IT’S THE MOST ABUNDANT TIME OF THE YEAR. Visions of holiday gatherings, travel, and sweet and savoury baked goods dance in my head like the sugar plums I will try to avoid. How do I approach this time of year? Dare I say with moderation? Moderate abundance sounds a bit like blasphemy, doesn’t it? But to me, moderation is not such a dirty word. You’ve probably heard a million times that you should not shop for groceries when you’re hungry. Well, it’s also a great hack for holiday parties. I drink a protein shake before I leave my house or on the way to events. Having a healthy protein drink – loaded with antioxidant berries and fruits - helps me to stick to only one or two of my mom’s famous crab hor d’oeuvres instead of 12 when I’m famished! Trust me, you’ll be glad you had a little something in your stomach. When I think about finding balance at holiday gatherings, it makes moderate exercise seem almost easy. I normally hit the gym five or six days a week when I am home in Los Angeles but for the holidays, I always travel across the country to see my parents on the East Coast. Finding ways to keep exercising in moderation seems like a better plan than missing important family time by leaving the house for the gym or just choosing no exercise at all. Instead, I look forward to long morning walks with my mom, catching up on our lives, while bike rides and beach time with my dad is the norm. When I was on location last year for the television movie, “Fiancé Killer,” I discovered great apps that take you through exercises that use your own body weight and take only minimal amounts of space. While you may not want to moderate your gift giving, there are still many ways to be generous and grateful without causing yourself anxiety. For me, that has often looked like New Year’s gifts or cards rather than Christmas. When my family and friends are bombarded with holiday gifts, a thoughtful alternative in the New Year is often more memorable for them and manageable for me. And, though I’d really love to find the time to make homemade chocolate covered strawberries for everyone, that would cause me needless stress. Patronizing a local small business works better for me and really reduces the stress levels. Plus, it brings abundant happiness to everyone else involved. Hope your holidays and the New Year bring you and your loved ones the same!

ow more than ever, women are fine-tuning their skincare and makeup routines to include better ingredients. This means no chemicals, toxins or synthetics. The makeup, skincare, shampoo and body lotions we use on our bodies can be harmful. These top 12 offenders found in everything from face washes, sunscreens, cosmetics

and more, have been linked to allergies, hormonal disruptions and cancer. While there are certainly lots of studies and differing opinions on the effects some of these toxins have on our bodies, I think we can all agree that by swapping some of our products with those that are more natural and nonsynthetic, would be a safe bet. Plus, your skin will be happy!

BHA AND BHT This ingredient is often found in some lipsticks and moisturizers. The National Toxicology Program classifies butylated hydroxyanisole (BHA) as “reasonably anticipated to be a human carcinogen.” In some studies, it has been reported to produce liver damage and interfere with thyroid hormone levels. It’s also found in exfoliators and some fragrances.

COAL TAR DYES (AMINOPHENOL, DIAMINOBENZENE, PHENYLENEDIAMINE) Coal tar, a byproduct of coal processing, is a known human carcinogen, according to the National Toxicology Program and the International Agency for Research on Cancer. Hair stylists and other professionals are exposed to these chemicals in hair dye almost daily. Europe has banned many of these ingredients in hair dyes.

FORMALDEHYDE Is a potent preservative also considered a known human carcinogen by the International Agency on Research on Cancer. Formaldehyde is known to be an asthmagen and neurotoxicant. This use has declined. But some hair straighteners are based on formaldehyde’s hairstiffening action and release substantial amounts of the chemical. So, stay clear!

PARABENS This is an ingredient most of us have heard of for quite some time. Parabens are preservatives used in skincare products to prevent contamination of products while they are sitting on the shelves. Although food and drug administrations have not deemed them to be fatal, according to the European Commission’s Scientific Committee on Consumer Products, parabens like propyl and butyl paraben and their counterparts, isopropyl and isobutylparabens, may disrupt the endocrine system and cause reproductive and developmental disorders. Look for ingredients that are paraben free.

SYNTHETIC FRAGRANCE Fragrances are in everything from shampoo to deodorant to lotions. Since it’s not Federal law, companies do not require them to list the chemicals in their fragrance mix. Recent research from the Environmental Working Group (EWG) and the Campaign for Safe Cosmetics found an average of 14 chemicals in 17 name-brand fragrance products, none of which listed them on their labels. Fragrances are among the top five contenders that cause allergies, including causing rashes, irritation and nervous system issues.

SULFATES Sulfates (sodium laurel sulfate) are commonly used surfactants, which are ingredients that cleanse the skin and hair in cleansers and shampoos but have been shown to cause or contribute to skin irritation. They can be a major disruptor of the skin’s natural oil balance, and cause acne.

TRICLOSAN Triclosan was very popular in the use of antibacterial products found in bars and liquids. However, it has been linked to thyroid issues, skin cancer and allergies. Now, because of its potential link to these health concerns, the FDA has banned soaps and other antiseptic products from using the ingredient in 2017.

PHTHALATES Phthalates are often found in nail polish and hairspray, deodorant and perfume and are meant to keep products soft and flexible. These chemicals have been known to cause endocrine disruption, headaches and respiratory problems. It’s advised that pregnant women avoid products with phthalates altogether. Look for products that indicate “phthalates-free” in their list.

OXYBENZONE Oxybenzone is one of the highest-risk chemicals found in sunscreen. Studies on cells and laboratory animals indicate that oxybenzone and its metabolites may disrupt the hormone system.

PROPYLENE GLYCOL According to the EWG, Propylene glycol is typically used as a skin-conditioning agent, however it’s been linked to allergy-induced conditions such as dermatitis and hives. PETROLATUM Petrolatum is mineral oil jelly (ex. petroleum jelly) that is often used as a barrier to lock moisture in the skin in a variety of moisturizers and also in hair care products to make your hair shine. However, although it’s been used for hundreds of years , without major effect on people, it can be hazardous if used in an unrefined state of processing.

