How Sweet A fact you may not know: our associate editor Stacey McLachlan was a certified beekeeper before she came to Western Living. Four years working at the Honeybee Centre just outside of Vancouver made her a bit of an expert—just ask her about the difference in tasting notes between blueberry, buckwheat and clover honey, and she’ll get as detailed as an oenophile. (And she’s a bold one: that’s her in the photo below, sporting a bee beard.) As you’ve likely read, our Canadian honeybee population is in crisis: die-offs are reported everywhere, and in some areas the figures are shocking. (In Ontario, for example, 58 percent of bee colonies didn’t survive the winter—more than twice the typical average loss.) The causes are a combination of a particularly hard winter and industrial pesticides that have taken a toll on one of the most important (perhaps the most important) insect populations on the planet. This issue, in “The Sweetest Thing” (page 71), we shine a spotlight on local purveyors who are working to protect the hives, while our resident expert provides an education on everything you wanted to know about bees and honey (the difference between raw and filtered, for example, or the benefits of bee venom therapy). And, of course, it’s all anchored by gorgeous, summery recipes from Julie Van Rosendaal that focus on our favourite sweet treat. I hope this issue may even inspire you to offer a little helpful boost to the bee population this summer—whether it’s a simple step like planting pollen-rich plants like lavender, zinnia and bee balm, or, for the more ambitious, becoming a backyard beekeeper. (Many beekeeping organizations provide instructional courses.) Bee beard, optional.

Architect of Fun Paul Koopman brings a sense of play to Saskatoon.

“Trying to introduce delight into architecture has been a preoccupation of mine,” says Paul Koopman. It’s not surprising that the Saskatoon architect is focused on bringing a little whimsy into his work: when he’s not designing modern structures, he’s painting, drawing (“Drawing is a way of thinking,” he says) or playing the ukulele—art for art’s sake, he says. Koopman’s modern architecture takes inspiration from the city’s expansive prairie landscape and natural light—the Edge, a residential development for the inner city, is spacious and fitted with large cascading windows, a reflection of the openness of the plains. Prairie Wind, a landmark that celebrates Saskatoon’s 100th anniversary, is inspired by tall grass moving in the wind. Koopman’s work is reshaping the city he loves. “There isn’t an established culture for architecture in Saskatoon, but because the city is still young, there’s so much opportunity,” he says. “There’s a real practical-ness to people here. As long as you can tap into that mentality, there’s opportunity to do good work.”—Nisha Ranu The Next Step “There are always questions like: ‘Is it buildable? I think many architectural lessons have actually come full circle. One of the things that happened, and it always happens, is that you have a reaction against what went before. Things are new, then they’re oldfashioned, then old and ugly, so we want to get rid of them because we can do better. But now, things that were totally disliked in the ’50s and ’60s are getting attention today. You can see that in the Vancouver Special—the houses were originally very popular, but in the early ’80s, we couldn’t get rid of them fast enough—and today, they’re the coolest house ever and people are starting to restore them. It can be easy to go overboard when building your own dream kitchen. But for Edmonton interior designer Melissa Ennis, it was all about balance: natural wood textures that soften harder lines for a cool West Coast vibe; bargain finds like the oversized pendant lights and slick bar stools that complement pricier pieces for a satisfying mix of high and low; and reflective elements, such as rain glass inserts, penny-round backsplash tiles and polished white quartz countertops, that ensure an open and bright feel despite a lack of windows. “I’m not a super morning person, so I need all the light I can get!” Ennis laughs. Take advantage of dead spaces in the walls to create sculpture niches. When the homeowner opts to take a long soak in that Hydro Systems bath, she won’t just be staring at the (albeit lovely) silver walls. Mitchell punched into the archway over the bath, creating pockets in the walls for two sculpture niches.

Pay careful attention to the placement of your sconces. There may be no room more important than the bathroom for proper lighting. “You want lighting to be equally spaced in the middle of where you’re standing,” explains Mitchell. “If you have light hitting you on one side, you start to look different, and it affects how you do your makeup.”

