieren. “Each exudes brand individuality, distinct spaces and experience.” Indeed, we had to try Monkitail by famed Chef Michael Schulson, which was awarded USA Today’s Best Hotel Restaurant and Best New Restaurant in 2017.