H E ALTH NEWS COFFEE CAN HELP ROSACEA A new study has found that increasing your caffeinated coffee consumption can reduce your risk of rosacea, a chronic inflammatory skin disease characterized by flushing and redness. Caffeinated coffee is further beneficial because it’s a vasoconstrictor, meaning it reduces the rush of blood to the skin’s surface. The study also showed that caffeine is full of protective antioxidants and can help curb inflammation. It also said revealed that caffeine from coffee can help balance hormone levels that are associated with rosacea, including adrenaline, noradrenaline, and cortisol.

CALMING YOUR NERVES Traditional folk medicine says that the scent of herbs and plants can have health benefits including calming nerves and anxiety. In a recent study, new research from Kagoshima University in Japan is confirming that one fragrant compound present in lavender can lessen anxiety by stimulating the nose to pass signals to the brain. The study showed that the effect of linalool, a sweet-smelling alcohol that is present in essential oils of lavender, when tested in mice, showed that exposure to linalool vapor affects the brain through smell and is not absorbed into the bloodstream via the lungs. “We confirmed that the olfactory system [sense of smell] was essential for the linalool odour-induced anxiolytic [antianxiety] effects, using anosmic mice [without a sense of smell]. These findings give us a foundation towards clinical application of linalool odour for anxiety disorders.”

OMEGA-3 POWER This is According to a new study in the journal Clinical & Experimental Metastasis, Omega-3 fatty acids, such as those typically contained in fish oil and fish like salmon, may suppress the growth and spread of breast cancer cells in mice. According to lead author, Saraswoti Khadge of the University of Nebraska Medical Centre in the US, fatty acids stopped further delayed tumors from forming, and blocked the cancerous cells from spreading to other organs in mice. The researchers speculate that this might be because of the way in which omega-3 fatty acids support the body’s immune and anti-inflammatory systems. 30

CANNABIS AND CROHN’S DISEASE Cannabis oil has been shown to significantly improve the symptoms of Crohn’s disease and the quality of life of sufferers but not for inflammation. Speaking at UEG Week 2018 in Vienna, lead researcher, Dr. Timna Naftali explained, “Cannabis has been used for centuries to treat a wide range of medical conditions, and studies have shown that many people with Crohn’s disease use cannabis regularly to relieve their symptoms.” After eight weeks of treatment, the group receiving the cannabis oil had a significant reduction in their Crohn’s disease symptoms compared with the placebo group, and 65 per cent met strict criteria for clinical remission (versus 35% of the placebo recipients). The cannabis group also had significant improvements in their quality of life compared with the placebo group.

Nutrition has a greater impact on bone strength than exercise, experts say. Researchers at the University of Michigan looked at mineral supplementation and exercise in mice, and found surprising results: nutrition has a greater impact on bone mass and strength than exercise. Further, even after the exercise training stopped, the mice retained bone strength gains as long as they ate a mineral-supplemented diet. “The longerterm mineral-supplemented diet leads to not only increases in bone mass and strength, but the ability to maintain those increases even after detraining,” said David Kohn, a U-M professor in the schools of dentistry and engineering. “This was done in mice, but if you think about the progression to humans, diet is easier for someone to carry on as they get older and stop exercising, rather than the continuation of exercise itself.”

FRUITS AND NUTS According to a new study from the University of Illinois, diets rich in nuts, such as walnuts, have been shown to play a role in heart health and in reducing colorectal cancer. The study shows that the way walnuts impact the gut microbiome (the collection of trillions of microbes or bacteria in the gastrointestinal tract) may be behind some of those health benefits. Walnuts are just one in a line foods that contain dietary fiber and have interested scientists for their impact on the microbiome and health. Dietary fiber acts as a food source for gut microbiota, helping the bacteria to do their jobs; breaking down complex foods, providing us nutrients, and helping us feel full. The study also revealed. Fruits, vegetables, whole grains, nuts, and legumes are important plant sources of dietary fiber. While genes can also play a role in how someone responds to food— some people are genetically programmed to respond more readily to what they eat — they aren’t something you can change. But one thing you can control is what you eat. Different foods can help lower cholesterol in various ways. While some deliver soluble fiber, which binds cholesterol in the digestive system and pulls them out of the body before they get into circulation, others can provide you with polyunsaturated fats which help lower LDL. You can also use supplements to help you get the fibre you need.

HERE ARE SOME TOP FOODS THAT CAN HELP YOU LOWER CHOLESTEROL AND HELP YOU MAINTAIN A HEALTHY DIET:

• OATS. An easy first step to improving your cholesterol is having a bowl of oatmeal or cold oat-based cereal. A serving gives you one to two grams of soluble fibre. Nutrition guidelines recommend getting 20 to 35 grams of fiber a day, with at least five to 10 grams coming from soluble fiber. • BARLEY AND OTHER WHOLE GRAINS. Barley is touted as a great food for a reason. It packs a fiber punch which helps lower risk of heart disease. Try it in soups. • BEANS. Beans are especially rich in soluble fiber. They also take a while for the body to digest, leaving you feeling full faster. • EGGPLANT AND OKRA. These two low-calorie vegetables are good sources of soluble fiber. • NUTS. Many studies show that eating almonds, walnuts, peanuts, and other nuts are good for the heart. Eating two ounces of nuts a day can slightly lower LDL, and can be a great addition to your food plan. • VEGETABLE OILS. Using liquid vegetable oils such as canola, sunflower, safflower, in place butter, lard, or shortening when cooking can have a major effect on your lowering your levels.