W

hen designer Kevin Mitchell first toured with the homeowner around her newly purchased home, it didn’t go well. “She sat in her front stairwell and put her head in her hands,” says Mitchell, who works at Douglas Cridland Interior Design. “She said, ‘I’m having major buyer’s remorse. I feel like I’m in my mom’s house.’” This bathroom, for example, featured bow-front vanities with mahogany wood and traditional, ogee-edged granite; a built-in tub deck was paired with a decorative Roman tub filler. “She kept repeating, ‘It’s too traditional, and I’m not a traditional person,’” says Mitchell. The goal, he says, was to get the space feeling a little more modern without destroying the traditional architectural elements in the house—that great archway over the bath, for example. In the bathroom, the general layout would stay the same, though Mitchell carved out a few more feet for the shower from an adjacent laundry room, making it large enough for two. And the client was more than game to get creative in the design of the room. “She loved the idea of it being really unique,” he explains. To wit, he created a one-of-akind plaid tile design for the shower, and covered the entire room with silver leaf—a glittering surface that will change over time. “It’s a living patina,” explains Mitchell. “If you replace a square, the sheen will be a little different, but it will add to the effect over time. The way it looks right now isn’t necessarily the same as how it will look a year from now.” SEE SOURCES

Include a seat in the shower—but don’t forget to warm it up. It’s one of Mitchell’s signature moves: including radiant heating in the bench in the shower, perfect for when you want to take a little longer and enjoy the steam.

Keep sconces at 65 inches above the floor. It’s a natural height for lighting that won’t create shadows on the face for most people—the last thing you want as you’re getting ready for the day.

Bring the counters up a couple of inches. While standard counter height is 32 inches, taller feels better in the bathroom, where you’re likely to bend over the sink to wash your face.

ith its art deco-inspired cabinet designs and sculptural clawfoot tub, this Calgary bathroom evokes Old Hollywood—but it’s also suitably planned for its family of four: designed by Allison Grafton and Lindsey Zugelder of Rockwood Custom Homes, the house is home to a couple and their twins. An elegant built-in vanity creates a dedicated space for beauty routines (complete with a plush, sheepskin-topped barrel seat), while the oversized shower is perfect for mom and the twins (young enough to need help for a few years still). The travertine-tiled floor stays warm on the feet, thanks to in-floor heating (which, naturally, rises up under the shower bench, too), and, perhaps best of all for bleary-eyed mornings, the absence of a curb between the main room and the shower prevents stubbed toes and keeps sightlines clear. But lest we get too practical here, there’s also that stunning Ann Sacks tile insert in the shower wall, framed like the artwork that it is. And, finally, that lovely bathtub, spotlighted by a Barbara Barry pendant light overhead, offers the ultimate in luxe-yetpractical design: it’s perfectly positioned to take in the view of the mountains beyond.

Make a large space feel intimate with a darker ceiling. The homeowners have two young children, so the shower space was designed to be large enough for mom and the kids to get ready in the morning. The darker tiles on the ceiling help the large space feel cozy.

Do you really need a bathtub? “Almost everyone loves a walk-in shower over showering in a tub,” says Falkenberg. “If you really want a tub, put it in a special place that is both beautiful and relaxing.”

A

fter schussing down snowy slopes or kicking up gravel on singletrack, it’s sweet to hit the spa—and even sweeter if that spa is at home. That’s what the homeowners of this Whistler townhouse, just up the slopes from the Blackcomb gondola, experience when they head home to a luxe master bathroom. Designers Chad Falkenberg and Kelly Reynolds transformed the dated home into a lavish mountain getaway for the Vancouver-based homeowners, whose main directive to the design duo was to open up the space and maximize the light and connection to the stunning scenery outdoors. So they went Scandinavian. “We call the look Canadian Nordic, which is a departure from the traditional frontier look of raw fi r posts and beams that Whistler is known for,” says Falkenberg. Yet homage is paid to that old-school, log-cabin vibe with knott y oak flooring across one wall—a surprisingly sleek touch that Falkenberg describes as Canadian casual. A light, airy palette typical of Norway, Sweden or Finland balances that wood, and white porcelain tile on the other walls and floor creates continuity in a space that’s all corners and angles. “We embraced the original vaulted