• APPLES, GRAPES, STRAWBERRIES, CITRUS FRUITS. These fruits are rich in pectin, a type of soluble fiber that lowers LDL.

Red yeast rice extract is a form of fermented rice developed in China. Scientific studies show that aged garlic extract, which is rich in antioxidants, is more effective in boosting immunity, lowering cholesterol and protecting against cardiovascular disease, cancer, ageing, and drug toxicity. • SPINACH AND BROCCOLI. Spinach is loaded with fibre and lutein. According to studies, eating a half cup of spinach daily helps reduce LDL cholesterol levels as well as the risk of heart disease. Broccoli is another food that helps to lower levels. It has soluble fiber that draws cholesterol out of your body. • FIBER AND COQ10 SUPPLEMENTS. If you find it hard to get enough fibre from foods, fiber supplements can help boost your daily need. Two teaspoons a day of psyllium can provide about two to four grams of soluble fibre in one to two servings. tress is everywhere. And while a little stress is OK — and completely natural — a high level can wear you down and even affect your health both mentally and physically. For some, managing stress can be hard to manage, especially if someone doesn’t recognize the signs or causes. Your level of stress could be raised due to work pressure, an overload of schedules, challenging relationships or a fear of physical harm.

Stress consumes key vitamins and minerals. If you don’t replace them with the right foods and vitamins, anxiety and stress can worsen. While supplements aren’t meant to replace prescribed medication or other doctor-approved therapies, they can be helpful to maintain your symptoms. T

here are many different things you can do to help boost your health when cold and flu season hits, but the one ingredient many do not realize is a complete superstar when it comes to boosting your immune system is garlic. The benefits of garlic to health has been proclaimed for centuries. But recently, garlic (a.k.a Allium sativum) can boost a number of virus-fighting cells in your bloodstream. A recent study indicates that garlic enhances the functioning of the immune system by stimulating certain immune cell types, and finds that by taking aged garlic extract supplements it reduced the severity of cold and flu symptoms and that symptoms went away faster in those who took it than those who didn’t. Many consumers take garlic supplements as a preventive measure and often report an absence of colds and flu and their symptoms. Clinical trials are supportive, showing garlic to have a beneficial effect in the prevention, duration, and severity of upper respiratory infections. For example, in a recent study including a random, double-blind, placebo-controlled trial involving 146 participants testing the effect of 180 mg of a garlic powder supplement a day over three months, found a significant 37 per cent reduction in the number of colds and a 30 per cent reduction in the duration of symptoms in the group taking garlic compared with the placebo group. At the end of the 90-day study, 24 colds were reported in the garlic treatment the group compared to 65 in the placebo group, the total number of days of infection was significantly reduced (111 vs. 366), and the duration of symptoms in those who contracted colds was also significantly reduced (1.52 vs. 5.01 days). The results of this study support the benefits of garlic supplements to both prevent attack by the common cold virus, and to reduce the duration of symptoms in those that do contract a cold. In another placebo-controlled human study involving 120 healthy participants supplemented with 2.56 g/day of an aged garlic extract for 90 days during the cold and flu season, demonstrated that the reduced severity of the colds and flu reported among participants with dietary garlic supplementation could be at least partly attributed to their enhanced immune cell function. The immune system support from garlic warrants the intake of garlic-containing supplements to combat, if not prevent, cold and flu symptoms. VM

The relationship of the gut to the skin, referred to as the “gut-skin axis,” is one of the emerging areas of research that doctors are finding has a major correlation and impact on one another. When it comes to your skin, your diet is the most important factor in getting a clear complexion because your gut “microbiome,” the bacteria living in your digestive system and intestines. hether you were a “Charmed” devotee, daytime fan of “General Hospital”, binged on “24”, or caught episodes of “Blue Bloods”, “CSI”, “NCIS” and many other television series, you are familiar with actress Annie Wersching and her acting credentials. Born in St. Louis, Missouri, the mom of three, (youngest just born during this interview), Annie competed in Irish dance as a child and boasts of her ability to play the tin whistle….with her nose. She acknowledges her musical childhood has added to the creative talent she exhibits today, but gives most credit to her tomboy upbringing and a competitive nature, which has served her well in Hollywood. “I was a tree climbing, softball playing little girl”, says Wersching, who played catcher for the National Taco Bell All-Star Legends Celeb Softball league in 2009. “I never thought too much about my interests being boy things or girl things and I’m glad! I had quite a nice mix growing up.” Saying she didn’t give any gender bias to her activities, Wersching has always been very determined and driven to reach her goals and didn’t let anything stop her on this personal quest. “I have a competitive nature….verrry much so. I definitely want to be the girl in the bar that can hold her own at the pool table or dart board. And for sure, don’t tell me I’m going to lose because I’m a girl. That’s just adding fuel to my Aries fire.”

Not shy about admitting her spirited nature, Wersching says her athletic and competitive nature has been, and continues to be, a motivating factor to get to where she is in her professional life today. “When you’re up for a part as an actress, so much is out of your control,” she explains, “the look they want, the way you match up or pair up with other actors. All you can really do is bring your absolute best to the role and let the chips fall. As I’ve matured, I’ve gotten really good at letting things go as far as the acting world.” That said, Annie adds, “I’m probably more competitive athletically than I am artistically. I feel sports and dance growing up have made things such as stunts and fight scenes come pretty naturally to me on set. Stunt days are always the BEST days at work.” In realizing her personal growth and reflecting on her upbringing, Wersching’s happy, grounded and balanced lifestyle is owed to her philosophy of keeping physically active even if it’s a leisurely walk in her neighborhood. “It’s so important to stay active,” says the 5’7” busy working mother and wife. “It’s not only helpful physically, but it also makes such a difference emotionally. Even if it’s just a walk outside in the fresh air, it’s amazing how good I feel afterwards.” Knowing the endorphins will be flowing after a workout doesn’t make it any easier to commit, though. “Yes, it can still be such a pain to make myself do it. I find I do best in

situations and workouts that are not self-led. A lot of people prefer that, but I’d much rather play tennis or take a class where someone is leading me through rather than being in charge of my own self-motivation.” Not a yoga or Pilates gal, Wersching prefers a more high-paced atmosphere to break a sweat. “Punching and kicking…not sure what that says about me,” she laughs. “Also, I played tennis in school so I started playing again 18 months ago and that’s not only been fun for me, but also serves as a great workout. Before this pregnancy, I was playing on two different USTA teams and can’t wait to get back to that.” While concerns with meeting deadlines and fitting last minute tasks into her hectic schedule invite stressful situations, Wersching tries to find coping mechanisms in media comforts. “I’m a big music lover and love discovering new music and artists.” Whether the category is folk, Americana, indie or jazz, Annie’s playlist is a revolving door of talents. “I also absolutely love to read, but time for that seems harder and harder to find. I’m pretty sure I’ve been trying to finish the same book for the last six months. It seems the easiest chill time for me lately is binge-worthy TV. I love all the medical shows. I’m pretty sure I was a nurse or doctor in a previous life.” For daily fuel, Wersching makes sure to have fresh ingredients on hand, forcing herself to avoid a 12 year-

old’s diet of fast foods and sweets. “I always have fresh fruit on hand…so much fruit so that’s good. I like having string cheese, pasta, olives, chipd, and cookies around in the kitchen. Remember that tomboy we discussed earlier? She’s still lurking in my kitchen.” Wersching admits she’s not a big red meat eater anymore, opting for chicken and turkey here and there. It wasn’t a huge moral or dietary decision, it just happened naturally.” Pulling it all together at nighttime, the self-confessed sunset lover says there is no bedtime schedules in her home. “It depends upon the day. If I’m working or at home being a busy mom. I love a beautiful sunset.” She pauses, “but there’s something so magical about a beautiful sunrise and all the possibilities of the new day in front of me.” With a degree in musical theatre, one question remains: Would she ever turn to writing music and lyrics? “Possibly,” Wersching admits. I asked if she could sing a song that best reflects her as a mother, wife, actress and without hesitation she says, “’You Are My Sunshine.’ I feel like it’s a good outlook and philosophy for so many aspects of life. Throughout the day, try to be a ray of sunshine for someone, try to brighten someone’s day in even the smallest way. It’s something my mom was really good at…even during her toughest times, she was always able to exude such joy and sunshine. And I hope to do the same.” VM

GRILLED APRICOT SALAD

Flowering thyme, mozzarella, pink peppercorns & prosciutto SERVES: 4 TOTAL TIME: 25 minutes

Years ago, when I first learnt to appreciate the way Italians use fruit in salads, it changed my concept of a salad for good. It took it from a wimpy side dish to a true gastronomic experience. This recipe is about celebrating textures and brightness, and I think you’ll love it. You could swap in other seasonal stone fruit.

SALINA CHICKEN

Beautiful, scented soft aubergines & tomatoes with capers SERVES: 6 TOTAL TIME: 2 hours

Celebrating the flavours of the island of Salina, Nonna Marina inspired me to embrace the beautiful bounty growing in her back garden and create this dish, perfect for a feast. Sumptuous, comforting, melt-in-your mouth chicken, gentle spice and delicious, buttery aubergines. With a glass of cold white wine, it’s pure joy. INGREDIENTS: • 3 aubergines (750g total) • 1 x 1.4kg whole free-range chicken • olive oil • 2 cloves of garlic • 3 small fresh red chillies • 1 cinnamon stick • 4 sprigs of fresh woody herbs, such as rosemary, thyme, bay • 50g baby capers in brine • 2 red onions • 200g ripe cherry tomatoes • 50g pine nuts • 2 lemons • 4 sprigs of fresh basil DIRECTIONS: 1. Trim the aubergines, chop into random 5cm chunks and wedges, place in a large bowl and season generously from a height with sea salt. Put aside. 2. Joint the chicken. Drizzle all the pieces with oil, place in a large shallow pan on a medium-high heat, skin side down, to get golden on all sides, then remove to a large platter. Wipe the salt off the aubergines and add to the pan, turning until lightly golden on all sides. Remove the aubergines to the platter and reduce the heat under the pan to low. Peel and slice the garlic, prick the chillies and place both in the pan with the cinnamon, woody herbs and capers. Stir and fry for a couple of minutes while you peel and finely slice the onions, then stir them into the pan, too. 3. Cook for 15 minutes, or until starting to caramelize, stirring occasionally. 4. Preheat the oven to 180ºC . Squeeze the tomatoes in a bowl of water to remove the seeds – a fine nonna trick to prevent you getting splattered – then tear them into the pan. Put the chicken and aubergines back in, drizzle over any resting juices, then pour in 600ml of water. Sprinkle over the pine nuts, then squeeze over the lemon juice. Cook at the bottom of the oven for 45 minutes, or until golden. Pick over the basil leaves and serve with a nice big bowl of lemony couscous. INGREDIENTS: • 8 ripe apricots • 8 sprigs of fresh thyme, ideally the flowering kind • olive oil • 2 tablespoons white wine vinegar • extra virgin olive oil • 1 big pinch of pink peppercorns • ½ a red onion • 2 large handfuls of salad leaves, such as escarole, Castelfranco, wild rocket • 4 slices of higher-welfare prosciutto • 125g ball of mozzarella cheese • 1 lemon DIRECTIONS: 1. Put a griddle pan on a high heat. Halve and destone the apricots then, on a platter, toss with half the thyme sprigs and 1 tablespoon of olive oil. Place the dressed fruit cut side down on the hot griddle for 6 minutes, or until charred and caramelized, turning halfway. Meanwhile, pour the vinegar on to the platter with 2 tablespoons of extra virgin olive oil. Crush and crumble the pink peppercorns over the platter, then peel, very finely slice and sprinkle over the onion, giving it a little mix in the dressing to lightly pickle it. Pick through your salad leaves, tearing or slicing the larger ones. Add to the platter and gently toss together, then season to perfection. Tear the prosciutto and it drape over in waves. Gently tear open the mozzarella, season with sea salt, black pepper, a fine grating of lemon zest and a few drips of extra virgin olive oil, then tear over the salad. Place your grilled apricots in and around the salad, sprinkling over any crispy thyme leaves and the remaining leaves and flowers. 2. Drizzle with a tiny bit more extra virgin olive oil, then serve. BUTTERNUT SQUASH PIZZA SERVES: Makes one 14-inch pizza 1 portion (½ batch) Perfect Pizza Dough*