ceiling and windows and painted them white, which really maximizes the space,” says Falkenberg. The brightness continues with matte-fi nish white granite that mimics honed marble but is stain-resistant, easy to maintain and super-practical. Other no-nonsense elements include hand sprayers in both the tub and shower for twice the cleaning power post-outside play, and medicine cabinets hidden in the mirrors above the sinks to provide easy-access storage at eye level. And, being a vacation home, there’s also open storage and surface space for weekend toiletry cases. Of course, double sinks are de rigueur: “In a resort town like Whistler, it’s important to spend more time outside than waiting in line for the bathroom,” says Falkenberg. The design-savvy homeowners also requested Dornbracht Tara sink faucets, known for their German engineering and gorgeous lines. A Nelson Bubble pendant lamp adds another designer touch along with spa-like ambience. Combining that with dimmable overhead recessed pot lights and simple lighting above the vanity means the mood can shift from task to relax. As one does in Whistler. SEE SOURCES

Don’t feel you have to choose between shiny or matte finishes. Shiny materials tend to feel formal, while matte is more casual and natural. Here, the bathroom is mostly matte—stone, tile, wood and paint— offset with polished chrome for a touch of sophistication.

This is a vacation home, so the goal is relaxation and rejuvenation. “The space feels light and refreshing, which makes it feel like stepping into a spa,” says Chad Falkenberg.

Disguise the shower drain and you’ll get a more comfortable floor. You’ll have to look closely to spot the drain in this South Pender Island bathroom, designed by Tanja Hinder and Carrie McCarthy of Marrimor: it’s just two thin lines running along the floor. But the simple concept pays off: the floor of the steam shower is comfortable underfoot, perfect to spend as much time as you’d like in there.

Take advantage of natural light. When the homeowner was renovating the upper level of her home, designer Negar Reihani of Space Harmony suggested she position the ensuite shower under the skylight, creating a rare opportunity to bathe in sunlight. Clad in natural stone, the simple space doesn’t need many bells and whistles to shine: a wraparound bench, a gorgeous sunny day, and it’s a room made for luxuriating in.

Use one material throughout for a statement-making design. Designer Karin Bohn of Moeski Design Agency loves the look of marble in a bathroom—and even more so when it’s everywhere. The white and bright material covers the floors, the walls and the lining of the shower (with smaller mosaic tile on the floor to provide grip and the right angle for drainage). Framed mirrors offer just enough visual break and serve to warm up the cool marble, too.

TASTE TEST Forget wine tasting—honey is the new flavour frontier. Depending on the nectar source, the taste (and colour and texture) of honey can vary wildly. Grab a few jars and find your favourite.

HONEYED BANANA DUTCH BABY A Dutch baby is a puffed pancake made with a simple, egg-rich batter poured into a preheated skillet and baked in a hot oven. It’s delicious topped with fresh berries or sautéed apples, but caramelized bananas are gorgeous—if you like, top the wedges with a dollop of whipped cream. DUTCH BABY 1 tbsp canola or mild vegetable oil 1 tbsp butter 2 large eggs ½ cup all-purpose flour ½ cup milk Pinch salt HONEYED BANANAS 2 tbsp butter 1–2 bananas, sliced lengthwise ¼ cup honey To make the Dutch baby, put the oil and butter in a 9- or 10-inch ovenproof skillet (cast iron is ideal), put it in the oven and heat the oven to 425°F. Combine the eggs, flour, milk and salt in a blender and pulse until well combined. Remove the pan from the oven, pour in the batter and bake for 15 to 20 minutes, until puffed and golden. Meanwhile, in another skillet set over medium heat, melt the butter for the bananas. When the foam subsides, add the bananas and cook until soft and starting to turn golden. Drizzle the honey over top and heat through. If you like, add a sprinkle of cinnamon. Top the pancakes with the caramelized bananas and pour over the buttery honey from the bottom of the pan. Cut into wedges and serve warm. Serves 4.