Butternut squash is one of those vegetables that is often overlooked but is actually a very versatile ingredient. In the past, we’ve used it in everything from mac ‘n’ cheese to a tart filling. But we prefer it this way: as a creamy, luscious base for this delectable winter-inspired pizza. BUTTERNUT SQUASH PURÉE: • 1 medium butternut squash, halved and seeded • 1 tbsp extra virgin olive oil • 2 tsp Herbed Salt** • 2 garlic cloves TOPPINGS: • 1/3 cup red bell pepper • 1/3 cup yellow bell pepper • 1/3 cup green bell pepper • 1/4 fennel bulb, thinly sliced • 3½ oz pancetta, thinly sliced • 1/2 cup fior di latte cheese • Microgreens, to garnish (optional) • Fennel fronds, to garnish PREPARE PIZZA DOUGH. 1. Make purée: Preheat oven to 400°F. Line a baking sheet with parchment paper. 2. Score the flesh of the butternut squash and drizzle with olive oil. 3. Sprinkle with herbed salt. Tuck a garlic clove inside each squash half and place cut-side down on the prepared baking sheet. Bake in preheated oven for 30 minutes, or until fork-tender. Remove from oven and let cool at room temperature for 5 to 10 minutes. Using a large spoon, carefully scoop out the cooked squash and garlic and transfer to a food processor. Blend until completely smooth. Set aside until needed. 3. Grill peppers: Heat your barbecue or grill pan to medium-high. Grill bell peppers on all sides until they’re nice and charred. Transfer to a cutting board and cut into large pieces, discarding seeds and veins. Set aside. 4. Assemble pizza: Preheat oven to 450°F. Grease a pizza pan or baking sheet and set aside. 5. Stretch dough out to desired pizza-base size and place on prepared pan. Spread the butternut squash purée over the dough, leaving room around the edge for the crust. Top with charred bell peppers, sliced fennel and pancetta. Bake in preheated oven for 15 to 20 minutes, until the crust is golden and crispy. 6. Remove the pan from oven and top pizza with torn chunks of fior di latte. Bake for another 2 to 3 minutes, until cheese is melted. Remove from oven and top with microgreens (if using) and fennel fronds. Let cool for 1 to 2 minutes before serving.

INGREDIENTS: • 1/2 cup fresh ricotta cheese • 1/2 cup mascarpone cheese • 1 large egg yolk • 2 tbsp fresh lemon zest • 1 tsp fresh thyme leaves • 1 tsp flaky sea salt • 10 sheets of phyllo pastry, thawed if frozen • 1/4 cup olive oil or melted butter • 1/2 lb assorted heirloom tomatoes, cut into ½-inch-thick slices • 2 to 3 tbsp balsamic crema (Tip: Balsamic crema is reduced balsamic vinegar and has a rich, syrupy consistency. You can find it in most grocery stores, or make your own by simmering balsamic vinegar on medium heat until it‘s reduced by about half. Keeps in an airtight jar for up to 3 months.) • 1/4 cup fresh basil leaves, to garnish DIRECTIONS: 1. Preheat oven to 375°F. Line a large baking sheet with parchment paper. 2. In a medium bowl, mix together ricotta, mascarpone, egg yolk, lemon zest, thyme and salt. Stir until well combined, then set aside. 3. Using a pastry brush, coat each layer of phyllo pastry with olive oil, stacking one on top of the other on the prepared baking sheet until you have 10 layers. 4. Spread the ricotta and mascarpone filling across the center of the top layer, leaving a 1-inch border all around. Top with a single layer of sliced tomatoes. Fold up the edges of the phyllo, all the way around. Brush the top edges with a bit more oil. Bake in preheated oven for 35 to 40 minutes, until golden brown around the edges. 5. Transfer to a wire rack and let cool for 5 to 10 minutes (see Tip). Drizzle with balsamic crema and top with fresh basil. Cut into squares and serve. Tip: If any excess liquid remains on top of your tart after baking, do not fear! Simply blot it with clean paper towel to remove.

BUTTERNUT SQUASH SOUP with Chive Oil and Spiked Sour Cream SERVES: 12 TOTAL TIME: 20 minutes

INGREDIENTS: • 2 large butternut squash, halved lengthwise and pitted • 1 granny smith apple • 1⁄2 yellow onion • 8 sage leaves • 1 tsp. cinnamon • 2 tsp. maple syrup • 2 1⁄2 cups low sodium vegetable broth or water • 1 1⁄2 tsp. sea salt • 1 tsp. white pepper • 1⁄3 cup heavy cream • 1⁄3 cup toasted pumpkin seeds • 2 tbsp. unsalted butter, melted CHIVE OIL: • 1 bunch fresh chives • 1⁄2 cup olive oil • 1⁄4 tsp. salt SMOKED SOUR CREAM: • 1 cup sour cream • 1 tbsp. fresh lemon juice • 1 tsp. lemon zest • 1⁄4 tsp. liquid smoke • 2 tsp. finely chopped parsley • 1⁄2 tsp. sea salt

DIRECTIONS: 1. Pre-heat oven to 425 degrees Fahrenheit. 2. Lay squash cut side up and brush with one tablespoon melted butter, sage leaves and season with salt and pepper. Roast until fork tender (35 to 45 minutes). 3. Pre-heat a medium pot or Dutch oven on low to medium heat; add remaining butter. Dice apple and onion, then add to pot with cinnamon, maple syrup and sauté. 4. When squash is cooked and cooled, scoop out flesh with a large spoon and add to pot. Add stock or water and bring to a boil. Reduce heat to low medium and simmer for 15 to 20 minutes. 5. Use an immersion blender or traditional blender to blend soup. If using a blender allow steam to escape through the lid while blending. For an extra silky texture, pass the soup through a fine strainer. Adjust seasoning, if necessary, and stir in heavy cream to finish the soup. CHIVE OIL: 1. Bring water to boil in a small saucepan. 2. Add bunch of chives for about 10 seconds and remove to an ice bath. 3. Roughly chop and add to a blender. 4. With blender running on medium, slowly pour in oil and salt until desired consistency is reached. 5. Remove to a squeeze bottle or appropriate container. SMOKED SOUR CREAM: 1. Combine all ingredients and place in a squeeze bottle or appropriate container.


CORN CHOWDER with Sage and Pancetta

SERVES: 6

Recipe from “VIVA Fall 2016”

INGREDIENTS: • 4 thick slices pancetta, cubed • 1⁄2 large onion, diced • 8 fresh sage leaves cut into thin strips • 6 cobs corn • 2 russet potatoes, diced • 2 cups chicken stock • 1 cup cream • Several sprigs fresh thyme • Salt and pepper to taste DIRECTIONS: 1. Grill shucked cobs of corn until they begin to darken. 2. Heat olive oil in pan and sauté cubed pancetta until golden. Set aside. 3. Add diced onion, diced potato and corn, stirring until coated in the leftover fat. 4. Sauté until onion becomes translucent. 5. Add chicken broth and fresh thyme. 6. Simmer until potatoes are tender, about 15 minutes. 7. Purée mixture. 8. Sauté sage in a small saucepan with a drizzle of olive oil until slightly crispy. 9. Add cream, sage and pancetta, adjusting seasoning as necessary with salt and pepper.

FRESH PEA, MINT & COCONUT SOUP SERVES: 4 TOTAL TIME: 25 minutes

INGREDIENTS: • 1 tbsp. coconut oil • 1 onion • 3 cloves garlic, minced • 1 tsp. fresh ginger, minced • 1 tbsp. lime juice • 1 tsp. lime zest • 500 g shelled peas, or thawed frozen peas • 1 1⁄2 tsp. sea salt • 3⁄4 tsp. white pepper • 1 tbsp. fresh chopped mint • 2 tsp. fresh chopped cilantro • 1 1⁄2 cup vegetable broth (low sodium) • 1 1⁄2 cup coconut milk • micro greens (optional) • cold pressed olive oil (optional)

DIRECTIONS: 1. In a saucepot on medium heat add coconut oil. 2. Rough chop onion and add to pan with salt. Sweat and reduce heat if necessary. Add garlic and ginger, stir. 3. Add lime juice, zest, peas, mint, cilantro, vegetable broth, coconut milk and bring to a simmer for five minutes. 4. Remove from heat and blend with a hand blender or Vitamix. WHAT’S IN YOUR FRIDGE: SARA BEDERMAN OCCUPATION: Interior Designer, Sara Bederman Designs. WHAT IS YOUR NUMBER ONE COMFORT FOOD? I love to make a simplified version of huevos rancheros. I scramble eggs, top it with avocado and eat it along with my favourite tortilla chips and salsa made by The Mad Mexican. I have three daughters, so my biggest challenge is planning meals our girls and my husband will all enjoy. WHAT KEEPS YOU EATING A BALANCED DIET? I feel at my best when I eat well. I don’t like heavy salt or sugar (with the exception of birthday cake!). I like fresh food with simple seasoning. If I want something more sophisticated, we will plan to go out to one of our favourite restaurants in Toronto. ANY FOOD DISLIKES? I really like to avoid blue cheese, goat cheese or lamb. ANY FOODS YOU’VE OMITTED FROM YOUR DIET? I don’t omit foods, but I focus on having a variety of foods overall and of course definitely eat some more often than others. I do not eat meat frequently, if at all WHAT MUST YOU ALWAYS HAVE IN YOUR FRIDGE? Fresh fruit and vegetables are a must in our fridge. Whole milk and maple syrup are essential for my morning coffee and we always need eggs in the fridge in case we need a simple and easy high protein snack or meal. WHAT ARE SOME OF YOUR GO-TO MEALS? I love to serve and eat salad so we set up a family-style salad bar where we all customize our own salad combinations. It is fun, everyone gets exactly what they like. I also like to have homemade marinara sauce on hand so we can enjoy a nice simple pasta dinner, and grilled chicken breast with quinoa is another great meal.