CLOVER A classic Canadian honey; what you’ll often find in grocery stores. A mild, cinnamon-y taste and a light amber hue.

BLUEBERRY Honey collected from a plant’s blossom won’t necessarily taste like the fruit grown by that plant. Case in point: blueberry honey, which has a brown sugar-like finish.

THE GLOSSARY How do you like your honey? Served up as the bees intended, or filtered into liquid gold? Look for these four key words to help you find a sweetener that’s been processed just right.

WILDFLOWER Wildflower honey—from nectar collected from a variety of flowers—will taste a little different in every region, so seek it out in your travels for a truly local flavour.

RAW Honey that’s been spun out of the honeycomb and bottled with any wax bits or pollen (or bees’ legs) that might get swept up in the process. A fave of health nuts.

FILTERED Raw honey that’s been heated gently and run through a filter to remove any non-honey bits and pieces. Still healthy, but a little less. . .chewy.

PASTEURIZED Filtered honey that’s heated to a high temperature to kill any latent yeast cells, which have a very small chance of fermenting— pasteurization can also slow down the process of crystallization, which means the jars of honey will look nicer on the shelf for longer. In the process, though, this heat can destroy some of the nutritional qualities of the honey.

FIREWEED The fireweed plant blossoms after wildfires, so it’s a rare treat. A good fireweed will be almost crystal clear, with a mild, buttery finish. The “champagne of honey.”

BUCKWHEAT Dark brown—almost black!— with a strong, malt-like molasses (almost barnyard) flavour. High in vitamins and antioxidants.

HONEYCOMB Cut straight out of the hive, wax and all. (While beeswax is chewy, it’s totally edible and safe to swallow—you could eat a beeswax candle, if you were so inclined.) As natural as it gets, and a great addition to a cheeseboard. W E S T E R N L I V I N G . C A M AY 2 0 15 | 73

STICKY SLOWROASTED PORK BELLY WITH CHILI HONEY

ROASTED CAULIFLOWER WITH CURRIED HONEY BUTTER

Pork belly is exactly what it sounds like—a slab of meat from the belly of a pig. It comes about an inch thick, like an uncut piece of bacon. Slow roasting will allow the fat to render and connective tissues to break down; turning the heat up at the end crisps the skin, caramelizing the exterior with a slick of spiced honey.

Cauliflower takes well to roasting; tossing half-baked florets in curryspiked honey butter before they finish their time in a hot oven makes them irresistible.

2 lb pork belly 1 large onion, halved and thinly sliced Olive oil, for cooking Salt and freshly ground black pepper ¼ cup dark honey, like wildflower or buckwheat 1 tbsp lime or lemon juice 2 tsp chili powder Preheat the oven to 300˚F. Pat the pork belly dry with paper towel and score the skin with a sharp knife a quarter- to half-inch apart in one or both directions, without cutting all the way through to the meat. Place the onions in the bottom of a baking dish and lay the pork belly skin side up on top. Drizzle with oil and rub all over the skin; sprinkle with salt and pepper. Roast for 2½ hours. Meanwhile, stir together the honey, lime juice and chili powder, warming the honey if you need to.

1 head cauliflower, separated into florets Olive oil, for cooking Salt 2 tbsp butter 2 tbsp honey 1 small garlic clove, finely crushed or grated 1 tsp curry powder or paste ½ tsp cumin ¼ cup chopped cilantro Preheat the oven to 400˚F. Spread the cauliflower out on a rimmed baking sheet and drizzle with oil. Toss with your hands to coat, then sprinkle with salt. Roast for 15 minutes, until cauliflower startes to soften and turn golden in spots. Meanwhile, in a small dish melt the butter with the honey; stir in the garlic, curry and cumin. Pour or spoon over the cauliflower, sprinkle with cilantro and roast for another 20 minutes, stirring once or twice, until tender and golden. Serves 4 to 6.