WHAT’S YOUR FAVOURITE DISH OR FOOD TO EAT YEAR ROUND? Salad, salad, salad! And, preferably chopped salad. I love chopped salad. I add in all kinds of ingredients to make it a meal. Things like beans, nuts, grains like quinoa or farro, chopped veggies, avocado and even fresh or dried fruit. Then, I will top it with a piece of grilled fish. WHAT IS YOUR FAVOURITE MEAL TO MAKE FOR GUESTS IN YOUR HOME? We like to entertain and serve our guests fresh and simple clean foods. We will often serve grilled chicken or fish with roasted vegetables and a quinoa, kale or arugula salad. WHAT IS YOUR FAVOURITE INGREDIENT TO COOK WITH? I enjoy cooking and experimenting with a variety of different types of olive oils. WHAT HAVE YOU BEEN BUSY WITH OVER THE LAST YEAR? This past year has been a very busy one. I recently opened a new design studio and I”m now working on a variety of creative design projects. I have enjoyed spending time riding my horse and as well, having children always has kept me very busy. WHAT’S NEXT FOR YOU? I don’t like to coast. I really like to dig in and challenge my creativity and that of my team. I am always looking for increasingly challenging design projects and excited to be working expanding my business ahead. s stress keeping you from accomplishing your goals? Here are some tips on how you can relieve stress by preparing your busy week with a checklist. We know how hard it can be to juggle work/life balance. Factoring in your work duties with home life activities, meal plans and workout schedules can be a daunting task that leaves many people feeling overwhelmed and often defeated when they don’t accomplish what they set out to. “I think a lot of people take on too much and don’t know how to slow it down to ensure they’ve allowed themselves time for all the activities they’ve got going on in their lives these days,” says Dennise Conforti from Professional Organizers in Canada. “We have a lot of clients and business individuals that don’t know how to plan properly for their upcoming week and we felt that it was important to give them tips on how to plan so that their weeks could go smoother and that could help relieve anxiety so they can have a better week with their families and individuals.” Not planning properly can lead to high stress and anxiety. But there are ways you can relieve stress by completing tasks, schedules and everyday life in a simple, organized way. “A lot of the reactions I see with individuals and their families is that they tend to get overwhelmed very easily, they are running late a lot of the times and I find that their health starts to fail, their constantly getting sick and a lot due to the stress of not being able to meet the demands of day-to-day life. And, by helping people slow down a bit and showing them how they can plan and prepare a bit better they start to see that things get better moving forward,” Conforti says. “I think checklists are wonderful for some families. It can help things off of mind so that you’re not weighed down by all of these “to-do” things in your head which can then make you feel more overwhelmed because you’re trying to remember that you have X, Y and Z to do but you’ve got so many other things going on. A list can help you prioritize things and give you ease of mind.” Sound too simple? All you need to do, says Conforti, is to take about an hour on Sunday to whip up a plan or schedule for the week and it will make all the difference. “I think Sunday is a very important day to set up the week because we’re so busy throughout the week and when Friday comes, you’re so exhausted and you really just want to relax and you don’t want to think about the next week. On Saturday’s, families tend to use it as their shopping days and “get-togethers.” Sunday seems to

be the perfect day to tie loose ends and to take an hour to make checklists or a plan for the week. You can then relax with ease for the rest of the evening,” she says. HERE ARE SOME SUNDAY NIGHT ROUTINE TIPS FROM PROFESSIONAL ORGANIZERS IN CANADA THAT WILL HELP KEEP YOU ON TASK THROUGHOUT THE WEEK AND RELIEVE STRESS:

Go through your day planner and check what next week looks like. Check all your appointments to make sure that you’re not double booked and ensure that you’ve allocated enough travel time (if required) and include “buffer time” to arrive calm, cool and collected.

Evaluate and prioritize your To-Do list (and maybe set calendar alerts in your phone for ‘must-remember’ items or appointments). Plan to get your hardest/most timeconsuming tasks done early in the week. That way, as the weekend gets closer, you won’t feel as if you’re playing catch up. Use an app to capture ideas and take away the stress of having to keep everything in your head.

Do a weekly shop and plan out your meals for the week (or use an online grocery shopping site and arrange for delivery or pick-up). This will ensure that you have everything you need on hand when it comes to preparing meals throughout the week.

Having gone through your day planner, you will have a clear idea of what you are doing each day, so you will be able to plan your clothing choices in advance. Arrange your outfits on hangers and place them in a specific area of your closet. If you have kids, you can sort out their clothes for the week as well.

Schedule time for yourself. And not just as part of your Sunday routine. Look at the week ahead and schedule in time for yourself (a visit to the gym, time with friends, etc.). Your brain and body will thank you. Treat this time as if it is as important as a business development meeting and schedule your other appointments around it. This is key to staying sharp and focused. VM

HEALTH RECOMMENDATIONS: Sebastian is to wear special compression socks every daily, made-to-measure at a clinic every four months to keep up with his pace of growth. Also, it is recommended we perform special lymph massage on his legs and feet every evening for around 15 minutes at a time before Sebastian goes to bed. During sleep, Sebastian is to wear special compression bandages that are applied to his legs and feet every evening. THE RESULTS: Although there is no cure for this rare disease, by following the medical recommendations of compression socks and vigorous lymphatic massage, the condition will not deteriorate. 68

I

n my experience working in the organic and natural cosmetics manufacturing business for over 25 years, currently with the brand Tints of Nature, an organic, natural and sustainable product range, one of the biggest challenges I’ve seen is with the use of palm oil. Over the years it has been my goal to guarantee that no palm oil products find their way into our supply chain and ultimately into the finished products. Through the investigation of the palm oil industry, it has become increasingly obvious to me, and my team, that palm oil production is one of the most destructive and damaging agricultural practices that currently exist, especially its destruction of the forest and wildlife. Over the past few years, we’ve supported the charity International Animal Rescue and, in particular, their efforts in Borneo to protect the Orangutans and the natural forest from palm oil production, poaching and illegal logging. The work that is being carried out there is vital if we are going to have any hope of saving Orangutans and other forest creatures that are essential to the ecosystem. I have travelled in the regions of Malaysia and Indonesia and have seen first hand the devastation caused by palm oil plantations and mono-agricultural systems. They not only rob the forest of wildlife, but they also devastate the indigenous population that rely on them for their habitats. I realized I had to do something more to help. So, in December 2017 when I was sitting down to write my yearly goals, I realized one of them included to raise money for a worthwhile cause. Then, in early spring I watched a documentary made by the BBC called The Red Ape: Saving the Orangutan. This documentary moved me and highlighted the conservation struggle going on in Borneo to save these magnificent creatures. I decided to raise the money for a charity called International Animal Rescue (www.internationalanimalrescue.org).