BURNING QUESTIONS What is creamed honey? Honey that’s been whipped into a thick, gooey spread. No additives, just a whole lot of stirring. Why has my honey gone hard? That’s just crystallization—the separation of the glucose and fructose that make up honey. It usually happens at colder temperatures, or if the jar has been sitting for a while. Just gently heat in a pot of hot water, or put the jar in the oven with just the light on to liquefy. How long will honey last? Honey is the only food that never goes bad. Honey was discovered in ancient Egyptian tombs—and was still totally edible.

Turn the oven up to 400˚F and brush the pork all over with the honey mixture. Roast for another 20 to 30 minutes, brushing once or twice, until deep golden and crisp. Let rest for 10 minutes before slicing. Serves 6.

Buckwheat Honey Ice Cream Dark, intense honey like buckwheat sweetens a simple, creamy custard while adding a distinct flavour; use a mellower honey, like clover or fireweed, for a lighter, milder ice cream. If you like, add a shot of bourbon to the mixture for buckwheat bourbon ice cream. 1 cup heavy (whipping) cream 3 cups half and half ⅔ cup buckwheat honey 4 large egg yolks Pinch sea salt In a medium saucepan, heat the cream, half and half and honey until it’s steaming, whisking to melt the honey. Don’t bring it to a boil. Meanwhile, put the egg yolks in a bowl. Pour in some of the hot cream in a thin stream, whisking constantly, to warm the yolks, then whisk the yolk mixture back into the pot of hot cream in the same manner. Bring up to steaming again, whisking often. Add a pinch of salt. Cool the mixture down, then refrigerate until cold. Freeze in an ice cream machine according to the manufacturer’s directions. If you like, transfer to a container and freeze until firm. Makes about 6½ cups.

I

’m on the street in downtown Cabo San Lucas and the carnage is jaw dropping. No, I’m not talking about the aftermath of last fall’s Hurricane Odile—the city has bounced back nicely from that, thank you very much. I’m talking about an early-morning scene outside Cabo Wabo—the mega-bar owned by erstwhile Van Halen singer Sammy Hagar. This bricks-andmortar ode to all things bro is the type of establishment that begins each day with a literal hosing down of the previous night’s festivities, and to be honest, before I arrived I assumed that getting blitzed on cheap tequila and muchas Coronas was standard operating procedure for a trip to the tip of Baja. Cancun has all-inclusives, Acapulco has, well, crime, and Cabo is all about party, party, party. What I didn’t expect was that scattered among the beer-pong pavilions and vendors hawking serapes with Edmonton Eskimos logos, there exist moments of serene beauty: empty beaches and vistas over the Sea of Cortez that you can have all to yourself if you just know where to look. For every pod of frat boys, there’s a pod of migrating humpback whales; for every all-you-can-eat hotel buffet, there’s a small producer crafting handmade food for the pilgrims who are willing to seek it out.

SECRET GARDEN There’s no substitute for being first. When the original Palmilla hotel was built in 1956 by the son of Mexico’s president, they had their pick of locales on the then largely untouched coastline. That’s why it has the best swimming beach on the Pacific side and foliage that makes you feel like you’re in the Amazon instead of a coastal desert—all framing a timeless

You’re only a mile from the water, but there’s an authentic vibe that feels far away from the rest of Baja. All it takes to produce a one-of-a-kind artwork is a little cutting and pasting. In this bedroom (occupied by a young girl), designer Angela Robinson used a utility knife to cut triangles from wallpaper roll ends and pages from a book of Christian Chaize beach photographs, then had a wallpaper installer come and hang the pieces into a geometric collage. Though the images all come from different sources, there is a unifying theme. “We came up with our colour story—pink, white, teal, beachy tones— and chose a maximum of seven textures and images that fit within that. It’s eclectic without looking too busy,” says Robinson. “We wanted to create a room that was fun and youthful, but sophisticated—something to grow into.”