The plight of the orangutan in Indonesia has reached a critical point, with the survival of the species now under serious threat. Animals are suffering and dying because of the systematic destruction of the rainforest, primarily for palm oil production, particularly in Kalimantan in the Indonesian part of the island of Borneo. When I told a group of fellow business owners my plan to raise money through a fitness event, they were all enthusiastic about it and decided to join me on my quest to ride from the furthest westerly point of England, starting in Land’s End, to the furthest east end in Dover. This would cover a distance of 675 km with 7,900 meters or 26,000 ft. of climbing. The challenge was to complete the ride in six days averaging over 110 km or 70 miles per day. For the ride, we set off from Land’s End at 8:30 a.m. on September 21, 2018, and headed east across the south west of England, through to Exmouth, Devon, Dorset, Shaftsbury through to Winchester, and our final stop in Dover, Kent. On our last day in Dover, weary but elated that we had accomplished our goal and raised a substantial amount of money for charity. We had ridden over 700 km overcoming weather including rain, wind and uphill climbs, and slight map reading issues along the way. As I sat sipping champagne and watched the sun go down and the White Cliffs of Dover slowly turn a hazy red, I felt a true sense of accomplishment and pride in what we had done. No injuries, no accidents. Just a great experience, friendship and, most importantly, raising $2,250 CDN for the crucial work being done to save the Orangutans. VM

HOW TO GET RID

OF

MENTAL PAIN

W

hen thinking about pain, we usually refer to the physical body. Your mental pain also needs to be addressed. Our own limiting beliefs can be compared to chronic pain that often becomes part of who we are and we think we are stuck with it. Your unconscious mind is used as a personal assistant. Everything you say and think is written down and executed like an order. Here is how to change a limiting belief that doesn’t serve you anymore. PUT IT BEHIND YOU The first step to change is to linguistically start talking about the pain that you want to change, in the past tense. For example, let’s say you think of yourself as being stubborn. The voice inside your head (your logical mind) says, “I am so stubborn.” Linguistically, you can start the transformation process by saying, “I used to be so stubborn.” Unconsciously, as you speak of the characteristic as being in the past, you will start to believe that it is actually in the past. Which is totally true. You used to be stubborn. What this implies is that it is now over and that it is behind you. This affirmation will still feel true. The next step is to follow this affirmation with a progressive statement. PROGRESSIVE STATEMENT Positive affirmations won’t work if, when you say them out loud, they feel untrue. For example, when I work with clients going through grief, they work on creating positive statements that feel true to them. For example, I am working with a couple who have lost their daughter. This is a terrible situation that no parent should ever have to experience. There is no way they can

truly believe a positive affirmation worded like, “I am happy and excited about life!” Right now, their reality is very much the opposite. The same applies to people who are excessively overweight. They will likely have difficulty in looking at themselves in the mirror and saying, “I am thin, svelte and I love my body.” Progressive statements are used to replace an old unwanted state, characteristic or behaviour. They usually start with “I am in the process…” or “I am willing to learn how it feels to…,” which would give them permission to be working towards the next level. For example, the couple would say, “I am in the process of learning how to love life again and be happy with my spouse and my son.” Yes, they also have another son to live for. The overweight person would say, “I am willing to learn how it feels to love my body. I am in the process of becoming thinner.” A progressive statement regarding your past characteristic stubbornness would look like, “I am willing to learn how it feels to be open to new ideas,” or “I am in the process of opening myself to new ways or different things.” Repetition of the progressive statements will allow you to start programming your personal assistant with different ideas that will soon become your new reality. NEW SERVING BELIEFS & NEW IDENTITY After a few months, you will want to create new serving beliefs for yourself and start acting upon your new identity. You transition from the “I am willing to” or “I am in the process of ” to the “I am” statement. Eventually, you will start repeating to yourself, “I am open to new things,” “I love my new identity of being flexible and open to different ideas,” and “I am easily adapting to any situation.” VM

atte black finishes have been in the design spotlight for most of this year. Designers have been using black fixtures and finishes for a few years now, but it’s finally catching everyone’s attention and products are finally becoming readily available. If you’re looking to update your home decor in 2019, especially your bathroom, matte black may be the perfect choice for you to consider. Matte black finishes are showing up in various forms of lighting, hardware and plumbing fixtures. It pairs well with just about anything and I love mixing it with other metals. The black is by far my favourite available in gloss or matte finish. Their latest collections of open concept vanities like the Metallo Quartz washstands add the perfect touch of black and add an overall visual statement in any bathroom space. Using black in your home décor is not only a timeless classic, but it also grounds the eye in any space. Look at using black slate tile or a great porcelain hex tile in a flat back finish. This is a look I adore and will balance light walls and colourful fabrics in any space. My Designer Tip: Remember to use the rule of repetition. If you add black to the floor tile or an area rug, make sure you pick up the colour by repeating it elsewhere throughout the space for continuity. So, whether you are planning to remodel your home or bathroom or you’re simply adding some small decorative accents, consider adding in a few elements in black. It’s bold and sassy and commands your attention. You might just stay a little ahead of the design curve while you’re at it! VM
